A Talo is a cornflour pancake, something that has been made in Euskadi since ancient times. Wrap it around chorizo, txistorra (fresh paprika sausage), bacon or chocolate, if you have a sweet tooth.

At Enkarterri nature expresses itself in all the splendour of its valleys, mountains, sea and caves such as Pozalagua which holds the greatest collection of eccentric stalactites in the world. All in a land with an important industrial past, as reflected in installations such as the 15th century El Pobal ironworks at Muskiz, the Museum of Mining at Abanto-Zierbena, the La Arboleda reservoir at Trapagarán or the beret factory at la Encartada in Balmaseda. Gorbeia, the green heart of Euskadi, is a destination of mountains, dotted with traditional farmhouses (baserris) and small rural settlements. The Gorbeia Natural Park is its mountain centre par excellence, with its iconic cross on the summit, at an altitude of 1,480 metres. The market gardens provide us with tomatoes, runner beans, leeks, pulses, lettuces... and many with the Eusko label or Euskalbaserri quality labels.
Typical produce includes the famous Zalla purple onions in Enkarterri and the Gernika peppers. And the rich pulses, there's nothing like beans cooked with their offal.
PINTXOS (TAPAS)
These bite-sized delicacies are the best cuisine on offer in many of the bars and taverns.
The difficulty lies in deciding which one to choose.
SEAFOOD
Anchovies, baby squid, sea bass, bonito and tuna in season and, above all, salt cod, which is cooked in many ways here: the famous pil-pil in sizzling oil, Biscay-style, Aojarriero (in tomato and garlic sauce) or the Club Ranero-style (with garlic and red-pepper cream sauce) are all wonderful recipes that never change over time and are difficult to find with a similar quality in other places.
LOCALLY RAISED MEAT
It is difficult not to link the cuisine of Bilbao Bizkaia with "a good steak". That red meat, char-grilled at restaurants, cider houses and carveries, and served rare on a platter to share in the centre of the table.
PASTRIES AND CAKES
You'll find a huge range of pastries and cakes, such as Pastel Vasco (cake with a creamy filling), the Bollos de Mantequilla (buns filled with buttercream), the Pastel de arroz (flaky pastry and custard cake), Rusos (merengue and butter cream), Jesuitas (flakey pastry with spaghetti squash), and the famour Carolinas (a foam meringue on a fine flaky pastry base which is filled with confectioner's custard, decorated with a film of egg on one side and chocolate on the other). Well-known include the ori-baltzak from Gernika, the cocotes de Markina, the truffles from Bilbao and the mantecadas from Orduña. At Christmas, the Sokonusko nougat and, for the through the Malvavisco sweets.
CHEESES
Primarily the Idiazabal Designation of Origin in its two varieties, smoked or unsmoked. This cheese is made withLatxa or Carranzana sheep's milk and is highly acclaimed in international competitions.

On this trail, as well as access to Atxulo, one of the natural stone entrances to the karstic massif of Itzina, you can discover first-hand the importance of woodland in the Gorbeia landscape, crossing small beech groves and conifer plantations.
LEA ARTIBAI
This proposed trail starts out from the hermitage of San Miguel de Arretxinaga in Markina-Xemein. This pedestrian route, alongside the river Urko, Urko bidea (7), will give you an insight into the natural and cultural heritage of the area.
centuries, this was a route used by pilgrims, merchants and even by the Kings of Castile on their way to the church to swear an oath to recognise and maintain the Charter of Privileges and thus be recognised as the Lords of Biscay. This was done at the oath church of the Iglesia Juradera of Santa Eufemia in Bermeo.

Bilbao Bizkaia is home to many natural treasures such as the Natural Parks of Gorbeia, Urkiola and Armañón, Pozalagua caves, or the source of the Nervión river with its awesome viewpoint. Apart from these must-visit places, we would also like to offer you some easier trails, to be enjoyed by all the family, that you can either do on foot, on your bike and, sometimes, on horseback.
ENKARTERRI
Let's start with this district, whose history revolves around mining and industry, by suggesting an excursion along the Ironworks Trail (2) alongside the river Barbadun. The trail starts at Galdames and goes as far as the beach of La Arena. The sights along the way include the Valdivia Mill and the Ironworks of La Olla and El Poblal, the latter can be visited and features a curious bamboo woodland.
Further south, in the sierra of Ordunte, between the Mena valley in the province of Burgos and Karrantza, standsmount Balgerri (1) with an altitude of more than 1,000 metres. From the Ordunta reservoir, you can explore the oak and beech woodlands.
Closer to Balmaseda, stands the iconic summit of mount Kolitza (3), crowned by the Romanesque hermitage of San Sebastian and San Roque and offering some stunning panoramic views.
GORBEIA AND ORDUÑA
The next stop is the town of Orduña, where you can visit the spectacular waterfall marking the source of the river Nervión (10)
There is also the possibility of taking the extremely popular Txarlazo route (11) which will take you right to the top, where the Virgen de la Antigua sanctuary stands and which is visible from almost anywhere in the valley. For bird lovers, this itinerary offers the possibility of observing species (12) such as the peregrine falcon, the Egyptian vulture and the griffon vulture.
A visit to Artea (4) will allow to leisurely explore the town and discover the character of its neighbourhoods, with ancient hermitages here and there, and surrounded by the typical Basque countryside, dotted with traditional farmhouses. There are just three kilometres between Artea and the town of Areatza (6). In this beautiful town, you can take a short walk through its quaint old quarter, declared a monumental complex, where impressive palaces and Baroque manor houses will take you back in time.
And, from this valley of Arratia and crossing the Bikotzgane bridge, you will come to the Orozko valley, where we would suggest a magnificent trail from Altzagorta.
DURANGALDEA
The trail starts in Durango and goes on to access the Natural Park of Urkiola (21), a must-visit mountain area which boasts a rich variety of fauna and the well-known summit of mount Anboto. On your way, visit the monastery of San Antonio de Urkiola and its surroundings. As the legend goes, if you are looking for a partner, then you need to walk around the stone standing outside in order to achieve your purpose.
Iurreta is a site of heritage interest which also offers you two interesting trails, former paths that were once trodden by herdsmen and traders, commercial paths and tracks. These are the North Trail and the South Trail (19), both with a short-distance option.
We are now going to suggest a bridleway: Zaldi Gorri (20). This is a loop trail above the valley on either side of the Ibaizabal river basin. This 90 km long bridleway starts at Amorebieta-Etxano and goes through 12 municipalities.
Ibarruri-Unda-Maume (13) are three former elizates (an early form of local government in the Basque Country), forming Muxika. This trail is dotted with Gothic or Medieval hermitages, ancient traditional farmhouses and the remains of the Olea ironworks.
Going towards the sea the Artibai (8) trail runs from the industrial estate of Gardotza to the marshes of the estuary of the river Artibai at Ondarroa.
Another interesting trail is the loop that starts and ends in the fishing village of Lekeitio, pasando through Mount Otoio and the village of Ispaster (9)
Of great interest is the Lea Ibilbidea trail that runs alongside the river Lea that gives its name to this route.
There are many sites of interest to discover, such as the Marierrota tide mill at Mendexa, constructed in 1555 for the purpose of standing in for the river water mills in times of drought or, in Gizaburuaga, the important Bengolea Ironworks and the tower house Casa Torre de Bengolea, which played a key role in the evolution of the valley. At Munitibar, the plot of land pertaining to Bengola, occupied since the 14th century by one of the oldest ironworks to be documents in Biscay, has been converted into a Centre for the Interpretation of Renewable Energy and of the Lea valley itself.
URDAIBAI
We would suggest doing the trail of the Camino Real (Royal Way) (14) connecting Bermeo and Gernika. For

ARRAZOLA
Starting from the small village of Nabarniz , you can make an excursion to climb mount Illun-tzar (15) (726 metres), one of the summits with the most beautiful views of Urdaibai and the Cantabrian sea
URIBE
Lazama marks the start of the Goitioltza trail (16), that can be done on foot or by bike. It runs between Txakoli vineyards and traditional farmhouses such as the one at Oxangoiti. You'll also get the chance to see the famous training grounds of the Athletic Club de Bilbao.
The Bazaldu loop trail (17) starts and ends at Laukiz, with some sections going into Gatika. It is a tree-lined trail, running alongside the river Butron in some stretches.
The next trail is once again by the Cantabrian sea, running along the cliffs to Sopela, Barrika and Plentzia (18) Start from the Barinatxe beach in Sopela and, following a route that runs parallel to the cliffs, border other beaches such as Atxabiribil and Meñakoz. From there you'll reach Barrika and then Plentzia.
This trail marks the route of the former Arrazola mining railroad, with the Aurrera steam locomotive at the head. It runs at the foot of the mythological summit of Anboto and crosses the beautiful valley of Atxondo, the river Arrazola alluvial plain right up to the elizate of Apatamonasterio.
ATXURI
The footprint of the much-missed "Chocolatera", a train the revolutionised trading in the district of Mungia, is now a peaceful path that opens onto the Butrón river valley.
MONTES DE HIERRO
This is in some way a journey through the very core of our history, for centuries shaped by the mining of iron ore and which forged what today is the Great Cosmopolitan Bilbao.
ITSASLUR
A spectacular result, as it hangs over the cliffs of the western-most coast of Biscay. The former mining railroad of El Cobarón to Campomar has become a high sea walk and a didactic open-air itinerary with some extensive views of the Cantabrian coast.
ORKONERA
The former mining railroad of La Orkonera runs like a magnificent bidegorri (bike land) along the skirts of the hills of Triano, among Atlantic vegetation. It is interspersed with tunnels and also offers some stunning views over the Somorrostro valley.
KADAGUA
This Rail Trail, along the former section of the La Robla railway between Balmaseda and Irauregi, offers a magnificent walk alongside the Kadagua river

Its 222 metre drop makes it the highest in the Iberian peninsula.
The river rises at the border with Araba-Álava and Burgos and runs through the valley to reach Biscay through the town of Orduña. It's well worth a visit in winter or during the spring thaw when the water flow is at its highest

HERMITAGE OF SANTA CATALINA (Mundaka)
Its spectacular location right by the sea not only offers some stunning views but also makes it a strategic point for watching over the entrance to the estuary, looking at the island of Izaro or the Ogoño cragg.
ROMAN SETTLEMENT OF FORUA (Forua)
Standing on the Elexalde hill, this is the most important Roman monument in Bilbao Bizkaia. An archaeological study has made it possible to document the existence of a settlement covering approximately 15 hectares, which was enclosed by a wall.
VIEWPOINT AT THE ARMAÑON NATURAL PARK
This viewpoint is located next to the entrance to the impressive cave of Pozalagua, boasting the largest number of excentric stalactites in the world. It offers some lovely views of the karst landscape of the Karrantza valley, which is of great ecological richness.
LA ARBOLEDA (Trapagaran)
This is one of the few still remaining mining villages in Biscay It was declared a Monumental Complex in 2003.
SAN MIGUEL DE EREÑOZAR (Ereño)
This is one of the many natural vantage points offering awesome views of the Urdaibai Biosphere Reserve
ARRIETA
It stands in a beautiful setting of spacious green meadows and many mountain areas. Numerous hermitages are dotted around the municipality Of particular mention is the old quarter of the rural neighbourhood of Libao with its elegant neoclassical church of San Martín and iconic boundary cross of the Santo Cristo.
Its former mines, now converted into artificial lagoons, create a unique, surprising landscape.
BIOTOPE OF ITZINA (Gorbeia Naturale Park)
Orozko, specifically the recreational area of Elezkin, offers some incomparable views of this karstic massif, in the Gorbeia Natural Park.
LARRABETZU
It was declared a Monumental Complex due to its medieval architecture, which can still be recognised today. It is located on the Way of St James and the Rutas Juraderas (routes of the oath) of the lords of Biscay, which has gradually shaped its character over the centuries.
LENDOÑOBEITI WATER MILL (Lendoño de abajo)
Visit this restored water mill to learn about its history and that of the rest of the hamlets of Ruzabal, dating back more than 500 years. The mill is fed by the waters rising in the spring of Iturrigorri .
THE MONUMENTAL COMPLEX OF BOLUNBURU (Zalla)
This monumental complex is one of the best examples of a feudal complex in Bilbao Bizkaia and comprises a tower house, the beautiful hermitage of Santa Ana (year 1610), the ruins of the ironworks and the mill, together with a spacious strip of land to enjoy the sun or do some sport.
Nearby is Castro de Bolunburu, a fortified settlement of the second Iron Age, standing on a hillock at an altitude of 320 metres and embraced by the Kadagua river.

AMOROTO SQUARE
With regard to this architectural complex, particular mention should be made of the Church, the Renaissance town hall with a lovely balcony looking onto the square, and the Abadetxea traditional farmhouse, which is a typical 19th century neoclassical construction.
SANTA EUFEMIA (Aulesti)
This hermitage dominates the rocky summit of mount Urregarai. A delightful path between birch trees and cypresses will take you to the foot of the summit where a flight of 222 stone steps awaits you, going as far as the terrace on which the hermitage stands.
TRADITIONAL FARMHOUSES AT ISPASTER
With its back to the sea breeze, this municipality forms a beautiful Basque picture in which the "Baserris" (traditional farmhouses) and fields of crops stand out on its green landscape.
BESAIDE (Elorrio)
This is an iconic point in Euskadi given that it is where the three Basque provinces meet.
On its summit, you'll also be able to see an amazing sculpture by the Japanese artist Yoshin Ogata and a monument to missing climbers by the architect, Pueyo.
TXAULAS (Shepherds' shelters)
In Biscay, Tologorri is one of the peaks that must be climbed. You'll come across the shelters housing the cattle and you'll get the opportunity to take some awesome photos.
DURANGALDEA VANTAGE POINT (Garai)
This small village, located in the foothills of mount Oiz, is considered to be the vantage point of Durangaldea. From there you can admire the scenic beauty of the district.
ARMINTZA VIEWPOINT
This is the coastal neighbourhood of Lemoiz that will allow you to be "alone" with the Cantabrian sea, which awaits you with all its force, splendour and breeze. Immerse yourself in a completely maritime atmosphere.
LAS TRES CRUCES (THE THREE CROSSES) VIEWPOINT (Abadiño/Urkiola)
The trail that will take you to the viewpoint starts by the Sanctuary of San Antonio de Urkiola. It is a Via Crucis among beech woods, ending in three enormous crosses and at the viewpoint, offering a stunning panoramic view over the Atxarte gorge and the whole area of Durangaldea. There you will find an interpretation panel which will help you to identify the surrounding hills.

The interest for the history and traditions of the early nineteenth century led to the creation in 1917 of the Ethnographic Museum which, together with the Archaeological Museum, formed the basis of the renovated and present day Basque Museum of BilbaoEuskal Museoa.
