FRESH IDEAS! After the busy festive period, many of us welcome the New Year as a chance to experiment with fresh ideas, master a new technique or discover products that maybe we haven’t used before. If you are one such person and are looking for something a little different, we have chosen four of our favourite products which might not immediately spring to mind, but which we think are fantastic additions to any chef’s kitchen and which you might like to try in 2015.

Ultratex is a thickening starch that is extremely versatile. It can be applied to both hot and cold liquid until they reach the desired thickness. It is a tasteless, colourless and gluten free powder. When whisked into a liquid it disperses quickly and evenly without lumping.

Mycryo is pure cocoa butter in dry, powder form used for frying meat, fish and vegetables. It brings out the natural flavour of the ingredients and doesn’t mask the flavours as other frying fats can do. Simply sprinkle the raw or slightly blanched ingredients with Mycryo and fry them in a hot, dry pan without additional fat. This 100% vegetable fat offers you all the health benefits from the cocoa bean too: no cholesterol, lower calories (less fat needed for frying). Mycryo can also be used for chocolate tempering.

MYCRYO COCOA BUTTER

These pouches of frozen stocks are some of the best we have seen and are probably as close to a ‘from scratch’ stock as you can get. A mainstay of traditional Korean cuisine since the 17th century, this pungent paste made from red chilli, glutinous rice and fermented soya beans has a remarkable depth of flavour, adding both sweet and savoury notes, smokiness, tanginess, and of course decent amounts of heat. Guaranteed to make any dish sing, it is rich and distinctive and works well with anything from eggs to meat, with vegetables and rice, as a marinade or even in cocktails. FIRST OF ALL...

a Happy New Year from everyone here at Turners, we hope your festive season was busy and prosperous. Hopefully now you have time to breathe a little and set yourselves new challenges and goals for 2015. January is often a time when new ideas are born and as you saw on our front cover, we are more than happy to help if you would like some inspiration regarding products and their uses. We have a team with a wealth of experience in the trade and we love giving suggestions where we can. So on to the first celebratory event of the new year...Burns Night. If you are getting involved in the festivities or even if you aren't but have a love of good Scottish ingredients, then we have plenty to interest you in this issue. Haggis will be making an appearance on many menus so have a look at what is available and speak to us in regards to your needs for the end of the month. There are some fine cheeses coming out of Scotland at the moment and we have picked five of the very best for our cheeseboard this month. The perfect way to end any Burns Supper. We also have a look at some delicious condiments this month, with vincotto and mayonnaise making an appearance. BLACK CROWDIE A soft cream cheese made from cow's milk, with a very low fat content. Hand rolled in pinhead oatmeal and crushed peppercorns, the flavour is slightly sour with lemon notes and a decent spicy kick from the pepper.

CABOC Said to be Scotland's oldest cheese, Caboc is made from double cream and rolled in toasted pinhead oats. It is rich, mild and very buttery, whilst the oats give it a nutty texture. It has a high fat content of around 70%.

MORANGIE BRIE This is an excellent example of a delicious, creamy brie. Produced by Ruaridh Stone, it has a smooth, soft texture and a rich, slightly sweet flavour. A superb addition to any cheese board.

BLUE MURDER Previously called 'Blue Monday', Blue Murder is now made in Tain by Highland Fine Cheeses. It is softer and creamier than many other blues, with a sticky, white rind. Inside it has an impressive, veining and the flavour is both salty and sweet with a hint of spice.

ISLE OF MULL CHEDDAR A unique cheddar made on Sgriob-ruadh farm, to a traditional recipe. Pale in colour and with a strong, tangy flavour, it owes much of its character to the fact that the cows eat fermented grain from the nearby Tobermory whisky distillery.

lso known as Saba, vincotto is a sweet, dark condiment, made in the Puglia region of Italy. Literally translated as “cooked wine” it is made by slowly cooking and reducing down non-fermented grape must until it is thick and has a sticky consistency, created by caramelised sugars. Not to be mistaken for a vinegar, vincotto has a sweet flavour and a beautiful aroma, making it a fantastic option for dressing salads instead of balsamic. DELIVERIES We deliver daily, Monday to Saturday and our vans leave us between 2am and 7am, depending on the journey. All routes are fixed so you can expect your delivery at or about the same time every day. We do not operate a minimumorder policy.
