A stone’s throw across the border between East Sussex and Kent, Moons Green is an artisan producer of fine British charcuterie. John Doig, a well-travelled Kiwi with a passion for food, started the business from two small curing fridges in his garage. This fledgling company has since blossomed, and alongside business partner Jose Azevedo, they now produce arguably some of the finest British charcuterie available.

summer draw to a close, and with the August Bank Holiday behind us, we hope it as been a prosperous one for you all, despite less than ideal weather for the end of the month. In terms of new products, we have certainly seen our fair share this summer, taking on a lot of interesting new lines to enhance our ever-growing list of products. Fans of British meat will no doubt be pleased to hear that we are now offering the wonderful Charcuterie of Moons Green in Sussex. Already well-known and much-loved by many, it was only a matter of time before John and Jose’s produce graced our doors. We know it will be a popular choice for connoisseurs of quality cured meat. We also have two other new British suppliers proving that this country’s food manufacturing is in great shape, in the form of Wrights flour and Mr Trotter's pork crackling and crisps. Our cheese selection this month takes us to East Sussex as we see what is being produced by the dairy at Chillies Farm - An exciting fledgling cheese-maker producing some interesting goat and cow cheeses that have been greatly received and won a few awards along the way. If you want inspiration from further afield, our main feature discovers what ingredients make up the cuisine of Morocco. With such an array of dry and fresh goods available, we hope it can really help get those creative juices flowing and lead to you creating some inspired dishes.
The mill, located in Ponders End in North London, was mentioned in the Doomsday Book, and a number of it's buildings have a 'listed' status. The company has recently invested in a new manufacturing plant, still in Ponders End, which enables more output whilst maintaining consistent and high quality products. Wrights uses crops from two different farms, both local to the mill, which grow different strains of wheat that have properties that suit different types of flour. Inverted sugar is a handy tool in the arsenal of any pastry chef. It is used extensively in confectionery for preparations such as ganache and fudge, as well as ice-cream and sorbets. Its main advantages are its ability to prevent crystallisation which creates a smoother mouth-feel and also its moisture retention properties. This acts as a preservative and increases the shelf-life of baked goods like Madeleine and brioche and keeps fillings for chocolates and cakes moister for longer.

Most people associate couscous with Morocco and it is indeed the country's national dish, but Freekeh is an interesting alternative as it has a slight smokiness. Probably the meat most associated with Moroccan food, it is at the heart of many a tagine recipe and goes amazingly well with the sweetness of honey and dried fruit such as apricots. Cuts such as this shoulder are well suited for both slow cooking tagines and quick-cooking grilled Moroccan kebabs.
National dishes such as tagines and pastillas (spiced meat wrapped in filo pastry) use almonds and pistachios to add crunch and flavour, but pine nuts and sesame seeds are also used in abundance as garnishes.

Moroccan cuisine uses the sweetness of dried fruit a lot in its savoury dishes, much of which is an influence from Persian neighbours. Arguably the most important condiment in a Moroccan larder though, are preserved lemons (Beldi lemons) which have a unique texture and aroma that is unmatched by fresh lemons.
