Taste the Excellence Exotism & Tradition Established in 1999 by Pascal FĂŠval, Excellence Glaces offers a unique gourmet experience for ice cream lovers with delicious handmade ice creams, crafted with fresh and locally sourced ingredients from Martinique. The brand's range includes over 60 different kinds of ice creams and sorbets with a variety of flavors that are refreshed each year. Our products bring together the tropical flavors of Martinique fruits and plants, along with the culinary tradition of the most renowned French confectioners that are enjoyed equally by kids and adults. We specialize in a variety of flavors ranging from tropical fruits such as atoumo (alpinia zerumbet), guava, avocado and cassava to more common flavors such as vanilla, strawberry, coffee and chocolate. These flavors are refreshed regularly to enhance and enrich the gourmet dessert experience. The caramel flakes, crispy chocolate chips or nougat help to enrich the vanilla taste, whereas chocolate is complemented with iris, amarena cherry and crispy chocolate chips as well as praline. Our alcohol-based infusions amplify the tasty sweetness of our ice creams, available in pina colada and aged rum raisin as well as Champagne upon request.
Quality and Tracibility The secret of our special flavors lies in the quality of our supply chain and our high sourcing standards as well as our sustainable procurement practices. All our ingredients and raw materials are grown and sourced locally from lands with 0% use of pesticides and confirmed tracing of all ingredients. We believe in a balanced and responsible use of all ingredients such as sugar, fat, milk, and natural flavors, important for the success of our recipes.
A Knowledge based on Excellence Depending on the recipe, fruits are converted into purees and jams, and plants are infused and then added into the mixture. Once completed, the mixture is pasteurized and converted into ice cream and sorbet. We also specialize in the confection of frozen savory desserts such as foie gras ice cream or tomato sorbet, perfect for the holiday season.
Pascal Féval, Certified Master Artisan Pascal Féval is a passionate Certified ice cream maker, who offers since 1999 a unique gourmet experience to ice cream lovers with delicious handmade ice creams crafted with fresh and locally sourced ingredients from Martinique.
What motivated you to become an ice cream designer? "Having grown up in a confectionary and pastry shop environment, I started making ice cream as a hobby for my family and friends and then selling them to passerby on Sundays."
But you are working professionally now? "Yes: with increasing public interest for my creations, I acquired professional training in the Vendée region of France with Jean-Claude David, one of the best craftsmen of his trade in France, before returning to Martinique 18 months later. I was officially recognized as Master Ice Cream Maker in 2018 and I was also the winner of the Best Coconut Ice Cream Award in Saint-Pierre."
What inspires you? "My training provided me with a better insight on how to manage the flavors of my ice creams while applying traditional methods and some secret production techniques. I used my knowledge to create ice creams, cakes, and high-end frozen desserts with a personalized signature using fruits and plants that highlight my native heritage. I was also able to test new flavors such as cassava, that until today no one had thought of using to make ice cream."
Could you please tell us more about your own creations? "Yes indeed, I created the “Flamme Glacée” (the frozen flame) in December 2001. While preparing for the holiday season, I was asked to make 400 frozen desserts on very short notice. I quickly realized that the traditional decoration techniques would take a long time to complete with a risk that the ice cream would melt before completion. From this, I got the idea to decorate the desserts with meringue, a product that would conserve the freshness while reinforcing the desserts. A real success that remains to date one of our best creations ever!"
Our Sorbets Excellence Glaces offers 23 sorbet flavors. The sorbets are “whole fruit�, meaning that they are made of at least 45% fruit and 20% sugar. The taste is central to our product and each recipe takes into account the organoleptic qualities of all our flavors.

Our Ice Creams & Gelatos Excellence Glaces ice creams and gelatos are available in 33 flavors. Generally, our ice creams contain approx. 40 to 50 % milk, 30 to 40% cream and fat, 20 to 35% fruit, and only 10 to 15% sugar. Some flavors are seasonal*: avocado is available in October-November, Sorrel in November-December and Mango Julie from June to August.

Distribution Excellence Glaces welcomes all offers and opportunities for collaboration and partnership. We work closely with caterers, restaurants, and ice cream makers locally and remain open to developing further collaborations with interested parties.
Restaurants For clients in the restaurant industry, chefs, caterers or ice cream makers, Excellence Glaces can ship its flavors in eight 2.5L (84.5oz) containers per box.
Gourmet Retail For retail clients, we are able to offer a specialized packaging adapted for stores (forty 470ML (15.9oz) containers per box).
