Dear Chamber Members and Friends, This is such an amazing time for the Utah Hispanic Chamber of Commerce (UHCC)! This year marks our 10th annual Convention & Expo and next month we celebrate our 25-year anniversary. CONVENTION SPEAKERS MONIKA MANTILLA Managing Partner SBCC, President & CEO Altura Capital Group Monika has over 25 years of senior management and investment management experience as a successful entrepreneur and business owner, investment management consultant, corporate C-suite manager, and international corporate lawyer. Monika is the President and CEO of Altura Capital Group. Altura clients include some of the largest institutional investors in the country and the world. The partners of Altura launched SBCC. Monika and Altura have won numerous awards and recognitions including the “2010 Hispanic Heritage Award”. She was recognized as one of the 101 Most Influential Leaders in Hispanic U.S.A. In 2011 she was appointed by the U.S. Secretary of Commerce as a member of the International Trade Advisory Center (ITAC), a unique public- private partnership jointly managed by the U.S. Department of Commerce and the Office of United States Trade Representative. Monika holds an MBA from Columbia Business School in New York and a J.D. from the Universidad del Rosario in Bogotá, Colombia. ELDER DAVID TODD CHRISTOFFERSON Member of The Quorum of The Twelve Apostles Church of Jesus Christ of Latter-Day Saints Elder D. Todd Christofferson was called to the Quorum of the Twelve Apostles of The Church of Jesus Christ of Latter-day Saints on April 5, 2008. At the time of his call, he was serving in the Presidency of the Seventy. During his tenure in the Presidency of the Seventy, Elder Christofferson had supervisory responsibility for North America areas of the Church, and also served as Executive Director of the Church’s Family History and Church History Departments. Earlier, he was president of the Mexico South Area of the Church, resident in Mexico City. Prior to his call to serve as a full-time General Authority of the Church, Elder Christofferson was associate general counsel of NationsBank Corporation (now Bank of America) in Charlotte, North Carolina. Previously, he was senior vice president and general counsel for Commerce Union Bank of Tennessee in Nashville, where he was also active in community affairs and interfaith organizations. From 1975 to 1980, Elder Christofferson practiced law in Washington, D.C., after serving as a law clerk to U.S. District Judge John J. Sirica during the Watergate proceedings (1972-74).Born in Pleasant Grove, Utah, on January 24, 1945, he graduated from high school in New Jersey. He earned his bachelor’s degree in English from Brigham Young University, where he was an Edwin S. Hinckley Scholar, and his law degree from Duke University.Among other callings, he has served the Church as a stake president and bishop. As a young man, from 1964 through 1966, he served as a missionary in Argentina.Elder Christofferson and his wife, Katherine Jacob Christofferson, are parents of five children.

CONVENTION SPEAKERS HON. JACKIE BISKUPSKI Salt Lake City Mayor One of four siblings raised in Hastings, Minnesota, Biskupski, is of Polish-American descent. While learning about the civil rights movement, she was immediately attracted to the idea of working one day to champion the rights of women and minorities. Later in life her collegiate activities would earn her a B.Sc. in criminal justice from Arizona State University. She went to work in the auto-insurance industry, then became a private investigator. Biskupski decided to get involved in politics in 1995. When elected in 1998 to the Utah House of Representatives she became Utah’s first openly-gay person elected, to a state office. She was re-elected 6 times after that, serving in the legislature for 13 years. Biskupski was elected to the office of Salt Lake City Mayor on November 17, 2015, with 51.55% of the vote. DARIN ADAMS Author, Broadcaster and Speaker Darin Adams is an award-winning TV personality who has spent 30 years in the broadcasting industry. Much of that career was spent working with entrepreneurs and small business owners, helping them get the marketing they needed. Now he has left the lights of the TV studio and is a noted speaker and author, helping entrepreneurs discover the “WOW” of marketing, while still loving the passion of doing what they do best.
BETH COLOSIMO Executive Director, Business Development Resources at Salt Lake Community College Beth is a savvy entrepreneur who created Wasatch Home Furnishings, Inc., a start-up company that grew from zero dollars to 2.1 million in sales in less than 3 years. In 2011 she became the Senior Business Development Manager for Economic Development Corporation of Utah where her primary focus was to bring jobs and capital investment to the state of Utah. In 2014 she co-dounded the Donald N. Franz Pharmacology and Toxicology Scholarship Fund. Currently she serves as the Executive Director, Business Development Resources at Salt Lake Community College where she oversees various small business programs including the Business Resource Center, the Innovation Center (Incubator), the Conference Center, the Export Assistance Office, the Refugee Leadership Training Program, as well as the Small Business Development Center and Goldman Sachs 10,000 Small Businesses program. Beth coordinates with state, county, city, and community partners to advance the training and education for entrepreneurs and small business owners throughout the Wasatch Front.

CONVENTION SPEAKERS LUCY CARDENAS Owner, Red Iguana Restaurants Lucy started at a very young age washing glasses, greeting & seating customers, cooking and assisting in what ever way she could. Today Lucy Cardenas and her family of 150+ employees, continue offering the legendary Mexican Cuisine her family cooked with love & joy since 1965. Under Lucy’s leadership the “Red Iguana Restaurants” have become a staple of Utah’s culinary community, it is the perenial to go Mexican food restaurant in Utah. Red Iguana has received countless recognitions including Best of Utah, AAA Travel Magazine, one of top restaurants in 5 Western States, TripAdvisor recognized it with a 2013 Certificate of Excellence and the Chicago Tribune travel writer named it “Best Place in Town”. For over 50 years, her family recipes have withstood the test of time. DOLORES MEDINA Owner, El Farol Mexican Restaurant Dolores is a successful restaurateur involved in the restaurant business since 1981. Dolores has a Business Administration and Management degree. Since 2007 she has owned El Farol Mexicna Restaurant, a family owned business that was established in 1967. Dolores and her husband run El Farol in Midvale. She is part of the third generation of the Torres family to serve up Mexican food favorites to hungry patrons. The Torres tradition started in 1945, when her grandfather opened “El Charro” restaurant in Salt Lake City. Now she run’s the family business. “I’m in it to Win it”! I’m in it to win more business, produce a tastier Mexican Menu than now available in Utah, and really make people feel welcome in our “Cool Mexican Neighborsambiance.” ALVARO MORA Master Business Coach, El Poder del Cambio Alvaro Mora was born in Veracruz, Mexico. As a young boy he grew a passion for reading and science. He studied Electrical Engineering and later served an LDS mission. For more than 20 years he taught university students and instructors, serving as their mentor. Alvaro developed an interest in the mind, which led him to study neuroscience. However, his expertise does not end there. He is certified in a broad scope of topics including Master Practitioner in NLP, Master Coach of Business, International Life Coach, Personal Branding, Neuromarketing, and Biodecodification. He is a member of the International Association of Coaching with NLP, Professional Association of Life Coaches, and Worldwide Network of Public Speakers. Currently Alvaro continues to teach and mentor university students. He is a columnist for multiple magazines and newspapers, hosts a weekly radio show “El Poder del Cambio”, and is the author of a book called “La Gran Trampa de la CAJA”.

CONVENTION SPEAKERS ALEX GUZMAN President of laGALERÍA – The Art of Hispanic Marketing, President & CEO of The Marketing Factory & The Hispanic Marketing Factory and Chairman of the Board, Utah Hispanic Chamber of Commerce Born and raised in Guatemala, where he earned his bachelor degree in business administration, Alex holds an MBA with emphasis in marketing from Universidad Católica de Chile, and post degree studies in Strategy from Universidad de las Palmas de Gran Canaria, Spain. Alex worked for several years for Leo Burnett International helping American-based and world-wide brands to adapt their marketing plans and strategies to Latin American cultures. Alex managed large accounts such as Shell, United Airlines, Johnnie Walker, Ray-O-Vac and Kellogg’s in Central and South America. In his current role, he blends his multicultural experience with a talent for developing, creating, and implementing marketing communications that emotionally and culturally resonate with the U.S. Hispanics across the nation. To promote effectively products or services, companies/brands have to divide a broad target market into subsets of consumers, that have or are perceived to have, common needs, interest and priorities.
