El Farol – a bastion of Mexican food in Utah

In the heart of Midvale stands El Farol Restaurant. This bastion of traditional Mexican food.

Medina, who runs El Farol with her husband, Roberto, is part of the third generation of the Torres family to put their stamp on some of the best Mexican food in Utah.

She feels that she is extremely “blessed” and that those “above” must be looking after them because during this past recession a lot of Hispanic businesses closed down. “God was there and helped us to continue. There is no way I could have done this on my own, I’m blessed to be surrounded by good people. We have great employees and faithful customers. I couldn’t ask for more.”

The business was started by her grandfather, Rafael Alvarez Torres, who migrated from Mexico at the age of 17. Torres, from Morelia, Michoacan, Mexico, worked on sugar beet farms in Idaho and Utah and on the railroad, then as a bellboy at the Temple Square Hotel. Soon afterwards Torres met and married Dolores “Lola”. “Being very outgoing despite her broken English, Dolores made many friends and many people came to the Torres house to enjoy traditional Mexican food”. In response to his wife’s popularity Torres opened the downtown restaurant, El Charro and later El Farol in Midvale in 1967, he didn’t retire until he was 90 years old. He passed the successful Midvale restaurant onto one of his sons, who in turn retired in 2007, leaving Medina to purchase it with her husband.

El Farol

Medina attributes the success of the restaurant to the work ethic passed down from Rafael and Lola through the next two generations.

“Food means everything to my family,” Medina says. “We, like most Hispanics, have food at the center of all our celebrations and gatherings. To me food signifies joy, pleasure, and memories. When you bite into something that is an old family recipe it takes you back to who you were with when you first tried it.” Each of the three generations that have run El Farol have brought something different to the menu. “I added the chocolate flan, a twist on Grandma Dolores famous creamy flan. We have added variety by building on established recipes from my grandmother, and all of us have had our hand in the pot. All of the food is made from scratch with my Grandma Lola’s strict standards. The salsa is served heated — simmered like a soup — and we serve old-style hard tacos. We make them here.” Medina said.

One of the keys to her success is that her business is “family run and family filled. We are always getting customers that say that they used to go to El Charro, grandfather’s first restaurant in Salt Lake, ‘that’s how we met your family’ now they come here and feel the same family connection.” Another important characteristic that has ensured her success is the strength of the family´s Latin roots that Medina has stressed to her children. “The funny thing is that a lot of people look towards American culture, yet for me I enjoy reaching back into my Hispanic roots. The joviality, the music, and family… it’s so beautiful and I didn’t want my children missing out just because it was hard to learn Spanish. If you only know English you have blinders on, when you know Spanish you can communicate and learn from Hispanics from all over the world.” At the end of the day Medina says that the secret to it all coming together is pride in her heritage, hope and faith. “If I put my foot forward every day and take that step to make it work it will somehow, or another, come out OK. I’ll never be rich but I have always had what I needed somehow, so I guess if I didn’t have something that I wanted, it was because I didn’t need it”.

Medina has been working in the restaurant all her life, but she says she could never tire of it. “Every day is different, everyday is a new story.“

El Farol has “provided three generations an honest living and fed three generations of customers,” says owner Dolores Medina.

GRADES FOR UTAH SCHOOLS BRING STRONG REACTION FROM PARENTS AND EDUCATORS

BY BENJAMIN WOOD

DESERET NEWS

SALT LAKE CITY — Utah’s controversial school grades were released Tuesday, drawing strong reaction from parents, educators and lawmakers seeking explanation for the results of this first-of-its kind report.

The grades, available on the website of the State Office of Education, are intended to increase school accountability by giving parents a clear and concise snapshot at the academic preparation of Utah’s children. “I think this is the most signifi-

SALT LAKE CITY — Rep. Jason Chaffetz, R-Utah, said Tuesday he’s opposed to President Barack Obama’s call for missile strikes against Syria because he doesn’t “want to send a Hallmark card” to the Middle East nation. “If we’re going to go to war, go with everything we’ve got and win. A pre-announced, limited strike, I don’t know that solves the long-term problem,” Chaffetz said. But he said while last month’s deadly chemical weapon attack tied to the Syrian government is “a tragic, awful situation,” it does not appear to be enough to warrant a military response from the United States.
