WELCOMING WINTER TO T H E VA L L E Y OF LIFE As the Cape reluctantly slips into winter, we await the much needed rains that have now become critical to everyone living in this province. There can be absolutely no doubt that water scarcity is going to affect us dramatically into the future. For this reason, Val de Vie is being proactive in formulating a detailed Water Scarcity Plan, to better equip us for our future needs.

The past few months have been extremely busy on the estate. From the ABSA Cape Epic finish and ISPA Handa Polo event on the sporting side, ongoing improvements of the security infrastructure and landscaping maintenance under testing conditions. We are indeed fortunate to have a very dedicated team on board who are prepared to go above and beyond the call of duty to make things happen. Work is currently being done to streamline and standardise the rules over the greater estate, as well as the letting procedure. By introducing a letting procedure pack containing all the required documents, we will ensure that landlords can enter into rental agreements with peace of mind, knowing that all the criteria have been met. It will also provide tenants with a much improved experience. Over the next few months two new play parks will be built on the Pearl Valley side of the estate. Work on the much looked forward to Mountain Bike Trail has begun; I took a sneak peek, and it’s going to be fantastic! A fibre optic network is being installed on the Pearl Valley side to be incorporated into the existing ‘Fibre to the Home’ network on Val de Vie.

Once the network is installed, and integrated into the existing network, Pearl Valley residents will be able to enjoy high speed internet access. Our Pearl Valley Club House is undergoing some renovations which, when completed, will offer a dedicated conference facility to cater for golf days and events, and thus not over taxing the restaurant and bar. This work is being done in phases, so please bear with us during the construction phase. Work on Val de Vie Phase II continues at a rapid pace. The earthworks and platform for ‘The Yard’ complex are already in, and the road surfaces are being paved. The completion of the eagerly anticipated bridge over the Berg River is expected by very early in 2018. It really is exciting to witness these wonderful facilities taking shape on our estate. In closing, a word of thanks to the hardworking men and women who make it all happen. From our security team to the golf staff, maintenance, landscaping, administration, finance, marketing and events, thank you for all that you do. The last few months have seen a major uptake in community involvement by the Val de Vie Foundation. Here are a few highlights taken from the past two months: •• We are so thankful for the approximately forty, Phase I homeowners who signed up for the Opt In R160 per month donation. It is so easy to join; merely go to www.valdeviefoundation.co.za and go to the ‘Get Involved’ page. Scroll down to the ‘Homeowners Opt In’ option, and register to add R160 per month to your levy. •• Our partner, Valcare Impact Funding Platform, was officially launched with Val de Vie Foundation as one of four inaugural funders. For more information, go to the Valcare link on the Val de Vie Foundation website. •• We completed the roof over the quad at Orleansvale Primary. This deserving school in Chicago, Paarl East, was the recipient of the 2016 Celebrity Golf Day proceeds. Today, we have delighted learners who now have a secure, protected place they call “their roof!”. •• The Foundation also partnered with ACVV Paarl Vallei Wielie Walie to offer Tekkie Tax shoelaces to homeowners in aid of the disadvantaged children living in our community. •• As word of the work we do spreads far and wide, we were delighted to be approached by Nationbuilder and MFM 92.6 (University of Stellenbosch’s campus radio station), to explain our work to its youth oriented audience. On 19 May, we were invited to share the Foundation with those who listened to Cape Talk during the morning show’s outside broadcast, which was hosted at Val de Vie.

May month Foundation showcase: A dream comes true for aspirant ‘Boks’ Andre du Toit, the Coach for Klapmuts Primary has big dreams for his school, his community, and the aspirant young Boks who live in the Western Cape community. On 5th and 6th May that vision became a reality, when the highly professional Sevens Tournament was held right here in Klapmuts. One hundred under‑13 players from 10 schools, and 80 organizers, participated over the two days. They were drawn from as far afield as Bredasdorp, Worcester, Grabouw and St Helena Bay. From the delicious Friday night braai and the Saturday lunch, provided by the Val de Vie Foundation, to taking selfies with their Bok heroes, and playing their hearts out, it was a never to be forgotten weekend.

‘Shakes’ Soyizwapi (Springbok Sevens), Ruhan Nel (Springbok Sevens), and Cornal Hendricks (former Cheetah and Springbok). For many of the learners, some of whom have never before ventured out of their hometown, the tournament broadened their world view, and they learnt that, with vision, hard work and determination, dreams do come true. Klapmuts Primary, under the guidance of their Headmaster, Ronald Frans, is fast becoming a role model school in the Western Cape, with a major focus on sport, and a world class education.

This year’s event grew with the participation of more than 160 residents, family and friends. The participants enjoyed a beautiful day of community building, meeting neighbours and simply enjoying the festivities. It was a fun day for the whole family, with parents socialising around 19 fires, preparing their favourite potjies and the children enjoying the green lawns, with a jumping castle at the Pearl Valley Boma. The panel of judges included Mynhardt Joubert, the winner of KykNet’s popular cooking reality show, Kokkedoor, Jaco van Tonder from Paarl’s Goede Hoop Butchery, and Ryk Neethling, a fellow neighbour. The panel was positively impressed with the standard of potjie preparation and the delicious recipes.

P O L O C A P TA I N ’ S R E P O RT It has been an action packed and successful 2016 / 2017 polo season at Val de Vie, during which a total of 774 chukkas were played, seven tournaments were hosted, and three exhibition events were held. The club spirit is high judging by the support, both on and off the field, as we reflect on a very busy past season. The season kicked off with a friendly tournament against a visiting team from Salta in Argentina, La Estancia de Cafayate. The club is planning to visit Salta later this year. Furthermore, Val de Vie club member Jannie Steenkamp was selected to represent South Africa in the World Snow Polo Championships in China at the beginning of this year.

Our active, playing members have increased to a total of 33, and our social member numbers are increasing exponentially, for we’ve had over 70 guests (non members) playing at the club this season. We are also witnessing a healthy growth in our student base coming through from the polo academy, which underlines the growing interest in the sport.

In February, we once again hosted the very successful annual Ladies’ Tournament, which was also the first ladies’ tournament in South Africa to use the new ladies’ handicap system. In April, Val de Vie resident and club member Berdine Odendaal’s team from Val de Vie, Brigade One, was victorious in Plettenberg Bay, winning the first 2‑Goal Plett Easter tournament.

Our annual exhibition event matches, the Cintron Pink Polo and the Veuve Cliquot Masters Polo, including the first ISPS Handa Art of Polo Invitational, were all 14‑goal — a first for Val de Vie. At the ISPS Handa Art of Polo Invitational event we hosted some of the best players from the African continent, Britain, Argentina and Japan. Another first was the Cape Championships tournament that was held on the estate, in which Team Kryptonite, an all‑Val de Vie team, was victorious.

Sharing in Val de Vie’s commitment towards social responsibility and community upliftment, the Academy, South Africa’s longest running, independent equestrian and equine educational institution, opted to impart its knowledge and know‑how to a group of visitors from Grabouw.

On 11 March our Equestrian Centre hosted a job shadowing day for eight aspirant grooms from Grabouw. The visiting group formed a part of the ‘Long Shadows Family’ programme, which focuses on social upliftment and personal development. Included in this group were two youngsters from the Monteith Rural Transformation Programme, where they are learning to ride and to work with horses. The grooms were paired up with our Val de Vie polo grooms in order to experience first hand what it takes to work in a professional polo yard and to learn the tools of the trade.

Attendees enjoyed the first Afro Asian event, which featured sunset polo, a four course dinner and networking, definitely a first for the African continent at South Africa’s premier lifestyle estate.

Captains of industry and celebrities, including local and international polo players, descended on Val de Vie Estate on Saturday, 22 April for the first annual ISPS Handa Art of Polo Invitational. RUN THE PEARL A beautiful autumn morning in the Winelands outlined the ideal background for our first Run the Pearl fun run, around the pristine Pearl Valley Golf Course. More than 100 runners had the opportunity to run along the course’s golf cart path and absorb the scenery of lush indigenous fynbos, trees, numerous lakes and an abundance of birds, while breaking a sweat with friends and family.

During hollow tining was the perfect time to take advantage of a quieter golf course and invite the non golfer to experience the beautifully designed Jack Nicklaus course, from what is usually the golfer’s perspective. This also granted every participant the opportunity to grasp what Nicklaus meant when he said that the valley, surrounded by breath taking mountains, is one of the most inspiring locations for which he has ever had the pleasure of designing a course. Runners participated in either the 5km or 10km walk or run, on the golf cart paths, beginning and ending at the Boma recreational facility at Pearl Valley. The Fleet coffee company greeted every runner with a freshly brewed cup of coffee, and the Val de Vie Foundation hosted a Tekkie Tax pop up shop where runners could purchase a pair of laces to show their support for a worthy cause on 26 May. A medal awaited each participant as they crossed the finish line. After catching their breath and hydrating with a USN beverage and an ice cold La Vie da Luc still water, our prize giving began, and we congratulated the winners as follows:

ABSA CAPE EPIC G R A N D F I N A L E AT VA L D E V I E E S TAT E Early on Sunday, 26 March this year thousands of people flocked to the verdant fields of Val de Vie. In the warm sunshine of the day they were confronted by a colourful—and extraordinary—sight: tents had sprung up overnight housing a medical facility, catering companies, dining facilities, entertainment venues, a chill zone, a play area for children, and more. And through the centre of it all, on the estate’s grounds, ran the last few hundred metres of the 2017 Absa Cape Epic course. The Grand Finale of the event—its prestigious final stage—was, for the first time, being hosted by Val de Vie.

Swiss duo Nino Schurter and Matthias Stirnemann (SCOTT SRAM MTB Racing) were first time winners of the men’s race, while Esther Süss and Jennie Stenerhag (Meerendal CBC) claimed the Hansgrohe Women’s Category. It was Swede Stenerhag’s first win in her fourth attempt, while for Switzerland’s Süss it was a third title after winning the Mixed in 2011 and the Women’s Category in 2012.

Spectators crowded into the stands lining the finish area, and across the world thousands of viewers watched the unfolding spectacle on television. Soon the riders started arriving, from the triumphant professionals at the front of the field to the ‘weekend warriors’ taking on the challenge of a lifetime. Their eight day adventure was over, and the finish line was the scene of some emotional celebrations as riders hugged, wept and laughed . . . sometimes simultaneously. They had covered 651 kilometres of riding terrain during that time, which included nearly 15,000 metres of vertical gain. They had overcome temperatures that soared to the mid 40s during the early stages, and a route that traversed some of the Western Cape’s most rugged landscape.

Stirnemann won in his first attempt, while for Schurter—a bronze, silver and gold Olympic medal winner, the win came in his fourth Cape Epic—his previous best had been a fifth place in 2014. The current Olympic and world champion, cool and calm as ever at the end, admitted that the strategy had always been to come and win the Absa Cape Epic, but only in 2018.

“The plan was to come here in 2018 and win, but we are a year early!” said Schurter. “This is very special. To win the Olympics and then come to South Africa and win the Absa Cape Epic, that is great. After Rio, it was always my intention to come and win the race, but this has taken us by surprise. I thought next year would be our year. We are ahead of our schedule.” Stirnemann called the moment “unreal . . .

amazing, just amazing. I really can’t believe it”.

In the women’s race there were emotional scenes at the finish. A year after having heart surgery, Stenerhag wept as she and Süss won the Cape Epic in their first effort as a team.

Last year, Stenerhag had to withdraw from the Cape Epic after finishing Stage 3: she had developed a heart condition that required surgery. “Since that day

my biggest goal was to try and come back to win this race,” she said. “To pull it off is something completely unreal. I cannot believe that I am standing here as the winner. I think we won by keeping everything smooth and consistent. We just kept calm and

never thought we could win until now when we crossed the line.” Süss was equally ecstatic. “I am only happy, happy, happy!” said the 2010 Marathon World Champion. “It was quite tough and fast and you had to really be focussed because something can happen so fast. I am only happy.” In the race for the Absa African special jersey, presented to the best allAfrican team at the Cape Epic, there was only going to be one winner after a strong week of riding from PYGA Euro Steel’s Matthys Beukes and Philip Buys.

“It was a great Absa Cape Epic!” said Buys. “It’s a pity we missed out on a stage win, but we really put everything out there today and we are really happy with the red jersey. We learned a lot this Epic, so I’m sure we will come back smarter.” In the Virgin Active Mixed Category the Scott‑Sram Nextlevel duo of 22 year old Rio Olympic Champion and 1996 world champion, Jenny Rissveds of Sweden, and 47 year old Thomas Frischknecht of Switzerland were in a class of their own. They rounded off a clean sweep of eight victories in eight days as they cruised to a massive 65 minute win overall, over South Africans Grant Usher and Amy Beth McDougall (joBerg2c Valencia). In the Dimension Data Masters category, Australian Cadel Evans—a former Tour de France winner—and American George Hincapie (BMC Absa Racing Team), riding in their first Cape Epic, got stronger 42 | GRAPEVINE


with each day of the event, and overhauled the category leaders on the final stage.

“I didn’t know it was this hard, but fortunately I got in shape as the race went on,” said Hincapie. “I stay relatively fit at home but not by any means for this kind of effort. I’d love to be back next year and race again.” There was no such drama in the Grand Masters Category, with Swiss‑Austrian duo Barti Bucher and Heinz Zoerweg (Meerendal CBC 3) leading from start to finish. They won their category with a comfortable time of two and a half hours. Diepsloot MTB Academy riders William Mokgopo and Philimon Sebona claimed the Exxaro special jersey. A delighted crowd clapped and cheered as the pair exchanged high fives and hugs with their team managers; and all were united in appreciating the new Grand Finale finish venue. As former professional, Oli Munnik said afterwards: “Love the finish venue . . .

it was a great way to finish the Cape Epic.”

FROM THE DESK OF THE DIRECTOR OF GOLF A T P E A R L VA L L E Y It was certainly a very good season for the club since it produced its most successful season to date. I am also very pleased to see the growth in our shop’s retail sales. This is due largely to better sales service, and to stocking a list of brands that are more exclusive and not featured at other clubs. The new team at Pearl Valley is growing, and team members are starting to get a good feel for their landscape. It’s now time for further training and the implementing of strategies as we go into the corporate season and members’ golf events, and build up to the forthcoming season.

The first event of our Winelands Challenge golf series has kicked off. It was recently played at Steenberg Golf Estate. Our members took some time to get used to the pace of the greens on the day but still managed to play well as a collective. In the end it was Steenberg with their home club advantage who were on top, on a combined total of 205 stableford points, with Pearl Valley in second position on 193 points. The team were happy with their performance, and feel very confident about making up the deficit as the next events unfold. The teams are made up of six women and six men golfers. The results are calculated by taking the top five of the six pairs playing on the day. This means that the teams selected need to be consistent. Pearl Valley is in a great position in that we have depth in our numbers. The Junior Elite Academy offered by Swingfit is still getting off the ground but there is promise being shown. Our Swingfit golf coaches are doing a great deal to grow the game of golf, and our junior numbers are healthy, with some serious talent in the mix. One particular name that comes to mind is young Alex Utterson who, at just nine years of age, successfully managed to eagle the par‑four first hole the other day. Pearl Valley has been hard at work in achieving our Aduban certification. In order to achieve this status one really needs to comply with a number of environmental regulations. We are almost there, and have successfully achieved five of the categories but still require a further three categories to become fully accredited; these being our chemical pesticide usage, water quality, and lastly, focus on outreach programmes and education. I’m proud of Mike Westman for seeing this process through because it takes an immense amount of discipline and dedication. Onto the golf course now and, as we are in our low season, it’s time to focus on winter projects. There are many winter projects on the go at the moment, and Mike and his team are fully engaged. There is a major focus on levelling tees and capillary lining bunkers. Currently, work is being

done on the 15th hole, bunker complex around the green. These bunkers must please be treated as GUR, and disruptions in play can be expected. Additional servitude roads have been laid, making access around the estate more pleasurable, and of course more aesthetically pleasing to the eye. All the wooden, redwood course furniture is being restored and varnished. The curbing of certain cart paths will also take place over winter in key areas to prevent drive cart damage. Mike has just introduced 100 brand new bunker rakes into circulation, so cleaning up after yourself will now be that much easier. Then finally, I am very pleased to share that we have just placed an order for a full

Pearl Valley has been hard at work in achieving our Aduban certification. In order to achieve this status one really needs to comply with a number of environmental regulations new set of tee markers. We are moving away from the wood finish because our environment, with its extreme summer temperatures and plenty of irrigation, limits its life span. The new tee markers will be completely stainless steel, and have been guaranteed for five years. Now that Phase One of our Pearl Valley Hotel by Mantis Collection is open, we are able to launch the Stay and Play packages at Pearl Valley. This is an exciting addition to our offering, and has allowed us additional scope to market and attract golfers to the course. To date, there has been a great uptake and the reviews of the hotel have been terrific. The hotel is still in its launching phase, with the official opening taking place later in the year. Golf skate caddying has hit the fairways of Pearl Valley, and it is something just a little bit fun

and unique. They now have been here for just over a month, and have sparked an interest. These are designed to make the golf journey that much more fun, and are apparently really good for people who have lower back issues. So I encourage you all to give them a try and, who knows, you may just enjoy the experience. Hosting the Bridgestone Golf commercial at Pearl Valley for the production of their Tour B330 Ball was a great deal of fun. The logistics were huge because there were over 120 extras used for the production of this feature. The highlight of this commercial was that it featured Tiger Woods. Chris McCann, our Men’s Golf Captain, was the director of the commercial and it was really quite something to see him with his Director’s hat on. It takes a great deal of work and energy to control 120 people running about all over the show. Our Jack Nicklaus Signature Lounge is well on the way, and I cannot wait to see it open to golfers and members soon. Club Chairman Ivor Morgan, Men’s Captain Chris McCann, and Ladies’ Captain Shoona Burman, were recently invited to share their input with interior decorator Maurette van Eyssen about some of the design aspects. The club representatives were happy with the concept drawings and felt pleased by what has been proposed. The Signature Lounge will be a place for golfers and members alike to enjoy a relaxed, but formal, lounge and dining experience, with a variety of seating options. There will be a list of rules drawn up to protect the area from becoming something it was not intended to be. More news will follow on the official launch date of this great space. Our bar area is looking a lot brighter and lighter, with its freshly painted ceiling and the very stylish lights that now hang around the bar. Our recent Hollow Tining marked the end of what has been, arguably, one of the best golfing seasons thus far at Pearl Valley. I was fortunate enough to join the team at a very busy time of year. really allowed me to see both our strengths and our weaknesses, and has assisted me to pinpoint focus areas for the winter season. To celebrate the success of our recent season, all the golf operations staff got to experience some go kart racing, ten pin bowling and a wonderful lunch at Grand West. I’m also extremely pleased to welcome Johann Germishuys onto our team as the Golf Shop Manager. We are delighted that he brings a wealth of experience and is passionate about people, the game of golf and club fitment. The key to the success of any corporation is its staff. Through a series of training programmes with RCA Consulting, the road has been paved for better customer attention and service. I am very excited to see the growth in our staff members. At this time, I would like to congratulate Terence Valentyn on his promotion to Golf Manager, and Luluma Dyantyi for his promotion to Course Marshall. I am really looking forward to the year ahead. The days hurtle by, fields of amber, russet and gold surround us, and it is now nearly two months since the Pearl Valley Ladies Open 2017. A simple reflection for the day is of the many keen hands involved, from the smallest detail to the final product, great excitement, a stunning backdrop to a wonderful day, and some great golf out on the course, with Pearl Valley hospitality always something to be admired. The field was filled within two days of general release, with 37 Pearl Valley members and 91 visiting players, from 22 different clubs stretching the length and breadth of South Africa — from Krugersdorp, to Hermanus and from Kloof to Clovelly. Energy levels were high from weeks before, as the preparation and attention to detail always takes time. The course itself, despite the summer of scarce water, with wind and extreme heat, was in excellent, showcase condition with greens so slick that some players thought they had been ironed in the early morning prior to the day’s play. This year’s event was eagerly supported by many local companies, all of whom are keen to be involved in our special day. New companies have joined our event this year — Lew Geffen Sotheby’s International Realty, Jaguar Stellenbosch, Sisley, and Sovereign Wealth Solutions, and we are indeed very grateful for their support. Tracey’s Diamonds of Franschoek have sponsored our event for the past three years, and their contribution has been one of

These are the children whose parents may be working or are not able to provide a good wholesome meal during the weekend. It’s a wonderful initiative, with which one of our lady committee members is involved, and one that we are extremely proud and happy to support. My thanks to the smiling ticket sellers, and to those who purchased. Congratulations to our home grown winners of the day, Laurie Chaffe and Gerri Warnes. Laurie having been the key instigator of the event some five years ago, she and her partner were winners who have empathy for the true heart and soul of the event. S T I M U L AT I N G THE MIND BY S T I M U L AT I N G T H E PA L AT E Dish Food and Social co-owner, Oscar Foulkes shares his wisdom and experience in presenting a food and wine pairing evening. He confesses that although this is indeed the remembrance of a rare occasion, he nevertheless unashamedly admits that he did once swallow. I generally find the world of wine and food pairing more than a little pretentious, and very definitely prescriptive. There are just too many people in the field who get very antsy about which wine to drink with which food. It also doesn’t help that few restaurateurs know the difference between ‘complimentary’ and ‘complementary’ (most establishments seem to use the ‘i’ version when they don’t mean free, but matching, or enhancing). While formalised wine and food pairing may not be, in a manner of speaking, my cup of tea, I am a firm believer in the concept of wine friendly food. There are certain dishes that make wine taste awful (more on that later).

So, there I was, with eight different red wines from around the world – a Bordeaux, a Burgundy, a couple of Aussies, a Pinotage, a South African Merlot, something Tuscan, and a Syrah from the Languedoc – a pretty diverse mix if ever there was one. The plan was to give each taster four differently flavoured sauces to taste against/with each wine.

These were: •• Classic European – Rich, red wine and beef •• Asian – Soy sauce, Chinese Five Spice and beef •• Middle-Eastern/North African – Spicy (no chilli) and lamb •• European Autumn – Pungent mushrooms and truffles in cream. It was no surprise to me that the top-scoring combo was the Classic European with the Bordeaux (the sauces worked well with just about all the red wines, but this was deemed to be the most heavenly match). Again, there were no surprises that the farmyard‑like Burgundy had an affinity with the mushroom type sauce (European Autumn). The Middle-Eastern spicy lamb (cumin, coriander, cinnamon, turmeric and paprika) was disastrous with ALL of the red wines – so much for the red meat and red wine rule! The sauce had been made tagine style with some orange juice and dried apricots, which probably made it a better candidate for a rich, mature chardonnay. To the delight of all concerned (this was a South African audience, after all), we discovered a perfect


match for Kanonkop Pinotage, in the form of the Asian soy sauce and Chinese Five Spice sauce. It was so good I may even ask Heston Blumenthal to do one of his mass spectrometer analyses on it. At a purely practical level, matching every course to a different wine involves opening a substantial number of bottles. Of course, this is no problem if there are eight or ten sitting down to dinner, but somewhat more complicated when there are only two; hence, my preference for starting from a position of wine friendly food (and yes, there is room for red wine and fish). I approach this kind of matching more from the perspective of understanding each flavour in terms of its potential impact on a wine. This admittedly simple approach would caution, for instance, against subjecting red wine to sweet Thai chilli sauce, or in other words, treating with care – or occasionally avoiding – dishes that will undermine the experience of a wine. It comes down to whether one wants the wine or the food to shine. It is my observation that few chefs have any understanding of the effect their food will have on the accompanying wine. One is either confronted with a cacophony of conflicting flavours, or main courses that are sweet, which brings me to the first rule: the food should never be sweeter than the wine (and this goes for dessert, too). The impact of this is to make the wine taste sour.

“Any wine that follows vinegar (most often encountered in salad dressings) is going to taste awful. Red wine and oysters leave a metallic taste in the mouth.” What’s interesting about tasting food and wine together is the way in which the matching and evaluation process stimulates the brain — it’s not an exercise about the nutrition only, or about immediate hedonism only. It’s good to know that we can eat and drink in the pursuit of intellectual advancement!

It is perhaps inevitable – despite our best intentions – that our personal experiences with combining food and wine ultimately end up as rules; or as guidelines that, by virtue of their degree of prescriptiveness, come across that way (like those mentioned below).

Chilli is as difficult for wine as sugar is. Some wines (red or white) can cope with mild doses of chilli, but as soon as the burn becomes too severe it’s time to switch to beer. Mediterranean foods with olive oil, fresh garlic and other potent flavours are better with a crisp white than a huge, oak aged red. Lemony sauces fight with red wine, but complement chardonnay.

CHEF CHRIS ON PIZZAS At The Valley Restaurant our family friendly pizzas are without a doubt one of the favourite crowd pleasing dishes. Chef Chris Law shares some of his secrets to create the perfect, homemade pizza. A crisp, chewy crust, puffy edge, and fresh toppings all hot from the oven; nothing is better, or more universally popular than a good pizza. And simple too—it is just bread with some bits and bobs on top, after all. So why is it that home made pizza, and many takeaway pizzas too, tend to be bready, stodgy and, well, underwhelming? It’s all about the temperature, according to the experts. Domestic ovens don’t generally heat up above 250°C, but a wood burning oven, in which pizzas are cooked in their native Naples, can reach 500°C or more. The heat

emanates from the bottom of the oven, making sure the dough is cooked through so that it can crisp, creating a lightly charred crust, while the toppings melt and meld with only the most delicate browning, all in the space of a couple of minutes. If the dough proves impossible to work with— snapping back when stretched, for instance—it’s either been overworked, or it’s too cold. Let it sit at room temperature for a full 15 minutes to let the gluten relax and the temperature rise before trying again. Making homemade pizza from prepared dough is a quick and easy dinner for any night of the week. Even making your own dough really adds only a few minutes to the prep time! My favourite method for shaping the pizza is to hand roll the dough onto a piece of parchment paper. The dough sticks to the parchment, making it easier to work with and easier to transfer into the oven. The pizza will release from the parchment during the cooking process, and the parchment can be removed halfway through cooking. The parchment will darken in the oven, but do not worry because it won’t burn or catch alight. Also, there are no rules about the kind of toppings you can put on your pizza. Simply choose the ones you love. They will cook a little in the oven, but if it isn’t something you like to eat raw, like sausage or mushrooms, allow some time to cook the toppings ahead of time. If you’d like fresh greens, like arugula or basil, sprinkle them over the pizza as soon as it comes out of the oven. The residual heat from the pizza will wilt the greens just slightly and bring out their flavour. It’s best, though, to keep the toppings to just a handful at most. If you load a homemade pizza with too many toppings, this may take too long for the crust to cook well. How much cheese you decide to put on the pizza is at your discretion. You could alternatively keep it as an all vegetable pizza for a healthy, midweek meal.

Recipe: Makes two 21cm pizzas • The dough: 3 • /4 cup lukewarm water • 1 teaspoon active dry or instant yeast • 2 cups unbleached, all purpose flour (for a lighter base replace one cup all purpose flour with one cup ‘OO’ flour ) • 1 1/2 teaspoons salt The sauce to spread on the base: • 1 tablespoon olive oil • 1 large garlic clove, thinly sliced • 400g can diced Italian tomatoes • 1 teaspoon salt • 2 teaspoons chopped fresh oregano Prepare the sauce: • Heat oil in saucepan over medium low heat. Cook garlic until starting to brown. • Discard garlic. Add tomato. • Stir over medium heat for 10 minutes or until thick. Add the salt. Blend with a stick blender. Stir in oregano. • Cool sauce completely. Spread 80ml (1/3 cup) of the pizza sauce over each pizza base, avoiding the edge. For the toppings: • Sautéed onions, red peppers, mushrooms, cooked sausage, or bacon. • Use one, or a combination of, the following cheeses: mozzarella, provolone, parmesan, fontina, romano, and asiago.

Method: • Set the oven to 260°C. • Combine the water and yeast in a mixing bowl, stir to dissolve the yeast. The mixture should look like thin miso soup. Add the flour and salt to the bowl, and mix until you’ve formed a shaggy dough. • Turn the dough out onto a clean work surface including any loose flour still in the bowl. Knead until all the flour is incorporated, and the dough is smooth and elastic. The dough should still feel moist and slightly tacky. If it’s sticking to your

hands and countertop, work in more flour, one tablespoon at a time, until it is smooth. Let the dough rise until you need it or until it has doubled in bulk (it takes about an hour and a half). After rising, use the dough, or refrigerate it for up to 3 days. Cover the dough with the upside down mixing bowl or a clean kitchen towel while preparing the pizza toppings. When ready to make the pizza, tear off 2 pieces of parchment paper roughly 21cm wide. Divide the dough into 2 halves with a bench scraper. Working with one piece of dough at a time, form it into a large disk with your hands and lay it on the parchment paper. Work from the middle of the dough outwards, using the heel of your hand to gently press and stretch the dough until it’s about 1 cm thick, or less. If the dough starts to shrink back, let it rest for 5 min, and then continue rolling. The dough will stick to the parchment paper, making it easier for you to form, and the pizza is baked while still on the parchment. As it cooks, the dough will release from the parchment; slide the paper out midway through cooking. Spoon a few tablespoons of sauce into the center of the pizza and use the back of a spoon to spread it out to the edges. Pile on all your toppings. Bake for about 5 min, then rotate the pizza, simultaneously removing the parchment from underneath the pizza. Bake for another 3 to 5 min until the crust is golden brown, and the cheese looks toasty. Remove the pizza from the oven, cut it, and serve.

he good news is that state-of-the-art energy saving solutions are available in South Africa, and in spite of perceptions, creating ultra-modern living spaces is very affordable. Whether designing and building a new house, upgrading a regular home or renovating a “fixer upper”, homeowners today have an incredible opportunity to implement great energy saving solutions. New water heating solutions A geyser is responsible for over half of a home’s energy bill and the modern alternative is to install a heat pump, which uses about a third of the total energy. In conjunction with a highly insulated hot water storage system, this solution cuts the home’s electricity costs by an estimated 50%. A complete heating solution costs around R35,000 for the average home. Rethinking lighting Highly efficient LED lighting typically requires a tenth of the energy and have a longer lifespan than regular bulbs. Constructing a new home or making major renovations is also an opportunity to allow more natural light into the building. The home’s orientation, larger windows, glass doors and skylights all reduce the need for unnecessarily turning lights on throughout the day. Insulate everything While it is not one of Energy Partners’ core services, we advise clients that insulation is a cost efficient measure with the biggest impact on reducing energy consumption. Double-brick walls with insulation in between, and well insulated ceilings and floors are vital. Double glazing also reduces heat loss through large glass surfaces like windows and sliding doors. Door and window frames are often overlooked

sources of heat loss, and wooden frames still offer the most benefits in terms of reducing heat transfer between the inside and outside of the home.
