Brine-Cured Olives ING RE DI E NT S

• 4 cups raw olives (red or brown) • 5 quarts water, more if needed

• 13 1/2 tablespoons kosher salt (or other non-iodized salt), divided

• 1/4 cup red wine vinegar (or apple cider vinegar)

tablespoons of the salt in 1 quart of water.

• Pour the brine over the olives.

Replace the plate and weight. Leave for one week.

• Drain the olives again and

repeat the brine with the same

measurements - 3 tablespoons of ME T HO D

• Remove stems or leaves and compost or discard them.

Thoroughly rinse the olives, discard any bruised ones.

• With the tip of a sharp paring knife, score each olive lengthwise 1 to 3 times.

• Place the scored olives into a

medium-sized non-reactive bowl or pot.

• Cover the olives with cool water.

Place a plate that’s slightly smaller than the rim on top of the olives.

Weigh down the plate with cans of

food or some heavy object to keep the olives submerged at all times. Leave the olives soaking in the water for three days.

• Drain the olives in a colander and put them back into the pot.

• Make a brine by dissolving 3

salt per quart of water. Weigh down and leave for one week. Repeat the rinse and brine process 2 more

times, 4 times total, which will result in four weeks of brining in salted

water plus three days of the initial submersion in plain water.

• Drain the olives and transfer them to clean, sterilised glass jars.

• Make a brine with 1 1/2

tablespoons salt and 1 pint water. Stir in the red wine or apple cider

vinegar and pour the brine over the olives in the jars.

• Tightly cover the brined olives and store them in the refrigerator or a

cool cellar for up to one year. The flavor will improve if you wait at

least a week or two before sampling.

• Enjoy them as an appetizer or

ingredient in your favourite recipes.

Pet Peeves Just like humans have an impact on the environment, so do our pets. Often, our pets and the environment don’t mix. WOR DS BY TER RY K ELLER , ESTATE MANAGER

W

ho doesn’t enjoy the company of a pet? They add

fun and enjoyment to a family, offer companionship

to senior members of the community and increase our

energy. Along with pet ownership comes responsibilities, not only to the pet but also to the surrounding

neighbourhood, our greater estate community and the environment.

With the massive increase in pet-related complaints,

we have appealed to owners to ensure that their pets are not a nuisance to the rest of the community. It is

important to remember that it is the owner’s responsibility to comply with the estate rules governing pets. The pets

are not going to do it by themselves. Noise pollution, pet

waste, placing the health and safety of others at risk and 8

restricting energetic animals to small homes and gardens have a detrimental effect on the entire estate.

To the owners who exercise their pets on a leash and

pick up after them, we thank you. To the ones who show little regard to estate rules, the safety of others and

good neighbourliness, stricter penalties and the ultimate

removal of troublesome pets from the estate will apply, as communicated on the HOA Estate Portal.

Changing the subject from pets to the environment, I

would like to encourage residents to subscribe to the

Val de Vie Estate YouTube channel and watch the clips featuring our environmental officer Simon Allen. The

No matter how well behaved your dogs are, there are sound reasons to keep them leashed at all times, except in the dog park where they are allowed to run free

Simon’s work carries on quietly and without fanfare and

will take time to manifest itself, but the long-term benefits to the estate are immense. All residents can play a part in this process by being mindful of the environment

around them. Simple things like disposing of green waste and ensuring litter does not blow out of garbage bags

environmental issues among adults and children enhances the estate experience for everyone. Look out for Simon’s walks, published in the weekly newsletter, and set some time aside to tag along. You will be amazed at what is happening all around you.

In my closing paragraph of the autumn edition of the

Grapevine, I touched on the need to be kind to oneself and others. There has unfortunately been a notable

change in the day-to-day interactions our team have with

residents and the level of aggression aimed at the security staff on occasion is very disappointing.

Everyone has had to endure more than a year of

uncertainty and turmoil, and some have suffered more than others. There is, however, no excuse for the vile

emails received or verbal abuse directed at staff. Let us

all commit to treating each other with respect, conducting ourselves so as not to cause a nuisance and aggravation to our neighbours and impressing on our children that delinquent behaviour is “not cool”.

Keeping our Game up to Scratch We head into the cold season with a consistent restaurant team, upgrades to some of the general areas and a healthy course ready for play. W OR D S B Y D A M I A N WRIG LEY, PEA RL VA LLEY CLUB GEN E R A L M A N A G E R

S

ummer made a very late exit this year, working in our

favour over hollow tining. Warmer days alternated with

light rain resulted in the speedy recovery of our greens to a presentable putting surface.

Following the busy summer season, the course needed a little rest to reduce thatch build-up and compaction. We explain more about this process on the Val de Vie YouTube channel. The team successfully tined all the

tees, fairways, and rough lying areas, together with the

usual inter-seeding of greens and tees. Our fairways are in good condition, and it was unnecessary to inter-seed

these areas. However, a re-sodding will take place on the

fairways concerning the stressed areas that died over the

summer. The motivation and effort involved in creating our turfgrass nursery certainly pays off now, and drastically speeds up the process.

Over the next four months, we will be working on many

projects, as last year’s significant budget cuts resulted

in placing multi-year improvements on hold. This year a

decision was made to hire a specialist project team to roll out three years of project work in four months. Our golf

course is a living organism that requires constant work,

and speeding up the process is necessary. Our cart paths require maintenance and additional curbing laid to reduce the amount of roping on the course.

Our clubhouse has had a minor facelift and looks fresh

and inviting. Our team upgraded the men’s locker rooms

with new décor and paint, and we improved the showers, existing lockers and certain areas of the floor. Custommade cushions to match the ones in the ladies locker

rooms adorn the benches, and natural elements were

added in the rugs and scatter cushions. I am pleased with the outcome, but it requires additional tweaks as we grow into the new space. 14

In future, we will determine how to incorporate the outside water feature into the space and hopefully also have beer

available on tap. Another focus for later this year is to erect a more permanent shade structure for the bar terrace and to update the bar facility. Our Marketing Department has been hard at work to find a brand partner to assist with

funding these upgrades, and it looks as if one has been secured.

Lounge on Wednesdays have been very well received, and the quality of the dishes and the wine has been

exceptional. It has been wonderful to see the enthusiasm from the winemakers and wine farm managers involved in this fantastic offering. Keep your eyes open for some

great specials that will be running throughout the winter.

The specials board will change daily and include many of

your favourite dishes. Cosy fires will welcome you on cold

winter days to set the mood, so pop by in early morning to grab your cuppa from our new coffee bar.

Many foreign countries are experiencing severe

lockdowns with no immediate sense of normality returning. We remain optimistic but cautious in our approach. Last

year we did an excellent job generating a healthy uptake

from our local golfers and had enormous support from our

residents. This year we will need to maximise what we can create in terms of revenue from a predominantly South

African base. This requires strong relationship building

and partnership marketing which all played a big part in

what we were able to achieve last year. The effects of the pandemic have brought our region and country closer

together, especially within the golf, travel, and hospitality

segments. The various golf and tourism bodies are doing as much as possible to project a positive image of our

country and how we are a safe destination to come and explore.

spectacular day of golf and festivities. The excitement for this year’s event was more significant than before due to

its 2020 Covid-induced cancellation, and entries sold out in 48 hours.

U

sually, the golf course and clubhouse would be

inundated with international guests at this time of

year. A robust foreign currency allowed them to indulge in

top-end branded apparel, memorabilia and golf hardware. This year, we are adapting to the demand of our local market, as international travel is out of bounds for the

foreseeable future. We have assessed buying patterns

of the local market over the past few months and planned our stockholding accordingly. The brands that appealed to the international market in the past were also reevaluated.

Interestingly, the South African market bounced back in

a somewhat unpredictable spike in hardware purchases

throughout the year. During this time, the Golf Shop team

came up with innovative sales initiatives to add value, such as bundle deals and discounts to drive this purchasing

trend. With limited pre-orders, the opportunity presented itself to allow new brands to be showcased. One of the brands that have been very well received is Lyle and

Scott, a Scottish knitwear brand that is known for its golf

apparel and recently, a range that appeals to a younger audience.

General training apparel ties in perfectly with our estate’s focus on wellness, and we tested the waters with Under

Armour, a brand that is a consistent favourite in the world

of golf. Our residents and guests approve, and we have established a number of new fans of this game-changer

brand. There is a lot to look forward to this winter season in the Golf Shop while we await the arrival of the latest in

Adidas, Under Armour, Lyle & Scott and Swagg clothing.

The variety will include something to protect you from the elements out on the course and to look your best for a pleasant afternoon get-together.

The Pearl Valley Junior Academy is going from strength to strength, with a number of our players selected to

represent their respective age groups for Boland Golf

Union. The high school championships took place at Paarl Golf club in April, where Paarl Boys High and De Villiers

Graaff took first and second place. Some of our top junior golfers hail from these two schools, and we are proud of their representation of our academy and the quality of coaching we offer.

Beginner golf programs have been introduced, aimed at growing golf participation by stay-at-home mothers and other residents who want to try their hand at the game.

PEARL VALLEY GOLF UNITES A CONGREGATION

The 2019 and 2020 Captain’s Charity golf events raised sufficient funds to build a hall for the Mbekweni United Methodist Church, that could be used for various

purposes by the congregation. When construction finally commenced after periods of lockdown, RICTS Holdings

under the leadership of resident and Pearl Valley Golf Club member, Rodger Carter, gave their full support.

Dean Meyer, handed over the first phase of the completed work - a 60m2 hall and ablution block.

Haute Dog When pooches and pups of the neighbourhood were invited to strut their stuff, their owners decided on categories to be entered, dusted off the agility aids and, of course, planned outfits. It was, after all, the first time the dogs of Val de Vie Estate stepped into the show ring. WORDS BY THE GR AP EVINE TEAM

Not entirely on the same level of competitiveness, the first Val de Vie Estate Dog Show was an opportunity to show

off the faithful companions of our estate and raise money to help shelter dogs find their forever homes.

A fun Saturday morning in March, in partnership with

Pawpaw Pet Insurance, ensued at The Yard where dogs

lined up to put their best paw forward in the show arena.

Fluffy miniatures, gentle giants and everything in between were cheered on by their fans and family members in the audience.

Our body’s natural barrier against disease is affected by the changing seasons, and with winter on our doorstep, the cold air and lack of sunlight negatively affects our ability to fight infections. his season, it is important to do everything we can to maintain a healthy immune system. It is challenging

to keep viruses at bay during the colder months and

even more so during a pandemic. Although Covid-19 isn’t considered a seasonal disease quite yet, cold weather

leads to behaviour that increases the risk of transmission. During winter, people are more likely to gather indoors,

while a high number of Covid-19 transmissions are driven by people who don’t show symptoms. This means that

being indoors with seemingly healthy people can pose a significant risk. There are also a few extra steps you

can take in the winter months to improve your chances of staying healthy and avoid exposure to Covid-19.

Our first line of defence is to stick to safety protocols,

adhering to good hygiene and not being irresponsible

in our contact with people. We need to be vigilant about social distancing, wear masks in public, avoid crowds and regularly sanitise our hands. However, certain

immunity-boosting behaviours can be incorporated to

strengthen our defence systems and make our body an inhospitable environment for unwanted annual visitors. Practically everything we do daily, from what we eat,

how we exercise, how much we sleep, how we handle stress and who we interact with, will either build up

or break down our immune systems. It is a matter of choice.

the most productive and environmentally friendly ways to

dispose of used stable bedding is by composting. Simon and his team conducted a recent feasibility study on the effectiveness of stable waste on dust control. Used as

a top dressing in an area next to the road that connects the La Vue and The Reserve neighbourhoods, the

stable waste proved to reduce dust and limit erosion by stabilising the embankment successfully.

Interestingly, the experiment with stable waste did not

attract flies to the area. The reason for this is because flies are attracted to horse’s sweat and tears which are full of nutrients while their waste is too dry to breed in. Underfoot

soil when incinerated. They also take about 1000 years to decompose.

Rubber is considered an excellent surface for equestrian applications. A mixture of fibre, rubber crumb and sand

are mixed and used as an ideal arena surface that helps

keep horses healthy and minimises bone concussion and

tendon strain. The rubber crumb provides excellent shock

absorption, and the sand gives enough resistance traction,

because of moving vehicles and because they can slip on the asphalt. Cyclists, dogs on leashes, and general road

noise are all contributing factors that could scare a horse and injure the horse and rider.

‘parliament’, the penetrating gaze of a group of owls gives

Anneke Buys and her daughter Ella are paid regular visits by the owls they have helped rehabilitate

off a range of emotions. Life on ‘Buyscamp’ – as Anneke Buys refers to their home – is literally a feast for these

spotted eagle-owls. Their job is to hunt and devour prey to their heart’s content.

“We approached a local owl sanctuary and offered to

help rehabilitate injured and abandoned owls,” explains

Anneke. “Following a 6-week rehabilitation process here in our garden, the owls were released with the option

to make a new home for themselves in one of the many

owl boxes placed around our property.” But to the Buys

family’s surprise and delight, the owls kept coming back

to their mews and over time, felt safe enough to make their

way closer to the house. “They come over for a braai every weekend and join us on the patio. They are wild animals, but they trust us and are in tune with our family.”

The first owl rescued by Anneke was affectionately named Discoboy because of his love for ‘dancing’ and bobbing his head from side to side when music starts playing.

Living next to a bio-diversity corridor has exposed the

family to many of nature’s treasures. Duiker, porcupine, a

myriad of bird species and a buzzard dubbed Sahara are

regular visitors to Buyscamp. “These animals show us that

man and nature can truly live in harmony with one another, because we need each other,” says Anneke.

The spotted eagle-owl is known as a gevlekte ooruil in Afrikaans. They hunt primarily at night, looking for insects and rodents and on occasion, venomous snakes. Moonlight

baths in shallow streams are part of their nocturnal routine. Listen out at for their mellow, hooting call and duets between life-long partners.

The Best of the Brunch Paired with appropriately celebratory champagne, a gourmet brunch over fast-paced polo was served at the Veuve Clicquot Polo Brunches. W O R D S B Y T H E G RA PEVINE T EA M

T

he sight of Veuve Clicquot branding flanking the

entry to the Pavilion, brought back memories of long

summer days next to the polo field, sipping champagne, networking and enjoying the natural surrounds - sans

masks. While these types of events are not possible at the moment, a series of eight Veuve Clicquot Polo Brunches

served as a mini version of our renowned polo events and delighted all who attended.

Welcomed by the familiar polo sights and sounds, guests

arrived in their Sunday best for a day next to the polo field. Bold colours, stylish patterns and vibrant fabrics filled the grass areas as guests cheered on their favourite team,

curiously educating themselves with the rules of polo. The commentators kept everyone on the edge of their seats and encouraged young and old try their hand at polo, even if it’s only as a throw-in-of-the-ball moment.

Historically presented in the Pavilion restaurant, this

season’s brunches were hosted in the ballroom while

the restaurant undergoes a facelift. The ballroom was

reinvented into a retro-chic, upmarket cafe. Accents of teal

and mustard were incorporated into plush cushions, stylish sofas and suspended velvet lampshades. It was time to paint the Winelands yellow!

A chic epicurean brunch experience The decadent brunch menu consistent of a selection of

artisan cheeses and fresh bread, slow roasted fruits, jams and venison charcuterie served on individual harvest

platter trays. Plated mains included iconic brunch options prepared in new and innovative ways. Gourmet beef

burgers, eggs benedict, salmon bagels and smoked feta salads made for a feast of fabulous proportions.

the first quarter of the year, the sound of majestic ponies galloping summoned young and old to find a spot on

the berms and soak up the energy and excitement of one of the oldest equestrian sports.

Polo is an inclusionary sport. This past season was one

of the most inviting and successful ones to date and the Val de Vie Polo Club welcomed many new players.

getting a horse can be one of the best choices you make. Your children can learn invaluable life skills, including trust, responsibility, empathy and confidence, from

owning a horse. Studies show that children involved with

horses generally obtain better grades because cognitive

abilities directly linked to memory and problem-solving are enhanced.

The answer to when the right time is to buy your child a horse is: “as late as possible”. It would be best if

you were absolutely sure of their commitment, interest,

Tips for Buying a Horse for a Beginner Rider Horses with kind temperaments and experience are

more suitable for beginners. The more experienced, the

better, and with experience comes age. Older ponies are more forgiving of mistakes and far more likely to help you progress with your riding than a youngster will.

Mount suitability. The horse’s temperament must match your ability level as a rider.

Get a trial period. Is the horse responsive to your aids in a pleasant manner? Take the horse out in the open fields past cars, bicycles, dogs etc. and look at how

it responds. Go back and ride the horse several times during different hours of the day.

Have the horse checked by a vet. A complete

examination will highlight things you might not pick up on. Enroll in regular riding lessons.

Get enough bone-in chicken thighs for your family, a can or two of crushed tomatoes (depending on your family

size), mozzarella, a little parmesan or pecorino cheese,

zest from a lemon, olive oil, smoked Spanish paprika and maybe a few sprigs of basil for a touch of green.

Season the chicken thighs with salt, pepper, zest, the paprika and a few glugs of olive oil, then place them

onto a roasting pan and into a 200 ºC oven, skin-sides up, spreading them out as much as you can manage.

While the chicken roasts, warm the tomatoes on the stove with a splash of olive oil and a little black pepper. When the chicken is crispy —about 35 or 40 minutes — put a generous slice of mozzarella onto each thigh to melt.

To serve, spoon warm tomato sauce onto each plate, then top with a cheese-covered chicken thigh, some sprinkled parmesan and a few torn pieces of basil.
