1. Mix the carrot / cabbage in a bowl with salted peanuts, mango / orange and some spinach.
2. Cut red onion in slices and fry in a pan with some sugar to caramelize
3. mix some vinegar with lemon juice, honey / sugar, salt and pepper and cumin powder and add to the bowl with the caramelized red onion
4. mix well and add to taste some soyasaus or vinegar or honey
salad with peanuts and fruit
You can wrap the salad in rice paper and make a sauce from peanut butter, sojasauce, sriracha sauce, and a bit of lime and sugar. Now you have summer rolls!

1. Heat a frying pan with oil and add the ginger, garlic, onion and chili and fry for a bit
2. Add the leftover rice, mix well and add optional a bit more oil
3. After frying for some minutes add egg, maybe one egg per two portions, but you could also do more depending on how dry your rice is
4. Fry the rice on high heat for quite a long time, it should get brown and a bit crispy
5. Add some sojasaus and serve with sesame seeds and some veggies as you like, or with the mushrooms from the oven from the sesame salad recipe

HOW TO FIND A TASCA ?
Originally, a tasca was a kind of tavern where locals from all walks of life went to have a beer with a small snack. These ultimately became real restaurants, always very popular and affordable, and serving homemade daily dishes.
OPTION ONE: check in your google maps for restaurants within the price range of €5 - €10 euros. Check in the pictures if you can spot any old people, paper placements, TV’s, day menus and possibly some dirty windows. If so you’re good to go.
OPTION TWO:
walk around the city, they are widely spread and easy to spot in the wild, and peek through the (dirty) window inside if you can find some of the same features. If it smells already a little oily on the outside you found a winner. You often find the day menu on the window, which is great so you can immediately order when you enter.

1. Chop mint very small or put in the blender and mix with sugar

2. In a glass mix soyasaus, rice vinegar, peanut butter / sesame paste, soybean paste, sugar/honey and some oil and when well mixed add to the pot

4. add boiled water with bouillon and cumin powder to the pan and let it simmer for 20 minutes
5. in the meantime prepare the noodles
6. taste the soup and add more soyasaus/ vinegar to your taste
7. serve the soup in a bowl with the noodles, sesame seeds on top and a piece of lime

Add the finely chopped onion, garlic, ginger and chili to the pot. Fry for some minutes.
Add the lentils and curry paste and fry for a minute.
Add boiled water, bouillon powder and some spices like curcuma, cumin, oregano, and salt and pepper. Put the lit on top and let it simmer. Cut the tomatoes and carrot in small cubes and the mushrooms in bigger cubes, add to the pot.
Let it simmer for about half an hour, cut in the meantime the coriander and cherry tomatoes and mix the yogurt with a bit of lime juice, salt and pepper, cumin powder and sugar. Serve the lentils with the fresh coriander and cherry tomatoes on top and a bit of the yogurt sauce on the side

Bingo in Porto is next level. Especially bingo Trindade. A big building with neon flickering letters shouting BINGO into the streets. The entrance is chic; you climb up the stairs and enter on the right side a marble lobby with a golden buddha statue and some fancy furniture. Climb the marble stairs one more level up and you will
encounter a closed door with a guard and possibly a line of people. Once the door opens you will enter a big room with a red carpet, lots of TV’s with numbers, colorful lights and many concentrated people eager to win. Pick a seat, in case you don’t speak Portuguese pick one with a good view on the TV’s.
The numbers go extremely fast so be prepared.
But after some rounds you will figure out a technique that works for you. You can stay on the first level and sit with the older generation, or go upstairs into the party area with the young people. There are peoples who will come to your table from whom you can buy a bingo card for €1,- and you can start playing. We love to go on Wednesday because free food and free drinks. They will come to your table to ask what you want and

5. After 20 minutes check if the vegetables are cooked and add to taste salt, pepper and spices.
6. Serve with rice or with a salad on the side and some coriander

This salad goes very well with chickpea pancakes with yoghurtsaus. Mix chickpea flour with water, green chili, ginger, garlic and some dried spices like cumin and curcuma. Let the batter rest for half an hour and then bake pancakes from it. In a bowl add some yogurt with lime juice, salt and pepper, cumin powder and a bit of sugar. Serve the pancakes with the salad and yoghurtsaus.
sesame salad with mushrooms
1. mix the peanut butter/sesame paste with sojasaus, rice vinegar, oil and sugar/honey
2. chop the mushrooms in dices or if they are small leave them whole, they should not be too small
3. Mix the mushrooms with the ⅔ of the paste you made in step one and add them to an oven dish, top off with sesame seeds and put it in the oven on 200°C for about 45 minutes up to an hour, check regularly. Take them out just before they burn, they will be sticky and chewy
4. In the meantime, mix in a bowl the spinach leaves with chopped cucumber, sesame seeds and the leftover of the paste you made in step one.
5. When the mushrooms are done add them to the salad and add to taste some salt, pepper and soyasaus
1. Smash the bananas with a fork or something else in a big bowl
2. Add two spoons of peanut butter and mix well
3. Add all the other ingredients to the bowl and mix. If the consistency seems to dry add more milk and a bit of oil, if it’s too wet add some flour. It should be quite thick.
4. Chop the dark chocolate in chunks and add to the batter
5. Put a baking paper in an oven dish or a cake tin and add the batter, bake on 180°C for around 45 minutes - 1 hour

You can replace the banana, peanut butter and Wchocolate with other ingredients, like raspberry with dark chocolate, lemon with poppy seeds or pear with nuts. You might have to change the amounts of ingredients a bit but you can experiment with that.
