HIGH AND CONSISTENT QUALITY We deliver on the quality agreed with our customers. Our FSSC certification and strict quality control system enable us, again and again, to give our customers a uniform standard according to the agreements made for the products and their quality. We perform sampling of each delivery, then perform process controls and a final quality control to document our entire production process.

This enables us to quickly identify any irregularities and thus avoid further difficulties in the downstream refining process. The quality management process includes all significant activities within our processing units. We selected the following areas for special attention in our work processes and products.

QUALITY ASSURANCE FROM FIELD TO FLOUR Our own laboratories at the mills undertake the following activities:

Our system for quality assurance and traceability ensures that in the event of any failure in a supply chain or a production process, we are able to identify the affected products easily.

CERTIFICATIONS FSSC CERTIFICATION: Our production facilities in Esbjerg, Køge, and Svendborg are certified to meet the FSSC standard, an internationally recognised and comprehensive standard for food safety, food quality, and related legislation. We chose to certify per the FSSC standard so that we may continually develop our organization and at the same time meet customers’ evolving demands for flour that lives up to a high level of quality in terms of the agreed norms.

We offer a wide range of organic grains and kernels processed at our three CO2e neutral mills in Denmark.

We adhere to the UN goals for sustainable development, and we keep developing new processes to protect the food supply and the health of people in optimal ways. We want to offer everyone all the best in food products – now and in future.

CO2e NEUTRAL MILLS As of 1 January 2022, all our mills are CO2e (carbon dioxide equivalent) neutral. We minimise the climate footprints of the mills by purchasing green energy from windmills in Denmark, adding up to about 80% of our mills’ footprint. We then compensate for the remaining CO2e emissions by investing in international climate projects focusing on tree planting and forest protection. That way, we make the mills climate neutral with respect to CO2e.

Collaboration with selected growers to foster even more sustainability We work closely with the growers who supply grain to our mills with the goal of becoming even more sustainable. We are working on enhancing the growing of grains in terms of nature conservation and protection against climate change, and we prioritise buying from local growers to minimise transportation and related CO2 emissions.

ROLLED KERNELS

EASY KERNELS

Rolled kernels are whole, cleaned kernels of different grain types, lightly rolled to break the bran, allowing the kernel to be easily broken. Only the best and biggest kernels are selected for this type.

Easy kernels are toasted or roasted by us as either whole or coarsely-chopped/cracked kernels.

The use of rolled kernels means large or whole, soft and visible kernels in the baked product, letting you achieve a rustic kernel texture, maximum freshness retention and a juicy crumb. Rolled kernels have to be soaked for 3-4 hours before use to let them absorb water. But they are much easier and faster to work with than whole or sliced kernels, as they also absorb water faster. Rolled kernels can be soaked and baked the same day, which can give extra flexibility to production. Organic grain variety options Rye, wheat, oats, barley

When using Easy kernels in bread products, you get a visible kernel texture and a wonder­ ful rounded, characteristic taste from the roasting process. The kernels can be used directly in most types of bread dough, giving moist, delicious bread with soft kernels in no time. They are perfect for flexible productions – and contribute to less waste. Easy kernels also have the advantage of absorbing around twice as much water as traditional (sliced) kernels. Organic grain variety options Rye, wheat, oats, barley


SLICED AND CRACKED KERNELS Classic, whole, cleaned kernels of different grain varieties sliced into 2-3 pieces. Sliced and cracked kernels give visible kernels, great texture and bite in bread. They require soaking for at least 8-12 hours before being added to a dough. Organic grain variety options Rye, wheat, oats, barley

PUFFED KERNELS These are whole, cleaned kernels of different grain types that are ‘puffed’ by adding steam, heat and pressure. Puffed Kernels give very large, visible kernels and a great nutty taste to bread products. They are ready to use as they are, for instance in bread dough, and do not have to be soaked. They are especially good for the soft, rustic dough types, for which their ability to soak up water ensures longer freshness of the finished product. They are ideal for soft bread types, helping ensure longer freshness by absorbing moisture. Last, but not least, they are also perfect for breakfast products, thanks to their characteristic taste and suitability as a wholemeal source. FLAKES AND GROATS Fine or coarse – organic flakes give texture and taste to breakfast products and bread.

FINE-ROLLED FLAKES Our fine-rolled flakes are whole kernels that are steamed and then fine-rolled. Fine-rolled flakes are ideal for decoration on bread products, but can also be used for taste and texture or as a source of wholegrain. Fine-rolled flakes can also be used for a wide range of breakfast products, such as muesli, granola etc. Organic grain variety options Rye, wheat, oats, barley

GROATS Groats of different grain types are whole kernels sliced into 2-3 pieces, steamed and then rolled. They are often used in bread dough such as sources of wholegrain, as a texture giver, retainer of freshness or as decoration on bread. DECORATION Decoration is composed of coarse-ground kernels, for some products with a little of the flour sifted out. For rye kernels, the whole kernel is used, while a little of the flour is sifted out for wheat kernels. Can be used, for example, as decoration or for breakfast products (e.g. muesli and granola), but also ideal for direct use in bread dough. COARSE-ROLLED FLAKES Coarse-rolled flakes are whole kernels of grain that we first steam and then coarse-roll in our own mill. They can be used direct in bread dough for taste and texture, as a source of wholegrain or just for decoration. BRAN Bran is the husk of grain kernels. The husk is full of fibre, and bran therefore adds lots of dietary fibre and great taste to different breads and other baked products.
