THE POWER OF A SLOGAN
W
hile the primary purpose of clothes has always been to clothe the body, there clearly is another function, too. There is a special bond between our wardrobe and who we are, and sometimes clothes can speak louder than words. Every style has a story to tell. Even the classic t-shirt, jeans and sneakers combination is a record of who we are. But while the message our outfit portrays can be interpreted differently, there is something that always makes it clear. The fashion space is currently obsessed with

this season’s boldest trend: the slogan t-shirt. Fashion and politics have long been linked. The political causes are instantly mirrored on the runways. Many designers choose to address politics and raise awareness through their catwalk collections during Fashion Week. It was English fashion designer Katharine Hamnett who had first pioneered the political slogan t-shirt in 1983. The oversized wordy tees with different captions including ‘Choose Life’, ‘Use a Condom’ and ‘Peace’ were used to shine a spotlight on important issues. Today, the political power of the slogan
t-shirt is relevant like never before. It is perhaps unsurprising that recently, designers took an opportunity to comment on the most topical social and political issues of the past months. The fashion industry has seen a wave of slogan tees with different captions including the infamous ‘We should all be feminists’ tee from Dior’s SS17 collection, Prabal Gurung’s AW17 t-shirt that reads ‘The Future is Female’, Jonathan Simkhai’s AW17 sweatshirt stating ‘Feminist AF’ and other pieces, which communicate the message in a very literal way. >>

FASHION The fashion public jumped fully on board with the trend. Politically inspired slogan t-shirt can now be spotted worn by every fashionista out there, and magazines are happy to reveal how to integrate these items into your wardrobe. The question is: are the wordy tees a rich opportunity to demonstrate your political and social position, or is it just a fun way to wear a trend? Do the street stylers spotted on Manhattan’s sidewalks support immigrants or do they wear the ‘Immigrant’ sweatshirt from Ashish Gupta because it’s a bold trend and the most desirable piece to own these days? Surely, wearing a slogan t-shirt or symbolic garment means agreeing with the message written on your chest. It’s a way to show your solidarity. Otherwise, what’s the point? The texts are usually simple and straightforward, making it impossible to misunderstand the meaning or get lost in cultural labyrinths. Although, it seems there are those who don’t worry about the message their outfit portrays. Lately, Kim Kardashian was spotted wearing a Vetements hoodie adorned with the hammer and sickle. The bold fashion choice raised some ethical questions. The reality star has been accused of appropriating communist symbols — hammer and sickle represent a political and cultural struggle — and there were even theories that Kim is connected to Vladimir Putin.
But it’s unlikely that Kim is an actual communist or she brought up communism on purpose. It is also highly questionable if there is a real understanding of the communist regime and its history. Perhaps, it’s just a way to make a fashion statement and wear a $700 hoodie from the Paris-based label. But not only clothes speak louder than words, the rule works the other way round, too. The people who wear clothes from a particular brand define its image, which sometimes opens up a door to it being misinterpreted. Thrasher magazine is known for being “The Bible” for skaters.
Think skater legends, blood and scabs. Now imagine what they feel when seeing Justin Bieber’s Instagram selfie wearing the Thrasher tee. The answer is pain. Recently, the Thrasher logo has also been made into a fashion trend. In his interview for Hypebeast, the legendary editor-in-chief of the magazine Jake Phelps expressed his dissatisfaction at celebrities who wear the t-shirt, “We don’t send boxes to Justin Bieber or Rihanna or those fucking clowns,”he said. But whether he wants it or not, the slogan tee is currently making rounds on social media, writing a new chapter for Thrasher’s history. Ten years ago, it would have been hard to image there would be so much attention to slogans written on our clothes. But we are now living in the social media age when every statement we make — whether with our own words or written on our chest — can be tracked. It’s a new responsibility. We are what we wear. [ V ]

rganised by ALS Malta, The Malta Art Fair is set and ready to attract the general public its doors where art of all mediums and styles will be exhibited in booths side by side. VAMP finds out more from Claude Camilleri, events manager, before the big weekend arrives. How has The Malta Art Fair come to exist? The Malta Art Fair is a natural progression of small and large exhibitions and events over the years and ALS Malta has organised exhibitions and collaborated with artists since not long after the foundation began. So when Bjorn, the founder of ALS Malta, and I met through a mutual friend, the Malta Art Fair was founded and work began. Being the first, has it been a challenge to organise? The venue is very large, offering over 2,000 square metres of exhibiting space with multiple booths for artists and galleries alike – a challenge in itself. Also, the timeline to complete the fair from concept to opening is under six months – a challenge, to say the least, but we are confident that it will be wellachieved in time. What is the association with The ALS Foundation? ALS, or amyotrophic laterals sclerosis, is a progressive neurodegenerative disease that affects nerve cells in the brain and the spinal cord. The profits of the Malta Art Fair will go to the ALS Foundation.
Who is exhibiting? The Fair involves a diverse collection of artists and galleries exhibiting with a wide variety of styles. The response has been overwhelming and the mood of the artists is upbeat and confident – and rightly so! It’s the right time to hold such an art-related event in Malta. You can find out more from the posts of participating artists on The Malta Art Fair Facebook page with links to the events page. What is the price range of art available? The art on display is mainly affordable. However, the price range will vary by artist or gallery. Exhibits will include art on canvas, sculpture, drawings, illustrations, prints, open and limited editions and other various mediums. Tell us about one of the attractions at the fair? The attraction is the art itself: there will be a lot to see. Of course, we will have some light entertainment, but the main focus will be the art. Which artist or gallery should we look out for at the fair? Well... that’s for the visitor to discover and decide! It would be inappropriate for me to share any favourites and, of course, beauty is in the eye of the beholder! Will this be an annual event? What outcome do you anticipate? The delivery and outcome of the first fair is important. The idea is to continue holding it and grow every year. It will lay the foundation for an annual event and for more art fairs to follow but, of course, our focus remains on the present. It is 2017 and we are ready to deliver! It will be grand – that’s the only way we visualise the Malta Art Fair to be. It’s time for art to be seen by the general public and I believe Malta is ready.
What is your own background in art and events? I have been interested in art for as long as I can remember. However, I actively started my journey in the art industry in 2012 with an exhibition and event called The First Pop. Lots of thought and preparation went into this unusual exhibition and I was delighted when I had my first newspaper review, on Malta Today, by Jason Patrick, entitled ‘An Exhibition with a difference which will Pop Up the art scene’. This was the goal and the foundation for what I have been doing ever since. What are your thoughts on the Maltese art scene? The Maltese art scene is growing, with more galleries and art studios popping up. This is great! I believe that Malta can be a hotspot for art in Europe. Work is being done; confidence in creativity is growing. Individually and collectively a lot can happen. The presence of everyone at the fair is the key to furthering the collective growth and future success of the fair and its participants. We look forward to seeing you in May!

TRUE GRIT: Have you got what it takes to be a millionaire? Do you have to be born rich, born greedy or? John Baker examines the desire and drive to make serious money. “When I first started the business, my mom was still tucking me in at night.” Emil Motycka started mowing lawns at 8 years old. At 13, he took out his first loan: $8000, to purchase a commercial lawn mower. At 14, he purchased a truck. He’s now making millions. Evan started a YouTube channel called EvanTube when he was just 8 years old. Now he is making approximately $1.3 million a year from his channel, with over a million subscribers. Not surprisingly, his videos are about reviews of toys and other games. Yes, you can get rich talking about Minecraft, Angry Birds and Legos! It is easy to label these kids as child prodigies. This is because of a deeply ingrained “us vs them” mentality that the middle class have. Middle class people are usually folks who have a solid education, excellent soft and hard skills and earn enough to make a comfortable living. Yet, the lingering feeling of most of them is that the rich keep getting richer while the average middle class is stuck in the same old spot. A quick calculation will reveal that even saving more than 50% of an above-average monthly pay cheque for the rest of your working life won’t get you even close to becoming a millionaire. And even if you are determined to live a frugal existence and somehow reach millionaire level by retirement, don’t we all want that money now, early in life when we are at the best of our health? The most common myths about millionaires is that they were born rich or that they are incredible geniuses. Thomas C. Corley, author of the bestselling “Rich Habits” set out to debunk these myths by spending five years researching the daily habits of 177 self-made millionaires. His conclusion is that we have much more control of our destiny than we think. “From my research, I discovered that daily habits dictate how successful or unsuccessful you will be in life," he writes in his upcoming book ‘Change Your Habits, Change Your Life.’ "There is a cause-and-effect associated with habits. Habits are the cause of wealth, poverty, happiness, sadness, stress, good relationships, bad relationships, good health, or bad health." One of the most important habits highlighted in Corley’s book is reading. The rich would rather be educated than entertained. As Corley writes, "Eighty-eight percent of the rich devote thirty minutes or more each day to self-education or self-improvement reading. Most
do not read for entertainment: the rich read to acquire or maintain knowledge." Corley found that they tend to read three types of books: biographies of successful people, self-help or personal development, and history. Unfortunately our schooling system education is often purely focused on finding a job. But the wealthiest commit to self-education long after they’ve finished university or any formal education. You might think of it as continually updating your mental software. If you want to be rich, your definition of lifelong education has to be broader than simply reading books. Motivational speaker Jim Rohn famously said that we are the average of the five people we spend the most time with. I urge you to stop and think about this for a moment. Does it apply to you? This relates to the law of averages, which is the theory that the result of any given situation will be the average of all outcomes. When it comes to relationships, we are greatly influenced by those closest to us. This affects our way of thinking, our self-esteem and our decisions. Of course, everyone is their own person, but research has shown that we're more affected by our environment than we think. This will of course come into play when you are seeking to increase your wealth. "You are only as successful as those you frequently associate with," Corley writes. "The rich are always on the lookout for individuals who are goaloriented, optimistic, enthusiastic, and who have an overall positive mental outlook." Whichever way you look at it, you can read and mingle with successful people all you want but, ultimately, the single trait that is mostly identifiable in successful millionaires is their determination. In any self-made millionaire autobiographies, you will find that the word “grit” is often emphasised ad nauseam. This is not just a cliché. Life will test you; the road to fortune will always be an uphill battle and the closer to the goal line you get the steeper it becomes. Napoleon Hill, author of the timeless book “Think and Grow Rich” states that the key to staying determined is desire. In one of the most beautiful sentences in his book he writes that “weak desires bring weak results just as a small amount of fire makes a small amount of heat. If you find yourself lacking in persistence, this weakness may be remedied by building a small fire under your desires.” Can we conclude that the only reason that we are not rich is that we don’t desire it enough? The most important thing to remember about money is that regardless of your education level, IQ score, or grades, the key to riches is in your hands. Money should not be looked at from the perspective of fear and scarcity but from the perspective of reward and abundancy. If you are not rich, maybe it’s time to change the way you think about money. We live in an age where economic inequality is a hot issue and many people go as far as accusing the wealthy of having some sort of unfair advantage. Those are easy accusations to make and they resonate well with some people. But the truth is, there are no unfair advantages. The final millionaire trait I want you to consider is this: millionaires feel that they deserve it. I believe we all do, just as long as we desire it enough. [ V ]

Getting to know Stefanie Andersson 1. What is your favourite way of gathering new ideas to create your concepts? I tell stories: earlier with words, now with pictures. Ideas pop into my mind pretty much all the time. I mean, look around you! The world is like a huge field filled with flowers. You just have to go and pick what you like. I have a past in advertising as I used to work as a copywriter for almost 20 years. During that time I had the opportunity to work for really creative agencies such as Ogilvy & Mather, BBDO and Jung von Matt. Conceptual thinking has been a huge part of my work since the very first day and helps me very much, even with my photography. 2. You've got quite a diverse portfolio, from fashion, to breathtaking portraits and also more commercial advertorials. Which of these segments inspires you to get into the studio each morning? I just love to shoot people. And it does not really make a difference for me if it is fashion, portrait work or advertising. I approach everything the same way: what is the story I want to tell? What is the message? So far I have been lucky enough to work with really creative art directors and clients that appreciate the way I see things and gave me the freedom to shoot in my very own way. When shooting portraits I try to get under the skin of the person in front of my camera. The moment a person lets her guard down and shows me her real, inner self is a very valuable moment. I try to achieve that in everything I do. 3. The subjects in your portraits all seem to have a story behind them. How do you choose your subjects and what do they reflect? Most important is an individual look when I choose a person I want to shoot. I prefer to shoot people with idiosyncratic features such as jug ears or a gap between their teeth. Too much beauty and perfection bores me, so I often end up taking pictures of friends and acquaintances. When I work with a model from an agency, I pick someone with special features that fit my individual idea of beauty.
to go for it and try to make a living from it. So I enrolled in Sweden’s prestigious college Fotoskolan Gamleby and studied commercial photography. After that I assisted various wellknown fashion and advertising photographers before I decided to try to make a living from my own work. After all those years in advertising I knew that I had to reach a certain level before promoting myself to professionals. It was tough in the beginning! I was already 42 when I went back to studying full-time but it was the best decision I ever made. I do not regret a single moment, though I had to live on instantnoodles quite a while… ha ha! 5. What's been your career highlight so far? I was practically still in college and got asked by the theatre in Örebro where I live if I wanted to shoot their campaign. It was “the” job in our city and every photographer really wanted to land it. It was a big thing, especially the picture we shot for Shakespeare’s “The Tempest”. We built a huge set in cooperation with the theatre’s carpenters exclusively for the shoot and there were 8 or 9 actors involved. Plus, of course, all the stylists, hair and make-up artists, director, art-director, choreographer, assistants, chief of the theatre and many more. I almost shit my pants the day before! But it went fine. I love the picture to death and it gave me a lot of self-confidence. 6. What are you most excited about for 2017? Oh, there are so many exciting projects coming up! I can’t really decide which one I am most looking forward to. Right now I am working on around 6 shoots at the same time and every one is going to be a blast. So stay tuned! Quick answers 1. TRAVEL Enter the charming boutique hotel, Monaci delle Terre Nere, at the end of a gravel road which dates back to the times when local monks saw the potential of the mineral-rich soil at the foot of Mount Etna and started farming the land.
At Monaci delle Terre Nere the overall atmosphere throughout – from the design and comfort of the suites to the service in the restaurant – is a relaxed, honest approach to hospitality.
This 40-acre estate is a working organic farm which doubles up as a boutique hotel with 21 beautifully unique, guest rooms and suites. They all have a down-to-earth atmosphere without sparing any creature comforts.
The brains behind the project are Guido Coffa and cofounder Ada Calabrese. Guido explains that his wish was to preserve the historic identity of the territory. “More than being just a boutique hotel in Sicily, it is a home which I hope retains its intimacy.”
The organic farm provides the boutique hotel restaurant with its produce served at the restaurant, pool bar and for breakfast – mostly ‘farm to fork’. The aim is to instil in the guests the same passion towards traditional methods of growing, cooking and serving food.
The manager Andrea Lo Manto further explains what this place can offer its visitors: “Monaci delle Terre Nere is an estate of 24 hectares (60 acres) located at the slopes of Mount Etna, the biggest active volcano in Europe, on the border of the Etna National Park, >>

There are several adventures possible through our vineyards and olive groves. One can even collect some freshly-laid chicken eggs for the chef to cook for them. “Although this is primarily a relaxing holiday, there is plenty to do to keep active: a great playground for children, swimming in our pool, cycling, hiking, cooking classes, wine tastings and shopping in our exclusive boutique. “The suites are independent buildings within the estate where traditional Sicilian architecture is combined with

contemporary art. In the process of restoring the buildings, the principles of bio-architecture were applied and part of the energy supply comes from renewable energy. “Here at Monaci we try to give our guests back a true sense of time. Our biggest reward is when our clients, who usually book for 1 or 2 days, decide to prolong their stay for 2, 3 and even one week. What made you decide to visit? Despite having traveled to some of the worlds most exotic places, my husband and I, ‘strange as it sounds’ had never visited Sicily before. Since I am pregnant and also have two girls and a boy, we figured it would be much easier to drive in our own car. When i stumbled upon Monaci when searching for luxury accomodation’s it didn’t take me long to decide. It was perfect. Monaci Delle Terre Nere was ranked
one of the best and very good for children, surrounded by blissful scenery and also offering organic breakfast and cuisine. What is your most memorable moment? Sitting by the fire at night, listening to the rain outside and suddenly feeling the initial tremor’s of etna blowing it’s top. We weren’t aware of the eruption until one of the Monaci staff confirmed to us Etna had erupted on south east side, right
where we were located. It felt like a dream! We literally had views from our room of Etna erupting for 3 days! Can you say something about the sounds, scents, sights and tastes of the Monaci delle Terre Nere? Relaxing in your private garden with the ocean in the distance and the rumbling sounds of Etna coursing through your body as it erupts. The sounds of the birds, combined with the
soothing stillness only nature can provide. It’s these epic memories that last a lifetime.

As space becomes an even more cherished commodity for most people, making optimal use of it is forefront of all those renovating small spaces in sought after areas. Location is key for many, minimising travel time and being in the heart of the action is attractive as both a lifestyle choice and as an investment for buyers with a view to get a good return on their property within a few years. A bit of the authenticity that comes with buying an older type space and re-designing for today’s living expectations is also of appeal for couples who want to create a home together. The Barcelona urban beach home owned by a young couple based in the traditional fisherman’s neighbourhood has all these aspects. >>

he design project was undertaken by Eguey Seta, whose vision was to simply redefine the space as 3 interconnecting rooms with beautiful calming surroundings to create comfort and a discreet difference between the public and private spaces. Achieving this balance can be challenging when in a bid to make the space appear larger, walls and doors were stripped out. Glass partitions framed by iron joinery are used in their place and greenery was chosen to assist in dividing the spaces naturally whilst enabling air-flow. The sense of continuity happens with the similar pieces of furniture style and the understated use of the colours in understated blue and green which is typical of the cottages and homes in this village but usually much more vivacious and present. The glass and materials are not anything out of the ordinary, but the mix of choices and their combinations with the play of light both natural and from electric sources on the brick walls in comparison with the glass panes bring an elegance to this urban beach home. A design project like this utilizes the natural features and re-interprets the traditional looks of the past whilst adding clean lines and functional features in the living space. A bit like a drawing with clear outlines and colour embellishment the defined lines give a sense that every item has been preprojected in its space, there is no haphazard chic here, the space is easy to maintain and look after as everything has a home. This looks like a serene peaceful and light-hearted space for the owners and their guests to enjoy. >>

oven deep into the fabric of the human body is an elaborate system of proteins known as cannabinoid receptors which are specifically designed to process tetrahydrocannabinol known as (THC), which is one of the primary active components in cannabis.

As it turns out, based on the findings of various scientific studies, human breast milk naturally contains many of the same cannabinoids which are found in cannabis, and which are actually extremely vital for the proper development of the human body. Our body’s cell membranes are equipped with these cannabinoid receptors and when activated by cannabinoids and other nutritive substances, protect cells against various ailments such as viruses, cancer, harmful bacteria, various serious malignancies and more. Research shows that human breast milk contains a high source of endocannabinoids, a type of neuromodulatory lipid that basically teaches a newborn how to feed by stimulating the suckling process. So a newborn child would not know how to eat, nor would it have the urge to eat, if it were not for these cannabinoids found in breast milk. Strange as it sounds, it’s similar to how people who smoke weed get the “munchies”. Newborns who are fed their mother’s milk receive doses of cannabinoids which trigger hunger, promoting healthy growth and proper development.
There is little doubt about the huge medicinal value cannabis offers, but despite its potential, despite the endless multitude of evidence from scientific studies conducted in every part of the world, despite the fact that it is virtually unmatched by any modern medicine, it remains for some reason illegal and widely unavailable to people who need it.
So what does this mean for the boobless human? The human body for both male and female contain two types of cannabinoid receptors – the CB1 type found in the brain and the CB2 type found in the immune system and the rest of the body. These receptors respond to cannabinoids, be it from a mother’s breast milk in infants, or from juiced, vaporized or smoked cannabis, in both male and female adults. So to sum it all up it’s pretty safe to say that the human body seems to have been constructed for cannabinoids, since these nutritive substances play a critical role in boosting immune function, protecting cells against disease, relieving pain and diseasecausing inflammation whilst protecting the brain and nervous system, promoting proper energy metabolism and appetite regulation, treating metabolic disorders and multiple sclerosis and preventing neurodegeneration, among many other conditions. Cannabis, from which cannabinoids are largely derived, truly is a health-promoting “super” nutrient with virtually unlimited potential in health promotion and disease prevention.
Patients are basically being force fed expensive artificial pharmaceuticals (which contain a whole array of horrible side effects and chemicals) and stand the risk of being arrested if they simply choose to try a God– given natural alternative to relieve their suffering. I find it shocking at how someone in pain can be denied relief, regardless of what the substance is. But on a brighter and bolder note, it seems Malta is rising above and reassessing its stance on the subject. Thanks to the great work of a few medical professionals at The Pain Clinic in Paola, progress is being made to make Bedrocan available, which is a pharmaceutical-grade cannabis (can be smoked, ingested or vaporized.) There is also the possibility of local cannabis dispensaries in the future. The taboo associated with cannabis is, thankfully, in the process of being eradicated and with a little luck, tens of thousands of people can soon enjoy a natural and healthy form of therapy without any dangerous sideeffects or the fear of being arrested. SPRING GREENS, FENNEL, APPLE AND WALNUT SALAD [ SERVES 4 ] 4 celery stalks, peeled 1 fennel bulb, halved and finely sliced on a mandoline 1 cucumber, seeded and sliced 6 yellow cherry tomatoes 6 red cherry tomatoes 2 heritage tomatoes, cut into wedges 4 leaves savoy cabbage 1 zucchini, finely sliced Hung yoghurt, whipped with olive oil and chili pepper (in a piping bag) 250g pecorino cheese, shavings Few walnuts, toasted 1 green apple, cored and sliced Dressing: 30ml olive oil 15ml sherry vinegar 10g chopped parsley 10g chopped chives 5ml lemon juice 8g honey 2g salt Whisk all the dressing ingredients together. Mix all the salad ingredients together (except the walnuts, yoghurt and pecorino), season with salt and pepper, add enough dressing to evenly coat the ingredients. Arrange the salad in the plate and decorate with dots of the Hung yoghurt, and scatter the walnuts and the pecorino over the salad. Serve immediately.
ROAST LAMB RUMP WITH PEA AND ASPARAGUS PURÉE, MINTED NEW POTATOES AND SPRING GREENS [ SERVES 4 ] Dressing: 4 celery stalks, peeled 2 lamb rumps 4 garlic cloves 2 springs of thyme 4 springs of rosemary 50ml olive oil 30ml vegetable oil 30g butter
Marinate the lamb rumps overnight in the olive oil, garlic and thyme. Heat the oven to 180 degrees. Heat the vegetable oil in a pan and start the lamb fat side down on a medium flame. Keep turning and basting to get a nice caramelised colour and render the fat down. Place the rosemary on an oven tray, cover with the lamb rumps, top with the butter and roast in the oven for 8-10 minutes. Remove from the oven and allow to rest before carving. Season with some sea salt before serving. Pea & Asparagus Purée: 200g peas 100g asparagus 4g salt 20ml cream 15g butter Bring to the boil lightly salted water and blanch the asparagus. When just cooked refresh in iced water, repeat the same process for the peas. (This needs to be timed to keep the vibrant green colour). Using a food processor, blend the peas and asparagus with a few ice cubes (this will ensure that the vegetables do not heat and start to cook, thus losing their colour). For a smoother texture, pass the purée through a fine-meshed sieve. To heat it up, first warm the cream and butter, reducing to a thick consistency. Add the purée, heat and adjust seasoning. Serve immediately. Minted new potatoes: 300g new potatoes, washed Bunch of fresh mint, a few leaves reserved for garnish Salt Olive oil to drizzle Place the potatoes and mint in a pot of cold salted water. Bring to the boil, reduce heat to a simmer until cooked. Remove from heat. To serve, drain water and remove the mint, dress with olive oil and sea salt, garnish with the fresh mint leaves. Dress the plate with selection of green spring vegetables sautéed in olive oil and chanterelle mushrooms cooked in butter and garlic.
EASTER EGG NEST, FRIED CINNAMON PASTRY, YLANG YLANG BAVAROIS, TEXTURES OF CHOCOLATE, FRUIT COULIS Pastry: 4 celery stalks, peeled 250g plain flour 1 tsp cocoa powder 30g butter, softened 25g sugar 60ml white wine 1 egg, beaten Oil, for deep-frying Icing sugar, to decorate To make the pastry, place the flour, cocoa powder, butter and sugar in a large bowl and mix well. Gradually add the wine and mix until the mixture forms pastry dough. Form the pastry into a ball and wrap in cling film. Leave to rest for an hour. Lightly flour a clean work surface and roll out the pastry to a thickness of about 3mm. Fold pastry and slice using a knife. At this stage you should end with ribbons of pastry similar to tagliatelle. Loosen and then place into rings of a diameter of about 5cm. Heat the olive oil in a large pan to 180°C. Fry the cannoli until golden-brown. Drain on kitchen paper and gently remove the moulds. Leave to cool. Egg-Shaped Mousse: 30ml olive oil 250g cream 200g white chocolate 100ml water 2 gelatine leaves Few drops Ylang Ylang flavouring Whip cream, melt chocolate and add to warm water and gelatine. Leave to cool for five minutes and then fold into cream, add flavouring. Pipe into egg-shaped moulds. Freeze until needed. To finish plating, start piping random dots of fruit coulis, place pastry nest. Arrange eggs previously coated with coloured cocoa. Grate chocolate. Place micro leaves and white chocolate powder.
