11–13 SEPTEMBER 2015 The whole of Chapelfield Gardens in the heart of Norwich city centre, has been secured for this two day, inaugural event, taking place on 12th and 13th September with plans to involve transforming the gardens into a food and drink village, featuring a producers’ marquee, bar, the City Farm, Feast on the Street, cookery demonstration theatre sponsored by Norfolk County Council, and live music and street entertainers. The Away Kit: designed with fans in mind
Vanilla talks to Steve Balmer-Walters, Head of Retail at NCFC
L
AST MONTH Norwich City Football Club (NCFC) launched an astonishing three kits to kick-start the 2015-16 Premier League season. Since then, all three kits manufactured by family-run Italian company Errea, have created debate from the fans of our home club and have gone on to achieve record sales figures. We caught up with Steve Balmer-Walters, Head of Retail at NCFC to find out how he came up with the distinctive designs of this year’s kits. To mark the 80th anniversary of Carrow Road this year, Steve took inspiration from the longest worn shirt in the club’s history. “Inspiration was taken from the ‘half and half’ home kit August/September 2015 Vanilla
which was adopted in 1927 and worn for a total of twenty years and the design was implemented into this year’s home shirt,” explained Steve. “The ‘pin stripe’ away kit however was very much designed after talking to fans at away matches. I often used to hear how the fans wanted to represent their club, showing their colours when away from home. They wanted to feel ‘at home from home’ and that’s what sparked the creation of the 80s inspired green shirt with yellow pin stripes.” Steve, who works very closely with Errea, flying out to Italy on a regular basis to ensure the vision and designs are on point and on trend, wanted to introduce a third
kit to the 2015-16 season. The third kit, or alternatively known as the ‘hoops’ kit has made history for the club as it is the first third kit designed and manufactured for the Premier League. “I wanted to create a design that had the ‘fun factor’ and a design that was really out there. As hoops have never been used on a City shirt before, I thought it would be a good fit for the first City third shirt. For me, the hoops represent connecting with our customers, and the shirt is all about having fun in the community. This shirt is like marmite, you will either love it or hate it and that’s the fun part about it.”

ACH KIT, which retails in all three Canaries Official stores across the city (Carrow Road, Chapelfield and Castle Mall), and on the club’s retail website shop.canaries.co.uk, is entirely different. “With different collars and sleeves, shorts and socks, the home, away and third kits are completely unique, which I believe is a massive selling point for the customer.” “A lot of time goes into choosing the fabric to use and there are many factors to take into consideration, such as breathability and performance. The world-renowned Mundial fabric used on each kit is a high performance technical fabric which is also used by clubs in the highest professional leagues of Italy, Spain and France.” The next job for Steve is to start thinking about the designs for the 2016-17 season, in the retail world, it never stops! HE 1950s were the golden years for charm bracelets. They were spotted in magazines on the arms of celebrities and politicians wives. Mamie Eisenhower and Jacqueline Kennedy showed off their bracelets in photos of the period. Elizabeth Taylor had a large collection of charm bracelets and wore one almost everywhere. Then the women’s movement of the 1960s ended the explosion of popularity for the charm bracelet. The marriage, homemaker, and motherhood goals of earlier times were replaced with freedom and career ideals and charm bracelets seemed out of touch. Besides who would wear a dangly dainty charm bracelet with hippee beads and bell bottoms?

NTIL ABOUT 15 years ago, the words ‘charm bracelet’ were used to suggest a simple, link chain with little figures (rabbits, fairies,

hearts, stars, that sort of thing) dangling off it. The modern charm bracelet, on the other hand, is more akin to a silver rope upon which expensive beads are threaded. Perhaps someone has bought you one with a single ‘charm’ as a present, the idea being that you will fill the chain bead by bead until you own a unique piece full of memories, gifts and special moments. Before we go any further, I should confess here that I own a Trollbead charm bracelet. It currently holds 12 beads – from a simple pink-glass number to a detailed silver polar bear – meaning it is less than half-full. In spite of this, I wear it every day and I love it. While Trollbead does what it can to compete with brands such as Chamilia and LoveLinks for the female jewellery-lover’s attention, the market leader in the UK is undoubtedly
Pandora, the Danish company founded in 1982 which is now available through 10,000 points of sale in 65 countries. Last year, Pandora posted total revenues of €893m. Hang on… that’s £700m. How has this market, based on beads that are so small, become quite so big? Well, for starters, the charms are an easy present idea. There is also, it must be noted, the question of fashion. Pandora bracelets have a certain cachet and the company spends a large amount of money each year to ensure that this remains the case.

OR ME, though, it’s not the trendiness of the bracelet which matters. It’s about the memories. Often, I find myself playing with the charms, reminiscing on the things I associate with each bead. But I’m baffled that my halfempty bracelet effectively already has £300 dangling off it – friends and relatives buying me beads on special occasions over the years mean this small, simple arm ornament is now worth more than anything else I’ve ever owned. Although, if anyone who knows me is reading this, the Pandora gold and diamond crown would nicely fill another gap…

A recent renaissance in knitting fuelled by well-known celebrities often photographed with their knitting needles in hand has helped to boost Rebecca’s business. “Knitting is much more in vogue with young people as it is now seen as something bespoke which is individually designed and hand crafted,” she said. Knowing your rights working under a zero-hours contract

I have been offered a new job without any fixed hours of work. What does this mean and is the company allowed to employ me on this basis?

ANY SECTORS NOW engage staff under what is known as a “zero-hours contract”, which has proved an area of controversy, widely referred to in the election campaign earlier this year. This type of contract usually means that the employer is under no obligation to offer you any work and likewise you are generally not obliged to accept any work that is offered. Figures suggest that the use
of zero-hours contracts has increased significantly in recent years and they are particularly common in the hospitality, health and personal care sectors. On the positive side, such an arrangement can provide flexibility on both sides, for the employer and employee but can also result in a lot of uncertainty for the individual. It is important to check the written details of your contract very carefully to see what the arrangements are for the employer offering work and what the consequences are if you don’t accept the work offered. Your contract should also set out what entitlements you have to things like holiday and sick pay. Depending on the amount and the pattern of the hours you work, you may also accrue additional employment rights, even if the contract is expressed as only engaging you as a “worker” (rather than as an “employee”). The question of an individual’s employment status is often a complex one and can change over time according to the regularity of the work carried out under the contract. As you may have seen in the news, the Small Business, Enterprise and Employment Act 2015 has now become law and amongst other changes, it bans the enforceability of “exclusivity Vanilla August/September 2015
REAL LIVES clauses”, which sought to prevent someone from holding more than one zero hours contract at a time. Further changes may be forthcoming as a result of more Government consultation on the issue, so this is an area of law to keep an eye on in the future.

FACT: Zero-hours workers are entitled to annual leave ● Any worker or employee starts to accrue their annual leave from the moment they begin working. This includes anyone working on a zero-hours contract. ● If the zero-hours contract means that employment is continuous, then a worker should arrange when they take the annual leave with their employer. ● If the zero-hours contract means that the employment will be broken on occasion, then a worker should receive a payment for any accrued but untaken annual leave.
FACT: Zero-hours workers are not obliged to accept work ● If the zero-hours contract is a genuinely casual arrangement, the worker is not obliged to accept any of the hours offered. ● There is a risk that a worker who persistently refuses work when an employer offers it may ultimately influence the employer to terminate the arrangement. However, it is not good practice for an employer to try and force the worker to work, as this may call into question whether or not this is a genuinely casual arrangement, and it is also unlikely to help with staff morale and productivity. FACT: Zero-hours workers have the same statutory rights around travelling time or waiting between jobs as other workers ● There are specific rules concerned with travelling time and the National Minimum Wage, which generally mean that a worker (with the exceptions of a worker’s commute) should be paid at least the National Minimum Wage when they are travelling as a requirement of their job; for example when a care worker is travelling between customers for the same employer. This right is the same for those on zero-hours contracts. ● Equally, it is generally the case that a worker who is required to
be “on-call” and remain on the employer's premises should be receiving at least the National Minimum Wage on average for doing so. Again, there is no special different rule for zerohours contracts, the right is the same. ● However an employer needs to consider any contractual enhancement to these basic rights. For example, permanent workers may have additional pay or conditions attached so the employer needs to ensure that they do not inadvertently discriminate against workers with specific protected characteristics (like age and sex). IN THE WAKE of the newest GLE-Class and GLC-Class arrivals at Mercedes-Benz next month, we got behind the wheel of the soon-to-be baby of the flock – the GLA-Class. There was something pleasingly familiar when eyes first landed on the GLA. Why was that? Well, the Mercedes-Benz GLA is based on the A-Class, a hatchback. The GLA is a higher-riding version and gets the title of a “cross-over” as it’s a step up into the four-wheeldrive arena without growing to the enormous proportions of a full off-roader. So with the GLA one gets the practicality of a hatchback and the benefits of a high-driving position, and depending upon the exact model, the ability for all four wheels to deliver power. That familiarity also comes from the A-Class styling which just flows from it! The contours of the body are a beautiful illustration of the car designer’s art. Here we have the balance between strength and muscularity and graceful
lines; just enough to stand out from the crowd without being too ostentatious. On the inside, dashboard controls, air vent and dials are purposeful but easy to operate. Daily-use functions are intuitive and provide sufficient opportunity to set and forget or for cousin Hermione to play to her heart’s content! Many of the secondary functions are displayed on the monitor screen which sits central to the dashboard. But the standout feature is the premium feel throughout the interior. No less than one would expect when choosing to have the three-pointed star of the manufacturer on the front. Inside there is a good-size glove box and generous storage bins in the doors. How to choose the right school so it is only right that you take the time to inspect them all, and judge them on their individual merits. Just because you like the look of one primary or secondary school doesn’t mean that all of the others in your catchment area are the same. SCHOOL VISITS
If asked how to go about choosing the right school for your child what would you say? It’s a question that you should be asking yourself if your child is of schooling age, or is already in school and making the move from primary to secondary. And in asking the question it will throw up a myriad of additional questions that together can make for something of a mine field if you are doing it for the first time. The first question to ask is: what sort of school did I attend and was it right for me? It may sound contrived but looking back at your own schooling can lead you to make some informed decisions. After all if you went to a school that was under funded or under resourced you wouldn’t realistically expect your child to August/September 2015 Vanilla
go there would you? In many cases, you will feel drawn to certain schools because of local reputation, but do keep an open mind and try not to be too influenced by your own school experience – the whole educational offer has changed dramatically in the last few years let alone the last 25 years. Most of us have been out of the schooling arena for some time and things have changed quite a lot so it is only reasonable to expect that nothing is necessarily as it was when you were at school. So make a checklist with your partner and work down that list to make an informed choice. Also don’t just pick one school. In your area alone there may be three, four or five schools that would be suitable for your child,
Visit the schools if you can. Use the opportunities presented by school open days to see what the school has to offer. Stephen Crump, Headmaster of Hethersett Old Hall School points out, “Useful though prospectuses and websites are, there’s no better way to find the school which offers the best “fit” for your child than visiting the school when it’s in full swing and observing whether pupils are happy and motivated. And don’t be afraid to ask questions – not just from the person showing you around, but from any pupil or staff member.” Talk to your child as they will almost certainly know children who attend the schools on your list. Find out from them what their friends think or ask their friends directly. You would be surprised at just how unbiased and informative children can be about their schooling. Ask about the facilities and after school activities the schools have to offer. Remember that school is not only a place of learning but also

a place where your child will learn the rudimentary skills of communication and how to mix with others. Speak to your local authority and ask about league tables and exam results, you can tell a lot from the league tables and exam results as to how well a school performs. “It is difficult not to be impressed by grand buildings, flashy websites and expensive prospectuses,” says Philip Oldroyd, Head of Langley Prep School, “but it is what happens inside the school buildings that is important, not what they look like and the only way to understand that is to go there to see the children at work and play and feel the atmosphere for yourself." If necessary make a shortlist of schools that you think may fit the bill and ask to visit them again. Sometimes a second look can throw up things that you may have missed first time round or that just didn’t spark your interest at the time. Most schools will be happy to do this. Not only does it show you have your child’s well being at heart, but it also allows you to familiarise yourself with the staff along the way. Mike Crossley, Headmaster of Taverham Hall Preparatory School, points out: "When it comes to choosing the right school for your child, a large part of the decision will come down
The Education issue You would be surprised at just how unbiased and informative children can be about their schooling to instinct and the feeling you get when you look around.” “At Taverham Hall Preparatory School, our pupils are your tour guides. Is the atmosphere warm and welcoming? Are pupils happy and engaged?” Jason Morrow, Headmaster of Norwich High School agrees: “I would pay particular attention to the quality of relationships you see both among students and between staff and students. The best schools manage to combine fostering confidence with appropriate challenge and support for each individual and you should trust your instincts on whether a school is right for your child.” Make notes – and lots of them – don’t be afraid to ask your guide to repeat some information you may think relevant. After all, you only have a certain amount of time to tour the school.
Observe how the teachers and pupils interact if you can and if you can manage to coincide your visit with the end of the school day don’t be afraid to speak to parents who have come to collect their children. If you explain your reasons for asking them questions they will be more than happy to help. After all they have been through the same process themselves at some stage. Perhaps most important of all, take on board your child’s comments and opinions. After all it is they who will be spending most of their time at school. If it looks right and feels right, then it more than likely will be, but if your child isn’t going to be happy there then the whole process can only end in tears. And finally, some wise words for children from Jonathan Taylor, Principal of Wymondham College: “Have big dreams and ambitions. School will prepare you to be resilient and equip you with the grit and determination needed to succeed and overcome the inevitable knock-backs along the way. The whole of Chapelfield Gardens in the heart of Norwich city centre, has been secured for this two day event taking place on 12th and 13th September with plans to involve transforming the gardens into a food and drink village, featuring a producers’ marquee, bar, the City Farm, Feast on the Street, cookery demonstration theatre sponsored by Norfolk County Council, and live music and street entertainers. Organisers are working in partnership with the Tour of Britain, so that the two-day Food & Drink Festival in the centre of Norwich can be tied in with the Tour, which will go through the centre of Norwich city on Saturday 12th September. In order to replace the Tour footfall on the Sunday, they will then introduce the Battle of the Bangers sponsored by Hargreave Hale into the ‘village’ ‘village – one of the best-loved and most established events of the festival, it last year attracted over 4000 into the city. A huge thank you must also go to The RedCat Partnership, Future Radio, SSY Guarding and Norwich City Council for their magnificent support. Breckland blueberry, lavender & honey cake Mermaid Sandelson won the junior section of the Great Brecks Bake-off in September 2014. The event, in Swaffham, formed part of the annual Norfolk Food and Drink Festival. The judges, including Vanessa Scott, were so impressed with the cake and the luscious use of local ingredients that she was asked to take part in the cookbook. At only thirteen years old she is our youngest contributor. Mermaid has been helping her mother and sister bake for the Perfect Spot Café in the gardens of Narborough Hall since she was seven, and looks forward to opening her own restaurant one day. COOKING UP £100,000 Bring together three women who are involved with the food community and passionate about promoting the wealth of produce of their home county, add a wish to support a worthwhile charity and it doesn’t take too long to work out that a cookery book might be on the cards. Authors Mary Kemp, Melinda Raker and Vanessa Scott have not compromised in the production of this excellent book, which will raise not just funds but also the profile of the wonderful work of Marie Curie, providing care and support for people living with a terminal illness and their families. The best makers, bakers and growers from across the Norfolk acres have come together to support this venture with funds, enthusiasm and a wealth of skills sharing the recipe platform with chefs, including Galton Blackiston, Chris Coubrough, Richard Hughes and Roger Hickman, and keen cooks, such as the Lord Bishop of Norwich and the late Alice
Preheat the oven to 180°C/fan 160°C/gas 4. Line two 20cm sponge tins with baking parchment. Gently warm 70ml milk with 6 sprigs of lavender and set aside for around 30 minutes to infuse. Cream the soft butter with the caster sugar and honey until pale and fluffy. Gradually add the eggs, one egg at a time with one tsp of the flour and beat well until all the eggs are combined. Sift the flour into the cake mixture and fold in gently. At this point add the 150g of the blueberries and 20ml of the infused lavender milk. The blueberries must be barely mixed through, only one or two folds, so they do not break. Divide the mixture between the two tins and bake for 25 minutes until the centre of the cake is risen and just firm to the touch. Turn out the cakes and very carefully peel off the baking parchment and the blueberries will be slightly sticky on the base. While the cake is cooling make the filling. Mix the honey gently with 50g of the blueberries and set aside. Whisk the soft butter with the sifted icing sugar until very white and smooth. Take the lavender sprigs out of the milk and add the milk to the butter icing. Whisk again. When the cake is cool spread one half with a thick layer of the jam and spread the honeyed blueberries on top. Spread the lavender butter cream on the other half and sandwich together. Decorate the top with the blueberries mixed with the tbsp of jam and a sprig of garden lavender.
Syzling, who lived in Croxton for over 100 years, had been in service for many years and was a wonderful home baker. But there is something else remarkably special about this book. Thanks to the subscriptions of the contributors and the generosity of the many sponsors, all the production costs are covered and every penny of the £20 retail cost will go to Marie Curie and thus every single book sold will fund the equivalent of one hour of nursing care and support for those who wish to spend their last few months, weeks or days at home. Tea & Iced Tea by Wilkinson’s Tea and Coffee Merchants
The perfect cup of tea
Draw fresh water from the mains and set to boil. Before it boils, rinse the teapot with hot water to cleanse and warm it and add – the traditional guidance – one teaspoon of tea per person and ‘one for the pot’. Loose-leaf tea gives a better flavour by far; the leaves can swim around the pot. Immediately as the water boils, pour on to the tea, stir and let it brew for 3-4 minutes. Pour through a strainer into your cup. Milk in first? Well, the debate will never end... Or try a slice of lemon, lime or even ginger in your teacup instead. Serve in Grandma’s best china, raise your little finger and savour.

Iced tea An alternative for a rare hot summer’s day is iced tea, refreshingly different and thirst quenching. It’s best to make your tea in advance, a few hours or even the night before, and let it go cold. A flavoured or scented tea gives best results. At Wilkinson’s they have a large selection of the pure fruit teas based on hibiscus, which yields a rich, burgundy-coloured and fruity brew: strawberry and kiwi, apple & lemon, woodland berries, and many others. So, choose your tea and be generous with the quantities, at least 3 tablespoons per pint of boiling water for a rich, concentrated infusion. Add sugar to the hot liquid if desired, leave to go cold and do not strain (yet). Shortly before required, pour the tea through a mesh strainer into a jug. Take another large glass jug and fill one third to half full with ice cubes. Pour on the cold tea, add some sliced summer fruits, a sprig of mint (like a non-alcoholic Pimms), stir and serve. A naughty adult twist is to add a generous slug of vodka. You can, of course, use a traditional tea, Earl Grey mixed with plum tea or an exotic green jasmine, for example.

If I’m honest, every day working as a chef at Carrow Road is busy. The build up to cater for home fixtures is massive, preparing well over 1000 three course meals, but the catering team all work hard on non-matchdays too. We cater for an array of business meetings, conferences and events, as well as Delia’s restaurant and bar – which is open to everyone every Friday and Saturday evening – and Yellows American Restaurant, which is open from Tuesday to Saturday. So if I’ve eaten before a bustling service, afterwards I enjoy a small, strong Espresso with a few squares of bitter dark chocolate. However, if I need something more substantial, it has to be a good crusty white bread sandwich, lightly buttered and filled with mature Keens Cheddar and tangy, piquant pickle finished off with a nice chilled bottle of beer. Which dish do you enjoy cooking the most?

Not trendy I know, but I hope it’s real food. Apart from charging more for less, what’s the point of turning a carrot, decorating a plate with spots of sauce and serving food under a smoke filled cloche. Becoming friendlier with our environment; sourcing locally to reduce the food miles and growing our own where possible just makes good sense. Home cooked results are always the
most rewarding and in turn will help to reduce the recognised excessive sugar consumption and addiction. Norfolk is full of great food and drink producers – any recent discoveries you can share?
Pye Baker are based in Norwich and sell traditional artisan breads, pastries and cakes at Farmers’ Markets around Norfolk. I have also recently discovered Archer’s Butchers on Plumstead Road (although they have been established for over 80 years), who sell treasures like the famous Blythburgh Pork, their own homecured bacon and slowly grown, corn fed free-range chicken. forward to the Pea and Asparagus Soup all day. My friend Nick chose the Cod Cheeks, Fennel Salad and Caper dressing, which he said was beautifully crispy breadcrumb and firm, tasty fish. The soup meanwhile, was bursting with intense flavour, well worth the wait! Perfectly seasoned, it came with toasted bread and a refreshing mint crème fraîche. As Mike cleared the plates, I suggested he start a home delivery service and I’d get things underway by ordering a vat of that amazing soup. To follow – the Norfolk Aged Sirloin Steak, Béarnaise Butter, Pont Neuf Chips with Dressed Leaves for Nick and the Wild Mushroom Fricassee with Tarragon & St Swithin’s Gnocchi for me. Whilst it’s rude to pinch food from other’s plates, I did eye the pont neuf potatoes - basically a fatter french fry – with serious envy. The fricassee was rich, deep and creamy, a real treat but unfortunately, it didn’t leave me much room for dessert.

In debt they may be, but wine makers are flourishing on these islands, producing world class wines Domaine Geravassiliou is a state of the art winery surrounded by 56 hectares of meticulously well-cared-for vineyards. The Viognier Domaine Gerovassiliou is wine made with skill and imagination. Fermentation in barrels adds to the natural variety of aromaticity, impressive depth and exuberance. The sensation in the nose and mouth is fascinating. It is no coincidence that this wine was loved immediately when it first came on the market. For those of you who are quite frankly bored of the lean fresh styles of Sauvignon and Pinot Grigio but are not ready to go for the oaky chardonnays, this is the prefect balance between the two. You will be utterly seduced by this rich quality apricot, honeyed wine. A match made in heaven for summery white fish dishes, chicken, lobster and Asian cuisine. Price point it is not particularly cheap, but boy it is a stunning wine, a recent Decanter World Wine Awards silver medal winner as well as a Wine Merchant Top 100 winner 2015.

UGARBEAT EATING HOUSE, refurbished and opened exactly one year ago, sits big and bold on the A140 between the villages of Newton Flotman and Swainsthorpe. The building is rather beautiful, and this evening the gardens are bathed in 25 degrees of evening sunshine. Opting to sit outside for our apéritif and enjoy the glorious English warmth, we chose wine by the glass, of which they have a very good selection. I settled on the house rosé, a Zinfandel from California, and Sylvaine an Ancora Chiaretto rosé from Italy. We swapped notes and decided the less sweet Italian was our favourite. The
wine list has a choice of six reds and six whites, and there is a further option of ‘classic’ and ‘alternative’ beat wines presented on a 78 disc. The interior is modern and fun, with many nods to sugar beet the crop, not least artwork on the walls which is quite surreal, incorporating sugar beet and a musical instrument. The whole place is fun and stylish, and the staff welcoming and professional. We were shown to a banquette window seat and were very comfortable. The menu is comprehensive, and there really is something for every taste. I love it when I’m spoilt for choice! There are some things in life I simply can’t resist, and two were on the menu. Prawn cocktail, my favourite, was my choice for starter, and I wasn’t disappointed, it was super. Sylvaine had the Wensum White goat’s cheese salad

with peach and granola and a honey-andmustard dressing which she loved. I had a Chilean Sauvignon, not chilled too much so as to preserve the flavour. Sylvaine stayed with the Italian rosé.

OR THE MAIN COURSE, another irresistible for me – sticky chilli chicken and noodles, absolutely delicious. For Sylvaine, the lamb cutlets char-grilled and served with gnocchi, lots of gnocchi, the meat cooked to perfection. Both portions were very generous. Again I drank the Sauvignon, Syl continued with her glass of rosé. Now I’m not a big pudding eater but sometimes needs must (ha ha), so I chose the cheesecake, baked vanilla and salted caramel, with honeycomb ice cream. It’s at times like this that I wonder why I don’t eat more puddings – delicious. Sylvaine had the pineapple mint and chilli salad with an orange sorbet and rum syrup. She said it was perfect after what she had eaten, light and refreshing and very, very, good, something she’ll make at home! There really is something for everyone here, with dishes that absolutely complement one another. Another bonus is that their opening hours are modern, they serve food all day, so it can be a ‘let’s go and eat at the SugarBeat’ without watching the clock. I find it so depressing when everything closes at 2pm, don’t you?

Seared duck breast, buckwheat, peach and rainbow chard salad SERVES 1
1 duck breast 1 ripe peach cut into quarters 4 large leaves of rainbow chard 40g roasted buckwheat 12 pomegranate seeds Chopped parsley DRESSING 5g white wine vinegar Juice of 1 orange 50g good quality olive oil 15g Norfolk honey
1 Score the duck breast skin, ensuring you do not pierce the flesh. Then season the breast on both sides. 2 Turn hob on and set to a medium heat and set oven to 180째C. Heat a non-stick frying pan, add your duck breast, skin down and fry for 3 minutes. Turn over and sear for 1 minute then put into the oven for 4 minutes. Take out and rest, skin side up. 3 In a small pan of salted water bring the buckwheat to the boil and cook for 3 to 5 minutes until

HE LODGE restaurant and bar in North Tuddenham, near Dereham, is more than just a good pub. Over the past eight years, the 19th century Lodge has earned a reputation as one of the best restaurants in Norfolk, receiving recognition from both the Good Food Awards and Trip Advisor. Earlier this year it was refurbished, creating a new bar and bistro style that perfectly combines the original features and pub atmosphere with a new, fresh design. I decided to find out for myself just how good The Lodge really is, so my companion S and I went along for an evening meal with our well-behaved greyhound. We all received a very warm welcome from front-of-house manager Sophie and her colleagues. Orders for drink were taken promptly – The Lodge offers a good choice of beers, real ales and wines. A pint of Adnams Ghost Ship for S, a bowl of water for the dog, and a very good freshly brewed coffee for me. The menu is tempting and the chefs use local ingredients where possible. Starters include smoked duck salad; chicken liver, brandy
and thyme pâté; and crispy sweet chilli beef. Main courses are an eclectic mix of well-loved favourites such as curries, steaks and battered fish of the day, and more ambitious dishes like twice-baked pork belly, salmon topped with Pecorino cheese and pesto, and Mediterranean vegetable linguini with goat’s cheese. There is also a specials board that changes daily. It all sounded delicious, and we decided to share two starters – stuffed mushrooms with pesto and cream cheese, and Louisiana-style crab cakes.

I love a good, meaty field mushroom, and this starter reminded me how good they can be when cooked well. The crab cakes had a lovely spicy kick. S chose an Argentinian Malbec to accompany his main course. This rich wine is powerful yet gently spiced. A great one for serious red wine lovers. Main courses were also very impressive. I selected from the specials board – a seared sea bass fillet on a bed of warm asparagus, roast new potato and cherry tomato salad, with a garlic rosemary and balsamic dressing. Beautiful presentation, perfectly cooked and seasoned. Delicious! S went for fillet steak, with baked mushroom, tomato and chips,

with dressed salad and a brandy and peppercorn sauce. The steak was melt-inthe-mouth, precisely cooked as ordered.

T THIS POINT, head chef Shane arrived at our table to say hello - a very nice touch. It’s always good to meet the creatives behind the scenes, we so rarely see them. He told us the kitchen often feeds diners’ dogs as well, and offered Phil a bowl of sausages and gravy. You can imagine how well that went down! Time for dessert - all homemade and some appealing specials such as glazed passionfruit tart, rich chocolate nemesis (for serious choc lovers only) or bread and butter pudding. I chose vanilla crème brûlée – mouthwatering, and with that satisfying sugar ‘snap’ just right. S is a big cheese fan, so he went for a superb assortment of cheese, fruit, wafer thins and chutney. The Lodge’s reputation is well deserved, on every count. They have a winning combination of superb, great-value food and drink, enthusiastic and dedicated staff, and an ambition to be the best they can be. Guests of the four-legged variety also get the service they deserve…and sausages!

Tell us about taking part in the Coastal Challenge…
Nigel Lubbock is a Solicitor and Notary Public and a Director of Steeles Law in Norwich. He lives in the city with his wife, Judith and has two grown up children.
You’re a keen advocate of this city – how did it come to be your home? I was born in Norwich and have lived here for most of my life. I have previously spent 11 years working in London and a further three in Bristol.
How have you seen Norwich change over the years? It has changed beyond recognition! I was passing through Ber Street the other day with some of my fellow directors and it sparked a childhood memory of helping to drive cows from the market (now Castle Mall), along Ber Street, to Trowse. That’s the reason why Ber Street is so wide! I recall huge freight ships along the river carrying timber and grain. Most of the area between the train station and Carrow Road
(the modern day Riverside) was taken up by a large Boulton & Paul factory (a famous aircraft manufacture company, founded in a local ironmonger’s shop in 1797, which eventually closed in Norwich in 1986). Laurence Scott and Colman’s, which both remain as businesses in the area, were also familiar landmarks. Between them these companies employed tens of thousands of people in Norwich.
Your wife, Judith has just completed her year as Lord Mayor of Norwich. What was the year like for you? Very busy! I accompanied Judith in a very diverse range of activities. We found it a great privilege to meet so many local people, particularly the volunteers who support the huge range of charities that underpin the city’s life. There were also some comical moments, including the Lord Mayor, in full regalia, regularly being mistaken for “Captain Hook” or “Father Christmas” by children (depending on the time of year!).
What are your favourite hidden gems in the city? I discovered many of these during Judith’s term as Lord Mayor. One example would be Ford & Yarham greengrocers and fishmongers on Gloucester Street (off Unthank Road). The shop is full to the brim with wonderful, fresh food and the service is terrific. Also the Britons Arms (a coffee house and restaurant), at the top of Elm Hill, which is a medieval building magnificently and beautifully restored by the Norwich Preservation Trust.
...and your favourite place to eat out? For a special occasion, I would choose Bishop’s Dining Room & Wine Bar on St Andrews Hill. My go-to place for relaxed lunches – often for business – is The River Green Café vegetarian restaurant in Trowse. n

Nigel taking part in the Coastal Walk Challenge
I was one of 90 walkers, including four from Steeles Law, that walked 47 miles of the North Norfolk coastline in 24 hours in June 2015, for the Norwich City Community Sports Foundation’s (CSF) fifth annual Coastal Walk Challenge. Firstly the event was for a wonderful cause (the CSF’s Sporting Light Appeal), raising money for sporting facilities for disabled and disadvantaged local children and young people. It generated a lot of camaraderie both before and during the Challenge – we all helped each other to complete it.
