The winning artist will receive a commission of up to £10,000 to design and install their piece in Norwich city centre. appy New Year to all Vanilla readers from us all at Oculus. We’ve just celebrated our second birthday at All Saints Green. This gave us a chance to reflect on the previous two years and look forward to 2019. Our vision was to bring top European styles to Norwich – eyewear not seen in the UK before and in an environment that was both professional, friendly and inviting. It has given us a great deal of pleasure to have achieved that. However the best thing by a significant margin has been the new clients that have embraced what we are doing. We’ve been thrilled by how the people of Norwich are enjoying being able to buy eyewear styles that they’ve previously only seen in glossy magazines.
It’s also amazing how everyone tells us that when they are wearing their new eyewear that strangers will frequently make complimentary comments about them. That tells us that there is a demand for fun, different and stylish eyewear. People don’t want to be trapped into buying the same old drab stuff.

Our English weather makes dressing for a wedding a real challenge. Even in the summer it can be wet and cool, so it takes some thought to choose the right outfit, colours and accessories.

Firstly, test your outfit to makes sure it feels right and will be comfortable throughout the day. Practice sitting and standing to make sure it doesn’t ride up, pinch, or look wrong. Depending on your body shape you may need to choose something less fitted with soft folds. If you are wearing something strappy, will the straps fall down while you are sitting?

You don’t want to overshadow the bride, it’s her day, so don’t go for anything too flamboyant. A jumpsuit with heels can look superb. The key is to be natural and true to yourself.

If you want to wear a hat but have no idea what suits you, talk to a professional and visit a few hat shops. A fascinator can look superb, too. Think about hiring a hat for the day; so much cheaper.

Men, a wedding is not a business meeting. Wear a suit, but choose a lovely tie, and match the colour to the outfit of your partner – complement each other to be a stylish couple.

ITH FEBRUARY touted as one of the most romantic times of the year, it is a popular time to get engaged. But should the person proposing choose the engagement ring or is a joint decision preferable? We chat to Jon at Aurum Jewellers and Designers to get his take on the subject and some advice on choosing the perfect ring. “There is definitely a shift towards couples choosing a ring together.” says Jon “That said, many people still like to surprise, and with a little bit of research and following the advice below you can still be confident in your decision.”
WHY VISIT AN INDEPENDENT JEWELLER?
A good independent jeweller will be passionate about their collection and ensure you make an informed choice. They will also be able to guide you towards the best options within your budget. When it comes to engagement rings, it is always best to buy in store – to touch, try and feel the quality of the product.

DOES SIZE OF STONE MATTER?
DO YOU NEED TO KNOW THE RING SIZE?
When it comes to diamonds biggest doesn’t mean best. It is far better to invest in a smaller, high quality diamond than a large, low grade one. A good jeweller will talk you through ‘the four Cs’ – colour, cut, carat and clarity, along with the precious metal choices to make sure you understand exactly what you are purchasing.
If you are surprising the proposee, it is useful to have an idea of the ring size. However, this isn’t always possible, and we are always happy for our customers to take a ring for presentation and then adjust the size free of charge after the proposal if required.
IS RESEARCH IMPORTANT?
Allow plenty of time – we’d recommend you start looking at least eight weeks before, especially if you are considering a bespoke design. Choosing an engagement ring should be a considered decision, but it should also be fun, so avoid time constraints and pressure if possible!
It’s a great idea to get an idea of the preferred stone shape in advance – round (brilliant cut), square (princess cut) or trilogy (three stone) to name a few options. Think about whether you are set on a diamond or perhaps a coloured stone appeals more? Otherwise, our advice is to remain open-minded, as a good jeweller will be able to show you a range of styles, stones and settings or assist you with designing a ring from scratch.

Is it possible to rewrite someone’s Will after they have died? MY QUESTION: A friend told me that it is possible to rewrite someone’s Will after they have died and I am now worried that my half-brother, who is sole executor of our father’s Will, might rewrite his Will and cut me and my mother out of it?

T IS THE DUTY of the executor of a Will to carry out its terms, so your halfbrother as executor cannot cut you or your mother out of your father’s Will. It is not strictly possible to “rewrite” the actual Will, but a person who benefits under a Will can redirect part or all of their inheritance to somebody else. This can be done by making a formal “Deed of Variation”. Deeds of Variation are often made by wealthy children
who do not want or need their inheritance, so as to pass the inheritance to their own children. Provided the Deed of Variation is made within two years after the date of death, and contains a specific tax election, it will be treated for Inheritance Tax and Capital Gains Tax purposes as though the gift contained in the Deed was made by the deceased’s Will rather than by the beneficiary. For all purposes other than Vanilla February/March 2019

Inheritance Tax and Capital Gains Tax, redirection of an inheritance by Deed of Variation is a gift by the beneficiary. For that reason, a Deed of Variation will not protect the inheritance if a beneficiary is trying to avoid creditors e.g. on divorce or bankruptcy; or where a beneficiary is receiving, or likely to receive, state benefits or assistance with residential care fees.

HE MAIN BENEFIT of a Deed of Variation is for Inheritance Tax saving in the beneficiary’s own estate, as the beneficiary does not need to survive for seven years for the value of the gift to be removed from their estate (as they would if they took their inheritance under the Will and then gave it away). There can also be opportunities in some cases to save Inheritance Tax on the deceased’s estate by varying the Will. Another use of the Deed of Variation is where beneficiaries feel that the deceased has been unfair in their Will: e.g. if they have disinherited one of their children, the other children may agree to join together to vary the Will so as to include the disinherited child. Your half-brother, therefore, can redirect his own inheritance under your father’s Will, without needing anyone else’s consent but he cannot make a Deed of Variation which will reduce anyone else’s inheritance. ■ February/March 2019 Vanilla
DEEDS OF VARIATION – KEY POINTS: ● If you receive an inheritance from a deceased person, this will
increase your estate and therefore your IHT liability. ● You can redirect this inheritance (e.g. to another person, or into
a discretionary trust) by a Deed of Variation made within two years of the death. ● The inheritance is treated for IHT purposes as never forming
part of your estate, so there is no requirement for you to survive for seven years as with most lifetime gifts. ● Deeds of Variation can also be made by the executors of a
deceased beneficiary. ● The two year time limit means it is essential that you seek
specialist legal advice soon after the death.

Norwich High School’s Inspiring Females movement paves the way for a generation of future female leaders
INSPIRING FEMALES is a programme designed to inspire, educate and empower young women, connecting them with mentors at all stages of their career and life journeys. Through a busy programme of events, all shaped by a passionate group of young women and driven by Kirsty von Malaisé, Headmistress and the staff of Norwich High School for Girls, Inspiring Females has reached over 1,000 young women since starting in 2016. Backing for this initiative has come from over 250 successful speakers and companies spanning STEM, Construction, Marketing, Investment, Media, Entrepreneurship and much more. Bound together by the drive to raise the next generation of female leaders, speakers volunteer their time to deliver personal messages of resilience, compassion, agility, bravery... and hope. One of the core components of Inspiring Females is to continuously develop through feedback given by the young women who attend each event. For example, in 2018 Inspiring Females invited men to take the stage for the first time at the annual IF Summit. The move – as requested by girls in attendance at previous events – brought a new level of diversity into panel Q&As and workshops. These men all attended with a desire to uplift talented young women and propel them into male dominated industries, such as Science, Marketing, Insurance, Fashion Design and Consultancy. A vision of equality is what continues to motivate Inspiring Females, after all, “Who wouldn’t want equality?” asked Becky Jago, ITV Presenter and panel guest for Inspiring Females in the Arts Live BBC Radio Norfolk Broadcast last year. Yet, this is just the start. To add to its buzzing roster of February/March 2019 Vanilla

speakers, Inspiring Females hopes to bring on board more campaigners, from other industries where females are yet to take leadership. For example, the initiative is particularly looking to add speakers from Medicine (women make up only 12% of UK surgical consultants in practice) and the Emergency Services (startlingly, female firefighters represent just 7% of the London Fire Brigade) at future events. Looking forward, Inspiring Females is aiming to reach a wider audience, with the June 2019 Summit, taking place at Stamford Bridge, the home of Chelsea Football Club. With a theme of ‘Inspiring Game Changers’, a record line-up of 30 speakers being shaped, and a plan to host 450 young women from across the UK, this is planning to be the programme’s biggest event yet. SYCHOLOGICAL TENSION is everywhere in today’s demanding, forever fluctuating, world. People come to us, Emotionalskills, for help to manage stress, anxiety, low mood, low esteem, frustration and anger issues. Some people can’t find a fulfilling way to be and feel life is OK, but fairly meaningless. These are everyday normal people, like you and me. Modern day pressures get on top of ordinary people all of the time. Emotional issues effect all ages and all types of individuals. If you think about it, you probably know someone who has been troubled in this way or you may have been unsettled yourself. Obviously, significant experiences such as relationship breakups, serious illness, losing a livelihood and death usually bring about psychological disruption. Most of us will experience these types of events in our lifetime, but many people have an ongoing unhappiness that they cannot fathom and to which there seems to be no solution. Over the past year, 74%* of people have at some point

felt so stressed that they felt overwhelmed or unable to cope, and around a third of all adults have experienced suicidal feelings as a result of stress. Plus, psychological difficulties in the young are growing alarmingly.

OST PEOPLE with psychological issues take ten years to seek help. This reluctance might be because of the stigma accompanying mental ill health or it may be that people just don’t know where to look for help. My suggestion is to be bold and talk to a qualified counsellor or psychotherapist. Individuals can change and the quicker change begins, the better the chance to realise a life where one is at ease with oneself and life in general. So, who seeks therapy? The people who come and see us are ordinary people with varied lifestyles and histories. Each person is unique and their
issue and process is absolutely distinctive as well. I am not talking about being transformed into some sort of super being. Perfection is just a concept, not a reality, but my experience as a psychotherapist is that the great majority of people who seek appropriate help move towards being more at ease, balanced and generally contented with their lives. n

ANDLING ELECTRICS is not for the amateur – it’s very skilled, technical and potentially dangerous. So using a qualified, experienced and professional local trader is essential. Segment Electrical is a small, family-run electrical contractor based at Blofield Heath. They carry out a huge range of work for both domestic and commercial customers, including installation, fixed wire test and inspection, fault finding, plus in-service inspection of electrical equipment, otherwise known as PAT testing. Owner Graham Muff is a lifelong electrical engineer with commercial, industrial and domestic experience. He worked for Britvic for many years, but decided to set up his own business in 2018. “No job is too large or too small for us, and the range of projects we work on is very broad,” he says. “Everything from adding an

extra light fitting, garden lighting installations and consumer unit upgrades, to doing a complete house or industrial rewire. “Each project is discussed in detail with the client so that we fully understand the technical requirements and timescales. It’s only then we agree a scope of work and issue a quotation. Once the project is given the go-ahead there is a single point of contact for the customer and the project is managed by us until its finished. That way the customer has complete peace of mind that the work is being handled in a consistent and professional way.”
S
O WHAT KIND of projects is Graham working on at the moment? “I am doing more and more horticultural work, and I recently completed a large lighting, power and irrigation installation for a polytunnel nursery. In addition, more people are adding lighting to their gardens as part of
landscaping projects. These are quite complex jobs which need to be installed correctly for the longterm, and weatherproof.” Safety and compliance is vital for electrics. Does Graham find his customers try to have a go themselves before they call him in?! “People do try to install things without the proper experience or knowledge. This is not only dangerous, but the wiring also needs to comply with strict regulations, which I think many people don’t appreciate. HE FOX AT LYNG is a pub that’s truly at the heart of the community. It not only offers a wonderful menu of traditional and modern British food, but they have also introduced exciting and engaging food basedevents to the pub – and they are proving hugely popular. Last year, the pub introduced ‘The Fox Charity Bake Off’, a celebration of the famous TV show, but with its own unique twist. Owner Vikki Hunt explains: “It started off in a small way and gathered pace rapidly to become the talk of the surrounding area. In the end we had celebrity judges Charlie Hodson and Richard Bainbridge on board and we raised nearly £3k for Pancreatic Cancer UK. The winner, Amie Abbs, was invited to cook at Holkham Hall Christmas Fair with Charlie Hodson and celebrity and Big Brother contestant, Hardeep Singh Kohli. “This year we hope the

competition will be even bigger. It starts in March and will run every Thursday for 12 weeks. Competitors can choose which week they want to enter, and the winner from each week will enter the final. “Charlie Hodson is on board again and we hope other celebrity chefs will also be involved. So we need weekly competitors, judges and also supporters – people to come along and watch. After each judging the food is available to buy and the proceeds go to charity. We also host a Friday Coffee Morning, (9am-12pm), with the remaining bakes, so there are so many ways people can get involved. This year we are keeping the money raised within our community – 50% to Friends of Lyng School and 50% to Lyng Nursery School. There is live music too and people can bring a blanket because all the benches are taken. in Orford Yard, is offering something unique in Norwich; the punchy, bold flavours of Portugal fused with other world influences, and hospitality that makes you feel like you’ve made new friends. Owner Jorges is a host in every sense and his personality is what makes this place so engaging. His passion for food is clear and from the moment we arrived he took us under his wing and on a wonderful journey through Portuguese food, drink and culture. He did what I hoped he would do; he presented us with the dishes he was most proud of, that best reflected the diversity

and taste of everything that’s great and delicious about Portuguese cuisine. The food was like nothing we had ever tasted before, which for those of us who dine out often is very refreshing! The menu is packed with meat, fish and vegetarian dishes, with Mediterranean ingredients at their heart, but with some intriguing twists that challenged our taste buds. Jorges kicked us off with some wonderful homemade bread and olives, and throughout the evening we were presented with many different types of bread — sweet potato, rye, maize (corn), rustic, all moreish. He brought us a range of
starters; slices of tender dry cured tuna, with a piquant green chilli sauce, rocket and almond salad. A wonderful texture to the tuna, meaty but light and so full of flavour. Next was clams in their shells, steamed in a citrusy broth with garlic and olive oil and served with toasted rustic bread. Delicious all round. Last of the starters was black pork tenderloin, sautéed in olive oil, pickles and olives. Lovely meaty pork, and an intriguing flavour, courtesy of the chef’s superb ‘secret’ sauce!

from every region. He presented us with a wine to complement each dish and he was spot on, as they worked together perfectly. Mains were just as stunning and Jorges insisted we try the Cataplana, a famous Portuguese fish stew served in a large copper bowl and packed with clams, langoustines, prawns, monkfish and sliced potatoes. Finished with wine it’s light, wholesome and the theatre of it makes a perfect meal for two to share. Jorges also wanted us to try Black Pork Secretos, a simple dish of tender pork, tomato, red onion and coriander salsa and a chilli sauce with a surprising kick. Desserts didn’t let us down; the perfect chocolate mousse, rich, frothy and bitter-sweet; and a mouthwatering selection of Portuguese goat’s and sheep’s milk cheeses that ranged from soft and creamy to intense, almost Parmesan-like with a crystalline texture. Jorges is a top recommendation for anyone who wants to give their jaded palate a good kicking. Surprising, delicious, and what a welcome! We have Valentine’s day and Mothering Sunday to prepare for in terms of wine buying, but I must confess I do not take much notice these days (kill joy I know). But I will celebrate it with a glass (or two) of Champagne. I am the UK sole importer for Duménil Champagne, a family run House, which produces a Premier Cru Champagne. Their ‘special cuvee’ is to die for and it is aptly named Amour de Cuvée Blanc de Noir 1er Cru. With the word love in the title it has to be perfect for February 14th, it also comes in a golden coloured silky bag. Made from Pinot Noir and Pinot Meunier at 50% for each. I must say that the Champenoise love the Meunier more than I do but... only the very best grapes are used for this wine, specially selected for their aging potential. Five years in the cellars. This wine has small fast bubbles forming a perfect mousse and the aromas and taste are beyond description. Unfortunately you have to pay a premium price for wine made from grapes which are specially selected and picked by hand. However spoil your loved one, at £39 per bottle, it’s still a snip for the outstanding quality and it is so special! If you need to eat then try it with Saddle of Lamb. This Champagne is not available anywhere else in the UK. Good for Mother’s Day, too, mums will love it. Alternatively you could give a bottle of Blanquette de Limoux Tête de Cuvée at £17 per bottle – a great alternative.

Chocolate & Rose Delice MAKES 6 PORTIONS
For the sponge:
150g butter 150g caster sugar 3eggs ½ tsp vanilla extract 100g self-raising flour 50g cocoa powder
1 Preheat the oven to 180°C. Grease and line a 20cm square cake tin with baking parchment. 2 Cream the butter and sugar together until light and fluffy. Gradually add the eggs, then add vanilla. 3 Sift the dry ingredients into the mixture and stir until combined. Spread into the prepared tin and bake for 12-15 minutes until cooked. Allow to cool.

200g egg whites 60g unsalted butter, softened 50g caster sugar 320g good quality dark chocolate, 70% cocoa solids 10g plain flour, sifted rose water to taste
150ml double cream 200g good quality dark chocolate 70% cocoa solids Place the cream in a sauce pan and bring to the boil, take off the heat and stir in the chocolate until smooth allow to cool slightly.
1 Preheat the oven to 110°C. Grease and line a 20cm square cake tin with baking parchment. 2 Blend the egg whites, butter and sugar in a food processor until light and creamy. Melt the chocolate and add to the mixture and continue to blend until smooth. Add the flour and rose water and pulse to combine but do not over mix. 3 Pour the mixture into the tin and bake for 16 minutes turning the tray after 8 minutes to cook it evenly. Allow to cool.
To assemble: Place the delice mixture on top of the cooled sponge, pour the ganache over the top and spread until even. Allow to cool in the fridge for up to 4 hours. The life and times of a Wine Merchant Steve Hearnden at Tastebuds Wines
I WAS BORN in the East End of London but as a baby was removed to North West London where, as a child I had a tough but idyllic life. Hampstead Heath was my playground! I decided very early in life what I wanted to do as a career as I had two choices, the first was a chef and the second a funeral director. I chose the first and went to college and trained in hotel and catering. When I left college I worked in the industry in London – my links to wine were rather tenuous and I learnt very little. But after seven years I was appointed as a junior lecturer at the college I attended, where I taught restaurant operations. The wine lecturer then left and I was given the job to teach wine to the hotel students – so I had to

study for my diploma as I taught! At college, I moved up the ladder and became a programme director and resubmitted the course details with Gastronomy as a final year subject option. I made sure it included an annual field trip to the vineyards of France and so began my love affair with wine! At the same time I started a PhD in Champagne, taught at my local college evening classes and made many friends who used to accompany me on weekend trips to the Champagne region. My work also involved wine education in the catering trade in London. I eventually retired from a successful academic career and moved to Norfolk where my wife and I started a wine
club. We launched Tastebuds Wines Limited in 2002 and I now import wines – specialising in small family run wineries. I also import from Romania, Spain and Portugal and the USA and Niagara Falls are next on my list. Most of my wines are exclusively available to Tastebuds in the UK. I run wine tastings and, for 2019, I plan to run some short wine appreciation courses, which will be informal and held in the warehouse/shop in Strumpshaw. Wine for birthday presents are also a regular feature of my work as welI corporate clients who want wine to gift to their clients. My City Life
When and why did you first decide to become a jeweller/goldsmith? After leaving school I was fortunate to be accepted onto a four-year jewellery apprenticeship under the tutelage of the highly esteemed South African jeweller called Sid Foreman. Mr Foreman originally took me on as a setter, however I had a natural flair for the metalwork and subsequently graduated after two years as a jewellery mounter – what we more generically refer to as a goldsmith or jeweller; someone who makes the piece before passing it to a setter to finish. At Sonkai I don’t have the luxury of being in a huge workshop with separate teams, so I am now my own mounter, setter, polisher and tea boy too! What brought you to the UK and ultimately Norwich? I settled in Norfolk because of several family connections. My
parents had emigrated to South Africa almost 50 years ago when my older siblings were just babies. How easy/difficult was it to set up your business in the heart of the Lanes? In 2006 I had the opportunity to take on an existing small silver shop as the owner was retiring. Sara agreed to help me with the admin side of the business and her mum very kindly offered to be our guarantor for a start-up loan. It was tough to begin with but after four years of hard work we were confident enough to look for larger premises. It took perhaps a year to find our current shop in 2011.
It seems we may have to move again as there are plans to re-develop this site. However, being a small and independent, family business, means we will always look to stay in the lanes area. What do you love about Norwich? We have a lot of love and pride for this city. Even more so since taking on the commission to produce new civic chains for the Lord Mayor and Sheriff in 2016. The wealth of history here is astonishing; we thought we knew a lot but researching for the chains was such an eye-opener. In addition to all the culture and arts here, there is so much beautiful countryside and it’s less than an hour’s drive to the beach. Perfect! What are Sonkais’ plans for 2019? We are focusing more and more on trying to fill the store with our own unique, handmade jewellery. The past few years we have been growing our set range items and now we want to make more one-of-a-kind designs that you’ll never find elsewhere. Other than that, the normal bespoke work, repairs, restorations and oh yes – looking for new premises will keep us busy! ■
