Everywhere you look, you’ll find plant-based athletes, celebs, politicians, and media moguls repping the vegan life. Take, for example, NBA’s DeAndre Jordan. He’s vegan, vocal about his diet, and host of a new plant-based cooking show. DeAndre epitomizes everyday veganism and is a model for what incorporated activism looks like in the real world. An Interview with NBA’s

NBA’s DeAndre Jordan not only embodies the term basketball

star on the court, but he scores points with fans off the court as well. When he’s not training for a game, Jordan advocates for sustainability, preaching the benefits of a vegan lifestyle and mindful practices. He also engages in philanthropy with his DeAndre Jordan Treehouse Giving Foundation and Plant with DeAndre initiatives. Expanding his efforts of vegan advocacy, Jordan recently released a television show, Cooking Clean, where he prepares tasty plant-based recipes alongside professional chefs. We sat down with him to learn more about his vegan endeavors and wellness-centric lifestyle.

What inspired you to adopt a vegan lifestyle, and in what ways has your life changed since? Each off-season, I would try different ways to get better mentally and physically. I would try going vegetarian for a few weeks at a time and realized that when I was finished, I felt much clearer and energized. Transitioning to a plant-based diet has worked out great for me, and I love the way I feel.

In addition to eating a plant-based diet, you also practice yoga, sit for regular meditation, and enjoy sound baths. Why do you feel a holistic approach to wellness is important? We are connected in mind and body. Approaching life from a mindful perspective has enormous benefits to your overall health and well-being. If you can find that one practice that centers you and puts you at peace to deal with life’s ups and downs, it makes it easier to master challenges and distractions. VEGOUT MAGAZINE | 15


Do you find being a vegan athlete challenging? You definitely need to find a balance to make sure you’re getting the proper nutrients from the foods you eat. I’ve been able to monitor my diet and make sure that I keep track of the changes my body needs during different periods of time. Being in the NBA, you’re surely well-traveled. As far as vegan offerings, what city has been your favorite, and which cities have surprised you?

Aside from filming your show, Cooking Clean, you’re involved in your own philanthropic endeavors, including the DeAndre Jordan Treehouse Giving Foundation and Plant with DeAndre. What have these initiatives meant to you, and what can we expect from you next? Giving back is very important to me. The foundation’s work with families in underserved communities is very important to me. I’m working hard to share the lessons I’m learning about nutrition, health and wellness, and sustainability with as many people [as I can].

NYC and LA have amazing options. I love exploring menus in some of the smaller cities also. There are definitely more options now than two years ago. It’s an exciting time to be plant-based.

It also allowed me to enjoy all of the special moments with my family and gave me a chance to get to know myself and others better.

How did the COVID-19 quarantine affect your daily routine in terms of practicing basketball and maintaining a healthy lifestyle? In what ways did you find it challenging to balance being a dad and professional basketball player while still practicing self-care during a global pandemic? The pandemic taught me patience. It also allowed me to enjoy all of the special moments with my family and gave me a chance to get to know myself and others better. I bonded with my family by working out with [a group] of them via Zoom three to four days a week. I was also able to use my home gym equipment—but nothing replaces live interaction with my trainer and teammates. What’s it like being vegan in the NBA? Are you able to get vegan food catered to games, and do your coaches put you on any special workout plans or diets? I’m pretty good about making sure I always have access to the foods I eat. The team also [ensures that] we have a variety of choices accessible. More players are starting to shift their diets to include plant-based items. It’s [great] to see the transition.

Beyond Chicken Tenders Are Now Available at Restaurants Nationwide

After receiving mixed reviews on their attempt at chicken strips in 2012, the team at Beyond Meat decided to revamp their plant-based chicken recipe—and the result is Beyond Chicken Tenders. These tasty tenders are packed with 14g of protein, and critics attest that they taste just like their meat-based counterparts. In July, the company rolled out Beyond Chicken Tenders at over 400 restaurants nationwide, including chains such as Next Level Burger, Dog Haus, and Toppers Pizza, as well as local eateries such as Milwaukee Burger Company and Pub 819. Beyond Meat also plans to expand their tender offerings at stadiums and hotels in the near future.

Gucci Releases Its First Vegan Leather Sneaker Line

In June, Gucci released its first vegan leather sneaker line—Demetra. The name of the sneakers was chosen by Gucci’s Creative Director, Alessandro Michele, and was inspired by Demeter, the Greek goddess of harvest. The vegan leather sneaker line features three different styles, including Gucci Basket, Gucci New Ace, and Gucci Rhyton. The shoes are priced between $700 and $950, and are produced in the company’s Italian factory. All three styles can be purchased in Gucci stores and on their website.

Kylie Cosmetics Gets a Vegan Makeover Reality TV star and businesswoman Kylie Jenner has relaunched her makeup line— Kylie Cosmetics—using a cruelty-free, vegan, and gluten-free formula. While Kylie Cosmetics has always been cruelty-free, the updated line is now fully vegan and features 37 lip kits, 30 high glosses, 32 matte liquid lipsticks, nine lip liners, four lip blushes, and 15 matte and shimmer gel eyeliner shades. In addition to her makeup brand, Kylie Jenner launched Kylie Skin in May 2019. The skincare brand is 100% cruelty-free, vegan, gluten-free, paraben-free, sulfate-free, and is suitable for all skin types. Little Caesars Adds Vegan Pepperoni to Menu Little Caesars has teamed up with Field Roast to launch Planteroni Pizza in select cities across the US. The pizza is made with Field Roast’s plantbased pepperoni and can be ordered without cheese to make it vegan. The plant-based pepperoni is also available as a topping option for custom pizzas. The Planteroni Pizza is available at Little Caesars locations in Los Angeles, New York City, Miami, San Francisco, Portland, and the chain’s hometown of Detroit. Additionally, Field Roast Plant-Based Pepperoni is expected to hit retail shelves in North America later this year.

NBA’s Number One Draft Pick Is Vegan The NBA’s number one draft pick, Cade Cunningham, joins the growing list of vegan superstar athletes. The 19-year-old Oklahoma State basketball player has been vegan since high school and is bringing the plant-based magic to the court as he heads to play for the Detroit Pistons during the next NBA season. After being announced as the first NBA draft pick, the ESPN broadcast crew spoke with Cunningham about his vegan lifestyle. Cunningham explained that he made the decision to go vegan as a way to experiment with how his body would react to plant-based food. After taking a short break from veganism in 2019 (Cunningham ate McDonald’s during a trip to Greece with Team USA during the FIBA World Cup), the basketball player quickly made the decision to go back to veganism, and it has stuck ever since!

Panda Express Tests Vegan Orange Chicken at Select Locations

RXBAR Launches Its First-Ever Plant-Based Protein Bar RXBAR, which is known for its egg whitebased protein bars, has launched a new line of plant-based protein bars called RXBAR Plant. The bars pack 10g of protein per serving and feature a blend of pea and almond protein, as well as ingredients like dates, nuts, and gluten-free whole-grain oats. RXBAR Plant comes in Chocolate Chip and Peanut Butter varieties and is available for purchase online at RXBAR.com or at select Target and Kroger retailers nationwide. The brand also plans to launch the bars at more stores throughout the US in the near future.

On the heels of the launch of Beyond Chicken Tenders, Panda Express put Beyond Meat vegan orange chicken to the test at select locations in New York City and Southern California. Beyond The Original Orange Chicken is made with crispy breaded Beyond chicken pieces that are tossed in Panda Express’s signature vegan-friendly orange chicken sauce. The fast-food chain began offering the vegan orange chicken option on July 26, and it will be available for a limited time. Could this become a permanent menu item at Panda Express? We sure hope so!

Gordon Ramsay Welcomes the First-Ever Vegan Chef on Hell’s Kitchen

This past summer, Michelin star chef Gordon Ramsay welcomed the first-ever vegan chef—Josie Clemens—on his FOX television show, Hell’s Kitchen. Clemens, a 24-year-old from Michigan, was in the lineup of 18 cooks in the season titled “Young Guns,” as all chefs were 23 or younger during the competition. The vegan chef competed for the opportunity to work as head chef or executive chef at one of Ramsay’s restaurants as well as a cash prize of $250,000.

BY KAYLA PASKO anyway," "I'm just gonna get a soup and salad," or my favorite, "Now, I am really hungry." Plant-based restaurants are continuing to open throughout Chicago, and we are here for it! Take, for example, Kale My Name, which launched in April 2020 and has become a Windy City favorite. We got inside the mind behind this vegan concept and spoke with the owner about his experience taking Kale My Name from dream to growing business.

WHY DID YOU DECIDE TO OPEN YOUR BUSINESS? When I immigrated to America seven years ago, my first job was as a host at a restaurant. I loved working with people and meeting new customers daily, so I decided to stay in the industry. I became a server and eventually a bartender. Two years later, I got my final promotion and became general manager. Knowing I was capable of running a business myself, I started working on a plan. Being vegan, the first thing I wrote in my business plan was: 100% plant-based restaurant. I started from there.

TELL US ABOUT THE INSPIRATION BEHIND YOUR RESTAURANT'S MENU. Living in different countries and continents, I wanted to create a globally inspired menu—traditional dishes from different places, made vegan. The Tequeños from Venezuela [are a] big hit. I'm happy to bring Ajvar on the menu as it is very traditional for my part of the world (Balkans—I'm from Montenegro). It’s a bread spread made from eggplant and red pepper. Sections on the menu are named after my personal feelings and moods when I go to the restaurant. I have phrases such as "I'm not really hungry, but I'm gonna eat

WHAT IS THE MOST POPULAR DISH AT YOUR RESTAURANT? Definitely cauliflower wings. People can't believe you can do that to cauliflower and make it so incredibly delicious that even non-vegans now prefer those wings over meat options.

HOW HAS YOUR RESTAURANT EVOLVED OVER THE PAST YEAR? Opening a restaurant when the pandemic started was not easy, and it scared me so much. Although doing takeout and delivery for most of this past year was not what I was hoping for, it was a great learning experience. Chicago made sure to support us and keep us in business, so we were ready for reopening. We started with three employees, and now we are a team of over twenty people. We also opened with a very limited budget, so we didn't have all of the necessary equipment. A year later, we have a fully equipped, functional kitchen, which is great because now we are extremely busy daily. I'm beyond grateful for all the love.

Neal Barnard, MD, FACC, is an adjunct professor of medicine at the George Washington University School of Medicine in Washington, D.C. and president of the Physicians Committee for Responsible Medicine. Dr. Barnard has led numerous research studies, authored more than 100 scientific publications and 20 books, and serves as editor-in-chief of the Nutrition Guide for Clinicians, a textbook made available to all US medical students. He has authored key resolutions, now part of American Medical Association policy, calling for a focus on prevention and nutrition in federal policies and medical practice. Originally from Fargo, North Dakota, Dr. Barnard received his MD at the George Washington University School of Medicine and completed his residency at the same institution.

A founding member and Fellow of the American College of Lifestyle Medicine, Michael Greger, MD, is a physician, New York Times bestselling author, and internationally recognized speaker on nutrition. He is a graduate of Cornell University School of Agriculture and Tufts University School of Medicine. Dr. Greger founded NutritionFacts.org, a nutrition research site stocked with free articles and videos on more than 2,000 health topics.

Dr. John McDougall John McDougall, MD is the founder of the McDougall Health and Medical Program. As a principal investigator of scientific research in nutrition, medical care, and health, he has authored 13 national bestselling books, including The Starch Solution. Dr. McDougall has dedicated over 50 years of his life to caring for people with diet and lifestyle medicine.


The media has become a saturated source of nutrition information. While there is a lot of accurate nutrition data to be found, not all of it is factual. Which wellness trends and myths would you like to make disappear and why?

Great question. Persistent mythology has supported sales of dairy products (“milk for strong bones”) and meat (as a seemingly obligatory source of protein and iron). The industries behind these products pay for research, hoping to exonerate them regarding health risks and promote them in the press. The myth that “soy causes cancer” has been interesting, particularly as scientific evidence clearly shows that the opposite is true. Soy consumption reduces breast cancer incidence by about 30% and also reduces mortality after a breast cancer diagnosis. The same is true for prostate cancer. The anti-soy mythology has lived on for inexplicable reasons. The granddaddy of them all is asking people following vegan diets, “Where do you get your protein?” There is no issue there whatsoever, and it is odd that the question keeps popping into omnivores’ heads.

The notion that a calorie from one source is just as fattening as a calorie from any other source is a trope broadcast by the food industry as a way to absolve itself of culpability. While it’s true that in a tightly controlled laboratory setting, 240 calories of carrots (about ten carrots) would have the same effect on calorie balance as the 240 calories in a bottle of soda, this comparison falls on its face in the real world. You could chug those liquid calories in less than a minute, but eating 240 calories of carrots could take you more than two and a half hours (it’s been timed). Not only would your jaw get sore, but you might not be able to fit [the carrots into] your stomach. In a lab, a calorie is a calorie, but in real life, far from it. Processed plant foods like fruit juice, sugar, refined grains, and even whole grains if they’ve been powdered into flour, have had their cell walls cracked open, so their calories are free for the taking. All large populations of trim, healthy people throughout verifiable human history have obtained the bulk of their calories from starches. Examples of thriving populations include the Japanese, Chinese, and other Asians, who ate sweet potatoes, buckwheat, and/or rice; Incas in South America who ate potatoes; Mayans and Aztecs in Central America, known as “the people of the corn;” and the Middle East, formally known as “the breadbasket of the world,” fed hundreds of millions on a diet of wheat and barley. I say “ate,” rather than “eat,” because, since the early 1980s, Western eating patterns have prevailed over traditional patterns based on staples like corn, potatoes, rice, and wheat. A starch-based diet is essential. The diet has historically been based on corn, potatoes, rice, and wheat, with the addition of fruits and vegetables. No animal products or “free oils” (oils, such as olive oil, flaxseed oil, etc. that are extracted from their original forms) are included. Cocktail connoisseur, brewmaster, pizza perfector, and spice master are just a few words that come to mind when considering Eisner’s influence on the Los Angeles vegan community. With Eisner’s latest concept, Put Me In Coach, he continues his mission of bringing people together, creating a community with a passion for food and sports under one roof. Call it what you want—another home run, a slam dunk, a hole-in-one—but the home team advantage is working in Eisner’s favor as the spot marks the first vegan sports bar in Los Angeles. From the menu, a chilicheese dog, hot pretzel, and a beer (they serve brews from Party Beer Co.—Eisner’s brewery and the official beer of the LAFC) creates the perfect hat-trick for an afternoon spent catching the season’s games as the evenings get cooler.

A Driving Force Behind LA’s Vegan Food & Bar Scene

As the food scene begins to recover after more than a year of struggle, folx are eager to get out and enjoy a plant-based meal together. We sat down with Eisner to learn more about his ability to create a warm and welcoming space and to discuss his playbook for building strong vegan businesses, overcoming obstacles, and strategizing plans for future growth.

Everything you touch turns to vegan gold. What has your food and beverage journey been like from the beginning? Has it been easy? Thank you so much for the kind words. I'm truly grateful, and I appreciate the support. I come from a Mediterranean family, so growing up, I would be in the kitchen all day with my Nonna before I could even walk. But I started my food and beverage career at the age of twelve. No joke. I grew up with a strong single mother who worked five jobs to keep us afloat, and one of those jobs was for a blue-collar catering company called Dinner Table. In order to see my Mom on weekends, I began working alongside her. I've done every job you can do in a restaurant— dishwashing, bussing, running, waiting tables, bartending, managing, general managing, beverage directing—and now I own businesses. Nothing has ever been "easy," but I truly love what I do, so it also never quite feels like I'm "at work." After a year of separation due to the pandemic, how did it feel to bring folx back together with your latest concept, Put Me In Coach? This past year has been incredibly trying for everyone, but speaking specifically on behalf of my industry, it's been devastating for so many. That being said, COVID forced me to rise up, so I quickly started looking for opportunities to grow in my craft and grow my businesses. Over the course of the pandemic, my partners and I opened up three new plant-based units that have both a retail (on-site) and wholesale (off-site) component. The recent opening of Put Me In Coach was an incredible experience. We signed a lease, developed a menu, hired and trained staff, and opened to the public in literally three weeks. We hadn't even finished construction. This concept is special. We see sports like food, a global unifier with the capacity to foster inclusivity and create community. That's our goal— to bring everyone together and celebrate each other’s lives. We love serving people and want to see everyone fulfilled. We’ve all been spoiled by your brews and bites, but give us a peek at the dinner table of Jason’s house. What are some of your go-to home-cooked meals?

I'm part Italian, so I love to make pasta fatta a mano and Neapolitan-style pizza—but 90% of my diet at home is roasted veggies and salad. I love my greens. Do you have any tips you can share with those interested in a career in mixology or the restaurant business? In my opinion, the most valuable asset you have in life is your time. Whatever you choose to do, whether it is in my industry or not, give all of yourself to it. Put yourself out there. Don't be afraid to make mistakes and don't be worried about the possibility of failure. Just go for it with everything you have. I have a John Burroughs quote that I adore. I heard it a few years back and it really spoke to me. "Leap, and the net will appear." I live by that philosophy.

“The most valuable asset you have in life is your time. ” Your fingerprints are all over the LA food scene—from quick service to fine dining. Have you considered expanding to other cities? If so, where to next? I have spent years cultivating the perfect team, and I truly feel that now I have one. When you have a great team, there are no limits. We plan to grow our brands internationally, but in the next year, look for us all around LA and up and down the California coast. We are also looking at hungry domestic markets. We have aggressive plans. Party Beer Co. is the official beer of the LAFC soccer team (congrats!). What can we expect from you and your work in the future? Any big plans or goals? It was our dream to partner with LAFC long before we ever even had one single beer in a can or keg, so the fact that it happened in our first year of being open—and during a pandemic—is astonishing to us. We have plans to grow Wolfie's Hot Chicken, as well as a line of wholesale Wolfie's sauces, and to grow Put Me In Coach. In terms of Party Beer Co., look for “the little plant-based brewery that could” in major wholesale accounts next year. We also have quite a few more concepts in the pipeline. This is fun for us, and we're excited for what is to come.

- 1 box Tolerant Organic Red Lentil Rotini - 16 oz jar roasted red peppers, well-drained - 1/4 cup unsweetened cashew butter - 1 Tbsp smoked sweet paprika - 1 Tbsp tomato paste - Salt and pepper, to taste

Directions 1. Cook Tolerant Organic Red Lentil Rotini according to package directions; set aside. 2. In a blender, combine peppers, cashew butter, paprika, and tomato paste. Blend on high speed until very smooth, then add salt and pepper to taste. 3. Place a medium saucepan over medium heat, and pour pepper sauce into it. Cook, stirring until sauce is steaming. Taste again and adjust the seasoning if desired. Stir in pasta to coat with sauce. 4. Serve immediately.

Cheesy Green Bean Casserole

No holiday potluck is complete without a green bean casserole. We’re loving this 100% plant-based, healthier-for-you option made with Core and Rind’s Cashew Cheesy Sauce. Take a tray or two of this traditional favorite to your holiday gathering to impress even your non-vegan friends.

(serves 4)

Cashew Cream: - 1 cup raw cashews

Crispy Onions:

- Avocado oil spray - 1/2 cup almond flour - Sea salt and pepper, to taste - 1/2 small onion, thinly sliced - 1/2 cup unsweetened almond milk

Green Bean Casserole:

- 12 oz green beans, ends trimmed - 1 Tbsp avocado oil - 1 cup sliced baby bella mushrooms - 3/4 cup Core and Rind’s Cashew Cheesy Sauce - 1/2 cup cashew cream - 1/4 cup almond milk (more, if desired) - Nutritional yeast (optional)

Directions Cashew Cream: 1. Soak 1 cup of raw cashews in water for 2 hours. 2. Drain and rinse cashews thoroughly. 3. Blend cashews in a food processor with 3/4 cup water until very smooth. 4. Thin out with more water, if needed, until desired consistency is reached.

Crispy Onions: 1. Preheat oven to 375ºF. Spray a sheet pan with avocado oil spray. 2. Place almond flour in a shallow bowl. Season with sea salt and pepper to taste. 3. Dredge onion slices in almond milk, then coat with seasoned almond flour and place on the prepared sheet pan. 4. Mist onions with a light coating of avocado oil spray. This will help them crisp up in the oven. 5. Bake for 8-12 minutes until crispy.

Green Bean Casserole: 1. While onions are baking, prepare green bean casserole. In a medium saucepan, bring one cup of water to a boil; add green beans and cover pan. 2. Steam 4-6 minutes until tender. Drain and set aside. 3. In a medium skillet, heat avocado oil over medium heat. Once pan is hot, add mushrooms. 4. Cook for 3-5 minutes or until tender. Reduce heat to low. 5. Add Cashew Cheesy Sauce and cashew cream to skillet. Stir to combine sauce. 6. Add green beans. If sauce is too thick, stir in 1/4 cup almond milk at a time until sauce reaches desired consistency. 7. Top green bean casserole with crispy onions and sprinkle with nutritional yeast for extra cheesy flavor, if desired.

It would have to be vegan pho. My partner often jokes that I have an entirely separate stomach when it comes to noodles, because I eat noodles two times faster than any other dish. I may or may not inhale noodles like Kirby. Whenever I’m not feeling well, I crave pho. If I’m being honest, I crave pho every day. I always have instant pho bowls stocked in my pantry for emergencies (aka Ashley needs a pickme-up). I love noodle soups, and the rice noodles in the aromatic pho broth truly hits the spot. I love it because it comes with so many veggies, herbs, spices, and sauces to mix into the broth. Plus, it doesn’t feel too heavy or oily—it just feels fresh and soothes the soul.

Each morning, I’ll grab my canvas bag and toss in an assortment of my favorite snacks so I never have to worry about not having a place to go with solid vegan options. STREET For those of you who have yet to attend Vegan Street Fair (VSF) in Los Angeles, you’re missing out! This annual event is one of the most epic all-vegan food festivals in the US, showcasing the innovative noms from vegan and vegan-friendly pop-ups and food trucks across Southern California. The founder, Jessica Cruz, not only does a great job making veganism accessible through Vegan Street Fair and other plant-based events, but she’s been using her platform to create inclusive, intersectional spaces in the vegan movement. We chatted with her to learn more about her powerful activism. Here’s what she had to say! By Allie Mitchell

How did Vegan Street Fair and Vegan Exchange come about?

VegOut (VO): Share with us a bit about your background and what led you to become vegan. Jessica Cruz (JC): I am a native New Yorker of Puerto Rican descent who never in a million years thought I’d ever be a vegan (isn’t that all of us, though?). When I visited SeaWorld in 2010, I took photos with dolphins during a swimming encounter with them. I posted the photos and someone who wasn’t even vegan commented that those animals didn’t actually want to be there. I told him that wasn’t true and that I would prove him wrong. I spent the whole day Googling animals in marine parks and boy, did I do the opposite. I saw how they behaved in the enclosures, often ramming their heads into walls to attempt to escape their fate one way or another. I decided from that moment on that I never wanted another living being to suffer for my enjoyment ever again. If you could describe what type of vegan you are in one sentence, what would that be? I’m an all-inclusive, welcoming, nonjudgmental vegan who believes in planting seeds [to inspire] as many future vegans as possible. What are your favorite things about the vegan community? Seeing the local LA vegan community show up and show out when events come around. They are the reason the vendors at my events succeed. They are the driving force behind the global movement of vegan pop-ups and brickand-mortars opening left and right. Their enthusiastic support of all things vegan is unmatched.

Vegan Street Fair was a dream that came from a failed vegan app I was building in 2011. Once the app fell apart, I sat with over 400 vegan and veganfriendly places in our LA database and thought, “I’ll never be able to eat at all of these places even if I lived here for 10 years. So maybe I’ll create an event where they all come to me.” And in 2015, Vegan Street Fair was born. I wanted it to be inclusive, with free entry, near public transportation, and low in cost, which is why we promote our bite-sized portions so heavily. We believe that if someone has just $4 in their pocket, they should be able to get something REALLY tasty that might change their mind about veganism. Once the success of Vegan Street Fair was solidified, people asked us for a weekly event. In 2018, Vegan Exchange was born to meet that demand. As the owner of an event company, what was it like when COVID hit? How did you have to pivot your business to stay afloat? Events were the first thing to get canceled and the last to return. To say that it’s been an incredible hardship is an understatement. When we lost Vegan Street Fair 2020, all of the costs associated with running a mega event had been expended—marketing, PR, graphics, videos, studio time, editing, map designs, menus, staff, etc. Our loyal vendors knew we would be back in full force and now, we are fighting every day to ensure that our upcoming events are successes because we lost three major events in just a year and a half. With events and gatherings picking back up, what plans have you made for VSF and Vegan Exchange? Vegan Exchange is currently happening weekly, VSF Nights is on hold this year, and Vegan Street Fair will hopefully return on March 26th and 27th, 2022. What is the most rewarding part about working with vegan vendors? Seeing them grow. The joy I get seeing them come to events with new equipment, new vehicles, updated signs and tents, and a growing fanbase is the highest high I could ever receive.

We love what you are doing on your platform to amplify the voices of marginalized communities. How do you think we can all create inclusive, intersectional spaces in the vegan movement? It takes us being genuinely concerned with inclusivity and ensuring that we hire more Black, Brown, Queer, and Disabled folx so that we don’t just talk the talk but we walk the walk. I think it is equally important as harbingers of vegan culture to not promote or support vendors and restaurants that culturally appropriate the foods of marginalized communities. I see it all the time in the vegan movement and it makes me really sad to know that the people whose culture these foods actually belong to get barely any recognition while the most privileged in the community pass off things that are culturally insensitive and inaccurate. We should, and must always strive to, be better and not simply support people because they are part of some exclusive vegan club. Since you’re well-versed in the foodie scene, we are dying to hear what your top five vegan restaurants or pop-ups are. Please spill! Oof. This is hard, but I’ll bite (see what I did there?). 1. That sounds weird, right? But it’s true. This isn’t how people see or take pictures on their own phone so fancy photos do not do well on social media. 2. Never use flash. *shudder* 3. Take photos in good lighting with some slight shade. 4. Never post in 16:9. Always post in square or portrait size. 5. Shooting up-close is no bueno and neither is too far away. Photograph so folx can see what you’re actually eating.

Ways to Be Eco-Friendly This Holiday Season

1. Go handmade. Rather than running to the shop to buy a gift, why not try your hand at making something yourself?! From handmade ornaments to homemade jam, you can be creative and eco-friendly at the same time. Handmade gifts are also super heartfelt, so your family and friends will love whatever you come up with. 2. Give experiential gifts. Skip the wrapping paper entirely, and give the gift of adventure! Take a look at your local area to see what outdoor activities you can gift to your loved ones. They will have memories to last a lifetime and can experience something new, fun, and adventurous. 3. Add organic and local foods to your holiday feast. Support your local farmers who grow produce using regenerative or sustainable farming practices. Not only will you enjoy better-tasting food with local, organic products, but you’ll also be giving back to your community and lowering your carbon footprint in the process. 4. Stuff stockings with edible treats. For those whose holiday celebrations involve stockings, you know that stocking stuffers tend to involve small, plastic trinkets that end up in the garbage pretty quickly. Opt, instead, for filling your stockings with a variety of homemade treats—vegan cookies, anyone? 5. Recycle your tree. Each year, ten million Christmas trees end up in the landfill. If you celebrate Christmas and purchase a tree annually, opt for one grown without pesticides and find a local organization that recycles the trees. Many cities have programs that turn your tree into wood chips or mulch, and some use them for other environmental projects like streambank stabilization.

It’s time to get creative and repurpose all the things!

6. Consider your travel. There is no doubt that loved ones are itching to be together this year for holidays. If you plan on traveling, consider reducing air travel when possible, as well as offsetting the fossil fuel pollution generated by your trip. An easy way to do this is through companies like Terrapass, CarbonFund, and Carbonify, that purchase and retire certified carbon offsets on your behalf. You can choose to donate to several types of projects, including renewable energy and reforestation projects. The offset projects are verified by a third party to ensure real carbon dioxide emission reductions. Driving instead? Try to carpool with others, and if you are car-less, consider renting an electric vehicle! 7. Bring a vegan dish to share. Even if your family isn’t vegan, there is no better time to get them on board by letting them try a delicious vegan dish. Check out any of the many plant-based holiday recipes out there such as those from some of our favorite sites, including Minimalist Baker, From My Bowl, and Vegan Richa. Use your amazing dishes as a conversation starter to inform your relatives that going vegan has been found by the United Nations to be the single biggest way to reduce your impact on the planet.

8. Reduce food waste. In the US alone, food waste is estimated to be between 30-40% of the food supply. Wasted food is the single largest category of material placed in landfills, which is a massive source of carbon dioxide and methane emissions. We know that the holidays mean A LOT of delicious food, and we love that, but let’s indulge while still protecting Mother Earth. Aim to save your leftovers, freeze them, or use them to create new recipes. What food you can’t save, you can compost to help build nutrient-dense soil in your backyard or community garden. 9. Reuse or thrift. When it comes to decorations and wrapping materials, try to reuse what you already have. No one will notice you’re using a gift bag and fabric ribbon from two holidays prior. If you are looking for more materials, try your local thrift stores first. You’ll be able to contribute to a circular economy, while saving money in the process. 10. Repurpose and upcycle. It’s time to get creative and repurpose all the things. If you have any shipping paper, magazines, or single-use plastic products hanging around, it’s time to find a way to use them. Wrap some homemade vegan peppermint bark in one of those takeaway containers you’ve been storing up. Tie a beautiful ribbon around it (saved from one of last year’s gifts) and offer it to a neighbor.

From Halloween parties to Friendsgiving get-togethers to big family meals at Hanukkah, Kwanzaa, Christmas, and more, coming together with food is our seasonal go-to. While there is no right or wrong way to celebrate, there are helpful strategies available for making mealtime choices while still getting the full holiday experience. Keep reading for RDapproved suggestions to get you through this special time of the year. Anja Grommons is a registered dietitian who is passionate about all things plant-centric food and nutrition. She currently works as a clinical dietitian in West Michigan and offers virtual nutrition coaching to those interested in adopting a plantbased diet.


1 Although your holiday get-togethers will likely involve large quantities of drool-worthy food options, it isn’t recommended to restrict yourself leading up to the event. Plan to nourish your body with balanced meals and snacks prior to the big meal. While it may be tempting to go without eating with the intention to really indulge later, skipping meals isn’t ideal. Plan to drink plenty of water and other hydrating fluids throughout the day prior to arrival as unaddressed thirst can be disguised as hunger. Staying hydrated can help you better decipher your true hunger and food needs. Additionally, in the midst of your planning, you will want to ensure there are vegan options at the event—there’s nothing worse than showing up and having only a veggie platter to nosh on. Offer to bring a dish or two to pass. This way, you can enjoy a delicious cruelty-free option and show other guests how tasty plant-based eating can be.

2 When you arrive at your party or get-together, rather than making the entire experience all about food, focus on conversations and connections with friends and family. While there may be loaded appetizer platters and a dessert table filled with all your faves, that doesn’t mean you have to stuff yourself from the get-go. Consider bringing an easy craft or group game to play with the rest of the guests. Don’t totally avoid the appetizer table, but check in with yourself regularly to save room for your meal. If alcohol is offered, sipping on water, club soda, or hydrating mocktails between drinks can help you from going overboard.

3 When it’s time to build your entree, try to opt for a balanced meal while still incorporating your holiday favorites. If possible, opt for fruit and veggie dishes rich in fiber, plantbased protein-packed dishes for satiation, and energizing grains and starches—it’s all about that balance. If you get a rundown of the spread ahead of time, take inventory of all the plant-based components. If one food group isn’t represented, consider filling that void with a dish to pass if you’re able. If that isn’t possible, do your best with the options you have. During mealtime, try slowing down by chewing each bite well, intentionally enjoying the food, and conversing with other guests. Try to avoid the deficit mentality here, which may lead to overeating. Instead of filling your plate over and over, acknowledge the bounty of food and all the leftovers they will provide. Throughout the meal, check in to see if you are still hungry and enjoying yourself. Once you feel full, it’s more than okay to stop, even if Grandma is nagging you to clean your plate. Oh, and eat the dessert, but only if you want to. Choose your favorite option(s), add that dairy-free whipped topping, and enjoy.

4 Despite your best efforts, you may still find yourself ending the night in a food coma—no worries there. You might not feel your best at the moment, but leave it at that. The meal says nothing about your character, so don’t let guilt or ideas of dietary punishment creep in. Instead, focus on small modifications that can make you feel better. Opt to take a walk after the meal with friends and family, or plan for some gentle yoga or stretching when you get home. Choose hydrating beverages after the meal and into the next day, but don’t set unrealistic water goals for yourself. Ultimately, the best thing you can do is return to your usual routine. One meal is not going to ruin you, so whatever you do, don’t start a cleanse or detox, both of which often cause more harm than good. Focus on getting back to your good, sustainable habits like daily movement and balanced meals. During this time, challenge any guilt you may feel as this can lead to further binge-and-restrict cycles. Know that you’re human and that you deserve to enjoy delicious food and time with friends and family during the holiday season.
