LETTER FROM THE FOUNDER

HAPPY NEW YEAR! I’ve struggled with this letter, going between trying to be upbeat and feeling the weight of events that have happened over these past couple of years. While it’s nice to have a fresh start each January, our personal wellness is affected by the environment in which we live. So though it might be nice to set a new year’s resolution of eliminating sugar for 30 days or hitting the gym more consistently, we do that in a society that simultaneously promotes highly processed, calorie-laden foods while pushing unreachable ideals of body image and lifestyle perfection, all during the midst of a global pandemic and one of the largest civil rights movements in the history of our country. Anxiety, addiction, depression, and disease are very real consequences of these mixed media messages. I wrapped up 2021 by facilitating a women’s wellness retreat in Sedona, Arizona. It was a great opportunity to reflect on what wellness means. We like to think it’s just about affirmations, yoga, and green smoothies, but sometimes wellness is shutting off the phone for a day, napping, and enjoying an indulgent slice of cake. Mental well-being is not only equally important to physical well-being, but it greatly impacts our physical health. As such, the VegOut team and I are dedicating this issue to all things wellness—from yoga, whole foods, and fitness apparel to strategies on finding peace during a pandemic and zerowaste products to try in hopes of creating a healthier planet. You’ll hear from rap stars, plantbased athletes, and vegan dietitians and will even find a few new recipes to try. Whatever your wellness goals, and wherever you are on your journey, cheers to you—for showing up for YOU.

JOEY PURP BY ALLIE MITCHELL Joey Purp is a Chicago-based rapper who made a name for himself in the hip-hop world at a young age. He released his first album as a teenager and has been unstoppable ever since! Purp is a founding member of the rap group SaveMoney, alongside Chance the Rapper, Vic Mensa, and other talented artists. He is also one-half of the two-man rap group Leather Corduroys. Purp’s discography includes the 2012 mixtape The Purple Tape, the 2016 mixtape iiiDrops, his studio debut album Quarterthing, and most recently, the 2021 mixtape UpLate. While classified as hip-hop, Purp’s music spans beyond just a single genre. Growing up in several different Chicago neighborhoods, Purp pulls his musical inspiration from a variety of styles. If we could sum up the content Purp presents in one word, it would be “introspective.” His songs make the listener think on a deeper level—or as some say, it makes them “feel all the feels.” Because he has experienced life through the lens of having money, privilege, and opportunity, as well as not having any of those things, Purp focuses his music on those topics and delivers his message in an easy-to-digest format. Ultimately, he wants to use his platform to reach as many people as he can, speaking out for unheard voices and perspectives. While Joey Purp is most popular for being a top innovator in the hip-hop industry, he’s also known for following a plant-based diet. We caught up with him to learn more about his plant-based journey and what it’s like to be an herbivore in the music scene. Here’s what he had to say!

VEGOUT (VO): WHEN AND WHY DID YOU FIRST TRANSITION TO A PLANT-BASED DIET? Joey Purp (JP): About three years ago. It started as my brother challenging me to try. We were both already vegetarian for around five or six years, so it was kind of a natural progression to go plant-based. VO: WHAT HELPED YOU STAY PLANT-BASED? JP: Focusing on the long term health benefits and finding fye plant-based food. Regardless of what’s in it, if the food isn’t fye, no one’s gonna like it. VO: HOW HAS GOING PLANT-BASED AFFECTED YOUR MUSIC CAREER? JP: Mannn, actually, one of the first big cobranding/sponsorship opportunities I got was because I follow a plant-based diet and thrift my clothes. So, in a way, it has helped a lot. Other than that, I’d like to think that when I eat clean, I think clean, so it helps me think at a higher level. VO: HOW DO YOU FIND A BALANCE BETWEEN EATING FRESH, NUTRITIOUS MEALS AND SPLURGING FOR INDULGENT COMFORT FOODS? JP: This is tough. I try to think more about what is good for me than what seems good to me. I do love some good old-fashioned indulgence though. VO: WHERE ARE YOUR FAVORITE SPOTS TO EAT IN CHICAGO? JP: Sheeesh, there are so many! Off the top of my head, I’d say Soul Veg on 75th, Can’t Believe It’s Not Meat on 53rd, both Chicago Diner locations, Handlebar in Wicker Park, Soho House in Fulton Market, ALTHEA in Magnificent Mile, and any [vegan-friendly] Thai restaurant. VO: IN YOUR OPINION, WHICH VEGETABLE IS THE MOST UNDERRATED? WHY? JP: I wanna say celery, but at the same time, celery seems like it gets its flowers a little bit. Over the last few years I got into celery root, too, but that’s a root. Naw, I’m tripping—it’s green beans. Green beans need they flowers.

BILLIE EILISH TEAMS UP WITH NIKE TO LAUNCH VEGAN AIR JORDANS Billie Eilish debuted her very own vegan Air Jordan sneaker collection. The 19-year-old singer and longtime vegan cocreated two Air Jordan silhouette sneakers, each of which are 100% vegan and made with 20% recycled materials. Eilish’s new kicks are available in two styles: Air Jordan 15 and Air Jordan 1 KO. The Air Jordan 15 comes in a neutral taupe hue while the Air Jordan 1KO is lime green. Both styles feature Eilish’s signature Blohsh logo on the tongue of the shoe. The singer debuted her new collection on the heels of megastars like Travis Scott, Drake, and J Balvin, who have also collaborated with Air Jordan in the past.

DOJA CAT LAUNCHES FIRST MAKEUP LINE

Doja Cat launched her first makeup line in partnership with Los Angeles-based vegan brand BH Cosmetics. The Grammy-nominated artist—well known for her music videos, social media presence, and bold, colorful makeup—drew inspiration for the line from her personal creativity as well as her most recent album, Planet Her, which was released earlier this year. The collection features all of the colors needed to mimic the rapper’s most iconic looks, and each item is priced between $9 and $36.

EMINEM OPENS MOM’S SPAGHETTI RESTAURANT IN DETROIT WITH VEGAN OPTIONS

Named after a lyric from his most famous song, Eminem opened Mom’s Spaghetti in Detroit this past September. The restaurant had originally started as a pop-up in 2017, and after much success, the rapper decided to give the business a permanent brick-and-mortar home. Mom’s Spaghetti serves two vegan options—Mom’s Spaghetti (pasta with marinara sauce) and Mom’s Spaghetti with Rabbit Balls (the restaurant’s plant-based version of spaghetti and meatballs named after Eminem’s character in 8 Mile).


WHOLE FOODS PARTNERS WITH LIGHTLIFE TO SERVE VEGAN CHICKEN IN PREPARED FOODS SECTION Whole Foods has partnered with Lightlife to serve the brand’s unbreaded vegan chicken in the prepared foods section at stores nationwide. The partnership comes after a successful year for Lightlife, in which they reformulated their products to be completely vegan and launched a nationwide television campaign. The unbreaded vegan chicken product is made from pea protein and is available in the prepared foods section at over 500 Whole Foods locations nationwide.

Last October, Burger King tested Impossible brand vegan chicken nuggets. Impossible Chicken Nuggets are made from soy, sunflower oil, and herbs and come coated in wheat crumbs for a crunchy finish. The nuggets were made available in an eight-piece order with a choice of dipping sauce and were tested at Burger King locations in Des Moines, Boston, and Miami from October through mid-November. While the Impossible nuggets were only available for a limited time, we hope they become a permanent menu item in the future!

Volvo has pledged to go leather-free and plans to transition their entire fleet to electric by 2030. The Swedish car manufacturer has begun to offer vegan leather interiors made from recycled bottles, corks, and bio-based materials from Swedish and Finnish forests. The vegan leather material is called Nordico and was created by Volvo in the hopes of making it the default leather option. While Volvo still continues to offer wool-based materials in many of their interiors, it will be interesting to see how the brand transitions over the next few years!

Impossible Foods debuted vegan pork at Momofuku Ssäm Bar in Manhattan for a limited time this past September. The Impossible Pork appeared on the menu as a part of the spicy rice cakes, which came with a fermented bean and chili sauce base, fried crispy shallots, broccoli stems, and whipped tofu. In addition to releasing the pork at Momofuku, Impossible Foods also launched their vegan pork at NYC’s Nice Day Chinese Takeout, LA’s Asian Box, and at several other restaurants across the US. We are excited to see where Impossible Pork launches next!

THE GREAT BRITISH BAKE OFF GETS ITS FIRST VEGAN CONTESTANT

The Great British Bake Off got its first vegan contestant when 19-year-old Freya Cox joined the cast on the twelfth season of the show, which kicked off last September. Cox amazed the judges with her vegan raspberry & lemon mini rolls in the signature challenge and a towering garden of edible flowers for the showstopper challenge. While she was unable to use vegan ingredients for the technical challenge, the young baker vowed to veganize those recipes at home. And who better to talk health and nutrition with than a panel of plant-based registered dietitians? With years of education and experience in the field, food and nutrition experts Julieanna Hever, Amanda Sevilla, and Colleen Kuhn are spilling their personal wellness philosophies, discussing their favorite nutrition topics, and dispelling common nutrition myths. We’ve got vegan nuggets of plant-based nutrition wisdom coming at you straight from the specialists.

What is your personal wellness philosophy? What does wellness mean to you? Julieanna: You are quite literally what you eat, and every bite matters, as diet is the number one cause of early death and disability in the world. Amanda: Harmony. To me, wellness is not just what I eat—or how much I sleep or exercise in a day—but it's the combination of all of those things. Along with physical health, wellness includes emotional, environmental, social, spiritual, and even financial areas of life. When all of those areas are in harmony, ultimate wellness is the result. Colleen: Full body, mind, and spirit health. The body [gives] us important information. When we listen to the signals of where emotions live in our bodies and grow a greater capacity to befriend our emotions, then our overall wellness [can thrive].

Which nutrition topic do you wish everyone knew more about and why? Julieanna: Macroconfusion. The number one reason everyone is confused about what we should eat, researchers and laypersons alike, is because we use macronutrients to define food and diets, and we make recommendations accordingly. We need to bring the conversation back to food. Amanda: Intuitive eating! In a world where knowledge of all kinds of nutrition is available at our fingertips, many of us have trouble letting go of diet plans, structured schedules, and outside rules. Intuitive eating is a sustainable, empowering way to connect with your body. Colleen: Trauma-informed eating. Following a [specific way of eating] for weight loss or weight regulation won’t work as a sustainable solution, because trauma responses will always come up when making changes and setting goals. [I came] up with Trauma-Informed Eating to create a new way of navigating through these challenges to [heal] your relationship to food.

The media has become a saturated source of nutrition information. While there is a lot of accurate nutrition data to be found, not all of it is factual. Which wellness trend or myth would you like to make disappear and why? Julieanna: That macros or calories matter. When we talk about food and prioritize the foods that bring about optimal health—vegetables, fruits, whole grains, legumes, mushrooms, nuts, seeds, herbs, and spices in infinite tasty combinations—we can change the narrative and make a difference in health outcomes. Amanda: I would absolutely love to live in a world where food guilt does not exist! Putting a moral judgment on food puts people through unnecessary stress. Food is like friends—they are all a blast to hang out with, but some of them aren’t the best for you to hang out with all of the time ... and that’s okay. Colleen: [I’d like to see a] systemic change around diet culture and fad diets. [The vast majority] of diets fail, yet we continue to invest our time, money, and energy [into them]. This mentality is flooding our social media with cultural norms that we have to look a certain way in order to be loved and accepted. This feeds on those who have had relational trauma in the past, because it pulls on fears of not fitting in or being loved.

She has authored six books, including The Healthspan Solution, The Complete Idiot’s Guide to Plant-Based Nutrition, The Vegiterranean Diet, and her new book, The Choose You Now Diet. Julieanna speaks and consults with clients around the globe.

Amanda Sevilla, RDN, RYT is a registered dietitian, plantbased nutritionist, and yoga teacher. She integrates preventive nutrition and holistic health through a combination of mindfulness, yoga, plant-based nutrition, and intuitive eating. Amanda finished her undergraduate degree at Loma Linda University and started working as a clinical dietitian shortly afterward. She is certified in plant-based nutrition through the Center for Nutrition Studies.

Colleen Kuhn is a trauma-informed dietitian and plant-based health coach. She has created the only Trauma-Informed Eating program available, to help her clients take the shame out of the process and heal their relationship with food. Her approach includes helping people create an energized and balanced body, mind, and spirit through the healing powers of plants.

elf-taught vegan chef, businesswoman, and mother of three, Reina Montenegro specializes in Filipino comfort food with a plant-based twist. The Filipina American began her career as a personal chef and caterer in 2012. In 2016, Montenegro decided to pursue her passion for food and cooking by opening a business of her own—Nick’s Kitchen—in Daly City, located just south of San Francisco. After transitioning to a vegan lifestyle, Chef Reina chose to change the restaurant’s concept to offer a fully plantbased menu, making Nick’s Kitchen the first Filipino Vegan restaurant in the peninsula. Upon much success, Chef Reina also opened Nick’s on Grand and Nick’s on Mission in the Bay Area. Now the vegan chef has pivoted her business by opening her namesake brick-and-mortar restaurant, Chef Reina—stepping out from behind the Nick’s brand.

Growing up in the Philippines Chef Reina was born and raised in Dumaguete on the island of Negros. Growing up in the Philippines, she enjoyed eating all of the traditional Filipino dishes and cooking alongside her grandmother, who taught her valuable skills and heavily influenced her work. “Because I grew up with traditional Filipino foods, I know what they taste like with meat. So when I transitioned to a vegan lifestyle, I aimed to recreate those dishes with the same great taste but without meat,” Chef Reina shared.

Adapting to the Times In October 2020, the vegan chef made the decision to step out from behind the Nick’s brand and transition to an online storefront under her own name—Chef Reina. The change also provided the opportunity to better align her business with her plant-based diet and cruelty-free lifestyle. In April 2021, Chef Reina opened a brick-and-mortar home for her online storefront. The physical space features a walk-up window for guests to pick up their pre-orders or to order for takeout on site. The brick-and-mortar will also serve as a location for Chef Reina to shoot virtual cooking demos and events in order to share her culinary techniques with the local community and beyond. Chef Reina’s next goal is to distribute her food nationwide.

Filipino Classics with a Vegan Spin Chef Reina’s menu features Filipino classics with a vegan spin. You’ll find Lumpia Shanghai made with OmniPork, Sizzling Sisig, Tocino, Corned “Beef” Silog, Kaldereta, Lechon Kawali, and more—each of which can be paired with a side of white or garlic rice. While Filipino dishes are the star of the menu, the new restaurant also offers American-style bites like vegan Philly cheesesteaks, chick’n sandwiches, Impossible burgers, ribz, mashed potatoes, house salad, and chick’n Caesar salad. Guests have the option of ordering single servings of each dish or larger portions from the catering menu.

Meet Chef Reina We spoke with Chef Reina about her mission to educate the community on veganism, the inspiration behind her career, and the response she’s received since pivoting from the Nick’s brand to reopening under the new name.

Why did you decide to go vegan? I chose to go vegan when I found that the consumption of dairy products had a direct link to my daughter’s rashes. This prompted me to begin cooking vegan dishes for my family, and I never went back.

What inspired you to leave your corporate job to follow a career in food and cooking? I’ve always turned to cooking, as it’s something I love to do and am a natural at. Growing up cooking alongside my grandmother, I learned valuable skills in dishing out delicious food.

What was the response like after you stepped out from behind Nick’s on Grand and opened your newly branded brick-and-mortar? I am very lucky that veganism is embraced in the Bay Area, and I felt as though everyone embraced my vegan Filipino comfort food. For that, I am extremely grateful.

What is your favorite dish to prepare? My favorite dish to prepare is mung beans with veggies and coconut milk.

How do you educate others on the benefits of a vegan lifestyle? I never want to force a vegan lifestyle on anyone, but through cooking vegan specialties I can demonstrate that it is not difficult to cook tasty and satisfying vegan food. I also use my social media platforms to lead by example by living a vegan lifestyle and supporting fellow vegan businesses.

What’s next for Chef Reina? My goal is to take Chef Reina national and then global!

A whole food plant-based (WFPB) diet is centered around minimally processed plant foods such as vegetables, fruits, starches, whole grains, legumes, nuts, and seeds. The WFPB diet has demonstrated major health benefits thanks to the gut-friendly fiber- and antioxidant-packed foods. Think: fruit and veggie salads, loaded grain bowls, packed potato dishes, vegetable soups, hearty chilis, and veggie-rich stir-fries. If you follow a WFPB diet, you may prefer to dine at home, but you can also enjoy an occasional dinner out with a little planning, flexibility, and creativity.


1) PLAN AHEAD

If you’re looking to enjoy a whole food plant-based meal at a restaurant, a little planning can go a long way. While your town may have well-known restaurants packed with raw, plant-powered, healthy vegan options, these gems don’t take up residence in every city. Research vegan-friendly establishments and plant-based restaurants nearby, and communicate your needs to your fellow diners before going out. If you don’t have the ability to select the restaurant, check out the menu ahead of time or give the eatery a call. If options are looking scarce, plan to have a filling snack before heading out.

2) CHOOSE A RESTAURANT

When it comes to choosing a restaurant, plan to select an all-vegan spot or at least an establishment with vegan-friendly options. Choose a place with a few overtly whole food selections such as grain bowls, salads, and stir-fries. If there are no preset dishes, be sure the menu is packed with some vegan-friendly ingredients. It might not be overwhelmingly WFPB-friendly, but as long as the menu contains a few plant-based staples, a meal can easily be assembled. Make sure the restaurant allows for customization and substitutions before committing.

3) SCAN THE MENU

Scan the menu for those WFPB dishes. If no obvious choices are available, review the menu for whole food ingredients and plan to build a meal from side dishes and other WFPB items spread throughout the menu. Keep tabs on the options you notice—a baked potato among the side dishes, black bean salsa from the appetizer section, and a vegetable medley spotted in a pasta entree. Get creative and start brainstorming how these might fit together to build a satisfying meal.

4) SELECT A MEAL

In the name of balance, aiming for a vegetable, a protein source, and a grain or starch can provide a nice template. Refer back to the ingredients from your menu scanning endeavors, and work with the server to order your balanced and composed dish. If possible, choose items that are steamed, baked, or grilled. Try to avoid fried or crispy choices along with creamy sauces and oily dressings.

5) ORDER WITH MODIFICATIONS

If you can help it, ask that foods are prepared without cooking oil or margarine. Suggest that dishes be sauteed with water or veggie broth instead. Substitute dressings and sauces with whole food options like mashed avocado, salsas, vinegar varieties, citrus fruits, and mustards. Pack on any fresh or dried herbs for an extra flavor boost.

6) KEEP IT REALISTIC

Restaurants won’t cook exactly the way you do at home, so give yourself some grace if there is a bit of oil or refined sugar in your dishes. Enjoy time out with friends and family and make the most of it. If you’re stuck in a situation where you can’t omit these ingredients, do the best you can. Try to shrug it off if there is olive oil in the hummus appetizer or if the restaurant can’t accommodate your water steaming request.

KEEP A LIST OF GO-TO MEALS BASED ON VARIOUS RESTAURANT TYPES If you find yourself at a MEXICAN RESTAURANT, ensure the beans and rice contain no animal ingredients. Put together a vegetable fajita dish with rice, beans, fajita veggies, lettuce, guacamole, and salsa. Heading out to a CHINESE RESTAURANT? Think steamed veggie dishes with bean curd. If you’re concerned about the sauce, choose dishes from the special diet menu if possible. Attending a birthday dinner at an AMERICAN RESTAURANT? Order a baked potato topped with black beans and steamed vegetables. Dining ITALIAN? Try whole-grain pasta with red sauce and steamed or grilled veggies. If pasta is a nogo, opt for zucchini spirals or a big veggie salad packed with beans and a vinegar dressing. If you’re heading to a MIDDLE EASTERN EATERY, choose rice and lentil dishes, loaded salads, and veggie-packed sautees. Thinking SUSHI? Simple veggie rolls are a must. Order asparagus, cucumber, and avocado sushi options. Lastly, if you’re meeting friends for BRUNCH, oatmeal can be an excellent choice. Top with nuts, seeds, and fruit for a filling brekkie.

If you grew up drinking ginger ale when you had the flu, then you already know the basis for ginger’s most popular selfsoothing health claim: easing nausea.

Turmeric is best known in the West for its ability to reduce inflammation, which is due to the anti-inflammatory properties of curcumin, turmeric’s active ingredient.

Ancient Southeastern Asian cultures have been using the plant medicinally for thousands of years, and studies in the West are beginning to show the plant’s efficacy in helping an upset stomach.

Westerners have begun to use turmeric for a variety of purposes, from body recovery after a long workout to lessening chronic inflammation in the body.

How to use: You can buy ginger teas or extracts, but the quickest way to find relief is to consume it raw. Dice it up small and throw it back with some water if the taste is a bit much for you, or simply bite off a chunk of the root for quick relief!

Holy basil has many sacred uses in Ayurvedic traditions, but one of the most popular that has made it over to the West is its potential to ease anxiety. Holy basil is an adaptogen that helps the body react and adapt to stress and produces a calming effect. How to use: Purchase or make your own tea bag and drink the beverage before bed to help you relax and wind down from the day. The leaves can also be used in cooking, and supplements are widely available if you’d like to incorporate the herb into your routine that way.

How to use: Take daily turmeric supplements, or sprinkle the powder onto your meals to add color and flavor. Mix turmeric into your tofu scramble to create an eggy coloring and to add a bit of spice!

Turns out that what your grandma told you about using garlic to fight a cold might actually be true! Garlic plays host to the compound allicin, which is naturally antimicrobial and can help fight off unwanted bacteria or viruses. Allicin is produced by two of the active ingredients in garlic coming together when the bulb is crushed. That’s what creates the signature aromatic garlic smell, and it’s then that the healing properties are most present. Pro tip: Crushing or mincing garlic produces more allicin than slicing or chopping. How to use: As liberally as your heart desires! Add five extra cloves to your veggie stir-fry, throw it in the air fryer and eat it like candy, or smash it and eat it raw if you’re really trying to nip that cold in the bud.

Heat a skillet with a small amount of vegetable oil, and brown Hodo Adobo Mexican Crumbles to desired texture. 2. Saute onions, garlic, and jalapeno with additional vegetable oil until tender. 3. In a mixing bowl, add rice, sauteed onion, garlic, and jalapeno mixture, Hodo Adobo Mexican Crumbles, spices, salt, and pepper. Combine well. 4. Stir in the adobo cheese sauce, and mix well. Assembly and cooking instructions: 1. Stuff peppers with the filling mixture, layering with additional vegan cheese (optional). 2. Assemble stuffed peppers in a lightly oiled casserole pan. 3. Bake for 45 minutes or until cheese is melted and peppers begin to soften. 4. Garnish with chopped green onions.

Cilantro-lime vinaigrette: 1. Blend cilantro, olive oil, champagne vinegar, fresh lime juice, 1 tsp salt, and 1 tsp pepper until smooth. Set aside. Veggies and crumbles: 1. Saute peppers and onions with vegetable oil until tender. 2. Add smoked paprika, garlic powder, and salt (to taste) toward the end. 3. Set aside to cool. 4. Heat up a skillet with a small amount of vegetable oil, and brown your Hodo Adobo Mexican Crumbles to desired texture. Salad assembly: 1. CATCHING WAVES & saving animals: Q&A with Professional SURFER Tia Blanco | BY KAYLA PASKO

A professional surfer, artist, entrepreneur, and yogi, Tiarah Lue (Tia) Blanco has been vegan since 2013 and was raised on a vegetarian diet. The 24-year-old San Clemente native is ranked among the top 50 female surfers in the world by the World Surf League, was the First Place Gold Medalist at the 2015 International Surfing Association (ISA) Open Women’s World Surfing Championship in Popoyo, Nicaragua, and successfully defended her title by winning the 2016 Championship in Playa Jacó, Costa Rica. We spoke with Blanco to discuss why she decided to transition to a vegan diet, what she eats in a day, and how veganism has impacted her performance.

GROWING UP VEGETARIAN

During her childhood, Blanco was raised on a vegetarian diet as her mother had adhered to the lifestyle since the age of 12 for ethical reasons. While Blanco has never had a bite of beef or chicken, she did allow herself to eat fish for one year before going vegan as a way to fit in with the surf and sea culture. However, her time as a pescatarian was fleeting after realizing that her values and mindset toward food weren’t the same as everyone else’s and that that was okay.

During competition season, Blanco sticks to a clean, whole food nutrition plan to help fuel her for a full day of riding the waves. Her diet consists of foods like potatoes, whole grains, and starchy vegetables for energy, as well as vegan protein shakes, fruit, and fruit smoothies. When she’s not competing, Blanco enjoys indulging in sweets, such as cupcakes, which are her favorite dessert.

1. why did you decide to go vegan?

I went vegan eight years ago after watching slaughterhouse videos! I was absolutely horrified and knew that I couldn’t support any industry that caused that kind of suffering.

2. How has a vegan lifestyle impacted your athletic performance?

I feel amazing as a vegan athlete! My recovery and energy levels have been much better since eating plant-based.

3. what do you eat to stay fueled?

I eat a lot of raw fruits and veggies to start my days, and I like to end them with more cooked vegetables, grains, and legumes!

My journey to veganism was a choice. Actually, it was more of a financial choice. The costs of organic meat and fresh-farmed or free-range were too expensive for me as a graduate student working and living in Boston. After making the decision to ditch these products, I taught myself how to cook. With the help of a produce delivery service, I was able to try new dishes and foods I’d never eaten before. I joined other vegans through demonstrations with PETA, educational events, and [acting as] a voice for those that go unheard.
