Equilibrio en los pequeños detalles Finding balance in the little things Los últimos meses del año son caóticos. Con tantas obligaciones en el calendario, mucho de lo que nos hace bien (la dieta, el ejercicio, las salidas al aire libre) pasa a segundo plano. Sin embargo, sacar tiempo para esas pequeñas cosas es precisamente lo que nos mantiene con ganas de terminar bien el resto del año. Así que luchemos un poco más por ese tiempo. Nos merecemos vivir en equilibrio y

con buen espíritu. Esperamos que encuentren un poco de esa alegría tan esencial en estas páginas. Nabol y yo disfrutamos al crear esta revista para ustedes.

The last months of the year are chaotic. With so many obligations and deadlines, a lot of the good habits that keeps us healthy (nutritious meals, exercise, open-air outings) become second priority. Yet, those are precisely the little things that give us the desire to finish the year the right way, with high spirits. So why not fight a little harder for a bit more of that precious time? We owe it to ourselves to try to enjoy the things that keep us balanced and happy. We hope you find a little of that joy in these pages. Nabol and I certainly enjoy creating these for all of you.

VEGGIE CHILI MAC

Hay tantos platillos clásicos americanos que damos por sentado. Nada más con ir al diner de mi comunidad para darme cuenta de todas las opciones increíbles que tienen en su menú. Tienen muchísimos open-face sándwiches, sopas, cacerolas, platos al horno y otros platos que algunas personas consideran poco saludables. Sin embargo, preparados de la manera indicada, estas recetas pueden contener menos grasa e ingredientes más nutritivos y de temporada.

Tomemos al Chili Mac como ejemplo. Se puede reinventar la receta tradicional de chili para conseguir un platillo alto en nutrientes. Y se puede hasta reemplazar la pasta regular por una que ofrezca mejores beneficios, como una pasta sin gluten. Aquí le dejamos la receta.

Chili Mac de Setas – Ingredientes • 1 Chalota grande o shallot picadita • 4 Dientes de ajo picaditos • 1 Pimiento amarillo picadito • 3 Tazas de setas picaditas (Las cremini y oyster son muy buenas) • 3 Tazas de tomates frescos triturados • 1 Cucharadita de comino (o al gusto) • 1 ½ Cucharadita de chili powder (o al gusto) • 1 Lata de habichuelas (frijoles) pintos orgánicos • Queso cheddar blanco para echarle encima (opcional) • Cebollines para echarle encima (opcional)

• ¼ Taza de aceite de oliva

• Gluten-free macaroni

• Macarrones sin gluten

• Salt to taste

• Sal al gusto 1. Sofríe la cebolla, pimiento y ajo en aceite de oliva hasta que estén dorados. Añade el tomate triturado, las habichuelas y especias, y cocina por 15 minutos a fuego mediano.

2. Añade las setas y una pizca de sal, y cocina por otros 10 minutos.

3. Sirve sobre pasta sin gluten y ponle un poco de queso y cebollines por encima. (Opcional)

1. Sauté onions, peppers and garlic with olive oil until translucent. Add crushed tomatoes, the beans and spices, and cook for about 15 minutes on medium heat.

2. Then, add the chopped mushrooms and pinch of salt, and cook for another 10 minutes.

You’ll find open face sandwiches, soups, casseroles, roasted dishes and other specialties that many people believe can’t be good for you. However, prepared the right way, these recipes can be done with less fat and healthier, seasonal ingredients.

Take Chili Mac for example. You can reinvent the traditional chili recipe to make a very high nutrient dish. Replace regular pasta with something a little bit healthier, like gluten-free pasta. Check out the recipe and let us know what you think.

Mushroom Chili Mac – Ingredients • 1 Large shallot, chopped • 4 Cloves of garlic, chopped • 1 Yellow pepper, chopped • 3 Cups of chopped mushrooms (cremini and oyster work great) • 3 Cups of freshly crushed tomatoes • 1 Teaspoon of cumin (or to taste) • 1 ½ Teaspoons of chili powder (or to taste) • 1 Can of organic pinto beans • White cheddar cheese to top chili (Optional) • Green onions to top chili (Optional) • ¼ Cup of olive oil

Los aguacates son un ingrediente perfecto para preparar tapas y dips nutritivos para complacer a cualquier grupo de amigos. Le proveen grasas saludables, mono y polisaturadas que ayudan a absorber nutrientes de otras comidas.

Mira esta Corona Navideña de Guacamole que preparamos con una manga para glasear bizcochos (pipping bag) y una receta sencilla de guacamole. Solo majamos el aguacate fon ajo, sal y cilantro. Lo pusimos dentro de la manga y nos pusimos creativos con el guacamole. Puedes usar también queso crema batido y pimiento rojo en puré para añadir color y sabor. (Trituramos los pimientos con ajo, sal y chalotas.) ¿Suena divertido?

Check out this Guacamole Holiday Wreath we did with a few piping bags and a simple guacamole recipe! Just mash your avocado with a little garlic, salt and cilantro. Put it inside a piping bag and get creative with your guac. You can also add a little whipped cream cheese or puréed fresh red peppers for added color and flavor. (We blended the peppers with a little garlic, salt and shallots.) Sounds fun?

GOAT CHEESE BUTTERNUT SQUASH CROSTINI

Necesitamos un descanso de las recetas muy cargadas. En esta próxima temporada de fiestas, vamos a preparar aperitivos y comidas sencillas, saludables y deliciosas. Queremos que los ingredientes de temporada sean la estrella del platillo y sus sabores naturales brillen con luz propia.

Un buen ejemplo son los crostini de queso de cabra y calabaza butternut.

El queso de cabra mezclado con miel queda divino con la calabaza al horno. Es un bocadito sencillo y con mucho sabor a otoño. Perfecto para el brunch o una fiesta con amigos.

Crostini de queso de cabra y calabaza butternut - Ingredientes • 2 Tazas de calabaza butternut, peladas y picadas • 1 ½ Cucharadas de tomillo fresco • 1 Barra de pan francés • Queso de cabra • Miel • Aceite de oliva al gusto • Sal al gusto

1. Marina la calabaza con un poco de aceite de oliva, una pizca de sal y tomillo. Hornéala a 350 grados por 15 a 20 minutos. Déjala descansar.

2. Mezcla el queso de cabra con un poquito de miel.

Corta el pan en lascas finas y úntale el queso. Hornea a 350 grados por 8 minutos. Sirve con la calabaza.

EnglishWe need a break from “loaded” everything. For this upcoming holiday season, we want our appetizers and meals to be uncomplicated, wholesome and delicious.

Seasonal ingredients should be the star of the plate and their natural flavors should easily shine through.

Our goat cheese butternut squash crostini is a great example. Goat cheese mixed with honey complements the butternut squash beautifully. It’s a simple bite with lots of holiday flavor, and perfect for brunch or a gathering with friends.

Goat cheese butternut squash crostini – Ingredients • 2 cups of pealed, cubed butternut squash • 1 ½ Tablespoons of fresh thyme • 1 French baguette • Goat cheese to spread • Honey • Olive oil to taste • Salt to taste 1. Marinade the butternut squash with a drizzle of olive oil, a pinch of salt and the thyme. Roast at 350 degrees for 15 to 20 minutes. Set aside.

2. Mix the goat cheese with a drizzle of honey to add sweetness. Slice the bread in thick slices and spread the cheese mix. Bake at 350 degrees for 8 minutes.

Serve with the squash.

CROQUETAS DE ESPINACA, POLLO Y JAMÓN

Tenemos fiebre de croquetas en el trabajo. Mi colega Luis y yo hemos estado experimentando con diferentes recetas en las últimas semanas y los almuerzos se han beneficiado bastante desde entonces… ¡Croquetas de pollo, de vegetales, de quedo, de todo! Aquí les comparto la última que nos inventamos en casa: Croquetas de espinaca, pollo y jamón. ¡Perfectas para las próximas fiestas!

Croquetas de espinaca, pollo y jamón - ingredientes: • 1 Taza de pollo cocido desmenuzado • 1 Taza de jamón desmenuzado • 1 Taza de queso cheddar rallado • 2 Tazas de espinaca picadita • 1 Pizca de sal, pimienta y nuez moscada • ½ Taza de harina (y un poco extra para empanizar) • ½ Cebolla pequeña picadita • 1 Tazas de leche • 2 Dientes de ajo machacados • 2 Huevos batidos para empanizar • Panko • Aceite

1. Usando una sartén cast iron, sofríe las cebollas en la mantequilla hasta que estén transparentes. Añade el ajo y cocina por otro minuto. Añade, el jamón, y el pollo y cocina por otro par de minutos. Luego, añade la harina y mezcla bien. Poco a poco, ve añadiendo la leche hasta formar una mezcla similar a la de los pancakes. Añade la espinada, el queso, una piza de nuez moscada, sal y pimienta. Deja que se espece un poco más y remuévelo del fuego. Cuando se enfríe, coloca la mezcla en la nevera por una noche.

2. Al día siguiente, usa dos cucharas para formar las croquetas. Empana las croquetas pasando cada una por harina, huevo y el Panko. Fríe en aceite bien caliente o congélalas para la próxima fiesta.

EnglishWe have croqueta fever at work. My colleague Luis and I have been experimenting with different recipes for the past few weeks and our lunches have benefited all the more for it. Chicken croquetas, veggie croquetas, cheese croquetas, you name it! Here’s our latest creation: Spinach, chicken and ham croquetas — perfect for the upcoming holiday parties!

Spinach, chicken and ham croquetas – Ingredients • 1 Cup shredded cooked chicken • 1 Cup of finely chopped ham • 1 Cup of shredded white cheddar • 2 Cups of chopped spinach • 1 Pinch of salt, nutmeg and pepper • 1/2 Cup of flour (extra flour for breading) • 1/2 Small onion, finely diced • 2 Cups of milk

1. Using a cast iron skillet, sauté the onions with the butter until translucent. Add the garlic and cook for another minute. Add the ham and chicken, and cook for another 2 minutes. Then, add the flour and mix well.

Slowly, start adding the milk until it reaches a consistency similar to a pancake batter. Add the spinach, the cheese, a pinch of nutmeg, salt and pepper. Let it thicken a little more and set aside. Once it cools, put the mixture in the fridge overnight.

2. The next day, use two spoons to form the croquetas.

Coat each one with flour, egg and Panko. Fry them in very hot oil or freeze them for the next party.

• 2 cloves of garlic, mashed • 2 Tablespoons of butter • 2 Beaten eggs for coating • Panko • Oil

RECAO’ WHITE BEAN DIP

Cuando pensamos en dips para las fiestas, pensamos en recetas sobrecargadas, con mucho queso, mantequilla, crema y muchísimos ingredientes. Pero la verdad es que puedes obtener el mismo nivel de satisfacción con opciones nutritivas como nueces, garbanzos, aguacate o frijoles.

Dip de Recao’ y habichuelas blancas - Mezcla todo en el procesador • 1 Lata de habichuelas blancas (frijoles blancos) • 1 Diente de ajo • 2 hojas de recao’ (culantro) pequeñas • 1/4 Taza de cebola • 1/3 Taza de aceite de oliva • Sal y pimienta al gusto (también puedes usar sumac) When we think holiday dips, we think decadent, lots of cheese, butter, cream, and layers of ingredients. But the truth is that you can get the same satisfaction with nutritious options like nuts, chickpeas, avocado and beans.

Recao’ White Bean Dip - Mix all ingredients in a food processor • 1 can of organic white beans • 1 clove of garlic • 2 small recao’ leaves (culantro), • ¼ cup of onions • 1/3 cup of olive oil • Salt and pepper to taste (You can also add sumac!)

CLASSIC CHICKEN VESUVIO

Como blogueros culinarios y hijos adoptados de Chicago es responsabilidad nuestra conocer los platillos locales más conocidos, más allá del famoso deep dish, los red hots y el Italian beef. Así que en esas estamos... buscando por todos lados las recetas de las abuelitas "chicaguanas" para divertirnos un rato en la cocina y si es posible, darle un toquecito saludable.

Nuestra primera víctima fue el clásico Chicken Vesuvio, el cual según nos explicaron unos amigos y Wikipedia, se popularizó gracias al Vesuvio Restaurant de Chicago en Wacker Drive. Particularmente, nos gusta este plato porque pinta muy bien cuando tienes invitados y es además, muy fácil de hacer.

Chicken Vesuvio – Ingredientes

• Aceite de oliva al gusto

• 3 Caderas de pollo con piel y huesos • 3 Muslos de pollo con piel y huesos • 1 Taza de guisantes congelados • 9 Papas rojas pequeñas, cortadas en lascas guesas • 1 Taza de caldo de vegetales • 1/3 Taza de vino blanco • 2 Cucharaditas de pimentón (1 para el pollo, 1 para las papas) • 2 Cucharaditas de orégano seco (1 para el pollo, 1 para las papas) • 2 Cucharaditas de romero seco (1 para el pollo, 1 para las papas) • 4 Dientes de ajo machacados • Sal y pimienta al gusto

1. Sazona el pollo con sal, pimienta, orégano, romero y pimentón.

Añade unas gotitas de aceite y dale un buen masaje. Hornea a 350 grados por 45 minutos.

2. Sazona las papas con sal, pimienta, pimentón y unas gotas de aceite. Añade al pollo y cocínalo todo junto por otros 15-20 minutos o hasta que esté doradito. Sácalo del horno y déjalo descansar.

Mezcla bien y cocina por un par de minutos más. (Sirve a dos personas)

ARROZ CON GANDULES

El arroz con gandules es una de esas recetas que nos piden bastante aquí en Chicago. “¿Eres puertorriqueño? Fantástico. ¿Cuándo puedo probar tu arroz con gandules?” Debido a la gran comunidad isleña que existe en la ciudad, la gente está bastante familiarizada con nuestra cocina y saben que nada le va mejor a un sándwich de jibarito que un buen arroz con gandules.

Lo gracioso es que esta no una receta que cocinamos todos los días. El arroz con gandules se prepara en ocasiones especiales como Navidad o el Día de Acción de Gracias. ¿Pero que si tenemos una receta? Claro que sí. Fácil de hacer. ¿Qué son gandules?

Estos pequeños frijoles son nativos de África y están llenos de vitaminas y proteína. Cuando pequeña, mi abuela me daba mucho sopa de gandules para combatir la anemia y hoy día se usa como substituto de carne en recetas vegetarianas. Los fermentan para hacer tempeh, por ejemplo.

Arroz con gandules a la Verdelicias – Ingredientes: • ¼ Taza de aceite de oliva • 2 Cucharaditas de semillas de achiote (opcional) • 4 Dientes de ajo machacado • 1/3 Taza de cebolla picadita • 2 Cucharadas de hojas de apio (celery), picaditas • 2 Cucharadas de cebollines picaditos • 2 Cucharadas de cilantro picadito

• 1 lata de gandules • 2 Cucharadas de pasta de tomate • 1 ½ Tazas de arroz grano mediano ( o basmati) • ½ Taza de salami local en cubitos pequeños • ½ Taza de jamón cocido local en cubitos pequeños • 10 Aceitunas manzanilla y un chorrito del aliño • ¼ Taza de pimientos morrones picaditos • ½ Cubito de carne orgánico

What are gandules?

These small beans are native to Africa and are full of vitamins and protein. As a kid, my grandma used to make me a big soup with gandules to help me with my anemia. Nowadays, many people also use it as a meat substitute by fermenting the beans to make tempeh. In Chicago, you can find them at Cermak or Mariano’s.

Verdelicias' Arroz con Gandules - Ingredients:

• ½ Cubito de pollo orgánico

• ¼ Cup of olive oil

• 2 Cucharaditas de orégano seco

• 2 Teaspoons of achiote or annatto seeds (optional)

• 2 Cucharaditas de comino

• 4 Cloves of garlic, mashed

• Sal al gusto

• 1/3 Cup of minced onion

• 1 Hoja de laurel

• 2 Tablespoons of finely chopped celery leaves

1. Calienta el aceite de oliva y añade las semillas de achiote. Permite que suelte el color por 10 minutos a fuego mediano y remueve las semillas. Añade las cebollas y cocina hasta que estén transparentes. Luego, añade el ajo, los pimientos, las hojas de celery, los cebollines, el cilantro, la hoja de laurel, los cubitos y las especias.

• 2 Tablespoons of finely chopped scallions

2. Permite que se cocine todo por unos minutos, antes de añadir las aceitunas, el jamón y el salami. Cocina por 3 ó 4 minutos más, antes de añadir los gandules, el arroz y la pasta de tomate. Cubre con agua, añade una pizca de sal y mezcla bien. Cocina hasta que el arroz este listo, revolviendo un par de veces. Añade un chorrito de agua si es necesario. (El arroz se demora unos 25 minutos, dependiendo del tipo de arroz.)

Arroz con gandules is the one recipe everybody asks us for.

“You’re Puerto Rican? Great! When can I come over for arroz con gandules?” True story. It’s the one staple dish everyone in Chicago knows and loves as it’s commonly served alongside the popular plantain jibarito sandwich.

• Salt to taste

Funny enough, this is not something we cook all the time at home. Arroz con gangules is reserved for special occasions, like Christmas or Thanksgiving. But the great thing about Chicago is that if you get a sudden craving, you can easily get it year-round in several Puerto Rican spots around town, like The Jibarito Stop or Borinquen Lounge. But do we have a recipe? Yes, we do! And it’s delicious. It’s also very flexible. If you don’t have sofrito, don’t panic. Up next is a version made with ingredients you can easily find in Chicago.

• 2 Tablespoons of finely chopped cilantro leaves • 1 Can of gandules or pigeon peas • 2 Tablespoons of tomato paste • 1 ½ Cups of short grain rice (or basmati)

• ½ Cup of local ham off the bone, cubed (Optional) • 10 Manzanilla olives and a drip of the brine • ¼ Cup of roasted peppers, chopped • ½ Organic beef bouillon cube • ½ Organic chicken bouillon cube • 2 Teaspoons of dried oregano

• 1 Bay leaf 1. Warm up the oil and add the annatto seeds. Let the oil get infused for about 8 to10 minutes before removing the seeds. Add the onions and cook until translucent. Then, add the garlic, peppers, celery leaves, scallions, cilantro, bay leaf, bouillons and spices.

2. Let it cook for a couple of minutes before adding the olives, ham and salami. Cook for a 3 to 4 minutes before adding the gandules, rice and tomato paste. Cover with water, add a touch of salt and mix well. Cook until done, but stir the rice once or twice. Add a few drops of water if necessary. (It takes about 25 minutes, depending on the type of rice.)

RUSTIC THANKSGIVING

Por los últimos dos años, nuestra misión ha sido simplificar la temporada festiva.

Antes de juntarnos con familiares y amigos para Thanksgiving, nos gusta preparar algo pequeño en casa para disfrutarlo solo nosotros dos. Es una oportunidad par relajarnos, meditar sobre todas las bendiciones del año y darnos gusto preparando una comida un poco fuera de lo común.

El año pasado, Nabol se antojó de hacer unos short ribs preparados lentamente con vino y vegetales. Lo servimos sobre una cama de cuscús con muchos ingredientes de temporadas, incluyendo calabaza y coles de bruselas. Para cerrar la comida, horneamos una moussaka griega de vegetales y un tradicional pie de calabaza.

Para nuestro plato de quesos, escogimos un manchego y ricota asada que le iban muy bien a nuestra selección de aceitunas y brioche dulce. Un Sauvingnon Blanc suavecito fue nuestra opción para el vino, con unas lascas de lima y arándanos frescos para decorar la copa.

Nuestra mesa lució muy rústica con una mantel de lino blanco de H&M, un runner de yute de Target y una servilleta de motivo campestre de World Market para añadir un toque de color en el centro de la mesa. Para los platos de servir, usamos una combinación de materiales: barro, madera y cerámica.

La armonía de los elementos se complementó con acentos naturales de manzanas frescas, naranjas adornadas con clavos, espigas de solidago y flores naranja. Una caminata con Michigan Avenue era todo lo que necesitábamos para cerrar la velada con broche de oro.

Short ribs a la Nabol – Ingredientes • 1 ½ Libras de short ribs desguesados grass fed • 1 Ramita de romero • 1 Ramita de orégano • ½ Taza de apio (celery) cortadito • ½ Taza de zanahoria cortadita • ½ Taza de cebolla cortadita • 4 Dientes de ajo machacados • 1 Taza de vino tinto • 4 Cucharaditas de pasta de tomate • Aceite de oliva al gusto • 1 Taza de caldo de vegetales 1. Sazona la carne con sal y pimienta. En un caldero, sella la carne con un poco de aceite de oliva y colócala en un plato hondo a descansar.

2. Usa los jugos de la carne para saltear los vegetales (apio, cebolla, zanahorias y cebolla). Añade una pizca de sal y pimienta. Una vez estén transparentes, añade la pasta de tomate, las hierbas y el caldo. Cocina por 5 minutos antes de añadir el vino.

3. Añade la carne de vuelta y cocina en el horno a 350 grados por 2-3 horas o hasta que la carne esté tierna.

Cuscús festivo – Ingredientes • 1 ½ Taza de caldo de vegetales • ¾ Taza de cuscús • Sal y pimienta al gusto • Aceite de oliva al gusto • 1 Taza de coles de bruselas • 1 Taza de calabaza en cubitos • ½ Taza de arándanos secos (cranberries) 1. Saltea la calabaza en aceite de oliva hasta que esté suave. Guárdala en un envase en lo que se cocina el resto.

2. En una olla grande, calienta el caldo. Añade las coles de Bruselas y los arándanos. Cocina por 2 minutos antes de

añadir el cuscús. Mezcla buen, apaga el fuego y cúbrelo con una tapa por 10 minutos.

3. Luego, mezcla nuevamente, ajusta la sal y añade un chorrito de aceite de oliva. Incorpora la calabaza y sirve.

Moussaka de vegetales – Ingredientes • 1 Papa grande Russet • 1 Berenjena mediana • 1 Calabacín grande • ½ Cebolla • Tomillo fresco al gusto • Aceite de oliva al gusto • 4 Cucharaditas de mantequilla • ½ Taza de harina • 2 Tazas de leche • 2 Yemas de huevo • 1 Cucharadita de canela

• 1 Pizca de nuez moscada • ½ Taza de queso parmesano 1. Pela la papa y la berenjena. Corta todos los vegetales en rebanadas bien finas, incluyendo la cebolla. (Puedes usar una mandolina.) Sazona con sal, pimienta y un poco de tomillo.

4. Añade la salsa a los vegetales y cocina en el horno hasta que quede dorado. Déjalo reposar por al menos 1 hora antes de servir.

For the past few years, we’ve been on a mission to simplify the holidays. Before joining everyone for Thanksgiving, we like to cook a smaller dinner at home for the two of us. It’s an opportunity to slow down, count our blessings and prepare something a little out of the ordinary.

Last year, we went for braised short ribs, which Nabol cooked beautifully with wine and veggies. We served them over a bed of couscous with lots of seasonal goodies, including pumpkin and brussel sprouts. To round it up, we baked a veggie moussaka and a traditional pumpkin pie.

For our cheese plate, we picked a simple manchego and a baked ricotta that paired nicely with our olive selection and a sweet brioche loaf. A light Sauvingnon Blanc was our option for wine, with a few lime slices and fresh cranberries for decoration.

1. Season the meat with salt and pepper. In a dutch oven, sear the meat with a little olive oil and place in a bowl to rest.

2. Use the leftover juices to sauté the veggies (celery, carrots, garlic and onions). Add a pinch of salt and pepper.

Once translucent, add the tomato paste, the herbs and the broth. Cook for 5 minutes before adding the wine.

3. Add the meat back in and cook in the oven at 350 degrees for 2-3 hours or until meat is super tender.

Holiday couscous - Ingredients • 1 ½ Cup of vegetable broth • ¾ Cup of couscous • Salt and pepper to taste

Our table looked very rustic with a large white table cloth from H&M, a burlap runner from Target and a folksy table napkin from World Market that we placed in the center to add a pop of color. For our serving plates, we mixed and matched different materials: clay, wood and white ceramic.

Everything came together with the natural accent of fresh apples, orange pomanders, burgundy solidago and orange flowers. A nice walk along Michigan Avenue was all we needed to end the evening.

• Olive oil to taste • 1 Cup of chopped brussel sprouts • 1 Cup of diced pumpkin • ½ Cup of dried cranberries 1. Sauté the pumpkin with a little olive oil until tender. Place in a bowl to rest.

Nabol’s braised short ribs – Ingredients • 1 ½ Pounds of grass fed boneless short ribs • 1 sprig of rosemary • 1 sprig of oregano • ½ Cup of chopped celery • ½ Cup of chopped carrot • ½ Cup of chopped onion • 4 Cloves of garlic, mashed • 1 Cup of red wine • 4 Teaspoons of tomato paste • Salt and pepper to taste • Olive oil to taste • 1 Cup of vegetable broth

2. In a large pot, bring the broth to a boil. Add the brussel sprouts and cranberries. Cook for 2 minutes before adding the couscous. Mix well, turn off the heat and cover with a lid for 10 minutes.

3. Then, mix again, adjust the seasoning and add a drizzle of olive oil. Add the pumpkin and serve.

Veggie moussaka – Ingredients • 1 Large potato • 1 Medium eggplant • 1 Large zucchini • ½ Onion • Fresh thyme to taste • Olive Oil to taste • Salt and pepper to taste • 4 Teaspoons of butter • ½ Cup of flour • 2 Cups of milk

• 1 Teaspoon of cinnamon • 1 Pinch of nutmeg • ½ Cup of parmesan 1. Peel your potato and eggplant. Slice all veggies very thinly, including your onion. (You can use a mandolin.) Season them separately with salt, pepper, and a little thyme.

2. Grease a deep baking dish with a little olive and preheat the oven at 350 degrees. Layer the potatoes and cook for 25 minutes. Then, add the onions and the eggplant and cook for another 25 minutes. Then, add the zucchini and cook for 15 minutes.

3. While the veggies are baking, prepare the béchamel sauce in a medium sauce pan. Melt the butter and add the flour. Mix well and cook for a minute. While whisking, slowly start adding the milk little by little until it creates a smooth sauce. Add the spices and season with salt and pepper. Finally stir in the parmesan and the egg yolks.

4. Add the sauce to the vegetables and cook in the oven until golden. Let it rest for at least 1 hour before serving.

AMARILLOS EN ALMÍBAR

Los amarillos en almíbar con crema son una alternativa riquísima a las batatas o camotes dulces. Luego de freír unos plátanos maduros en lascas, cocínalos en una cacerola con un poco de azúcar, mantequilla, ron de coco, palitos de canela y crema de mesa. Aquí usamos la crema de Cacique y funcionó de maravilla. Sirve con un poquitín más de crema por encima y listo.

Amarillos en almíbar con crema is a great alternative to candied yams. After frying your sliced ripe plantains, cook them in a pot with a little bit of sugar, butter, coconut rum, cinnamon sticks and table cream. Here we used Cacique’s cream and it worked beautifully. Serve them with an extra drizzle of creme and voilà!

HEALTHY CARROT CAKE

No teníamos idea que las zanahorias podían crecer en colores tan bonitos. Morado. Amarillo. ¡Hasta rosado! Desde chicos solo conocíamos las típicas zanahorias naranja, así que por supuesto, nos volvemos locos cada vez que nos encontramos tanta variedad en el mercado de Chicago.

Así fue como terminamos preparando este delicioso y saludable bizcocho de zanahoria que es perfecto para tomar con café por la mañana. También le dimos un toque diferente con un frosting de queso de cabra. Qué lo disfruten.

Bizcocho de zanahoria con frosting de queso de cabra - Ingredientes • 2 Tazas de harina • 2 Cucharaditas de baking soda • 2 Cucharaditas de polvo de hornear • 1 Pizca de sal • 4 Cucharaditas de canela • 1 Pizca de cardamomo • 1 Pizca de nuez mozcada • 4 Huevos • ½ Taza de aceite canola • 1/3 Taza de leche condensada • 1 Taza de azúcar • 4 Tazas de zanahorias ralladas (cualquier color) • 1 Taza de nueces

Para el frosting: • 1/3 Taza de queso de cabra • 1/3 Taza de queso crema • 2 Cucharaditas de miel • 1 ½ Tazas de azúcar de confitero • 1/3 Taza de mantequilla 1. En dos platos hondos separados, mezcla los ingredientes secos y los ingredientes mojados. Luego, mezcla ambos lentamente. Permite que descanse la mezcla.

2. Precalienta el horno a 350 grados. Engrasa el molde de bizcocho con mantequilla y espolvoréale un poco de harina.

3. Hornea por 35 minutos o hasta insertar un cuchillo que salga limpio. Déjalo descansar.

4. Combina los ingredientes para el frosting y colócalo sobre el bizcocho. Listo.

EnglishWe had no idea carrots could grow in so many awesome colors. Purple. Yellow. Even pink! Growing up, we only had good ol’ classic orange, so evidently it is really hard for us not to get a huge bag every time we go to the market here in Chicago.

That’s how we ended up preparing this delicious and healthy carrot cake recipe that is perfect with our morning coffee. We also made a creamy goat cheese frosting to top this cake, which you can choose to skip if you are counting calories.

Multicolored carrot cake with creamy goat cheese frosting - Ingredients • 2 Cups of flour • 2 Teaspoons baking soda • 2 Teaspoons baking powder • 1 sprinkle of salt

• 1 Cup of sugar • 4 Cups of grated carrots (any color you like) • 1 Cup of walnuts For the frosting: • 1/3 Cup of goat cheese • 1/3 Cup of cream cheese • 2 Teaspoons of honey • 1 ½ Cups of powder sugar • 1/3 Cup of soften butter 1. In two separate bowls, mix wet ingredients and dry ingredients. Then, slowly incorporate the wet ingredients with the dry ingredients. Let it rest for a couple of minutes.

2. Preheat the oven at 350 degrees. Grease your baking mold and dust with a little flour.

• 4 Teaspoons of cinnamon • 1 sprinkle of cardamom • 1 sprinkle of nutmeg • 4 eggs • ½ Cup of oil

3. Bake for about 35 minutes or until a knife comes out clean. Let it cool.

4. Combine the ingredients for the frosting until smooth.

Frost the cake.
