Brewing Tree Sprouts Food Truck By Jeff Maisey
G
etting a food truck to consistently park ’n’ serve at your rural Nelson County craft brewery isn’t an easy task. The solution for Mark and Gina Thompson of The Brewing Tree Beer Company was to purchase a fully functioning food truck — a large trailer kitchen, really — and operate it themselves. “We’re going to call it Brewing Tree Scratch Kitchen,” said Gina Thompson. “We’ll have some beer centric items—oldies but goodies — like bacon mac and cheese, beer bratwurst, and BBQ, but we also want to have some contemporary American cuisine items that focus on local, seasonal fare, like slow roasted pork sliders on sweet potato rolls with a maple-bourbon barrel stout glaze.” The Scratch Kitchen will also serve vegetarian options such as black bean, roasted butternut squash and quinoa bowls.” “And, last but not least,” said Gina, “some nostalgic items like Frito pie served in the Frito bag—one of Mark’s favorites.” Mark Thompson was the founder of Starr Hill Brewery based in nearby Crozet. After a semi-retirement and three-year hiatus from brewing, he returned to the industry with a new outlook on life — go small and relaxed. The Brewing Tree Beer Company is set on a beautiful property not far from Blue Mountain Brewing Company on Route 151 in Afton, Virginia. The Brewing Tree concept is to keep overhead low with greater profit margins — more beer bang for the buck. Though Thompson operates a small test batch brewing system onsite, the beers are brewed, fermented and kegged down at Seven Arrows Brewing Company as part of a contract arrangement. One of the upsides of this approach is not having to purchase and house a complete brewhouse, nor employ a staff of brewers and packagers. Thompson’s keep-it-simple system is, perhaps, a business model for future entrepreneurially-minded homebrewers wanting to take their recipes to the next level. Equally interesting is this idea of operating a remote kitchen in your brewery’s parking lot. With Gina’s foodie sensibilities and Mark’s “let’s try it” optimism, The Brewing Tree is sprouting with creativity. “We’re very excited about this new addition to the brewery,” said Gina. -6-

Stone Brewing added two key executives to its Richmond location in a move designed to express and bolster its commitment to the East Coast. Sean Monahan was named Stone Brewing Chief Operations Officer and the Director of Brewing Operations – East Coast is now Mark Fabrizio. “Our Richmond facility is our largest of five breweries and a vital part of our operations,” said Dominic Engels, Stone Brewing CEO. “We’re excited to extend our executive leadership team to the east coast, as it will no doubt tighten the connection and collaboration between the local community and Stone.” Monahan will oversee Stone’s operations across its entire enterprise, including San Diego, Richmond, Berlin, Napa, Shanghai and distribution to all 50 states and more than 40 countries. Monahan joins Stone from A.T. Kearney where he was a partner leading the operations practice and focused on clients in the consumer products and retail sectors. Previously he served as V.P. of Operations for Moorman Manufacturing, a privately held agri-business. Monahan is returning to the Old Dominion where he lived for 14 years in his early career. Stone Brewing – Richmond will exceed 125,000 barrels in 2018, making it responsible for one-third of the company’s total production. Now overseeing that undertaking is Fabrizio, who is leading all brewing and packaging operations. He comes most recently from North American Breweries (Genesee Brewing Company, Pyramid and Magic Hat) where he managed operations and quality control.

Ono Brewing
Celebrates Hawaiian Style By Jeff Maisey

hantilly, Virginia is a long way from Hawaii, but you wouldn’t know that when visiting Ono Brewing Company. Ono, which translates from Hawaiian to English as delicious and tasty, is a tropical-themed brewery. As soon as you arrive by car, you’ll notice the tiki bar patio in front of the brewery. When Ono Brewing Company recently
celebrated its first anniversary, it had a little help from its neighbors. Ono has been embraced by the Hawaiian community in the area who supported the brewery by providing -8-

the anniversary party entertainment featuring 12 different hula groups and Hawaiian musician groups. So how, you might ask, does Hawaii, Virginia, and beer connect? Well, it comes naturally to the husband/wife owners Scott and Cyndi Hoffman. “My mother was born and raised in Hawaii on the island of Oahu,” explained Cyndi. “When my husband, Scott, and I first got married, he was in the Army and our first duty station was Schofield Barracks on Oahu. We had lots of family on the island that helped us learn about Hawaii. Between Hawaii and Florida, we spent 20 years together in tropical locations. When we moved to Virginia, we missed that lifestyle. When we decided to start a brewery, we wanted to bring a little bit of the tropical/laid-back Ono Brewing lifestyle of both Hawaii Company’s Island Time and Florida to NoVA. Coconut Our kids have Hawaiian Brown Ale names. Our dogs had debuted this summer Hawaiian names so when it came time to name the brewery, it seemed natural to name it something Hawaiian. It was a family endeavor and it was actually our daughter, Halia, 11 years old at the time, who came up with the suggestion of Ono."
That’s a heartwarming story of the founding of the brewery, but there’s more. Many of Ono’s beers are thematic: Huli Pau (Marzen lager), Tsunami (DIPA), Manako (Mango wheat ale), Island Time (coconut brown) and Halia Rose (gose) to name a few. Inside the brewery tasting room operates Ono Beach Shack, serving creative Odd BBQ food items ranging from rice bowls to a Korean Cuban Sandwich. In addition to the tropical theme, the brewery is also known for its unique selfserve beer wall. “Ono Brewing Company is the first brewery in the area featuring state of the art technology, including self-serve beer taps where customers pay by the ounce,” said Cyndi. Resolute Day Weekend at Brothers
One of the most anticipated days of the year for craft beer enthusiasts in Virginia is Brothers Craft Brewing’s Resolute Day and this year it’ll extend for the whole weekend, with the big beer release scheduled on Saturday, November 17 at 10 AM. There will be two variations of the Resolute beer. These are top secret and will not be revealed until the day the beer is released. Want some? Stand in line. But, there’ll be a fun way to spend the weekend in Harrisonburg. On Friday, people can pop into the brewery and receive a free wristband (one per person) for Saturday’s big to-do. Live music will extend late into the evening for a truly festive atmosphere. Resolute and its variants will be the “featured beer,” but included on the tap list will be past years’ Resolutes, specialty rare items, infusions and new releases. Salute, Resolute.

Norfolk Day Brewing By Jeff Maisey
England’s Norfolk Brewhouse will collaborate with Smartmouth Brewing Company on a unique transatlantic ale next year.

ing, ring. Hello, this is Norfolk calling. Wait a minute, this is Norfolk — Norfolk, Virginia. At the beginning of August, Smartmouth Brewing Company president Porter Hardy IV was contacted by David Holliday, founding brewer and owner of Norfolk Brewhouse in the United Kingdom. Holliday was requesting a collaboration venture for his 2019 Norfolk Day beer. “Really, this is all David’s brainchild and we were honored that he thought to ask us to participate,” said Hardy. “We get some crazy offers, but this one checked out and we were really excited once we started getting into the details.” Norfolk Day was created just this year as a way for Norfolk County in England to celebrate is unique culture of small towns, rural, agricultural landscape and marshy, sandy coastal gems — Norfolk Broads — dotted with lighthouses and windmills. Delighted with this year’s inaugural celebration, Holliday wasted no time in laying the groundwork for a celebration ale for 2019. “The success of the first Norfolk Day in July did not go unnoticed overseas and we’re thrilled to announce that next year’s event will be celebrated in America – and that an awesome craft brewery from America will be joining us here in Norfolk,” Holliday posted on the brewery’s website. “We’re brewing up a collaboration brew with the team from Smartmouth Brewing Company of Norfolk, Virginia.

“This ambitious project will see the American brewery visit us here in Hindringham to brew a celebration ale, but will also see team Moon Gazer and some Norfolk grown Maris Otter barley shipped to America so that Smartmouth Brewing can brew up their own twist of a Norfolk ale,” Holliday continued. “This will mean that beer lovers on both sides of the pond will be able to raise a glass to Norfolk next July.” Norfolk Brewhouse is located in England’s barley-growing region of Norfolk County. The independent brewery produces a range of ales under the Moon Gazer brand, including Golden Ale, Gold IPA and Ruby Ale, all at or under 5% ABV — traditional for British brews. It’s award-winning craft lagers are under the Norfolk Brewhouse brand and include DewHopper Norfolk Lager (4% ABV) and StubbleStage Premium Norfolk Lager (5% ABV). Before being contacted, Porter Hardy had not heard of the UK brewery “Maybe we’ve just been too focused on Virginia,” admitted Hardy. “That being
said, I am super excited to try some honest cask ale. There’s just something about a proper pint that’s hard to beat.” As for the style and recipe of the collaboration, things are already coming together. “David put forth the idea of using Marris Otter malt as it is made right there in Norfolk and is some of the best malt in the world,” Hardy said. “That sounds like a great foundation to us. We can get Marris Otter from our normal supplier so I think that will be the base for our beer. For the beer brewed at The Norfolk Brewhouse, our very preliminary ideas circle around melding UK and US techniques and ingredients.” Hardy said he is working with city officials to make Norfolk Day — July 27 — a broader reality for 2019 beyond the Smartmouth tasting room release. In the meantime, Smartmouth Brewing Company celebrates its 6th birthday with a street party at its Norfolk location in October.

McCarthy, Vibrissa Put Out Feelers for Next Trend in Craft Beer By Greg Kitsock
Y
ou might have seen the announcement about “juicy or hazy” India pale ales replacing American-style IPAs as the most-entered style at the Great American Beer Festival. Equally newsworthy, though, is that entries for American and International-style Pilsners are up 70% over 2017. If that statistic signals a trend towards lighter, more refreshing beers, then Mike McCarthy – a 20-year veteran of the region’s craft brewing industry - is well-poised to exploit it. When he opens Vibrissa Beer next March in Winchester, Virginia, he’ll offer three such styles as his flagship brews: a hoppy Germanstyle pils; a helles; and a grisette (a lower-alcohol saison). McCarthy says he’s aiming for a German beerhall type of atmosphere at the 5,600-square-foot brewery and taproom slated to occupy an industrial building at 290 Airport Road in this city 75 miles west of Washington, DC. “It’s right across Route 50 from a Harley Davidson dealership,” he specifies. “They’re building over this place. The FBI is putting up a building with 480 employees.” He seems particularly excited about his helles. This malt-accented golden lager is not the kind of beer to set the hearts of beer geeks aflutter. And yet, in its native Bavaria, “it’s so good at times, that you almost forget it’s there. You don’t need to rate it to talk about whether it’s fallen off since the last time. “I want to chase that perfection that I know I will never hit.” He asserts, “Lagers aren’t necessarily harder to brew than ales.” They just tie up more tank space. “It’s tough to make a great lager in 14 days.” In fact, he intends to age his pilsner and helles a full 6 to 8 weeks. McCarthy will placate the hopheads with a rotating series of IPAs and double IPAs, although he plans to rein in their alcoholic content to “just over 6%” and - 12 -

“just over 7,” respectively, so you can down more than one glass. Patrons can also expect an occasional Russian imperial stout and mixed fermentation brew. Vibrissa will house a 20-barrel wooden foeder in addition to a 17-barrel German-built brewhouse with 40-barrel fermenters. Demolition, in preparation for the buildout, was planned to start in October. Vibrissa beers will initially be draft only, available only at the brewery, but longer-range plans call for local distribution and packaging using a mobile canning or bottling line. A stalwart of the northern Virginia brewing scene, McCarthy’s career includes an 11-year stint at Capitol City Brewing Co.; he spent the past three years as brewmaster for Ocelot Brewing Co. in Dulles.
Vibrissa is his first turn as owner, however. “Finally, the stars aligned; it was just the right time to go in it for myself,” he says. His partners include his wife Christina, and Rob Salerno and Mark Neely, owners of Eurasian Service Center, an auto repair shop in Tysons Corner, VA. The partners will own the property outright rather than rent. That’s important, stresses McCarthy. Given the expense of infrastructure, “you can’t just pick up and move; the landlord has you by the short hairs.” He cites high rent as a factor in the closing of Capitol City’s Arlington brewery. And the name Vibrissa? Basically, it’s
Latin for “whisker” … a long, stiff hair, used as a sensory organ, protruding from the face of many mammals. Given McCarthy’s previous job at Ocelot Brewing, a feline springs to mind, but Mike protests, “Ocelot wasn’t even named after a cat; it’s a Phish song.” McCarthy is a dog lover. He says the inspiration came from his American bulldog, Carmine, who sadly passed away last year. McCarthy is too busy at the moment to adopt a new pet, but he intends to take advantage of HB 286, a bill that Virginia’s Governor signed into law last spring, permitting dogs in brewery taprooms. Notes McCarthy: “When it comes to people bringing dogs, we’re 100% in favor, as long as the owners are responsible and the dogs are wellbehaved.”

Ardent Gets Deep with Historic Molasses Brew Words and photos by Lee Graves

inding a reason to brew a historical beer in Virginia isn’t difficult. The Old Dominion boasts such a rich tapestry of people, events, places and stories—as well as a brewing legacy dating to the early 1600s—that any brewer with a penchant for the past need only follow their nose to sniff out a new interpretation for an old recipe. Such is the case with Danny Fain. A history major while at Virginia Commonwealth University, he is building a niche for brewing historic recipes at Ardent Craft Ales in Richmond’s Scott’s Addition. His latest project was connecting with the John Marshall House to brew a molasses beer loosely based on a recipe in one of Virginia’s iconic cookbooks—“The Virginia Housewife,” first published in 1824 and still in print. That book was written by Mary Randolph, a member of one of Virginia’s most powerful and influential early families. She was second cousin to John Marshall, the fourth Chief Justice of the U.S. Supreme Court, and therein lies the connection that led to the project. A weekend-long celebration of John Marshall’s birthday on Sept. 24 included the special brew and an effort to extract yeast from a 200-year-old bottle of Madeira at the Marshall House. “John Marshall loved imbibing, so doing some sort of pairing with alcohol seemed perfect,” said Jennifer Hurst-Wender, associate director of museum operations and education for Preservation Virginia, the official steward of the property. A regular at several Richmond taverns and an energetic host, Marshall wasn’t known as a beer drinker—his tastes turned more to stronger drink. The Marshall House even has a punch bowl from the period on display. “I don’t think he was one to turn down anything offered to him.” Hurst-Wender is, however, a beer lover, and she broached the idea of developing a John Marshall brew with folks at Ardent. Her interest in Colonial recipes was - 14 -

sparked by the historic and off-center beers of Dogfish Head brewery—Midas Touch, Theobroma and others. On a muggy Monday in late August, Fain dumped an assortment of grains into the mash kettle of a system that itself has a place in local craft beer history. The 15-gallon Sabco setup served as the first system for the homebrewing co-op in a garage on Church Hill that eventually evolved into Ardent Craft Ales. “We don’t

brew with it that much anymore, but it’s a good way for us to try out a recipe. It’s what we perfected a lot of our recipes on,” said Fain, one of the members of that original co-op. Mary Randolph’s recipes have seen a lot of action among modern breweries. Garden Grove Brewing and Urban Winery in Richmond’s Carytown drew from “The Virginia Housewife” and a George Washington recipe for a spruce porter done in collaboration with the Wilton House. The Virginia Beer Company in Williamsburg used Randolph’s recipe—and the expertise
of Frank Clark, director of historic foodways at the Colonial Williamsburg Foundation—for a molasses beer presented as part of the “History on Tap” program sponsored by the Virginia Museum of History & Culture. Clark also partners with nearby Alewerks Brewing Company on a set of historic beers ranging from Toby’s Triple Threads Porter (a nod to porter’s popularity in England during the Industrial Revolution) to Dear Old Mum (a spiced ale with roots in northern Germany). He has developed an addition to the Alewerks lineup called Mary’s Molasses, expected to be available next spring. “It is clear from my research that this ‘style’ of beer was by far the most brewed beer in 18th century Virginia,” Clark said. Fain’s “Marshall family recipe,” as he puts it, is not Ardent’s first molasses brew, nor is it by far the brewery’s first foray into historic recipes. A persimmon beer (actually, more a cider because it is fruit-based) produced in 2014 drew international attention. Ardent cofounder Tom Sullivan said recently that another persimmon concoction might be in the works, this time in collaboration with Blue Bee Cider. Ardent’s Lemon Basil Wit also won the people’s choice award among four historic lemon-based beers served at this summer’s BrewHaHa festival at the Virginia Museum of History & Culture. The ingredients for Randolph’s recipe are straightforward—hops, wheat bran, molasses and yeast. Fain formulated two approaches—British and American interpretations. The former used Maris Otter barley for 80 percent of the grain bill plus Caramunich and chocolate malts, East Kent Golding hops and British ale yeast from White Labs. The American recipe required U.S. hops, barley and yeast. Both relied on Grandma’s Unsulphured Molasses, which Fain bought at a nearby Kroger’s. Early Colonists had no such supermarket luxury. Because barley was

expensive to import and difficult to grow in Virginia, coming up with the fermentable sugars needed for yeast to produce the carbon dioxide and alcohol in beer required improvisation. Molasses, usually imported from the West Indies, was one of the go-to ingredients on a list that included corn stalks, pumpkins and even pea pods. Fain’s focus was on producing a brown ale with low hop profile (around 16 IBUs) and high drinkability. A beer software tool, BeerSmith, helped him dial in an alcohol by volume content at 4.7 percent. The results of attempting to extract yeast from the Madeira bottle remain to be seen. “Yeast has been known to be dormant for hundreds of years and come back to life,” Fain said. A University of Richmond molecular biologist, Angie Hilliker, planned to sequence the DNA. For now, the John Marshall molasses beer was a short-term, special-occasion brew. “We may do larger batches down the road,” Fain said. “I would love to do this and age it in rum barrels.” Regardless, the effort combines two of his greatest passions: “I love history, I love beer and I like blending the two.” Copies of “The Virginia Housewife” are available at the John Marshall House, 818 East Marshall Street, in Richmond. he history of brewing beer in the Commonwealth — the land of Washington, Jefferson and other notable Founding Fathers — comes to life in a well-researched book from writer Lee Graves titled Virginia Beer: A Guide from Colonial Days to Craft’s Golden Age. For Graves, the former RVA Beer Guy columnist for the Times-Dispatch and a frequent contributor to this magazine, the book is the third in a series that began with Richmond Beer: A History of Brewing in the River City (2014) and followed by Charlottesville Beer: Brewing in Jefferson’s Shadow (2017). The title of the new book provides an instant mental snapshot of it’s contents. Graves takes us on a complex and fascinating journey from Roanoke to Richmond, Charlottesville to Tidewater, Northern Virginia and Loudoun County. It reminds us of where and why it all began. He delves into the unexpected role of women and slaves in the brewing of beer, and that of newly arriving immigrants — from Europe. I recently caught up with Lee Graves to discuss his new work, which is to be released on October 2 to the public. Here’s our Q&A session.

Ha! I wouldn’t know. I do find the “historian” tag being applied to me a lot now, which is an honor. But, I’ve simply built on the work of Garrett Peck, Danny Morris, Tanya Birch, Annie Tobey and other fine writers. I think of myself more as a journalist who has followed his nose into interesting places, and the history of beer is loaded with great stories. I’m content with being just a Virginia Beer Guy. How much did your experience in researching and writing Richmond Beer and Charlottesville Beer help you in developing Virginia Beer? My first two books helped immensely by revving up my research and building on one another. With this new book, I was able to include high points of some of that history and expand on efforts - 16 -

How does it feel to be Virginia's Beer Historian?
elsewhere, such as John Mercer’s failed attempts at Marlborough in 1766, the importance of Robert Portner’s brewery in Alexandria in the late 1800s, the post-Prohibition efforts of Virginia Brewing Company in Roanoke and the advent of microbrewing in the state with Chesapeake Bay Brewing Company in Virginia Beach.
As an overview, what are some of the key takeaways from the Commonwealth's history with beer making? Virginia claims a unique place in the country’s beer history. The first English settlers brought beer with them in 1607, and brewing has been a constant ever since (even homebrewing during Prohibition). Virginia can trace its hop industry to the early 1600s and was the top hops producing state in the South up to the Civil War. The first canned beer in the world debuted in Richmond in 1935. Charlie Papazian, the “godfather” of the
modern craft era, started homebrewing while a student at the University of Virginia. There’s plenty more! And we have such an incredible scene right now—it’s great! What did you find most interesting about Virginia's past with regard to making beer? I’m fascinated by the roles of women and slaves in early Virginia brewing history. Women supervised brewing beer on plantations and improvised with numerous ingredients, everything from persimmons to corn stalks. Slaves grew hops in their own gardens and sold them to plantation owners and brewers for a profit—this occurred at Monticello, Mount Vernon, in Williamsburg and elsewhere. Plus I have immense admiration for Peter Hemings, Thomas Jefferson’s slave who was trained by a professional brewer at Monticello. Why is it important for both today's craft brewers and enthusiasts/ consumers to look at the industry from a historical perspective? Every time you hoist a glass of beer you are connecting with human history, back to the dawn of civilization. Plus so
many beer styles have amazing histories. Drink a pilsner, and you’re instantly connected with 1842 and the birth of a beer style. Many of today’s brewers are exploring historic recipes to offer new interpretations of old beers, which is exciting. I think there’s a growing awareness of how the history of beer is part of a larger tapestry, our sense of culture and who we are as a society. What aspects and developments of today's Craft Golden Age do you find most interesting and why? In my lifetime, the U.S. has gone from basically a one-trick pony—mainstream lagers—to the most diverse, interesting and creative brewing nation in the world. Old styles are being revived and new ones are evolving—IPAs are a great example of this. American brewers brought IPAs back to life, and now they dominate the market. Craft brewers honor tradition but are not handcuffed to it, and the emphasis on “taste of place”-on being local--invites exploration. Plus I love that tasting rooms have become community centers, where families and friends can share good times and flavorful beers. We have truly witnessed
a cultural shift in that regard. Finally, craft breweries have been an economic engine and revitalized otherwise blighted urban areas. Where can folks purchase Virginia Beer: A Guide from Colonial Days to Craft's Golden Age? It is available through University of Virginia Press, at bookstores, online and other familiar places. I hope that some of the breweries around the state will carry it in their taprooms. I also have nearly 20 book-signing events lined up this fall, if anybody wants to add my scrawl to the text (details at www.upress.virginia.edu/ title/5068). Does your new Virginia Beer complete the series? Is there anything else to historically document from the past? I love history, and there’s plenty to dig into. I’ve been continuing to research Virginia’s hops history and the role of slaves in brewing and growing hops. I’m passionate about the latter because it’s largely an untold story and it’s an important and inspiring facet of AfricanAmerican history. Whether this leads to another book, we’ll see!

hree Notch’d Brewing Company is adding another brick-in-the-wall as it expands its brand city by city across Virginia. By early to mid-October, the Charlottesville-based craft brewery is expected to open its Three Notch'd Craft Kitchen & Brewery in downtown Roanoke in what was the old Cornerstone Bar & Grill. The kitchen will specialize in creating locally-sourced, beer-infused dishes designed to complement the season as well as what’s on tap. From Southern classics to modern favorites and the kid’s menu, you’ll find something for everyone at the Craft Kitchen & Brewery. The brewery will serve its flagship and seasonal beers, plus unique, locally focused styles brewed on its pilot system and from its other taprooms, like the RVA Collab House. Pretty soon, Three Notch’d will have more satellites than NASA. We hear downtown Norfolk might be next on its to-do list.

Forget Nirvana’s “Smells Like Teen Spirit,” the Brewers Association has come up with another awareness campaign to promote independent craft breweries. Its slogan is “That’s Independence You’re Tasting.” “‘That’s Independence You’re Tasting’ is designed to keep independent craft brewers and their beers top of mind,” said Bob Pease, president and CEO of the BA. “Our hope is that after being exposed to these stories, beer lovers are moved to support independent breweries and seek the seal when making their beer purchases. By choosing a beer that has the independent craft brewer seal, the beer drinker knows that they are supporting a brewery with ties to the community.” - 18 -

Visit Fairfax and seven of the Northern Virginia county’s craft breweries — Aslin, Caboose, Fair Winds, Forge Brew Works, Lake Anne Brew House, Mustang Sally and Ono Brewing C. — have collaborated on a new beer trail and brand called Locally Poured. Patrons can pick up the free Fairfax County Brewery Field Guide at any of the participating breweries in the county, or at the Fairfax County Visitors Center (located in Tysons Corner Center). The passport-like Field Guide encourages visitors to take a “Tour de Pour” around the county by visiting each unique brewery and marking the occasion by getting the Field Guide stamped. The guide also features a brewer-chosen “Must Try” and leaves room for Tasting Notes.

After 5 years in business, Flying Mouse Brewery is grounding its operation in Troutville, near Roanoke. “During this time we have had the pleasure of making new friends and experiencing many adventures along the way,” a statement on their website informed. “But as new adventures await us with a focus on family, we have decided to close the brewery by the end of the year. Until our last call, we will continue to be up and running, business as usual.” The brewery used an animated flying mouse named Bartleby Hopsworth as a mascot for its brands. The beers were named as numbers: Flying Mouse 1 etc.

Lickinghole Creek and Enrichmond Foundation are collaborating on a beer they’re calling The Shockoe Stout. “It’s a sessionable stout brewed with Virginia fresh hops and red cedar, perfect for easy drinking at fall festivals and on chilly evenings,” said Jessica Maffey, assistant manager of operations for the foundation. “Part of the proceeds from the beer will go toward the Enrichmond Foundation and its management of 17th Street Market, including a renewed weekly farmers market.” The Shockoe Stout will debut on October 27 as the featured beer of Enrichmond’s Brunswick Stew and Stout Festival.

Norm’s Great Beer and Infectious Laughter By Jefferson Evans and Chuck Triplett
When the people rise up to save you from being squeezed out by a large corporation, you must be doing something right. When you are on a first name basis with a large and loyal group of core customers, you must be doing something right. When your place of business, when mentioned in casual conversation, regularly inspires comments of “I love that place,” you must be doing something right. When you have passed through the pain of loss, the uncertainty of what you are meant to do, and emerged on the other side doing pretty much exactly what you want to be doing, you must be doing something right. But more than all that, when you can talk to someone for the first time and have that person pretty quickly think to themselves “damn, what a nice, sincere, down-to-earth guy,” well, you might be Norman Yow. Norm is a local boy, having grown up in Salisbury on Maryland’s Eastern Shore. During college, he worked for a beer wholesaler, making deliveries and working around the warehouse. This experience led after college to about a year and a half of managing a warehouse for a private beer distributor in Howard County, Maryland. This was work Norm was good at but after a time he experienced a nagging feeling that he wasn’t doing enough with - 20 -

his Business Management degree and should find something a little more “white collar,” something that didn’t involve quite as much forklift driving. This led for a time to cold call office supply sales, which Norm notes “is a tough way to make a living,” but did lead to a personal connection that helped him land some work with Navy Contractors and lots of time mastering Lotus 123 and Wordperfect, along with a bit of IT work. The job paid reasonably well, but there was a simple truth he couldn’t get away from. He missed working with beer and was tired of wearing a tie. “I would be in grocery stores and just find myself staring at the beer section,” said Norm. And then, the real body blow; between 1995 to 1997, Norm lost both his mom and sister to colon cancer. Going through all that was like a crucible, it drove Norm to step back and really examine his life and to try to honestly answer the question, “What do I want to be doing with my life?” Especially given that one of the aspects of his sister’s life he always took note of was how much she loved her job and enjoyed the work. Norm wanted that. He wanted to love a job. The quote that kept coming to mind was, “Do what you love and everything else will take care of itself.” What followed was an extended period of self-introspection
combined with reading lots of self-help books and articles. After all that, and in consultation with his wife, he decided he was going allin in finding a job involving beer. Sports would be an acceptable Plan B. So, Norm called Jerry Bailey of Old Dominion Brewing in Ashburn, Virginia and asked if there might be a job available. Hey, don’t judge, if there was anything Jerry Bailey was doing during that time frame as he built up Dominion to be the preeminent craft brewery of Northern Virginia, it was having to turn aside all the people who wanted to do what he was doing. Jerry couldn’t hire everyone who realized how awesome it would be to work making beer. But, what Norm realized was that the other end of the supply chain was just as important. One doesn’t always have time to make the trek to Total Wine or out to a brewery to buy the good beer. On a Friday night or a NFL Sunday, with guests on the way and trying to get done, wouldn’t it be great to be able to go around the corner and buy the great beer and wine you want to have for your guest and yourself? And with that, a light bulb went off in a big way leading Norm to quit all other work and start work on a business plan. The “where” to open his neighborhood beer store involved an interesting insight - so often the evening plan for himself and family and friends involved a trip to the local Blockbuster Video. Norm settled on a simple but ambitious plan. He would map-out every single Blockbuster Video store in Fairfax County and then visit every single one of them and find out which of those stores had an empty retail space nearby that could work as an independent beer and wine store. The Danor Plaza location largely fulfilled his location goals of being in a high density neighborhood with available disposable income and, of course, close to a Blockbuster. Norm had considered a location in Reston but ran up against the non-competition clauses that anchor chains like Giant or Whole Foods require when they sign a lease to open a new store. He would run up against such clauses again. The main challenge with the build-out once he had a signed lease was trying to act as his own general contractor and carrying his plans down to Fairfax County permitting folks only to have them reject some aspect of his plans, but without being very good about telling him what fixes would resolve the problems. On the upside, he ran into few problems with the Virginia ABC officials, (except for a temporary question mark as to whether he could name the store after himself) or from the town of Vienna. And once open, in 1998, that first year, business was rather slow. The space had formally been the home of the Vienna Vintner wine shop and the owner of that business actually called after learning of Norm’s plans for the space and tried to convince Norm to buy him out. Norm declined in no small part because he envisioned beer sales being a major part of his business plan, causing the other gentleman to grumble and predict that Norm would never sell more than $2,000 worth of beer a month. In reality, Norm’s beer sales have approached one million bucks for the year.You do the math. During those early slow times, there was never a thought of closing; just a dedication to building up the business through great customer service and a variety of ways of spreading the word. Several years in, he finally passed the break-even mark but there were multiple bumps to be managed. The attacks of 9/11 and the DC sniper scare really seem to dampen people’s enthusiasm for being out, especially after dark. Vienna’s sidewalk replacement project tore up streets for a time. Branch Road was made one way for a time such that you couldn’t turn onto Branch Road from Maple Avenue (Route 123) which is Vienna’s main drag. Through all that, VIRGINIACRAFTBEER.COM

the ethos remained “make it fun and welcoming, with no bait and switch tactics”. No rewards programs or special double secret deals. Norm gives you the same good price all the time. And so, Norm’s became regionally known as one of the greater D.C. area’s best places to go to buy beer. And then, February 2011 happened. The first word came via phone call from the property management company for the Danor Plaza shopping center. The good news - the plaza was getting an anchor business - Fresh Market. The bad news - Fresh Market would be getting a noncompetition clause in their lease agreement and as they would be selling beer and wine, they wanted Norm’s gone, within a 2 or 3-year time frame.You can excuse Norm if the thought crossed his mind of “I’m the little guy, I got no chance here,” but fortunately, his customers had other ideals. They were legion and they were pissed. As Norm tells me, “It was just different people doing different things till it really got steamrolling,” with one person having bumper stickers made, another starting a petition, another starting a Save Norm’s Beer and Wine Facebook page, and another reaching out to local press. It worked. The tide turned. And a few months later, Norm was on the phone with the president of Fresh Market who complimented him on having a great business and a great community. Of course, Norm’s could stay. Nowadays, if Norm has a complaint, or perhaps “concern” is the right word, it is the simple reality of how many people want to sell good beer these days. Hell, you can find some pretty good options at any 7-11. The air and excitement have been let out of the balloon a bit. People don’t line up for special releases the way they once did. Some, including those in the business, seem to have forgotten how important places like Norm’s were in spreading the word about the burgeoning American craft beer scene. Now, people like Norm have to deal with irritating realities caused by breweries giving in to the desires of large volume businesses like grocery store chains and doing things like shared barcodes where different seasonals or, say, different IPAs in an ongoing series will all use the same barcode. That seems to work fine for the big boys but for a smaller independent business owner like Norm it makes it harder to break down his sales unless he somehow provides his own distinguishing label. Irritating but not an existential threat. Norm gets a bit wistful when I ask what beers originally lit the fire that led Norm to make beer a career. The answer comes in part from the beer distributor he worked for early on with a vision that made him “a retail version of The Brickskeller” (the famous, now RIP, Washington D.C. beer bar) and involved driving around America to find beers to bring back to the Mid-Atlantic and sell to interested stores and bars. A lot of regional lagers were involved, but among the beers that stood out were Anchor Steam, Old Foghorn, Sierra Nevada Pale Ale, the Olde Heurich beers resurrected by Gary Heurich, and imports such as Paulaner Oktoberfest. And, Norm mentions that, in 2017, he attended Oktoberfest in Munich for the very first time. Celebrating

ou might recall the 1860s Welshorigin proverb, “An apple a day keeps the doctor away.” Wonder if the same is true of hard apple cider? Well, maybe. In 1664, English writer John Evelyn penned in his essay, Pomona, “…all strong and pleasant cider excites and cleanses the stomach, strengthens digestion, and infallibly frees the kidneys and bladder from breeding gravel and stone.” Seems the apple shouldn’t be considered the forbidden fruit, after all. In fact, it’s something to celebrate and here’s how to do so. In the Commonwealth, November 9 through 18 is officially Cider Week in Virginia. The Virginia Cider Week Proclamation made Virginia the first state to have an officially proclaimed “Cider Week,” when then Gov. Bob McDonnell signed off on it in 2012. Now in its 6th year, a bevy of tastings, workshops and other events invite cider lovers to experience this historic craft firsthand while fostering economic growth and tourism. Old Town Alexandria will host its Cider Festival November 17 at the Lloyd House garden patio. The 17th Street Farmers Market will showcase the beverage with a Richmond Cider Celebration on November 10. Albemarle CiderWorks gets competitive with a Virginia Cider Smackdown on November 16 at its North Garden, Virginia location.

Additionally, Virginia has 15 cideries officially participating in Cider Week. Each will have in-house events and special tastings. These include Big Fish Cider, Blue Bee Cider, Blue Toad Cider, Bold Rock Cider, Bryant’s Cider, Buskey Cider, Castle Hill Cider, Courthouse Creek, Coyote Hole Ciderworks, Old Hill Cider, Potter’s Craft Cider, Winchester Ciderworks, Wild Hare Cider, Winery at Kindred Pointe, and Albemarle Ciderworks. “Cider Week in Virginia is a chance for the cider industry to come together and promote the industry,” said Anne Shelton, general manager of Albemarle CiderWorks and this year’s president of Virginia Association of Cidermakers. “Individually, it’s a chance for cideries to invite people out to their tasting rooms.” Albemarle CiderWorks opened its doors in July 2009. The cider industry has grown exponentially in Virginia ever since. “When we first started out,” explained Shelton, “we had people stop by our tasting room who did not understand what hard cider was. As the industry has grown and more people have become aware of cider as a beverage, it has shown in our consumer base with repeat customers.” Another sign of cider’s increased popularity is Blue Bee Cider. The cidery opened in 2013 near Legend Brewing Company in the Manchester neighborhood of Richmond overlooking the James River. Blue Bee expanded and relocated three years later to the Scott’s Addition district where craft everything coexists in local-first harmony.
“The first year we produced about one thousand cases,” said Courtney Mailey, owner of Blue Bee Cider. “Now we’re up to 6,000 cases a year. We continue to be self-distributed, but most of our sales are on-site in our tasting room.” Blue Bee remains committed to producing small batch cider, as many craft cideries do. The most successful cidery in Virginia has been Bold Rock Cider in Nelson County. Bold Rock has an enormous tasting room and production facility housed in an attractive Appalachianstyle barn, with outdoor vistas of the surrounding mountains and countryside. Bold Rock ciders are widely distributed and can be found in every imaginable grocery store and specialty retailer in Virginia. That said, compared to Virginia’s wine and craft beer industries, the number of cideries operating in the Commonwealth is relatively small. Modern era Virginia cidermakers and orchard owners like Diane Flynt and others have reached out to new cideries in an effort to strengthen the overall industry. “I feel like we all know each other and respect each other, and work together to improve each others’ businesses,” said Shelton. Virginia has two new cideries worth checking out as well: Sly Clyde’s Cider in Hampton and Halcyon Days Cidery Company in Natural Bridge. ou won’t need your US government issued international passport to enter Northern Virginia’s Loudoun County, but if you pick-up a free LoCo Ale Trail Passport at any of the scenic county’s 32 craft breweries, a world of flavorful adventure awaits. Loudoun County is on a roll this year following the annual Governor-proclaimed Virginia Craft Beer Month of August. During the month, Loudoun County hosted the national Beer Bloggers Conference and launched its LoCo Ale Trail Passport program. The beer blogger event allowed county marketing officials to set themselves apart from other cities and counties by promoting, “Loudoun is a leader in Virginia’s craft beer industry and this conference provides us an opportunity to gain national attention and be positioned beside other destinations like Asheville and Milwaukee that have hosted in the past.”
Loudoun County is home to a diverse array of craft beer makers ranging from beautiful farm breweries that grow their own hops to small establishments in historic towns and industriallike operations located under the shadows of airplanes landing at nearby Dulles Airport. Destinations such as Leesburg, Sterling, Purcellville, Bluemont, Ashburn and Aldie are an easy drive from the DC metro area and a nice day-trip or weekend getaway for those in Roanoke, Richmond or Virginia Beach. These breweries include The Craft of Brewing, Beltway Brewing Company, Old 690 Brewing Company, Dirt Farm Brewing, Lost Rhino Brewing Company, Adroit Theory Brewing, Vanish Farmwoods Brewery, Belly Love Brewing Company, Rocket Frog Brewing Company, Old Ox Brewery, Twinpanzee Brewing Co, Phase 2 Brewing, Ocelot Brewing Company, Solace Brewing Company, Quattro Goomba’s Brewery, Dynasty Brewing Company, Black Walnut Brewery, Dragon Hops Brewing, Black Hoof Brewing Company, Crooked Run Brewing, 1836 Kitchen & Taproom, Dog Money Brewing, Jack’s Run Brewing Company, Harpers Ferry Brewing, House 6 Brewing Co, Hillsborough Farm Brewery, Bike TrAle Brewing, Bear Chase Brewing Co, B Chord Brewing Company, Barnhouse Brewery, Sweetwater Tavern, and last but not least, Loudoun Brewing Company. More are on the way. Like all regions of Virginia, the number of craft breweries starting up and gaining instant popularity has exploded at an astounding rate. Tourism organizations like Visit Loudoun have been keen to create official beer trails — like winery trails, Civil War trails — to help both the local businesses and industries as well as tourists seeking itinerary ideas.
“We worked very hard over the past two years with the (craft beer) industry to make sure we have opportunities to leverage visitation that brings people to the county and the great product we have — the unique beers, beer makers and great craft,” said Visit Loudoun marketing director, Jackie Saunders. Just a few years ago, Loudoun County had four craft breweries in operation. When that number reached eight, the county felt it was time to start the process of promoting this emerging industry. “Visit Loudoun organized and formed the Loudoun County Craft Brewing Advisory Committee,” said Saunders. “We sat down and talked about the opportunity to try to brand and create a trail product.” It all began with the Virginia Craft Brewery Profile Study (conducted from Sept 2013 to Sept ’14) co-commissioned by Visit Loudoun, Nelson County Economic Development & Tourism, and the Virginia Tourism Corporation. A research agency called Young Strategies conducted the statewide survey to determine demographic and behavioral profiles of craft beer enthusiasts visiting breweries. A total of 691 responses to the survey were completed. Key results showed the majority (54%) of brewery visitors were between the ages 33-53. Of those, 66% were male. Nearly 52% of respondents reported an annual income between $50,000 to $124,999. When brewery hopping or on an official beer trail, 75% of respondents said they visit 2 or 3 breweries in a day, with April through October being the peak season. The main purpose of a beer trip was either as part of a weekend getaway or to visit a specific brewery. While visiting

a craft brewery, survey-takers also dined at a local restaurant, included an outdoor recreation activities or attended a festival/ event. This was all important data when Visit Loudoun put together a marketing plan to target craft beer enthusiasts. It was obvious no visitor was likely to patronize all 32 breweries during a single trip to the county. Any awards program would need to be more attainable or in segments. The Loco Ale Trail Pocket Guide and Passport programs does just that. “That’s why we created some smaller achievements within the passport that you can still gain prizes,” said Saunders. “We grouped the breweries in clusters. If you complete the cluster you can get a prize as well.” Four breweries are in the Purcellville Gateway cluster. Collect a stamp from each of these breweries and you’ll earn a beer coaster. In the Farm Breweries cluster, you most show 8 stamps to receive a bandana. The Leesburg Downtown cluster has 6 breweries and that’ll get you a beer koozie. The most challenging cluster to complete is the 14-brewery Dulles Corridor with a take-home prize being a bottle opener. And, when you complete your first cluster, you get a fashionable LoCo Virginia Ale Trail T-shirt. Visit Loudoun is on a mission and the LoCo Virginia Ale Trail is its passport to success. “Looking at Virginia and the craft beer product, Loudoun is really leading the way with a lot of the craft, farm brewed product,” Saunders said. “The agricultural environment here working with our economic development department has really allowed the development of breweries to flourish. That with our effort to drive traffic to the breweries provides the setting for these breweries to do well.” - 36 -

Family Reunion for Belly Love & Hillsborough Vineyards By Michael T. Jarvis

rewer Tolga Baki is heading for the hills with a new brewery to complement his family’s Hillsborough Vineyards in Loudoun County. Baki, owner and head brewer of Belly Love Brewing Company in Purcellville, is now working alongside his parents and winemaker brother Kerem to form the Hillsborough Winery & Brewery. The move comes thanks to a decision from the Virginia Alcoholic Beverage Control Authority that now allows sales and sipping at joint winery-brewery facilities. “What makes this unique is that we have a fully integrated brewery and winery tasting room,” Baki says. “We now have one location to purchase and consume either craft beer or local wine made right here on the property.” The new 15-barrel brewhouse with 30-barrel fermenters enhance a picturesque winery that was purchased in 2001 by his parents Bora and Zeynep. Vineyards descend from the crest of the farm to Virginia State Route 9 located just west of the hamlet of Hillsboro (which is spelled differently). The sprawling winery-breweryvineyard facility with inside eating for more than 100 people includes multiple outside patios and picnic areas with comfortable drinking spots and relaxing landscapes. “We’re incorporating many of the lessons learned from Belly Love,” says Baki. “The process is easier, having done it before, and designing the brewery itself was a lot of fun.” Purcellville’s Belly Love is a stylish spot with a sense of humor — the bathrooms are for Innies or Outies — and the television-free tap room captures the Zen vibe. The beers span from nitro and tropical stouts to IPAs, Munich Helles and a popular Hefeweizen. New patrons - 38 -

often double-take when a regular orders a Shut the Fook Up pale ale or Flying Unicorn Crotch Kick double IPA. The unusual name of the brewery came from a ritual Baki and his wife Katie use to deescalate stress: they touch bellies. There is a weekly trivia contest and lots of table games but make no mistake, the beer is serious business. Their 50 Shades of Gold won first place in the Strong Belgian Ale category at the Virginia Craft Brewers Guild competition ceremony in Richmond. Six years ago, Lost Rhino and Corcoran Brewing Company were the only two breweries in Loudoun County. Corcoran was the first winery=brewery combo in Virginia, but under the old regulations no wine could be consumed in the brewery and vice versa. Belly Love was ahead of the curve and opened in December 2014. Today, Loudoun County boasts around 35 brewhouses — and the list keeps growing — but just when it seems like the local market might be saturated, the stakes are raised and another brewery opens with more attitude and altitude. The popular Old 690 Brewing Company in Hillsboro
just completed a large new brewery high atop The Adventure Center near Harpers Ferry with astonishing views of two rivers, three states and four counties. Just off Virginia State Route 7 not far from Bluemont and the Clarke County line, Bear Chase Brewing Company is drawing large crowds to its scenic peak on the Blue Ridge. The expansion of breweries has not discouraged Baki. “We came at this from a different angle actually,” he says. “Frankly I think we are near the saturation point for breweries, but, be that as it may, we (the family) always wanted to work together. It’s sort of cool that Kerem honed his craft over the years in making wine on his own, and I have worked on perfecting the craft of making beer. It’s just a neat story that we have finally managed to come together and work together for the first time. We have no delusions of retiring rich doing this . . . we do it because we truly love it.” The cross marketing of beer to over 1,000 Hillsborough Vineyards wine club members won’t hurt either. “I keep
saying, once the brewery is up and running and we have everything staffed, that EVERYTHING will fall in place,” says Baki, who remains just as chill as his beer despite running two breweries 15 minutes apart. “Yeah, it’s absolutely nuts. Running Belly, managing my other business, and then setting this new brewery up, while also taking over operations for the entirety of Hillsborough has my mind going at warp speed. he Roanoke region capitalizes on traits of natural origin and those of human invention – both of which enhance quality of life for residents and help draw tourists – including an expanding number of breweries. The region’s new Virginia Blue Ridge Cheers Trail, a sequel to the brewery-focused Blue Ridge Beer Way Trail, reflects the growing craft beverage scene and makes finding said beverages even easier. The trail encompasses about two-dozen craft beverage venues – including wineries, distilleries and a meadery as well as breweries – in the Roanoke and New River valleys. The app-based trail helps visitors locate businesses, promotes deals and offers swag for multiple check-ins. Of the breweries, nine are in Roanoke and nearby Salem; some are seasoned veterans and others are recent additions. If you have the opportunity to explore the area (and you really should try), here’s a peek behind the newer breweries in Roanoke and its sister city, Salem.

Olde Salem presents a blend of old and new, from the history of the 1920s building to the best of 21st-century craft beer. Olde Salem Brewing’s inviting tasting room is set in a 1920s-era building on Salem’s Main Street
with toasty back notes. Smoky notes and a rich mouthfeel compensate for the unappealing name of Outhouse Porter. Goat Milk Stout offers a touch of lactose sweetness and a full mouthfeel (and, per goat-bearded McGraw, adjunct versions with chocolate, cinnamon and vanilla wait in the wings). IPAs range from the double dry-hopped, IPA-lovers’ Pillow Talk to the more balanced Board Approved IPA. My favorite, Ghostly Saison, is gentle on the Belgian spices, enhanced by spicy rye malt and Amarillo hops. (The recipe will change as they tweak it, explains McGraw.) Any beer fan who’s been around the block a few times recognizes the Deschutes name. The promised Deschutes East Coast production facility is still in the works, but in the meantime, the small tasting room with tiny pilot brewing system is serving a plethora of the Oregon-based brewery’s beers. Though you can get your hands on some Deschutes beers in Virginia, the tasting room near the corner of Church Avenue and Market Street offers a wider variety, from riffs on the legendary IPAs to easy-drinking Pacific Wonderland lager, Black Butte Porter variations, Roanoke-brewed beers on Wednesdays, and limited releases.
The rarities on tap during my visit included the Humm Zinger radler with Humm Kombucha, with subtle tea-like notes; the roasty Obsidian stout on nitro; creamy Twilight Summer pale ale on nitro; and Black Butte Porter XXVIII (with vanilla, chocolate and orange peel) and XXX (oh-so-rich pure goodness). No stranger to Virginia beer aficionados, Starr Hill launched the Roanoke location in September 2017. Besides taking advantage of 23 taps, tasting room and patio, and entertainment on the small stage, patrons can provide feedback on the pilot brews – possibly even influencing the beers that make it to the Crozet production brewery. You might even earn bragging rights for tasting a beer before it even makes it to distribution. One such Roanoke creation on tap during my visit was the Raspberry American Sour, the first pilot-brewed beer to make it to the big-time. Seek What You Thirst at New Realm By Jeff Maisey
L
et’s set the stage for Atlanta-based New Realm Brewing Company’s arrival in Virginia. Remember this listing? In so many words, “For Sale: 50-barrel brewhouse in Virginia Beach. Turnkey operation.” A few years back, the Hampton Roads region was in hot pursuit of a West Coast brewery wanting to move east of the Mississippi. Norfolk — a nearby city to Virginia Beach — was announced as one of three finalists for Stone Brewing’s highly-competitive search for the perfect East Coast location. When Richmond ultimately won the hearts and minds of Stone executives, in 2014, it wasn’t long before Virginia Beach city officials unveiled a surprise announcement of their own: San Diegobased Green Flash Brewing Company was moving to the resort city and opening a 50-barrel manufacturing facility to better serve consumers from Florida to Maine. Not only would this translate into significant tax revenues for the city, it would enhance the quality of life for locals and hopefully draw thousands of tourists. When Green Flash finally opened its brewing facility, spacious tasting room and outdoor beer garden following numerous delays due to infrastructure upgrades surrounding the property, authentic West Coast IPAs began to flow to the delight of hordes of craft beer enthusiasts. The euphoria, however, was short-lived.
In January 2018, just barely a year after its grand opening, Green Flash announced its Virginia Beach location was closing and all of the equipment was to be auctioned at a fraction of its value. The building and land was owned by the commercial construction company The Miller Group. Behind the scenes, city officials rallied to find a replacement. They were in possession of a move-inready, large capacity brewery. By springtime, Virginia Beach announced New Realm Brewing Company would be the new operating tenant in the former Green Flash location. Ironically, it was in January this year — the same month Green Flash closed — that New Realm opened its first brewery. While New Realm was a newcomer with little known name brand recognition, its three-person ownership team instantly provided confidence and excitement. In a roundabout way, Hampton Roads is at last getting its Stone-caliber brewery. Mitch Steele, New Realm’s highly knowledgeable brewmaster, COO and cofounder, was Stone Brewing’s California brewmaster before departing for Atlanta to start New Realm. Steele joined Stone Brewing in 2006. He is credited with crafting Stone’s Sublimely Self Righteous and Enjoy by IPA as well as writing one of the most important books about IPAs, the 2013 released “IPA:
Brewing Techniques, Recipes and the Evolution of India Pale Ale.” Before his nearly decade tenure at Stone, Steele worked 14 years managing the brewhouse and fermenting operations at three Anheuser-Busch facilities before heading up A-B’s new development team within their Specialty Brewing department. Steele’s co-founding partners Carey Falcone and Bob Powers each come with hefty resumes having worked respectively for Anheuser-Busch and Constellation. New Realm Brewing Company opened its Virginia Beach tasting room in late August, serving a variety of its core brands like Hoplandia IPA (a traditional American IPA), Hoptropolis, Kikimora Imperial IPA, and Euphonia Pilsner. Though its popular core beers seem IPA dominant, the plan is for tremendous variety. “Since we started brewing in Atlanta, in December, we’ve brewed over 80 different beers,” said Steele. “Some of the most popular beers we’ve poured so far in Virginia Beach is not our IPAs. We had a German hefeweizen on and the Belga Rose, which is a Belgian hibiscus beer, and the lemon Berliner Weisse all did really well.” Mitch Steele is also sold on the juicy, hazy New England-style IPA style. New Realm’s Hazy Like A Fox is its second NE variety.

“New England IPAs are a pretty severe left-turn from what American IPAs have been in the last few years,” said Steele. “They’re not brewed to be clear, like a lot of IPAs used to be. One of the things that is common to a lot of the beers that are brewed this way is the use of flaked adjuncts like oats and flaked wheat. Those grains have a lot of protein in them and beer haze is foremostly from protein and compounds from hops. The two elements combine for this haze that just doesn’t go away.” A brewer will dry-hop New England IPAs in the middle of fermentation, rather than at the end. The flavor profile is often along the lines of orange juice. “That has never been a practice until recently,” Steele said, “primarily because when you dry-hop in the middle of fermentation the impact on the yeast is a little risky.” Steele uses El Dorado and Azacca hops for New Realm’s hazy/juicy IPAs. A key ingredient to New Realm’s brewing team is the addition of head brewer Evan Chamberlain, Green Flash’s former top brewer, who comes with working knowledge of the brewhouse. And speaking of brewhouse, the 50-barrel system in Virginia Beach is double the size of New Realm’s Atlanta brewery. Steele said his team can produce 40,000 barrels of beer per year in Virginia Beach, with room to expand by adding twice as many fermenting tanks, potentially maxing capacity at 80,000 barrels of beer. According to Falcone, New Realm does not seek to be a national brewery. In fact, New Realm will only distribute its beers within states it has a production facility. They plan to open a barrel-aging and sour beer program in Charlotte, North Carolina next year. For the time being, Steele will split time commuting between Atlanta and Virginia Beach. Once the Virginia Beach brewing system is fully functioning, a wide variety of beers ranging from its core brands to experimental recipes will be produced and served. Steele is also keen on doing collaborations — and anticipates a symbolic one with Stone RVA at some point. For those who visited the Green Flash tasting room, things will have a familiar look and feel. Except for the merchandise room, most things, such as the glass windows looking into the brewery and placement of the bar, are nearly the same, though more seating and communal tables are to be added. Above the tap handles is a similarly illuminated sign, though now with New Realm’s motto — “Seek what you thirst.” Beyond beer, New Realm plans to open a full service kitchen in the first quarter of next year with seating for 450 hungry patrons. “We’re pretty proud of our culinary program,” said Falcone. “We’re as proud of our food as we are of our beer.” The outdoor patio has a new addition: a bar with taps serving year-round. Live music, picnic tables and other amenities will also enhance the open-air experience at New Realm. All’s well that ends well in Virginia Beach where in a flash fresh green pastures lie ahead with New Realm Brewing Company. VIRGINIACRAFTBEER.COM

Big Ugly Moves Down the Street By Jeff Maisey

ig Ugly Brewing Company just got bigger — but not uglier. Chesapeake’s first microbrewery moved from its snug strip mall location to a spacious freestanding location in early August. For nearby dedicated beer customers it’s a stone’s throw away from the original spot. It’s also bigger in every way: bigger brewhouse, bigger storage area, bigger tasting room, bigger draft beer menu. And best of all, there’s a big comfortable outdoor area to enjoy the award-winning beers created by the Big Ugly brew crew. Big Ugly Brewing Company opened its doors in February 2015. It’s a friends and family brewery in most ways. Longtime pals Jim Lantry and Shawn Childers, both homebrew enthusiasts, took their hobby to the next level with the encouragement of their supportive wives — and a brewery was born. I recently caught up with Childers to get the latest on the new facility.
VCB: How did you select the new location for the brewery and tasting room? Shawn Childers: When we were looking for a new location, we gave ourselves a one to three mile radius from the current brewery. The new location is literally one mile away — door-todoor. We chose the new location for a couple of reasons. First, it’s close to our houses. Me and my partner live in the same neighborhood. We need it to be that way because it’s still our second job. It had to be that way to logistically make it work.
Once we established ourselves, we got a lot of feedback from our regulars saying they didn’t want us to move very far. We promised to do our due diligence to be as close as possible to the original location.
VCB: The old location gave patrons the sense they were in both a tasting room and a working craft brewery simultaneously. Every ounce or foot of space was utilized. What did you want the new Big Ugly space to be like? SC: One of the things we’ve always enjoyed about breweries that we’ve visited were they were open and friendly; meaning there wasn’t a big separation of entities, where a tasting room is completely separate (from the brewhouse). Worse, in my mind, are — we call them aquarium breweries — where you walk in and see the big glass wall (with brewhouse on the other side) but you can’t get there. We enjoy the places that are more open where you feel like you can just reach out and touch it. In the new location, we started out with 6,000 square feet. We are roughly 2,800 square feet for the tasting room. In the old location, we had 2,000 square feet where we did everything from brewing to selling to storage. On the outside, we’re a freestanding building on a three-acre lot with a lot of green space. My wife always says it’s our forever home with the idea we would have enough space to potentially add new things down the road.

James River Brews by the Reinheitsgebot

I
n 1516, the German Beer Purity Law was enacted. The Bavarian law, referred to as the Reinheitsgebot (pronounced: rine-heights-geh-boat), dictated beer pricing at the time but more notably regulated the ingredients brewers were allowed to use, limiting them to barley, hops, and water (and, necessarily, yeast, though it is not formally mentioned in the original document). While the Reinheitsgebot is not still in effect as legislation, its foundational
concept of brewing with the use of only those four ingredients has been kept alive by a number of brewers, German and otherwise, both for its sound reasoning of maintaining the purity of the beer as well as, at times, for marketing purposes. Behind a small storefront of a refurbished 19th century brick warehouse on a cozy corner in downtown Scottsville is a local Virginia brewery that adheres, primarily, to the Reinheitsgebot. Tucked into the tiny neighborhood that is nestled in the bend of the James River, an area burgeoning with the growth of popular
establishments like a fermented food shop and a quaint bookstore with a coffeehouse, James River Brewery opened in 2015 with the premise of brewing with adherence to the purity law. “Keeping it simple has always been our main motto,” says Shannon Brown, the brewery’s Operations Manager. Blake Sherman is the brewer at James River Brewery, and a “jack of all trades” as described by Brown. Before leading the brewing operation, Sherman had experience in woodworking as well as plumbing, electrical, and mechanical

work and he assisted in much of the remodel of the brewery. Then, he trained to produce the brewery’s beer with Master Brewer Jacque Landry, former brewer at South Street Brewery and more recently the head brewer of Basic City Brewing, and Master Brewer John Bryce, most known for his work with Starr Hill, Capitol City, and Old Dominion. Trained in Germany, following the Reinheitsgebot, Bryce trained Sherman in the same style. Sherman embraced the concept. “When you get a bunch of different grains in there, it’s too much. No one grain comes through and you end up with a muddled taste,” Sherman says. Sherman used his initial training to produce the brewery’s first beers and since has continued to grow, striving to produce consistently high quality beer. Most of James River Brewery’s core beers, which are also many of the same that have garnered a number of awards in the short time since the brewery opened, are the primary brews that adhere to the Reinheitsgebot. Hatton Ferry Pale Ale, River Runner ESB, Tuber IPA, Sherman Stout, and the James Blonde Ale are usually available on tap. Others that follow the purity law, like
the Liffey River Irish Red Ale, are seasonal. While the brewery’s primary premise is to craft beer of consistent quality that is brewed with purity, Sherman does experiment with other ingredients as well, departing at times from the Reinheitsgebot. Brews like the James Bean Vanilla Oatmeal Porter, Fluvanna Fluss (pronounced: floos, and meaning “river”), and Scottsville Swarm Honey Blonde, some of which are also award-winning, incorporate other ingredients, though they are often locally sourced. “Each year, we partner with Scottsville Supply, using their fresh honey combined with our James Blonde 007 to create the Scottsville Swarm Honey Blonde,” says Shannon Brown. In addition to sourcing the extraneous ingredients locally, James River Brewery works with a number of local producers for the core ingredients necessary to craft their beer. Partnering with BSG Supply, Lupulin Exchange, and local hop farms like Celestial Farms and Running Cedar Hop Farms, the brewery supports local growers. However, James River Brewery’s commitment to the community doesn’t stop at the production end.
Every Wednesday, the brewery hosts Community Tap Night which features different non-profits to which they donate back 20% of all sales. They also host weeknight events on Mondays and Tuesdays that encourage members of the community to visit. Their Monday Mug Club Madness has brought in over 200 mug club members. In terms of future plans for beer, the brewery has a few seasonals expected on tap for the fall and winter. Their seasonal Skylar Skunk and a new Hoppy Camper IPA are on the way as well as a pumpkin beer. They are also in the planning stages of a new winter beer. On a larger scale, there is an impending opening of a second location in November on Main Street in Farmville. The brewery intends to follow that up with a 2019 opening of a third location that is currently being scouted. In the meantime, craft beer enthusiasts can continue to settle in at the flagship Scottsville brewery whether it’s in the cozy bar filled with games and laid-back locals, or al fresco at the backyard bar and beer garden with a woodsy backdrop, a meandering creek, and weekend live music.

Trial of Dmitri Benchtop Craft Brewing Company Norfolk You don’t have to feel guilty about drinking Benchtop’s Trial of Dmitri, Tidewater Beet Kvass. It’s like you are getting your vegetable serving with this beer that tastes like beet juice! It’s actually owner and head brewer Eric Tennant’s version of a historic Slavic fermented beverage. Traditionally, Kvass is a 1-2.5%ABV beverage made from stale rye bread. Benchtop’s version is an “imperial” (but still really low) at 4.6%. Oktoberfest Center of the Universe Ashland We love the can design of Center of the Universe’s Oktoberfest. COTU blends Old World ingredients with New World techniques to create this Oktoberfest style beer. German Munich and Vienna malts give the beer a slightly sweet and malty flavor and Noble German hops were added during the boil, giving enough bitterness to balance the flavors of the malt. Then, the brewers chose a Czech yeast strain that accentuated the malt. After fermentation, the beer went through a cold conditioning process called lagering, and lastly the beer was filtered to remove any yeast.
