Our cover story features the complete list of winners from the Virginia Craft Brewers Guild’s Virginia Craft Beer Cup Awards. The awards ceremony was held August 16 at Hardywood Park West Creek in Richmond. Gold, silver, and bronze medals were given in twenty categories. Congratulations to this year’s Best In Show Winner, Fair Winds Brewing Company for their Quayside Kölsch. Plus, The Virginia Beer Company took the second place Best In Show honor for Terminally Pretty and Dynasty Brewing Company placed third in Best In Show for their 838 Stout. In Brew News, the “Best Of” theme continues as we highlight the Virginia breweries who won awards at this year’s Great American Beer Festival (GABF) presented by the Brewers Association in Denver in September. A special shout-out goes to Port City Brewing Company for winning their fourth GABF medal for Optimal Wit in the Belgian-style Witbier category. In addition, we recognize the Virginia breweries who won awards at the 2021 US Open Beer Championship. And lastly, we congratulate the Hampton Roads breweries who won at the 757 Battle of the Beers held in September in Virginia Beach. Port City’s Optimal Wit Captures 4th GABF Medal By Jeff Maisey
O
ptimal Wit is establishing a dynasty. The flagship beer produced by Alexandria-based Port City Brewing Company won its fourth Great American Beer Festival (GABF) medal — a gold — when the Brewers Association presented the results of its 2021 competition in Denver. To date, Port City’s Optimal Wit has scored two gold medals (2013, 2021), a silver (2018), and bronze (2015) in the Belgian-style Witbier category. This year, the Brewers Association awarded 290 medals to 265 breweries from all over the nation. Ten awards went to beer-makers from Virginia. That Optimal Wit continues to win national competition speaks volumes about the consistent quality of its popular, widely distributed brew. “We have always focused on consistency and improving our quality from the beginning,” said Bill Butcher, Port City’s founding president.“I believe that quality is a journey, not a destination.We are constantly looking for improvements in our processes that can give us better quality, whether that is better flavor extraction, improved stability, or longer shelf life. “Our team is very innovative and creative. Much of our innovation and creativity occurs behind the scenes, in the QC lab, and small changes in the brewing process. These small changes are cumulative and add up to big improvements over time.” Ultimately, these improvements appear in the glass to benefit the beer drinker, and seemingly confirmed by judges in competitions. “Our biggest focus when it comes to Optimal Wit is consistency,” shared Adam Reza, Director of Brewing

Operations at Port City Brewing Company.“We do an infusion mash on Optimal so hitting the same temperature every time is very important and our brewers are trained to make this happen. Making sure that when we hand-mill the coriander and grains of paradise that they are the same batch to batch. This is the same with our boil where we make sure our evaporation rate is between 8-10%.Yeast health is very important, and we pitch at a consistent rate. To ensure even more consistency, we take two 120-bbl batches and blend them together. Every batch is tasted by our team to ensure that our beer is true to brand.” The recipe for Optimal Wit has remained essentially the same. Nine years ago, Port City started using Virginia-grown wheat, and has never turned back. “We have a great relationship with our wheat farmer in Heathsville, Virginia,” said Butcher.“They have been able to bring us top quality red winter wheat and have been able to grow along with us.We use the term BEER GROWN HERE for Optimal Wit, and we’re quite proud to be able to use locally grown ingredients in our bestselling beer, which happens to be one of the best examples of witbier in the USA.” Following are the 2021 Great American Beer Festival award winners from Virginia:

2021 US Open Beer Championship Results Roanoke’s Barrel Chest Wine & Beer ranked 8th overall best brewery in the US during the 2021 US Open Beer Championship. They were the only Virginia brewery to crack the Top 10. With that said, the Commonwealth breweries made their presence known taking gold, silver and bronze medals across 140+ Categories. olonial Williamsburg’s highly-anticipated three-day Ales Through the Ages conference was planned as an in-person event with an option to participate virtually. Due to the pandemic, the entire program of national and European expert guest speakers is being reduced to a one-day online only educational experience on November 12. Still, Frank Clark, the master of historic foodways who has worked for Colonial Williamsburg for 34 years, is pushing forward to make the most of things. “We have decided that the best way to handle this is to do a condensed online version of the program this year and postpone the full in-person event until the same weekend next year,” said Clark.“It is the best option we have and will involve some of our current speakers who can make virtual presentations.” Ales Through the Ages conceptually will blend beer and history, encompassing the ancient Egyptians’ brewing recipes, Medieval Europe, and Colonial-era American beer experiences. Most early American settlers who arrived in Virginia during the 1600s and 1700s were English, and beer was an essential part of their diet. “Beer was the national beverage of England and it followed here as well, especially in early Jamestown,” said Clark. Early Americans, according to Clark,
enjoyed pale ale, porter, and brown ale. In Virginia, specifically, molasses beer was brewed. “It was somewhat cheaper and quicker to brew,” said Clark. Colonial Americans home-brewed molasses, bran, and hops in boiling water. Clark and the Colonial Williamsburg Foundation have several recipes from the period, including one of George Washington’s. The topic of brewing in the Colonial era includes the participation of enslaved Africans. “They were very much involved in the process,” said Clark.“In fact, Lee Graves and I are going to be doing a talk on enslaved and women brewers in the 18th century.” In many illustrations and paintings of tavern life from the 18th century, women are often seen as drinking foamy beer in mugs right along with the men. Clark noted that women, like men, were both young and old as there was no legal drinking age back then. Brewers made huge efforts in the 18th century to find good sources of water. Spring water was preferred. In Colonial Williamsburg, no fewer than 12 springs existed. “You also would have seen people capturing rain water and using that in the brewing process,” Clark said,“with river water being the last resort.”
Clark said water from the River Thames was used in London on occasion to brew porters. “One of the things you hear a lot is that they drank beer because it was safer than water,” said Clark. “I think that’s kind of an oversimplification. Really, in the 18th century mind, beer is better than water because it’s more nutritious. The real reason they liked beer more is because they got calories from it. Therefore, beer was considered more healthy than water.” While taverns in the countryside on the dirt roads leading to Charlottesville often brewed beer on-site to serve with food, Chowning’s Tavern and the like in Colonial Williamsburg would more likely have served ales imported from England. Taverns were required by law to post a price list of its alcoholic beverages on the outside of the building. “One of the things you would see a whole lot on the Williamsburg price lists are Bristol Beer,” Clark said. “It was much faster to ship things from Bristol than it was from London, and Bristol had a pretty big brewing industry with the export market of America in mind. You’d also see Welch Ale on the tavern price lists. Virginia-brewed Ale was also listed, and that could be made by the tavernkeeper’s wife or a small local brewery.” The tradition continues…

honors at the Virginia Craft Beer Cup awards competition and 2021 was no exception with Fair Winds Brewing Company taking the top prize with its flagship Quayside Kölsch. “We are finding that over the years, lighter beers are coming into fashion again,” said Brett Vassey,Virginia Craft Brewers Guild’s President & CEO.“Now folks are figuring out it is a bridge beer for non-craft drinkers, so many of our members are getting into it because they can make a very flavorful kolsch.” The Virginia Craft Brewers Guild (VCBG) announced the 2021 Virginia Craft Beer Cup winners on Monday, August 16 at Hardywood Park Craft Brewery’s West Creek location. This year’s competition was managed by Head Judge, Charlie Harr. Some 283 beers in 20 categories from 95 independent craft breweries competed in the largest competition in VCBG history. Judging took place over three days at Old Ox Brewery in Ashburn,Virginia. “The Virginia Craft Brewers Guild and Virginia Craft Beer Cup’s 10th Anniversary is an amazing milestone,” said Janell Zurschmeide, Dirt Farm Brewing and VCBG Chair.“Celebrating the 2021 Cup competitors and winners with friends and colleagues is a fitting tribute to our members’ commitment to amazing independent craft beer.” “This year’s competition was phenomenal,” said Charlie Harr, Head Judge.“Each brewery clearly exemplified their passion and their skills in the great beers put forward. That same passion was also shown by the tremendous judges as they worked to find the best of the best.” The Virginia Craft Beer Cup continues to be the largest state competition of its kind in the United States. The VCBG is committed to giving its members the opportunity to compete, obtain critical feedback from certified judges, and get statewide recognition that will help build their brands. The VCBG is also developing additional media, retail marketing, and tourism opportunities for Cup winners this year, ranging from a Cup Winner Beer Trail to digital medals for labels and retail POS displays. “We are trying to build beer trails around the winning companies so when folks are looking to do something this weekend they can go around the state and try award-winning beers,”Vassey said.“We are also going to be working directly with retail outlets — grocery stores, bottle shops — to help them showcase award-winning beers from Virginia.” By region, breweries from Northern Virginia dominated for the second consecutive year. Northern Virginia had 31 medals, followed by Coastal Virginia/Hampton Roads (15 medals), Southwest Virginia/ Blue Ridge (7 medals), Charlottesville/Mountains (7 medals), and with the Richmond/Central VA market coming in last (2 medals). “When we started the Guild, there was nothing in Northern Virginia,” said Vassey.“Now, we have 17 breweries or more. The Northern Virginia market is just exploding.” The 2021 Virginia Craft Beer Cup winners are as follows:

Suffolk Surprises with Superb Suds at Nansemond Brewing Station By Diane Catanzaro and Chris Jones
L
ocals may know the Nansemond River, that the Nansemond MoMac Brewing in Portsmouth, as MoMac is under the same Native American tribe lived along the river, or that ownership. In addition to the local shops and restaurants Chris mentioned, a railroad museum and a peanut museum are within a short walk of the brewery. The Suffolk Center for Cultural Arts is a short drive and features national touring acts and regional favorites. The Great Dismal Swamp’s northwestern border is a couple of miles away and many of Nansemond’s beers are named for places and events in local history. The brewery tasting room has an historic feel, and there is a smaller back room as well as an outdoor patio. The occasional trains on the nearby track blow their lonesome whistles as they chug past the Nansemond Brewing Station. Contrary to rumor there is no firm requirement that you chug your beer when this happens. lab at West Philadelphia’s University of the Sciences. Many of the beers pay homage to place-names associated with Suffolk and the nearby Dismal Swamp. While the specific beers on the twelve taps and in cans to take home may vary, these are examples of what we found on a recent visit. It’s Always Sunny in Suffolk, billed as a sour IPA with “Wildbrew Philly Sour Yeast” raspberries, and blueberries, was a tasty tart but balanced beer that made our hearts feel sunny. Swamp Rose is a sour ale brewed with blueberries and hibiscus flowers that looked as beautiful as it tasted. Birra Del Obici Italian Pilsner is a clean and quaffable tribute to the Suffolk-based Italian-born founder of Planter’s Peanuts and philanthropist, Amedeo Obici. Jericho Ditch Dunkel is an easy drinking German style brown lager. Traditionalists will want to try the Swamp Grass Double IPA and Pump Trolley Pale Ale, both commendable. We didn’t get to try Oh My Godwin Strawberry Lemonade Hard Seltzer with a touch of glitter, but who doesn’t love glitter? A wonderful New England style IPA called Firefly Lamp is as good as any we have had, with citrus, pineapple, and melon notes, lots of hops flavor, but relatively low bitterness. We were intrigued by the name. Apparently, the firefly lamp is a coveted item in a Japanese role playing game. However, the original firefly lamp according to local lore represents the spirit of an Indian maiden who disappeared into the Dismal Swamp the night before her wedding. Her grieving lover saw the flickering light and crafted a white birch bark canoe to find her; he never returned from the swamp either. Could their spirits still be out there? This legend was immortalized by Irish poet Thomas Moore: “But oft from the Indian hunter’s camp, The lover and maid so true Are seen at the hour of midnight damp To cross the Lake by a fire-fly lamp, And paddled their white canoe.” We can learn so much from beer! On the other hand, scientists explain the flickering lights as methane, or possibly fireflies. Maybe order a White Canoe Belgian Wit at Nansemond and now you have a conversation starter that may intrigue your seat-mate. Or drive them into the swamp, you never know. Another big hit of a beer may surprise you, it is Bee-Nut Brown Ale, co-branded with regional favorite Hubs Peanuts. The beer also includes honey sourced from small producers, including Bee Sweet Farm and St. George Brewing’s hives. Just about everyone we have turned this beer onto has enjoyed it while exclaiming “I didn’t think I’d like a peanut butter beer.” This popular beer is now a year-round offering at Nansemond, available on tap as well as in cans to take home. Other things we like about this brewery include friendly people, taster sizes are available by the glass, and there are several beers with 5.5% ABV or lower alcohol to choose from.

Exploring Twin Creeks By Jennifer Waldera
H
aving traveled to California for business frequently, Mandi and Andy Bishop developed a passion for craft beer. With little access to local craft beer in Roanoke at the time, the two, along with a pair of other couples, decided to learn about the brewing process to start their own brewery. “We set up a small scale brewery in one of the partner’s garage, including glycol chilled fermenters, and started developing our style and recipes,” Mandi said. Twin Creeks Brewery opened in November of 2016 in Vinton, Virginia. After three years of running their original downtown Vinton location, they found that a large number of customers preferred outdoor seating while enjoying craft beer and food from local restaurants or food trucks. It was then that they decided to take advantage of an opportunity to start their Brewpub in Explore Park which also features a full service restaurant. “Our breweries are unique in that we offer two very different venues, the original being a classic downtown brewery taproom while the brewpub encourages outdoor activities and a rustic feel located in a 200-year-old house,” Mandi explained. Twin Creeks favors brewing west coast IPAs, Hazy IPAs, American ales, sours, and German Kolsch. They also feature seasonal brews such as Octoberfest, porters, and house-made seltzers. IPAs, lagers, and fruited kettle sours are the personal favorites
of the owners. Additionally, other favorites are the Hot Blonde, a jalapeño infused blonde American ale, Across The Pond brown ale, and all dark beers. The brewery’s grain comes from traditional industry sources while specialty ingredients often come from local farmers and they grow their own jalapeños for the Hot Blonde. “Our company motto is good ingredients, good equipment, and good processes make great craft beer,” Mandi said. While the original location features various food trucks, the second location at Explore Park offers a menu of sandwiches, salads, burgers, shareable appetizers and a few child-friendly options as well. Informed by their conversations with other brewpub owners, the menu is simple and approachable. “In all the years we spent traveling to California and other states visiting breweries, we spoke with multiple brewpub owners and operators and they overwhelmingly recommended simple small menu fare. Our favorites include our wings, all made with house-made sauces, our massive specialty burgers, and large salads.” While the owners of Twin Creek have enjoyed building their brewery and expanding, they acknowledge that there have been challenges as well. “Understanding what the public wanted at first compared to what we want was a crucial part of our learning curve. We also had the challenge of opening a brewery while all owners

continued working full time jobs. Currently, we have had to restructure due to staffing challenges and all the changing restrictions during the pandemic,” said Mandi. Of their staff Mandi said, “Our current staff has remained dedicated during this pandemic and we want to thank them for that!” In addition to cold brews and food, the brewery also serves up plenty of events and activities including bingo, trivia, and live music They also have special music events such as CreekFest, Our Annual Anniversary Party, and Rocktoberfest. Twin Creeks is also active in the community. The brewery participates in Cystic Fibrosis Foundation fundraising, and they are mentors for The Advancement Foundation Gauntlet competition, Ronald McDonald House, and Susan G. Komen foundation. They also have a Senior Tree in the brewery each Christmas season. For the future, Twin Creeks would like to grow both locations in terms of footprint and equipment. “Unfortunately, we have to temper that with the uncertain retail environment we are forced to operate under due to the Coronavirus pandemic,” Mandi explained. Those looking to find Twin Creeks brews outside of the brewery or brewpub can find them in select spots around the area. Look for their Lake Life Lager, Springwater Kolsch, and All About that Amber in the Roanoke Valley, New River Valley, and Smith Mountain Lake areas. Additionally, restaurants in those areas frequently have Twin Creek’s brews on tap and they are consistently on tap at Dr. Pepper Park for all their events.

Brewhaha is Serious About Good Beer By Jeff Maisey

et’s say there’s an early, massive snowfall at Massanutten this season. If you were to snowboard down the winding Resort Drive, chances are you’d plow right into the perfect landing spot — BrewHaha Brewing Company. After a series of soft openings over the summer of 2021, Brewhaha Brewing Company will host its grand opening on October 16 in Elkton, Virginia. The brewery joins Cave Hill Farms Brewery and Elkton Brewing Company on the scenic Route 33 byway between Standardsville and Harrisonburg. Brewhaha Brewing Company’s trademarked tagline — “Because BAD beer is NO laughing matter” — has a funny backstory. Owner Pete Ballou operated a tour company — BrewHaha Comedy Tours — blending comedy and independent craft breweries. Because getting a DUI is also no laughing matter, the thematic tour bus offered friends and groups a safe avenue to explore quality beer. Ballou plans on BrewHaha being Elkton’s first comedy brewhouse, but for now his main focus is producing the best possible liquid literally one batch at a time. BrewHaha is itty-bitty. Not micro small, not even nano size. Brewer Aaron Argenbright cooks up the beer on a 1-barrel system, making it a pico-brewery. The cozy, freestanding building compliments Massanutten with its ski themed decor and tap handles. Like the resort, it is a destination. Up to 27 patrons can squeeze into the brewery and enjoy a pint on-site. Locals and weekenders heading up the mountain
often bring their empty glass jugs for a fill-up to-go. “Being the only brewery right across from the resort, a lot of the guests don’t want to travel far for beer,” said Ballou, “so we’re in a prime location. Producing beer on a small scale doesn’t allow BrewHaha to have so-called flagship beers, explained Ballou, though there are some recipes in frequent rotation. First, there’s Must Have IPA, with what is described as having “huge notes of pineapple and mango” and is somewhere between a traditional West Coast and New England IPA. “The reason we named it Must Have IPA is because it is a running joke amongst breweries that if you open a brewery you must have an IPA,” explained Ballou. “So that’s why I registered the name Must Have.” Most of the beer names either have something to do with a personal connection or something the staff finds funny. “There’s a new beer we named Richard Cranium Kolsch,” Ballou shared. “We’ve all worked for Richard Craniums and we’ve all been associated with them. Think of what a nickname for Richard is and another word for cranium. If somebody orders that beer the ha-ha way we give ‘em a discount.” One of BrewHaha’s most popular beers thus far has been Atypical Amber Ale, a mix using English ale yeast and American hops. A Good Start Blonde Ale? If you guessed it was the brewery’s first product you’d be correct, and it makes for good summertime drinking — a hit from the start. “It was a good start for the brewery,” Ballou said.

Lost Barrel is a Real Find By Michael T. Jarvis

enturies ago, a rich cousin of President George Washington named Levin Powell reportedly buried a barrel of gold in Middleburg, a town named for its location, halfway between Winchester and Mount Vernon, Virginia. No one has ever found the mystery barrel, or the gold, nor has anyone ever heard of this cockamamie story until it was cooked up recently while drinking at Lost Barrel Brewing just west of Middleburg on Highway 50. “There are many stories,” says Natalie Femia, the brewery’s marketing & events manager, social media maven and general bon vivant. “The name Lost Barrel Brewing is meant to represent the spirit of lost treasure, found! We started by designing a building that is beautiful and inviting. From there, we wanted to offer great beer and tasty food with a huge focus on excellent customer service. We worked hard on creating a fun and welcoming
atmosphere through events, music, decor and our offerings.” She is not exaggerating. Lost Barrel recently hosted the Greater DC Yogafest, they’ve offered flower arranging classes, trivia Thursday, a Sunday brunch with a DJ, and also offer a percentage of their Sunday profits to local charities. While the amenities at the facility are spacious and high end for a country brewery, the big draw is clearly the beer. Lost Barrel offers a wide variety of fantastic beers with some unusual flavors such as lemon cucumber or chocolate chipotle porter with a kick. “Our Farm Ale was awarded the best Pale Ale in all of Virginia this year,” Femia says with pride. “More favorites are our Hazy IPA and Light lager. We brew our own hard seltzers which is a unique find that our customers are enjoying. In addition, we release new beers throughout each month, making it really fun for customers to find

new beers every time they visit. We also serve wine and frozen wine drinks!” Guided tours are offered and include a chance to meet the general manager, brewer, and partner Patrick Steffens. If the name is familiar, it is because Steffens started Loudoun Brewing Company in Leesburg in 2015 before selling it in 2017. Steffens’ enthusiasm for beer and brewing is contagious and he loves to experiment. “I don’t know of anything that is off the table, but I did a lot of home brewing and I always will avoid mint because it is like you brush your teeth and go have a stout,” Steffens said. “I love to experiment. We have a 15 barrel system and it is great for doing what we need, which is four styles we know we want, that are regular. They sell well and people like them. Everything else is up for grabs. We have Oktoberfest and pumpkin beer and those are seasonal. We have a small batch system that does one keg at a time. We test beer in there.” The experience has been golden for those fortunate enough to visit this sprawling, two-story brewery with several outbuildings and a pleasing grass patio. Lost Barrel rents out many components of their facility, including the saloon, the studio and the loft. One of the more unorthodox moves that has raised eyebrows is renting fire pits by the hour, although they are not alone in this practice as Loudoun’s Harvest Gap Brewery also rents fire pits. “We offer plenty of spaces for reservations,” Femia says. “This
makes it a great mix of first come, first serve seating as well as reserved spaces. One of our offerings is the fire pits. We have three fire pits in the back of our building overlooking our beautiful property. Two are gas and one is wood. The gas fire pits also have umbrellas over them so you can create a shaded place. These are great all year round, during the day or night. They are lighted, so at night it gives the space a romantic and magical feeling. During the day, it creates an amazing gathering space. We thought fire pits were a great way to make our establishment feel more homey as well as give groups the opportunity to secure a gathering space in a seamless, quick way. You have your own server that is there to take orders, bring all your food and drink and maintain the fire. The fire pits are $50 per 90 minutes, you are welcome to reserve for however long your group would like. We have s’mores available for purchase.” Opening a brewery in Loudoun County has been amazing, according to Femia. “There is a huge support system of customers and other businesses that make us feel very welcome. We are happy and lucky to be a part of this community.” With a new-found success, the owners of Lost Barrel have not ruled out an expansion to a second location, Femia says. “Our current priority is making the best of our current location for our customers. There is always room for a quality product delivered with excellent customer service.”

How Does the Virginia Department of Agriculture (VDACS) Regulate Breweries? by Kevin N. Anderson, Regulatory Consultant Virginia food law mandates that the Virginia Department of Agriculture and Consumer Services (VDACS) conducts a food safety inspection before a brewery can open for business.Why, you ask? The simple answer is beer is considered food and food manufacturers are required to comply with VDACS guidelines. Shayne Clinton, a field supervisor, with the Virginia Department of Agriculture and Consumer Services, was gracious enough to answer a few interview questions that many breweries would be interested in.
Besides the manufacturing and consumption of beverages on-site, what kinds of food products can a brewery sell for on-site consumption under VDACS authority? Mr. Clinton: Currently, the following foods can be prepared and sold at breweries, when not licensed as a restaurant and excluding licensed food trucks:
When a new brewery starts operations in Virginia, what should they be aware of during their initial construction/build out? Mr. Clinton: The Virginia Department of Agriculture and Consumer Services’ Food Safety Program has a Manufactured Foods Establishment application that details necessary requirements for a foodrelated manufacturing business. If there are any questions or concerns during the application process, the brewery or their representative should contact the VDACS Food Safety Program at (804) 786-3520 or foodsafety@vdacs. virginia.gov. How does a brewery set up an initial inspection with VDACS? Mr. Clinton: The firm should submit a completed Manufactured Food Establishment application to the VDACS Office of Food Safety at foodsafety@vdacs. virginia.gov. Once the application has been reviewed and approved, the Food Safety Specialist for that particular area will contact the brewery to schedule an inspection.
and under inspection by the Virginia Department of Health are allowed. What are some of the main deficiencies found during brewery inspections and how are they best corrected? Mr. Clinton: A few of the typical violations observed are lack of hair or beard restraints, lack of proper employee hygiene, food processing equipment not being thoroughly cleaned and sanitized, eating and drinking in food preparation areas, the lack of employee food safety training records, gaps under and/or adjacent to doors leading to exterior areas, and the presence of certain pests. The violations are best corrected and avoided by complying with applicable portions of the Code of Federal Regulations, Part 117 (21 CFR 117). Is there any additional information that VDACS feels that Virginia breweries should know or be aware of?
• Packaged food items from approved sources. Items may include sandwiches, crackers and similar items that are served “as is” or require reheating only. • Ready to eat food items from approved sources that are unpackaged or have their packaging removed to allow for limited preparation and/or reheating for immediate service only. Food preparation should be limited to cutting, slicing, and sandwich assembly. • Food preparation and sales beyond what is detailed in the above bullets will require regulatory oversight by the Virginia Department of Health. Additionally, food trucks permitted
Mr. Clinton: Operating solely as a brewery means that the brewery would be exempt from subparts C and G of 21 CFR 117. However, if the brewery decides to manufacture items other than alcohol, the entirety of 21 CFR 117 would then apply. The alcohol industry is heavily regulated at both the state and federal levels. Our goal in publishing the Compliance Corner article is to make sure our industry knows what they might not know.
