Bouphamany “Toukta” Chounramany is a personable, sophisticated woman, who graduated from Melbourne’s Monash University in 2003, and is currently employed as a Human Resource Manager for Alliance International Medical Centre. Over the years, Toukta has developed a passion for cooking and fine dinning both in Laos and abroad. Toukta also has a gift for writing, which shined through in a recent review of a new Vientiane coffee shop. “Visit Laos” magazine wants to keep her light glowing for the benefit of all our readers, and invited her to keep contributing excellent reviews. Kaikeo Saiyasane a.k.a “Kai”, who is a talented young artist, currently working as a photojournalist for the Lao newspaper, “Economics and Society”. Kai graduated from Lao National University in Lao language and literature and also in Business and Management from Comcenter College. This enthusiastic photographer is also one of the team leader of Lang Korng: The Lao Photographers Society, based in the country’s capital. Now “Visit Laos “ magazine is staying tuned for a launch of “Somewhere in Laos” , a group photo exhibition, which will take place in May.

Patuxai That Luang A symbol of Laos’s nationhood and the country’s most sacred Buddhist monument, That Luang was built in the 16th century under the rule of King Setthathirat. A symbol of the main stupa appears on the country’s national seal. (Map: K-1)

Patuxai (literally Victory Gate or Gate of Triumph), formerly the Anousavary or Anousavari Monument, is situated in the centre of Vientiane, and was built between 1962 and 1968. (Map: H-2)

Wat Ho Phakeo Built in 1565 as a royal chapel and repository for the celebrated statue of the Emerald Buddha, which the Laotians had seized from Northern Thailand in 1551. The statue remained in the temple until 1778, when the Thais invaded and recaptured it, taking it to Bangkok. The temple was destroyed in 1828-1829 during the Thai sacking of Vientiane; rebuilt in 1936; and restored again in 1993. (Map: G-5)

Mekong Promenade & Night Market Located in the mekong riverfront right in the heart of Vientiane. Visitors can enjoy a pleasant walk the Promenade and a magnificent view of the sunset at twilight. Here, the local folks partake in many exercise activities. You can also find souvernirs, T-shirts, toys, paintings, coconut drinks and many more at the Night Market. Chao Anouvong Park, which is part of the Promenade and where one can sit and relax. Every year, the boat racing festival is also held here right after the end of Buddhist Lent. (Map: E-4)

That Dam Known as the ‘Black Stupa’, many locals believe this mythological structure was once inhabited by a seven-headed dragon (now dormant) that stood to protect the city from the threat of the Siamese. Another tale that does the rounds says that the gold that once graced the surface was taken when the Siamese army ransacked Vientiane back in 1828. (Map: G-4)

Wat Sisaket The only temple in Vientiane to survive the sacking of the city by the Siamese in 1828, Wat Sisaket is the oldest and considered by many to be the most interesting of the Laotian temples. (Map: G-4)

Buddha Park (Xieng Khuan) 24km south of Vientiane, Buddha Park is in a field near the Mekong River. The park, as its name would suggest, is littered with religious sculptures and was built in 1958 by the philosopher Bunleua Sulilat who famously combined Buddhist and Hindu philosophy, mythology and iconography. By bus バス Northern Bus Station: about 2km northwest of the centre, serves all points north of Vang Vieng, including China, and has some buses to Vietnam.The Southern Bus Station or Dong Dok Bus Station is 9km out of town and serves everywhere south. The Talat Sao Bus Station is where local buses depart for destinations within Vientiane Province and Thai-Lao International Bus station.

By plane 飛行機 Lao Airlines, 2 or 3 times a day, 40 minutes.

By bus バス The Northern Bus Station is the main departure point. Buses bound for Luang Prabang depart regularly throughout the day. The air-con buses are comfortable for the long journey while the VIP buses provide an extra space, a snack and a bottle of water. Normal bus takes 10-12 hours. Any bus bound for Luang Prabang can drop you off in Vang Vieng, though you pay the same ticket price as if you were going all the way. Another option is to book a mini-bus from a travel agency. It takes 2-4 hours less.

Pi Mai Lao or Pi Mai Song Kan, the Lao New Year (“Pi Mai Songkran” in Thailand) is Laos’ largest National festival, and takes place in mid-April, one of the country’s hottest months. Lao New Year is most likely rooted in 14thcentury rituals, during which the king observed a solemn procession of the Prabang, a sacred golden statute of Buddha. He would pour holy water on it to pay homage to the Lord Buddha, and pray for his protection, as well as good weather in the coming year. Despite the many beliefs as to why the Lao New Year is in April, when the mercury rises to 38°-40°C, Lao people cool down by splashing water on each other. Pi Mai Lao is also said to be an auspicious occasion as the rainy season is approaching, marking the beginning of the rice planting season. Officially, Pi Mai Lao is a three-day festival, which falls on 14-16 April this year. However, celebrations can last more than a week in cities, especially Luang Prabang, where the festival runs from 10-19 April. In Vientiane, authorities normally make an earlyApril announcement outlining the programme and venues for the Lao New Year celebrations. They also address the need to ensure public security and social order in keeping with Lao customs. To start the festival, the Nang Sangkhane beauty contest will be held at That Luang before the main procession on New Year’s Eve. That Luang’s esplanade will also hold a street fair for selling Lao goods produced in different regions of the country. Local businesses can reserve a booth at the fair. Meanwhile, Lao-ITECC will host another trade fair exhibiting Lao products for sale, alongside goods from China, Thailand, and Vietnam. The area from Vat Chan to That Khao village, Fa Ngum Road, and Setthathirath Road are often designated as the zones for New Year’s celebrations. The first day (14 April), “Sangkhane Luang”, is actually the last day of the old year. This is a day for cleaning homes, temples and public places. Temples are decorated with colourful flags and flowers. Buddha images are taken out of the Ordination Hall, cleansed with scented water, and placed on temporary altars within the temple compounds. Devotees come to pour water on the Buddha images, before collecting the scented drops falling from the images. They then pour this water on friends and relatives and splash it around their house as an act of cleansing and purification. The second day of the festival is called “Meu Nao”, a day that falls neither in the old year nor the New Year. In the Lao language, “nao” sounds like the word for “stink”, and it is believed that sleeping or staying still at home during this day will bring bad luck or illness to that person in the coming year. Today, some devotees bring sand to the temple grounds and build sand stupas, which are decorated with colourful banners, flags, and white powder. Others build sand stupas along river banks. Both locations and methods are designed to stop evil spirits from passing into the New Year. Alms-giving takes place early in the morning of the festival’s last day (April 16). This marks the start of the New Year, and is called “Sangkhane Kheun”. Most families organize a Baci ceremony to wish their family members and friends good health, happiness, and prosperity in the coming year. Others might perform the “Som Ma” rite in which young people and children ask the elderly and their parents for forgiveness for their shortcomings from the previous year, while giving the elders gifts. ピーマイラオ/ピーマイソンカン、つまりラオス正月 (タイでは“ ピーマイソンクラン”)は国の最大のお祭りであり、一年中で一 番暑い時期である4月の中旬に行われる。

ラオス正月はおよそ14世紀から始まった習慣であるとされ、 王は聖なる黄金のブッダ像・プラバンの荘厳な行進を見学さ れていた。王は仏陀に聖水を振りかけることで敬意を示し、御 加護を願い、来る1年の好天を祈ったという。 なぜラオス正月は気温38度~40度になる4月なのか、につい ては様々な言われがあるが、 ラオス人は水を掛け合う事でお 互いの暑さを和らげている、 という。また、雨季が近付いて田 植えの季節の始まりを知らせるお祝いだとも言われている。

今年のピーマイは、正式には4月14日~16日の3日間である が、実際は街では1週間以上祝われている。特にルアンパバー ンでは4月の10日~19日まで行われる。

ヴィエンチャンでは、 ラオス正月のお祭りのプログラムと場所 の概要が通常4月の初め頃に関係機関より発表される。 また、 ラオスの慣習の遵守、治安と社会秩序の保全を呼びかけてい る。 祭りの始めとして、大晦日に行われる行進に先立ちナンサン カン・ビューティーコンテストがタートルアンで開催される。 タ ートルアンの通りにはラオス全国で作られた商品を売る露店 が立ち並ぶ。 このフェアでは地元企業がブースを予約できる。

また、LAO-ITECCでもトレードフェアが行われ、中国、 タイ、ベ トナムの商品とともにラオスの商品も販売される。ワットチャ ンエリアからタートカオ村、 ファーグム通り、セタティラート通 りは、 よく正月祭りのゾーンとして指定される。 ラオス正月の真 髄を味わいに、是非どこか一か所でも訪れてほしい。 初日(14日)は“ソンカンルアン”といい、実際には古い年の最 後の日とされている。人々はこの日、家や寺院、公共の場所を 掃除する。寺院は色とりどりの旗や花で飾られ、仏像が本堂よ り運び出され、聖水で浄化されて境内の一時的に設けられた 祭壇の上に置かれる。参拝者は仏像に聖水をかけ、仏像から 滴り落ちる聖水を集め取る。それから浄化としてその水を友人 や親せき、家にもかける。 祭りの2日目は“ムーナオ”と呼ばれ古い年にも新しい年にも属 さない日である。 ラオス語で“ナオ”は“stink”と似ており、 この日 は1日中家にいたり寝ていたりすると、新年に悪運や病気をも たらすと信じられている。

この日は、ある信者は寺院の敷地に砂を運び、砂の塔を作り色 とりどりの旗や白い粉で飾り付けをする。河川敷で作る人もい る。両者とも、悪い魂が前年から新年に入りこむのを防ぐのが 目的とされる。

Khao Pun

カオプン

By Souphaksone Silaphet During the Lao New Year, most people go back to their hometowns to visit and celebrate with their family, relatives, and friends. Many households prepare plenty of food and drinks for friends and visitors. Among them, “khao pun” or Lao noodle soup is commonly eaten as part of the New Year’s celebrations. Khao pun is made of vermicelli rice noodles, and topped with various shredded vegetables, such as cabbage, bamboo shoots, banana flowers, green beans, morning glory, and mint leaves. The vermicelli noodles were introduced to Laos by Vietnamese merchants back in the 1800s, when they came to trade with the Lane Xang Kingdom. However, the style has been adapted over time to fit the Lao culture and taste. There are four types of khao pun using three broth bases: clear pork, dark beef, and coconut/ fish. The clear pork broth, or “khao pun num jiao”, is made by boiling pork bones and meat, and is usually accompanied with slices of the boiled pork meat. For the more adventurous foodies, who want the local taste, try this khao pun with organs like the intestines, liver, lungs, and heart. Next up is “khao pun num pa Luang Prabang”,

or dark beef broth. It is made by frying sugar until it has a dark caramel texture, and then pouring water on it along with some spices, such as ginger and garlic, to add to the sweet taste. Those doing the cooking use beef tendon, tenderloin, and shank meat, which they boil until tender and soft. Some Lao households substitute beef with pork. However, “khao pun num pa” in Vientiane is different from that in Luang Prabang, as it is a bowl of vermicelli in a rich coconut and fish broth. The broth of coconut milk and aromatic herbs filled with shredded fish coats the thin rice noodles while adding a mouthwatering fragrance. The fourth type is “khao pun nam pik”, which is made of coconut milk and fish, and commonly referred to as the “Laksa of Laos”, because of its coconut and chilli texture. This khao pun is made by boiling fish meat and bones, and then pouring in coconut milk along with some chilli paste to create that signature white and light orange colour. When you are in Laos, especially during Lao New Year, be sure to try the khao pun; it is bowl of soup you will never forget.

ラオス正月には、大多数の人が田舎へ帰郷し、家族・友人・ 親戚と正月を過ごす。多くの家庭では友人や客人のために たくさんの御馳走を用意する。その中でもラオスの汁麺“カ オプン”は正月祝いの料理としてよく食べられている。 カオプンは米から作られた麺に、キャベツや筍、バナナの 花、 ドジョウインゲン、空芯菜、 ミントの葉など色々な野菜を 千切りにしたものをのせて食べる。米麺は1800年代にベト ナムがランサン王国との貿易でラオスへ訪れた際にラオス へと伝わったものだが、現在では時を経てラオスの文化と テイストに合わせ、そのスタイルもラオス風にアレンジされ ている。 カオプンには大きく分けて3種類ある。1.豚肉のクリアスー プ、2.牛肉で出汁をとったスープ、そして3.ココナッツと 魚のスープ。1は“カオプンナムジャオ”と言い、豚の骨と肉 を煮込んで作ったもので、煮こんだ豚肉のスライスが入って いる事が多い。 よりローカルな味に挑戦したいという人には これに腸、肝臓、肺、心臓などの臓物を加えてみるのも良い。 次に牛肉スープの“カオプンナムパー ルアンパバーン”。 こ れは深いカラメル色になるまで炒めた砂糖を、生姜やにん にくなどのスパイスと一緒に入れた、甘めのスープだ。牛す じ、ヒレ肉、すね肉を柔らかくなるまで煮込んでスープに使 う。通常ラオスでは豚肉を牛肉の代わりに代用する家庭も 多い。 しかし、 ヴィエンチャンとルアンパバーンの“カオプン

Le Silapa French restaurant moved above I-Beam on Settha Thirat Road in December 2012, after serving its fine, affordable cuisine at a previous location since it opened in 1999. Le Silapa has always been viewed as an upscale French restaurant, in spite of its reasonable prices. The reason: rather than import its ingredients, Le Silapa’s chef carefully selects the best, fresh local products including herbs. Silapa means “art” in Laos, and you could certainly consider Le Silapa as a culinary art gallery. The minute you step up the stairs to Le Silapa, you feel the completely different ambience from I-Beam on the first floor. Le Silapa’s contemporary design combines white and grey décor, and is perfect for a business meal or a romantic dinner with that special someone. People might view Le Silapa simply as a French food restaurant, but “twisted French food” is closer to the mark, as they are not limited by tradition. For example, “Saumon mi-cuit” combines mediumcooked salmon served with bloody aspic and a touch of wasabi highlighted with fried river weed, and topped with a shot of vodka. It’s a very good mix. Visit Laos recommends a few Le Silapa dishes. Consider “Saumon mi-cuit” for a starter, followed by “Steak de morue charbonnière du Canada”: Canadian black cod fillet in red wine and shallot sauce, anchovy butter, and “confite” shallots. Last but not least, you must try “Fondant mi-cuit à la manière de Philippe”. If you are looking for a place to start off your night with few drinks followed by good dinner, I-Beam and Le Silapa are your answer. You can unwind with drinks during an I-Beam Happy Hour, and then finish the night with fine dining and a good bottle of wine. Both venues offer completely different atmospheres under one roof. ル・シラパは単にフランス料理レストランだと見なされるだ ろう。 しかし、ル・シラパは伝統に縛られないが故、 「少しひね ったフランス料理」 といったほうが近いかもしれない。例え ば、 「Saumon mi-cuit(サーモンのたたき)」はミディアムに 調理したサーモンにトマトジュースのゼリーと揚げ川海苔で アクセントをつけたわさびを添え、さらにショットグラス1杯 のウォッカをかける。 これがまた絶妙。 ここで Visit Laos がル・シラパのメニューをいくつかお勧 めしたい。“Saumon mi-cuit(サーモンのたたき)”を前菜 に、メインに赤ワイン&エシャロットソース、アンチョビ バターのカナダ黒タラのフィレステーキ“Steak de morue charbonnière du Canada”、エシャロットのコンフィ、最後に はずせないのが“Fondant mi-cuit à la manière de Philippe( フィリップ流フォンダン ミキュイ)”

Aria

Mixay Italian Culinary Art アリア:イタリアンの芸術

Just like most city centres, where can find accommodation and restaurants, Vientiane Capital’s Mixay area is where you’ll find fine dining establishments huddled together, and offering a variety of cuisines. Among them stands Aria Italian Culinary Arts, which is gaining a reputation for dazzling Italian fusion food, homemade pasta and gelato, as well as premium Italian wines. Chef-owner Gerardo, who has many years of experience working in 5-star hotels, always carefully selects his ingredients to ensure each customer’s dish is perfect. He imports most of his ingredients such as Italian wine and cheese, Canadian meat, and South Australia fish. You can actually feel this attention to detail in the menu. Selecting a meal, however, is not easy, but I’d like to recommend a couple of dishes. I list “Tartara di Salmone Rosso Selvatico” as my favourite, as the wild Alaskan sockeye salmon tartar with minced fresh garden vegetables, dill, extra-virgin olive oil, lime, and balsamic jus and capers really tapped into my taste buds.

The hustle and bustle is killing me,” I told Pietro. “Bernie, Vientiane is the most laidback place on the planet,” he responded. “What are you talking about?” “I’m talking about waterfalls, rapids, boats, basket weaving villages and a really carefree night.” I painted a picture of paradise that started 80 km from the capital on Route 13 South’s best-paved leg to Phou Khao Khouay National Protected Area’s (PKK) waterfalls. A pair of temples covered the canvas’s corner, signed by the provincial capital Pakxan. He liked it.

PKK Falls Pietro called me at 06:30 Saturday morning to back his barroom promise. “I’ll be there by 07:00. My howling dogs announced his arrival, and two music CDs later, we pulled into Ban Na village in PKK to visit the village’s Chief Guide Mr Bounthatnon. He has run the Elephant Observation Tower since its 2005 opening, when sizeable herds could be spotted, but numbers have dwindled, though overnight stays and treks to Tad Lung Waterfall and the 40-meter-high Tad Fa remain hot. We continued to Km 90 and Ban Hadkai. I had promised Pietro drive-to waterfalls. We followed a new road along the Nam Mang River to the Pha Xai Waterfall plunging 40 metres over a cliff. | VISIT LAOS MAGAZINE 56

Rather than trekking to the fall’s base, we drove another 800 metres to reach Tad Xai’s sevenstep cascade. Next up, we perused the Ban Hadkai Visitor Information Center’s flora-andfauna exhibition, library, and on-site rental camping gear, before cruising to Tad Leuk’s 6-metre-high falls with swimming spots. We dove in. Back on the road, we hit Ban Yang Kheua at Km 99 for a Lao lunch that included medicinal foliage that aided the liver, kidneys, bladder, and everything else. We toured the village, watched women weave baskets, and inspected the under-construction tourist lodge overlooking the Yong River and its trail along rapids to a boat back to the village. I had previously experienced the trek, but Pietro passed and purchased some crafts.

Vats that Wow By mid-afternoon, we moved on to two memorable temples. First came Vat Phabath, where locals discovered a 2.4x1.2-metre Buddha footprint in 1933 and built the temple with colourful murals around it. Travellers stop to make merit by adding gold leaf to the Phabath (Buddha footprint) or by setting money in it. We shrugged and placed in some kip. Across Route 13, we pulled into Vat Phonsane on the Mekong, where Buddha is believed to have taken meals. We were months too early for the temple’s famed Bang Fai Phayanak Festival and mysterious Mekong fireballs marking the end of Buddhist Lent in October. Still, we relaxed in a sala on the spacious temple grounds.

私は首都ヴィエンチャンから国道13号線を80km行ったと ころにあるプーカオクワイ国立自然保護地区(PKK)の滝の 絵を描いたことがあった。キャンバスの隅には寺院が二つ あり、ボリカムサイ県都パクサンのサインが入っていた。彼 もこの絵を気にいっていた。

ピエトロはバーでの約束をコンファームするため、土曜日 の朝6時半に電話をかけてきた。 「7時までにはそっちに着く よ。」犬の鳴き声が彼の到着を告げ、車の中でCDをふたま わり聞いたところでPKKにあるバンナー村に到着し、チーフ ガイドのブンタノンさんに会った。 彼はかなりの数のゾウが観測することができた2005年のオ ープンからゾウ観測塔を運営している。 ゾウの数は減少し ているが、 タートルンの滝と落差40mのタートファン滝まで のトレッキングと宿泊キャンプは今でも人気だという。

私たちはさらに90km進んでハッカイ村を訪れた。私はピエ トロに滝まで運転すると約束し、 崖から40m下に落ちるパーサイ滝までナムマン川に沿った 新しい道路を進んだ。

私たちは滝壺までは歩かず、さらに800m離れた7段になっ ているタートサイ滝を訪れた。その次にハッカイ村の観光 情報センターで動植物の展示や図書館、その場で借りられ るキャンプ道具について調べた後、落差6mのタートルーク 滝へボートで向かい、 スイミングスポットに飛び込んだ。

帰り道では99km地点のヤンクア村に立ち寄り、肝臓、腎臓、

膀胱、その他体に良いとされる薬用ハーブを使ったラオス 式昼食をとった。その村では女性がカゴを編んでいる様子 を見学し、現在建設中のヨン川を見下ろすツーリストロッジ や、ボートで村まで戻る急流下りのルートを視察した。私は 前にトレッキングしたことがあったが、ピエトロはトレッキ ングはせずにいくつかの工芸品を購入していた。

寺院巡り

昼下がりには2か所の寺を訪れた。最初に行ったのはワット パバーッ。地元の人によって1933年に2.4×1.2メートルの ブッダの足跡が発見された場所で、その周りに色彩豊かな 人が建てられた。 ここに立ち寄った旅行者はパバーッ (ブッ ダの足跡)に金箔を足したり、お賽銭を供えたりして功徳を 積む。私たちもいくらかのkipを置いてきた。

国道13号線を渡り、 ブッダが食事をしたと信じられている、 メコン川にあるワットポンサンに向かった。 この寺は10月 の出安居に行われるバーンファイパヤナーク祭りと、火の 玉がメコン川から現れる神秘的現象で有名で、私たちが 訪れたのはその時期にはだいぶ早かったが、それでも広 々とした境内にある東屋でリラックスした時間を過ごすこ とができた。

平穏な町パクサン

今では大勢の人々が、ナムサン川がメコン川と合流するパ クサンの町を訪れるようになった。私たちはメイン道路の 近くにある小さくて静かな部屋が数室あるBKゲストハウス に滞在し、ナムサン川を望むレストランで食事をしてから、 川を渡ってDiffers Discoへ移動した。そこには常連客が10 人ほどいた。

「充分くつろげたかしら?」 と私はピエトロに聞いた。 「もちろん。」
