Marielle Torrefranca Position at Viva: Editorial Intern On balanced living: Balanced living is all about plugging into each section of your life in comfortable and healthy ways. I find it’s a lot like a chemical formula, which is funny, since I failed chemistry. Living a well-balanced lifestyle is all about finding the fine line between being a dedicated workaholic, an all-around food enthusiast, an exercise nut and a professional Netflix surfer - too much of one thing in the formula can throw my lifestyle overboard, usually for the worse. When you are always on the go, it may be hard to start something new to achieve a balanced lifestyle, but the little things count. I find that a simple hour of yoga, or even kickboxing, every week can be totally empowering and can make dramatic changes in my attitude and health. Also, knowing when to switch off the email alerts for a few hours to spend time with the people I love is essential to my happiness and emotional health. In the end, balanced living means knowing my priorities, what’s important to me, and how to reach out to all of those areas.

1. Mix all ingredients, except egg and panko, in a mixer on medium speed. 2. Crack the egg into a separate bowl and lightly beat with a whisk. 3. Using your hands, form the croquette mixture into small patties, about 2 inches in size (5 cm). Dip each patty into the egg mixture, and then bread with the panko.

The debate over the merits of a gluten-free diet isn’t limited to celebrities and socalled glutenistas. Many of us may know a friend or a family member who has adopted a gluten-free diet. However, what are we to make of this new phenomenon? Are there truly health risks associated with wheat or gluten intake? If so, what are they? First of all, let’s define gluten. Gluten is a protein that is present in grains, most notably wheat, as well as other related grains such as barley, rye, spelt, kamut, couscous and oatmeal. In baking, gluten inside the flour functions as the “glue” that holds the bread, muffin, etc. together (Tosi 2011). Within the medical community, gluten is best known for its relation to celiac disease. Celiac disease is a well-known disease of the small intestine that is caused by exposure to gluten. It occurs in about one per cent of people, although it occurs more frequently among people with other autoimmune diseases such as Type 1 diabetes (Gujral 2012). In affected individuals, exposure to even minute amounts of gluten triggers the body’s own immune system to attack the tissues of the intestine, causing atrophy, nutrient deficiency and often severe digestive symptoms. Celiac disease is diagnosed either through blood testing looking for the presence of a specific antibody or through an intestinal biopsy that is taken during a “scope” exam. Celiac disease can have many complications; however, the bottom line is that it can be controlled only through strict adherence to a gluten-free diet. It used to be considered that only individuals with celiac disease were affected by gluten consumption. However, there is now a growing field of research investigating a condition called nonceliac gluten enteropathy or sensitivity (NCGS). Simply put, this term means gluten-associated disease of the intestines that does not meet the classic criteria for celiac; it is nonetheless quite real and the intestinal damage is visible upon endoscopic (“scope”) examination. This discovery is groundbreaking within medical science. Although it usually takes many years for new research to result in changes in healthcare, the emergence of this field of study is important because it confirms the subjective experiences of increasing numbers of people: dramatic improvement and even resolution of seemingly unrelated chronic illnesses upon elimination of gluten. At present, there is no diagnostic test for NCGS, and so it is currently defined as “a condition associated with … symptoms in response to ingestion of foods containing wheat, rye, and barley, and the resolution of symptoms on removal of those foods from diet in individuals in whom CD [celiac disease] and wheat allergy

have been ruled out” (Lundin 2012). The range of symptoms reported is quite broad, and includes digestive symptoms and abdominal pain, nausea, headache, tingling or numbness in hands and feet, fatigue, musculoskeletal pain, skin rashes, eczema, as well as more rare but severe neuropsychiatric conditions such as schizophrenia or ataxia (Lundin 2012). The reason for the apparent sudden increase in the incidence of NCGS, given that wheat has been a dietary staple historically, is unknown. It has been suggested that selective breeding practices of modern wheat has resulted in greater gluten content, and therefore greater exposure (Kasarda 2013). Others have suggested that the increased frequency of gluten in our diet, outright or covert within other foods as “filler,” has led to increased cumulative exposure to this immune-sensitizing molecule. It should also be noted that there has been an increase in allergies and immune sensitization (eczema, asthma, and allergy) in general over recent decades, attesting to underlying immune disruptions, which are likely due to a host of lifestyle and environmental factors. These may increase our predisposition to having an immune response to gluten as well. While there is no definitive answer at this time, it seems likely that a combination of these factors may be at work. It is important to note that despite the increasing prevalence of gluten sensitivity, not everyone is affected. Those who observe first hand the benefits of gluten elimination often make the argument that gluten is likely “bad” for everyone, and that everyone should eliminate gluten from their diet. It is important to recognize that gluten sensitivity does not affect everyone, and that there are benefits to maintaining tolerance to one’s environment. Tolerance simply means that the immune system does not react to something as foreign; it does not mount an immune attack on it. In those without sensitivity, retaining a moderate level of gluten exposure is important for the ongoing maintenance of immune tolerance.

Is Your Fish Oil Ocean Wise Recommended? Overfishing is placing an incredible strain on the world’s resources and the health of our oceans. It’s one of our main global sustainability issues. Fish oils may be sourced from farmed fish, including farmed salmon. Some aquaculture operations can negatively affect wild habitats depending on how and

where the fish are being raised. Intensive open-ocean salmon farms, for example, can lead to water pollution, disease outbreaks, and destruction of coastal habitats from heavy concentrations of fish waste and feed. In addition, farmed fish are often fed forage fish—adding to ocean species depletion. Is it from krill—not a fish? An emerging source for oil supplements is krill, which is a small crustacean that is regular food for blue whales, seals, penguins, and other large marine animals. Krill is being fished commercially for supplements and as feed for farmed fish, and krill harvests are increasing every year. Unfortunately, we don’t know yet how increasing krill harvests may affect the long-term health of the oceans. Like forage fish, krill are vital food for many species. It could turn out that depleting krill would affect the larger animals that depend on them. Because of such concerns, krill fishing has been banned from parts of the Pacific Coast to protect the ecosystems there.

Greek play, but they are actually bioflavonoids found naturally in citrus fruits. Starting in the late 1980s, they’ve been studied in numerous clinical trials for their benefits in strengthening and protecting weak blood vessels. Weak, leaky blood vessels often spell pain, discomfort, swelling, and inflammation in the form of varicose veins and hemorrhoids. Varicose veins affect approximately 25% of women and 10% of men in Western countries, while hemorrhoids show up in about 4.4% of the general population at some point in life. Starting in the warm, sunny climates of Spain and the south of France, diosmin and hesperidin are extracted from citrus fruits, micronized into a smaller, more absorbable size, and then encapsulated with 450 mg of diosmin and 50mg of hesperidin per capsule. These proportions are the standard amounts per capsule as they were discovered to be the optimal ratio in the clinical studies. Dr. Oz also recommends this exact formulation. Most of the studies done on diosmin and hesperidin lasted between 1 and 12 months, but the use of these ingredients to protect the vascular system dates all the way back to 1971 in France.

Every summer, 20 interns from Canada, the U.S. and other countries set up camp at several Maine puffin colonies to deter gulls, eagles and owls, and other predators from preying on the puffins. Plus, they work to remove garbage and invasive weeds to make the habitat more welcoming to the nesting puffins. As part of their biology studies, the interns observe how the puffins pair up, who they mate with, and even who “divorces” their mate! The birds are wary of humans but also somewhat accepting when the humans stay in their “blinds” – cloth structures with small holes through which the students can watch the birds. During the summer, Web cams are set up so that anyone can go to www.projectpuffin.org and watch puffins - exactly like you’re right there with them! Last summer, five new streaming-video cameras were installed to watch puffins and other seabirds, increasing your entertainment possibilities. Another way your donation can help is by supporting Project Puffin’s strong community outreach component. The area has become a magnet for eco-tourists from all over North America. There is a visitor centre located in Rockland, Maine; a school outreach program, a boat for puffin tours, and a resident camp for adults, teens and families on nearby Hog Island. Donations help students protect puffins Your donations go into a fund that supports student internships. About 20 biology students in Seabird Conservation Biology from Canada, the U.S and other countries such as Belize, Mexico and Haiti work at seven field stations in Maine that operate in the summer, studying 42,000 nesting seabirds. The funding enables

the interns to spend their time studying the habitats of the islands and the many birds that nest there, as part of their biology course. Research that’s done on the Atlantic Puffins can also be used to study other species of puffins, such as the two species of puffin that live on the west coast of North America: the Horned Puffin and the Tufted Puffin. Your donations go a long way. Dr. Kress points out that the techniques that have been used for Project Puffin are very useful for other, similar seabird projects around the world. Two of the interns who took the program at Eastern Egg Rock are now directing a project off the Baja coast of Mexico. The Baja project involves removing all mammals from some small islands, and restoring indigenous bird populations by using decoys and sound recordings. Other applications of Project Puffin include relocating birds off volcanoes about to erupt, and discouraging fish-eating seabirds from habitat where they are eating too many salmon in a commercial fishery area, Dr. Kress says. Canadian puffins help repopulate U.S. colony Project Puffin was launched in 1973 by Dr. Stephen Kress, in association with the National Audubon Society. Here’s how it all happened: “In 1967 while I was in St. Andrews, New Brunswick, while teaching at Sunbury Shores Arts and Nature Centre, I was invited to visit nearby Machias Seal Island. Here, I decided to do a little bird watching from a lighthouse late at night,” Dr. Kress recalls. “I observed a large puffin colony. I became

His home base is the Cornell University lab of Ornithology, where he teaches a popular course in ornithology, the study of birds. From Ohio State University, he has bachelor degrees in zoology, a Master’s degree in biology and a PhD in environmental science from Cornell.

Dr. Kress began to study and research the situation, and came up with a brilliant idea: to bring some puffins from a thriving colony of 160,000 nesting pairs in Newfoundland to Eastern Egg Rock in Maine. So, young puffins of 10-14 days old were transported south to their new home. The experiment proved successful, and the young puffins, fed by biologists who tucked vitamins inside the mouth of the fish fed to the chicks, reached “fledging” age - which is when young birds leave the nest. Altogether, between 1973 and 1986, 954 young puffins were moved from Newfoundland to Eastern Egg where excessive hunting for food and feathers eliminated a thriving colony by 1885. A total of 914 of those successfully fledged. What made the biologists happy is that in 1977, the first transplanted puffins returned to Maine after spending two years at sea. The real proof of success eluded Dr. Kress for eight years as the first puffin to nest at Egg Rock was not sighted until 1981. Since then, the colony has grown to more than 120 pairs. “This had never been done before,” says Dr. Kress. “With time, most of the puffins that survived came back to Maine. They re-colonized well, and to this day, two of the oldest original Newfoundland chicks are still alive and thriving well on the coast of Maine. They were 35 years old in 2012.”

“I hope this project will give Canadians a greater awareness of seabirds,” Dr. Kress says. “It’s an opportunity for interns and donors to learn about seabird conservation and the health of the ocean. With climate change in the news, people don’t know what to do to make a difference, so Project Puffin helps them become a part of the story. It’s a great way to get involved with seabird conservation. Keeps it real... and spectacular! Well before her iconic role as quirky Susan Mayer in Desperate Housewives, Teri Hatcher uttered a memorable line during a guest appearance on Seinfeld in 1993. In one quip, she captured the imagination of millions and dispelled any lingering doubt about having breast implants. She told Jerry and Elaine: “They’re real…and they’re spectacular.” Being real has been a way of life throughout Hatcher’s career. “There is not an ironclad moment or an epiphany where I say, okay, I’ve figured life out,” says Hatcher. Taking a break from wardrobe changes during Viva’s photo shoot, her well-toned legs crossed and a black sweater revealing what made her a consistent contender amongst the “Sexiest Women” list, Hatcher is having fun talking about turning 48, her girlfriends, and donning a chef ’s hat. The Palo Alto, California native has made a name for herself in Hollywood via her varied roles: smart and savvy Lois Lane on Lois & Clark: The New Adventures of Superman, quirky Susan Mayer on Desperate Housewives, and sexy Bond girl in Tomorrow Never Dies. I will never say I can’t wait till this day is over, no matter how bad it might be.” The former San Francisco 49ers cheerleader is as famous for her looks as she is for her roles. Now taking a break from Hollywood, the single mom to teen daughter Emerson still knows how to keep things in perspective – inside and outside the house. Hatcher and her daughter love to watch What Not To Wear together. “You almost want to cry when you see these women go through emotional pain only to blossom at the end of the show.” Hatcher is also ensconced at a local Cordon Bleu culinary school where she puts on her white chef ’s outfit, sans makeup or without anything that would reveal her status in Hollywood, but she admits, there were some very dark days in her life, dating back to her childhood when an uncle sexually abused her. More recently, she sustained a few broken ribs from a fall on the set of Desperate Housewives and a painful diagnosis of frozen shoulder. Isn’t that the most ridiculous name for a disease? For a few months, I noticed I couldn’t put my arm behind me to put on a jacket and thought I lifted something wrong,” recalls Hatcher on the beginning of her immune disease. “Then one

day we were rehearsing a scene and Marcia (Cross) dropped her glasses. My instinct was to pick them up; I reached with my left arm and you would have thought someone drove a spike through my shoulder. I dropped to the floor crying.” She is now on the mend after 18 months of painful recuperation that included physical therapy, reflexology and even surgery. Though she lives a very active life

However, she was recently compelled to read the book Young Next Year by Chris Crowley and Henry S. Lodge. The authors draw on the latest science of aging to help people 50 and over feel younger as they get older. “I can’t say I’m perfect and do everything it says to do, but I try. The idea of shifting your mind that you still have a whole lifetime in front of you. At 40, you’re only halfway there. We get to 45 and there’s a bit of enticement to feel like you’re done. No you’re not! You’re starting anew so you have to keep your mind and body physically prepared. Okay, you’re no longer young or the prettiest in the

food,” says the actress between takes. Hatcher stocks her kitchen with unprocessed foods and whole fresh foods, along with raw chia seeds, also known as salvia hispanica. “I eat them every day and even sprinkle them on yogurt or put in my smoothies,” she explains. What’s her guilty pleasure these days? She smiles mischievously at the question as her face lights up. “Well, there are these organic dark chocolate peanut butter cups that are special treats. And I love organic dark chocolate with salt and caramel.” As beautiful as Hatcher is on the outside, it’s the internal care she strives to give herself that reinforces her overall well-being, though she admits balancing out the emotional, physical and spiritual sides of life is a constant challenge. “Besides being a good mom as my greatest accomplishment,” she says, “I’ve been a good part of the community of people I touch,” alluding to her decision in 2006 to reveal to Vanity Fair that she had

been molested by a family member as a young child. “Through my survival of sexual abuse, other survivors have reached out to me and said how my strength was helpful for their own strength.” Hatcher is also involved with the Juvenile Arthritis Association, recently putting together a celebrity garage sale with proceeds benefiting this organization. “And through my career, there have been iconic moments where I’ve made people happy and entertained.” To ensure her own blissful days, Hatcher says you should“recognize it could be your last. You have to have the gratitude of being alive. The idea that you have a life, so in a way, you’re obligated to try and enjoy it.” A year after Desperate Housewives aired its last episode following an eight-year run, Hatcher’s life is no longer regimented by her hectic production schedule. She uses her newfound freedom to spend more time with the people closest to her. “When I cook, I always make it big affairs for between 20 and

30 people. And I mean there’s an appetizer, many side dishes, multiple meats and probably six different desserts. Plus, I do special vegan dishes for my vegan friends. It’s my way of showing love. I think cooking is one of the truest ways I can show love to people who come to my house. It’s hands-on work for sure, and I think it’s an old-fashioned idea to me of this delayed gratification. I usually start prepping days before so there’s a lot of thought and effort. I once had a chef friend tell me “don’t ever cook when you’re angry because the tension goes into your food.” And I want my meals to be wonderful and comforting.” Although she’s still learning how to craft magnificent dishes at the highest level of culinary and hospitality, Hatcher says “I encourage everyone to try and learn something new. It’s fun and it makes you feel alive.” V

One of them, Arthur Newman, is generating a lot of buzz in the lead up to the Toronto International Film Festival. Despite having a vibrant career, acting wasn’t her first choice. She classically trained at Canada’s Royal Academy of Dance, but an ankle injury steered her career in a different direction. “I felt I was going to segue into the storytelling side of things as opposed to the more physical dance side then. I had lost flexibility and the rigour that I needed to dance at the level I wanted to,” she explained. When the filming of her television show wraps up, she hopes to return to her Pilates regimen. “I keep telling my body soon, soon you’ll be able to exercise. I’m grateful though for all the years of dedication before I had my son that sort of gives me a leg to stand on now. But I say my jeans are like a bra – they hold everything in,” she laughs. “Seriously I miss Pilates for the peace of mind and the breathing…the connection less the aesthetic.”

Actress Kristin Lehman returns to the serenity of the Rockies By Bonnie Siegler Born and raised in Vancouver, Kristin Lehman has

returned to her roots after a stint in Los Angeles to pursue her acting career. With roles that have taken her to Toronto, Los Angeles and back to Vancouver in recent years, Lehman says she made a conscious decision to return home when she became pregnant with Sam, who’s now four-and-a-half years old. “Canada informed me and my life for so long, that I wanted to have Sam and raise him here, live life in Canada with my husband and son.” Known to audiences in Canada and the United States, Lehman was critically acclaimed for her role in AMC’s murder mystery The Killing. She now stars as single-mom, detective Angela Flynn on CTV’s Motive, which debuted right after the Super Bowl last February. This summer, the police drama will air on ABC in the

The former vegan revels in the fact that she has a strong working knowledge of how to eat healthy. “I was vegan when it wasn’t mainstream; when it was 70s brown rice, which is lovely but I didn’t want to give up my love of fine food. So I started altering the way I cook without sacrificing taste. I have a good working knowledge of nutrition.” With limited dairy and sugar, avoidance of GMO influenced foods, and little soy products, Lehman eats a good deal of protein, vegetables and healthy fats. “When I was much younger, I suffered from stomach issues which confounded me until I found out I was allergic to dairy. In fact, I found an old kindergarten admissions application my mom filled out which clearly stated that allergy. So I asked her why she was giving me big glasses of milk and she said at the time she wanted the best for me and was told by various people that your child has to have milk.” Nowadays most actors in their prime stick to a fairly strict diet. In that respect, Lehman is no different than the rest of her peers who trade their health and good looks for a paycheque, but sometimes temptation is too strong to ignore. “But there’s dark chocolate around too,” she says. Does this help balance out her healthy eating and cravings? “You know, our common idea of life’s balance is either everything is equal – energy, attention you give your relationships, attention you give your job, the attention you give yourself. I find as someone who is highly capable and has high standards for herself, that there is never a time I’m able to do all of that. But I know what I hope to enact in the world and where my values are. I’ve cultivated enough awareness in my life to see when I’m not balanced so I make a mental note and put my energy in that direction in some way. I think balanced living is truly about being able to live in a very realistic way with a lot of forgiveness.” VM
