I grew up a few miles outside a tiny farm town, not a neighbour within sight of our rural property. There’s a wonderful sensory leveling that occurs when surrounded by the very subtle. Without the megaphone of the city, whispers are robust, soft fragrances fill the air and the shift in hue from the green grass to the leaves seems impossibly complex. This early appreciation for quiet change has developed into an immense love of spring, and I think it makes me a better designer. I live in the city now, and have for more than half of my life. Most of the year is a buzz of manufactured experiences that leave little chance to notice nature—or to even hear our own thoughts. For a brief time between the grey silence of winter and the rush of summer activity, I get to reconnect with the underappreciated quiet. The sound of chirping birds is a new song in our morning routine. The trees, still without new leaves, seem different somehow. Upon closer look, they are covered with fresh buds, waiting to make their debut. Everything is new, more vibrant and full of the promise that warmth and beauty are imminent. In this issue, there is a terrific story on allergies, a hot topic this time of year. My rural childhood had me chewing on clover and frolicking in wildflowers. As luck would have it, recent studies link early exposure to known allergens to a resistance later in life. One of my favourite books, The Sweetness of a Simple Life by Diana Beresford-Kroeger, offers tips for healthier, happier and kinder living—a bible of sorts for jumping into spring and nature sure-footed. It’s an exciting time we live in, having the benefit of modern technology and medicine while the collective academics are looking more at traditional approaches, our diets and the undeniable links between the diseases of this era still without definitive cures. I’m obsessed with physical health, for sure, but I became a designer partly because I also appreciate the effect our physical environments have on our lives, both practically and emotionally. I share a fun article in this issue on coastal design and getting in the mood for spring on page 74. This style is all about a connection with the outdoors, throwing open the windows and kicking off the winter quilts.

Vanessa Williams I think balanced living is never 100 per cent: it comes in waves—sometimes everything is completely balanced and zen and then, other times, it’s not. So your mindset has to be knowing that life is not always going to be balanced and that you’re not always going to have the equal amounts of rest and play, and work. I think physically, you have to have the mindset to stay as healthy and as mindfully balanced as you possibly can so that you’re healthy enough to meet any obstacle or stress. DREAMING OF MEMORIES Research from the University of California, Riverside suggests that sleep plays an important role in forming long-term memories. Although human and animal brains are mainly decoupled from sensory input during sleep, the brain remains highly active. Researchers believe that the electrical activity observed in models during sleep is a mechanistic explanation for the consolidation of specific memories during deep sleep, also known as slow-wave sleep. Input from the hippocampus activates selective memories during deep sleep and causes a memory replay, transferring the memory information to the cortex.

Consuming about a ¾ cup of beans, peas, chickpeas, or lentils each day led to a weight loss of just over half a pound in clinical trial subjects. These foods, known as pulses, help people feel fuller than they would on a controlled diet.
SALMON MAY PROTECT YOUR BABY FROM ASTHMA Pregnant women who eat salmon may have children who are less likely to develop asthma, new research suggests. According to a Southampton University study, children whose mothers consumed oily fish while carrying them, were up to five times less likely to have been diagnosed with asthma by the age of three.
EAT YOUR BLUES In a series of studies conducted on animal models, research shows evidence that eating blueberries may alleviate some of the problems associated with post-traumatic stress disorder (PTSD). PTSD comes with a range of life-altering issues, such as depression, substance abuse and an increased risk of suicide. While a clinical trial is needed to be certain about the efficacy of blueberries in treating PTSD, researchers say it seems safe to say that eating blueberries can’t hurt—especially taking into account their other numerous health benefits.

H E ALTH NEWS SUGAR KILLS A recent study has found that fructose changes genes in the brain. These changes are linked to a range of diseases, including cardiovascular disease and attention deficit hyperactivity disorder (ADHD). Fructose is found in a variety of food, including most baby foods. DHA, an omega-3 fatty acid, seems to reverse the damages that fructose produces. While DHA occurs naturally in brain cells, it is not a large enough quantity to help fight diseases. In food, DHA is mainly found in wild salmon, walnuts, and flaxseed, among others. Additional research still needs to be done to determine DHA’s ability to reverse damage to the human brain.
EARLY TO BED AND EARLY TO RISE Night owls beware: researchers from the University of Delaware found that going to bed earlier and waking up earlier aligns much better with cardiovascular health. Links have already been made between poor sleep quality and a myriad of health problems, such as obesity, but this study shows that getting a good night’s sleep at optimal times will make a greater difference. It might also reduce other harmful behaviours, such as smoking and poor dietary choices.
MOM DOESN’T ALWAYS KNOW BEST Mothers still go by the common saying, “A chubby baby is a healthy baby,” a new study finds. Many mothers could accurately estimate their child’s weight, but more than half of those surveyed perceived their overweight child as having a healthy weight. Mothers who were concerned with their own weight were found to be more concerned for their child becoming overweight in the future. Researchers believe that nurses can aid in brief health screenings to emphasize the importance of a healthy diet.
EYE FOR A BANANA Important pigments for eye health, carotenoids, are found at various levels in different banana varieties. Researchers are now trying to understand how exactly bananas make and store these pigments. They are hopeful that these findings will help in the development of banana varieties with enhanced health benefits.

CANADIAN PHARMACISTS VS. MEDICAL CANNABIS INDUSTRY
R
ecently, the Canadian Pharmacists Association (CPhA) has called for pharmacists to be more involved in the dispensing of medical marijuana. The association believes this would help “identify drug interactions, alternative therapies, contraindications and potential addictive behaviour, and provide the opportunity for patient counseling on appropriate use.” The announcement was an opportunity to update the association’s position on the dispensation of medical marijuana by not only providing patient safety and support through pharmacist involvement, but to take the lead role as a primary distributor. The CPhA’s statements were supported with data provided by Abacus Data and KPMG reports. In its response to the statement, the Canadian Medical Cannabis Industry Association’s (CMCIA) chair Neil Closner said, “Pharmacy may be a valuable additional option for patients in the future, but as a complement, not as a replacement to the existing, successful direct access system.” Closner believes that distribution of medical cannabis exclusively through pharmacies “would reduce access and product choice, and raise costs to patients, and could also increase the risk of diversion.” The CPhA’s announcement also prompted responses from patient advocacy groups and the current licensed producers who had concerns about patient access to the assorted varieties of medical cannabis for particular health needs, and for those patients licensed for self-production. The CMCIA further stated they “will be reaching out to the CPhA to begin a dialogue on how pharmacists and pharmacy can work with licensed producers of medical cannabis, physicians, patients and other stakeholders to expand patients’ access to regulated, affordable products.”

f you’re searching for ways to support your immune system naturally, then chaga might be for you. Chaga mushrooms grow on birch trees (aged 40 years or more) in Canada, Norway, Europe, the United States and northern parts of Asia. Harvested from the wild and available in health stores across North America in various forms (you’ll find teas, dried whole chaga and supplements, among others), chaga is a potent immune enhancing fungus that has been popular in Russia and several parts of Europe. There is a fair amount of science that supports its numerous health benefits. In its natural state, chaga is actually dark and hard, resembling decaying wood or even charcoal, so it looks very little like mushrooms we are used to seeing and consuming.

Scientists from the Vector Research Institute in southwestern Siberia have also been studying strains that could prove effective in fighting HIV and other diseases. Memorial Sloan Kettering Cancer Center states, “Clinical trials are needed to confirm chaga’s safety and effectiveness for these uses.” They also warn, “Chaga is high in oxalates, which can reduce nutrient absorption, contribute to kidney stones and be harmful in high doses, and it may interfere with blood thinners and diabetic medications.”
WHAT ARE THE HEALTH BENEFITS? Researchers at New York’s Memorial Sloan Kettering Cancer Center keep a database of the most current studies of chaga and they say the research certainly holds promise. Often referred to as an anti-cancer agent, chaga is rich in anti-inflammatory phenols and natural antioxidants. It contains betulin and betulinic acid—compounds shown to demonstrate anti-tumor effects as well as lanostanoids that also appear to play significant anti-cancer roles. Beyond anti-cancer effects, some studies have shown that betulin can help stimulate the immune system, lower blood

ow eco-friendly is your home? Is it well-insulated? Do you turn off the lights when you don't need to use them? Are your appliances energy-efficient? If so, kudos to you for being an environmentally-conscious citizen of our planet and creating a healthy environment for your family. However, what about the inner ecology of your home? How is your air quality for example? Are the materials in your home and in your furniture healthy for you? Recently, homeowners are paying more attention to this question. Government agencies, such as Health Canada and the Environmental Protection Agency in the United States, have raised concerns regarding the impact of indoor air quality on health. Reducing VOC gases and eliminating harmful cleaning products are two great ways to make some simple positive changes. REDUCE VOC GASES Reducing Volatile Organic Compound (VOC) exposure is a great place to start. VOCs, such as formaldehyde, styrene, benzene, toluene, xylene and chlorinated hydrocarbons, can negatively impact your air quality. VOCs are gases that are emitted by a number of indoor sources.

BY USING GREENER, LESS TOXIC MATERIALS IN YOUR HOME, YOU’LL BE REDUCING THE LEVEL OF TOXIC SUBSTANCES YOU AND YOUR FAMILY ARE EXPOSED TO.
VOC gases can come from paints, finishes, sealers, stains, cleaners, new furniture, carpeting, plastics, curtains, cigarettes, cosmetics, car exhaust, and electronic equipment. Essentially, VOC gases are low-level toxins. Some people do not eliminate them efficiently and suffer from health conditions related to acute or chronic exposures. Infants and children may be at increased risk of negative health effects from exposure due to a lower body weight. Pregnant women or those considering conceiving may want to reduce their exposure to VOCs. A very common indoor VOC is formaldehyde. It is a naturally occurring substance, but it can cause health problems. According to Health Canada's webpage entitled Residential Indoor Air Quality Guideline: Formaldehyde, “Formaldehyde is an irritant, and exposure to high concentrations of formaldehyde can cause burning sensations in the eyes, nose and throat. Long-term exposure to moderate formaldehyde concentrations—at levels lower than those causing irritation—may also be linked to respiratory symptoms and allergic sensitivity, especially in children.” When renovating your home, if you are painting or adding new carpeting to a room, use low or zero-VOC materials when possible. Otherwise, avoid being in that space until the odour has subsided. Some VOCs can emit chemicals for weeks or longer, so the best approach is to avoid using high-VOC products whenever possible. Eartheasy.com provides a list of low-VOC paints available on the market. When buying new furniture, consider the VOC level. Some companies now avoid using high-VOC materials in their products. A solid online resource that can help you understand the differences between various VOC-containing materials is the Healthy House Institute (www.healthyhouseinstitute.com). LIMIT VOC EXPOSURE Health Canada has some suggestions that can help you limit your exposure to VOCs. Don't idle cars or other gas powered equipment in attached garages or near doors or windows. Engine exhaust contains a number of toxic chemicals, including formaldehyde. In order to keep emissions low from pressed wood furniture or cabinets, purchase items with a plastic laminate or coating on all

sides, or seal them yourself when you get them home. Ensure there is plenty of ventilation during major painting or varnishing projects, or when installing wall-to-wall carpets using glues or adhesives. Allow products (furniture, new carpets or recently treated furniture) that contain formaldehyde to “air out” before bringing them into your home. Another option is to buy solid wood furniture, or opt for formaldehyde-free plywood furniture. Formaldehyde concentrations are higher indoors than they are outdoors, so you can significantly decrease its indoor levels by letting in dry, fresh air. High temperatures and high humidity increase formaldehyde emissions so adjust temperature and humidity when possible. Don’t allow anyone to smoke inside the home. Ensure that fireplaces and wood-stoves are in proper working condition to prevent smoke from polluting your living environment. Keep your chimney clean and clear of obstructions. ELIMINATE HARMFUL CLEANING PRODUCTS Cleaning products and air fresheners are also sources of VOCs. These products can trigger asthma symptoms. In some cases, people feel nausea or get headaches from exposure to chemicals and perfumes that are present in these products. Choose unscented cleaning products whenever possible. Essential oils may be well-tolerated by some, but not all people. For a great guide to finding cleaning products with low VOCs and less-harmful ingredients, visit the Environmental Working Group (EWG.org) and look at their Guide to Healthy Cleaning. There are lots of great resources on this site and their rating system is explained and referenced. THINK GREEN It can initially be a bit overwhelming when we are trying to make positive lifestyle changes. Start with a few small changes at a time. By using greener, less toxic materials in your home, you'll be reducing the level of toxic substances you and your family are exposed to in the short term and the long term, and you'll be contributing to a healthier environment for everyone. A
s new buds are forming on the trees, people who suffer from allergies are getting ready to tackle another allergy season. For the most part, spring and summer are the most difficult months for allergy sufferers. This is a time when itchy and watery eyes, sneezing and even an exacerbation of asthma may occur. As a naturopathic doctor, I see a large number of patients presenting with these complaints at this time of the year. In order to give a little background information on what happens in your body when allergies are plaguing you, imagine allergens as foreign invaders. These allergens enter your body and attach themselves onto your mucous membranes. Mucous membranes line your nose and respiratory tract. When that allergen (pollen, mold, dust and dander, among others) attacks, your body responds by releasing histamines to try to get rid of the invader. When you have a histamine release, symptoms such as sneezing, watery eyes, itching, and even difficulty breathing (in asthmatics) can occur. To rid yourself of allergies, you must reduce the inflammation and hyper-reactivity in your body, and the first place to start is your gut. Your digestive system is another barrier to the external world and your bloodstream. The health of this barrier and its ability to function properly play a role in your overall health. Your stomach has acids and digestive enzymes that break down potentially allergenic proteins, and your intestinal wall is the barrier that prevents these proteins from entering your bloodstream. Your intestines also have bacteria and immune cells that help to break down proteins and get rid of other molecules that can result in inflammation. When your gut barrier is weakened by chronic exposure to foods that irritate and inflame it, food proteins can pass through, a condition known as leaky gut.

According to Stephanie Rubino, a naturopathic doctor based in Richmond Hill, Ontario, supporting the health of both the digestive and immune systems is key. Dr. Rubino recommends reducing inflammatory foods in your diet and supporting the gut with probiotics, digestive enzymes and L-Glutamine. A personalized approach to treating your allergy symptoms is best achieved by speaking to your naturopathic doctor. NUTRITION In general, following a non-allergenic diet is recommended. If you already have food allergies and/or sensitivities, your immune system will readily react to external allergens. Limiting your consumption of wheat, dairy and sugar, among other inflammatory foods, can help reduce the overall reaction your body is creating. Do consume a whole foods diet including berries, apples, pears, lots of vegetables, and lean proteins—especially fish and legumes. A Greek study published in Thorax found that following the Mediterranean diet, known to be rich in fruits and vegetables, has a protective effect for children with asthma and allergies. In addition, research published in the European Journal of Clinical Nutrition found that a high content of omega-3 fatty acids was associated with a decreased risk of allergic sensitization and allergic rhinitis. FOOD ALLERGY Food allergy is emerging as a new public health issue. It can be defined as adverse physical symptoms associated with abnormal immune reactions to food exposure. The severity of symptoms can vary from mild to life threatening. Risk factors for developing food allergies may be genetic and/or due to lifestyle choices including hygiene, exposure to sun, smoking, and environmental pollutants, according to research published in Clinical and Experimental Allergy and Pediatric Allergy and Immunology. Genetic predisposition has been identified as a strong risk factor for food allergies with studies showing the prevalence being greater in children with a family history of allergy than children without it. Other research points towards the possible role of vitamin D, or lack thereof, in the incidence of food allergy. An American study suggested that low sunlight, and possible suboptimal vitamin D status at birth may result in food allergy development in children. Much research exists to speculate a variety of causative nutrients and factors in the development of food allergy in children. However, this still remains to be seen, as more large-scale randomized trials need to be conducted to validate these many hypotheses. In order to briefly address peanut allergies, it was previously thought that early exposure would increase the incidence of peanut allergy in children. A few years ago, the Canadian Paediatric Society published a position statement, which has been endorsed by the Dieticians of Canada, stating that there is no evidence that delaying the introduction of allergens like peanuts, fish, or eggs over the age of six months helps to prevent allergies.
NATURAL HEALTH PRODUCTS FOR ALLERGY RELIEF Butterbur Butterbur can be used as an effective alternative to antihistamines. Researchers have found that butterbur decreases nasal inflammatory mediators and decreases nasal symptoms in patients with allergic rhinitis. A word of caution though, butterbur is in the same family as ragweed, therefore it could worsen allergy symptoms in some cases. Vitamin C with Bioflavonoids Vitamin C prevents the formation of histamine in the body. High levels of vitamin C work to lower levels of histamine in the body, and help break it down faster. Bioflavonoids enhance the activity of vitamin C and help stabilize mast cells, which secrete the histamine linked to allergic reactions. There is some evidence that vitamin C levels in asthmatics may be lower and that taking vitamin C supplements may decrease the incidence of exercise-induced asthma. EPA/DHA Fish Oils Eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), the components of omega-3, are anti-inflammatory in nature. A study published in the Annals of Nutrition & Metabolism and completed in Germany found that adult females with a high fish and DHA intake have a lower rate of allergic sensitization. Omega-3s can be most commonly found in cold-water fish, nuts, such as walnuts, and flaxseed oil. L-Glutamine In studies, L-Glutamine has been shown to protect against the breakdown of the mucosal layer in the gut. Glutamine prevents deterioration of gut permeability and preserves the cells lining the intestinal wall. L-Glutamine is an essential amino acid supplement for healing leaky gut. Probiotics Probiotics may modulate immune responses in allergic rhinitis. They also support gut health by increasing immune system antibodies, whose job is to prevent bad proteins or substances such as bacteria, viruses, or food or environmental allergens, from adhering to the epithelial cells that line the gut and airways. In a review of 23 randomized trials, researchers found that those who took either a probiotic supplement or consumed foods rich in probiotics, had improved allergy symptoms and overall quality of life. Quercetin Quercetin helps stabilize mast cells and prevents them from releasing histamine. anessa Williams has wound up exactly where she wants to be. At 52, her numerous achievements include platinum records, starring television and movie roles, and Emmy, Grammy and Tony nominations as well as V. by Vanessa Williams, her own fashion line that debuted in March 2016. “I got an inquiry asking if I would have interest in having my own clothing line and I’ve always wanted to design fashion,” says Williams. “This collection is a combination of me as a professional, me as a mother and me as what I wear for comfort around the house.” Williams discovered her power dresser style while starring as Wilhelmina Slater on “Ugly Betty” and Renee Perry on “Desperate Housewives.” Currently, sans theatrical makeup and coiffed hair, the working mom of four children is dealing with a guestroom flood in her Westchester, New York home. “Thank goodness my husband is here so we’re tackling it together,” Williams exclaims. As her Grammy Award-winning song suggests, it seems like the former beauty queen has saved the best for last—both personally and professionally—tying the knot with accountant Jim Skrip last year. “I always knew there would be another chance for me to find love again and that I had to be patient,” she says. “I feel there are no such things as coincidences. The fact that I met my husband who’s from Buffalo, New York, in the middle of the Nile in Egypt is pretty extraordinary. I’m in constant amazement of how wonderful life is and I continually get a chuckle out of it.” Williams’s Westchester residence is only eight kilometres from the family home where she grew up practicing French horn and piano. She says her childhood was filled with music and creativity. Both of Williams’s parents encouraged her musically, but were also demanding academically. “It was a fantastic structure,” recalls Williams. “I think I’ve become a woman who’s not afraid of life’s obstacles and challenges due to growing up with parents who were very clear in making their children’s lives independent. Learning how to do things for yourself at an early age just makes you a more grounded person.” 52

I think I’ve become a woman who’s not afraid of life’s obstacles and challenges due to growing up with parents who were very clear in making their children’s lives independent.
FINDING LITTLE JOYS Part of Williams’s strategy to staying grounded—whether she’s working in Hollywood, on Broadway or relaxing at home in suburban New York—is reducing daily stress and finding satisfying activities. She seems to surrender to the simple pleasures of casual home attire, backyard barbeques and being a mother. Williams’s perfect day begins at home. “I do my morning crossword puzzle out in the sun with a great cup of chai tea or a good cup of coffee, having all my kids home, plus my new husband,” she says. “My mom lives next door, so I am having her swing by and then probably, I cook. My kids love my lasagna but my son has taken my mac n’ cheese and perfected it with added lobster. It’s now his signature dish.” WORKING IT ALL OUT Williams embraces the positive aspects of maturity but she’s no pushover. Her down-to-earth approach in life affects how she takes care of her body, too. Feeling strong is a vital part of her self-image. She keeps her 5-foot-6-inch figure healthy by taking DHEA, bioidentical hormones and a series of drops recommended by her doctor to boost thyroid activity and adrenals. “I love one-on-one exercise with my trainer,” she says of her workout strategy, “but I try to do something for an hour almost every day whether it’s a cardio-aerobics class, kickboxing, treadmill, biking on a bike path or just getting out for a walk. I go stir crazy sitting around doing nothing. All the previously mentioned activities allow my brain and body to get fed and I can approach the anxiety and stress in life better when I feel healthy.” BEAUTY REGIMEN Williams’s anti-aging arsenal includes mud masks and creams 54
from the Dead Sea—her beauty in a bottle. Additionally, the singer-actress-fashion designer enjoys her ATP radio wave microcurrent machine. “It tightens, firms and stimulates collagen,” she says. “Technology has added huge benefits to the beauty age. From laser technology to cryotherapy—we’re embarking on an age where beauty will not just be going to a plastic surgeon for a facelift.” In addition, Williams believes that beauty comes from within. “Nutritional eating is very important for outward beauty,” she says. “I’m not vegan, but I’ve become fully aware about genetically modified organisms (GMOs), juicing, cleansing and how important your food is to your overall health.” Williams’s kitchen counters are filled with bananas for smoothies and banana bread, apples, and locally purchased ciabatta bread, which her family especially enjoys with olive oil and sea salt. “I also have fresh, flash-frozen organic salmon, trout, and shrimp shipped to my home.” NEVER DOUBT YOUR POTENTIAL “I was basically a laughing stock 32 years ago in terms of being a credible artist, but I always knew I had what it took to be successful and one day, people would find out,” says Williams. In her book, You Have No Idea, which she authored with her mom, Helen, no stone was left unturned. From becoming the first black Miss America in 1983 and the controversy that followed, to her many successes in life, the book showcases Williams’s resilience and tough character that has made her the woman she is today. Any sequel? “I haven’t thought about that,” says Williams. “It would probably be titled One Never Knows — Does One.” VM

dividing it between the four glasses. Sprinkle with the remaining crushed Amaretti and add a layer of sliced strawberries. 5. Chill for at least 30 minutes. When ready to serve the trifle, shred the mint leaves finely and fold them into the remaining whipped cream. Spread the cream onto the top of each trifle and decorate with a few berries and a small sprig of mint.
4. Place in sterilized and pre-warmed glass jars. Leave to cool completely before covering and sealing. * Keeps for 12 months or more. Only needs to be refrigerated after opening. SERVING SUGGESTIONS: 1. Serve on a cheeseboard. 2. Spice up your sausages and mash by adding a couple of spoons of chutney to the gravy. 3. Serve with Pancetta-wrapped baby new potatoes. 4. For an edible gift, pair it with an artisan cheese, a box of crackers and a small wooden cheeseboard.
A TRIFLE ROYAL INGREDIENTS: • Four stem glasses or tumblers • One 4 3⁄4 ounces packet of strawberry jelly (Jell-O) made up with 1 3⁄4 cups water and set in a shallow dish • 1 cup small strawberries • 1 cup raspberries • 1 cup blueberries • 1 cup blackberries • 4 tbsp. caster sugar • 1⁄2 tsp. vanilla essence • 1 3⁄4 cup double cream • 20 crisp Amaretti biscuits • 4 tbsp. Cassis • A handful of mint leaves • 4 small sprigs of mint DIRECTIONS: 1. Make up the jelly and leave it to set. You should do this several hours before you start preparing the rest of the trifle. 2. Prepare the strawberries, raspberries and blueberries by washing, drying and hulling where necessary. Reserve a handful of the best ones for decoration. Cook the blackberries in a little water with half the sugar and the vanilla. When soft, purée with a stick blender and rub through a sieve to remove the pips. Keep on one side. 3. Whip the cream with the remaining sugar. Once the jelly has set, dice it into small squares and divide half of it between the four glasses. Add a layer of whipped cream, using one third of the cream divided between the four glasses. Crush the Amaretti and sprinkle half of the crumbs on to the cream. 4. Divide the remaining jelly between the four glasses and top with a layer of blueberries and raspberries, drizzle with the Cassis. Mix the blackberry purée into half of the remaining whipped cream and spoon it onto the fruit,

SIMPLE APPLE CHUTNEY INGREDIENTS: • Two 1-pound glass jars with lids that seal or a Kilner jar • 1lb 12 ounces cooking apples • 2 large shallots (approximately 7 ounces) • 3 red chilli peppers or 1 medium jalapeño • 7 tbsp. water • 2 cups soft brown sugar • 2⁄3 cup plump raisins • 1⁄2 tsp. freshly ground black pepper • 1 tsp. crushed coriander seeds • 2 tbsp. salt • 1⁄2 tsp. cayenne pepper • 13⁄4 cups cider vinegar DIRECTIONS: 1. Peel, core and dice the apples. Peel and slice the shallots. Halve the chillies, remove the seeds and slice thinly. 2. Place the apples, shallots and chillies in a medium heavy-based saucepan or small preserving pan with the water and simmer for five to 10 minutes, so that the apples and shallots begins to soften. 3. Bring to the boil while stirring and then leave to simmer gently for about 30 minutes. Check frequently to be sure that it isn’t sticking or burning on the bottom of the pan. It is ready when much of the liquid has evaporated and the chutney has thickened considerably.
MOIST AND RICH GINGER CAKE INGREDIENTS: • Deep and round, 18cm (7inch), loose-bottomed, heavy gauge cake tin • 3-4 pieces stem ginger in syrup • 2⁄3 cup crystallized ginger • 4 1⁄2 ounces (1 stick+ 1 tbsp.) butter • 1⁄2 cup golden syrup • 3 tbsp. ginger syrup, from the jar of stem ginger • 2⁄3 cuplight muscovado sugar • 2 free-range eggs • 1 cup milk • 2 cups plain flour • 1 tsp. bicarbonate of soda • 2 tsp. baking powder • 2 tsp. ground ginger • 1 tsp. ground mixed spice • A pinch of paprika • A pinch of sea salt GLAZING: • 3 tbsp. golden syrup • 2 pieces of stem ginger cut into paper-thin slices

DIRECTIONS: 1. Preheat the oven to 325 degrees Farenheit. 2. Line the base and sides of the cake tin. 3. Place the stem ginger and crystallized ginger into a food processor and process to a “paste” or grate all the ginger finely. 4. Place the butter, golden syrup, ginger syrup, sugar and ginger paste in a heavy-based saucepan. Warm gently to melt the butter. Stir continuously and do not let it boil. Leave to cool a little. 5. Beat the eggs and milk together and then, add them to the warm mixture. 6. Sift together the flour, bicarbonate of soda, baking powder, spices and salt. Mix into the liquid and stir well to ensure that there are absolutely no lumps. Pour the mixture into the prepared tin. 7. Bake for 35 to 45 minutes. The top will become a lovely dark, rich colour. Insert a skewer into the centre of the cake, it will come out completely clean when the cake is cooked. 8. As soon as the cake comes out of the oven, glaze it with the golden syrup and place the fine slivers of stem ginger all over the top of the cake. 9. Leave to cool before removing from the tin. 10. When completely cold, store it in an airtight container and leave to mature for several days before eating. * Keeps for up to two weeks.
MOUSE CUPCAKES INGREDIENTS: • 12 paper cupcake liners and a 12-hole cupcake tin, or small individual tartlet moulds CUPCAKES: • 2 tbsp. unsweetened cocoa powder • 1 cup self-raising flour • 1⁄2 cup golden caster sugar • 4 ounces soft butter (1 stick) • 2 free-range eggs • 1 tsp. pure vanilla extract
GLAZE: • 5 ounces milk chocolate (1 cup chocolate drops) • 6 tbsp. butter DECORATION: • 12 marshmallows • Chocolate buttons or flaked almonds (ears) • Flaked almonds cut into thin strips (whiskers) • Miniature marshmallows (eyes and noses) • Tiny chocolate stars, Smarties or M&M’s DIRECTIONS: 1. Preheat the oven to 375 degrees Farenheit. 2. Place the paper liners into the cupcake tin. Make the cupcakes: Sift the cocoa and flour into a mixing bowl. Add the sugar, butter, eggs and vanilla extract. Beat by hand or with an electric mixer until thoroughly mixed and smooth. 3. Divide the mixture between the paper liners, they should be approximately half full. Scoop out the middle so that when cooked the cupcakes are flat and do not have a peak in the centre. Bake for 12 to 15 minutes, until springy to the touch. Leave to cool. 4. Make the chocolate glaze: Melt the chocolate and stir in the butter to form a very glossy, pourable mixture. As chocolate varies a lot from brand to brand, you may need to add extra chocolate to thicken the glaze. 5. Assemble the mice: If the tops of the cupcakes have risen at all, cut them off so that the top is leveled. Place a little spot of the chocolate glaze in the centre of each cupcake and then stick a marshmallow onto each one to form the head. Spoon the chocolate glaze over the marshmallow and on the cake so that both are completely covered. Before the chocolate sets, stick the mini marshmallow eyes and nose onto each mouse’s head. Also put the ears and whiskers on. You can do further decorating around the top of the cupcake, using the little stars, Smarties or M&M’s. * Store in an airtight container for up to three days.
TINY TREACLE TARTS INGREDIENTS: • 20 individual metal tartlet moulds or two medium 12-hole muffin pans PASTRY: • 4 ounces butter (1 stick) • 2 tbsp. golden caster sugar • 2 cups plain flour • Zest of 1 orange • 1 free-range egg yolk • 1⁄2 cup cold water FILLING: • 1 1⁄4 cups golden syrup • 3 cups fresh white breadcrumbs • Zest of 1 lemon • 1 tbsp. freshly squeezed lemon juice • 2 tbsp. double cream DIRECTIONS: 1. First make the orange pastry: In a food processor, combine the butter, sugar and flour and process until it resembles breadcrumbs. Grate the orange zest directly into the bowl. Add the egg yolk and a little of the water, whilst pulsing the food processor on and off. Continue adding the water until the dough comes together, but be careful not to overprocess or the pastry will be tough when cooked. 2. Remove the pastry from the food processor and on a lightly floured board bring it together into a ball. Wrap and chill for 20 minutes. 3. While it is chilling, warm the golden syrup in a small heavy-based saucepan; do not let it boil. Remove from the heat, add the crumbs and grate the lemon zest in. Leave it to sit so that the crumbs absorb the golden syrup and swell. 4. Remove the pastry from the refrigerator and roll it out on a floured board to a thickness of about 3mm (1⁄8 inch). Cut out circles to line the tartlet moulds and press the pastry down well into each mould. Chill for a further 15 minutes. 5. Preheat the oven to 350 degrees Farenheit. 6. Add the lemon juice and cream to the golden syrup and breadcrumb mixture. Place a little filling in each tartlet. Decorate the top of each one with small pastry shapes or a lattice of pastry strips. You can also personalize them by putting names on the top using pastry letters. 7. Bake for 15 to 18 minutes. Cool in the moulds for 10 minutes before removing. Serve warm with whipped cream, custard or ice cream or just pop one in your mouth fresh from the oven.

BAKED FRIES WITH LEMON PARMESAN CRUST AND A FRENCH REMOULADE INGREDIENTS: • 3 Yukon gold potatoes • 2 tbsp. olive oil • salt & pepper to taste • 1⁄4 cup grated parmesan • zest of 1 lemon REMOULADE: • 1 cup whipping cream • 2 tbsp. buttermilk • 1⁄4 cup loosely packed flat-leaf parsley leaves, finely chopped • 1⁄2 celery stalk, finely chopped • 1⁄2 small shallot, finely chopped • 1 garlic clove, minced • 1 tbsp. capers, finely chopped • 1 tbsp. prepared horseradish • 1 tsp. fresh lemon juice • 1⁄2 tsp. paprika • salt & pepper to taste DIRECTIONS: 1. Preheat oven to 475 degrees Fahrenheit. Wash the potatoes with cold water then cut into 3/8” thick fries (you can get creative with your cuts). Place in a pot and cover with cold water and 2 tbsp. of sea salt. Bring to a boil and then simmer until just tender. Strain potatoes and place on sheet tray lined with wax paper. Rub with olive oil and season with salt and pepper. Bake for six minutes then sprinkle with parmesan and lemon zest till golden brown. 2. For the remoulade, whisk together cream and buttermilk (crème fraiche). Wrap and let set for 24 hours at room temperature. Once cream fraiche is thick, whisk together all ingredients and enjoy!

DESIGN GET IN THE MOOD FOR SPRING WITH THESE SIMPLE DESIGN IDEAS BY MELISSA DAVIS

pring is the season of renewal and rebirth. Birds migrate to their summer villas after the cold winter, flowers spring to life in an extravagant array of colours, and animals of all kinds emerge to travel and explore the world. For me, the temptation to travel sets in as I anxiously await the breezy summer days ahead. You don’t have to leave your home to capture that sense of adventure. You can satisfy that springtime desire
BREEZY WINDOWS Let’s dive in! The ideal is a roomy, open space, with plenty of natural lighting and wide windows. If you’re lacking natural light, fake it by adding ambient lighting with floor and table lamps to mimic a bright summer day. The drapery should be long, pale blue or white curtains that can billow in the breeze like rolling, seafoam waves. Mount the panels high and keep the windows otherwise clear to let as much natural light flow through as possible. The idea is for the curtains to mimic the ocean, creating the soothing ambience of a coastal paradise. For a slightly bolder, fun-in-the-sun look, you could also use brighter coloured (salmon or pale yellow) curtains, but be sure to keep the material light and airy. It should be able to easily flow in the wind. GET THE LOOK: Solid Base, colour Snow by Robert Allen is the perfect sheer drapery fabric. Here are my top design tips for a coastal design— with an eco approach.
WHITEWASHED Coastal design is about bright fresh spaces and there is nothing quite like a crisp white wall colour to achieve that look. Add interest with painted beadboard on the walls or ceilings, but keep the colour itself white. GET THE LOOK: Natura Paint by Benjamin Moore has Zero VOC, is environmentally friendly and recently certified asthma and allergy friendly. Opt for colour, Simply White OC-117, in a flat finish for a more natural warm look.

WISPY PLANTS Adding a potted planter of seagrass or other tall, wispy seaside flora adds instant life to the space. The look should be lively and active—even when completely still. Just as sand is always sweeping across the landscape and waves are always kissing the shore, there should be a sense of movement in a coastal design, though a consistent soothing feeling should remain.
SEASIDE MOTIFS An easy way to bring the beach to you is to add subtle seaside motifs to the space. While it is important to keep the symbolism subtle, a soft seascape portrait or some seashell-embroidered pillows can add that last ocean touch to complete the look. If you’ve been to the beach before, you could even implement treasures you’ve found yourself. A few hand-collected sand dollars or a stylized bottle filled with authentic sand can truly add some beach flair to the final look. Remember, the coastal style is as much about peace as it is about adventure. Keep the style warmly subtle, and you can’t go wrong. GET THE LOOK: Seacrest Shore by Robert Allen is the perfect coastal print. A crisp white background and coral motif add a hit of colour while keeping the beachy look.
WEATHERED FURNITURE Another tip to bring the feeling of a seaside adventure to your home is to use wooden furniture. Grey, or pale brown, weathered wood will give your space that sandswept beach look. Wicker chairs or smooth, long benches in these shades of wood will enhance the softness of the natural lighting of the room. If you’re going for a slightly bolder look, you may use darker-coloured woods as well, but keep them weathered and shapely. Think of the driftwood you might find on the beach. Unfortunately, user information is supplied anonymously, and online dating sites cannot confirm any information provided in a person’s profile is accurate. Finding your match online is very time consuming and patience is often tested during the process of guessing who is worth the effort. Dating is a numbers game, therefore, doing your due diligence by going through pictures and profiles can be extremely exhausting. One of the biggest issues that online dating has is the fact that there are so many options. Having an infinite number of choices creates a lack of urgency to connect via phone or to meet in person, as people think there is always someone better around the corner. A person must be very perceptive and educated in knowing how to identify red flags when going through profiles. Here are some great tips on how to be more efficient in your searches. AVOID SMALL TALK When going through your messages, it is important to pay attention to those who have sincere titles as well as someone who took the time to write a nice message. Winks and one-liners just won’t do. If someone invests time in writing, then they are worth a look. If you engage in a few conversations, don’t spend too much time on small talk. It’s great to share your personality and wit, however, ask direct questions and pay attention to their responses. If your possible match is a little nervous or defensive, then he might not be for you. If he shows vulnerability, ask more questions. Efficiency is key here, and the sooner you get your answers, the sooner you will know if the person is right for you. Pay attention to how they communicate and if they are respectful. lthough Kentucky is the horse capital of the world with thoroughbred racing being showcased at the highest level, a perfect day in the city of Lexington comes in a myriad of forms—from outdoor biking trails and fishing spots to architecture and museums. For a look at some of the city’s historic homes, check out Ashland, The Henry Clay Estate, former home of this U.S. Senator, Secretary of State and three-time presidential candi-
date remembered as the “Great Compromiser.” Most of his 600 acres is now an upscale residential neighbourhood, yet about 20 acres are preserved as a National Historic Landmark, including the Italianate-style house. A tour inside the 18-room mansion showcases Clay family’s belongings and memorabilia. Another historic home is Mary Todd Lincoln’s brick house built in 1803 to 1806 with a period herb and perennial garden in the backyard. One of America’s most controversial First Ladies, Mary Todd was actually born in Lexington and lived in the family brick house on West Main Street until she was 21.
