T
his April 22nd, Canadians everywhere will make an effort to turn out their lights, avoid unnecessary packaging, and reflect on the planet in which we live. While it’s a good step in the right direction, one day out of 365 is hardly enough to make a dent in the damage we’ve done to the planet we call home. Although the masses have only been celebrating Earth Day for the last decade, its origins date back to 1970. Even then, an elite group of environmentalists could see that what we were doing to our environment would have long-term consequences. In fact, the origins of Earth Day actually date back even further to the publication of Rachel Carson’s Silent Spring in 1962 (the 40th anniversary edition is still available). The ground-breaking book was a New York Times best seller, selling more than half a million copies in 24 countries with its initial publication. Carson was the first person to get the message of environmental concern out to the masses. Silent Spring was responsible for the banning of DDT, and spurred revolutionary changes in the laws affecting our air, land and water. Now, 52 years later, there are still way too many of us who forget about our environment on all but its special day. It’s easy to see why. With over seven billion people on the planet it’s hard to see how one person can make a difference. Kelly Lovell (who spoke with Viva for “5 Ways to Make This Earth Day Count” on page 48) is proof of just how much of a difference one person can make. At just 22 years of age, Lovell is a pioneer when it comes to protecting the environment. She’s the founder of My Clean City, a program that collaborates with environmentally committed organizations to engage youth to volunteer, and is the youngest person to ever receive the honour of Canada’s Most Powerful Women: Top 100 Awards for her commitment to change. While not everyone will make the impact of Lovell or Carson, you have to believe that every little thing counts. Every cellphone that you keep out of a landfill, every light you turn off when leaving the room and every time you walk instead of drive you are making one tiny step toward a better world. Our environmental issues were built out of little things becoming one big mess; only little changes can reverse the damage.

Rose Reisman This mother of four knows food. Rose Reisman has published 18 cooking books for a total of over 2,000 recipes. She’s the owner of Rose Reisman Catering and Personal Gourmet, a food delivery service with a fresh and frozen food line, has five degrees, and is an adjunct professor at York University’s Department of Health. Reisman has her own menu at the Pickle Barrel chain of restaurants and she’s also a philanthropist, having helped raise over one million dollars for breast cancer research, education and treatment. Kavita Sabharwal Shortly after completing her Media Studies degree at the University of Guelph-Humber, Kavita Sabharwal quickly jumped into the world of journalism by interning at FLARE. She is also a globetrotter, having lived in Korea for one year where she taught English. Sabharwal is currently the Editorial Assistant for Viva. Rider Dyce A 25-year veteran in the field of sponsorship marketing, Dyce’s interest in photography was borne out his travels around North America and Europe, and has developed into a passion over the past decade. Dyce recently moved into the world of portrait and street photography, disciplines that give him the opportunity to engage his subjects personally and challenge himself to create compelling images of people. Who says it never rains in Southern California? Inclement weather could not put a damper on Viva’s Earth Issue cover girl, Jorja Fox, who breezed into the Brentwood, California home where our photo shoot took place – dog Bear by her side. The glam team went into action as Fox told tales of her rescue dog turned faithful companion and her vegan lifestyle. Viva had been forewarned that no leather or fur could be worn for our photo shoot due to Fox’s principles. Her diet is equally as committed. “I never think, ‘gee, I wish I had a piece of fried chicken right now’. I’m happy to say that any kind of desire went away many, many years ago,” says Fox. While her hair and makeup were being perfected, Fox ate veggies, some fruit and nuts. Then slower music by Adele segued into upbeat, danceable tunes, as wardrobe selection got under way. “Gosh, I feel like I’m working out,” Fox joked. “My music starts out slow, then gets into some real heart pumping pop or dance.” Bear cares none for the frivolity that ensues, taking up residence on a slice of rug by Fox’s feet. “Who cares if it’s raining?” says Fox, with a wave of her hand that gives a glimpse into her laid back attitude towards life in general.

Balance comes from the inside and I think it looks different for different people. What is balance for you and for me might be two different things. At the end of the day, if you are doing something you love, and if you can sleep at night, then that sets up a good equilibrium. An accomplishment and a restful night’s sleep help to keep me stable. When I am out of balance, I either can’t sleep or I can’t get out of bed. To me, that’s very telling that something is off.

hether you prefer minimalist makeup or you’re more of a dramatic diva, a flawless complexion is the essential starting point for any look. Healthy, beautiful skin is the best foundation to create a picture perfect you. YOUR SKIN IS WHAT YOU EAT It may sound cliché, but beauty starts from the inside out. Drinking at least eight glasses of water a day is one of the best things you can do for your skin. Your body is about 70 per cent water. Throw off this balance just a little, and your skin will be the first area you’ll see the damage. Lack of water not only dries out the skin; it can contribute to flare ups and other problems. Regular exercise to boost circulation and plenty of “beauty” sleep are also essential factors for glowing skin; as is eating a healthy diet. You are what you eat, and the skin is no exception. While you can’t go wrong with fish, whole grains and produce, there are five nutrients that are especially important in terms of your complexion. Here’s a look at the vital five for flawless skin: 1. VITAMIN C This antioxidant helps the body build skinsupporting collagen. Supplement or find naturally in fruits such as kiwi and oranges.
4. LYCOPENE This antioxidant helps prevent against sun damage. Tomatoes and watermelon are both excellent sources. 5. LUTEIN Lutein fights free radicals and increases skin elasticity. It’s abundant in eggs and kale.

MEDIUM COVERAGE If you need, or simply prefer, more coverage, choosing the right type of product is essential for a beautiful finish. A liquid foundation is a great way to create the perfect canvas for the rest of your make-up. There are different formulas designed for various skin needs ranging from oily (creating a matte finish) to combination and drier skins (satin smooth finish). Each provides light to medium coverage. APPLICATION: Always prep your skin with a hydrating moisturizer and eye cream prior to applying foundation so that it will go on smoother and look fresher. To apply, dab several dots of foundation on the center of the face (forehead, nose, cheeks and chin) and blend out and downward. For more coverage you need a product that has more pigment, not a heavier texture. Once foundation has been applied, cover any imperfections that are still visible with a concealer, pressing it on using a small, flat synthetic brush or your fingers. Choose a creamy formula if you are applying under the eyes.
FULL COVERAGE POLISHED SKIN
IT’S ABOUT PRIME: For a smooth longlasting finish, start with a primer that is hydrating and acts as a filler for pores, wrinkles and fine lines. It’s important to use a primer that is the same formula as your foundation. Oil and water don’t mix – keep them separate.
If you are trying to cover scars, acne or more severe pigmentation, full coverage is your best choice. The good news is that today’s foundations are galaxies away from the old masklike cracked and cakey faces from the early eighties. Newer formulations are more highly pigmented with high performing ingredients so they can give great coverage, with less product, and leave a much lighter feel on your skin. Cream foundations are the big hitters when it comes to full coverage. Traditionally they are oil based, however there are now oil-free formulas that work just as well. APPLICATION: A good application technique will ensure a smooth finish. Scoop some of the cream foundation onto your hand and gently massage it around to warm it up. Stipple on a little at a time with a foundation brush until you have the coverage you want; then blend and buff it into the skin with a make-up sponge. Set your foundation with a dusting of loose powder for a polished look. VM

BEAUTY TERMINOLOGY RED TEA Red tea works well to help heal many ailments due to its Quercetin content, a flavonol. It increases circulation, prevents hemorrhaging and protects against infection. A study led by the University of Leeds found that crop yields will be negatively affected by climate change much earlier than initially expected. Climate change will have an increasingly negative impact on crop yields of rice, maize and wheat from the 2030s onwards. The impact is said to be bigger in the second half of the century with a decrease in production of over 25 per cent.
COULD COFFEE BEANS HELP YOU LOSE WEIGHT? Looks like the answer’s yes, but only if your coffee beans are green. A recent study by the University of Scranton in Pennsylvania looked at the weight-loss effects of green coffee bean extract. In the study, 16 overweight or obese participants lost an average of 16 per cent of their body fat in 22 weeks. The participants continued to consume 2,400 daily calories, however they supplemented with green bean extract three times a day. Green coffee beans have their colour because they are straight from the plant. When coffee beans are altered through roasting they lose chlorogenic acid, which signals your body to burn fat for energy more easily, and helps block sugar from your bloodstream.
CALORIES COUNT Female athlete triad syndrome is a condition that’s been rising among adolescents lately. The female athlete triad has three interrelated components: disordered eating and low energy availability, dysmenorrhea (reduced or non-existent periods), and low bone mineral density. “Many girls are so active they need 3,500 calories a day plus because they are competing at a high level,” says Dr. Anastasia Fischer, MD, a physician in Sports Medicine at Nationwide Children’s Hospital. “Some girls who have this syndrome do have serious eating disorders, but most do not. Rather, most adolescents just do not realize how important eating the appropriate amount of calories and proper nutrition is for their athletic performance and general wellbeing. Girls underestimate that food is fuel.” Female adolescent athletes should track their menstrual cycle and have a nutrition plan that consists of getting enough calories throughout the day.

Canada has such a significant share of the earth’s natural ecosystems, as the habitat for 25 per cent of wetland ecosystems, 15 per cent of forests and 16 per cent of Arctic ecosystems. Here are five ways to make this earth day matter and use it as a stepping-stone

“Put local food on your plate and eat what’s in season as much as possible,” says Anthony Westenberg, the PR Manager for Evergreen Brickworks. Have you ever stopped to think that the strawberry you eat in January may have travelled 5,000 kilometers to make it to your plate? Even little changes can make a difference. “If you have a choice between garlic that comes from China or garlic that comes from northern Ontario, pick the garlic that comes from northern Ontario.” Not only does the money stay in the province; it’s more eco-friendly to opt for local produce.

PAINT YOUR HOUSE WITH LOW OR NO-VOC PAINTS.
According to a study from Johns Hopkins University, more than 300 toxic chemicals and 150 carcinogens may be present in paint, which can cause long-term health problems. As paint dries, these harmful VOCs are released into the air and are highest during or soon after painting (about 50 per cent of the VOCs are released in the first year). They continue seeping out for several years afterwards. “Painting over prior paint with low or no-VOC paint will generally seal in the VOCs,” says Jason Kliwinski from The Green Living and Building Centre. If not done properly stripping old paint can cause particles to become airborne and more hazardous so painting over is usually the best option. Low or no-VOC paints are now widely available and sold by most major paint manufacturers.

Every little action adds up, so small things like getting your leaky faucet fixed can save at least 5,500 litres of water a year. According to Waterwise, that’s enough water to fill a paddling pool every week for the whole summer. If you turn the tap off while brushing your teeth, it saves six litres of water per minute – you can save around 12 to 18 litres every time you brush your teeth.

CREATE A GREEN HOUSE
No home is too small to start a mini garden. “My friend always says that your balcony is bigger than you realize,” says Westernberg. Think vertical by filling in your windowsill with stacking herbs, or use hanging baskets on the wall to increase growing area. “Speak to the gardener selling you [the plants or seeds] about how often to water it, where to put it, and when to expect it to bloom. It requires some experimentation,” says Westenberg. You can even grow a plant out of an old pencil stub. Sprout Pencil has a seed capsule inside it. HOW ONE PERSON CAN MAKE A HUGE DIFFERENCE Kelly Lovell, who had just come back from attending the Oscars in Los Angeles when we interviewed her, is a pioneer for protecting the environment. From fundraising to building schools in Africa, serving as a National Youth Delegate and launching volunteerism projects, Lovell is a dedicated mentor and founder of My Clean City, a program that collaborates with environmentally committed organizations to engage youth with volunteer actions. “It’s run by youth for youth, and it caters to the twenty-first century volunteer,” says Lovell, who uses social media to get youth involved. “From my own experience I found that there’s quite a bit of disconnect between youth and community resources, because a lot of the time we lack awareness of what’s already existing within our community, or we lack the motivation to get involved.” My Clean City wants to show that community involvement can be fun, with “Clean Teens” engaging in activities like planting trees, doing compost gardens, community cleanups, and water conservation activities to earn “clean creds.” Lovell was the recipient of the Women’s Executive Network’s 2013 Canada’s Most Powerful Women: Top 100 Awards last year. Just 21 at the time, Lovell is the youngest person to receive this honour. She’s also an Ontario Provincial Change the World Youth Ambassador, and a recipient of the QEII Diamond Jubilee medal.

hen life gets busy, it’s easy to forget about your own health and wellbeing. When we spend all day at work, guilt can keep us from taking a little extra time for ourselves. In reality, being active is one of the best things you can do for your child. A recent study at the University of Essex found that children who said their parents do almost no physical activity have a 50 per cent greater risk of being unfit than those with more physically active parents. This is especially significant since the overall fitness levels of our youth have been declining rapidly since the early 80s. According to Stats Canada, close to one third of five- to 17-yearolds are overweight. The average 12-year-old weighs 11 to 14 pounds more than in 1981 and scores lower on aerobic, strength and flexibility tests. Although some parents seem eager to place the blame on everyone from schools to marketers, studies are finding that the biggest indicator of a child’s physical fitness is how active their parents are. “Modeling being active can be very useful in raising fitter kids,” says Kristen Holm, an assistant professor of Medicine at National Jewish Health in Denver, CO. Holm was a lead author on a recent study in the Journal of Physical Activity and Health that found that on days when parents are more active, their kids are more active. “Parent and child activity levels are strongly correlated,” says Holm. The more steps a parent takes in a day, the more steps their child will take. To help you take control of your health, Viva has uncovered five ways that even the busiest parent can make time for fitness.

Create a home that is full of fitness opportunities. Mann suggests substituting chairs for stability balls. “Using a stability ball at your desk is a great way to train your core while you work.” You could even switch out your dining room chairs for stability balls at some meals. Your kids will think it’s a blast to sit on a ball while they eat and your whole family will get fit at mealtime. In Mann’s house they leave a set of hand-weights at the bottom of the stairs. When someone walks up the stairs, they carry the weights and leave them at the top. When they walk down, they take the weights with them. You could use books or any heavy object. “When you’re busy it’s all about making simple and easy opportunities to build strength,” says Mann. GET INVOLVED DURING YOUR CHILD’S ACTIVITIES
Volunteering to coach your child’s team is a great way to get fit. It also shows your child that you care about getting in shape. If you don’t feel comfortable coaching, use your child’s activity time to go for a walk or jog. Since her oldest son (now 22) was in kindergarten Mann has always volunteered to teach fitness once a month at her children’s school. “Helping kids find the fun and playful side of fitness keeps fitness fun for you too,” says Mann. TAKE TIME FOR SCHEDULING
“Set aside time on Sunday night to plan your fitness activities for the upcoming week,” says Sharon Mann, mother of three and group fitness director at White Oakes Spa and Resort in Niagara-onthe-Lake, ON. Write down when you’re going to exercise the same way you would your children’s activities. If it’s on your schedule it’s tougher to brush off.

TAKING CONTROL
A FORMER CONTESTANT ON ABC’S EXTREME WEIGHT LOSS, RYAN SAWLSVILLE SHARES HIS STORY OF OVERCOMING THE ODDS AND TAKING CONTROL OF HIS LIFE. BY KAVITA SABHARWAL

yan Sawlsville has had to overcome some major obstacles in his life. A serious car accident in 2009, which he says should have taken his life, cost him his left arm. Already struggling with his weight since childhood, the accident left the
Sawlsville before and after.

25-year-old Appleton, Wisconsin native unwilling to leave his home. He made a habit of eating late at night and rarely exercised until a friend pointed out that something had to change. “I realized being overweight was more of a disability than losing my arm and something had to change,” says Sawlsville. “I wasn’t in control of losing my arm. It was gone and it wasn’t coming back. I was in control of my weight, however, and I felt like I was letting myself down and letting my family down.” COMMITTING TO A CHANGE A friend challenged Sawlsville to try out for the third season of Extreme Weight Loss and helped him through the extensive process of interviews, paperwork and a video application to be considered for the show, including an emotional visit to the scene of his car accident. Following rounds of cuts, Sawlsville was surprised by a Green Bay Packers jersey-wearing Extreme Weight Loss transformation specialist Chris Powell while at the Packers Hall of Fame at Lambeau Field, announcing that he had made it on the show. The two-hour episode (which aired on June 26, 2013) started with Sawlsville weighing in at 410 pounds. The episode followed Sawlsville for one year as he hiked, did CrossFit workouts and spent hours at the gym with Powell and Powell’s wife Heidi. They started by making small adjustments to workouts so he could do them onehanded, but he continued to push himself, not wanting to let having one arm become an excuse for himself. Sawlsville paired his exercise

regimen with clean eating according to Powell’s food plan of consuming 1,800 to 2,000 calories throughout five small meals per day. Sawlsville chose to not consume junk food to avoid going back on his goals, although contestants were given a “free day” where they were not required to work out or rigidly stick to the food plan. By the end of the episode, Sawlsville had lost 217 pounds, or 53 per cent of his former body weight to finish at 193 pounds, surpassing the results of any other contestant on the show and earning him the nickname ‘Juggernaut’ from Powell for hitting all his goals. As a reward for working tirelessly to achieve his goals, Sawlsville received a state-of-the-art prosthetic from Hanger Prosthetics and Orthotics from the show. Since leaving the show, Sawlsville’s weight sits at about 220 to 230 pounds, which is where he wants to stay. He has built up more muscle since leaving the show and says this range is what works best for him. To maintain his new shape, Sawlsville usually works out for an hour per day running and lifting weights, and continues to eat clean. The show connected him with Ryan Dart of CrossFit Appleton, who Sawlsville works out with as Dart helps him achieve his personal training certification. Sawlsville’s dream is to one day open his own gym as a certified personal trainer, alongside his future wife and children. GIVING BACK Sawlsville will be speaking at the Symphony of Wellness Canada event on May 29 and 30, 2014. Created by Felicia Pizzonia, a registered nutritionist with certifications in fitness and exercise, the Symphony of Wellness is aimed at educating people on how to lose weight the healthy way and keep it off. Sawlsville knows first hand what a struggle it was to even get to the point of wanting to losing weight, and believing that he could. To support others, he has started a 21-day challenge on Facebook where he provides advice and support for people looking to lose weight and make a positive change their lives. That’s what Chris Powell, Ryan Dart, my family and the show did for me. They all believed in me and then I got to a place where I believed in myself.” If you want to lose weight you need to know that it will take a lot of hard word and dedication – and you have to be consistent. “Honestly, the first time I’ve been consistent was on the show,” says Sawlsville. “Looking back now, I think me not putting effort into anything is what got me where I was,” says Sawlsville. “After the car accident, I had a chance; I could take control of my future. I realized that as long as you’re not dead, you can still fight; you can still transform your life.” And now that he’s learned how to fight, there’s no turning back. orja Fox is really the antithesis of her television alter ego Sarah Sidle on the hit show CSI. Whereas Sidle is often sullen and dark, Fox is all smiles and has a bounce in her step that just makes you want to be around her. However, both ladies are looking for ways to reinvent themselves. “Sara got dumped by her husband last year so she’s been grieving,” says Fox of the character she’s played in close to 300 episodes. “She’s looking for ways to break out of her shell. I think we’ve all been through a break-up; it’s part of the peaks and valleys in life.” Hoping to step outside her own comfort zone and reinvent herself again, Fox has taken on the role of producer with the animal rescue documentary Lion Ark. The film reveals a historical move of 25 lions from Libya to a wildlife sanctuary in Colorado. “I think it’s important to reinvent yourself over the years,” says Fox. “I’ll act for as long as people will have me, however I also want to put my eggs in a couple of other baskets.” VEGAN WANNABE One area Fox won’t be reinventing herself is her diet. The actor has been a disciplined vegetarian for the past 20 years. “Eating meatfree is second nature to me,” she says. Fox describes herself as a vegan wannabe. “I’m vegan 85 per cent of the time.” Fox eats healthy and considers rice pasta with vegan meatballs her comfort dish. “I made a vegan meatloaf a few months ago. Unfortunately I blew it – it came out looking like chili,” she laughs. “It was tasty though.” Fox does make minor adjustments to her diet in an attempt to improve her health. For example, she switched from early morning coffee to green or black tea. Aware that omega-3 fatty acids are important to her well being, Fox now takes a vegan source of omega3s daily. She also supplements with a multi, pro-biotic and magnesium and calcium vegetarian capsule. Early morning before heading out to work or surf, Fox has a green smoothie. “Kale, lettuce, spinach, chard, a little fruit, and nuts for protein such as walnuts, almonds or cashews, flaxseed or chia seeds.” She also eats a sweet something for breakfast. “A cookie, cupcake, piece of cake – real sweet. It probably started with me having chocolate pop tarts when I 62

• 6 fingerling potatoes, sliced in half lengthwise, or 1 Yukon Gold potato, quartered • 12 grape tomatoes • 3 large slices red onion, about 1⁄4-inch thick • 8 asparagus spears, trimmed • 12-ounce raw tuna (or canned flaked white tuna packed in water) • 4 cups baby spinach • 3⁄4 cup diced cucumber • 10 Kalamata olives DRESSING
• 2 tbsp olive oil • 2 tbsp lemon juice • 4 anchovy fillets, finely chopped • 1 tsp finely chopped garlic • 1⁄2 tsp Dijon mustard • Pinch of salt and pepper GARNISH

DIRECTIONS:
1. Preheat oven to 425°F. Line a baking sheet with foil and lightly coat it with cooking spray. 2. Place the potatoes, tomatoes, onions and asparagus on the baking sheet. Lightly coat the vegetables with cooking spray and bake for 10 minutes. Turn the tomatoes and asparagus after five minutes, and remove the tomatoes and asparagus from the oven after 10 minutes. Continue cooking the red onion for another five minutes, then remove from the oven. Continue cooking the potatoes for another 15 minutes, turning halfway through, or until tender. 3. Meanwhile, preheat a non-stick grill pan, lightly coated with cooking spray, over medium-high heat, or preheat your barbecue to mediumhigh heat. Sear the tuna on each side for one to two minutes, or until the outside of the fish is just cooked, but the inside of the fish is rare. Take the tuna off the heat immediately. • 1 cup quinoa • 2 cups low-sodium vegetable or chicken stock • 11⁄2 cups corn • 1 tsp vegetable oil • 1 cup diced onion • 1⁄2 cup diced red bell pepper • 2 tsp crushed fresh garlic • 1⁄2 tsp ground cumin • 1 tsp seeded minced jalapeno pepper (or 1 tsp/5 mL hot chilli sauce or paste) • 2 cups chopped fresh spinach • 1⁄3 cup chopped green onion • 1⁄3 cup chopped cilantro or parsley • 1 ⁄2 cup crumbled reduced-fat feta cheese (2 oz/60 g) • 2 tbsp olive oil • 2 tbsp freshly squeezed lemon juice
1. Bring the quinoa and stock to a boil. Cover and simmer for 15 minutes, just until the stock is absorbed and the quinoa is tender. Remove from the heat and place in a serving bowl. 2. Spray a small non-stick skillet with cooking oil and place over medium heat. Sauté the corn for approximately eight minutes, just until browned, stirring constantly. Set aside. 3. Occupation: Children’s performers What’s your secret food vice? Taes: Cookies at 3:00 p.m. with tea. Growing up, my mom and I would always have tea and cookies in the afternoon. I love ginger cookies the best, but really any cookie will do. What is your number one comfort food? Nick: Kraft Dinner. There is a lot of comfort there. Probably because in university it was the first “meal” I learned to cook. What is your biggest food challenge? Taes: Eating healthy on the road. We travel so much and are always eating in restaurants. Since I have so many dietary restrictions (no meat, no dairy) it’s really hard to eat healthily and make sure I’m getting enough protein and nutrients. We are always searching for the restaurant with the most vegetarian options. What keeps you eating a balanced diet? Nick: Our performances are very active so a balanced diet plays a key role into being in the right state physically and mentally. Any allergies or intolerances? Taes: I have always been a vegetarian and in the last few years I discovered I’m lactose intolerant. At first it was hard to get used to, but now I love discovering different options for cheeses. I can eat goat’s cheese and I also really love Daiya vegan cheese. Dislikes? Nick: Cooked broccoli and I have just become friends in the last two years; his raw brother and I still aren’t talking. Everything else is wonderful and delicious. What must you always have in your fridge? Taes: Unsweetened almond milk. I put that stuff in everything: shakes, sauces, cereal, soups . . . What’s the strangest food you’ve tried? Nick: While performing in Bermuda, we were invited to a traditional Bermuda Cod Fish Breakfast. It was the first time I’ve ever had fish for breakfast, but the dish was wonderful. Look up the recipe! What is your favourite meal to make for guests in your home? Taes: I love making noodle bowls because they are so easy and people can add what they want into them. Basically you can put out a whole bunch of ingredients: steamed and/or roasted veggies, nuts, sprouts, tofu, avocado; then rice or soba noodles and I usually make a peanut sauce. Give people bowls and tell them to go to town! What’s next for you? We have a full spring and summer tour coming up across Canada. Also, we are back in the studio and will have a new album out this summer. 78

E ARTH NEWS ECO-LAWN Traditionally our lawns were imported from Europe because settlers wanted fast-growing grasses to feed their livestock. Sure, they look good, however their shallow roots don’t make sense for a modern residential yard because they are difficult to maintain and often require harmful fertilizers in order to thrive. Eco-Lawn is a viable alternative. Created from seven fine fescue grasses, Eco-Lawn requires little to no mowing, no fertilizer and is drought resistant. “You can over seed your existing lawn to create an Eco-Lawn at minimal cost,” says Miriam Goldberger, President of Wildflower Farm. BY NANCY RIPTON BUTTER Avoid using water to treat grease-based stains – it will just run off. Instead, use a dull straight edge (such as a credit card) to scrape away any excess butter, taking care not to push the butter any deeper into the fabric. Cover the area with cornstarch and let it set for about 30 seconds. Press with a paper towel.
RED WINE Pour white wine on the stain to neutralize the colour. Then, cover it with salt and let it absorb into stain. Blot with a paper towel and continue until the stain has been removed.
COFFEE Sprinkle a small amount of baking soda onto the coffee stain, then spray with a vinegar and water solution. It will bubble and bring the stain up. Take a dry cloth and dab away the stain. Repeat this process until the stain is gone.
CHOCOLATE Using a soft toothbrush, gently work baking soda into the stain. Remove with warm water.
JAM AND OTHER SUGARY STAINS Scrape off any excess sauce or spill with a spoon. Mix equal parts club soda and water and gently dab until the stain has been removed. For best results, use a microfiber cloth. The small fibers will help to lift the stain.

aking your home more energy efficient doesn’t have to cost a bundle. “I’ve seen people put $7,000 into new windows when a $10 gap under the front door would have yielded more energy savings,” says Bill Whiting, an assessor with GreenSaver, a non-profit organization in Ontario that provides in-home assessments to maximize energy efficiency. Here’s a look at a typical home’s worst energy offenders and the best ways to fix them so you can save money and help the environment.

WALLS
What’s the problem: “The average 50-year-old home loses a third of its energy through air leakage,” says William Kemp, author of Smart Power and The Renewable Energy Handbook. The biggest culprits? Tiny holes in window frames, behind walls and baseboards. Electrical sockets, an attic hatch, and areas where items are screwed into walls (such as clothing rails in closets) are also drafty spots. “The average Toronto home has enough cracks, leaks and crevices to add up to a basketball sized hole in the wall,” says Vladan Veljovic, president and CEO of Greensaver. What to do: A blower door test, conducted during an energy audit, is the best way to find primary air leakage areas. Sockets can be lined with foam ($20 for an entire house). Small cracks can be caulked (about $4 per tube of caulking) and larger ones filled with foam ($5 can should do the entire house). Savings: Depends on leaks and accessibility of holes; savings of 20 to 30 per cent of energy costs are normal and could reach 70 per cent.
WINDOWS & DOORS
What’s the problem: In most cases, it’s not cost effective to change windows because their cost is so high compared with the potential energy savings. What to do: Caulk windowsills or cover with heat-shrinkable plastic in winter (less than $20 for a few windows). High-grade weather stripping can help reduce drafts around doors ($25 per door). Expect to pay $500 to $1,000 per new window and use a reputable company: improper installation can actually decrease energy efficiency. Look for a double-glazed window with low-E glass and argon gas fill. Expected savings: About $3 to $5 per new window per year.
ATTIC
What’s the problem: Ideally, an attic should have 12 inches of insulation to decrease drafts and make a home more comfortable. Homes built in the ’60s typically have about three inches while older homes could have even less. What to do: Lay new insulation ($200 to $2,000 depending on ease of access, since not all older homes have a cavity to the attic). If there’s no opening, an auditor can drill a small hole to check for insulation thickness. Make sure the opening is well sealed and a vapour barrier is installed or warm air can blow through insulation, possibly causing mold. Ensure insulation isn’t blocking lights, creating a fire hazard. Savings: Up to 30 per cent in older homes, however it may not be worth the cost if there’s no access. An energy audit can give you an estimate.
LIGHTING
What’s the problem: Standard incandescent light bulbs are widely used but inefficient. What to do: “Replacing all incandescents with compact fluorescents (CFLs; $3 per bulb) is the easiest way to reduce energy costs,” says Kemp. Install dimmer switches on certain types of CFLs or any remaining standard bulbs indoors and put timers on outdoor lights. Savings: $100 to $200 per year.
FIREPLACE
What’s the problem: The damper door doesn’t close tightly, allowing hot air to escape when fireplace is not in use. What to do: “Leaving the damper open is equivalent to having an open window in your house,” says Whiting. Check for damper efficiency during a blower door test. If there is leakage, a WETT certified fireplace technician can install an airtight, spring-loaded damper (about $300). If you don’t use the fireplace, consider sealing the opening with drywall. Savings: $30 to $100 per year.
VENTS & DUCTWORK
What’s the problem: A temperature imbalance, usually resulting in excess heat on the main level of your home and insufficient heat on upper levels. What to do: Test vents by placing a standard garbage bag with a cardboard rim over each vent and timing how long it takes to fill with air (three to five seconds is normal). Vents that fill faster are sucking air from the rest of the house. To slow them down, partially close the damper to encourage airflow to less efficient areas. If vents on upper floors are too slow, consider installing an additional cold-air return ($500 to $1,500) to redirect more air upstairs Savings: Variable savings; however, the biggest reason to change airflow is for comfort and uniform heating.
APPLIANCES & ELECTRONICS
What’s the problem: Today’s refrigerators and washing machines are highly energy efficient, and models prior to 1990 should be upgraded. Stoves, dishwashers and dryers may not be worth replacement costs. Energy is also wasted on electronics left in standby mode. What to do: Unplug or turn off electronics. Consider upgrading to a high-efficiency fridge ($650 and up) and front-loading washing machine ($900 and up). Savings: $200 to $250 per year.
AIR CONDITIONER, FURNACE & WATER HEATER
What’s the problem: In most cases, it does not pay to replace these big-ticket items unless there is another problem with the unit. The possible exception is the air conditioner – the biggest energy waster in most homes. What to do: Reduce the need for air conditioning by installing energyefficient ceiling fans. Programmable thermostats (about $50 and up) save heat or air conditioning power when you are sleeping or not home. When it’s time for a new furnace (they typically last 25 to 30 years), choose the highest efficiency model possible ($1,400 to $4,000; new central air costs $1,500 to $3,000). The greenest option is ground source heating, also known as geo exchange ($18,000 to $40,000 to install; annual cost to run is about $10). When it’s time to replace a water heater (every 15 years), consider an on-demand unit, which costs 60 per cent less to run ($1,000 to $2,500 to install). Until then, launder in cold water and install low-flow showerheads and aerator faucets, which mix air and water to give less flow while maintaining high pressure. Savings: About 30 to 40 per cent increase in efficiency; switching to a geothermal energy system will cut costs by 300 to 500 per cent. VM
HOW TO GET AN ENERGY AUDIT
An audit is the best way to assess where your home is losing money and determine a cost-effective fix. “A few simple changes can add up to savings of $100,000 to $150,000 over a lifetime,” says Kemp (expect to pay $100 to $300 for a two-hour audit). Because some changes are best done during a renovation, pre-reno is the best time to have an inspection. However, even home owners who aren’t tearing out walls can benefit. Look for an EnerGuide certified auditor such as Green Communities Canada (www.greencommunitescanada.org) or GreenSaver (www.greensaver.org; 416-203-3106; across Ontario).

ollywood often glorifies cell phone disposal â&#x20AC;&#x201C; spies and agents ditch their used cell phones in the closest garbage can to avoid being traced, tracked or made. In reality those agents should be recycling their e-waste. Electronic waste, or e-waste, is a growing problem as consumers race to catch up to evolving technology by buying the newest smart phone, slimmest laptop or fastest tablet. In 2010, Statistics Canada reported citizens of Ontario own 42 per cent, or 10,832,130, of the mobile phones in use in Canada. Canadians greatly contribute to the estimated 50 million tonnes of e-waste that are disposed of each year worldwide (which to put it in perspective is the equivalent to 50,000 LCD televisions or 3,250,000 laptop computers). The City of Toronto tries to prevent e-waste from entering landfills by offering a free e-waste recycling program to residents living in houses, apartments and condominiums.

SCHOLARLY AMBITIONS Bitsie Tulloch on why she ditched her academic aspirations for Hollywood – and couldn’t be happier. BY BONNIE SIEGLER | PHOTOGRAPHY BY ELISABETH CAREN
I love Cinderella and Rumpelstiltskin,” says actress Bitsie Tulloch on her favourite Grimm fairy tale characters. “I’ve always loved a happy ending with a princess,” says the female lead of the popular TV series Grimm. “The truth is, I read the childlike versions because the originals that the Brothers Grimm had collected over 200 years ago were incredibly gruesome. Did you know in the original Cinderella the step sisters get their eyes pecked out by crows? Very gruesome indeed. I didn’t realize until I was older that these tales were so gory.” HER STORYBOOK LIFE
Although Tulloch was born in San Diego, California, she was less than a month old when her family moved to Guatemala. “My mom’s family is from San Diego, and I’m ninth generation, so it was very important for my mother to continue the tradition of her family being physically born in San Diego,” says Tulloch. After the birth, they were off. After an initial move to Central America, a young Bitsie (named after her grandfather’s nickname) spent her formative years living overseas in Spain, Uruguay and Argentina until she landed in New York for high school. Afterwards, Tulloch attended Harvard with academia career goals. Although she graduated Magna Cum Laude, Tulloch decided to pass on her academic plans and try acting. “I just feel there’s a plan, fate, destiny – whatever you want to call it. You really need to listen to your instincts and trust that inner voice when it speaks. Mine said to try something that scared me more than academia, and I did.” DON’T HATE HER BECAUSE SHE’S BEAUTIFUL
“I don’t like working out,” says Tulloch. “I can’t remember the last time I was in a gym.” She also never weighs herself and
eats mostly carbs with very little protein. Don’t hate her just yet though. A screen-worthy physique doesn’t come quite that easily. Tulloch does admit to regular Pilates and Gyrotonic classes for strengthening and balanced muscles. She also walks everywhere. “I live in Portland most of the year [Grimm is shot there] and it’s definitely a walking city,” says Tulloch. “I walk Henry, my French bulldog, every day. He even goes to work with me and hangs out in my trailer.” Not one for culinary skills, Tulloch says she’ll order meat, fish or chicken when dining out; at home, however, it’s mostly carbs. “I eat a lot of brown rice and other carbs. I think when people start denying themselves what the body wants, they end up eating more,” says Tulloch. “I snack on cheese and crackers and I like a glass of red wine here and there.” To boost her overall health, Tulloch loads up on fruits and vegetables in a morning smoothie, and takes a regular multi-vitamin, fish oil, iron, and a hair, skin and nail supplement. Ultimately, Tulloch says she feels the most beautiful when she’s at peace. “If I’m feeling calm, beautiful and peaceful on the inside – if I’m not thinking about the outside – that’s when I look my best.” To keep things in perspective, Tulloch constantly checks in with herself to find gratitude in daily life. “Faith and gratitude really keep me stable and grounded,” she says. “I’m a pretty happy person and I’m constantly reminding myself how lucky I am; which isn’t to say I don’t have hard days, however there’s always that little voice saying it’s not that bad and things will get better.” From Harvard to Hollywood and academia to acting, Tulloch says her life is well balanced and very happy. “I think a lot of balanced living is taking the focus off of yourself, which is why having Henry is good for me. How actor Lauren Holly found solace by moving to Canada and learning to take it easy on herself

ctor Lauren Holly was at one time married to famous Canadian Jim Carrey, who she co-starred with in Dumb and Dumber, but when we think of her we associate Holly with America. She was born in Pennsylvania and raised in Geneva, New York. Holly is also remembered for her patriotic American roles such as Deputy Sheriff Maxine Stewart on TV’s Picket Fences and Director Jenny Shepard on NCIS. So it may come as a surprise to many that Holly has lived in Toronto for over seven years. “I didn’t want to raise my three boys in Los Angeles,” says Holly. “The mixture of cultures and open-minded attitudes in Toronto are a great example to my sons.” Living in Canada’s largest city also places Holly close to her upstate New York roots. Of course, the fact that Holly stars in Motive, which shoots in Ontario, also makes Toronto the perfect place to call home.

Seriously though, if I notice I’m gaining a little too much weight I start to drink more water and I eat really clean for a few days. Then cravings start to go away and I can return to healthy eating.” WHAT DOES HEALTHY EATING MEAN TO HOLLY?
“There’s always lots of fresh fruits and vegetables in our house,” she says. And not a lot of meat. “I don’t eat meat anymore – I just don’t want to. I feel more energetic without it. I’m not sure if I will always stay this way. For now, however, my body doesn’t want it and I feel so much better as a vegetarian.” Holly also swears by the vitamin and energy drink Verve! By Vemma. “It gives me a great boost,” says Holly.
SIZING HER UP
At five-foot-eight, Holly admits that most people find her taller than they would expect. “For some reason people always expect me to be much shorter,” says Holly. “Physical stature doesn’t mean as much on the big and small screen – it is make believe, after all,” says Holly. Still, Holly isn’t always 100 per cent comfortable in her skin. “I’m really not sure why,” she says. “I feel like my whole life I have spent getting comfortable in my skin; then I shed it for an updated version and so on. I’m a comfortable skin shedder and rejuvenator.” Perhaps it’s because actors constantly have to reinvent themselves on screen, so it’s difficult sometimes to stop trying to reinvent oneself in real life. The 50-year-old actor has always been slender, however she feels she’s bigger now than earlier on in her career. “I feel good 92

Between a hectic shooting schedule for Motive and raising three boys, Holly says it’s a challenge finding time for everything in a day. “I struggle with letting things go,” she says. “I like that I’m busy and engaged; I think it’s a good example for my kids. They see me work hard, earn what we have, and they respect it. My family is a team, and we work at our life together.” Still, as every working mom can attest, there are times Holly needs to be alone. “Even if it’s just to breathe deeply,” she says. “We all forget to do that. Focused breathing helps me de-stress and relax. I also really rely on silence. No sound, no conversation, and stillness for 10 to 15 minutes a day works wonders for balancing out my days and keeping a grounded sense of self.” VM

rior to visiting Shaker Village, my only familiarity with the Shakers was with their meticulous furniture making skills and the little bit of history I had reviewed with my son during grade school. Needless to say, my visit to Shaker Village of Pleasant Hill (located about 25 miles outside of Lexington, Kentucky) proved to be quite an awakening. Shaker Village was preserved and renovated in 1961 after years in disrepair. Now a National Historic Landmark, Shaker Village of Pleasant Hill sits on 3,000 acres in Kentucky’s Bluegrass Region and is the largest restored Shaker community in the United States. SHAKER LIFE “The Shakers were a very progressive community,” says Amy Bugg, Marketing and Communications Manager. “They were entrepreneurs who engaged in and invented some of the latest technology of the time.” When Pleasant Hill was flourishing in 1823, the skilled farmers had almost 3,000 acres of wheat, rye, oats, and extensive fruit orchards – all producing enough surplus to be shared with the poor and exported up the Ohio and Mississippi rivers. The innovative settlers erected a municipal

water system complete with a water tower, and their superior quality craftsmanship was highly sought after. The Trustee House at Pleasant Hill displays a marvel of Shaker architecture – a twin spiral cherry wood stairway that seamlessly winds up three flights. The Shakers believed that pride in their work was the currency of their service to God. All their devotion was put into what they made with their hands. The Shakers invented hundreds of labour-saving devices such as the clothespin and the circular saw. They shared these novel and original inventions with others, without patents. VISITING THE VILLAGE Today, the Clapboard Building (erected in 1923 to formally serve as a meeting house) plus the dwellings, barns and craft shops serve as a restaurant, gift shop, and inn where guests can stay in the simple, historic rooms that once housed the Shaker families. With more than 70 guest rooms, suites and private cottages spread throughout the 13 restored 19 th century buildings, the village gives guests a glimpse into the Shaker lifestyle with furniture reproductions and hardwood f looring.

“It’s tough to tell how many visitors we actually receive,” says Bugg. “We can count the number of tour tickets we sell annually and we know how many overnight guests we have, however there are a number of folks who hike, horseback ride, drive, dine and shop on the property who are not in those figures.” Some of the more intriguing sites for visitors include the Centre Family Dwelling, which is the main tour building. Also, all guests who dine or check in at the Inn at Shaker Village visit the Trustees’ Office where the dining room is located. Hikers and horseback riders enjoy the 3,000 acre Nature Preserve and explore 40 miles of trails, and the farm and garden are seasonal hits with families. The Nature Preserve showcases beautiful hills and countryside covered by restored native prairies, woodlands, fields, and diverse plants and wildlife. “Many of our hikers and nature enthusiasts ask questions about wildflowers, wildlife and conservation efforts,” says Bugg. Along self-guided walking tours through the village, costumed workers give glimpses into Shaker life, while skilled artisans work at 19th century trades, such as blacksmithing and historic farming. During the spring, summer and fall, wagon rides are

The Shakers focused on conservation, excellence and productivity, and Bugg hopes that visitors will learn, and take home with them, some positive aspects of the Shaker’s existence and life.
