September always seems like the true beginning of the year. We’ve grown up knowing it as our back to school month – a time of new classes, new schools and new beginnings. Chances are you no longer go to school; maybe it’s your kids that you are now packing lunches for, shopping for new shoes and backpacks, and assuring them they’ll make new friends and have fun. Even if you don’t have kids, there’s still something about this month that transitions us from summer to fall and makes us want to refresh our lives. According to the Farmers’ Almanac, September is the best time to start a diet. It’s also the month that will give you the highest success ratio of losing weight. If you’ve tried lots of diets before, I challenge you to make this the month that you will finally stop your cycle of restrictive dieting and change the way you eat for good. In “Stop the Cycle!” (page 54), nutritionist Mirna Sharafeddine shares the negative impact of restrictive dieting and how it can actually lead to long-term weight gain. The word “diet” doesn’t have to mean starting a restrictive eating plan: think of a diet as a healthy eating plan for life. When you start a diet, make sure it is something that is attainable and realistic for you to follow on a daily basis. Challenge yourself to overhaul the way you eat with Sharafeddine’s six simple rules for maintaining a healthy weight on page 56. You’ll feel better, look better and still have enough room in your diet for a little fun. If you’ve decided to use September as a gateway for change, you should also look at the way you manage the stressors in your life. If you’re feeling tired and sluggish, you may be suffering from adrenal fatigue. Find out how the right supplements and a few lifestyle changes can boost your energy and help you feel great again in “Tired of Being Tired?” (page 60). Of course with everything good, there is always a little bad. While a time of change is exciting, none of us are ever happy to say goodbye to the good weather and carefree days of summer. And, if you’re a parent, chances are you’re not happy to start making school lunches again. Most kids are notoriously picky eaters when it comes to eating on the go. Finding something healthy that will grab your child’s attention when friends distract her is a challenge. Turn to “Snack Time” page 76 for quick ideas for healthy foods on the go. I especially love the oatmeal-raisin cookie dough balls. They’re a great replacement for packaged snacks and are nutfree (unlike most homemade granola bar recipes).

Life is never perfectly balanced – especially when you have kids. It’s always trying to work things out, and then shifting it all because things are continually changing. When Denise Richards arrived at a high school on the outskirts of Los Angeles at for Viva’s September cover shoot, the educational setting was instantly transformed with her high energy and enthusiasm. The glam team went into action as Richards tried on various couture selections. The final choices were difficult, because each one looked better than the last. “I feel like Cinderella,” said Richards as she plunked down in the makeup chair. “I’m very girly, so I love having my hair and makeup done.” While finishing touches were perfected, the actor nibbled on fruit, veggies and hummus. Towards the end of the shoot, Richards’ children showed up after their day at school. Tales were exchanged between mom and the girls while they ate their snacks. “I’m thankful for mine and my girls’ health because without that, you don’t have a thing,” said Richards, as they got ready to pose for the camera as a family.

CHIA SEED OIL While chia has been consumed as a power food since the days of the Aztecs, Canadians have only recently gone crazy for it. LIMIT ANTIBIOTIC USE IN CHILDREN Diseases related to metabolism and the immune system are increasing at a dramatic rate, and researchers at the University of Minnesota feel that early antibiotic use could be to blame. Antibiotics use in children impacts the gut bacteria during a sensitive time period, putting them at an increased risk for allergies, obesity and certain diseases later in life. In the case of allergies, specifically, the use of antibiotics may eradicate key gut bacteria that can help immune cells mature. These cells play an essential role in keeping the immune system functioning when confronted with allergens. Experts estimate that antibiotics may be overprescribed in children up to 50 per cent of the time. So, don’t use them as a quick cure all. Make sure your child is truly in need before introducing an antibiotic to their body. Remember, it’s always better to take a preventative approach and to make a naturopathic doctor a part of your family’s health regime.

SHOULD BOYS GET VACCINATED FOR HPV, TOO? HPV is the most common sexually transmitted disease in Canada, with approximately three out of every four sexually active Canadians becoming infected with it at some point in their lives. SAY NO TO PALM OIL The cheap pricing and huge global demand for palm oil has caused major issues such as deforestation, habitat degradation, animal cruelty and global warming. There’s a reason Dr. Sanjay Gupta, CNN’s chief medical correspondent stated: “It’s time for a marijuana revolution.” People’s attitudes are changing when it comes to marijuana. For the first time ever, a majority of Americans favour the legalization of cannabis, and a whopping 77 per cent support using it for medical purposes. Marijuana is much more complicated than rolling a joint. The cannabis plant contains more than 400 individual chemicals. Until recently, the vast majority of studies have focused on those chemicals that can cause potential harm to the body. Now however, more and more research focuses on the plant’s ability to help with ailments such as post traumatic stress disorder (PTSD), multiple sclerosis, arthritis, HIV, glaucoma, epilepsy, Alzheimer’s, chronic pain and even cancer. Potentially one of the most significant forms of medical marijuana is cannabis or hemp oil. Cannabis oil first gained recognition through promotion and distilling information supplied by Rick Simpson, a Canadian cannabis pioneer. In fact, one of its first names was Simpson oil. It is an essential oil created from the hemp plant. The cannabis is distilled to its essential active cannabinoids, with as much of the plant material as possible removed. Cannabis oil is extremely potent and contains sedative purified decarboxylated cannabis resin with 95 to 98 per cent tetrahydrocannabinol or THC. Proponents claim that THC is has 48

a powerful ability to fight disease. Some people even hail it as “nature’s cure for cancer” because of claims that cannabis oil may have the ability to reprogram cancer cells to kill themselves. In addition to its medical benefits, cannabis oil also has anti-aging properties. As we age, our vital organs deteriorate and this impairs the function of these organs. Even in small doses, cannabis oil can help to rejuvenate vital organs and make you look and feel younger. HOW CANNABIS OIL WORKS Some experts believe that the many potential benefits from cannabis oil may originate with its effect on the pineal gland. According to the Canadian Mental Health Association, the number of Canadians reporting stress and anxiety has increased by 30 per cent since 2009, and this number continues to rise. This increased stress can deprive our bodies of the essential deep sleep we need to function and be at our best everyday. Researchers now believe that imbalances in the stress hormone cortisol are responsible for decreasing sleep quality. A recent study at Penn State College of Medicine looked at various ages of otherwise healthy subjects to see how cortisol levels affected the time they spent in deep sleep states. Regardless of age, those

who had higher levels of cortisol in their body spent significantly less time in the deep sleep states (Delta and REM) that are responsible for physical and mental wellbeing and recovery. y workday used to start at 6:00 a.m.; a busy plastic and reconstructive surgeon, I would down a double espresso to help me make it through the next 12 hours of operating. Seven days a week I was in the hospital – often for up to 20 hours in a row. Then in 1999, I was diagnosed with Crohn’s disease, a severe inflammatory disease of the intestinal tract. I was able to manage the disease with medication for several years, however it became progressively worse with time. I went down to a weight of just 88 pounds (from a starting weight of 165 pounds) and was in constant pain and unable to work. In October 2008 I was admitted for emergency abdominal surgery where over half my colon and small intestine were resected. I ended up in the intensive care unit and had to stay in the hospital for three months. My wife Sonia was pregnant with our first child at the time and I was hardly able to walk a few steps. The surgery saved my life, but it left me nutritionally depleted. I felt constant pain in my bones, my vitamin D levels didn’t register and my vitamin B12 was so low I started losing sensation in my fingertips. I went to the hospital every week for intravenous infusions of vitamins to help aid my recovery. While the IV vitamin infusions worked, they were painful, inconvenient and expensive. ou’ve tried every diet out there, and despite your best efforts nothing seems to work. To top it off, you’re exhausted, stressed and confused. What you may not realize is that all your weight loss efforts could actually be having the opposite effect. Dieting can slow your metabolism and hinder your ability to lose weight. When you go on an extreme calorie-restrictive diet, your body responds by turning your calorie and fat-burning ability to low in order to conserve energy for essential body functions. The energy required to sustain those vital functions is called your basal metabolic rate (BMR), and it mainly depends on your age, gender, muscle mass and the health of your thyroid. An average woman (5-foot-2 and 130 pounds) has a resting BMR of about 1,200 to 1,300 calories. That’s the amount of food you need to eat each day in order to maintain your basic activities such as breathing, digesting food and keeping the brain, heart and lungs working. Any movement requires additional calories. If you follow a diet with insufficient calories to support your BMR for a month or longer you may start to experience metabolic troubles. 54

RESTRICTIVE DIETING PUTS YOUR BODY INTO A STRESS MODE, TAXING YOUR THYROID. THE THYROID CONNECTION So how does all of this dieting affect your thyroid? The brain’s pituitary gland gives the thyroid a signal via the Thyroid Stimulating Hormone (TSH). TSH stimulates the thyroid to produce two hormones: T4 (Thyroxine) and T3 (Triiodothyronine). The amino acid tyrosine (a building block of protein) and minerals iodine and selenium are essential in the process. T3 is the most active form of the hormone; it binds to receptors on your cells in order to regulate your metabolism, body temperature and help you burn fat. Most of the T4 must be converted to active T3. When you cut down calories to a very low level, your body goes into stress mode. Stress causes T4 to be converted to a hormone called reverse T3 instead of active T3. Reverse T3 takes the place of T3 on receptor cells, but it is unable to turn on the switch to tell your metabolism to start working. It’s like a key that fits in a lock, but is unable to turn and open the door. This not only puts the brakes on your ability to burn fat, but also diminishes your capacity to break down stored fat for energy. Tyrosine is also involved in the production of stress hormones such as adrenaline. During periods of stress, more tyrosine is used for stress hormone production and less becomes available for the thyroid. This becomes even more troublesome if you have a vigorous exercise routine, coupled with a diet that lacks the essential building blocks to produce hormones and re-build muscle tissue. Your body ends up breaking down muscle for energy instead of fat, which slows down your metabolism even further. Some of the first signs of a thyroid imbalance are lack of energy and sensitivity to cold. Hair loss, dry skin, constipation, joint pain and stiffness and even depression are some of the more advanced symptoms. If you experience any of these symptoms and you are a chronic dieter, you should visit your healthcare practitioner to get evaluated. REBUILDING YOUR THYROID Fortunately, with the right diet, adequate calories, some lifestyle changes and the necessary nutrients, you can nourish your thyroid back to health. Here are four essential steps to getting your thyroid back on track and returning your metabolism to peak working order. Stress Management When you are trying to restore the health of your thyroid, it’s essential that you manage your daily stressors. Take time to relax

and do activities and forms of exercise that you enjoy. Yoga and meditation are great choices, but any activity that de-stresses your mind will help you relax, whether it is journaling, walking in nature or dancing. Eat Nutrients That Will Help Synthesize Thyroid Hormones Consume adequate amounts of tyrosine. It’s found in high quality protein sources including cheese (Parmesan is the highest), chicken, turkey, salmon, beans, eggs and lentils. It’s also found in wild rice. You’ll also want to make sure you have sufficient amounts of iodine and selenium. To get enough iodine, eat kelp salt instead of regular salt, plus seafood, sea vegetables, yogurt and eggs. You don’t need a lot of selenium. You can get your daily requirement by just eating two Brazil nuts. Selenium is also found in shrimp, sardines, chicken, brown rice, mushrooms, chia and sunflower seeds. ❯ SEA VEGETABLES SUCH AS KOMBU, KELP, NORI AND WAKAME, AND SEAFOODS SUCH AS COD, SALMON, SARDINES AND TUNA ARE ALL GREAT SOURCES OF IODINE.

Make Sure Your Diet Doesn’t Impede Thyroid Hormone Production. Some foods such as unfermented soy products and raw cruciferous vegetables (broccoli, kale, cauliflower, bok choy and Brussel sprouts) contain chemical compounds called goitrogens that make it harder for the thyroid to create its hormones. While these foods are highly nutritious, and shouldn’t be eliminated from your diet, it is wise to prepare them in a certain way if you have a thyroid imbalance. Simply fermenting or steaming theses foods will help neutralize goitrogens. For soy, this means eating fermented soy products such as tempeh, miso and natto. Don’t Get Caught in a Diet Cycle Ask yourself what will happen once you stop your restrictive diet and go back to eating “normally.” You will gain weight, because even if you are eating less than before you are also burning less because you will have a slower metabolism. Then you’ll go back on another diet. Unless you break the diet cycle and restore your metabolism, the cycle will never end. 3. EAT REAL FOOD Eat whole foods as close to their natural state as possible. For example, pick a whole apple over applesauce or juice. When most of your meals are made from whole foods instead of coming out of a package, your cravings will diminish and you will lose weight naturally. One of the reasons we crave more when we eat processed foods is because those foods are devoid of nutrients. Your body wants more because it has not obtained the vitamins and minerals it needs.

4. MAKE HEALTHIER VERSIONS OF YOUR FAVOURITE TREATS Make healthier versions of your favourite foods. 1. STOP EXTREME DIETS Instead of following a diet because it “worked” for someone else, start to observe how certain foods make you feel – energized, lean, tired or bloated. When you realize which foods make you feel less than awesome, you will not want to eat them again. Try to avoid depriving yourself all week so that you can splurge on the weekend. This mentality is not healthy and leads to binge eating followed by guilt and more deprivation. Instead, savor special moments when they come up and focus on eating healthy most of the time.

2. CUT PROCESSED SUGAR OUT OF YOUR DIET. Most of us eat way too much sugar, which leads to many health conditions such as type 2 diabetes, cholesterol and heart disease. espite the vast amount of information that exists on diet and supplementation, consumers are still confused as to what exactly healthy eating entails. Here’s what you need to know about getting the nutrients you need, and making sure there isn’t anything missing from your diet. WHOLE FOOD MUST-HAVES In a nutshell, the more foods you eat in their whole form the better – organic and locally grown are ideal. Aim to eat a large variety of complex carbohydrates, including vegetables and whole grains, each day. Most fruits, dairy products, legumes, and even nuts and seeds also contain some complex carbohydrates. What’s key is to keep your diet natural, and stay away from processed foods and sugar-sweetened beverages, desserts and refined grain products as much as possible. Fibre is also an essential component of a healthy diet. There are two basic forms: soluble and insoluble. Soluble fibre may help improve cholesterol and blood sugar levels. Avocado, Brussels sprouts, legumes and oats are examples of soluble fibre. Insoluble fibre, on the other hand, helps prevent constipation by adding bulk to stools. Vegetables, wheat bran and other whole grains are good sources of insoluble fiber. Protein from both animal and plant sources is necessary for growth and development. In my experience, many people lack adequate amounts of protein in their diet. The World Health Organization recommends 0.8 grams of protein per kilogram of weight per day for the average sedentary person. Those with active lifestyles or nursing moms will have higher requirements.

It’s best to speak to a health care professional for your specific protein needs. Good fats also play an important role in a healthy diet. Without dietary fat, your body will not be able to absorb fat-soluble vitamins like A, D, E and K. Good fats help maintain the structure and function of your cell membranes and help with your hormone production and keep your immune system strong. Unsaturated fats from various fish and lean poultry, olive oil, nuts and seeds and their oils are all good sources of fat. Omega-3 fatty acids are considered essential fats because your body is unable to naturally produce them. Foods high in Omega-3 include cold-water fish like salmon, mackerel and sardines, flax seeds and flax seed oil, vegetable oils, nuts (especially walnuts), and leafy green vegetables. Many of us are aware that trans fatty acids are detrimental to good health. They can increase the risk of heart disease and should be avoided as much as possible. Though trans fats do occur naturally in some foods from animal sources, most are created during food processing through partial hydrogenation of unsaturated fats. Margarine, shortening, snack foods, commercially baked goods and deep fried foods usually contain trans fats. SUPPLEMENTING YOUR DIET ❯ CALCIUM, POTASSIUM, MAGNESIUM, AND VITAMINS A, C AND D ARE LACKING IN MANY DIETS.

Supplements should not be a replacement for healthy eating. We get far greater nutrition from eating a whole food than we would from just taking a supplement. Take kale for example, it is both high in protein and fibre and contains vitamins A, C, K, folate

Kale also contains lutein and zeaxanthin, which give the veggie its deep green colour and protect against macular degeneration and cataracts. Minerals including phosphorus, potassium, calcium and zinc are also found in the leafy green. No wonder it’s referred to as a superfood! However, there is evidence to suggest that some supplements can enhance your health, even if you are doing your best to eat healthy. The most popular supplements are multivitamins, calcium, folic acid and vitamins A, B, C and D. Calcium and vitamin D are both important in maintaining healthy bones, folic acid helps us produce and maintain new cells, and vitamin A maintains healthy vision and a strong immune system. Vitamin B12

helps keep nerves healthy and gives us energy. Vitamin C is high in antioxidants, the molecules that prevent cell damage and help us maintain health and a youthful appearance. Additionally, several studies suggest fish oil can promote heart health. Moreover, there are a few instances when people have special supplement needs: Pre- and Post-Natal Folic acid is important for all women of childbearing age. Most women require extra iron during pregnancy and can also benefit from a pre-natal multi-vitamin. Breastfed infants need 400 daily International Units of vitamin D. FINDING WHAT’S BEST FOR YOU In terms of finding the best supplements to fit your needs, in the appropriate doses, it’s important to speak to a naturopathic doctor or other health care provider. Be sure to inquire about possible side effects and interactions with any medications you might be taking. I like to quote Epicurus in terms of finding balance in the way you eat: “I believe it is best to adopt moderation in what we do. Be moderate in order to taste the joys of life in abundance.” If you are eating refined or processed foods regularly, you are not adopting moderation in your diet. On the other hand, complete deprivation is not a good idea either as it usually leads to strong cravings and over indulgence. Let’s face it, living a joyous life means occasionally indulging in your cravings. Just make sure that most of the food you eat is healthy! VM

very day in my practice I see patients who complain of unrelenting fatigue. They wake up unrefreshed, drag themselves through the day and, if given the opportunity, could nap in the afternoon. Some patients sleep through their alarm every morning only to hit snooze half a dozen times. Then they nurse themselves with coffee all day so that they can function and feel “normal.” These patients often feel unmotivated and irritable. Activities that once gave them pleasure no longer do. Most feel overwhelmed by even the slightest amount of stress; it’s as if their bodies’ coping mechanisms are completely exhausted. These patients also have an incredibly hard time losing weight, even though they may exercise vigorously and eat healthy. What all these patients have in common is that they’re suffering from adrenal fatigue. HOW THE ADRENAL GLANDS WORK The adrenal glands are two small glands that sit on top of each kidney and are the body’s main stress responders. The body typi-

cally responds to physical and emotional stress by producing adrenal hormones such as epinephrine, norepinephrine and cortisol. These hormones are then released into the blood to prepare the body for combating perceived dangers by increasing blood pressure, heart rate and by making more energy available for fuel – this is known as the “fight or flight” response. The body then turns the response inward, affecting organ systems such as digestive, nervous and circulatory. When this happens, conditions such as ulcers, headaches, weight gain, allergies, anxiety, depression, fatigue and insomnia can develop. The stress response is obviously essential to life because it allows us to handle life’s challenges. However, when we trigger the stress response too often, problems arise as the stress hormones are continuously pumped out and the body becomes depleted and exhausted. Eat plenty of colourful veggies and fruits, whole grains, good fats and free-range and organic lean proteins. Be sure to include at least one or two litres of filtered water daily. 6. BALANCE YOUR HORMONES. Hormone imbalance is a stress on the body. Balancing your hormone levels will help optimize the function of the adrenal, thyroid and other glands. For example, try to minimize your exposure to hormone disrupting chemicals such as BPA (found in plastics) or phthalates (found in most conventional beauty products). Check out ewg.org for more information on what to look for on labels so that you can optimize hormone balance. 7. TAKE THE RIGHT SUPPLEMENTS. Stress can cause your body to use up nutrients more rapidly, so extra anti-stress vitamins and minerals are needed to support the body. Vitamin C, zinc, B vitamins and magnesium support both adrenal function and

the nervous system during times of stress. The B vitamins, especially B5 and B6, have active roles in regulating mood and emotional wellbeing. Deficiencies of B vitamins result in worsening of psychosocial stress and symptoms of depression, irritability, and tiredness. Taking a B complex (50 to 100 milligrams) once or twice a day can be helpful. busy actor and mother of three, Denise Richards has weathered a lot over the years – a contentious divorce from Charlie Sheen, the loss of her beloved mother to kidney cancer in 2007 and the challenge of raising her daughters – Sam (11), Lola (10) and Eloise (4) — amidst media scrutiny. No stranger to stress, Richards navigates the role of super mom, while amping up her career with a new webisode run of Vanity, CW’s Significant Mother and a holiday TV movie Christmas Switch. However, even with all the chaos, Richards refuses to let her hectic life dampen her outlook. “I wouldn’t even call my life stressful,” says the 43-year-old, dressed down in jeans, a tee and ballet flats. “It’s just a matter of juggling everyone’s schedule and making sure I’m on top of whatever is needed for school, my work commitments and everyday life.” Parents need to learn to juggle everyone’s activities. “If you can focus on the positive, and stay hopeful, you gain an inner strength; I believe things happen for a reason.” Richards’ vibrant energy is evident from the minute you meet her. The strength in her handshake belies her lithe 5-foot-6 figure. “Yes, I’m a single mom and my kids are always my first priority, but I do my best to find ‘me time’ whether it’s socializing with friends, doing a Pilates class, going on a hike or just walking along the beach. I love walking barefoot in the sand and feeling my toes gripping into the sand. I am working on trying to find more time for myself because I think it’s important to have that. It makes any person a better parent, a better friend, a better co-worker. It’s a balance.” POWER MAMA Richards admits she’s a girly-girl who loves getting her hair and makeup done, but she’s also a strong woman who opts for simplicity in her lifestyle. “Sure, I love dressing up in gorgeous clothes, but that’s not the real me,” she states while sipping a Matcha green tea with almond milk. “I’m usually in jeans and flip flops. I think ultimately, I’m a strong, compassionate and sometimes stubborn woman. It empowers me to be secure with myself, to make decisions on my own and be a single mom – all on my own.” Richards thrives on seeing how grounded her daughters are and is so proud of the women they are growing up to be. The actor has been through a lot and she wants her daughters to be equally strong-willed. “I wouldn’t be able to get through any of the challenging times in my life unless I was strong,” she says. HEALTHIER THAN EVER “I’ve always been very spiritual,” says Richards. “Whether it’s com70

ing from the Midwest or just the way my parents raised me, I have a moral compass and inner spiritualty.” The California girl is also driven when it comes to eating a healthy diet. Richards admits that she’s always been into healthy foods, but it’s been even more important since her mother was diagnosed with cancer. During this tough time, researching and reading became a daily routine for Richards who sought out the healthiest lifestyle for herself in the wake of her mom’s illness. Her goal is to ensure her own personal longevity so that she will be around for her children in years to come. “Ever since I was young, I’ve always had a very clean lifestyle and good, healthy eating habits,” says Richards. She starts her day at 6:00 a.m., lets the dogs out and makes a Kona coffee. One of her favourite breakfasts is a small bowl of oatmeal mixed with a bit of coconut oil, topped with sugar and fresh fruit – pineapple, papaya and berries are her favourites. Later for lunchtime, Richards digs into a hearty homemade vegetable soup or a big salad. Healthy snacking is an important component of good eating for the whole family. “I pretty much eat all day long. My kitchen looks like a farm stand with fresh cut veggies and fruits. Sami is a vegetarian, and my eating is about 70 per cent vegan. My big exceptions are that I love Haagen-Dazs ice cream and I love half-and-half in my morning coffee. I don’t think that will ever change.” BEAUTY SECRETS Along with regular exercise and healthy eating, Richards has a few other secrets in her beauty arsenal. “I’ve worn sunscreen since I can remember,” she says. “I do an SPF 40 and, if I’m at the beach all day, I’ll up it a bit.” And then there’s water, water and more water. “I think water is very healing and it flushes out toxins from the body,” says Richards. “I like the feeling of very cold plain water. Once a day, I’ll have a glass with lemon squeezed into it because it’s a good body cleanser. I’ve never been a soda drinker, but I do drink fresh juices that I make at home.” DO WHAT MAKES YOU FEEL GOOD To round out Richard’s healthy living plan, help her relax and boost her immunity, she’s recently embraced alternative and holistic remedies such as acupuncture. “When I first heard about acupuncture a few years ago, I thought what on earth could these little points do, but I actually do find it beneficial. If I start to feel rundown or have stress in my body, I’ll go for an acupuncture session.” You’ve got to control what you can in this world and if something makes you feel better – go for it. VM

BUNNY RABBIT ROLLS MAKES: 12 ROLLS

INGREDIENTS: • 3 flour tortillas • 1 cucumber • 1 red bell pepper • 2 carrots, peeled • 6 tbsp. cream cheese • 3 tbsp. raw sunflower seeds • 1 cup chopped baby spinach

DIRECTIONS: 1. Warm the tortillas in the oven to make them more pliable. 2. Cut the cucumber, red bell pepper, and carrots into thin ribbons using a vegetable peeler or a mandoline. 3. Place all three tortillas on the countertop. Onto each tortilla, spread two tablespoons of the cream cheese and sprinkle one tablespoon of the sunflower seeds. In the center of each tortilla, arrange a third of the mixed vegetable ribbons and a third cup of the spinach. 4. To create rolls, tuck in two sides of each tortilla and, starting at one end, roll into a tight tube. Place the rolls on a cutting board with their seam sides down. ROASTED PUMPKIN HUMMUS MAKES: 3 CUPS

INGREDIENTS: • 1⁄4 cup extra virgin olive oil • 1 small sugar pumpkin • 1⁄2 tsp. kosher salt • 6 grinds of black pepper • 1 garlic clove • Two 15-ounce cans chickpeas, rinsed and drained • 1⁄2 cup plain yogurt • 2 tsp. orange juice • Pinch of ground cumin

DIRECTIONS: 1. Preheat the oven to 375 degrees Fahrenheit and rub a baking sheet with two tablespoons of the olive oil. 2. Cut the stem off the pumpkin and slice it in half around the middle. Using an ice cream scoop, remove the seeds and membranes and discard. Sprinkle the pumpkin flesh with a quarter teaspoon of the salt and three grinds of pepper. Place the pumpkin halves, skin side up, on the oiled baking sheet and roast for about one hour, until the pumpkin is soft and caramelized around the edges. 3. Scoop out the cooked pumpkin flesh into the bowl of a food processor and discard the skin. Process until smooth. Transfer the pumpkin puree to a bowl and set aside. 4. Into the bowl of the food processor, put the remaining two tablespoons of olive oil and the garlic, chickpeas, yogurt, orange juice, cumin and the remaining quarter teaspoon of salt and three grinds of pepper and process until smooth. Add one cup of the reserved pumpkin puree and pulse to just combine. Add more salt and pepper to taste. 5. Serve roasted pumpkin hummus with crisp vegetables, pita chips or whole grain bread. Hummus keeps for four days refrigerated in an airtight container.

INGREDIENTS: • 5 carrots, peeled and ends trimmed • 2 apples, cored and cut into quarters • One 2-inch piece of fresh gingerroot, peeled DIRECTIONS: Following the manufacturer’s instructions for your juicer, juice the carrots, apples and ginger together. Pour into two glasses and enjoy. Fresh juice can be refrigerated in airtight containers for up to two days.

OATMEAL-RAISIN COOKIE DOUGH BALLS MAKES: 15 BALLS

INGREDIENTS: • 1 cup old-fashioned oats • 1 tbsp. extra virgin coconut oil, melted • 1⁄4 cup maple syrup • 1⁄2 cup pitted dates • 1 tsp. pure vanilla extract • 1 tsp. ground cinnamon • 1⁄4 tsp. kosher salt • 1⁄2 cup raisins DIRECTIONS: 1. Put the oats, coconut oil, maple syrup, dates, vanilla, cinnamon and salt into the bowl of a food processor and pulse to just combine. Add the raisins and gently pulse a few times to combine, being careful not to over process. 2. Transfer the dough into a medium bowl. 3. Scoop out a heaping tablespoon of dough and roll it between your palms to form a golf-ball-size treat. Place the rolled ball on a clean tray and continue rolling the remaining dough into balls. Cookie dough balls will keep sealed in a tin on the countertop for three days.

ASPARAGUS FRIES with Parmesan Cheese (from page 76) SERVES: 4

INGREDIENTS: • 1 bunch of asparagus • 3 tbsp. extra virgin olive oil • Kosher salt • 3⁄4 cup freshly grated Parmesan cheese DIRECTIONS: 1. Preheat oven to 425 degrees Farenheit. 2. Trim the asparagus ends where the spears naturally snap, and toss the spears with the olive oil and a sprinkling of salt. 3. Arrange the asparagus in a single layer on a baking sheet and roast for 20 to 30 minutes until crisp around the edges. Once the asparagus has reached a crispy brown, remove from the oven. 4. While the asparagus roasts, grate or sprinkle the Parmesan cheese onto a tray. Roll the warm spears in the cheese, gently shake off the excess, and lay the asparagus on a clean platter. DILL & PUMPKIN SEED PESTO PASTA PREP TIME: 5 MINUTES • COOK TIME: 15 MINUTES • SERVES: 4

INGREDIENTS: • 500 grams of pasta (any pasta is fine, I used spaghetti) • 2 cups of fresh dill • 1⁄2 cup of pumpkin seeds • Juice of half a lemon • Optional: dash of tabasco • Salt/pepper to taste • Olive oil

DIRECTIONS: 1. Cook up your favourite pasta until al dente. 2. Add dill, pumpkin seeds, lemon juice and spices to a food processor and pulse until blended. 3. Slowly add olive oil and pulse until mixture forms a pesto-like texture. Don’t over process, some texture is good. 4. When pasta is done, drain water. Toss your pasta while still hot with about two tablespoons per serving of pesto. Plate pasta with a sprig of dill, a few pumpkin seeds, a drizzle of your favourite olive oil and a little cracked pepper. NOTE: If you’re making the salmon recipe, double up on the pesto.

BAKED SALMON with Apple & Dill Pesto

BRUSSELS SPROUTS with Sundried Tomatoes & Parmesan

PREP TIME: 2 MINUTES • COOK TIME: 10 MINUTES • SERVES: 4

PREP TIME: 5 MINUTES • COOK TIME: 10 MINUTES • SERVES: 4

INGREDIENTS: • Four 6-ounce salmon fillets • 2 apples • 2 tbsp. olive oil • salt and pepper to taste • Dill & pumpkin seed pesto (see page 80 for directions)

INGREDIENTS: • 4 cups of Brussels sprouts, cut in half • 2 tbsp. olive oil • 1⁄4 cup water • 1⁄2 cup sundried tomatoes, chopped • 1 lemon • 1 tbsp. white wine vinegar • A liberal showering of Parmesan • 1⁄2 tsp. chili flakes • salt and pepper to taste

DIRECTIONS: 1. Pre-heat oven to 450 degrees Fahrenheit. 2. Thinly slice apples and place slices on top of salmon fillet. Season with salt and pepper. 3. Add two tablespoons of olive oil to a hot pan. Place salmon fillets (with apple) in pan and sear one side for a minute. 4. Make sure pan has an oven-safe handle and transfer to oven and cook for eight to 10 minutes (depending on how rare you like your salmon). 5. Remove salmon from oven and let rest for a couple of minutes. 6. Plate salmon and top with the dill and pumpkin seed pesto that you made for the pasta.

DIRECTIONS: 1. Heat a tablespoon of olive oil in a pan over medium-high heat. 2. Sear Brussels sprouts until brown. 3. Season with salt and pepper. Reduce heat to medium add water and vinegar. 4. Let liquids completely reduce. This will steam the sprouts and assure they’re cooked through while still firm and crispy. 5. Once pan is near dry, turn heat up again to medium-high and add a tablespoon of olive oil, sundried tomatoes, zest and juice of half the lemon and chili flakes. Toss for two minutes. 6. Top with grated Parmesan and a squeeze of lemon.

Occupation: Actor starring in upcoming Dirty Grandpa and The Family Fang. What is your number one comfort food? I would have to say caviar and French wine. Being Russian, however, I also make a mean Borscht. How would you compare your fridge contents now to what you had when you lived in Russia? I grew up at the end of communism when we had to stand in food lines and we had almost no food to put in our fridge. Sometimes all we had was a bag of oatmeal and some sugar. Now we have so much to choose from. My favourite thing is the non-chemical, non-GMO food movement. What keeps you eating a balanced diet? I need to eat a balanced diet in order to keep up my energy and be able to balance the demands of my life. Also, I’m big on teaching my three kids the value of eating healthy at an early age. What are some must-haves in your fridge? Sparking water and juice boxes (the latter for my kids). Fruit is also a must. What is the strangest food you have ever tried? I was flying to Iceland to do a magazine spread and the first thing they served on Icelandic Airlines was ram testicles – no kidding! I tried them and they weren’t so bad. Another time, when I was in Beijing, I tried snake blood. What is your favourite food? I love fresh strawberries, blueberries and other refreshing fruits with cool yogurt. What was a must-have during your recent kitchen renovation? Every meal is about lighting, so good lighting is essential to me. If I have a lot of people in the kitchen, then I want bright

lighting. If I have just a few people, then I like darker mood lighting. I also needed a large stove and refrigerator with an open concept kitchen. I love to entertain in the kitchen while cooking, and having the space makes it easier. What is your favourite meal to make for guests? I love making Borscht. It is so easy and delicious; everyone can participate in the kitchen with the chopping and adding ingredients to the pot. The best part of Borscht is adding the sour cream to make it tastier and rich. When you eat Borscht, you have to have lively conversation and have lots of singing. It is a Russian tradition to share your love for life in the kitchen and dining room. What is your most used ingredient? I love to add ginger to everything that I can. My favorite spice is ginger lemon from Dean and Deluca. What’s up next for you? I’m doing a coffee table book where various photographers are photographing me and I am going to caption everything with jokes. I never take myself too seriously and I find humour in every aspect of my life. I’m also producing and acting in a TV pilot called Supermodel Mom based on my life. I have changed many diapers in Christian Louboutin shoes.

nterior design is all about adding your own custom touches; it’s the little added details that will make your home noteworthy. The difference between a basic builder’s home and the swoon-worthy design magazine dream is not as vast as you might think. Home décor is similar to fashion. Think about the perfect little black dress; a stunning necklace is all it takes to go from okay to fabulous. Want to make your home a standout? Here are my top five custom add-ons to take your space from basic to notable: 1. APPLIED MOULDING: Elevate a builder basic living room, or add a chair rail in a stairwell with a simple one-and-a-half inch moulding. You can paint it in the same wall tone or accent with a crisp trim white. Materials are a few hundred dollars and this is a task even the novice do-it-yourselfer can do. 2. UPGRADE YOUR INTERIOR DOORS: Nothing screams builder basic quite as loudly as the standard interior door offering found in every big box store. On my renovation projects I try to add custom doors; be it extended height, solid core wood to match the floors or, even better, doing something truly unique like the sexy Baltic doors by ScanWest. 3. WALL PANELS: One wall is all it takes to wow visitors. Add a feature wall in stone, wood or a custom panel. I love the new custom wall panels from Earth Coverings. They come in 32 by 32-inch panels that are plastered and painted, hiding the seams to create a dramatic expansive effect. 4. GALLERY WALLS: Photography is one of the most literal ways to personalize a space. A shot or two in each room is nice, but they can get lost in the mix. I prefer to do groupings that begin to tell the story behind who lives there. Guests will naturally stop to ask questions about where and when each shot was taken, learning a bit more about their host in the process. 5. CUSTOM LIGHTING: There are few more prominent features in a home than the light fixtures. They are literally lit up adornments, demanding that guests take note. Having a custom light fixture made for feature areas like your dining room is a terrific way to add your personal style – and it’s a lot of fun! My clients love pulling images and sketching ideas with me. Then we enlist a custom shop to build the light. Lampcage in Toronto is my favourite. They create custom works that grace the pages of design magazines and humble entryways alike. VM

Q. WHAT CARS HAVE YOU DRIVEN IN THE PAST? A. I have driven all sorts of cars. My first was a Chevrolet Caprice. I’ve also had a Cadillac Sedan de Ville and Porsche 928. Q. WHY DID YOU SWITCH TO YOUR

CURRENT ECO-FRIENDLY AUTOMOBILE? A. I’ve had a mild obsession with electric cars since my nextdoor neighbour Eric bought a Tesla. I like the idea of getting off of oil. Plus, I had heard that electric cars were great fun to drive. Six months ago, Eric showed me the Fiat 500e he leased as his teen daughter’s first car. I immediately responded to it – it’s got that sporty Fiat design. The interior is sharp and sophisticated. It’s a really appealing vehicle. I bought a 2015 Granite Crystal 500e with a sunroof. Q. WHERE DO YOU DRIVE MOSTLY? A. I drive all over Los Angeles. I’m a dad and in L.A. that makes you an unpaid chauffeur. My 500e has seen most of the skate parks L.A. has to offer.

Q. WHAT’S THE FURTHEST YOU’VE DRIVEN ON ONE CHARGE? A. About 100 miles. Q. DO YOU FEEL THERE ARE ENOUGH CHARGING STATIONS OUTSIDE

OF CALIFORNIA? A. I have never taken the car outside the state. I’d like to see more charging stations installed everywhere. I think every public parking lot should have a couple charging stations. I’d also like to see Fiat come up with its own version of Tesla’s supercharger. Q. WHAT IS THE FIAT 500E LIKE TO DRIVE? A. Its ultra-zippy handling makes you feel like you’re go-karting through town. The lack of gears makes it blast off the starting line – I dig that. I live up in the Hills and I love to tear around corners in it – though I am occasionally chastened by my children on the way to school. Q. WHAT ULTIMATELY DREW YOU TO THE FIAT 500E? A. It combines an all-electric experience with sexy design and a spirited ride. I get a big kick out of the fact that I’ve driven 7,000 miles without a drop of gasoline – and it’s so fun to drive! VM

A DEFIANT NICHOLE GALICIA TALKS ABOUT HER SIMILARITIES WITH HER DEFIANCE CHARACTER KINDZI AND HOW SHE STAYS LOOKING AND FEELING HER BEST. BY BONNIE SIEGLER

ou may recognize Nichole Galicia as Leonardo DiCaprio’s love interest in Django Unchained, however it’s the fierce warrior Kindzi that she plays on the hit TV series Defiance that has garnered her the most fans. The actor credits her mother as an inspiration for Kindzi, an alpha female from an alien race. “My mom is smart, loyal and about her business. Like her, Kindzi is loyal and extremely focused,” says Galicia. “I am too.” The New Yorker says she relates to Kindzi’s ability to focus on a task and to be the best version of herself. “I too am a perfectionist.” Galicia is also a purist with the ability to maintain a happy, upbeat personality on most days. “I naively think I can fix anything,” she says. “I’m your annoying friend who you call when your sky is falling and I say: ‘Oh love, do A, B, C and problem solved.’ My mom once told me when I thought my world was coming to an end: ‘You have your health, a roof over your head and me, so you don’t have any problems.’” A SMART APPROACH TO HEALTHY LIVING The actor has always surrounded herself with strong, smart women, however when it comes to her inner essence she prefers a gentler approach to her fitness routine. “I love Pilates and 92

yoga; they are my go-to exercises,” says the former high fashion model. “I try to do Pilates five days a week, but sometimes that’s challenging when I’m travelling.” In terms of her diet, Galicia sticks to fruits, vegetables and protein as nutritional staples. “I’m a happier person once I’m fed,” she laughs. “I never skip a meal.” Her breakfasts usually consist of an omelet packed with veggies and “whatever I have in the fridge,” or steel cut oats with wild blueberries. She also drinks tons of water. For lunch and dinner, she’ll have fish or grilled chicken with a squeeze of lemon and loads of veggies. As for snacks, she says: “I always have nuts in a Ziploc bag in my purse, and sometimes sliced red peppers and carrots because I like a crunchy snack.” Fried foods and soda have never been a big part of Galicia’s eating plan, and now they are nonexistent. “I just wasn’t really raised with those items in my diet and only ate out as a kid on special occasions.” Yet, the perfectionist does reveal the cracks in her armor. “Georgetown cupcakes, sparkling Gewürztraminer and Vosges chocolates are my guilty pleasures when I’m being fancy. However, I’m also happy with a slice of pizza, a bottle of water and a patch of grass in the park to enjoy them.” VM

I’ve been on statin medication and also suffer from general malaise, a skin condition, bloating and holding onto extra pounds. Also, I am stressed out and tired all the time. HEALTH RECOMMENDATIONS: I joined The Running Room in a “learn to run” class when I was 55 and I’ve loved running ever since. As my love for running grew, I took everything one step further and changed my eating habits in order to be a “better runner.” I gave up wheat, dairy and sugar. Although it isn’t easy, if you want something bad enough it’s doable. THE RESULTS: I am now off all medications and my cholesterol remains low and I feel absolutely awesome! And oh yes, and I just completed my seventh half marathon.

HEALTH RECOMMENDATIONS: I massaged castor oil into my scalp before bed and left it to absorb overnight two or three times a week for several months. I also learned to take time for myself without feeling guilty and changed my diet to eliminate gluten. My family health history pointed to gluten as a potential aggravating factor for my psoriasis. THE RESULTS: My psoriasis is completely gone. I do an occasional oil treatment once every few months to ensure that it doesn’t come back.

HEATH RECOMMENDATIONS: Drinking water is one of the most effective ways for treating wrinkles. I drink three or four litres of filtered water every day. I suggest carrying a refillable glass water bottle with you wherever you go. Also, people wake up dehydrated, so start your day by drinking a litre of water in the morning to jump-start your internal systems. Add lemon to warm water for an added immunity and a digestive boost. Also, always use a moisturizer for your skin type with an SPF of at least 30 – don’t forget to include your hands, they’re where your true age shows. THE RESULTS: Better skin elasticity, fine line reduction, and improved skin tone.

MAUREEN HAW AGE: 76 OCCUPATION: Retired Nurse HEALTH ISSUE: Fungal Infection SYMPTOMS: I had discolouration in my nail bed and went to my doctor who diagnosed me with a mild fungal infection of toenail. I didn’t want to take oral medication, and laser treatments were far too expensive. HEALTH RECOMMENDATIONS: I mixed one tablespoon of original Listerine mouthwash with two tablespoons of water. Then I soaked my toe with this solution for 10 minutes. Afterwards I placed gauze (presoaked with the solution) over the affected area and covered it with a bandage. I left it on for the entire day. After four days of this treatment, I wore open toed sandals leaving the area exposed to the air. THE RESULTS: The infection stopped spreading, and my toenail slowly started to grow back to normal.

asa de Campo is less of a hotel destination and more like an exclusive, gated community that invites you in to stay for a while. The 7,000-acre property offers a mixture of 255 hotel rooms and suites, 100 villa vacation rentals, and 1,850 private residences (100 are available for rental through Casa de Campo). Most of the residences have their own private pool, and some are so luxurious you will feel as though you are one of the many celebrities who frequent the resort. Oscar de la Renta owned a home there, and Bill Clinton and George Bush Junior and Senior have all golfed there. Casa de Campo is also a favourite destination of Beyoncé and Jay-Z (who celebrated his 40th birthday party at the resort), Alex Rodriguez, Cameron Diaz and even Oprah. Keeping up with the Kardashians also filmed two episodes at the resort. Casa de Campo is located in La Romana, about 45 minutes south west of the Dominican’s more populated Punta Cana resort area. You can fly into the Punta Cana airport or fly directly to the La Romana airport, which is only five minutes away (although flights to the latter are less frequent and tend to be a bit pricier).

Altos de Chavon also hosts a School of Design that is affiliated with Parsons School of Design in New York. The student culture gives the village a more urban vibe and also provides many design wares to purchase that are created on site. There is a 370-slip marina and yacht club that includes shops and restaurants if you want to stroll around for an afternoon or evening. Or you can relax at the Casa de Campo spa while your kids enjoy playing at the supervised kids or tween club. Of course, after all this activity, chances are you’ll be ready for the beach. While many of the resort’s ocean views are cliff side, the property does boast a beautiful 800-metre private beach, Minitas, which is just minutes from the main hotel area. You can relax on your own or enjoy a massage in an open-air pavilion. There are also beachside games, sports and water activities, plus a restaurant and bar. Or take a 30-minute boat ride to nearby Catalina Island, which is a National Park that offers six-square miles of white sand beaches and is surrounded by amazingly clear blue water.

MORE THAN JUST BEACH If you love lying on a white sand beach but want a little more from your Caribbean vacation, Casa de Campo is for you. The expansive size makes it a destination where you can fill hours just exploring either by foot, bike or in your own private golf cart (each room comes with one). There is also yoga by the pool which, unlike some resort yoga that is merely stretching, is actually a true Ashtanga-style practice with enough downward dogs and balance poses to keep any yogi happy. The fitness centre overlooks the main pool area and is the cleanest I’ve ever been to in my life. The minute you are finished with a machine, mat or set of weights, someone is behind you with a spray bottle to clean up. There are also 13 immaculately maintained, fast-dry Har-Tru tennis courts and a professional staff that earns Casa’s tennis club the nickname “Wimbledon of the Caribbean.” Or you can try out skeet and trap shooting at Casa’s 245-acre shooting club or go horseback riding at their polo and equestrian club. Then of course, there’s the golf. Casa boasts five Peter Dyedesigned golf courses. Dye is considered by many to be the most influential golf course architect of the last 60 years. His masterpiece of Casa’s five courses is the Teeth of the Dog, which is ranked number one in the Caribbean and 43rd in the world by Golf magazine. The 6,888-yard, par 72, ocean-side course will challenge and amaze you. If relaxing is more your speed you can take a cultural excursion to the property’s hilltop Altos de Chavon. The artesian village was completed in 1982 and was modeled to look like a 16th century Mediterranean city. You’ll feel like you are stepping into an ancient Italian city complete with restaurants, boutiques, museums and a 5,000 seat Grecian-style amphitheater that has hosted singers including Sting, Shakira (who also has a home at

EXCLUSIVE DINING Casa de Campo is ideal for people who become bored eating in the same restaurants over and over again at an all-inclusive resort. The restaurant opportunities are almost endless, with six main restaurants that are affiliated with the primary resort, and countless others that are privately owned in the Marina and at Altos de Chavon. Some of the highlights include: La Casita (a tapas and seafood restaurant in the marina), La Cana by Il Circo (a Mediterranean restaurant in the main hotel area) and The Beach Club by Le Cirque. The latter two are spin-offs of famous New York restaurants. The Beach Club was my favorite, as it felt like an oversized cabana located amidst the sand. The seafood was extremely fresh and you could even choose your whole fish from a table at the front entry. The Lago Grill buffet, an open-air restaurant located on the 18th hole of Teeth of the Dog is also notable – especially for breakfast. Additionally, La Piazzetta, an Italian restaurant, will make you feel as though you are dining in Europe for the night. BOOKING YOUR TRIP Casa de Campo is not an all-inclusive, however there are promotional packages available. I suggest either booking a private villa — which comes with a personal chef who will cook some of your meals — or staying in the hotel and booking a package that includes meals and drinks and possibly even a daily activity (such as golf or tennis) and an adventure (such as horseback riding or a spa treatment). It’s nice to go to a resort and truly be able to relax without worrying about extra costs adding up every time you grab something to eat. In terms of when to travel, year-round sun with rolling clouds allow for enjoyably warm temperatures throughout each season. Choose a time that works for you and get ready to explore!
