The armpit’s job is to help regulate your body’s heat; it sweats to reduce the body’s temperature in times of stress, physical or emotional. However, sweat has no smell – it’s the bacteria that grow in the presence of sweat that cause body odour. CHOOSING YOUR PROTECTION
Antiperspirants are designed to stop perspiration, or block the body’s sweating mechanisms. This is usually done with the help of an aluminum-based compound. Since lymph nodes and breast tissue are found close to the armpit, some people have concerns about the safety of antiperspirants. However, The Journal of the National Cancer Institute reported that the use of aluminum-based antiperspirants was not a risk factor for breast cancer (hormones appear to play the largest role in determining risk). Don’t forget about the benefits of maintaining a healthy level of flora in the stomach — probiotics can help balance the gut and promote a healthy digestive system, which can improve the skin’s appearance, says Haggarty. Extracts from dandelion root and burdock are also key in helping to support the liver and aid in detoxification, she says.
5 Remember to moisturize! Drying out the skin with abrasive cleansers won’t help acne or skin conditions — in fact, it may make it worse. Skin that’s stripped of moisture will overproduce oil, and this can lead to more breakouts. Stick with moisturizers labelled “non-acnegenic” or “non-comedogenic.”

e all experience digestive troubles from time to time – so how do you know if it’s irritable bowel syndrome? IBS complicates the life of more than 16 per cent of the population, mostly women. For some, it is a mild annoyance; for others, it may sabotage their ability to work, travel and enjoy normal social activities. Rare in young children, the onset age is usually adolescence or early adulthood; however, older adults are not immune.
Unlike irritable bowel disease, IBS is a disorder marked by a collection of specific symptoms related to the functioning of the large colon. Cramping, abdominal pain and bloating, are telltale symptoms. For the IBS sufferer, these conditions usually disappear following a bowel movement. Abnormal bowel movements that may alternate between diarrhea and constipation, or primarily one or the other, are also key indicators. Other indicators include loss of appetite, whitish mucous in the stool, the feeling that you have not completed a bowel movement and a worsening of symptoms during menstrual periods. While there are no specific tests for IBS, your doctor may want to do a complete medical examination and blood tests to rule out other possible sources. A GI series and/or colonoscopy may also be scheduled. The causes of irritable bowel syndrome may be multifactorial. It would appear that the muscles in the large intestine, known as the colon, are extra sensitive to stretching, moving or nerve stimulation from the brain. Stress also appears to be a trigger of an eruption of symptoms. The nerve endings in the colon may overreact to brain warning signals, causing painful contractions and cramping.

t’s almost that time of year again – sniffle season. We all try so hard to keep ourselves healthy, yet colds and the flu seem to sneak up on us year after year. We all want to get our immune systems in fighting form this season, and prevention is the best form of medicine. The body has an amazing array of immune cells to protect us from getting sick, so with the right support, it’s easy to stay healthy all year long. The lower esophageal sphincter (LES) is a small band of muscle that wraps around the bottom of the esophagus, the tube that food travels down after swallowing. Normally, the sphincter acts as a valve that opens to allow food to pass into the stomach and closes to prevent food and stomach acid from rising back up into the esophagus. If the sphincter is not functioning properly, stomach acid may flow back into the esophagus, causing symptoms of heartburn such as pain and coughing. HEARTBURN RELIEF Contrary to popular belief, you don’t necessarily have to rely on antacids to treat heartburn over the long term. decade ago, 42 year-old actress Tisha Campbell-Martin was diagnosed with sarcoidosis, a disease that can affect multiple organs in the body, mostly occurring in the lungs. She also had gained 65 pounds from her first pregnancy with her son, Xen. With her sarcoidosis in remission, the actress, best known for her roles in My Wife and Kids, Martin and Everybody Hates Chris and now starring in the Lifetime TV drama series, The Protector, then became pregnant with her second son, Ezekiel, and gained 90 pounds, with the sarcoidosis returning. Now Campbell-Martin is on a quest for good health that began two years ago. “When I gained weight with the second baby, I was up to 210 pounds and now I’m almost near my goal,” says the now 158-pound talent who is looking to shed another 18 pounds. “But I’m losing it the right way.”

celeb health Actually, she has been on a health quest since she was 18. “I saw how people in my family were getting sick from being overweight,” she says. “So I started taking care of my body then. Unfortunately, certain circumstances happened and I was diagnosed with a genetic lung disorder, but once I got it, I had the quest of keeping healthy and not letting it get me down. She first began walking, then jogging and “the healthier I got, the more in control of the disorder I became,” she says. “And I keep reminding myself everyday that I want to be here for my husband [actor Duane Martin] and kids.” Campbell-Martin approaches her healthy lifestyle without looking at the obstacles that have been thrown in her path. “I can accept the fact that something might be going on with me, because I’m not in denial, but I always think I will beat it.” With diabetes and coronary disease in the family, Tisha has a doctor monitor her regularly, and she supplements her healthy eating plan with vitamins. “They’re just regular over-the-counter vitamins,” she says. She takes Vitamins E, C, B, B1, calcium, magnesium/zinc,
multi, fish oil and B complex. “And I watch my sugar and carb intake. Sugar is like a drug; once you get off the wagon, it’s hard to get back on it.” Snacks include low-fat yogurt topped with berries, a protein bar, carrots or some fresh fruit. “I was asked to be the spokesperson for Yoplait yogurt and they incorporated how I eat it into their campaign. I even keep some in the freezer and then it’ll thaw in my bag so I can have it later as a snack.” Daily exercise includes a 30-minute morning treadmill workout and 150 sit-ups with afternoon light-weight training and another 150 sit-ups. “I’m always doing sit-ups. I’ll even do some in the evening, watching TV or the baby next to me.” Motivated to get in the best shape ever, the busy mom of two is in it for the long haul. “You need to take into account the mind, body and spirit for overall well-being,” she says. “So when I went on my quest to live a healthier lifestyle, I had to recognize that I needed to make time for myself, let all negativity go and fill myself up spiritually, fill myself up physically and realize the mind will follow.”

he human body has a built-in shield that protects the vulnerable developing foetus. In most cases, even when mom falls ill, the baby is fine. Yet certain diseases specifically target the foetus, and the mother may not show symptoms of a serious infection. Normally, the placenta not only supplies the growing baby with nutrients and oxygen, it also acts as a filter that keeps the baby safe from any viruses or bacteria that may have infected mom. However, there are several exceptions. Certain diseases easily bypass the mother’s defences and cross the placental barrier to infect the foetus, with devastating consequences. Doctors refer to these particularly deadly infections as TORCH diseases. The name is

Children are vaccinated against rubella, which is also called German measles. It causes serious problems with heart, lung and brain development in the baby and can result in a miscarriage. Women should make sure their vaccinations are up-to-date before they get pregnant, Dr. Kingdom says.

The dangerous-sounding cytomegalovirus often infects daycare centres. Women with toddlers in childcare should be extra careful to avoid contracting the virus, which only causes mild illness in young children or adults yet can be serious for the foetus. Regular hand washing is vital. Leslie Solomonian, a professor at the Canadian College of Naturopathic Medicine, says there are some simple ways women looking to get pregnant can keep their immune system in fighting form. “It’s important women get lots of rest, lots of fluids and manage their stress,” she said. Women often try to do too much, even when pregnant, and taking the time to breathe and relax is key, Solomonian adds. Certain naturopathic practises are not a good idea for women trying to conceive, she says. “In general, detoxification shouldn’t be encouraged during pregnancy,” Solomonian says. “In the first three months, the baby is especially vulnerable because its nervous system and organs are developing.”

Uterine conditions can range from prolapse to excessive bleeding, and may be caused by a variety of conditions. The first sign that you may have a uterine disease is bleeding between periods or after intercourse. This abnormal bleeding may be caused by hormones, thyroid conditions, fibroids, endometriosis, polyps, cancer, infection or pregnancy. eNDo etrIosIs This occurs when there is abnormal growth of endometrial cells outside of the uterus. The cells usually grow in the pelvic region; however, if the condition worsens, they can grow all over your internal organs, such as the bladder, and can grow as far up as the lungs. During menses, these cells bleed, which can lead to serious problems, such as internal bleeding. This condition may also cause infertility. IBroIDs These are fibrous tissue that grows in the muscle wall of the uterus. They can range in size from that of a pea to that of a grapefruit. The large ones may cause pain and irregular bleeding during menses. PeLvIC IN LA Atory DIseAse Pelvic inflammatory disease (PID) is an

Prolapse occurs when the muscles that support the uterus become weak. This damage usually occurs in childbirth, however, it may also be caused by heavy lifting, strenuous physical activity or aging. UterINe CANCer This is also known as endometrial cancer. It begins in the lining of the uterus, called
the endometrium. These endometrial cells are stimulated by estrogen, and undergo a precancerous cell division called hyperplasia. This may be in response to chronic exposure to excessive estrogen. A diet rich in fruits, vegetables, whole grains, and fibre, while low in animal meats and dairy, is recommended. Avoiding caffeine, alcohol and smoking. Consider adding to your diet foods high in phytoestrogens or supplementing with phytoestrogens to balance your hormones.

A once active 30-yearold, her energy levels had dropped so low that she couldn’t do basic daily activities. She knew this was more than something a good night’s sleep or antidepressants could fix. Finally, Stacey found a naturopath who diagnosed her with chronic fatigue syndrome or CFS.

Not all fatigue is the same — there’s a difference between chronic fatigue and chronic fatigue syndrome. CF is a feeling of tiredness that has persisted for a long time — months or even years. It’s often a symptom of underlying conditions such as candidiasis, lupus, fibromyalgia, rheumatoid arthritis, or an allergy. CFS, in comparison, is continual tiredness that no amount of sleep can fi x — one that’s not caused by other medical conditions. Basically, CF is a symptom of other ailments, while CFS has no known cause. If you suspect you have one of these conditions, make sure to explain exactly the way you’re feeling to your doctor or naturopath.
It can have a sudden onset, explains Simon Lo of the Toronto Naturopathic Clinic. Usually a period of severe stress precedes the condition, or an infection. Warning signs can range from flulike symptoms, such as low energy, muscle pain, poor sleep patterns, swollen lymph nodes and headaches, to digestive issues, such as cramps, diarrhea and bloating. What causes warts and are there any natural methods for removal? Warts are caused by a localized viral infection of the skin that occurs when our immune defences are low. Although there are many topical treatments available, warts are typically harmless and will often resolve on their own. Regardless of what topical treatment you consider, successful treatment and prevention of chronic warts should always start with a healthy diet and lifestyle to help strengthen the immune system. Along with healthy food choices, zinc supplements or zinc-rich foods would also be important to incorporate into the diet. The location of the wart will dictate the best treatment course. Aggressive natural treatment for warts in the office starts with removing the surface of the wart and freezing the base of the wart with liquid nitrogen. Topical treatment with tea tree oil, mayapple extract, cedar oil or zinc oxide have all been used successfully to treat warts. To increase treatment success, applying tape or cellophane over your topical treatment of choice will help the treatment penetrate deeper into the affected area. I have chronic dry, flaky skin. I drink lots of water and I have tried countless moisturizers and exfoliants. I even sleep with a humidifier in my room – nothing seems to help. What could be causing this? Successful treatment of chronic skin conditions always starts with treatment of the digestive system. Working with a health professional to make specific dietary changes and support intestinal health by eliminating specific food allergies would be a great place for you to start. Healthy oils in the diet are extremely important for healthy skin. Significantly increasing your intake of fish or fish oils, olive oil and some saturated oils, such as coconut oil, will often improve dry skin. Because the absorption of fat can be difficult, always consume fats with larger meals. Ox bile, digestive enzymes or bitter herbs, such as artichoke or dandelion root, may also help with increasing fat absorption. Although chronic dry skin will often improve with exposure to sunlight and moist climates, these improvements are likely in part due to increased circulation to the skin. Increasing circulation or fluidity of body tissues is what healthy fats in the diet can help accomplish. Applying a combination of coconut oil and vitamin D (approximately 1000 IU per gram of coconut oil) to the skin, along with the appropriate dietary changes, should help you get started. The former Lakers cheerleader seems to have found the keys for maintaining general wellbeing and balance in her life. Raised in the sprawling San Fernando Valley outside Los Angeles by her Jewish parents (her dad from Syria and mom from Minnedosa, Manitoba), spirituality is something she believes plays a critical role in creating balance. “My dad is born again now, and my mom is still in the Jewish faith, so I’ve been brought up kind of all over the place. It’s all about keeping a healthy mind, acceptance of who I am and where I’m at, and to be gentle on myself because there

is no such thing as perfection. Balance is a real tough thing when you’re a professional – or mom – and balance is what can really save you. I try and strike a balance even if I’m working 18-hour days.” Mini breaks throughout the day help Abdul recharge. “Sometimes I need to just get some energy going and rather than reaching for a sugary treat, I’ll get my iPod and listen to a song, dance in place, just to get my mind working again. Music, dancing and free form is really where I find my happy place. It’s not me trying to achieve a certain step – it’s just spending time with the music.” From Sade and Australia’s The Wintercoats for Pilates to Outkast and David Bowie for strength training and Lil Wayne for dance, Abdul says, “I have different playlists for
different styles of my workout.” She tries to work out five to six days a week, however “when I’m on the road, it’s a challenge. I just started swimming, which is really cool, and I’m always incorporating some dance three times a week.” Having given up on scales, Abdul adheres to a clean, simple way of eating. “Nonfat milk, nonfat plain Greek yogurt, vegetables for salad making at any time,” she begins ticking off what we might find in her fridge: “fruit juice, Pellegrino, olives – I love olives – and batteries.” At the thought of the last item, the little woman lets out a contagious laugh. “I love laughing,” she readily admits. “It’s so good for your heart health. Simon and I play practical jokes on each other all the time and laugh out loud hysterically.”

The former Lakers cheerleader seems to have found the keys for maintaining general wellbeing and balance in her life. Raised in the sprawling San Fernando Valley outside Los Angeles by her Jewish parents (her dad from Syria and mom from Minnedosa, Manitoba), spirituality is something she believes plays a critical role in creating balance. “My dad is born again now, and my mom is still in the Jewish faith, so I’ve been brought up kind of all over the place. It’s all about keeping a healthy mind, acceptance of who I am and where I’m at, and to be gentle on

myself because there is no such thing as perfection. Balance is a real tough thing when you’re a professional – or mom – and balance is what can really save you. I try and strike a balance even if I’m working 18-hour days.” Mini breaks throughout the day help Abdul recharge. “Sometimes I need to just get some energy going and rather than reaching for a sugary treat, I’ll get my iPod and listen to a song, dance in place, just to get my mind working again. Music, dancing and free form is really where I find my happy place. It’s not me trying to achieve a certain step – it’s just spending time with the music.” From Sade and Australia’s The Wintercoats for Pilates to Outkast and David Bowie for strength training and Lil Wayne for dance,
Abdul says, “I have different playlists for different styles of my workout.” She tries to work out five to six days a week, however “when I’m on the road, it’s a challenge. I just started swimming, which is really cool, and I’m always incorporating some dance three times a week.” Having given up on scales, Abdul adheres to a clean, simple way of eating. “Nonfat milk, nonfat plain Greek yogurt, vegetables for salad making at any time,” she begins ticking off what we might find in her fridge: “fruit juice, Pellegrino, olives – I love olives – and batteries.” At the thought of the last item, the little woman lets out a contagious laugh. “I love laughing,” she readily admits. “It’s so good for your heart health. Simon and I play practical jokes on each other all the time and laugh out loud hysterically.”

PAIN AND REFLECTION The diminutive diva who has parlayed her innate choreography and upbeat voice into a million dollar career has proven her staying power in show business by finding the upside in even the most abysmal tabloid situations and welcoming consistent change into her world. “As human beings, we are constantly evolving, and being able to acknowledge and be grateful for that evolution is something very important. We can never be stuck in our ways because things change – opinions, dreams – everything that you aspire to or are inspired by. For me, I have to be adaptable and resilient at any given moment. That’s what gives me some perfect days.” The performer has enjoyed a long string of such days and has watched her career blossom from the early ‘80s into becoming a powerful woman in the entertainment field. “I do consider myself a powerful woman, however, I’m soft; I don’t have tough and rough edges,” she admits. “Yet, I’ve been able to stand up for many decades in this business, be relevant, have a voice, help create trends, spot talent and I hope that talent goes on to huge heights. I feel I’ve been able to transcend generations – hey, I’m on my fifth separate and distinct career and still able to make my mark.” She credits gratitude in her heart and that stick-to-it mentality for empowerment: “I just don’t give up.” ith her physical health blooming and career soaring, there are the admitted stresses of X Factor’s 12-to 14-hour days. That’s where “me time” comes into play. “If you are working hard and putting yourself out there, you have to balance it all with nurturing the rest of your body — mentally, physically, spiritually and emotionally,” she says. “Sometimes I grab 10 minute pockets of time – sometimes five. I might meditate or take a quick power nap. On weekends, I’ll take one full day off and visit with family and friends.” Other simple pleasures include going for a drive, getting a facial or massage, hiking or entertaining at her home. Her sensible health program has also helped with her reflex sympathetic dystrophy syndrome, which she revealed five years ago. The disease is an incompletely
understood response of the body to an external stimulus, resulting in pain that is usually non-anatomic and disproportionate to the inciting event or expected healing response. “Knock on wood,” she says and visibly does, “I have not had an outbreak for quite some time. The trouble with RSD is there is never a surefire sign of when it’s going to attack. Most definitely it usually occurs when I’m exhausted or overexerted for too many days at a time or involved in a stressful situation…your immune system says, you know what – it’s time, and the whole

Finding spirituality is where my inner peace lies.” • Have role models. “For me, my older sister is a wonderful role model. And Gene Kelly was my number one role model, professionally. Visualizing that I’m helping alleviate and eliminate the pain is the only way to get through it because there is no cure for RSD and no medication really helps.” Through all of her ups and downs, Abdul seems to have emerged a stronger, happier woman whose personal journey has brought her to a beautiful state of mind.

“I’m having the time of my life and I think happiness is a decision you make,” she explains of her personal odyssey. “I have a tremendous amount to be grateful for. I’m having fun in my life and it’s wonderful to feel this way; I have the ability to have good people around me and when I go to work I know it’s going to be challenging, however, I’m loving it all.” Comfortable in her own skin, beauty seems to come from within, a result of living life to the fullest. “As I’ve gotten older, I’ve become way more comfortable in my skin. I think that’s the benefit and the gift you can look forward to as you mature. I think I’m in a really good place. I’m comfortable with the fact that I’ve kept myself healthy and fit and I’m working hard. I’m always a student and willing to learn. That’s what keeps me young at heart. I’m proud of my age and what comes with it. I consider myself a full-time student. What it does, in turn, is it allows me and prepares me to be a better teacher. I love working with young women and young girls, teaching them self esteem and about their body.” So what’s the best thing Abdul learned recently? “I take the good with the bad,” she says. “I’ve learned that anything that comes into my life which is uncomfortable or maybe doesn’t give me the best feeling, I’ll take a deep breath, count to 10 and by the time I’ve hit 10, I realize how grateful I am for that situation that I’ve turned into gratitude. It sounds silly, yet it’s very powerful.” With dreams of focusing on philanthropic work in the future and possibly fitting in a greatest hits tour in the next year or so, Abdul realizes every ambition, every dream, won’t be a giant success. “You can’t always get a home run, however, when you start collecting the base hits, they turn into the home runs. If you stay in the game, you inevitably love the fact that you’re sticking to something. Just stick to it and decide what’s important in life.” The selfdescribed “passionate, transparent and communicative” woman adds, “Life is good. The Last Man Standing actress finds balance in laughter b bonnie siegler
I
’m grounded and I’m a happy person,” says Nancy Travis, on a break from her new TV sitcom, Last Man Standing, starring Tim Allen. “I have been fortunate in my career; I’m lucky with the people who work with me and I think I’ve always been a glass-halffull person.” Best remembered as the woman in the midst of the baby triangle in Three Men And A Baby, then teaming up again with Ted Danson in Becker, Travis credits her solid upbringing and sense of humour to her overall health and happiness. Now starring as Allen’s wife in the story of an outdated man’s man in a progressive world, she reflects on what it would be like if the roles were reversed and she was the last woman standing. “I would have her be a woman who is balanced,” says the mom of two sons (ages 13 and 9). “A woman who is satisfied with family and work and has managed to find the balance with both of those things.” Art imitating life? Perhaps. Marking a milestone in September by turning 50, Travis sees this as another reward in life. “My sense of humour is how I look at the world … it’s my perspective on it. It’s an integral part of the way I manage relationships and as I’ve gotten older, I’m more confident with my sense of humour. Also, I let it be more organic – I’m not trying to be funny or prove anything. I just enjoy laughing.” She also enjoys her role as a working mom and says she makes breakfast every morning and dinner most nights. Fresh produce abounds in the fridge, thanks in part to a local-produce program at her son’s school. She also manages to squeeze in an eight-kilometre run four days a week with a neighbourhood friend. When it comes to “me time,” she loves to read. “I have books piled on my nightstand,” she says. “I always say I’m going to stop buying books until I get to the ones I have but I just got a Kindle, so I’m reading there, too.” Currently, Travis is turning the pages on Under the Banner of Heaven and piles of magazines. “I love to read; it’s having those moments to myself that help with balance.” With hectic days juggling motherhood, a marriage and career, Travis acknowledges there are compromises. “I find that you can do everything, you just can’t do everything all at once,” she says. This attitude and outlook have empowered her as a woman. “I’m a cheerful and healthy person who truly believes there are no obstacles. The obstacles you confront are the ones that you create. I’m just a happy, creative and curious woman.”

Braised Rabbit 1 2½ - to 3-lb (1.25 kg to 1.5 kg) whole rabbit 4 cups (1 L) white wine (preferably Sauvignon Blanc) 1 medium carrot, peeled and chopped 1 leek, cleaned and chopped (white part only) 1 medium onion, chopped 8 garlic cloves, peeled 20 black peppercorns 4 juniper berries 1 bay leaf 1 sprig thyme 1 sprig rosemary Salt and pepper to taste 3 tbsp (45 mL) canola oil 4 Roma tomatoes, chopped 4 cups (1 L) dark chicken stock Mushrooms 2 tbsp (30 mL) grapeseed oil 8 oz (225 g) bluefoot, king oyster, or shiitake mushrooms 1 tbsp (15 mL) chopped shallots Salt and pepper 4 oz (120 g) speck (or lightly smoked bacon) 4 tbsp (60 mL) butter Pappardelle 1 lb (500 g) pappardelle 2 tbsp (30 mL) olive oil 1 tbsp (15 mL) chopped fresh chervil (preferably wild) 4 sprigs chervil to garnish Preheat the oven to 350°F (180°C). Cut up rabbit into front and hind legs and saddle. Marinate in the white wine, carrots, leeks, onion, garlic, peppercorns, juniper berries, bay leaf, thyme, and rosemary for 24 hours. Remove the rabbit pieces from the marinade. Pour the marinade through a chinois (sieve) and set aside. Place the vegetables and spices remaining in the chinois in cheesecloth and tie with butcher’s sting to form a small bag Season the rabbit with salt and pepper. Heat the canola oil in a skillet and sauté until golden brown. Remove the rabbit to a braising pan. In the same skillet, sauté the chopped tomatoes for a few minutes until soft, being careful not to burn them. Deglaze the pan with the marinating liquid. Add the dark chicken stock, bring to a simmer, and pour the liquid over the rabbit pieces, making sure they’re covered. Add the spice and vegetable bag to the braising pan, cover with a lid, and place in the preheated oven. Braise
until the meat begins to pull away from the bone, 1½ to 2 hours. Remove the pan from oven and set aside until the rabbit is cool enough to handle. Pull the meat from the bones and set aside. Strain the braising liquid and skim off any fat. Return the liquid to the pan and reduce by half. Heat the grapeseed oil in a large cast-iron pan. Sauté the mushrooms with the shallots; season with salt and pepper. Add the mushrooms and shallots, smoked pork belly, and rabbit meat to the braising liquid, bringing to a simmer. Whisk in the butter and slowly simmer for a few minutes until the sauce begins to thicken slightly. Bring a large pot of salted water to a boil. Cook the pappardelle until al dente; drain and toss with the olive oil. Add the pappardelle to the braised rabbit; season with salt and pepper. Just before serving, sprinkle with chopped chervil. Divide the pasta among 4 warm pasta bowls and garnish each with a sprig of chervil.

Casserole 4 tbsp (60 mL) butter 1 tbsp (15 mL) sugar 3 oz (90 g) pearl onions, peeled 2 cups (500 mL) water 3 oz (90 g) hedgehog mushrooms 7 oz (200 g) sweetbreads 3 oz (90 g) bacon Pinot Noir Reduction 1 shallot, diced 3 tbsp (45 mL) Pinot Noir ½ cup (125 mL) veal jus 1 tbsp (15 mL) cold butter, cubed 16 grapes, skinned Set a pan over medium heat and add 2 tbsp (30 mL) of the butter and sugar. Stir in the onions and sauté for 2 minutes until some colour starts to show. Pour in the water, stirring gently. Cover the pan with a parchment paper circle with a hole cut out of the middle. Cook until caramelized, about 15 minutes over low heat, adding more water if necessary to prevent the pan from burning. In another pan, heat 1 tbsp (15 mL) of the butter over medium-high heat. Sauté the mushrooms until golden and tender, about 7 to 10 minutes. In the third pan, sauté the sweetbreads with the remaining tablespoon of butter for about 3 to 4 minutes. Stir in the onions and mushrooms and cook for 2 minutes. Add the bacon and sauté until crisp. For the Pinot Noir reduction, heat a touch of butter in a saucepan over high heat. Sauté the shallots for 2 minutes, and deglaze with the wine. Add the jus. Turn the heat down to medium and continue to cook for another minute. Whisk in the cold butter. Add the skinned grapes. Spoon the sweetbread, onion, mushroom, and bacon mixture into a small dish. Top with the Pinot Noir reduction and grapes. Note: Hedgehog mushrooms are a wild variety found in the forests of North America and Europe. If they’re out of season, chanterelles may be substituted.

4 grouse 4 small pears ¼ cup (50 mL) vinegar ½ cup (125 mL) sugar 1 cup (250 mL) butter, approx. (separated into ¼ cups/ 50 mL) 5 oz (150 g) chanterelle mushrooms 5 oz (150 g) young onions 1 cup (250 mL) red wine ½ cup (125 mL) duck jus 4 oz (120 g) speck (or lightly smoked bacon), julienned Preheat the oven to 350°F (180°C). Rub the grouse with butter. Season generously with salt and pepper and sear on all sides until bronzed. Then roast the grouse in the oven for 25 minutes. To poach the pears, bring a saucepan of water (enough to cover the pears) to a boil, add the vinegar and sugar, and stir until the sugar has completely dissolved. Reduce the heat and poach the pears for 10 to 15 minutes, until they are tender but not falling apart. Warm ¼ cup (50 mL) of the butter in a small cast-iron or nonstick pan and roast the pears, mushrooms, onions, and speck together over low heat for approximately 10 minutes, adding up to ½ cup (125 mL) more butter as required until the pears start to caramelize. Remove the grouse to a platter and deglaze the roasting pan with the red wine, stirring to scrape up the brown bits from the bottom and sides of the pan. Stir in the duck jus and pour the liquid through a fine sieve into a saucepan. Add the speck and reduce by two-thirds. Whisk in the remaining ¼ cup (50 mL) butter. Arrange the grouse on 4 plates with a pear and a serving of chanterelles and young onions. Generously spoon the red wine reduction over the top. FR ESH STARTS 2011

1 capon, cut into 8 serving pieces 3 cups (750 mL) Alsatian Riesling 1 small white onion, chopped 1 carrot, chopped 1 sprig of rosemary 1 sprig of thyme 1 bay leaf 2 tbsp (30 mL) grapeseed oil 2 cloves of garlic ½ cup cognac 1 cup (250 mL) chicken stock Salt and pepper to taste 12 oz (350 g) speck (or lightly smoked bacon), chopped 8 seasonal mushrooms, sliced 1 cup (250 mL) whipping cream Sprinkle of chives to garnish Fettuccine 3½ oz (100 g) fettuccine Salt and pepper to taste 2 tbsp (30 mL) whipping cream 1 tbsp (15 mL) soft butter A day in advance, clean and cut the capon in 8 pieces or more. Put it in a large bowl and pour in the Riesling. Stir in the onions, carrots, rosemary, thyme, and bay leaf. Cover and refrigerate overnight. The next day, drain the capon and vegetables, reserving the wine. In a large skillet, brown the capon pieces in the grapeseed oil. Remove the capon. Add the garlic and reserved vegetables to the pot and heat through for a couple of minutes. Transfer the capon and vegetables to a large saucepan on high heat. Pour in the cognac and flambé. When the flame dies, add the reserved wine, chicken stock, and salt and pepper to taste. Lower heat to medium and bring to a boil. Cover and simmer for 1½ to 2 hours. In a small skillet, sauté the speck and mushrooms until brown, about 10 minutes. Add to the pot (once the chicken is cooked). Pour in the whipping cream and cook, stirring, for 2 or 3 minutes. Taste and correct the seasoning, and garnish with chives. In a large pot of boiling salted water, cook the fettuccine until al dente. Drain well and place in a mixing bowl. Season with salt and pepper. Stir in the whipping cream and butter. Toss the pasta and place in a serving dish. Serve the capon from its pot at the table – it’s the best way to enjoy it.

Symptoms: Last spring, I developed swelling around my eyes. After months of self diagnosis and avoiding known allergens (gluten, dairy, alcohol), things only got worse. I developed a rash on my chest, spots on my cheeks, forehead and around my lips, causing the corners of my mouth to be cracked and split. Doctors prescribed steroid creams, which only eased the symptoms slightly. An allergist determined I was allergic to dust mites. I knew there was more to it than that, yet I felt totally hopeless. Every time I had a reaction to something, I would hide and become depressed. Health Recommendations: A naturopathic doctor advised me to do an elimination diet yet I didn’t find much of a change. I discovered that nightshade vegetables were causing the eczema to flare up. I avoided them, yet the symptoms still persisted. Another naturopathic doctor did a food sensitivity test that showed sensitivities to all of the nightshade vegetables and about 15 other things (beans, onions, beer and wine, lettuce, and more). I’ve been avoiding these foods now for several months and take various supplements to help strengthen my digestive tract. The Results: Upon implementing a strict diet to avoid the long list of foods my body was recognizing as poisons, my symptoms were finally relieved. It’s difficult to avoid everything all the time, since most of my social life revolves around dinner parties with friends. But when I am careful, my skin is great! I’m also finding that when I do have a reaction, it isn’t as severe, and doesn’t last as long. ettled amidst salty air and seaside breezes, with sandy beaches and the roll of the Atlantic surf right at its doorstep, Chatham Bars Inn, just 90 minutes from Boston, is one of Cape Cod’s finest luxury sea resorts. Built in 1914 and designated an historic building, the 40 rooms in the Main Building (217 in total) have been restored to their original grandeur with several offering sweeping views of the blue Atlantic.

“All our improvements and renovations have been made as eco-friendly as possible,” says Jenn Allard, marketing coordinator for the resort. Since 2005, the hotel has implemented many green initiatives, including the use of green cleaning products in housekeeping, food and beverage and maintenance; recycling bins throughout the property and in each guest room; occupancy sensors to reduce energy use; compact fluorescent lights and
an advanced recycling program that has yielded hundreds of tons of cardboard, glass, plastic and paper goods. “One of our goals is to educate staff and the various departments to make sure, every day, they are doing all they can to recycle,” says Allard. In fact, a “green committee” was formed in 2007 to issue formal “green” guidelines. Going one step further, a horticulturalist was hired to help in the use of native flora

and fauna, plus the use of water-conserving plants. “We have many drought-tolerant trees and shrubs on the grounds, including Ginkgo biloba,” says Barbara Connolly, the inn’s horticulturist. “We also use an integrated pest management system approach to managing landscape pests, plus we eliminated the early spring lawn fertilization in order to encourage root growth to lessen midsummer watering needs.”

The hotel sources local produce as much as possible. “There’s a fish pier that abuts our property,” says Allard, “and our chef will get seafood early in the morning right off the boat.” Adds Chef Anthony Cole, “at least 95 per cent of the seafood we use in our restaurants is local: lobster, cod, haddock, scallops, clams and oysters to name a few. And we are going to be working with a regional farm to get more local produce this year.” Also in the works is a chef’s garden where herbs will be grown. The spa offers a tranquil and luxurious setting with a unique natural resource — the Atlantic Ocean, whose abundant nutrients are a powerful tool for aiding health and beauty. “The goal of the spa is to incorporate the many positive effects the ocean has on the mind, body and spirit,” says Allard. The stress response is the body’s reaction which enables us to react to various threats, benign or serious, that we face on a daily basis. Th is reaction is meant for short term protection: confrontation (the reflex to catch a ball when it is thrown in our face), fl ight (running to shelter for protection from a storm) or immobilisation (standing still faced with a wild animal). These decisions must be taken rapidly. A stressful situation stimulates the production of cortisol, a hormone secreted by the adrenal glands. By stimulating the blood glucose levels, cortisol frees the necessary energy from the body’s reserves to respond in a stressful situation. When stress is constant, the body enters into a “resistance phase”, during which the adrenal glands continually secrete cortisol. Too much cortisol creates many physiological consequences: • Exhaustion of the adrenal glands • Increase of blood glucose levels (cause of diabetes) • Decrease in calcium absorption levels (cause of osteoporosis) • Slower digestion (cause of weight gain and di erent digestive upsets such as ulcers) • Deterioration of the dermis (skin aging) • Weakened immune system. Constant secretion of cortisol tires the hypothalamus, which is then unable to exercise its normal regulatory function. Too much cortisol in the hypothalamus is a cause of depression. o
