Claudia has been a visual glutton for as long as she can remember. She fondly recalls feasting her eyes on the images in her fi rst illustrated children’s cookbook, vividly remembering the tiramisu, cannoli and crostata. Margot McKinnon launched her successful Body Harmonics Pilates studios in the early ’90s and hasn’t looked back since. With a master’s degree in adult education and Pilates master designation, McKinnon is responsible for designing more than 50 classes. Th is past July, she spent time at Cirque du Soleil headquarters in Montreal working with their team of osteopaths, physiotherapists and Pilates teachers. Check out her article, on page 90.

assandra had tried everything. While treating rough, dry spots on her cheeks to acne break outs along her jawline, over the years the 35-year-old marketing consultant bought countless creams and serums aimed at solving her skin care woes, only to be left with more irritation each time. Stories like Cassandra’s are increasingly common, says Dana Lerman, a Toronto-based naturopathic doctor. “The skin is the largest organ in the body,” she says. “It is also the organ that is exposed to and easily affected by the external world.” To begin to remedy your skin and establish the appropriate regime, Lerman offers up some basic advice. First, don’t strip your skin of its natural oils. “Over-washing and over-exfoliating is one of the easiest ways to imbalance our skin. Even using medicated soaps and cleansers too readily will force your skin to become dependant on them for its cleansing and repair, which affects pH balance and the skin’s natural defenses,” she explains. She suggests exfoliating once a week with a coarse cornmeal mask to gently remove dead skin.

Oils are key — coconut, sunflower, olive, almond and avocado, help increase suppleness and provide nutrients and vitamins. Also try natural, gentle masks using ingredients such as calendula, rose and soothing clay. For all you former sun worshippers suffering from skin damage, Lerman has some solutions on future prevention and treatment. Whenever possible, she recommends covering up and staying in the shade during peak hours of sun exposure. Also, look for the most natural or organic sunscreen possible — many naturopaths recommend a physical sunscreen containing zinc or titanium dioxide to block UVA and UVB rays. “Ultraviolet radiation from the sun, air pollution and any number of other irritants dehydrate skin and invites further damage from free radicals, the unstable molecules that attack the structure of cell membranes,” says Dr. Linda Miles, doctor of Oriental medicine, holistic practitioner and innovator of natural personal care products. “The results are fine lines, wrinkles, and age spots.” Consider supplements like a multi-B vitamin, vitamin C and vitamin E, along with amino acids such as L-proline and L-cysteine, which support healthy skin structure. Cysteine is another option (try 500 mg with vitamin C, twice daily). It is a sulphur-containing amino acid that’s an important antioxidant and is considered an antiaging nutrient. Herbs such as comfrey, calendula and rose can also help decrease skin’s discolouration.

If you’re suffering from reactive skin conditions such as acne, rosacea or eczema, take a look at your diet. “Once we have identified which food the person is reacting to, within a few months of not consuming the allergen the skin clears up,” explains Lerman. In general, when you eat nourishing foods, if your digestive system is working properly and you are eliminating toxins effectively, your skin will be healthy too. Nosh on skin-healers like berries, orange and green vegetables, mango, papaya, root vegetables, nuts and seeds that contain vitamin C, vitamin A, vitamin E and zinc. For acne sufferers specifically, to heal break outs, Lerman suggests trying burdock root, red clover buds, dandelion root, calendula and comfrey root. Also look for skin repairing supplements like vitamins B5, vitamin C, beta carotene and zinc. Maturing skin requires greater care. “There is often a tendency to dryness and decreased suppleness to the skin as we age,” says Lerman. Miles adds, “With age, the body’s production of hyaluronic acid (HA) decreases. Deeply moisturizing HA creams lock moisture in, helping to soften and smooth fine lines and wrinkles for radiant, younger-looking skin.” Avoid excess exposure to sun, smoking, alcohol consumption as well as processed and fried foods. Increase your intake of flax oil or freshwater fish and add turmeric to your cooking oils as a general antioxidant, anti-inflammatory and skin enhancer. Also, try taking 500 to 1,000 mg of evening primrose oil daily to help keep skin balanced during menopausal changes.

hey are small, seemingly insignificant parts of our bodies – more like extensions of our fingers and toes, really – however our nails, like hair and teeth, indicate well-being and disease in subtle (or not so subtle) ways. So how do you know whether your nails are healthy or are trying to send you warning signals? Although they can vary in shape and size, healthy nails tend to be: • Strong • Smooth • Even in colour pinkish hue • Slightly raised in the middle, curving down slightly at the tip Common problem signs and their solutions: • Layers of keratin (the protein that makes up the nail) may separate due to cold, dry air or a dietary lack of linoleic acid. Try increasing your vegetable oil intake and ensure you’re getting enough vitamin C.

• The nail plate may crack due to dryness, possibly because of low iron levels or continuous exposure to water. Dry, brittle nails that frequently crack or split, may also be an indication of thyroid disease. Eat more green leafy vegetables, red meats and eggs. Also try not to excessively wash and dry out your hands. • When nails turn yellow, this could be a sign of lung disease or diabetes. Yellow spots on nails may indicate psoriasis or fungus. A healthy diet, zinc vitamin and avoiding walking barefoot in public are good prevention measures. Slight yellowing can also occur after prolonged periods wearing dark nail polish, so always brush on a protective base coat. Try applying hydrogen peroxide, lemon juice, or vitamin E topically to help treat yellowing. • Fungal infections are common culprits to colour changes in and around the nail. The infections are typically caused by unsterilized tools or even an overzealous manicurist. Tea tree oil applied topically is an effective, natural antifungal treatment.

• Minor white specks on otherwise healthy-looking nails don’t usually indicate anything serious – they are sometimes caused by small injuries. Recurring white spots could be a result of skin conditions like psoriasis or eczema. Increase zinc in your diet by making sure you’re eating enough poultry, seafood and whole grains. • Vertical ridges on nails are normal and tend to become more pronounced with age. They could also indicate arthritis. If you see a particular horizontal indentation, it may reveal where your nail stopped and started growing again, possibly because of stress. Ridges are mainly a cosmetic concern. Simply buff them down to smooth out your nails. Our physical appearance often reveals what we put into and on our bodies, so pay attention. However, most people who suffer from this have a family history of varicose veins and it is more common in women. hen some people think of cholesterol, they may be concerned about its association with heart disease and stroke, however cholesterol also plays an important role in well-being and graceful aging. goo

The Heart and Stroke Foundation defines cholesterol as “a soft, waxy substance… one of the lipids (fats) normally found in the blood and every cell of the body.” Our bodies produce 70 to 90 per cent of our overall cholesterol, while 10 to 30 per cent is ingested. Once within our system, cholesterol is packaged into transport molecules called lipoproteins. It’s essential to consider the different types of lipoproteins when assessing whether cholesterol is supporting health or causing infl ammatory changes in blood vessels. On a standard cholesterol test — also called a lipid panel, this blood test measures cholesterol and triglycerides in your body — low-density lipoprotein (LDL) estimates the total amount of LDL cholesterol or “bad cholesterol” found in your blood. Something else to consider is high-density lipoprotein (HDL) or “good cholesterol” in the blood, as HDL levels reflect the degree of repair in the arteries and the rest of the body.

ou just want to eat everything celebrity chef, author and restaurateur Joe Bastianich cooks up either during his Today show segments or at his restaurants in Los Angeles, New York and Las Vegas. One of TV’s Master Chef judges, he credits his childhood growing up over a Queens, N.Y., bakery where his mother and grandmother worked, with giving him the impetus for a discerning palette. Along the road of his culinary exploits, Bastianich has also become a well-noted winemaker. However, it was five years ago – when diagnosed with sleep apnea, high blood pressure and high cholesterol, plus being 60 pounds heavier than today – that Bastianich’s health-and-fitness epiphany occurred. “I lost the weight by running and modifying my diet,” says the now 187-pound, 6’1” marathoner who likes to race at 180 pounds. “It took about two years to lose the full amount.” He began with walks, working up from one mile to three. “Then I began to run and fell in love with the way running made me feel,” says Bastianich.

Dear Martha, There have been multiple research reviews on natural and pharmaceutical options for the prevention and treatment of a hangover. Most reviews are inconclusive and suggest moderation or avoidance of alcohol consumption as the only real preventative strategy. One review did suggest that after looking at many of the common conventional, folk and natural hangover remedies, that coffee and acetylsalicylic acid are still the best hangover cures. Clearing alcohol from the body requires vitamins and protein. Therefore, my best advise is to encourage a high protein meal and a good quality vitamin B 100 complex before or during alcohol consumption, with plenty of water (and electrolyte salts) before bed. As inflammation contributes to alcohol’s negative effects, a natural anti-inflammatory, such as turmeric, may be beneficial.

The Ohio-born actress, best known for her breakout role as Shannon Rutherford in the hit television series Lost, dropped out of high school to move to Los Angeles with her then recently-divorced mother, and landed her first role as the title character in Rachel’s Room, a 2001 web-based video series. Though visibly exquisite, Grace is not without self-doubt. “I have a pretty strong sense of self, even as a kid,” states the statuesque 5’9” beauty. “Yet, within the last couple of years I am finding new ground to stand on. Obviously, one can’t be terribly secure if drawn to this profession, right? By definition, I need some sort of validation from an audience. On some level, it’s a balance all the time.” No longer “lost,” Grace is relishing her time in the Hollywood spotlight with roles in The Twilight Saga: Breaking Dawn, Part I in theatres this November, as well as the film’s Part 2 release next year; Lockout opposite Guy Pearce in 2012 and a sequel to the smash 2008 hit Taken, where she’ll again star as Liam Neeson’s estranged kidnapped daughter, Kim, which will take her to Istanbul and Paris for four months of shooting.
“It’s pretty incredible that I started from nothing at age 16 and now I get to make a living at make-believe.” One way or another, the Midwestern native makes this all come together. “Somehow it all does work out and for that, I’m grateful,” she says from her beachside home she shares with Ru, her rescued Hawaiian cat aptly found on the Lost set. Perhaps it’s her hectic schedule that gives title to her relationship status that she describes as “shockingly single.” Relationships have proven to be her greatest single challenge of juggling a successful career and personal life. “You have to be pretty clear on what you’re building together,” she states with a hint of experience in this area. “I have to make time for my cat, my friends, siblings, family; I don’t have any kids though, so it’s all practice and a dry run, so to speak.”

Grace feels friendships are paramount to keeping her stable and grounded persona in check. She reflects on a book she recently read, Connected. “It’s about the importance of official networks and how things such as happiness, eating, even smoking are contagious through networks. There are studies that show the importance of having friends within a mile and a half of you, who you see all the time. The fact that you can walk to someone’s house means you’re really woven into the fabric of each other’s lives and I’m so appreciative of my girlfriends.” She laughs and draws nearer as if to reveal some top secret fact. “My best girlfriends and I had a dinner party together via Skype when I was in Belgrade. They stayed up really late with an extra bottle of wine, I got up at 5 a.m. before work and we all sat around the table on Skype and took group photos of each other. It was really lovely and it’s a great way to stay connected.” While mastering the art of staying linked, the powerhouse has also succeeded in finding ways to relax and rejuvenate not only her body, her mind as well. An avid reader since her early teens, Grace tries to begin each day with poetry, recently enjoying the words of Dylan Thomas. “It’s almost like a form of prayer for me,” she says. “I think if you find something you bind with, it shows you parts of yourself that you wouldn’t otherwise know were there; I think that’s a good way to start the day.” After her morning ritual, all bets are off for relaxing. Grace’s goal is to try and do something active every day especially when not filming. Consider the list of her recent outdoor endeavors: wakeboarding, scuba diving, surfing, paddleboarding, tennis, rollerblading, “and I’m not proficient at any of these activities yet they’re lots of fun,” she says. Good eating measures also carry over into one of Grace’s favourite hobbies: culinary exploration. “When I’m home, I love entertaining,” she excitedly states. “I like making risotto because I have pretty good sized groups over and this dish is a crowd-pleaser. On an average day, though, I just try to do a lot of fresh vegetables and lean protein.

That’s easy to cook for one.” Besides cooking, Maggie has taken up gardening to bring a Zen-like atmosphere into her days. “I’ve really fallen in love with gardening in Southern California. I’m turning into an old lady,” she laughs. Hardly. Though her current portrayal of Irina – a vegetarian vampire who is part of the coven in Denali, Alaska – in the new Twilight movie makes her over 1,000 years old, Grace took to some strenuous outdoor activities while shooting the film in remote areas of British Columbia. “We went cross country skiing a lot of the times, hiking and even had coven field trips to nearby islands by ferry. Since shooting Twilight involves long hours on set, Grace says she is especially careful about keeping her stamina and energy at peak levels. “Obviously sleep is important because typically the day starts very early and sometimes we shoot late into the evening. So how you start your day is really important. For me, it’s everything in moderation. I go through periods where I’m a little more attentive to how I take care of myself. Usually it’s an early wake-up with a cup of tea and reading some good stuff, because I have to be conscious of what I put into my brain as well as my body. I also like to have some quiet time in the morning.” When she’s not working, exercising, gardening or volunteering with a local children’s charity, you can find Grace doing some self-reflection. “I certainly have some periods where I can slow down a bit and take a look at myself. A lot of it comes down to habits and whenever I’m feeling off balance, I have to look where I’m really spending my time. Aristotle once said: ‘we are what we repetitively do.’ So taking a look at me to find and love myself are not just lofty goals. To a certain degree, I can look at my life and say ‘okay, yeah, this is right where I want to be.’ It’s pretty incredible that I started from nothing at age 16 and now I get to make a living at make-believe. There are certainly areas where I need to explore and grow. My life has given me great stuff and lots of fun if you’re going to spend money on something, experience always wins over material things.”

Two weeks after her exam, King woke up light-headed and saw her doctor immediately. “He said ‘it’s official, you have high blood pressure’ – it was now 149/89.”
“My blood pressure has always been on the lower side of normal because I work out so much,” says the 120-pound actress, “so a set doctor who does the cast physicals suggested I might want to start monitoring it when it was noted as elevated.” Back on the Southland set five months later, King’s blood pressure was still high, culminating at 147/89 in January for her annual physical. “My doctor

Instead of sugar, Faita mistakenly used salt for a disastrous kitchen debut. The next morning he got up before sunrise to fi x his culinary mistake. The results were absolutely delicious. Today, the 36-year-old chef has come a long way from his fi rst cooking faux pas. He now appears on two French-language TV shows and one English show called In The Kitchen with Stefano Faita. Also, his third Frenchlanguage cookbook just hit bookstores! In addition, Faita owns a cooking school called Mezza Luna with his mother and sister. “Growing up I cooked with my mom a lot,” recalls Faita. “Every Sunday was pasta day so we’d make fresh pasta and she’d let me make my own dough to put through the pasta maker. We’d make a Bolognese sauce and have a perfect Sunday pasta dinner.”

Today, Faita’s refrigerator is empty, as it is most days. “I live two blocks from one of the best health food markets in North America,” explains the fit 183 pound chef who exercises regularly. “So I go to the market every day and shop for my fresh food.” “For me, the trick to living a balanced lifestyle is to eat a balanced diet,” he says. “Vegetables play a large part in a balanced diet and we forget about them so often. Yet we shouldn’t.” Faita explains that there’s a movement happening in Montreal where all the chefs in the city are really experimenting with vegetables – using different seasonings and different presentations. Does he practice what he preaches? “I sure do,” he says – that’s not to say he’s the food police by any means. In fact, Faita takes pride in his decadent signature tiramisu. “It’s delicious and when someone eats it, they know it’s mine,” he says. “I don’t mix cream and mascarpone cheese – I make it with 100 per cent mascarpone and I don’t use Lady Fingers either. Instead, I use thinner cookies that make the tiramisu creamier.”
Faita’s favourite cooking spices are hot pepper fl akes, black pepper and fennel seeds, while his go-to kitchen gadget is his chef knife. “You can’t do anything in the kitchen without a good knife,” he says. Though, admittedly not the most refi ned or most organized chef, Faita is defi nitely passionate about what he does. His mantra: Keep it simple, yet don’t be afraid to experiment. And, have fun.

ngredients 8 slices of fresh swordfi sh (each slice a little thinner than 1 cm) 60 ml (4 tbsp) of extra virgin olive oil 1 small onion, chopped (optional) 1 clove of garlic, crushed 60 ml (4 tbsp) of white wine Dressing 45 ml (3 tbsp) of bread crumbs 15 ml (1 tbsp) of chopped Italian parsley 1 branch of fresh mint, shredded 1 branch of thyme, chopped 60 ml (4 tbsp) of grated parmigiano reggiano 1 egg yolk Zest from 1 lemon Salt and pepper to taste 15 ml (1 tbsp) of extra virgin olive oil reparation 1. Combine all of the dressing ingredients in a blender. Slowly add the olive oil. 2. Spread the dressing on each piece of fi sh.Roll the pieces and keep them in place with toothpicks. 3. Delicately sear each roll of fi sh in the hot oil and garlic. (If you have chosen to use the onion, cook the onion in the oil until it is golden brown. Remove the onion from the skillet before searing the fi sh.) 4. Add the white wine after having seared the fi sh. Reduce heat and let simmer for 5 minutes. 5. Serve quickly so that the fi sh does not dry out.

ngredients 500 g (3 1/3 cup) of crushed almonds 96 g (3/4 cup) of sugar 4 egg whites Zest from 2 lemons 36 whole blanched almonds reparation 1. Heat the oven to 160 °C (325 °F). Cover 2 cookie sheets with parchment paper. 2. In a big bowl, beat together the crushed almonds, egg whites and lemon zest with a wooden spoon until the dough is well mixed. 3. Shape the dough into small balls approximately the size of golf balls. Lightly fl atten the balls onto the cookie sheets, keeping about 5 cm between each cookie. Press a whole almond into the dough, in the middle, of each cookie. 4. Cook 25 to 30 minutes or until golden brown. Let cookies stand on the the cookie sheet a few minutes before transfering them to a grill where they can cool completely. * For chocolate cookies, replace the lemon zest with 2 tbsp of cocoa. Symptoms: Upon returning to the West Coast from living in Spain, I started breaking out in hives shortly after waking up every morning. The first two days the hives were localized to my fingers, around my knuckles and then made their way up my arms. Next thing I know, they started spreading everywhere — on my toes, knee caps, thighs, stomach and back — with the unforgiving symptoms lasting two hours then disappearing until the next morning. It was very odd, as I had never experienced hives before and I had no idea what was causing these outbreaks. Antihistamines didn’t help either.
