Welcome to one of my favourite times of the year – the holiday season! It can be the most fun and inviting time, where we create lasting memories with friends and family. It’s also a time to conjure up recipes handed down through generations or newly created ones. Check Giada DeLaurentiis’ recipes in this month’s Food Feature that can be enjoyed during the holidays or any time of year. You’ll find decorating advice and displays in the home pages that will help you make this time more special, but less demanding. I feel the warmth in family traditions by celebrating at home with my daughter, Kaya, and family and friends. I host an annual Christmas Eve party for my whole family and some close friends who are like family. It’s such a wonderful way for all of us to reconnect, laughing, telling stories and just eating a delicious meal. My favourite holiday dishes are stuffing and mashed potatoes with gravy. The turkey is just the conduit to the starches I love so much. On Christmas Day we go to one of my aunt’s homes to see extended family. Okay, so between Thanksgiving and New Year’s, I join the average woman and gain about five pounds. One trick I use around this time of year with all the celebratory occasions is I eat before I go to a party so I am not hungry. If I am hungry, I will eat everything. Yes, the stress level rises around this time of year, but I carve out the time to do my meditating first thing in the morning so I set myself up for the day. Seems I’m in good company as Viva’s cover story is on Giada DeLaurentiis who also tries to set up her days this way. To honour the spiritual meaning of the holidays, I remind myself what I am thankful for. I’m thankful for the love around me – my daughter’s love, my family’s love and my friends’ love. Holiday get-togethers give me an excuse to get out of my jeans and tee, and emerge from my bedroom a stylish working mom. This year, I created a new bracelet for my jewelry line sold on The Shopping Channel. It’s called the Star Cuff Bracelet – an affordable diamond cuff silver bracelet that is perfect to throw on for holiday parties. Thank you Viva for letting me share my thoughts this special time of year. I hope you enjoy this issue of Viva.

steoporosis affects an estimated 200 million women worldwide, with one in three Canadian women at risk for an osteoporotic fracture in their lifetime. Brittle bones are not just a woman’s issue, however. According to research by the International Osteoporosis Foundation more than one in five Canadian men over the age of 50 years will be
affected by osteoporosis. Furthermore, the bone health of children and adolescents has become a recent medical concern, as the occurrence of childhood fractures has increased from 35 per cent to 65 per cent over the past four decades, according to a study published in Pediatrics. Here’s how to keep your entire family’s bones healthy and strong for life.
DIET MATTERS Your first line of defense should be your diet. Aim to eat calcium-rich foods every day and help to preserve existing bone mass by including foods that are high in protein. The vitamins, minerals and antioxidants found in fruits and vegetables can also support bone health. While calcium and vitamin D are important, recent research has found that optimal bone health does not come from calcium and vitamin D alone. While these nutrients are important, other nutrients like magnesium and vitamin K2, and micro-minerals such as boron, zinc and manganese also play a role. New research has also begun to support the use of omega-3 fatty acids for bone health. In a 2011 study published in the British Journal of Nutrition, DHA was shown to be a vital constituent of marrow and play a role in increasing bone mineral content. Furthermore, a 2013 investigation in the Journal of Bone and Mineral Research found that higher amounts of alpha-linolenic acid in red blood cells, as well as eicosapentaenoic acid (EPA) and total omega-3 polyunsaturated fatty acids, may predict lower hip fracture risk, while a higher omega-6 to omega-3 ratio may predict higher hip fracture risk in postmenopausal women.
SHOULD YOU GET A BONE MINERAL DENSITY TEST?
A bone mineral density test (BMD) measures the health of your bones by determining how much calcium and other types of minerals are present. A low-dose x-ray can diagnose bone loss and the potential for osteoporosis, and will give you a score based on other people your age. It’s a great idea to talk to your doctor to see if you should get a BMD in order to assess your osteoporosis risk.

lu season has arrived. From November to March, over 12,000 Canadians will be hospitalized for complications stemming from this affliction. While your flu may not be serious enough to warrant a trip to the emergency room, how do you know if you should visit your primary care physician or a naturopathic doctor (ND)? “It never hurts to get multiple advice when it comes to your health,” says Preet Khangura, a Victoria, BC-based naturopathic doctor from the Sage Clinic. If you feel the flu coming on, you should book a trip to an ND, physician or both right away. “Success rates are higher if you start treatment sooner,” says Khangura. Regardless of whether you’re looking for conventional or naturopathic treatment, you should seek help within the first 48 hours of flu symptoms. FINDING THE RIGHT ND It’s a great idea to start your search for an ND before you fall ill so that you’ll have one on speed dial when you need them. Talk to friends to see if they have an ND that they like, or look to accredited colleges and associations (see below) for naturopathic doctors that are associated with them. It’s also a good idea to do a mini interview with your ND in order to find out what their stance is
on holistic health, how they’ll work with your primary care physician and what types of treatments they provide. It’s a good idea to book an initial visit with an ND prior to getting sick. This will take about an hour and will consist of going over your health history and any concerns you may have. That way, your ND will be better equipped to treat you when you fall ill. “For example, if you have a history of ulcers or gastritis, you should avoid oil of oregano,” says Khangura. While most health plans cover visits to your ND, check with your insurance company to make sure that you are covered. WHAT YOUR NATUROPATHIC DOCTOR CAN DO FOR YOU A naturopathic doctor has a lot of tools to help you feel better quickly. They can provide supplements in the right dosage for your specific symptoms and body. “Strong elderberry extract is one of my favourites,” says Khangura. “It’s shown to reduce the duration of flu significantly if used within the first 48 hours of symptoms showing.” Khangura also suggests a high dose of echinacea on the first day of symptoms. You should remember that buying a cheaper, but ineffective product, will lead to more expenses in the future. inter is coming … and not just for Game of Thrones fans! Flu season will soon be upon us. According to Health Canada, our country’s peak flu season runs from November to April. Here’s how to stay healthy this year and keep all those flu walkers behind the wall. Since the best cure for any illness is not to get sick in the first place, prevention should be your primary goal. There are a variety of natural ways to help keep you and your family healthy. Here’s a look at how to fight flu and keep your body in optimal health. WASH UP First and foremost, you should wash your hands regularly – with soap and water! Alcohol-based sanitizers are effective at killing bacteria, however they do not kill the viruses that are responsible for the flu. The World Health Organization suggests humming the “Happy Birthday” song twice while washing to ensure that you wash your hands for a sufficient amount of time. STAY AWAY SICKNESS Limit your contact with sick people. Likewise, should you become infected, avoid contact with others – take a sick day!
WASH YOUR HANDS Avoid touching your mouth, nose and eyes with unclean hands. Cough or sneeze into the crook of your arm or a disposable tissue rather than your hands. KEEP IT CLEAN Shared surfaces, such as doorknobs, keyboards and television remotes, should be regularly sanitized. Filling a spray bottle with several drops of plant-based essential oils, such as thyme, tea tree or oregano, and some water can provide an excellent natural alternative to conventional antiseptics. Remember to keep essential oils away from small children as the oils may be toxic if swallowed. ADD MOISTURE Research suggests that the influenza virus is more likely to survive in drier environments so you may want to increase the humidity of your household during flu season. A favourite prevention and treatment of mine is to add a few drops of eucalyptus essential oil to a cool mist vaporizer or humidifier. Not only does eucalyptus smell nice, but it is also an excellent decongestant. LIMIT SUGAR AND REFINED CARBS It’s rather unfortunate that Halloween heralds the beginning of our flu season. Avoiding sugar and other refined carbohydrates is one of the best things that you can do for your overall health, and especially the health of your immune system. Earlier this year the World Health Organization released their guideline recommendations (based on strong quality supporting evidence) that adults and children reduce their intake of free or added sugars to less than 10 per cent of their total caloric intake, in order to reduce risk of noncommunicable diseases, such as overweight, obesity and dental cavities. Furthermore, they suggest that this recommendation can be adopted as policy in most situations. Some health policy experts even suggest that the dangers added sweeteners pose to health are justification for implementing controls similar to those in place for alcohol. Research has demonstrated that even five hours after consuming large quantities of fructose, glucose, sucrose, honey or orange juice, resulted in suppressing the ability of neutrophils (the most common white blood cell in our immune system) to engulf bacteria. This immune suppression did not occur in test subjects that consumed starches or complex carbohydrates. Make sure that you and your children take it easy on the treats! Emphasize whole, unprocessed foods, and get plenty of fruits and vegetables.

FILL YOUR BASIC NEEDS Get adequate sleep, drink sufficient fluids, stay fit and manage your stress appropriately. IMMUNE-BOOSTING HERBS AND VITAMINS A naturopathic doctor can work with you to determine the most appropriate flu prevention strategies for you and your family. This may include supplementation with antiviral herbs such as Echinacea, lemon balm and elderberry, or adaptogenic herbs that also have immune-boosting properties such as eleuthero or astragalus. Adaptogens are substances that appear to improve the body’s response to stress. Probiotics might also be a consideration, because a healthy gut flora is critical for optimizing your immune system function. Vitamin C supplementation has been shown to be of value in the prevention and treatment of colds. While research suggests that Vitamin D supplementation can be helpful for the prevention of colds and flus, it does not appear to be effective for their treatment. With respect to minerals, calcium gets most of the media coverage, however, zinc is one of the best minerals for your immune system, and has shown efficacy in terms of prevention and treatment. Food sources rich in zinc include: oysters and other seafood, meat, wheat germ and pumpkin seeds. If you choose to supplement, your naturopath can recommend appropriate doses for you and your family in order to ensure that your supplementation is both safe and effective. USE OREGANO OIL AT ONSET OF A COLD OR FLU Many people choose to take oregano oil for colds and flus, as it exhibits antiviral activity, in addition to antibacterial and antifungal activity. It is important to use oregano oil only as needed – at the first onset of symptoms – as it is capable of disrupting a healthy gut flora if used for too long. I would not recommend using oregano oil for more than 10 consecutive days. FLU WATCH For those interested in the current status of flu and flu-like illnesses across Canada, the Public Health Agency of Canada’s national surveillance monitoring system, FluWatch, publishes a report on their website every Friday. This data also informs the World Health Organization’s development of the seasonal flu vaccine. Remember, flu season is inevitable – catching it is not! VM

INFLAMMATORY BOWEL DISEASE SEVEN SIMPLE STEPS TO HELP EASE THE PAIN OF IBD. BY DEXTER BROWN
C
elebrities may appear to live glamorous lives, however even they aren’t immune to the effects of inflammatory bowel disease (IBD). Amy Brenneman, star of Private Practice, Grey’s Anatomy and Judging Amy is a strong supporter of the Crohn’s and Colitis Foundation of America, and she struggled with ulcerative colitis for years before she finally decided to have surgery. The disease is so common that it affects one in every 150 Canadians. According to Crohn’s and Colitis Canada, there are more than 10,200 new cases diagnosed in the country each year. Crohn’s disease and ulcerative colitis are the two major kinds of IBD, and cases vary in severity. Crohn’s disease can affect any part of the gastrointestinal (GI) tract, but it is often found in the colon and the small intestine. Crohn’s occurs when small segments of inflammation occur throughout the gut from the inner layer to the outer lining of the gut.
On the other hand, ulcerative colitis affects parts of the colon, rectum and anus and usually inflames the inner lining of the bowel tissue. It typically starts at the rectum and works its way up through the colon causing a continuous stretch of inflammation. IBD negatively affects the way the body absorbs nutrients and how it eliminates waste from the body. Those who suffer from IBD may have abdominal pain, bloating, cramping, diarrhea (sometimes bloody), fatigue, gas, weight loss and/or a decreased appetite. LIVING WITH IBD While Brenneman ultimately resorted to surgery, there are other ways to deal with IBD. Although there isn’t a cure for IBD, there are some dietary changes you can make that may put you into remission or at least reduce your symptoms. Toronto-based dietitian Doug Cook and author of The Complete Leaky Gut Health & Diet Guide shares seven tips for those who have been diagnosed with IBD and are dealing with a flare up. 1. Monitor Your Fibre Although we need fibre to move food through our digestive system, too much fibre can irritate your symptoms if you have IBD. While you shouldn’t eliminate fibre when you have a flare, it is a good idea to restrict certain types of fibre. “Things like wheat, bran and grains can be more problematic than certain fruits and vegetables [due to the type of fibre they contain],” says Cook. “The tolerance is highly individualized.” If you’re having trouble eating some fruits and vegetables you can try cooking them instead of eating them raw. Steaming or baking your produce will make them easier to digest. Cook also suggests juicing, blending or even just peeling your fruits and vegetables. To make sure you have the right amount of fibre in your diet, consult a dietitian or your family doctor. ❯ IF A FLARE UP IS REALLY BAD YOU MAY WANT TO TEMPORARILY DROP CRUCIFEROUS VEGETABLES SUCH AS BROCCOLI AND CAULIFLOWER.
2. Limit Sugar Intake Cook recommends eliminating packaged fruit juice and restricting foods with added sugars. While sugar alcohols and white sugar are the worst offenders, you should also limit natural sugars like maple syrup, honey and the sugars in dried fruit. “Sugars can draw some fluid into the bowel and that could cause problems,” says Cook. ❯ PRUNES SHOULD BE AVOIDED BY PEOPLE WITH IBD BECAUSE OF THEIR HIGH FIBRE AND SUGAR ALCOHOL CONTENT.
3. Go Lactose-free Consider swapping out cow’s milk for a lactose-free alternative.
When it comes to other dairy products, however, you don't have to be as vigilant. “Cheese and yogurt are naturally low in lactose because the natural bacteria breaks it down,” says Cook. 4. Skip your Daily Coffee Coffee can cause problems for those with IBD, particularly because it contains caffeine. While you may think you’re doing yourself a favour to drink decaffeinated coffee, it’s best to avoid all varieties of coffee during flares. “Coffee has dozens and dozens, if not hundreds, of organic acids,” Cook says. “So even if your coffee is caffeine-free, there can still be a problem during the flare. My advice would be to avoid coffee.” In her book The IBD Healing Plan and Recipe Book, certified health coach, holistic nutritionist and Crohn’s disease survivor Christie A. Korth says that coffee can produce a laxative effect and stimulate rectosigmoid motor activity in as few as four minutes after consumption – even small amounts of coffee can produce loose stools. She recommends substituting coffee for tea or Teeccino, a herbal coffee supplement that gives drinkers the taste of coffee without its negative side effects. Cook also says some other safe beverages for IBD suffers would include water, lactose-free milk, caffeine-free infusions or rice, hemp or almond beverages. 5. Eat Anti-inflammatory Foods There is good evidence that fish and fish oils can help with IBD because of the anti-inflammatory effects of omega-3 fatty acids. “Vitamin D is also anti-inflammatory, and it helps to modulate or temper the immune system,” says Cook. Part of the problem with a flare is that the immune system is attacking the tissue of the digestive tract so it helps to balance the immune system to keep it from being too over- or underactive.” 6. Take a Multivitamin A general multivitamin is a good idea because people with IBD typically have micronutrient deficiencies due to digestive tract damage that impairs digestion and absorption. “A multivitamin helps to bridge the gap if people aren’t absorbing or digesting foods properly,” Cook says. 7. Consider going on a low FODMAP diet FODMAP stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides And Polyols. “Low FODMAP diets have foods with carbohydrates that don’t ferment to the same degree, so they produce fewer symptoms like gas and bloating,” says Cook. The Paleo Diet is an example of an eating plan that cuts out a lot of the FODMAP foods. Cook says to look for diets that get rid of potentially problematic foods like dairy with lactose, a lot of grains and some FODMAP-type sugars. VM HOLIDAY 2015 / VIVAMAGONLINE.COM

The release of stress hormones can also cause changes in the digestive system, like sudden lack or increase in appetite, heartburn, nausea and stomach pains. Stress may also result in inflammation of the gastrointestinal system, making you more susceptible to infection. THE GUT-BRAIN CONNECTION Any changes in our emotional state, such as feeling nervous or anxious, can lead to problems in the gut. Have you ever had to do a big presentation or take a test and had heartburn or diarrhea as a result? This is the brain and the gut communicating. These effects can be seen in the other direction too – it’s a two-way street!
PHYSICAL SIGNS OF STRESS IN YOUR DIGESTIVE SYSTEM Alterations in our gut flora and changes in our intestinal permeability can affect our mental state, possibly resulting in depression and anxiety. Indigestion can also be caused by stress. Stress can cause your esophagus to go into spasms. This can increase the acid in your stomach causing indigestion. Stress can also cause your stomach to become nauseous and may cause your colon to react in a way that gives you diarrhea or constipation. In addition, the stress response may cause a number of detrimental events in your gut, including: ❯ Decreased nutrient absorption ❯ Decreased blood flow to your digestive system ❯ Decreased enzymes in your gut NATURAL THERAPIES TO AID DIGESTION AND COMBAT STRESS Here’s how simple changes in your diet and lifestyle can help manage your digestion issues: Nutritional Changes ❯ Consume a diet rich in fruits, vegetables, and whole grains. Eating foods that are bad for your digestion can be a cause of stress. Don’t deal with stress by overeating or binging on junk food. iada De Laurentiis admits that she feels sexy when wearing light, airy dresses that flow in the wind. She also likes to have just a hint of a tan – and she likes to wear red. “Wearing red makes me feel powerful,” says the Food Network chef and best-selling author. “My grandfather was a Leo and he had a lot of red everywhere,” says De Laurentiis. “I’m a Leo too, so to me red equals power. A bright red makes me feel strong, sexy and empowered – it’s everything I strive for.” De Laurentiis has been firm on what she strives from a young age. Growing up in Rome, she discovered a passion for cooking at just six years of age. “My family used to make pizza dough on Sunday mornings; let it rise, then pound it out. Then, around 4:00 p.m., my grandmother used to set up a little pizza bar with different toppings. Each of us kids would roll out our dough, and make whatever pizza we wanted. It was fun and messy, and also one of the reasons I fell so madly in love with cooking.” De Laurentiis moved to the states, but later returned to Europe to study at Le Cordon Bleu in Paris, with aspirations of becoming a pastry chef. However, once she returned to the States she worked as a professional chef, most notably for Spago, The Wolfgang Puck-owned Los Angeles haunt. She went on to work as a food stylist, and soon caught the attention of the Food Network with a piece she did for Food and Wine magazine in 2002. Her Food Network cooking show, Everyday Italian, debuted in April 2003 to rave reviews, and a loyal fan base soon followed. The success of her first show has given De Laurentiis access to other Food Network shows, such as Giada at Home, and guest co-host segments on Today. She also received a daytime Emmy for Outstanding Lifestyle Host, and in 2012 was inducted into the Culinary Hall of Fame. Her current book Happy Cooking with Giada De Laurentiis is poised to become another bestseller. THE JOURNEY OF HAPPINESS Life hasn’t always been sweet for De Laurentiis. When she was 32, she lost her younger brother Dino to melanoma. She made a promise to him to live her life with passion, and not to deprive herself of food and fun. “Dino didn’t get the chance to do everything he wanted to in life,” she says. “Happiness adds to a person’s overall well-being and longevity.” When you’re in a good state of mind, and your mind is strong, it controls every part of your body. “I was doing a piece on Italian women recently and my mother, who lives in Rome, put a little note of her own on the story saying what my grandmother used to say to her: ‘The more fun and happiness you have in life, the more wrinkles you’ll have, which will show the joy in life.’ I don’t want my wrinkles to go, 60

because it took me a lifetime to get them, and a lifetime to get all the happiness and joy that I have.” The chef pauses as she reflects on the women in her life. “I think it’s a better journey to be happy. Of course, not every day is pure joy, but you can find a little bit of happiness in what you do all day long. That’s the key. My brother died from a mole on his back that wasn’t treated, and it attacked his lymph nodes. I see a dermatologist several times a year for a full body check, but more importantly, his death made me realize that I’ve got to live this life to the fullest because it can end at any point in time.” THE SIMPLE THINGS De Laurentiis sees that simple life’s pleasures bring her happiness on a regular basis. While in front of the camera she is perfectly coiffed, at home her choice of attire is more likely jeans and a t-shirt. She also keeps her entertainment low key, and prefers to hang out at home with her seven-year-old daughter Jade. “Jade and I love to sit on the couch with a bowl of popcorn and watch movies,” says De Laurentiis. “It’s a very precious time.” She also admits to snacking on chocolate. “I’m a reformed chocoholic,” says De Laurentiis. “I used to eat so much chocolate and sugar that I lived on it,” she confesses. “Now I’ve cut down on my chocolate intake, but not to the extent that I don’t have it anymore. It makes me happy.” CONNECTING TO LIFE De Laurentiis starts her days early with a 5:30 a.m. wake up. “I shower, have my coffee, and then get Jade up. We have breakfast and I take her to school,” says the busy mom. Breakfast for mom is usually hot oatmeal with olive oil and salt, or hot brown rice with olive oil and salt. “Then it’s yoga time right after I get back home.” Taking time to relax and stretch and strengthen her body helps De Laurentiis manage her busy life. She also engages in regular acupuncture, massage, chiropractic work and long walks on the beach. “I try to meditate too, but it’s the hardest thing for me to shut my mind off and just relax. I feel my mind gets the better of me most of the time,” she laughs. “My busy mind has also allowed me to have the career I have because my mind creates recipes so I don’t want to shut it off too much.” Her spiritual connection to Italy also helps add to her calmness while, ironically, also rejuvenating and energizing her body. “I was shooting a show in Italy and when I came back, I felt so rejuvenated,” says De Laurentiis. “It’s the feeling you get when you’re starving, and then your have this great meal and feel so fulfilled and energetic. A trip to Italy helps stabilize me. I don’t know if it’s because my mom is there, or because that’s where I’m from, or the food, or the inspiration of the lifestyle. It’s a spiritual connection that I never thought about until five years ago.” VM
GIADA’S MOVIE POPCORN De Laurentiis makes her own popcorn with olive oil and herbs from her garden. She mixes in chocolate chips for her favourite snack. Her daughter likes semi-sweet chips and De Laurentiis likes dark so they mix them up.

ORGANIC BROWN AND WILD RICE DRESSING SERVES: 8-10
INGREDIENTS: • 8 ounces applewood-smoked bacon slices, cut crosswise into 1⁄2-inch-wide strips • 41⁄2 cups low-sodium chicken broth • 3 tbsp. fresh thyme leaves, chopped • 11⁄4 cups organic brown rice • 11⁄4 cups wild rice • 6 tbsp. unsalted butter • 2 ten-ounce bags pearl onions, blanched in boiling water for two minutes, then peeled • 11⁄2 pounds Portobello mushrooms, dark gills scraped away and discarded, coarsely chopped (7 to 8 cups of 3⁄4-inch pieces) • 1-pound Brussels sprouts, root ends trimmed and discarded, sprouts halved lengthwise, then thinly sliced crosswise (about 4 cups) • Kosher salt and freshly ground black pepper • 3⁄4 cup hazelnuts, toasted, husked, and coarsely chopped (optional) DIRECTIONS: 1. In a large heavy skillet over medium heat, cook the bacon until crisp. Using a slotted spoon, transfer the bacon to paper towels to drain. Discard all but two tablespoons of the drippings from the skillet; reserve the skillet with the drippings. 2. In a large heavy saucepan, combine the broth and one tablespoon of the thyme. Bring to a boil over medium-high heat. Add the brown rice and return to a boil. Reduce the heat to medium-low; cover and simmer for 10 minutes. Add the wild rice and bring to boil. Reduce the heat to medium low; cover and simmer until all the rice is tender (but still slightly chewy), about 40 more minutes. 3. Meanwhile, add one tablespoon of the butter to the bacon drippings in the reserved skillet and heat over medium-high heat. Add the pearl onions and sauté until golden and tender, about eight minutes. Using a slotted spoon, transfer the onions to a small bowl and set aside. Add two tablespoons of the butter and the mushrooms to the skillet and sauté until the mushrooms are brown and tender, about eight minutes. Stir the Brussels sprouts into the skillet with the mushrooms and sauté until tender, but still bright green, about five minutes; sprinkle generously with salt and pepper. 4. Add the rice mixture, remaining three tablespoons of butter, two tablespoons of thyme, and reserved pearl onions to the skillet. Toss gently to blend. Season to taste with salt and pepper. Transfer the stuffing to a large bowl. Sprinkle with the bacon and hazelnuts, if desired, and serve. HOLIDAY 2015 / VIVAMAGONLINE.COM

INGREDIENTS: DRESSING • 1⁄4 cup fresh lemon juice (1 large lemon) • 1⁄4 cup extra-virgin olive oil • Kosher salt and freshly ground black pepper SALAD • 11⁄2 pounds Brussels sprouts • 2 cups baby arugula • 1 head Belgian endive, cut into 1⁄2 inch pieces • 1⁄3 cup sliced almonds, toasted *see Giada’s Note • 1⁄3 cup grated Pecorino Romano cheese

DIRECTIONS: 1. Prepare dressing in a small bowl, whisk together the olive oil and lemon juice until smooth. Season with salt and pepper, to taste. 2. To start the salad, use a small paring knife to remove the outer leaves from the Brussels sprouts. 3. Bring a large saucepan of water to a boil over medium-high heat. Add the Brussels sprout leaves and cook for one minute. Drain and place in a bowl of iced water. Drain well in a colander. 4. Place the Brussels sprouts leaves, arugula, endive and almonds in a salad bowl. 5. Add the dressing and toss together. Sprinkle with cheese and serve.
GIADA’S NOTE: To toast the almonds, arrange in a single layer on a baking sheet. Bake in oven set to 350 degrees Fahrenheit for six to eight minutes until lightly toasted. Cool completely before using.
SPICED APPLE WALNUT CAKE with Cream Cheese Icing SERVES: 10-12
INGREDIENTS: • Butter, for greasing the pan • All-purpose flour, for dusting ICING • 1 cup confectioners’ sugar • 1⁄4 cup heavy cream • 4 ounces cream cheese, at room temperature • 3 tbsp. water, plus more as needed • 2 tsp. pure vanilla extract
CAKE • 3 medium green apples (such as Granny Smith) peeled, cored and diced into 1⁄4 to 1⁄2 inch pieces • 11⁄2 cups pure maple syrup • 3 large eggs, at room temperature • 3⁄4 cup light brown sugar • 3⁄4 cup vegetable oil • 1 tbsp. pure vanilla extract • 3 cups all-purpose flour • 11⁄2 tsp. baking powder • 11⁄2 tsp. baking soda • 1 tbsp. ground cinnamon • 1⁄2 tsp. ground nutmeg • 1⁄2 tsp. ground ginger • 1⁄2 tsp. fine sea salt • 1 cup chopped walnuts
DIRECTIONS: 1. For the cake, place an oven rack in the center of the oven. Preheat the oven to 350 degrees Fahrenheit. Liberally butter and flour a 10inch fluted tube or Bundt pan. Set aside. 2. In a large bowl, mix together the apples, maple syrup, eggs, sugar, oil and vanilla. In a separate medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger and salt. In batches, mix the dry ingredients into the apple mixture. Stir in the walnuts. 3. Pour the mixture into the prepared pan and bake for 55 to 60 minutes, until a cake tester or skewer inserted into the cake comes out clean. Cool for 15 minutes and invert onto a wire rack to cool completely, about one hour. 4. To make icing combine the confectioners’ sugar, cream, cream cheese, 3 tablespoons water and vanilla in a food processor. Process until smooth, adding more water, one teaspoon at a time, until the icing is pourable. Spoon the icing over the cake and allow to set for 20 minutes before slicing.

TURKEY CONFIT SERVES: 4
INGREDIENTS: • 1⁄4 cup kosher salt • 1 tbsp. sugar • 1⁄2 tsp. freshly cracked black peppercorns • 2 bay leaves, crushed • 10 fresh thyme sprigs • 2 fresh rosemary sprigs (leaves only, discard stems) • 2 turkey legs (about 2 1⁄2 pounds) • 2 turkey thighs (about 2 1⁄2 pounds) • 4 seven-ounce containers of duck fat • 1 head of garlic, top third cut off and discarded, unpeeled DIRECTIONS: 1. In a small bowl, mix together the salt, sugar, pepper, bay leaves, thyme and rosemary. 2. Place the turkey legs and thighs in a 9 x 13-inch baking dish. With the tip of a knife, cut four slits around each leg and thigh. Sprinkle the salt mixture over all sides of the turkey. Cover with plastic wrap and refrigerate for at least 24 hours or up to two days. 3. Remove the turkey from the refrigerator 30 minutes before placing in oven. 4. Preheat the oven to 250 degrees Fahrenheit. 5. In a large Dutch oven, warm the duck fat and head of garlic over medium heat. Meanwhile, rinse the turkey well to remove the excess salt mixture. Dry very well on paper towels. 6. Carefully add the turkey to the warmed duck fat. The fat should cover the meat. Allow the heat to recover. When you see the first bubble come to the surface of the oil, cover the pan and place in the oven for about 3.5 hours or until the meat is extremely soft and tender. 7. Allow to cool to room temperature in the fat. Store the confit completely submerged in the fat in the refrigerator until ready to use. 8. Preheat the oven to 425 degrees Fahrenheit. 9. When ready to serve, remove the turkey from the fat and scrape off as much excess fat as possible. Place the turkey on a rimmed baking sheet with two tablespoons of the duck fat and place in the oven for about 40 minutes, rotating every 15 minutes to crisp the skin evenly.
ORECCHIETTE with with Cauliflower and Bread Crumbs SERVES: 4
INGREDIENTS: • 1 head of cauliflower, chopped into 1⁄2-inch pieces • 5 tbsp. extra-virgin olive oil • Kosher salt • 1 lb. orecchiette pasta • cup fresh bread crumbs • 1⁄2 cup plus 2 tablespoons freshly grated Parmesan cheese • 4 garlic cloves, chopped • 5 anchovy fillets packed in oil, chopped • 1⁄2 tsp crushed red pepper flakes • 3 tbsp. chopped fresh flat-leaf parsley leaves DIRECTIONS: 1. Preheat the oven to 400 degrees Fahrenheit. On a rimmed baking sheet, toss together the cauliflower, two tablespoons of the olive oil and a half teaspoon of salt. Roast for 20 to 25 minutes, turning the cauliflower midway through, until golden brown and cooked through. Set aside. 2. Bring a large pot of salted water to a boil. Add the pasta and cook for 10 to 12 minutes or until al dente. Drain well, reserving one and a half cups of pasta water. 3. Heat a large sauté pan over medium heat. Add the breadcrumbs and toast until fragrant and golden brown, about three minutes. Remove to a small bowl and mix with two tablespoons of the Parmesan cheese. 4. In that same large sauté pan, heat the remaining three tablespoons of olive oil over medium-high heat. Add the garlic and anchovies, and stir with a wooden spoon, breaking up the anchovies to help them dissolve in the oil. This will take about two minutes. Add the red pepper flakes and the cauliflower and toss gently to coat. 5. Add cooked pasta to the pan, half of the reserved pasta water, the remaining half cup of cheese, and the parsley. Toss to coat, and simmer for another two minutes, adding additional pasta water as needed to moisten. Sprinkle with the bread crumb mixture and drizzle with more olive oil if desired.

It’s just so bad for your body and metabolism. What must you always have in your fridge? Coconut water, mineral water, pumpkin seed butter, kale, spinach, cucumber and hummus. What are some of your go-to meals? I keep single servings of sashimi grade salmon in my freezer. It thaws in water in 15 minutes. Then I cut up a little avocado for a quick, healthy meal. Strangest food you’ve tried? Raw chicken. It’s slimy. What’s your favourite winter dish? Beef ribs. What is your favourite meal to make for guests in your home? I love to cook Thanksgiving dinner – turkey, stuffing, sweet potato, green beans, gravy, cranberry sauce. Yum! What is your favourite ingredient to cook with? I keep things simple in the kitchen: olive oil, salt, pepper, lemon – sometimes
garlic and onions. I probably need to get more creative, but I always love what I cook. What have you been busy with over the last year? 1. Avoid overcrowding: The size of your table doesn’t matter as
long as it can seat your guests comfortably. Never overcrowd a table. I prefer rectangular or oval tables that are wide and wooden. 2. Keep it unscented: In terms of table décor, keep it simple and never use flowers when guests are seated. Flowers on the table are fine for galas and weddings, and when the tables not in use. But for dinner parties I don’t like using them as the scent may interfere with the smell of the food and the bouquet of the wine. Instead decorate with shells, antlers, sculptures, boxes, fruit, vegetables, votive candles and anything that is beautiful and unscented. 3. Use place cards: Always use place cards. It gives your dinner party structure. Saying, “sit anywhere” shows that a host has not thought things through. A good seating plan makes a great party! 4. Encourage your guests to stay: I like long dinners with lots of conversation. Always use seating that is very comfortable so that 74

you encourage guests to linger. Chairs should have wide seats, be well padded and offer support in all the right places. 5. Use a sideboard: I like casual entertaining, so I prefer to use a sideboard to set all the food out on and let people help themselves. A sideboard can be an elaborate built-in cabinet or a simple a chest of draws – an even surface is all you need. 6. Pay Attention to Lighting: Your dining room needs all kinds of lighting to be successful. A beautiful chandelier helps to focus guests. Pot lights add ambience; sconces add elegance; candlelight adds intimacy; and table lamps on the sideboard are great for an unexpected cozy feel that creates a casual vibe. And remember, every light in your house should be on a dimmer. 7. Use a bar cart: For a fun finale to a dinner party I like to use a bar cart to serve after dinner drinks and dessert. It’s unexpected when wheeled in from the pantry and always receives applause. I place it by my seat and dole out the dolce. Yum! VM

I feel the best time to apply the oil is after I shower at night, before I go to bed. I use a few drops and massage it into my entire body. Grapeseed oil is very light, making it easy to absorb. THE RESULTS: The results were dramatic after a few days. My skin was soft, hydrated and smooth, and my legs looked amazing! It turns out that astringent in grapeseed oil is useful for skin toning and tightening. My legs have became firmer and firmer.

lot has changed in Tampa, Florida over the last few decades. I was eager to check out the Epicurean Hotel in SoHo (short for South of Howard Avenue), a trendy neighbourhood with boutiques, restaurants and cafes. The area also boasts some of the city’s best historic architecture. The Epicurean has 137 rooms and suites, and is situated across from the famed Bern’s Steak House – a popular dining choice for visiting presidents and world leaders. The Epicurean tastefully blends urban chic with comfort, while offering many extras. For instance, explore the beautiful Bayshore Boulevard on one of the bicycles available to guests free of charge. “We want to encourage our guests to use the bikes to experience the area and not use their cars,” says Tom Haines, Epicurean General Manager. “There’s also our rooftop bar that is very popular for watching sunsets and just enjoying the outdoors with a wonderful panoramic view.” The hotel’s delectable Spa Evangeline has crafted treatments using indigenous regional ingredients, while a few services incorporate fresh ingredients clipped from a live herb wall in the spa containing locally grown cilantro and mint. Or sign up for a cooking class in their Epicurean Theatre where food experts and eager novices come together to teach and learn from one another. Then, awaken your appetite in the Elevage restaurant with its fresh herb wall garden. The herb wall is serviced regularly by a local farmer, so that the living vertical garden is always fresh. “Greens from our living wall are used in preparing our dishes,” says Chef Chad Johnson. “Our Epicurean Salad is one of our most popular signature dishes.” Johnson, who likes to elevate his favourite childhood dishes to culinary experiences, says his

success comes from “thinking like a kid, but cooking like a chef.” A three-mile bike ride away from the hotel, along the gorgeous Bayshore Boulevard, is Davis Islands – a must for me to visit since it was my home for a year many decades ago. It has retained its small town retail strip, yacht club and community atmosphere. Across the bridge from Davis Islands is the downtown area of Ybor City, Tampa’s National Historic Landmark District. It was once dubbed the cigar capital of the world, and populated by thousands of immigrants from Spain, Cuba, Italy and Germany. The old cigar factories have been given new life as trendy restaurants, nightclubs, unique boutiques and loft living spaces. Stroll past brightly coloured old bungalows, white washing houses and impressive buildings of every kind, or hop on one of the historic streetcars to take you further into the charm of this area. Venture further into the downtown area and you’ll be in Tampa’s Channel District, a rustic, artsy, industrial area with high-rise condos and skyscrapers along the channel, amidst warehouses being renovated and replaced with trendy lofts and creative workspaces. If you want a retreat from the city, try Innisbrook Golf and Spa Resort. It’s located just 35 miles from Tampa on US Highway 19. The condominium resort is set on 900 wooded acres in small clusters that blend into the natural setting. I indulged in a relaxing massage at the resort’s Indaba Spa that helped me rediscover my personal wellness with their botanical products and a very skilled masseuse.
