The holidays are a time to celebrate, and this year Viva has so much to be happy about. In September we celebrated our 10th anniversary. Like any good birthday, it deserved a party. Since Viva’s anniversary coincided with Toronto’s International Film Festival (TIFF) we decided to combine the two, and throw an affair to remember at Toronto’s Windsor Arms Hotel. Actor and Natural Calm spokesperson Sitara Hewitt (seen here with me) hosted the event, which was also packed with celebrities including model Stacey McKenzie, contestants from Canada’s Next Top Model, and R&B singer and songwriter Jully Black. It was such a hot ticket that guests were literally clamoring to get inside and share in the dancing, fun and to watch the fashion show put on by Elle jewelry. You can see more about the great night on page 24-25. Another huge reason to celebrate is that Viva now has it’s own on-line store. This fall we launched myvivastore.com, where we offer some of our favourite natural products featured in the magazine. “We wanted to make it easier for readers to access the natural products that we recommend in Viva,” says publisher Olivier Felicio. “That’s why our slogan is: All of the Natural Products that we know work.” There’s also free shipping and affordable prices so you know you’ll be getting the best value possible. Viva also has a new food ambassador. Chef Devan Rajkumar brings his extensive skills in food preparation and recipe creation to Viva. The Executive Chef at Bosch, Thermador and Gaggenau, Canada, Rajkumar is also a regular guest expert on CityLine. His passion for food will be a huge asset to the magazine. I challenge you to try out some of his party recipes in “Star Attraction” (page 86). I also challenge you to look back at the year and think about what you have to celebrate. The best parties come from celebrating life’s blessings, being thankful, and looking forward to a bright future. We’re thankful for such a big and exciting year and can’t wait to see what 2015 has in store for Viva.

BEHIND THE SCENES Overlooking Topanga Summit outside of Los Angeles, LeAnn Rimes was settled in for Viva’s Holiday cover photo shoot at Oak Creek Ranch, a tranquil, private space surrounded by oak trees, creeks and rugged views of the Santa Monica Mountains. The country singing sensation arrived sans makeup with her long blonde hair pulled back into a ponytail. “This place is gorgeous,” she exclaimed while looking out at the mountainous vista. “It’s almost spiritual.” The glam team assembled, and Rimes tried on various wardrobe selections, each one looking better than the previous. “I like clothing that’s comfortable and I lean more towards neutral, natural colours. My usual choice at home is blue jeans, loose tee or blouse and bare feet.” At the end of our long day, Rimes welcomed husband Eddie Cibrian with a warm hug and kiss when he arrived to whisk her away from it all and back down to reality.

LEANN RIMES It's really hard to balance everything. I always feel like one side is pulling me further than the other. I'm starting to learn to say no and to be able to take care of myself as much as I take care of others. I have always wanted to take care of people and please them. It’s difficult when you have a job that takes you away from home. I want to build a home and stable environment here with my husband and two stepsons. I've become a lot more balanced in my life, but it is still something I struggle with sometimes. I do feel more settled in my life now. I feel grateful for the feeling of being settled – it adds balance to my life.

How long have you read Viva? I first discovered Viva at my local health food store about a year ago and haven’t missed an issue since. What's your favourite section in Viva? Viva is a good way for me to see new products on the market. I love the Grocery Basket section of Viva; it gives me ideas of new things to try. What's your favourite natural product? Natural products add moisture to your skin without any harsh chemicals that can further dry out your pores. Drier skin types should choose a heavier cream like Dr. Hauschka’s Rose Day Cream. 2 | LOCK IN MOISTURE Always soothe lotion on damp skin. If you wait too long after cleansing, the moisture will start to disappear. The goal of a cream is to lock in moisture. The moisture needs to be there. 3 | CLEANSE AND EXFOLIATE Cleansers are important because they help maintain the pH balance of your skin. “If you don’t clean properly, all the dirt goes inside your skin,” says Takla. The right cleanser can also act as an exfoiliant and remove dead skin cells without any harshness. “I’m against [traditional] exfoliation,” says Takla. “When you scrub, you stretch the muscles. With time this causes your skin to lose elasticity.” Instead, apply natural cleansing cream to your damp face and neck. Let the cleanser sit on the face for two to five minutes while you shower or brush your teeth. Then make gentle circles with your fingers and move the cleanser downward on the neck without rubbing. “You want to respect the flow of the lymph system and direct all blood and toward heart,” says Takla. 4 | USE A WEEKLY MASK A deep clay mask should be used once every week to go deep into your pores and remove dead cells without harsh scrubbing. If your skin is really dry you can apply a mask once every two or three weeks instead. 5 | CHOOSE NATURAL “Anything you put on your skin is absorbed through the dermis into the capillaries, blood and circulation,” says Takla. “If you apply a product full of chemicals, those chemicals go directly into your body.” Currently there are no legal regulations for natural cosmetics in Canada. It’s up to you to go a little deeper than just looking for the word natural or organic. Certifications are one of the best and easiest ways to ensure that your natural 40

products are everything they’re claiming to be. While there are a lot of different certifications, there are three gold standards: EcoCert, NATRUE and BDIH. All three certifications ensure that your product has no synthetic fragrances, dyes or petroleum-based paraffins and silicon oils. Products bearing these labels use a multitude of natural materials and plant-based surfactants or emulsifiers. They also use no chemical UV filters and no parabens or halogenated substances. The BDIH logo is for certified natural cosmetics and it aims to create transparency amongst the brands and make things easier for the consumer. If organic is part of the product name, a minimum of 95 per cent of the natural ingredients must be derived from organic production. There can be no more than 10 per cent of transesterified and hydrogenated oils in the product. Also, the check of the formulations is carried out by an independent organization. NATRUE is an international association located in Brussels. It’s established a worldwide standard for natural and organic cosmetics. At least 95 per cent of the bio-compliant raw materials must be derived from certified organic sources, and at least 70 per cent of the bio-compliant raw materials must come from certified organic sources. Ecocert predominately certifies food, but also detergents, perfumes, textiles and cosmetics. It fosters eco-friendly agriculture and compliance with the natural cosmetics standards. Although, the certification is still good, just 60 per cent of the products used need to be organic to bear this label. 6 | PICK A BRAND YOU TRUST “People mix products and their skin can’t heal because they’re using so many different things on their face,” says Takla. The products in a skincare line are made to work together. Pick a brand you love and be consistent for the best results. VM

KAWAKAWA OIL The native Kawakawa plant from New Zealand has traditionally been used to relieve and soothe pain from cuts, burns and bruises. The oil contains anti-dyspeptic and anti-inflammatory properties. It’s commonly used for the treatment of skin conditions as well as for digestive purposes.

APRICOT KERNEL OIL Apricot kernels yield a light, mildly fragrant oil that’s rich in fatty acids and antioxidant vitamins. It’s a common ingredient for a variety of skincare products, soap, shampoo and conditioner. In traditional Chinese medicine, it’s used to treat inflammatory skin disorders. Apply after shower to treat dry or itchy skin.

FORMALDEHYDE This chemical, used in many personal care products such as shampoo, liquid baby soap, nail polish, hair gel and more, has been associated with allergic skin reactions and even cancer. Q. WHAT IS OIL PULLING? A. Celebrities such as Gwyneth Paltrow and Shailene Woodley have been touting the benefits of oil pulling, a traditional Ayurveda method of oral care. Oil pulling involves swishing an edible oil, perhaps mixed with other substances, in the mouth for a period of time as a means of preventing cavities, reducing bacteria, whitening teeth and promoting healthy gums. The toxins in your body are fat-soluble so they join with the oil and are removed when you spit the oil out. The most popular types of oil tend to be sesame, coconut and olive. Gandusha and Kavala Graha are the two primary oral cleansing techniques. Gandusha involves filling the mouth completely with a liquid oil so that gargling is impossible. The oil is held in the mouth for three to five minutes – then released. In Kavala Graha, a comfortable amount of fluid is retained with the mouth closed for about three minutes, and then gargled. From my experience, people who do oil pulling have smoother, more polished teeth and healthier, shinier gums. (However, the cases that I have observed also have excellent general oral hygiene.) t’s safe to say everyone has experienced pain at some point in their life. The human body has millions of pain nerve endings, located in every single organ, except the brain. The brain is the organ that processes pain signals and sends signals back to the point of origin so that we feel pain in those regions. When it comes to treating pain, it’s easy to fall back on traditional pain medications. However, these often fail to get at the root of the problem and are often addictive and have many side effects. Here’s how to get at the root of fighting pain by managing inflammation – the natural way. 68

WHY WE HURT Pain is your body’s way of telling you something is wrong and referring you to the location that requires attention. Pain is often paired with inflammation, which attracts immune cells to the region requiring attention so the immune cells can help fix the problem. While the team of pain and inflammation work together very well for short-term acute pain, if they become chronic and prolonged they can be a source of huge discomfort. Also, chronic inflammation can cause progressive damage and can lead to chronic long-term illnesses such as arthritis (joint inflammation), bronchitis (airway inflammation) and cirrhosis (liver inflammation).

PAIN MEDS DEMYSTIFIED The problem with most established clinical pain management is that it relies heavily on medications that block the perception of pain, rather than addressing the potentially damaging inflammation. Another downside to traditional pain medications is that many have serious side effects and addictive properties. The most common of all pain medications are the NSAIDs (non-steroidal anti-inflammatory drugs) such as acetaminophen and ibuprofen (brand names: Tylenol and Advil). NSAIDs work by inhibiting the production of prostaglandins – pro-inflammatory compounds responsible for inflammation. In acute type situations, such as a minor cut, NSAIDs are beneficial as they bring immune cells to the site of injury to accelerate healing. They are also beneficial in the stomach where they promote the production of protective mucous, and in the kidneys where they regulate proper blood flow through these organs. On the other hand they are not beneficial in the case of chronic long-term inflammation (rheumatoid arthritis, for example) where they promote damage done by the immune cells. With respect to the liver, NSAIDs can have a toxic effect and tax the liver by putting more effort into neutralizing these compounds. Excessive, long-term use of NSAIDs can cause ulcers, kidney and liver damage. Opioids, such as morphine and oxycodone, are more extreme pain medications and are extremely addictive and can cause chronic constipation. These medications work by binding directly to opioid receptors in our brain. Under normal circumstances compounds called endorphins are released by the brain and bind to these receptors when we are in pain to help mitigate the sensation of pain. Opioids enhance this response. It is only acceptable to use these medicines in short, extremely painful situations (such as major accidents or surgeries) or in endof-life compassionate type situations. It is extremely risky to use opioids in any other type of situation due to their high addictive potential and severe withdrawal symptoms once discontinued. Opioids also pose the risk of overdose and death due to cessation of breathing at high doses. More extreme pain medications are sometimes required for surgeries, however extreme caution should be used. The most common are local anesthetics (this is their general name) such as lidocaine. You know them from the dentist’s office for freezing. They are all derived from cocaine and can lead to heart arrhythmias or heart rhythm irregularities if used improperly. Improper use would be in someone with an already existing heart condition that can predispose to arrhythmias or an already existing heart arrhythmia. General anesthetics, such as halothane, used in surgeries are very toxic to the liver. Halothane is converted in the liver to trifluoroacetic acid, which causes oxidative damage to the liver leading to hepatitis (i.e. inflammation of the liver). Short-term usage during surgeries is usually acceptable unless a patient already has a preexisting liver inflammation. Long-term use is never encouraged due to the risk involved. Barbiturates and benzodiazepines also fall under this extreme category and are extremely addictive. Barbiturates can

he flu virus is spread from person-to-person through coughing or sneezing. People can also get the flu by touching objects or surfaces with the virus on them and then touching their mouth or nose. When you get the flu it affects the breathing system. Symptoms can vary from person-to-person, but symptoms commonly include: fever, chills, cough, runny eyes, stuffy nose, sore throat, headache, muscle aches, extreme weakness and fatigue. Children can also experience earaches, nausea, diarrhea and vomiting.

GETTING THE FLU SHOT Talk to your doctor or pharmacist or visit a public clinic to find out about getting the flu shot for your family. The timing and severity of the flu season is unpredictable. In North American, the flu most often peaks in February. However, seasonal flu activity can begin as early as October so it’s a good idea to get the vaccine as soon as it’s offered – usually around early- to mid-October. SHOULD I GET THE FLU SHOT IF I’M PREGNANT? Pregnant women are more likely to suffer severe illness from the flu than other women. An unborn baby could also have serious problems due to premature labour and delivery. Therefore, pregnant women should get the flu vaccination. IS MY BABY TOO YOUNG FOR THE FLU SHOT? tacey McKenzie admits she’s obsessive – especially when it comes to her health and living life to its fullest. The Canadian model confesses that she even exercises before strutting her 5-foot-10 body down the fashion runways. “My exercise is walking,” says McKenzie. “I don’t go to a gym. I love to walk! I literally walk from my house to downtown Toronto (about an hour), or I’ll speed walk to do errands.” In terms of strength, she works with resistance bands. “My focus is on overall health and doing something I love.” WHAT MAKES YOU DIFFERENT MAKES YOU STRONGER McKenzie has always loved modeling. In fact, she was just six years old when she decided modeling was for her. Things wouldn’t come easy for though. Born in Jamaica, McKenzie moved to Toronto when she was in grade school. Although she visited modeling agents in both Toronto and New York, it was her time in Paris that first opened the modeling doors for her. “It wasn’t easy at first,” she says of her entrance into the modeling world. “I was bullied and teased when I was younger. Nobody could categorize my looks. When I went to France, Mr. Gautier called me beautiful and I had never had anybody tell me that before. He asked me later on why I wasn’t happy that I looked different from other models. He told me to own that difference. A light bulb went off in my head because what he said was so true. Who cares if I don’t fit in?” McKenzie decided to embrace her differences and has never look back. EATING FOR HEALTH For almost fashion models, weight is an obsession – not with McKenzie. She doesn’t own a scale and doesn’t care what she weighs. “I’d rather be healthy than a really skinny model,” she says. McKenzie focuses on what she eats – like whole grains, fruits and veggies – not what she shouldn’t eat. One of her favourite nutritional staples is pure coconut oil or coconut water. “Cooking with coconut oil is very healthy and, coming from a Caribbean background, my mom would always boil the coconut and make milk or oil.” Her love of coconut doesn’t stop in the kitchen. “I even have coconut oil in my bathroom because it’s great for the skin,” says McKenzie. THE BRIGHT SIDE “We all have our flaws, but at the end of the day if you have a healthy body, that’s what’s important. I believe that we are given one body to work with and we are either going to make the best or the worst of it. I choose to make the best because I love life and want to live a full life.” VM 74

eAnn Rimes just finished a walk outdoors where she got down with nature and dug her feet into the grass. Now she feels refreshed, energized and stress free. Learning to live stress-free has been a big focus for the 32-year-old country and pop superstar who has lived in the spotlight since she recorded her first album at age 11 and rose to stardom at 13 following the release of Blue, her debut single. Her rich, powerful vocals drew comparisons to country icon Patsy Cline, yet Rimes was still just a grade schooler. Blue debuted at number three on the country charts and sold over 123,000 copies in it’s first week of release, and the rest is music history. At 14, Rimes became the youngest person to win a Grammy when she won for both Best New Artist and Best Female Country Vocal Performance in 1997. Her outstanding vocals have brought her an impressive parade of awards, and Rimes has sold over 20 million records to date. All this time in the spotlight has brought stress along with the accolades. Fortunately, Rimes has learned to manage her stress and she’s in a good place today, mostly because she’s learned to take care of herself and to laugh at life. “Eddie [Cibrian, her husband] and I have the same sense of humour and that’s always been a big connection,” says Rimes. “He makes me laugh and says I always amuse myself. We just get each other, which is important.” STRESS MANAGEMENT “Being in a blended family [she’s stepmom to Cibrian’s two sons Mason, 11, and Jake, 7], that’s not so blended can be very stressful at times. Work and travel can also be stressful on my body,” says Rimes. “Any kind of stress brings inflammation to the body which can do a lot of damage.” To help combat life’s stressors Rimes eats an alkaline diet, meditates and exercises. She has also learned to manage her stress through music, with a personal play list that includes Adele, David Grey, Prince and Aerosmith. Inspirational blogs also refocus Rimes during stressful times. “There’s this great site called MindBodyGreen that I like to read. Self-help blogs really give me perspective and take me to a calmer place,” says Rimes. COMFORT IN HER SKIN Stress management is especially important to Rimes in that it helps control a severe case of eczema that she was diagnosed with at an early age. “It was so shameful for me to have this disease,” recalls Rimes. “People would stay away from me because they thought it was contagious. I had to be in the public eye covering it up because I sell my image, not just my voice. Eczema controlled me for a very long time.” 78

In addition to managing her stress, Rimes has found a medication that helps controls her eczema. Now she speaks to others about the skin condition, which has also helped with her self esteem. “It’s about me being able to control it; not it controlling me,” says Rimes. Her advice for others coping with image problems is to “know that beauty is really more than skin deep. You have to find other things inside of you that you identify with and that make you whole,” says Rimes. “You have to say: ‘This is something I live with and it has nothing to do with who I am.’ It takes a long time to be able to come to that conclusion. I still forget sometimes when I see a patch [of eczema] and start worrying what’s going to happen.” HEALTHY LIVING Rimes takes her health seriously. She mixes up her workouts to keep things interesting. Circuit training, yoga, Pilates, boxing, stair-stepping intervals and dance are all part of her fitness repertoire. “I have a friend who teaches a hip-hop class and she comes to the house now for me. Hip-hop is great because I don’t like most cardio workouts.” When it comes to food, Rimes gives white flour and white sugar a miss. “They’re just not good for you,” she says. “I try to eat as much whole foods as possible, however I do allow myself to have a slice of pizza or a birthday cupcake every now and then – just not often.” On a daily basis, Rimes tends to nosh on small meals throughout the day. “Green juice starts my day every morning. I get it at a place down the street that makes it fresh each morning. That and a scramble with soy chorizo and a little bit of cheese is how 80

I started off my day today.” Another breakfast choice is goat’s milk yogurt with oatmeal and berries. “I love hard boiled eggs for snacks,” says Rimes on one of her smart kitchen tricks. “They are my go-to for protein.” Other healthy snacks include: rolled up deli meat with hummus, hummus with carrots and celery, and Perfect Foods Bars. Rimes is also big on supplements including: fish oil, Co-Q10, medicinal grade intestinal flora, liquid multi-vitamins and vitamin B12 shots (to boost her energy and stamina while on the road touring). “I think you have to keep yourself open to alternative medicines and homeopathy for complete well-being,” says Rimes. MEET THE FOOD DUDE

RED PRINCE APPLE SOUP Try this flavourful soup made with fresh local apples – available in winter. Serves: 6 to 8 Ingredients: 6 Red Prince apples 1 tsp. salt 2 tbsp. unsalted butter 3 shallots, minced ¼ cup dry cooking sherry 4 cups vegetable stock 1 tbsp. fresh minced thyme

Garnish (optional): ½ cup Mascarpone cheese ½ cup toasted walnuts, chopped

Directions: 1. Preheat oven to 350 degrees Fahrenheit. 2. Wash and dry apples and half and core them. Place skin side down in a greased baking dish and sprinkle with ½ teaspoon of salt. Roast on the middle oven rack for 1.5 hours, until you see apple juice caramelized in the bottom of the pan. Remove from oven and set aside. 3. In a large pot, sauté shallots in butter and thyme over medium heat until the shallots are slightly browned – about 10 to 15 minutes. 4. Deglaze pan with sherry and stir until all liquid is absorbed. 5. Pour in vegetable stock and add roasted apples (include caramelized juice). Stir to combine all ingredients. Simmer for about 15 minutes. 6. Remove pot from heat and pour soup into blender. Blend until soup becomes creamy – about three minutes. 7. Return soup to pot and simmer for five minutes. 8. Garnish and serve. 84

DIRECTIONS: 1. Combine all the ingredients for the salsa in a bowl and mix thoroughly. Add salt and pepper to taste. Cover with saran wrap and let rest in fridge. 2. On med-high heat add vegetable oil to a large sauté pan. Sauté the shrimp ensuring both sides turn bright orange (approximately one minute). Remove from pan. Add Asian chili-honey and the juice and zest of half a lemon. Add salt and pepper and reduce chili-honey sauce for approximately two minutes until it caramelizes heavily. Add shrimp back to pan, toss and remove. 3. Plate shrimp and serve with salsa.

DIRECTIONS: 1. Pre-heat oven to 425 degrees Fahrenheit. 2. Lay squash cut side up and brush with one tablespoon melted butter, sage leaves and season with salt and pepper. Roast until fork tender (35 to 45 minutes). 3. Pre-heat a medium pot or Dutch oven on low to medium heat; add remaining butter. Dice apple and onion, then add to pot with cinnamon, maple syrup and sauté. 4. When squash is cooked and cooled, scoop out flesh with a large spoon and add to pot. Add stock or water and bring to a boil. Reduce heat to low medium and simmer for 15 to 20 minutes. 5. Use an immersion blender or traditional blender to blend soup. If using a blender allow steam to escape through the lid while blending. For an extra silky texture, pass the soup through a fine strainer. Adjust seasoning, if necessary, and stir in heavy cream to finish the soup. Chive oil: 1. Bring water to boil in a small saucepan. 2. Add bunch of chives for about 10 seconds and remove to an ice bath. 3. Roughly chop and add to a blender. 4. With blender running on medium, slowly pour in oil and salt until desired consistency is reached. 5. Remove to a squeeze bottle or appropriate container. Smoked Sour cream: 1. Combine all ingredients and place in a squeeze bottle or appropriate container.


EGGPLANT PARMIGIANINO STACKS PREP TIME: 30 MINUTES • COOK TIME: 30 MINUTES • SERVES: 8-12

INGREDIENTS: • 2 small-medium skinny sized eggplants (cut into 1⁄3” thick rounds) • 1 cup homemade tomato sauce • 1/2 cup all-purpose flour • 2 large eggs • 1 cup Italian-style breadcrumbs • 1 ball of fresh mozzarella • 1⁄4 cup Parmigiano-Reggiano • 1 tbsp. red chili flakes • 1⁄2 cup fresh basil leaves • 1 tbsp. oregano • sea salt • fresh cracked black pepper • olive oil

DIRECTIONS: 1. Line a baking tray with a kitchen towel. 2. Sprinkle a pinch of salt on each slice of eggplant and lay down on tray for an hour —the salt will remove a lot of the bitterness. 3. Pre heat oven to 410 degrees Fahrenheit. 4. Add flour, one teaspoon of salt and a teaspoon of fresh cracked black pepper to a plate and combine. 5. In a small bowl beat eggs and combine with oregano. 6. Add breadcrumbs to another small plate. 7. Lay each eggplant slice in the flour. Shake excess off. Submerge in egg, then firmly coat with breadcrumbs; set aside. 8. Preheat a large non-stick skillet to medium high. Add two tablespoons of vegetable oil and fry eggplant until golden brown (approximately two minutes a side). Remove to a baking tray lined with a kitchen towel to absorb excess oil. 9. On a rimmed baking tray, lined with parchment paper, lay down the fried eggplant, a slice of mozzarella, a basil leaf, eggplant and slice of mozzarella. Bake for two or three minutes or until cheese melts, and serve with tomato sauce.

INGREDIENTS: • 10 lamb cutlets, Frenched • 2 tbsp. smooth Dijon • 1 cup ground pistachios • sea salt • fresh cracked black pepper • 2 tbsp. vegetable oil BALSAMIC GLAZE: • 1 cup balsamic vinegar • 1 cup white sugar • 4 rosemary sprigs

MINT CHIMICHURRI: • 1 bunch of mint, leaves only • 1 tbsp. lime juice • 1 tsp. honey • 1 garlic clove • 1 tsp. cumin • 1⁄2 cup grape seed oil • 1⁄2 tsp. sea salt • 1⁄2 tsp. freshly cracked black pepper

DIRECTIONS: 1. Add balsamic vinegar, white sugar and rosemary sprigs to a pot. Bring to the boil and reduce by half (approximately 10 minutes). Strain and set aside. 2. Combine all ingredients for the chimichurri (except the oil) in a blender and pulse. Blend on a low speed and slowly pour in oil. Gradually increase the speed until the oil is finished. 3. Pre-heat oven to 420 degrees Fahrenheit. 4. Season each cutlet on both sides with salt and pepper and brush with mustard. Pat cutlet firmly down on the ground pistachios so there is approximately one teaspoon per side. In a large pan, on medium-high heat, add two tablespoons of vegetable oil. Sear for one minute per side or until golden brown. Remove and place on a rimmed baking tray lined with parchment paper. Bake in the oven for three minutes for medium rare. Serve with chimichurri and glaze atop the cutlets or on the side.

INGREDIENTS: • 8 slices of your favourite bread • 8 slices of speck prosciutto • 1 roasted red pepper, julienned • 1 Bosc pear, sliced 1/8” • 2 cups shredded medium cheddar COMPOUND BUTTER: • 1⁄2 cup butter • 1⁄4 cup vegetable oil • 1 clove of garlic, grated • 2 tsp. fresh thyme leaves • 1 tsp. fresh chopped rosemary • 1⁄2 tsp. salt • 1⁄2 tsp. fresh cracked black pepper KETCHUP: • 1 28 oz. can of chopped tomatoes • 1 5.5 oz. can tomato paste • 1 large onion, chopped • 3 cloves of garlic minced • 1 cup red wine vinegar • 1⁄2 cup sugar • pinch of cinnamon • pinch of cumin • 1 tbsp. vegetable oil • 1⁄2 tsp. liquid smoke • 2 tsp. sea salt • 2 tsp. fresh cracked black pepper

DIRECTIONS: 1. Prepare ketchup first. Add vegetable oil to a pot on medium heat. 2. Add onions, salt and pepper. Cook to caramelize onions (approximately 10 minutes). 3. Add garlic and stir for one minute before adding all other ingredients except the liquid smoke. 4. Constantly stir ketchup and reduce for 15 to 20 minutes before blending and straining. 5. Add liquid smoke and store ketchup in fridge. (Alternatively, tomatoes can be smoked using a smoker as opposed to using liquid smoke.) 6. Lay down the bread in two rows (4 slices per row). 7. Combine all ingredients for the compound butter. 8. Butter every side facing up. 9. Flip the bottom row of bread so butter side is facing down. Place cheddar, roasted red pepper, cheddar, pear, prosciutto and another row of cheddar on each slice. Cover with top row of bread so the buttered sides of all breads slices are facing out. 10. In a large frying pan or flattop (just shy of medium heat) lay down the grilled cheese sandwiches. No oil is needed as the bread is already buttered. Cook for three or four minutes on each side, if the grilled cheese is cooking too quickly reduce the heat and flip to the other side. 11. Slice sandwiches into halves or quarters and serve immediately with ketchup.

PREP TIME: 1 HOUR • COOK TIME: 15 MINUTES • SERVES: 4–8

INGREDIENTS: • 1 14 oz. can sweetened condensed milk • 1⁄2 cup key lime juice & zest (approximately 7 key limes or 3 regular limes) • 1 tbsp. freshly squeezed lemon juice • 5 egg yolks • 1 tbsp. melted butter • 1⁄2 tsp. sea salt • 2 tbsp. granulated sugar • 2 x 4” non-stick spring form pans CRUST: • 1 1⁄2 cups Oreo cookie crumbs • 3 tbsp. melted butter

DIRECTIONS: 1. Pre-heat oven to 375 degrees Fahrenheit. 2. In a mixing bowl combine Oreo crumbs and butter. 3. Brush two 4-inch, non-stick spring form pans with butter and pat down the Oreo crust firmly on the base about half a centimeter high. 4. In another mixing bowl combine condensed milk, egg yolks, lime juice, lemon juice, zest and salt. 5. Pour into spring form pans and bake for 15 minutes. 6. Allow to cool in the refrigerator for at least an hour before removing and serving.

OPTIONAL:

Place a thin layer of sugar on top of the pies. Hold a blowtorch flame two or three inches away from the sugar. Constantly move flame to achieve an even caramel. Cut the pies in half or even quarters and serve.

Lately I’ve been craving sweet and savory combinations that are ridiculously delicious. What is your number one comfort food? When I’m craving a “food hug” I gravitate toward soft, dense, sweet things that melt in your mouth like a chewy fudge brownie with a scoop of premium ice cream. What is your biggest food challenge? I grew up in a “clean your plate if you want dessert” environment so portion control has always been one of my biggest issues. What keeps you eating a balanced diet? he best way to keep your pet healthy is by making sure his immune system is in top working order. “Preventative medicine is what we strive for,” says Dr. Jean Gauvin, practising veterinarian at the Lachine Veterinary Clinic in Quebec and Canadian Veterinary Medical Association President. “We want our animals to be as healthy as possible so they never get sick.” The immune system is the body’s most important defence, protecting our pets from bacteria, viruses, parasites, diseases and toxins. Here’s how to boost your pet’s health – the natural way.

is true for rickets in dogs. This skeletal abnormality caused by vitamin D, phosphorus and calcium deficiencies used to be very common several decades ago. Today it is rarely seen in clinical practise. If it is, it’s usually in puppies who have been fed unbalanced homemade diets or those who come from puppy mills. When picking a food for your pet, look for one with a highquality protein as the first ingredient (chicken or turkey meal, fish or deboned chicken) as well as quality grains (steel cut oats, barley or brown rice) and a selection of fruits and vegetables like spinach, carrots, sweet potatoes and blueberries.

NUTRITION IS ESSENTIAL A well-balanced diet is the best immune system booster. “It is well documented that nutrition is the biggest influence on the immune system,” says Gauvin. Today’s quality commercial pet foods do a fairly good job of providing a balanced diet and a lot of research goes into making sure pets are getting adequate nutrition – this wasn’t always the case. Gauvin explains that when he first started practising in the early 80s, he saw a lot of diseases in pet birds because of malnutrition. At the time, owners fed them seed, a poorly balanced and unhealthy option. Today, with pet birds being fed specially formulated pellets as well as fresh fruits and vegetables, he doesn’t often see those types of problems anymore. The same

SUPPLEMENTING YOUR PET’S DIET Certain nutrients play a key role in immune health including vitamins A, C, E, zinc, lutein, beta-carotene and selenium. If your pet gets the nutrients she needs from a healthy diet, supplementation isn’t likely necessary – over supplementation can even be dangerous. However, if you are concerned about the quality of food or find your pet gets ill too often, there are supplements that have been shown to be effective in boosting immunity and supporting your pet’s natural defenses. Antioxidants, including vitamin E, beta-carotene and lutein, benefit immune function by reducing free radicals and preventing inflammation within the body. Vitamin E supplements support immune function in many species, including cats, and

beta-carotene has been shown to increase immune response in dogs. If you think your pet may need extra nutrients, talk to your vet about holistic options. PET PROBIOTICS A large amount of immune system activity takes place in the gastrointestinal (GI) tract. Probiotics can help the immune system function properly by increasing the healthy bacteria needed to keep the system strong. If you have a dog who likes to eat sticks, mud, rabbit droppings, drink out of puddles and stick his nose in all sorts of unsanitary places, it’s easy for the bad bacteria to overrun your pet’s GI tract. Probiotics are also great for pets that have been on antibiotics (which deplete the supply of good bacteria as well as the bad) and those who are prone to stress-related gastrointestinal upset or are sensitive to changes in diet.

3. Reduce Toxins in your Home. Environmental toxins can put

your pet’s health at risk. While you can’t often control the pesticides and toxins out in the world, you can control what’s inside your home. Look for natural, non-toxic cleaning products, especially for the floors. 4. Practice Good Oral Hygiene. Dental hygiene is often overlooked in pets. Don’t forget to brush your pet’s teeth. Tartar is full of bacteria that can enter the bloodstream and unnecessarily stress the immune system. 5. Take Care with Dog Parks. While dog parks are a lot of fun, the risks may outweigh the benefits. Keeping your dog in a close environment with a lot of dogs means they are much more likely to catch something. Going on a walk or letting them play with a neighbour’s pet may be a healthier option. VM

VACCINATING YOUR PET Vaccinations remain a controversial topic, however they are an important factor in your pet’s overall health. While some are necessary and required by law, there is a fear that over-vaccination may be doing more harm than good. Gauvin recommends a customized vaccination plan. Instead of treating all animals the same look at each individual pet, and give them what is necessary for their lifestyle. Focus primarily on the core vaccines such as rabies. RAW FOOD RISKS Raw food diets are another controversial trend in pet health. The majority of benefits of pets eating raw food are still unproven, and there are several associated health concerns. According to the American College of Veterinary Nutrition: “There are risks and concerns associated with the feeding of raw diets. One of these is the risk of nutritional imbalances, which is a reality for both home prepared and commercial raw meat diets.” There are also risks of bacteria like salmonella and E-coli. Speak to your vet if you are thinking of switching your pet to a raw food diet. LIFESTYLE CHOICES While a lot about the immune system is connected to nutrition and supplements, lifestyle also plays a role. Here are five health boosters that can make a difference in your pet’s life. 1. Get more Exercise. Lack of exercise is a proven cause of decreased immune function, while activity has been proven to have the opposite effect. Daily walks and play will not only help boost your pet’s immune system, but yours as well. 2. Try a Pet Massage. Massage is great for increasing immune function. You don’t have to do anything fancy, a gentle ear rub or pat will do. A DRIVE DOWN CALIFORNIA’S PACIFIC COAST HIGHWAY IS AN AMAZING WAY TO TAKE IN THE SCENERY, RELAX AND SOAK UP SOME SUN. HERE ARE SOME HIGHLIGHTS TO VISIT ON YOUR TRIP AND WHERE TO STOP ALONG THE WAY. BY BONNIE SIEGLER

e narrowed our Route One drive from San Francisco to Santa Barbara. Here’s how to take the trip in style and make sure you hit all the highlights along the way. STOP 1: HOTEL ABRI, SAN FRANCISCO The newly transformed Hotel AbRi is ideal for leisure and business travelers alike. “The hotel was built as apartments shortly after the historic 1906 earthquake,” says Jim Gerney, AbRi’s General Manager. During the 1950’s it was converted to a hotel, under the name of Monticello Inn. Then, it closed for renovations in 2008 and re-launched as Hotel AbRi. Gerney describes the sleek and contemporary property as hip, fun and engaging. “Our hipper interior style separates us from the other historic hotels in the Union Square area,” says Gerney of the 91-room hotel. It is also an eco-conscious destination and even has a recycling program in place. CONTINUE ON TO . . . Next stop on your Highway One vacation will be the beautiful Monterey Peninsula, home to the famous Monterey Bay Aquarium and setting for John Steinbeck’s Cannery Row. You’ll then travel on to the coastal town of Carmel-by-the-Sea, voted one of the best cities in the world for romance, before heading further south to Big Sur. Some great ways to take in a view of the coastline include a hike in Julia Pfeiffer Burns State Park or a leisurely lunch on the terrace of Big Sur’s iconic Nepenthe restaurant – a legend since 1949. After soaking up some sun and good food, you’ll continue south across the Bixby Bridge – one of the tallest single-span concrete bridges in the world. Due to its aesthetic design, and gorgeous location, the Bixby Bridge is also one of the most photographed bridges in the country. Some 240 miles south of San Francisco, sits San Simeon – home to newspaper publisher William Randolph Hearst’s house on a hilltop. Be sure to visit the Hearst castle. The Mediterranean Revival estate is filled with art and antiques from Hearst’s vast collection. You’ll also get your exercise. I took tour two and climbed over 200 stairs!
