Fueling our lives

As we enter a new year and get back into our fast-paced routines, it’s always a challenge to make sure we eat well to fuel all our activities. In this issue, we’re featuring some fantastic meal ideas from Chef Bruce Duncan Waithe. The chef and his right-hand man, Nikko Jacino, have put together a feast of delicious food that is also very nutritious. The recipes feature superfood ingredients such as quinoa, bean sprouts, flax oil, avocado, kale, salmon, ginger and goji berries. To try any of these recipes, it’s easy and convenient to find all the ingredients you need at your Loblaws location. An affi nity for the hospitality industry comes naturally to Nikko Jacino. His childhood family home was a weekly gathering place for over-thetop gastronomical dinner parties and celebrations. Jacino could often be found at his parents’ sides “helping to cook.” As a teenager, his part-time and summer jobs were always in a restaurant. Currently, Jacino is pursuing a culinary diploma at George Brown while working at Fuel Nutrition. He helped create our food feature on page 28.

Bruce Duncan Waithe is the founder of Fuel Nutrition, a Toronto-based meal delivery service. He is a self-taught chef who has built his skills over the years on a lifelong passion for creating healthy meals with a gourmet touch. Although his career began in the fitness industry, it eventually led him down another path. With many requests from fitness clients to provide homemade meals that would keep them in shape, the idea of Fuel Nutrition was born. Waithe created our food feature on page 28. BRIAN DAVIES

Dr. Brian Davies, ND, BSc, is the founder of Westcoast Integrative Health in North Vancouver, B.C. Dr. Davies practises primary and preventative family medicine, with special interests in hormonal, immune and gastrointestinal conditions. Behind the scenes Patricia Heaton arrived in a good mood, which helped create a great atmosphere for spending seven hours together doing a photo shoot. Los Angeles was experiencing a fall heat wave, and up in the Beverly Hills canyons where we gathered on a Sunday, the glam team, photographer, Patricia’s publicist and I enjoyed simulating a chilly winter’s day, complete with festive wardrobe and bubbly champagne. The star of The Middle, and Emmy winner for Everybody Loves Raymond, is no novice in front of the camera. She’s a consummate actress who exhibited no diva-esque moments, and kept the set light and playful even when she put on her must-have accessory— stilettos. The petite Heaton guaranteed she could teeter and balance on five-inch heels, which she did with aplomb. “I could deliver babies in these heels if I had to,” she said with a laugh.

Belly fat is a common complaint. No end of sit ups and crunches makes it disappear. Starving and

running the treadmill for hours every week doesn’t seem to budge belly fat either. Most people know there is a connection between the loss of their waist and their changing hormones—and they are correct. There are several hormones involved in the development of belly fat, but the main hormone contributing to our expanding girth is insulin. But it doesn’t end there. Insulin is a powerful hormone that when in excess also causes an elevation in circulating male hormones. These male hormones can cause male facial hair growth in women, acne, and worsen Polycystic Ovarian Syndrome (PCOS) too. In men when insulin is elevated their testosterone converts to estrogen and they develop a beer belly and breasts. Elevated insulin is related to weight gain, high cholesterol and triglycerides, diabetes and especially excess belly fat. Skin tags are an early sign of pre-diabetes due to higher than normal blood sugar and insulin. And often the foods we choose also cause blood sugar and insulin to become further disrupted. Thankfully the secret to busting belly fat and normalizing insulin and male hormones just got easier. Erin Booth Position at Viva Production Coordinator On balanced living As a newlywed, I love spending as much time as possible with my husband Phil and our dog Murphy. I strive for work-life balance; it seems we all try to find it. Our weekends are so precious, and we try to squeeze in as much family time and relaxation as possible. We enjoy hanging out at home together, walking Murphy, curling up to watch our favourite zombie movies and cooking delicious dinners. We also take some weekends to go camping or take road trips to see different parts of Ontario. We’re currently planning our tropical honeymoon, which will be a nice break from winter. I believe that life is short, so it’s important to make the most of it; tell the people you love how much they mean to you, and try not to take work home with you. After a long day at work, I enjoy nothing more than getting home, having a great meal with my husband and relaxing.

Pink party Michelle Pfeiffer hosted the eighth annual Pink Party—an evening to benefit the Cedars Sinai Women’s Cancer Program—at Hangar 8 in Santa Monica, California. The Pink Party is an important source of support for the hospital, which helps women in Los Angeles and around the world fight cancer. A fashion show and silent and live auctions brought together supporters such as Jennifer Garner and Ben Affleck, Kate Beckinsale, JJ Abrams, Leslie Mann and Judd Apatow, Molly Sims and Julia Louis-Dreyfus.

Ian Somerhalder, star of The Vampire Diaries, hosted Best

Friends Animal Society’s annual Strut Your Mutt event at Park Sans Souci in Lafayette, Louisiana. This event raised $150,000 for an ambitious new project, the Ian Somerhalder Animal Sanctuary, which provides a safe haven for animals that have been neglected, mistreated, abused and misunderstood.

inner-city youth Mark Wahlberg hosted a concert in Pittsburg featuring 3 Doors Down to support his Mark Wahlberg Youth Foundation for inner-city youth. Staying fit and healthy and eating well all year long is a challenge for just about anyone. That’s one reason Chef Bruce Duncan Waithe got into the fitness business more than two decades ago. As a personal trainer, he heard from a lot of clients how hard it was for them to fit balanced meals into their busy lives.

food “I was cooking healthy meals for myself, and one of my clients asked if I could do the same for him,” he recalls. “I started cooking for him, and then another client requested the same, as she was preparing for a fitness competition. Things sort of snowballed from there.” Waithe’s interest in cooking and nutrition turned into a career change—he established Fuel Nutrition, a Toronto-based meal delivery service that features colourful, fresh, healthy food that just happens to taste really good. With his sister Michelle, a registered holistic nutritionist who advises on optimal nutrition, he’s in an ideal position to upgrade the eating habits of a city full of super-busy people.

Joining him recently as his right-hand man is Nikko Jacino. “I decided to join Fuel Nutrition because I really believe in the product and the company mission,” he explains.

Being so active, Waithe understands how to fine-tune nutrition.

Jacino developed his passion for food over a number of years, starting off working part-time as a dishwasher at a restaurant in Ottawa while he was in school. “I remember watching the chef prep and cook in the kitchen. The bustling energy of the restaurant gave me a rush,” he says. “I got random opportunities to help with food prep, simple things like cutting and peeling.”

“Active people need more calories, as well as pre and post workout meals,” he says. “The pre-workout meal should consist of slow-burning complex carbs —grains, vegetables— and about 15 per cent protein about two hours before the workout. “The post-workout meal, no later than 30 minutes post workout, should include a good protein source such as salmon, as well as complex carbs such as vegetables and a starchy carb such as sweet potato.”

From that inspirational beginning, through years of working at a catering company and with celebrity chef Lynn Crawford, Jacino now finds himself working with Waithe.

For Viva’s food feature this issue, Waithe says, “We tried to show a variety of dishes, incorporating raw salads, raw deserts, as well as sprouted salads utilizing nutrient dense ingredients.” In fact, Waithe is an aficionado of raw food, though he doesn’t go overboard with it. “Raw food is important in our meal plans,” he says. “We incorporate raw dishes into our menu on a regular basis. I personally think that eating raw has some healthy benefits. [However], I think a balance of raw and cooked is best.” Fuel Nutrition’s meals are also gluten free, and dairy free. Rather than finding this a restriction, however, Waithe considers it a creative challenge. “I love experimenting with flavours and nutrient-dense ingredients to create delicious healthy meals,” he states. “Cooking is my passion and I love creating healthy meals.”

“I also couldn’t give up an amazing opportunity to work with such a vastly knowledgeable creator and owner who has a countless amount of years in the fitness industry,” Jacino says. “He has a creative mind and knows his stuff when it comes to creating healthy meals for everyday people.” For instance, Waithe has specific recommendations on starting your day with good nutrition, and believes that breakfast is the most important thing to eat every day. He advises eating “a healthy breakfast comprised of slow release carbs, as well as good protein and healthy fats. For example, two eggs poached, with avocado, sliced tomato and steel cut oatmeal with blueberries.” Cooking may be a passion for the Fuel Nutrition team; however, fitness still has a high priority, as well. “We make it a priority to fit in our workouts five days a week. We usually head to the gym together as soon as we finish work,” says Waithe.

H OW TO S P R O U T MUNG BEANS AND LENTILS 1. Take the required amount of beans. Remember, it will double once sprouted. So prepare only the amount you can consume within two weeks. 2. Wash your beans well in cold water until the water runs clear. Drain and then place in a bowl. Fill it with cold water until immersed well. 3. Soak overnight or at least for 8-12 hours. 4. Drain the water well. Rinse again with cold water and drain it again. 5. Use a vegetable spinner for sprouting. Since it has the system of draining, any excess water drips off through those holes. 6. Place beans in low light away from direct sunlight, and at room temperature. 7. Rinse and drain every 8-12 hours for two-three days. Store extra sprouts in the refrigerator for up to two weeks.

1. Sautée onions in some olive oil until tender. 2. Add thyme and garlic. Then add chicken stock, tomato paste and Worcestershire sauce. Cook until reduced to a thick paste. 3. Allow paste to cool, then add to ground turkey. 4. Using a spoon or small ice cream scoop, place balls on parchment paper-lined cookie sheet and cook for 15—20 minutes in a 350°F (175°C) degree oven.

Process with a vegetable spiraler or mandolin into thin long ribbons.

RAW COCONUT GOJI MACAROONS 2 cups (480 ml) raw cashews, soaked in water for 30 minutes 1/2 cup (120 ml) hemp seeds 1 cup (240 ml) goji berries, soaked in warm water for 10 minutes 1/2 cup (120 ml) coconut oil, melted 3-4 tablespoons (45 60 ml) coconut flour 1/3 cup (78 ml) coconut nectar or raw agave nectar 1 teaspoon (5 ml) sea salt or Himalayan salt 1/2 cup (120 ml) shredded coconut (additional 1 cup (240 ml) for rolling)

1. Drain cashews and add to a food processor fitted with an S blade. Blend until smooth. 2. To melt coconut oil, place in a small bowl and put the bowl into a larger bowl filled with hot water. The oil will melt in a minute or two. 3. Add the melted coconut oil to the food processor, and blend until smooth. 4. Add hemp seeds, sea salt and coconut nectar, and blend until combined. 5. Add coconut flour 1 tablespoon (15 ml) at a time until desired consistency is reached; should be like a bread dough texture. 6. Transfer mixture to a large bowl and fold in goji berries. Make sure to fully drain the water so gojis will retain their shape. 7. Form the mixture into balls about the size of a walnut, and roll in shredded coconut. Chill in refrigerator for 30 minutes for a firmer texture. *Tip: It helps to rub a little coconut oil on your hands while forming the balls, to prevent sticking.

Ingredients Cuisine Camino 4 local venison steaks (15Og each) 2 Tbsp margarine or butter Salt and pepper to taste For the chocolate and wine sauce: 1 tsp organic olive oil 4 shallots finely chopped 1 tsp thyme 3/4 cup organic or fair trade red wine 1/3 cup organic beef stock 1/2 Tbsp balsamic vinegar 1 Tbsp margarine or butter 50g finely chopped Cuisine Camino Bittersweet baking chocolate 71% (a minimum 70% cocoa content chocolate is required for this recipe) Cracked black pepper Salt to taste

directions 1. Melt 2 Tbsp of margarine or butter in a frying pan. Cook the venison steaks for 1-2 minutes per side over medium high heat until the meat is medium rare, or cook longer as preferred. Add salt and pepper to taste. 2. Remove the pan from the heat and place the steaks on a warm plate covered with an aluminum sheet. Leave the cooking juice in the pan, to be used in the next step: the chocolate and wine sauce. 3. Place the pan back on the stove over medium heat and add 1 tsp organic olive oil to the cooking juice. Cook the shallots until nearly transparent. Add the organic beef stock and the thyme. Stir. Add the organic or fair trade red wine and the balsamic vinegar. Let the sauce reduce for about 7-8 min. Towards the end, add 1 Tbsp of margarine or butter. 4. Remove the pan from the heat and add the chopped Cuisine Camino Bittersweet baking chocolate to the sauce. Stir until chocolate is completely melted and uniform. Add cracked black pepper and salt to taste. 5. Slice the steaks, place the slices on the plates, drizzle the chocolate and wine sauce on top, and serve with mashed potatoes.

Detoxification takes place in the liver in two phases. It’s important to help this process along by eating the right foods and taking the right supplements that will support both phases. In Phase 1, the liver processes toxins through oxidation into “metaboloids.” These metaboloids can be dangerous if they are not processed out of the body. That’s why certain nutrients and supplements are necessary to help remove the metaboloids. In Phase 2, the harmful metaboloids produced by Phase I are further processed into harmless, water-soluble molecules that are easily excreted from the body. s a lawyer, there isn’t much call for demonstrating your prowess in Wushu, a martial art, in the courtroom. However, that isn’t why Byron Mann left the California Bar for Hollywood. “A senior partner where I worked one summer pointed out that I had trouble coming in on time and was looking at my watch at five o’clock,” says Mann, probably best known for fi lms such as Street Fighter, Red Corner, and The Corruptor—and most recently for RZA’s The Man with the Iron Fists. “He asked what I really enjoyed in life, and I realized it was acting.” A Canadian citizen since 2006, Mann has homes in Vancouver, where he works quite often, Los Angeles, as well as his native Hong Kong. The 5’11” actor says he enjoys the quality of life Vancouver has to offer. “It’s a beautiful city of mountains and water, with a real community feel to it.” As well as working out at the gym, Mann takes advantage of the outdoors by running on the beach, and playing tennis and golf.

Once ranked as the #2 tennis player in Hong Kong under the age of 16, the actor and sports enthusiast credits his successes in fi lm and TV to the competitive mindset of sports. “If you develop a sport, you play it for life,” says Mann, who has a 12 handicap in golf. “It’s more socially engaging, and for me, more fun. I grew up playing tennis and used to compete in high school, so everything I know about acting and life, I pretty much learned from sports. It’s absolutely essential. I learned about repetition because in sports, the more you repeat a stroke, a serve, a volley or other action, the better you get at it. [The Man with the Iron Fists], and through the training they told me I needed to work on my base—my legs—because that supports everything,” he recalls. “If your base is weak, you won’t have anything. That’s true; if my legs are stronger, my whole body is stronger. Wushu is really Chinese kung fu mixed with acrobatics like what Jet Li does. It’s a series of lunges, side kicks, front kicks, stretches— all this to stimulate the legs.” Having worked on a lot of action pictures, Mann has mastered how to lose weight, gain weight, bulk up with muscles or go lean and mean….in a matter of days or a week. “It’s all in the mindset,” he says, adding that he likes to weigh between 165 and 170 pounds. “If I want to be healthy, I first have to be passionate about what I do. That’s 50 per cent of the battle. It’s all about a balance of good eating and exercise. I keep things really simple. My rule of thumb is I eat about 50 per cent fruits and vegetables, small amounts of carbohydrates, protein and no sodas.”

urrently, more than nine million Canadians are living with diabetes or prediabetes. That’s a pretty staggering number in a country with just over 34 million residents.

So what exactly is diabetes? “Diabetes means too much sugar in the blood,” explains naturopathic doctor Sarah Goulding of Nickel Ridge Natural Health in Sudbury, Ontario. “This is dangerous because sugar can damage cells if there’s too much in the bloodstream.” When that happens, people with diabetes can develop nerve damage, blindness, cardiovascular disease, and other dangerous conditions. Should I be brushing my tongue as well as my teeth? What other things should I do for oral health? – Gerry, Calgary

I’ve been diagnosed with endometriosis. Is there any way of dealing with this using herbs or supplements? – Jennifer, London, Ont.

Dear Gerry, Brushing your tongue is an important part of maintaining oral health, since all the bacteria and fungi that cause periodontal and dental inflammation and infection can also reside on the tongue.

Dear Jennifer, Endometriosis can be a challenging condition to treat, and depends on the level of tissue infiltration, where the tissue has infiltrated and the amount of endometrial tissue present. I have diagnosed and treated endometriosis multiple times, and have had success in reducing the pain and reversing signs of the condition itself.

One of the key components of oral health is maintaining a slightly alkaline environment in the mouth. A slightly alkaline pH can help control bacterial growth and aid in the initial phases of starch digestion. Healthy pH also reduces the erosion of your teeth, which is caused by acids from foods and certain bacteria. Brushing or rinsing with baking soda can be an easy and inexpensive way to support oral health. Some of the key nutrients in maintaining healthy gums are vitamin C, calcium and vitamin K. Ideal sources of these vitamins are vegetables such as kale, chard and broccoli. Essentially, anything green is good for your oral health!

The place to start is with a diet extremely low in refined grains and soy, and high in cruciferous vegetables and lean proteins such as fish and chicken. Avoidance of all refined sugar, alcohol, fried foods and processed foods is essential in the first few months. Lifestyle factors such as regular exercise and stress reduction strategies revolving around deep diaphragmatic breathing are also key. In endometriosis, hormone balance is very important. Ideally, this is worked up with proper blood, salivary or urine hormone testing with a knowledgeable medical professional. Treatments may include bioidentical progesterone, based on the results of a hormone test; however, pine bark extract and curcumin are the main treatment options for reducing the pain and inflammation of endometriosis.

One day five years ago, the petite, 5’2” actress who currently stars as Frankie in ABC’s hit family sitcom, The Middle, realized that she couldn’t shed six pounds from her body. So Patricia Heaton consulted a nutritionist who revised her eating plan and recommended supplements and exercise. Regular workouts still prove challenging, however. “I have a million excuses why I don’t exercise, and they’re all bad ones,” admits Heaton, who played the long-suffering wife and mother on Everybody Loves Raymond for nine seasons, bringing home two Emmys for her role. “For one, I work an average of 12 hours a day now, and the last thing I want to do when I get home is hop on a treadmill.” PREGNANCY POUNDS

Yet Heaton realized she couldn’t use four pregnancies as an excuse any more. “I gained 50 pounds with each pregnancy and ate with abandonment,” says the Ohio native who got smart and listened to her nutritionist, beginning with daily vitamins and a liver cleansing supplement. “And I went off dairy and gluten. Then I was able to drop those six pounds that I couldn’t before. I try to stay away from carbs, and when I have bread, it’s gluten free that I toast, or I’ll reach for rice cakes or rice crackers. Hey, I’m not a food fanatic, so if there’s nothing else around, I might reach for a Greek yogurt. However, my dairy intake is usually almond milk and other almond products.” For Heaton, raising four growing boys hasn’t always helped her maintain her ideal weight of 105 to 109 pounds. It came

down to reprogramming herself. “The boys aren’t big carb eaters except for pasta, so I’ll cook for everyone and eat the protein and vegetables. I’ll keep chips and cookies around for them, and I’ve developed an ability to resist them,” says the 54-year-old working mom. “And yes, the last few weeks, I’ve started going back to Pilates. After my first class, I could hardly walk, but I do need to keep it up. It’s not like I’m in the running for sex symbol of the year, but assuming I have 30 years left, there’s a finite point in the distance, so I want to be here for my kids.” And then, with her trademark humour, Heaton adds, “If I had known that once I hit menopause I couldn’t eat everything I wanted without having it go directly to my arms and waist, I would have eaten a lot more in my 20s.” SEEING THE HUMOUR

That’s typical of how Heaton takes on and triumphs over the pressures facing any woman with a demanding career and a family: by meeting challenges head-on, though never forgetting to see the humour in every situation. She knows, for example, that being proactive about one’s own health protects against illness. “My mother died from an aneurysm of the carotid artery when I was 12,” she states. Aware that aneurysms have a genetic base, Heaton had an MRI several years ago “and everything checked out. I didn’t inherit high blood pressure or high cholesterol like some of my family members. I can eat a stick of butter a day and my cholesterol wouldn’t go up.”

Instead, Heaton knows that when she is overwhelmed with too much in daily life, she has to stop and take note. “I have to watch out for anxiety and depression,” she says. “I struggled with that when I was around 16 and then again in my 20s. Some was genetic, and some was situational—a delayed response to my mother’s death. So I know how very real those feelings of depression and anxiety are.”

THE LISTS

Heaton notes that she’s well aware of the warning signs of pending melancholy. “I sit down and say to myself, okay, what’s going on in my life that’s causing this?” she says. “Usually it’s due to me biting off more than I can chew. That’s why I make handwritten lists to see what I have to do in one day. Usually it only takes 30 minutes to check off most items, although recently I felt nervous over a book deadline. So I went and rescheduled the deadline, and the publishers were fine with it. My mood completely lifted, so I think it’s really important for everyone to just check in and look at things in your daily life.” Still—and every working mother knows this feeling—Heaton struggles with the guilt combined with “the feeling of being overwhelmed by everything you have to get done. I think women of today have so many choices. In today’s economy, a lot of women have to work, but we should look at that as a challenge and realize many women are getting recognized today.

Working behind the scenes in the upcoming Hallmark Channel’s The Christmas Heart has held Heaton’s Hollywood interests and has proven a seamless progression. She is executive producer of this new holiday movie, and has more projects in development at Hallmark. “It’s funny because when I was playing Debra, I was in her shoes in that my kids were that age; now I’m in Frankie’s shoes because my kids are older and the ages of those on the show,” Heaton says. “So for the most part, my real life has developed with my TV lives.”

Patricia Heaton’s favourite way to ring in the new year: “I don’t like big parties because there are just too many people who have had too much alcohol out there. I like some big band music with an early dinner with friends, and then watching a movie. I think that’s a nostalgic, cool, old-fashioned, glamorous New Year’s Eve.”

“Look, I was 32 years old when I came to Los Angeles and was doing odd jobs when all my friends were married with children and homes. I loved being able to pursue what I wanted to pursue. Women are smart about micromanaging.”

Still, Heaton’s daily lists of personal and professional must-dos are reminders that she can’t do it all. “I’ve become more patient and forgiving, with myself and others. As you get older, you have seen your own mistakes, and you start understanding and becoming more comfortable with the fallibility of human nature.”

In fact, Heaton says she finds an intelligent woman sexy. “When someone—man or woman—is intelligent, you see it in their eyes.

And still her comedic wit prevails. “All this does depend on how much sleep I’m getting, you know. I’m certainly no saint.”

e plays the charming Detective, Kevin Ryan, on Castle, though he’s recognized for other TV, fi lm and theatre roles.

“There’s a pattern in my life where I’m not the guy people choose right away,” says Seamus (pronounced Shay-mus) Dever. “Many of my breaks in life exist because someone else was unavailable or didn’t work out.” And that’s okay with Seamus. The Michigan native has other creative outlets for those times when he’s not busy acting: Gardening, woodworking, wine collecting, piano playing… “I’m not quite a Renaissance man,” he says with a laugh, “although I am all over the place. I grew up with a wide range of experiences.”

Now none of my jeans fit, of course, but it’s cool. The suits I wear on Castle look better and are more comfortable, too.” A decade-long vegetarian, the 155-pound, 5’11” Dever says not eating meat doesn’t necessarily guarantee you a svelte body. “Oh no,” he says, laughing. “I used to be a pizzaterian–I didn’t want to miss out on foods I had when I ate meat. So you can gain weight [as a vegetarian].” PIZZA PLEASURE

MUSICAL MYSTERIES

Having played piano in a jazz band throughout high school, Dever says he’s now on a quest to understand more about music theory. “Music becomes less of a mystery, the more you pull it apart. The chords strike you emotionally, and then you realize there’s technique to it.” In fact, Dever has been known to carve out time in his evenings to practice and try to unravel music’s secrets on the piano. “It helps give me some sort of balance in life,” he explains. After reading Fast Food Nation, Dever says, he realized “the greater problem that exists in the meat industry, so I decided to take myself out of the equation. My philosophy has been I don’t want anything to die for me to live.” However, pizza in any form is still a favourite guilty pleasure. “I could probably eat that every night if my wife didn’t catch me doing it.” Starring on a show about a writer who helps solve crime, Dever says that if he were writing a book about his career, he would call it Second Choice. He adds: “I don’t tend to blow people away at first. I’m their second choice, and it’s worked out well for me. ‘Hi, I’m Seamus, and I’m your second choice.’ So I’m still fighting to get up to first choice, but I think that’s good to have a fighting spirit in life.”

I

used to diet a lot and pay attention to the numbers,” says 5’6” actress Rhea Seehorn, who plays Roxanne on the hit comedy, Whitney. “Then I realized I wasn’t as healthy as I wanted to be, and didn’t have stamina either. My clothes didn’t hang on me the right way.” That was two years ago, and now with the help of a nutritionist, Seehorn is a confident, happy woman who enjoys having enough energy to tackle numerous activities every day. Besides yoga and Pilates, tango classes or the occasional hike with friends, the Virginia Beach native does strength training and cardio on alternate days. It’s cardio that she credits with giving her inner happiness. Easy laughter

“In the last two years I began incorporating regular cardio workouts into my exercise routine, and that journey brought me back to a place where I realized I wasn’t laughing in my personal life anymore,” she says. “When I got back to that easy personal laughter place, I have felt better in my health, too. I think being able to laugh is very important for everyone’s general health.” Seehorn’s choice of nutritional staples also adds to her overall well-being. Fresh organic fruits and vegetables, salad fixings, low-sodium turkey, egg whites, steel-cut oatmeal and seltzer round out her kitchen.

“I stopped eating fried foods and fast foods about 10 years ago,” she says. “Experts tell you that your taste buds develop a very particular craving for trans fats and that’s why you crave those foods. It was difficult at first for me, but now I don’t desire them at all. You have to un-train your tongue to not crave those greasy foods anymore. joy of eating

“However, unlike a lot of people, I haven’t cut out a whole food group. For me, eating is one of the joys of life, and I really love it. I have ensured my health by good food and exercise so that I can eat all the food groups.” Stay steady

That’s not to say Seehorn doesn’t get out of balance occasionally. “Oh I can feel the imbalance in myself when it happens,” she says. “So it’s a continuing process for me to keep a steadiness in my personal and professional lives. I check in constantly to get that balance coming from the inside because you don’t know what’s going to happen once you walk out the door.” When time permits, Seehorn writes, paints and sculpts. In college, she painted a series of self portraits with titles such as “Vanity,” “Fear,” “Anxiety,” “but that’s not where I am today. I’d title a current one “Present.” And today on a sliding scale, I’m more like a win than a loss, so I’m present today and that’s good.”

he man in your life may not pay as much attention to his lips as you pay to yours, and this winter, they could end up cracked, chapped or sore. And if he’s applying drugstore products, he might not be getting much relief. To share with your significant other, here are some cold-weather lip care tips:

} VIVA

 If you want to exfoliate, do so lightly with a toothbrush, and

only if your lips aren’t bleeding or sore.  Don’t use anything with menthol, camphor or phenol, because although they have a cooling sensation, these ingredients can actually dry out your lips more.  Don’t use anything containing silicones, or octinoxate—which can have estrogenic effects.

There are some long and short-term solutions for general skin dryness and irritation, says Toronto naturopath Christopher Habib. First, take a look at your diet and how you can supplement it. Stay away from processed foods and simple sugars, and add fl ax seeds, almonds and walnuts to your meals.

KICKING COLD SORES

“Invest in a good B-complex vitamin that’s especially high in B1, B2 and B6,” says Habib. Also, adding vitamins A, C and E, and a high-quality fi sh oil to your regime can have some benefits.

He also recommends lemon balm, which is anti-viral, and creams and teas with this ingredient can improve healing time and recovery.

LIP BALM BOMBS

Other natural solutions include topical zinc, deglycyrrhizinated licorice (DGL) to help improve healing and prevent recurrence, and topical lithium to inhibit the replication of the virus. Try not to eat food with the amino acid arginine in it, and wash your hands if they come in contact with your blisters, to help prevent the infection from spreading.

We’ve all heard about the pros and cons of lip balms. Look for products labelled organic, natural and free of artificial colours. Also, steer clear of fl avours and scents, which could dry the lips even more, recommends Habib. Ingredients such as beeswax, cocoa butter, natural oils, honey, shea butter, Vitamin E and Vitamin A can all help heal lips. Besides things you should be doing, there are also a few things you shouldn’t be doing:  Don’t constantly lick your lips, as your saliva will make them drier. give these a try

Caused by type I herpes simplex virus (HSV), cold sores are highly contagious. Some of the best treatments include lysine, which is found in foods such as yogurt, fi sh and cheese. Or you can take up to 3,000 mg daily total, says Habib.

To cover up the cold sore, use a thin layer of moisturizer or dab the area with a soothing toner. To conceal it, use a brush to dot cream concealer onto the sore and surrounding skin, making sure to thoroughly clean brushes and makeup to avoid contamination.

My teenage daughter has eczema on her hands. What would you recommend for her to do about it?

Dear Diane, Eczema is associated with food and environmental allergies, and can also be brought on by stress. Start by identifying the foods your daughter consumes regularly, and eliminate them. Gradually introduce them back into her diet, and watch for any one food that aggravates the condition. A holistic practitioner can test for food sensitivities to pinpoint foods specific to her body. As allergies are a result of inflammation, diet can play an important part in flare-ups. Eating a balanced diet rich in fresh fruits and vegetables, and supplementing with omega fatty acids will support her immune system and help nourish the skin.

Dear Samantha, Thinning hair has become a common concern among women of all ages. It can sometimes be hereditary or due to a hormonal imbalance, vitamin and mineral deficiency and stress. If you are losing a significant amount of hair, you should ask your physician to rule out any health problems.

Avoid exposing hands to harsh detergents or extreme cold or hot temperatures. WHAT DO S K I N TAG S HAVE TO DO WITH B E LLY FAT ? Skin tags are a common early sign of pre-diabetes due to elevated insulin and blood sugar by Lorna Vanderhaeghe, MS If there is one thing that is the bane of a good figure and vibrant health, it is belly fat. I am talking about that stubborn extra roll around the middle that does not seem to disappear, no matter how swift your metabolism, how much you exercise or how many situps you do. For some people, belly weight means the dreaded “muffin top” that escapes over the top of your jeans. For others, abdominal weight gain results in a round, apple shape. The fat in those love handles also contributes to increased blood triglyceride levels, inflammation and insulin resistance. Carrying extra weight around the middle puts you at higher risk of heart disease, cancers and diabetes. So why do we gain weight? Why do men develop a beer belly and breasts, and why do women suffer with rolls of belly fat they can’t budge? Our hormones are the short answer. Throughout life, hormones regulate everything from bone strength, to heartbeat, to how quickly food is utilized by the body. Insulin is the main hormone contributing to belly fat. Insulin produced by the pancreas pushes glucose (sugar) into cells and thus decreases your blood sugar levels. The more sugar in your blood from eating high-carbohydrate, high-sugar, low-protein foods, the more insulin the hard-working pancreas must produce. Eventually, however, your cells can become resistant to insulin, resulting in excess insulin in the blood and elevated blood sugar that isn’t pushed into the cells, causing insulin resistance, a prediabetic condition. Skin tags are a common early sign of pre-diabetes due to elevated insulin and blood sugar. If elevated blood sugar is not controlled, Type-2 diabetes and metabolic syndrome, as well as elevated cholesterol and triglycerides ultimately result. Insulin-testosterone connection In women, when insulin levels become high, this also causes an increase in male hormones circulating in the blood, particularly testosterone. When insulin and testosterone are elevated, women develop hormonerelated conditions such as acne, male-pattern facial hair growth (e.g. hair above the lip, on and under the chin), infertility and polycystic ovarian syndrome (PCOS). In men, elevated insulin causes testosterone to convert to estrogens (which results in the breasts and beer belly) and also the conversion of testosterone to DHT, a harmful male hormone associated with prostate cancer and hair loss.

Normalizing insulin and blood sugar Normalizing insulin and blood sugar just got easier. A unique, well-researched ingredient derived from carob called Chirositol has been involved in more than 30 published studies at Virginia Medical School over the past 25 years. Cortisol also causes our fat cells to change structure and become resistant to fat loss. In short, cortisol makes our fat cell door slam shut and not let the fat out, even when we reduce calories and increase exercise. For these reasons, it is imperative to reduce stressors and to support the adrenals too. Look for adrenal support nutrients like ashwagandha, rhodiola, suma and schizandra berries that work to normalize adrenal function. re human beings hardwired for monogamy? As long as our partner is meeting our primary needs, it can certainly feel that way. However, what happens when those needs aren’t being met? Just as we can only survive without food and water for so long before we end up taking extreme measures to survive, most people are shocked at the lines they’re willing to cross when their need to connect is unfulfi lled.

Human survival is contingent on connecting; this is why infants can’t make it on their own. When connection is not happening, there’s a void that can only be satisfied by reconnecting, either with the original party or someone else. WHAT COUPLES CAN DO TO SAFEGUARD THEIR

As an infidelity expert, I know one thing for sure: stroking the ego is at least as important as stroking the libido. Lack of either can destroy a relationship. It is said that if you want to kill a marriage outright, have an affair; if you want to slowly bludgeon it to death, take each other for granted, criticize instead of compliment, and stop thanking each other for doing what’s expected. Once an affair starts, more often than not, it will involve sex. Many will argue that men are more predisposed to having affairs than

1. Don’t let the mirror shatter. Contrary to fairytales, love isn’t completely unconditional because it ties into how someone makes us feel. 3. Make time for intimacy. If you wait for sex to happen spontaneously, chances are it won’t happen at all—what are the odds that both of you will have the urge, time and rested bodies simultaneously? So, make plans in advance, and look forward to it; it’s one of the things that gives affairs an edge. Spontaneity means scheduling sex in, and then seeing where it takes you spontaneously. 4. Keep it fun. The brain has a way of habituating, so what felt good once may barely register now. Therefore, rather than getting stuck in boring routines, try to do fun stuff together. This also applies to the bedroom. Having goal-oriented, paint-bynumbers sex that’s over once the almighty orgasm is achieved will lose its charm. So mix it up; try out new things. If the 50 Shades phenomenon has taught us one thing, it’s that women are up for a lot more than standard fare. So get passionate, put the play back in foreplay and make post-play a prelude to creating longing for the next time. This is what makes parting such sweet sorrow in affairs. 5. Have an affair with each other. Think of what “the other woman” or “the other man” is bound to deliver and beat them at their game. In other words, be attentive, get excited about your time together, date, dress to impress every now and again, take time out from talking about kids, bills, chores. After all, the definition of “romance” is the intentional suppression of the mundane. And don’t forget to kiss! Studies show that a meaningful 10-second kiss before you part ways in the morning and another one when you reconnect at the end of the day reduces the odds of divorce from one in two to one in 10. Bottom line, when things get dull or unbearable, it’s not about finding a new partner. It’s about becoming a better partner. Lead by example, and they’ll respond in kind. Why would they need to go elsewhere, if you’ve got it all going on? When to see a professional

Still, if the rift feels irreparable, see a marriage counselor who specializes in your area of need. If both of you are committed, you can fix just about anything—outside of abuse and addictions. In my infidelity work, by the third session, most couples say that, twisted as it sounds, infidelity may have been the best thing that happened to them, in terms of turning things around and making their relationship better than ever before.

Dreams of wildlife preservation really can come true when a lot of people work hard, and money flows to keep projects running. That was the point made by seabird conservationist Dr. Stephen Kress when he stopped by Loblaws headquarters in Toronto to accept a cheque from cereal makers Barbara’s Bakery/Weetabix and Loblaws. In Viva’s Earth Issue 2012, we featured an article on how buying a box of Puffi ns cereal at Loblaws could help a puffi n colony off the coast of Maine. For the month of April, 40 cents for every box bought went straight to Project Puffi n. MONEY WELL SPENT

Everyone at Barbara’s Bakery Canada, Loblaws, and Viva is thrilled that the project was such a success. Dr. Kress went home with $7,636.80. “The money we received from the Loblaws project paid for an intern [in Maine] this year,” he said. “The intern helped us protect puffi ns, and they learned all about seabird conservation.” Thanks to everyone who bought Puffi ns cereal and helped this important and successful puffi n conservation project. For 40 years, Dr. Kress has been the leader of Project Puffi n. He brought the first Atlantic puffi ns from Newfoundland to Maine all those years ago, and now, as vice president for Bird Conservation of the National Audubon Society in the U.S., he still leads the project.

IMMIGRANTS FROM CANADA

Puffi ns were hunted for their feathers in the 1890s, and had all but disappeared from the coast of Maine. With Dr. Kress’s help, 914 Canadian puffi ns he brought from Newfoundland successfully mated and raised young from 1973 on. The puffi n population of coastal Maine has increased every year, and many islands in the Gulf of Maine are now populated with puffi n colonies, as they were before they were decimated by hunting. “People have a responsibility for stewardship,” Dr. Kress said. “We made the puffi ns disappear, so we should help bring them back.” He explained how people are needed to guard the puffi ns, ensuring they can mate successfully and reproduce their one chick per year. The population of gulls, which prey on puffi ns, has increased massively because of the garbage produced by humans. Therefore, it’s up to us to make sure puffi ns and other seabirds can survive. So far, Project Puffi n is working, and is a model for similar projects around the world. “This is a positive stewardship story,” Dr. Kress said, and added that after 40 years, he’s become quite attached to some of the puffins. “One of them is 36 years old. GREAT glutes! Conditioning the gluteal muscles creates the basis for a strong back, improved posture and better athletic performance • by margot mckinnon

P

ilates is famous for how it tones and shapes the buttocks, hips and thighs. This area of the body is really important for all kinds of activities, including walking, running, climbing and getting up from sitting down! In fact, working on the buttocks and hips/thighs is one of the best ways to create good posture, a strong core and a well supported back. For best results, do the exercises in the order given.

Here are three exercises for three specific muscle groups that are integral to strong, toned buttocks. The gluteal muscles and, specifically, gluteus maximus (buttocks) and gluteus medius (outer hip) are key in conditioning this area of the body. The hip lateral rotators, which are smaller muscles found under the big gluteus maximus muscles, are important for good support too, and are often overlooked. When they perform well, they literally help lift the buttocks. And, when these three groups work optimally, results can be profound. Runners run faster. Athletes improve their performance. Back pain disappears. Posture improves.

1. CLAM (LITTLE MUSCLES UNDER THE BUTTOCKS - HIP

Avoid squeezing buttocks, and still feel them working to hold you up. 5. Hold 10 seconds and lower. Repeat 10 times. *If you feel your lower back during or after, keep hips closer to the ground.

Then, keep the left foot still and lift only the left knee so it angles to the sky. 4. Lower and lift left knee 10 times slowly. 5. Feel for the thigh bone turning in the hip socket and muscles working at the back of the hip. 6. Repeat on other side.
