If your resolutions have already fallen flat maybe your thinking is a bit too grand. It’s been engrained in us to dream big each January. When the calendar turns over, we suddenly feel the need to promise everything from daily workouts to a sugar- and alcohol-free lifestyle. With the start of each new year we’re basically setting ourselves up for failure. Change doesn’t happen overnight. If your January resolutions have already dissolved, I challenge you to dream a little smaller this year. Rather than promise the world in January, why not challenge yourself to change one small thing at the start of each month. For me, my yoga practice has fallen flat and taken second place to a busy lifestyle. Instead of making sweeping, year-long promises that are general and easy to ignore, I decided to buy a month-long yoga pass on January 1st and commit to doing six classes a week for the entire month. While doing downward dog every day is far from easy, it’s a doable goal with a realistic time limit. Will I stick to six yoga classes a week forever? No. However, it may help me finally hold a crow pose for longer than five seconds, lean out my muscles and loose a bit of my holiday weight. Doing yoga so often has also reminded me of how much I love it. So while I may not continue with six weekly classes all year long, I will likely stick with three or four. In February I vow to nix sugar. Again, it is a promise I won’t keep forever but my hopes are that seeing how good a sugar-free diet makes me feel will inspire me to eat less of it for the remainder of the year. This issue of Viva is packed with ideas to help you lead a healthier and more productive life. Whether it’s hiring a personal trainer to take your workouts to the next level (page 46), cooking healthier meals (Surprise! It’s Good for you, page 60) or making a small change towards better health (page 44), I challenge you to take one piece of advice and incorporate it into your life this month. The following month, try another. Before you know it you’ll have embarked on a healthy makeover that’s built for success! Now, that’s a resolution you can stick with and be proud of.

BEHIND THE SCENES Roselyn Sanchez arrived solo at Flashaus Van Nuys studio dressed very casual and low key in a tank and pants. The glam team quickly got to work and turned the low-key star into an all-out diva. Although her look may have screamed starlet, her attitude was anything but. Her one request was for Latin music to play during the shoot to make her at ease and get her excited about her vacation and charity event in Puerto Rico – she was leaving the next day. Sanchez is from Puerto Rico and couldn’t wait to visit family and friends. Sanchez brought her own protein drink, but noshed on kale and potato salads and grilled chicken on set with everyone else. How long have you read Viva? Since 2005 What's your favourite section in Viva? My favourite section in the magazine is the recipe section! I love to cook. I often turned to Viva for healthy recipe ideas when I was on my weight-loss journey a few years ago. Today I still look forward to the recipe section in each issue. BEAUTY TERMINOLOGY TOLUENE Toluene is a clear liquid substance that is commonly used in nail products like nail polish and nail glue to dissolve other substances involved. Toluene will help to apply the nail product smoothly by acting as a solvent. However, the Environmental Protection Agency (EPA) has stated that overexposure may cause harmful health effects. Look for products that avoid toluene and choose natural options instead.
SILICONE Taken from a natural product called silica (basic sand) and chemically processed, silicone is an ingredient that’s been used to achieve shiny, glossy and silky results in beauty products. Silicone was first introduced to the cosmetics industry in the 1950s and since then has shown bioaccumulative properties that are harmful to the environment. Metabolism is impacted by the body’s circadian rhythm so when we eat can have a big impact on how our body processes food. A new study by the University of British Columbia found that easing up on email can help reduce psychological stress. The study looked at a variety of students and professionals and instructed some to check their email throughout the day and others to limit checking to three times daily. Those who checked their email only a few times daily had lower stress levels –and probably got a lot more accomplished too.

LOSE WEIGHT BY GIVING YOUR DIGESTIVE SYSTEM A BREAK When it comes to maintaining a healthy weight and boosting your overall health, giving your digestive system a break and a chance to recover may be the answer. A new study by the Salk Institute found that confining your eating to an 8- to 12-hour period can starve off obesity, diabetes and high cholesterol. The study looked at mice that were fed a high-fat diet, but allowed access to that diet for only eight hours per day. Researchers found they were healthier and slimmer than mice given access to the same food for the whole day, even though the two groups consumed the same number of calories. Time restriction better synchronizes the function of hundreds of genes and gene products in our body with the predictable time of eating. Don’t fret, however, if you decide to go out for late night pizza on a Friday night. Researchers gave some of the timerestricted mice a respite on weekends, allowing them free access to high-fat meals for these two days. These mice had less fat mass and gained less weight than the mice given a freely available, high-fat diet the whole time. In fact, the mice that were freely fed just on weekends looked basically the same as mice given access to food nine or 12 hours a day for seven days a week. Looks like a healthy diet can withstand some temporary interruptions and it’s okay to have a little fun with your food – provided you follow healthy rules most of the time. 38

All headlines aside, however, there are real health benefits to giving your liver a detox boost. Q: WHY DO I NEED A LIVER DETOX? A: The liver is the main organ involved in detoxifying the body. Junk food and fried foods should be eliminated and you should limit your exposure to industrial pollutants such as fumes from synthetic household cleaning products, paints, fungicides and pesticides, or industrial pollutants in the air. Consider using an air filter at home and at work to achieve this. The second step is to take liver detox supplements. The most well known and well researched is milk thistle. Its active ingredient is called silymarin, which protects the liver overall. It has been used in Europe for centuries (including as a standard treatment in hospitals) for liver failure; especially the kind associated with alcoholism. Lecithin has a great record of promoting liver and brain health because it is the primary component of cell membranes. In the liver, cell membranes pump toxins into cells and pump their neutralized counterparts out of cells. In the brain, cell membranes comprise the majority of what we actually call brain matter. Other great natural compounds which support liver detox are: dandelion root, beet juice (dilute homemade juice with water in a 1:1 ratio), turmeric, antioxidants (green tea, grape seed, and berry extracts) and the B vitamins. A: These products have no record of any significant side effects; they should be taken regularly and can even be incorporated into your daily supplement regime. lthough there are many reasons to love winter – snowboarding, hockey and wintery walks to name a few – there are also downsides to this chilly season. The biggest bummer is that people tend to get sick more in the winter. It’s a time when aches, fever and cold symptoms can take the joy right out of our daily lives, lower our productivity and even accelerate aging. This season, instead of sitting back and waiting for the flu to happen to you, follow these simple tips to stay healthy.
WHY DO PEOPLE TEND TO GET SICK MORE DURING THE COLDER MONTHS? Although this is a bit of an unknown, there are six primary reasons people tend to get sick more during the winter: 1. Colder temperatures produce drier air, which dehydrates the mucus surface of the mouth and throat —one of the primary defense mechanisms against viruses. 2. People are indoors more often, which promotes person-to-person transmission. 3. Vitamin D production decreases during the winter months, which decreases the strength of the immune system. 4. Less sunlight may increase the survivability of the virus, because heat and ultraviolet light from the sun can destroy the virus. 5. The virus survives longer on surfaces such as countertops & utensils when the temperature is colder. 6. Children are in close contact in schools and daycare centers, which facilitates child-to-child transmission, followed by childto-adult transmission at home. 44

FIGHTING FLU THROUGH DIET AND EXERCISE Whether it’s the scarcity of farmers’ markets or our innate need to fatten up for the cold season, we don’t eat as healthily this time of year. Having a strong immune system requires having a resilient body. To achieve this, we need to stick to the basics: healthy diet and exercise. The Mediterranean diet is the best choice in terms of staying healthy. It consists of lots of vegetables and fruits for essential vitamins, minerals and antioxidants as well as lean protein sources like chicken and fish. Fish delivers omega-3 and omega-6 fatty acids, which boost immunity, decrease inflammation and keep your heart strong. This diet also consists of healthy oils from fish, plants and nuts like olive oil, coconut oil, grape seed oil, avocado oil and safflower oil. Stick to complex carbs like whole wheat bread, and try to consume them only at breakfast and lunch. Exercise regularly for at least 15 minutes per day and combine cardio with weight training. Weight training boosts your mood and your immune system. MAINTAIN A HEALTHY WEIGHT The ideal is a body mass index or BMI between 19 and 26. The formula is BMI = kg/m2 where kg is a person’s weight in kilograms and m2 is their height in meters squared. For example, if you weigh 70 kilograms and your height is 1.5 meters, your body mass index is 70 divided by (1.5 x 1.5) which equals 31. If your BMI sneaks out of your ideal, follow some of these tips to take the weight off and keep it off. ❯ Eat larger meals in the morning and at lunch and only healthy snacks in the afternoon.

❯ Eat a healthy, balanced diet. ❯ Drink green tea or take green tea supplements. ❯ Stay away from tempting, high-calorie foods like cake, fast food and ice cream. ❯ Limit simple carbs like white bread, pasta, white rice, soft drinks and fruit juices. ❯ Do at least 15 minutes of exercise each day (ideally 30 to 60), alternating cardio with weights. You need to burn calories, boost your heart health and build muscle. ❯ Eat a salad of dark green leafy vegetables with olive or safflower oil and lemon juice instead of dressing. You can always fix your hair later. ❯ Wear a warm cap at night to keep you from getting too cold while you sleep. ❯ If you do get sick, wear a mask to protect others from being infected. THE FLU SHOT The influenza virus causes the flu. There are many types, but the most common is type A influenza. It’s unique in that it can adapt very quickly to its environment and to the vaccines we use. This is why every year, the vaccine changes, and also why the vaccine is only 60 per cent effective. Because of this, don’t rely on the flu shot as your sole source of flu prevention. The flu shot may increase your resistance to the virus, but it’s not for everyone. Some people may actually get sick from the vaccine. If this happens, I don’t recommend getting it again. Those with chronic diseases or immunodeficiency conditions should, however, get the vaccine each season. Whether you decide to get the flu shot or not, make flu fighting a part your daily routine. Take steps to strengthen your immune system, make simple lifestyle changes and make this your healthiest year ever. VM

HIRING A PERSONAL TRAINER IS A BIG INVESTMENT. HERE’S HOW TO FIND THE RIGHT TRAINER TO HELP YOU SET REALISTIC GOALS, SAVE YOU TIME AND HELP YOU GET THE BODY OF YOUR DREAMS. BY NANCY RIPTON

he New Year is often when people challenge themselves to lose weight and seek out new gyms. A new workout facility can be intimidating, and the right personal trainer can help set you on the path to success. How do you separate the good from the bad though? When you first sign up you for a new gym you are at your most vulnerable. The atmosphere is foreign and chances are you feel less fit than just about everyone in the building. Unfortunately some facilities take advantage of newbie insecurities to sell high-priced sessions you can’t afford or to get you to commit to an inexperienced trainer that is short on clients. “Don’t commit to anything up front,” says
Stacy Irvine, MSc, co-founder of Totum Life Science in Toronto. You need to learn more about who you will be training with and decide whether they’re the right fit for you. “My worst experience with a trainer was when I signed up for a 10-package session as soon as I joined a new gym,” recalls Diana Goudy, St. Mary’s, ON. “I’d had good experiences [with personal trainers] before so I signed up without meeting the trainer so I could take advantage of a deal.” The sessions were unrealistic in length, unstructured and, after 10 weeks, Goudy saw no results. “It was very discouraging.” Most gyms offer a complementary session to show you how to use the equipment and provide

CHOOSE YOUR TRAINER ON THEIR MERITS, NOT THEIR CELEBRITY ROSTER. a starter workout. Use this program for a few weeks until you’ve had a chance to talk to other members about their experience, try out some classes and research some of the trainers. The goal of a complementary session should be to help you, not to sell training. If you feel pressured, put your guard up. “Some facilities will use body fat machines and other devices to freak people out and convince them they need to spend money with a trainer in order to lose weight,” says Irvine. “Stand firm and say you would like to use the starter program for a few weeks.” Give yourself time to get comfortable with the gym and don’t commit to anything right away. “The right chemistry is crucial,” says Nathalie Lacombe, Director of Certification with Can-Fit-Pro. If you don’t like your trainer, you won’t want to spend time in the gym. And while having a trainer you have nothing in common with is one thing, having one that lacks the knowledge to help you reach your goals is another. “Best-case scenario, working with a bad trainer is a waste of money,” says Irvine. You don’t get results and it can make you feel bad about yourself. “I became so discouraged that I made such a large time and money commitment and didn’t lose any weight,” says Goudy. “I doubt I’ll ever use a trainer again.” Worst-case scenario, however, can lead to injury – especially if you have special needs. Do your homework to protect your body from inexperienced trainers. HOW TO FIND A GOOD TRAINER The best way to find a good trainer is through word of mouth. “Find someone with a similar mindset and ask them about their trainer,” says Irving. Once you’ve found a trainer you think you’d like to work with, ask for an interview. Most trainers will offer this for free. Ideally you want an active person with a diverse background, so start by asking your would-be trainer about their fitness history. Then, talk about their clientele. Ask if they’ve ever worked with anyone of your age group and needs. “Don’t discriminate based on the age of your trainer,” says Irving. Personal trainers charge based on experience so getting a trainer that’s fresh out of university can pay off. Quiz your potential trainer on their goals for you. Be wary of any trainer who promises too much, too soon. Unrealistic weightloss expectations are the first sign of an inexperienced trainer. Irving also warns to be wary of celebrity trainers. “Becoming a celebrity trainer is mostly about being in the right place at the
right time,” says Irvine. “Someone will say ‘I train Halle Barry’ and charge $200 an hour. It doesn’t mean they’re worth it.” Ask yourself if you care if your doctor treats celebrities. Choose your trainer on their merits, not their celebrity roster. Once you’ve found a trainer that’s a good fit, sign up for a few trial sessions. Then, if you’re happy, commit to a larger package. SO WHY ARE THERE SO MANY BAD TRAINERS? There is no standardization or governing body for personal training certifications. They run the gamut from online, quickie accreditations to years of training and tests that many Masters exercise graduates would have trouble passing. As a client, how do you tell the difference? There are so many certifications that it’s impossible to keep track. “I like Can-fit-pro, National Strength and Conditioning Association-Certified Strength and Conditioning Specialist (NSCA-CSCS) and CHEK,” says Irving. But even amongst those three, there is a world of difference. Can-fit-pro is Canada’s largest and most recognized certification board. Founded in 1993, it has over 20,000 members. It is a combination of practical and theory knowledge and includes 25 in-class hours with a pro trainer and a written and practical exam. Depending on a person’s prior knowledge it can take up to six months to become Can-Fit-Pro certified. Not bad if the trainer has previous university and/or training experience. But what if your trainer was just someone who liked to workout? Are they justified in charging you $60-plus an hour because they took a part-time course for a few months? At least Can-Fit-Pro has a practical component. Many popular certifications such as the American Council on Exercise (ACE), International Correspondence Schools (ICS), and International Sports Sciences Association (ISSA) require only an online test. On the other end of the spectrum is CHEK. Founded by workout guru Paul Chek, this certification is considered the gold standard amongst trainers. Most working personal trainers would have trouble passing his exam. Being CHEK certified doesn’t guarantee you will click with your trainer’s personality but it is one of the few certifications that does equate with excellence. So why are there so many bad trainers? “It’s easy to fake it as a trainer,” says Irvine. “It’s a high paying, fun job with a lot of consumer demand.” Until certifications become standardized nothing will change. Until then, it’s up to the client to research potential trainers and not to trust certifications as the be-all qualification. Above all, trust your gut. If it feels bad, it probably is. IN FOCUS HOW TO KEEP YOUR MIND FROM WANDERING AND GET MORE OUT OF LIFE. BY NANCY RIPTON
f you find your mind wandering every time you sit down to work or read a book you’re not alone. A new Harvard University study found that people spend 47 per cent of their waking hours thinking about something other than what they're doing. This would be okay if all this mind wandering was making us more satisfied and productive, however the study also found that the inability to focus is making us unhappy. Mind wandering also leads to lost productivity and added stress – the later increases our risk of disease and fat retention while diminishing our sex drive. The good news is that getting your mind to focus on your current task is easier than you might think. A study published in Psychological Science found that just 45 minutes of daily mindfulness training resulted in major changes in just two weeks. This increased focus also resulted in significant improves in reading comprehension and working memory capacity. Can’t commit to 45 minutes a day to mediate? “Start with just five or 10 minutes a day,” says Dr. Dawa Tarchin Phillips, a University of California, Santa Barbara-based researcher on the study. You may soon find you want to do more. If not, even a few minutes a day will go a long way toward keeping your mind in the moment.

MEDITATION 101 It’s Not About Nothing “The biggest mistake people make when they’re learning to meditate is trying to empty their mind,” says Dr. Robert Gonzalez, a certified Chopra Center Instructor based in Carlsbad, CA. You will never be able to stop your thoughts. The goal of meditation is to shift your focus to something that doesn’t matter. “Use an anchor for your attention,” says Phillips. It could be your breath or a meaningless word; focus on something that doesn’t matter rather than attempting to think of nothing at all. YOU ARE WHAT YOU EAT! Follow these 14 simple solutions for improving your diet, and watch your body get the results you’ve always desired. 1. Plan Meals Ahead. This way you’re less likely to make an unhealthy last-minute food choice. Never go to the grocery store without a list. 2. Go Veggie. Once a week (or more) have a veggie meal. Choose your veggies from a wide array of colourful and delicious options. 3. Eat Healthy Protein. Protein helps maintain a healthy weight because high-protein diets build muscle and help you to feel full. Be sure to serve up some turkey, chicken, salmon or lamb; or prepare animal-free alternatives like quinoa, lentils or beans. 4. Love Oatmeal. Eating a cup of oatmeal in the morning will prevent you from gorging in the afternoon. 5. Choose Healthy Fats. Foods with healthy fats such as olives, salmon and walnuts help you feeling satisfied. 6. Avoid Sugar. Make sure you check food labels and avoid anything with more than four grams of sugar (especially high-fructose corn syrup) per serving. 7. Don’t Go Hungry. Control Your Cravings. Increasing your fibre intake with a fibre supplement before every meal can dramatically help your body’s ability to control and even out blood sugar levels. TOGETHER ACTOR ROSELYN SANCHEZ HAS OVERCOME THE ODDS TO SUCCEED IN HOLLYWOOD. SHE SHARES SOME OF HER SECRETS FOR SUCCESS AND HOW TO STAY POSITIVE EVEN WHEN LIFE THROWS YOU A CURVE BALL.
R
oselyn Sanchez moves around a lot. From her home in Los Angeles, California, to her native Puerto Rico (where her family still lives) to Atlanta, Georgia where her comedy Devious Maids films, and the occasional sojourn to Vancouver, British Columbia where her husband Eric Winter films Witches of East End. Wherever she goes, the busy mom of three-year-old Sebella is a pro at keeping it together. Sanchez has been busy fulfilling her dreams and passions since the age of four when she dutifully attended weekly ballet classes with her mother. At five, she started taking piano and singing classes. She soon joined the San Juan Ballet, and by 15 she was acting in commercials and music videos. In 1993, the five-footfive beauty became Miss Puerto Rico Petite and, a year later, she won the title of Miss America Petite. From there, a move to New York seemed like the best decision for her career. Sanchez’s mom

was reluctant for her daughter to leave Puerto Rico for the Big Apple. She has, however, overcome the odds. “I had a big dream,” she says. “I’ve always been a big dreamer.” Maybe it’s her upbringing that contributes to Sanchez’s ongoing success, or her ability to bounce back even stronger when rejection interferes. Maybe it’s her happy marriage or her passion for motherhood. Or it could be her mom’s words that have always echoed in her brain and added to her strong, independent idealism. “My mother said never to let anyone cut my wings,” says the 41-yearold. “I was married briefly before and everyone told me he wasn’t right for me. I consider myself a smart woman, but when love hits you, you become dumb. Fortunately I was able to wake up really fast and thought about what my mother had said about not allowing anyone to cut my wings. You really, truly have to believe in yourself. At this point in life, nothing really affects me – I’m used to the yes’s and no’s in my work.”

IN GOOD HEALTH Being a former dancer, Sanchez is accustomed to her body moving regularly whether it be daily stretches, 30 minutes of cardio on her home treadmill or some type of dance. “Ballet, jazz, modern – with lots of stretching involved. Stretching is good for any injuries in terms of healing your body.” Good health also calls for a positive body image. While Sanchez says she’s proud of her abs, even after having a baby, it’s her lower body that causes her anxiety. “I’m thin, but I’m curvy because I’m Puerto Rican. I have to be mindful of my thighs and backside,” says Sanchez. The day Sanchez was told she was pregnant she weighed 114 pounds. “I’ve never been able to get back to that weight,” she says. “I’m 118, which is my sweet spot; 114 pounds is just not going to happen again.” You have to be happy with what’s healthy and attainable for you at that point in your life. In order to stay healthy, Sanchez sticks to an organic eating plan for her family. She also tries to educate Sebella on healthy eating. “When we go to Puerto Rico, the food is mostly fried so we have to control it a little. I don’t cook – don’t like to and I’m not good at it,” she unabashedly admits. “So it’s not always easy to control, but I do my best.” WISDOM AND STRENGTH Admittedly very content and happy in life, Sanchez is aware there is always room for improvement – especially when it comes to her hot temper. “I have matured and improved when it comes to not losing perspective on things. I still have a big issue with people who raise their voice to me,” she says. Over the last few years, Sanchez has learned how to properly breathe to counter her temper. “That was a difficult learning curve for me. Now I know to breathe and communicate instead of having my temper flare.” Her life is not without the usual daily stresses most working moms experience. “So when I feel something is really intense, I just go for some quiet time to gain some wisdom and strength. That’s my mantra: wisdom and strength.” In fact, the self-described “ambitious and perseverant ” woman keeps a gold ring with her at all times as a constant reminder of this refrain. “Inside the ring, it says wisdom and strength.” VM 56

DIRECTIONS: 1. In a saucepot on medium heat add coconut oil. 2. Rough chop onion and add to pan with salt. Sweat and reduce heat if necessary. Add garlic and ginger, stir. 3. Add lime juice, zest, peas, mint, cilantro, vegetable broth, coconut milk and bring to a simmer for five minutes. 4. Remove from heat and blend with a hand blender or Vitamix. Adjust the consistency of the soup to your taste. NOTE: Soup will keep up to 4 days.

INGREDIENTS: • 3 cups red beets (peeled, grated) • 1 1⁄2 cups rolled oats • 1 medium onion, finely diced • 2 oz. goat cheese • 3 cloves garlic (minced) • 2 tbsp. olive oil • 2 large eggs • 1 tbsp. fresh chopped basil • sea salt and fresh cracked black pepper to taste SALSA: • 1⁄2 cup avocado diced • 1⁄2 cup mango diced • 1⁄2 lime juiced • 1⁄2 tsp. lime zest • 1⁄2 tsp. honey • 1⁄4 tsp. sea salt • 1⁄4 tsp. freshly cracked black pepper

DIRECTIONS: 1. Squeeze excess moisture from the beets and combine in a large mixing bowl with oats, onion, cheese, olive oil and eggs. Mix well and allow to sit for 30 to 60 minutes. 2. Pre-heat oven to 400 degrees Fahrenheit. 3. Divide mixture in half and make three burgers from each half to give you six patties. 4. On an oiled grill, on medium heat, grill burgers for three minutes a side or pan sear in vegetable oil until golden brown on both sides. Finish in oven for seven to 10 minutes. 5. While burgers are cooking, mix salsa ingredients in a bowl. 6. Serve the burgers a top your favorite bun with the salsa and whichever toppings you like.

Line the pan with a fitted sheet of parchment paper and evenly pat down the crust. Place in the fridge while the filling is prepared. 3. Blend berries, lemon juice and honey. Transfer to a bowl and fold in mascarpone, yogurt and vanilla. Pour into pan. 4. Freeze for two hours and then allow to soften for 15 to 20 minutes before serving. Garnish as you see fit.

INGREDIENTS: • 1 large eggplant • 1 oz. dried porcini mushrooms • 1⁄4 cup extra virgin olive oil • 1 medium onion • 4 garlic cloves, minced • 3 cups fresh breadcrumbs • 2 large eggs (beaten) • 1⁄2 cup Pecorino Romano cheese (freshly grated) • 1 tbsp. flat leaf parsley (chopped) • sea salt and fresh cracked black pepper to taste • vegetable oil SAUCE: • 2 x 28oz cans San Marzano whole tomatoes • 1 tbsp. olive oil • 1 medium onion (finely chopped) • 3 cloves garlic (minced) • 1⁄2 cup basil PESTO: • 1 1⁄2 cups fresh basil leaves, roughly chopped • 2 cloves garlic • 1⁄4 cup pine nuts, lightly toasted • 2⁄3 cup extra virgin olive oil • 1⁄2 cup Parmesan, freshly grated FARRO: • 1 cup farro • 2 1⁄2 cups of water • 15 grams unsalted butter • 1⁄2 tsp. sea salt • 1⁄4 tsp. fresh cracked black pepper

DIRECTIONS: 1. Pre-heat oven to 350 degrees Fahrenheit. 2. Lay eggplant on a baking tray and make half a dozen incisions into the eggplant with a pairing knife to allow steam to escape when baking. Roast for an hour. Remove and allow to cool. Scrap eggplant flesh into a bowl and discard skin. 3. Cover porcini mushrooms with boiling water in a heatproof bowl (approximately 11⁄2 cups of water) and allow to soften for 30 minutes. Drain mushrooms and strain and reserve the liquid. 4. In a saucepot on medium heat add one tablespoon of olive oil. Add onions and sweat for two or three minutes before adding garlic. 5. After mixture browns slightly add tomato, three tablespoons of porcini liquid, salt and pepper. Bring to a boil then reduce heat to a simmer for an hour. Finish with fresh chopped basil. 6. Once the eggplant is done, add chopped porcini, breadcrumbs, eggs, cheese and parsley. Add one teaspoon of salt and half a teaspoon of pepper. Line a baking tray with parchment paper. Roll mixture into the size of golf balls. 7. In a large non-stick skillet add about a quarter inch of vegetable oil to pan and turn to medium heat. Fry meatballs until golden brown all around – approximately five minutes. Remove to paper towel and blot to absorb excess oil. Then, gently add to sauce. 8. Pesto: Combine basil, garlic and pine nuts in a food processor and pulse until coarsely chopped. Drizzle in olive oil, pulse a few times and fold in cheese. Store in the fridge until ready to use. 9. Farro: Bring the water to a boil and add salt and farro. Reduce to a simmer and cook for thirty minutes. Strain and stir in butter and black pepper. 10. To serve, place farro in wide-brimmed bowl and top with meatballs and pesto.

(425gram) can of chickpeas, drained and rinsed • 2 tbsp. olive oil • 2 tsp. whole grain Dijon • 1 1⁄2 tbsp. fresh lemon juice • 2 tsp. lemon zest • 3 tbsp. hummus or mayonnaise • 1⁄2 red onion, finely diced • 2 celery stalks, finely diced • 1 tbsp. fresh flat leaf parsley, finely chopped • 1 tbsp. fresh dill, finely chopped • 2 tsp. fresh chives, finely sliced • 3⁄4 tsp. garlic powder • 1⁄2 tsp. cayenne • 1⁄2 tsp. celery salt • fresh cracked black pepper DIRECTIONS: 1. In a mixing bowl combine chickpeas, olive oil, Dijon, lemon juice, lemon zest, hummus or mayonnaise, garlic powder, cayenne, celery salt and pepper. Try these bold hues on pillows, throws, drapery and even wallpaper. Pair them with a neutral sofa and you can’t go wrong! 3 | BOLD WALLPAPER PATTERNS Wallpaper has come back with a huge bang! Carefully chosen textured wallpaper can be a stunning focal point and add instant drama to any small space. Many wallpapers are inspired by fashion trends and we’re seeing the designs become bolder with added rich velvet textures, shiny metallics, grasscloth, busy prints, and even crocodile skin and leather textures. The bolder the better! 4 | TRY AN ELEMENT OF SURPRISE Surprise elements are interesting in both fashion and home design. Try to be a little more eclectic and mix different textures, colours and patterns. IT’S NOT ENOUGH FOR LAURA REGAN TO SEEK BALANCE IN HER PERSONAL LIFE; THE ACTOR STRIVES FOR BALANCE ON A MUCH BIGGER SCALE. BY BONNIE SIEGLER
ach night actor Laura Regan enjoys 15 minutes of silence all by herself. The busy wife and mom of two small children says: “I need silence to myself – no talking, no phone, no music, no TV – after the kids are in bed I just need to be by myself and be quiet.” These 15 minutes may be all the quiet Regan gets in her busy life. The Halifax, Nova Scotia native stars this year in Atlas Shrugged: Who Is John Galt, the third movie in the trilogy. Regan also just wrapped a guest-starring role on the upcoming TV drama Constantine, and plays the recurring role of Jennifer Crane on Mad Men. She admits that creating a balanced lifestyle for herself and her family is a constant goal and challenge. “I’m a Libra,” says Regan. “I’m ruled by a constant need for balance. Within each day, I need a certain amount of exercise, the right amount of food and a balance of activities. Balance is something I seek, but don’t always achieve it.” SUSTAINABLE LIVING What Regan does manage to strive for on a daily basis is a sustainable lifestyle. She gave up meat at the age of 14 and she’s a regular at the local Farmer’s market – with avocadoes being one of her favourites. “My kitchen looks like a guacamole factory,” she laughs. “I always have a lot of quinoa, almond butter, organic peanut butter and whole grain sprouted bread in the house too.” Regan is a big supporter of organic farming practices and buys local whenever possible. “Non-organic farming practices leave so much chemical residue in our soil and water. I try to think of how my actions will impact generations going forward,” says Regan. Regan also tries to save energy whenever possible. Even though she lives in Los Angeles, laundry can be seen hanging on a clothesline in her backyard. It’s one thing to try to balance your own life; it’s another to strive for balance in the universe for generations to come. VM FUN FACTS ABOUT LAURA REGAN Her original aspirations were to be a ballerina, until an injury at 15 forced her to quit. Regan discovered acting while enrolled at McGill University. t happens to the best of us. Cookies and potato chips, a little more time on the couch watching TV, and suddenly we find ourselves with a few extra pounds around the waist. The same thing can easily happen to our pets. It can be difficult to ignore those adorable eyes looking up at you and somehow that bite of pizza or lick of ice cream seems to make them so happy. And, we all want happy pets, right? The truth is, those extra pounds are not only putting our cats and dogs at risk of multiple health conditions; but also added weight can have a drastic effect on their life expectancy. HOW DO I KNOW IF MY PET IS OVERWEIGHT? A veterinarian can help you determine if your pet is overweight. When a pet is standing, look down on him/her and you should see a noticeable waist. You should also be able to feel ribs when you apply gentle pressure to the ribcage and they should not have a sagging stomach. WHY ARE SO MANY PETS OVERWEIGHT? Veterinarian Dr. Ernie Ward is an Ironman triathlete and certified personal trainer who founded the Association for Pet Obesity Prevention (APOP). On Oct. 8, 2014, the APOP conducted its eighth annual Pet Obesity Awareness Day survey. Veterinarians across the U.S. were asked to spend a few extra minutes that day determining how many of their pet patients are overweight and report their findings. The results determined 57.6 percent of cats are overweight or obese and 52.6 percent of dogs. The main reason for this problem, according to Ward, is simply overfeeding. In Canada's Pet Wellness Report (published in 2011 by the Canadian Veterinary Medical Association), Canadian veterinarians identified weight management as the top step owners can take to increase their pet’s life expectancy. The report says “overweight pets tend to play and exercise less and don’t live as long as healthy pets do.” According to this study, the top five most common mistakes pet owners make in feeding their dogs and cats are: overfeeding, giving too many treats, free feeding (or making food available at all times), feeding poor quality food and giving them human food or table scraps. WHAT ARE THE RISKS OF BEING OVERWEIGHT? Ward has combined his knowledge accumulated during 20-plus years of veterinary practice with his experiences as an athlete and certified personal trainer and devoted much of his career to educating people about the dangers of obesity in pets. He is also the author of Chow Hounds: Why Our Dogs Are Getting Fatter – A Vet’s Plan to Save Their Lives, is the the resident veterinarian for the Rachael Ray Show and has been featured on Animal Planet, NBC Nightly News, the Today Show and CNN. His research shows the possible complications of carrying extra weight are extensive: arthritis, spinal disc problems, cruciate ligament injuries, kidney disease, high blood pressure, congestive heart failure, diabetes, reduced liver function, reduced
ability to fight off infectious diseases, greater risk of negative complications under anaesthesia and many forms of cancer. Other problems you may think of as completely unrelated may also be prevented by weight loss. For example, according to the Canadian Veterinary Association, “the incidence of skin problems is 40 per cent higher in overweight dogs than in dogs at optimal body weight.” WHAT CAN PET OWNERS DO? There are some inherited or breed specific illnesses that are unavoidable, but many illnesses brought on by extra weight are completely preventable. And, easily preventable since, when it comes to pets, they aren’t making food choices for themselves, we are making choices on their behalf. First off, make sure you are feeding the proper amount of food for your pet. Canadian Veterinary Association statistics show “fewer than two in 10 pet owners feed their pet(s) the amount recommended on the pet food package.” Take some time to understand pet nutrition. Make sure you are feeding your pets something appropriate for their age, breed and activity level. The APOP website has resources to help, including calorie charts and feeding guidelines as well as feeding and activity charts you can fill in and take to your veterinarian. WHAT ABOUT UNDERWEIGHT PETS? Although not as common, a pet that is underweight can be just as much of a problem. Usually it is the very old or very young who are likely to have underweight issues. In the case of puppies and kittens, they tend to be thin, especially large breed dogs that are very active and can grow from 10 pounds to 80 pounds in a matter of months. If your young pet is eating well, energetic, playing and acting normal, there is likely no need to worry. They will soon mature and grow into their bodies. Weight loss in older pets may be normal as appetite tends to wain with age, but it can also be an indicator of problems. According to the Canadian Veterinary Medical Association, there are several common conditions in senior pets that can lead to weight loss including diabetes, dental disease, chronic constipation, arthritis, kidney disease, hyperthyroidism and cancer. If you see a sudden weight loss in a pet of any age, consult a veterinarian, especially if accompanied by lethargy or loss of appetite. GET YOUR PET MOVING While the APOP and the Canadian Veterinary Association both point to overfeeding as the main cause of weight problems, they also applaud the benefits of exercise. Canada’s Pet Wellness Report showed “on an average week day, pet owners spend three times as much time watching TV and nearly twice as much time surfing the Internet as they do walking or playing with their pets.” So, the best advice to all concerned is to get off the couch and throw a ball, go to the park, take a walk and get your kitty a laser pointer, feather on a stick or empty paper bag to play with. always like a good dose of history mixed with my holiday destination. I also like a place where I can dress up and have a romantic night out. That being said, I love a woodsy retreat where my family can relax and enjoy the outdoors. While it may sound like I would need to visit three separate destinations to fulfill all these requests, there is an American resort that offers all of this and more. Nemacolin Woodlands Resort is located in Farmington, Pennsylvania and has a storied history dating back to 1740. A trailblazer named Chief Nemacolin, a native Delaware Indian led an expedition through the area, carving a rugged trail through the Laurel Highlands. The trail eventually became a road and is now called Route 40. Nemacolin Woodlands Resort sits at the major mountain artery. By the 1900s, the Laurel Highlands had become a popular retreat for wealthy industrialists and merchants from Pittsburgh. Summer homes built in the area include those by designer Frank Lloyd Wright, including his famed Fallingwater (which is only a short drive from the resort). In 1949, Willard Rockwell began purchasing land that would eventually become Nemacolin Woodlands Resort. The property was originally a private game reserve for Rockwell and his friends to hunt. A Tudor lodge was constructed and over the years a golf course, tennis courts, swimming pool, restaurants, airstrip, townhouses and even lakes were added to the area. In 1987, 550 acres of the property were sold to current owner Joseph A. Hardy III, founder of 84 Lumber Company. Along with his daughter Maggie, Hardy transformed the area into a (now 2,000 acre) world-class resort.

GET ACTIVE Nemacolin Woodlands Resort is big on play for visitors of every age. The original Lodge is an English Tudor style hotel with the comfort of an English country inn. On a grander scale, there’s the Chateau Lafayette, inspired by the Ritz Paris. It has vaulted ceilings, crystal chandeliers and marble bathrooms. At the highest end of luxury is the Falling Rock boutique hotel. Inspired by Frank Lloyd Wright, the hotel has just 42 rooms, each with 24-hour butler service and non-stop amenities.

THE FOOD Anyone who’s ever been disappointed by resort food is in for a treat. Aqueous is located in the Falling Rock resort and designed in Frank Lloyd right-inspired motifs. The views of the golf course are spectacular and I encourage you to dine just before sunset for optimal viewing. It’s more of a traditional steak house and also offers a gluten-free menu. At the high end of elegance is five-star Lautrec. It is only one of 28 restaurants in the world to hold both a Forbes Five-Star and AAA Five-Diamond award simultaneously.
