hen I was a toddler, I developed allergies to all dairy products. When my friends ordered ice cream cones, I quietly had to pass. I could never eat pizza at parties or chocolate at Halloween. I remember it being so difficult to understand (or to get people to understand) because I was the only person I knew with allergies (aside from my brother). What a difference a few decades makes. Today, up to 40 per cent of the population are sensitive to foreign proteins in the environment and an estimated nine per cent of children have food allergies. Of those, 38.7 per cent have a history of severe reactions. Experts have theories as to why the allergy rates have skyrocketed, however no one knows for sure why the rise has been so dramatic. “In Open Season on Allergies,” (page 46) Oksana Berda contemplates the effect our environment and diet have on allergies. The reality is no one knows, however taking a few precautions can’t hurt. Along with the rise in allergies has come an increase in how adaptive people are expected to be to allergies. Nut-free cupcakes are now the norm at birthday parties and I wouldn’t dream of packing a peanut butter sandwich in my child’s lunch. Recently, a Hamilton, Ontario woman filed a complaint against her daughter’s school with the Human Rights Tribunal and with the Chief Psychologist for the Hamilton-Wentworth Catholic District School Board claiming that her daughter’s elementary school discriminated against her by not taking her anaphylactic egg and dairy allergies seriously. I was never invited to a single party where there was a cheeseless pizza option. It was up to my mom to bring alternatives. Granted I wouldn’t have died if I ate dairy; I would have been very sick however. We learned to cope. While I’m not suggesting we start eating peanuts again in the cafeteria, discussion is now centering on whether allergy protection in schools should be a human right. There is no easy answer as to how far people should be expected to go to protect children with life-threatening allergies. Just as there is no easy answer to why so many of our kids now have these life-threatening afflictions. The important thing is that the discussion is there and hopefully, in time, we will have an answer to both.

Deb Lowther is a mother of three young daughters who, when not running after the kids, is running on the trails. She also ensures her own family has fun while eating healthy and staying active. Tonia Wilson-Vuksanovic is a talented chef and sommelier who spends much of her time immersed in the world of food and wine. She spent many years in Europe as Head Chef to embassies in both Italy and Belgium, allowing her easy access to some of the world’s best vineyards and restaurants. WilsonVuksanovic develops recipes and food products for a handful of different clients, along with writing for LCBO’s Food & Drink magazine. She has cooked for queens and prime ministers, however she gets the most satisfaction out of cooking for her family and friends. She is currently working on a line of cookbooks that make great food simple and accessible. Check out her latest creations in “Expect the Unexpected” (page 64).

Oksana Berda

After completing a Masters in Creative Writing at The University of New Brunswick, Oksana Berda moved back to her hometown of Toronto to pursue her writing ambitions. She recently completed an internship with Viva magazine and is currently an Editorial Intern at The Grid magazine. Additionally, her work can be seen in local music blogs such as Minus the Stains. BEHIND THE SCENES In the days leading up to Christmas, much of eastern Canada was experiencing a deep freeze, with power outages across Ontario and Quebec due to a bitter ice storm. However, Los Angeles – the scene of our cover shoot – was the warmest place in North America with sunny skies and 27-degree temperatures. Our cover model Elisabeth Röhm (co-star of the Oscar nominated American Hustle) breezed into the Sofitel Los Angeles at Beverly Hills with daughter Easton and dog Charlie in tow. Marveling at the hotel’s sophisticated ambience, Röhm got camera ready with the help of Viva’s glam team in a sumptuous room on a top floor of the 10-story hotel. Sofitel Los Angeles at Beverly Hills lent its elegant luxury and

dramatic décor to our cover shoot, while its see-and-be-seen excitement permeated every room. In between takes, everyone was treated to food from the Sofitel’s new contemporary French restaurant, Mediterranean at Estérel, which offers an incomparable dining experience (especially if you get to relax in the newly remodeled outdoor patio). With each and every wardrobe change, Röhm continued her transformation from working mom to Hollywood star, the turquoise designer dress being one of her favs. “I just love the look of it all – the vintage gown with the patterned carpet,” said Röhm of the shot. “I don’t tend to glamourize when I’m busy being a mom, however I do love colour when I’m dressing for an event.” SPRING 2014 / VIVAMAGONLINE.COM

Balanced living is about knowing and having perspective that there is grace, and that there is something working in the universe besides you and your daily experience. Whatever that is – be it energy, beliefs, something else – that’s what keeps me balanced. I always try to live with gratitude. My daughter also keeps me real and reminds me of the bigger picture. For me, I try to do as many things as I can that give me perspective on life such as yoga, taking a walk, being with my family, just anything that gives me a buffer zone and takes away from being in the thick of it all. Then I feel more balanced and it helps me seize every day with a more level mindset.

THE FOHAWK This fashionable rendition of the Mohawk is a style that owes its origins back to the 1700’s and the Mohawk American Indian tribe. In the original look, the sides of the head were shaved and the top stood straight up to represent warriors.

CREATE THE LOOK: Prep the front top middle section of your hair with a volumizing and texurizing hair powder massaged into the roots. Tease small sections of hair from the root up for a good solid foundation. Then, use a pick to pull up the teased hair to create more height. Spray with a buildable hair spray to secure in place. Take a bristle brush and smooth the edges to create the shape you want, then spray with a strong hold hair spray. For a modern finish, wear the sides slicked back or go softer with classic brushed back waves.

TIP: A great style to hide those pesky bangs you’ve been trying to grow out – just tease and throw them up.

THE CLASSICS REVISITED

PUMPED PONY Pair your pony with a pompadour for an instant classic update. The original classic style emerged in the 18th century from Madame de Pompadour. It’s an edgy and fun look that keeps your hair up off your face.

Shape your pomp with a smoothing brush and add a little matte paste to hold the style. Then twist the back end and pin it to the crown of your head. Set the look with a strong hold hair spray. If your hair is fine and needs more support, try bobby pinning a small “hair styling bun” to your scalp (you can cut the bun to make it as small as you need). Once it is secured, wrap sections of your hair around the styling piece and pin it in place with hairpins. If your hair isn’t long enough for a pony, try a clip-in pony for instant length with no commitment.

CREATE THE LOOK: Start by drying your hair with a bodybuilding mouse for better styling hold. Brush it smooth and create a deep side part. Then wrap oneor two-inch sections of hair, treated with a setting spray or a light hold hair spray, in hot rollers or around a curling iron. Use a medium-size roller or one-inch iron for tighter curls or big (jumbo) rollers or a 11⁄2-inch iron for larger curls and waves. Curl vertically (over and under) and then down both sides of your part in the front and from the crown down the back of your head. As soon as you curl each section, roll the curl up with your fingers and pin it close to your scalp.

s most women can attest, skincare is not always an easy task – which is why many men stick to the uncomplicated routine of wash and dry. Great skin is, however, possible in just seconds – if you stick to the basics and know what to do. Here’s how any man can have great skin, with minimal time and effort.

THE 60-SECOND SKIN-SAVING FORMULA

STEP 1: EXFOLIATE (30 SECONDS) “The best way to get better-looking skin is to exfoliate once a day using a non-foaming cleanser with mechanical beads, so you’re clean without being too dry,” says Dr. Lisa Kellett, M.D., a Toronto-based dermatologist. In the battle between mechanical and chemical exfoliants, Kellett believes most men stay away from chemicals because

they’re more complicated and don’t always fit into a man’s simple routine. They are also more likely to cause peeling and flaking. STEP 2: ANTI-AGING (20 SECONDS) Men are not immune to aging, so they need to use sun protection (of course this also protects from skin cancer) and a product with retinol. The latter is the only ingredient proven to reduce aging and boost collagen remodeling. Since men have hair-bearing areas on their faces, Kellett recommends products that are clear over creams, which can be greasy. For retinols, Kellett recommends a serum, again to keep the texture of the product light for bearded areas. As for sun care, a clear spray sun block (first sprayed into hands and then applied to the face) is the cleanest, easiest way for men to get the necessary sun protection. STEP 3: ANCE TREATMENT (10 SECONDS) For men who have acne, use a five per cent benzoyl peroxide-based product once or twice a day. Other products, such as facial pads soaked with salicylic acid or glycolic acid are good to use when a break up flares up on the back or chest area.

A recent study published in Nutrition found that hydrolysate from spent brewer’s yeast may help reduce body weight and fat levels in obese men and women. The South Korean study found that after just 10 weeks of supplementation with the yeast hydrolysate, participants lost an average of 5.7 pounds compared with the control group who lost just 1.8 pounds. Why the dramatic results? It appears that yeast hydrolysate can induce a reduction in body weight and abdominal fat accumulation without adverse effects on lean body mass. They believe the weight loss is at least partially due to hydrolysate’s effect on appetite control in the central nervous system.

TAKE A STAND A Kansas State University study found that swapping sitting hours for standing ones throughout the day can improve health and quality of life while reducing the risk of chronic diseases such as cardiovascular and heart disease, stroke, diabetes and breast and colon cancer. The study looked at almost 200,000 men and women and found that sitting less is essential to improving overall health. Mini breaks throughout the day or even walking over to talk to a colleague instead of sending an email can have huge health implications.

DEFINING GLUTEN

Gluten is a protein in wheat endosperm. In addition to nourishing plant embryos throughout their germination process, gluten affects dough elasticity and thereby plays a role in determining the chewiness of baked wheat goods. Gluten is comprised of two different types of proteins: gliadin and glutenin. Gliadin is a prolamin protein and glutenin is a glutelin protein. Although “true gluten” is often defined as pertaining specifically to wheat, it can be a part of other grains such as barley and rye since these types of grains have protein composites from glutelins and prolamins.

he relationship you have with your body is a lot like dating– especially when something’s not quite right. From the outside everything can look great – a hot and toned body, you’re having fun – on the inside, however, something could be wrong. “Listen to your body,” says Dr. Mike LeFevre, vice co-chair of the U.S. Preventive Services Task Force (USPSTF). Don’t ignore something that feels wrong or out of place. Chances are it’s nothing. Many times, however, the only way to catch cancer early is by telling your doctor that something doesn’t feel right. In terms of regular screening, there are very few cancers that have good science to support it. Although the screening news may sound grim, there is some interesting science that offers hope for the future. Some of the most groundbreaking cancer research has been done out of the Washington University School of Medicine. A research team led by Dr. William Harbour (who has recently relocated to the University of Miami) has discovered a way to identify gene patterns in eye melanomas. By testing a series of 15 genes

(which is small enough to be cost effective) the doctor can do a CSI-like test that will determine whether or not the cancer will stay in the eye (class 1) or spread to the liver (class 2). The test, which is now being used in most North American optical centers, allows doctors to be more proactive with class 2 patients. The ultimate goal is to develop a way to treat class 2 patients preemptively and to find other cancers where this form of molecular testing can also be done. “Ultimately, we’re hoping to make cancer a chronic disease rather than one you die from. Much like AIDS, the future may hold treatments that can allow people to lead a healthy, happy life through treatment,” says Harbour. THE BIG THREE FOR MEN

When men think of cancer, the focus is usually on the big three – prostate, lung and bowel. These three cancers account for over 50 per cent of all cancer in men. Here’s the low down on who’s most at risk, the screening tests available and who should get them.

PROSTATE CANCER The Numbers More than 241,000 new cases of

prostate cancer are expected this year in America, making prostate cancer the leading cancer in men. The good news is that the expected deaths are relatively low at 28,170. Risk Factor The more first-degree relatives you have with prostate cancer, the higher your risk. “If your father had prostate cancer, your risk triples,” says Dr. Alan Partin, Urologist-in-Chief at Johns Hopkins Hospital. “If your brother also had it, your risk quadruples.” African American men are also at an increased risk. Screening Tests Prostate screening involves a tandem rectal and blood test. If you’ve watched any medical drama on TV, chances are you’ve seen a dramatization of the first test. In a digital rectal exam, a doctor inserts a lubricated, gloved finger into the rectum to feel for hard or lumpy areas on the prostate through the rectal wall. Then, a blood test looks for the level of prostate-specific antigen (PSA) in the blood. A high level of PSA could be an indicator of prostate cancer. The regularity of tests depends on the PSA levels. There are two new tests that have recently been approved by the FDA, however they are not yet widespread. A urine test looks for an RNA molecule and a prostate health index tests three types of PSA. Both tests work with a traditional PSA blood test to improve the accuracy of prostate screening and help prevent unnecessary biopsies. Should you get Screened? Despite some recent studies questioning the effect of PSA screening, the numbers seem to say screening is highly effective. “I’m 51 and when I started practicing, one in four men would get metastatic prostate cancer,” says Dr. Partin. “Now the numbers are one in 100. I credit the change with screening and early detection. If you’re high risk, you should start screening at age 40. Other men can start at 50. If nothing has been found by age 75, you can stop screening. How it Progresses If prostate cancer is allowed to progress to a point where it becomes highly aggressive, it moves into the bones around the spinal column and hips and the surrounding lymph nodes

LUNG CANCER The Numbers Lung cancer accounts for 16 per cent of all new

cancers. It’s also the most deadly cancer, with an estimated 160,340 American deaths this year. Risk Factor “Genetics don’t play a major role in developing lung cancer,” says Dr. LeFevre. Lung cancer is primarily caused by

exposure to substances that damage the lung cells such as high levels of air pollution, drinking water with high levels of arsenic, exposure to radiation, asbestos and other chemicals, and – above all – tobacco smoke. It’s estimated that smoking is responsible for 85 per cent of all lung cancers. “If you smoke, you are high risk,” says Dr. LeFevre. There is no safe level of smoke. The effects of smoking are cumulative, however – the more cigarettes you smoke a day and the longer you’ve been a smoker, the greater your risk of developing lung cancer. Screening Tests There isn’t a reliable way to screen for lung cancer. A doctor can listen for fluid around the lungs with a stethoscope or request a chest x-ray, however studies have shown that these basic tests do little to reduce lung cancer deaths. “Lung cancer is aggressive and spreads early, often before it’s detectable on chest x-rays,” says Dr. LeFevre. The good news is that things may be about to change. It’s still a theory, however doctors may soon be able to detect a change in a specific small ribonucleic acid (microRNA) molecule that is often elevated in lung cancer patients. Should you get Screened? You shouldn’t be screened for lung cancer unless you have symptoms. Most people diagnosed with lung cancer are over the age of 65 and regular chest x-rays can expose you to unnecessary radiation and lead doctors to find noncancerous nodules that can lead to unnecessary, invasive testing. If you have symptoms such as persistent coughing, chest pain or shortness of breath you should, however, visit your doctor. How it Progresses Lung cancer usually spreads to the other lung and lymph nodes in the chest. It can also spread to the liver, brain or bone.

Screening is a huge factor in the reduction of deaths by colorectal cancer. “Everyone should get regular screening by age 50,” says Dr. LeFevre. “If you have had a first degree relative with colorectal cancer you should start screening 10 years prior to the age when they were diagnosed.” How it Progresses Bowel cancer can spread through the walls of the colon into the surrounding lymph nodes and eventually the liver.

Certain cancers such as testicular, colorectal and thyroid are especially on the rise in this age group. Because younger patients are rarely screened, cancer is often diagnosed at a later stage. Despite this fact, Dr. LeFevre does not recommend regular screening except in certain genetic cases. Even though the rates are rising, cancer under 40 is still relatively rare.

You have a persistent cough, breathing problems or chest pain. Also look for a hoarse voice, coughing up blood, fatigue, unexplained weight loss and loss of appetite. Colon Cancer

You notice any change in your bowel habits such as diarrhea, constipation, feeling that your bowel does not empty completely or narrow stools. Also look for blood in stools and general abdominal discomfort. Fatigue, unexplained weight loss and vomiting can also be symptoms of bowel cancer. VM

of colorectal cancer, however 75 per cent of tumors appear to be sporadic. Eating a high-fibre diet that’s low in red meat seems to reduce some risk – other reasons are unknown. Screening Tests There are three primary tests for bowel cancer: colonoscopy, sigmoidoscopy, and high-sensitivity fecal occult blood testing. “They are all effective and I’m neutral as to which one to recommend,” says Dr. LeFevre. It’s a matter of talking to your doctor to determine which option is best for you. Colonoscopy is the most common and should be done every 10 years. “The transition from normal colon to one with a cancerous polyp is a slow process,” says Dr. LeFevre, regarding the low frequency of the exam. Once every 10 years is sufficient to find polyps and take them out before they become cancerous. The downside to a colonoscopy is that the preparation is arduous and requires “cleaning out” the colon through drinking gallons of liquid that can cause cramping. Patients are sedated for the actual procedure to prevent discomfort, and in rare instances complications such as tears can occur. A sigmoidoscopy is easier and more low-risk than a full colonoscopy. It covers only the first third of the colon and tests should be done every five years. If a polyp is found, a full colonoscopy is then done. The last option is a yearly stool test. It is a high sensitivity test for blood and if anything is found, a colonoscopy is then done. It’s not nearly as obtrusive as a colonoscopy, however it can be challenging for some men to remember to do it every year. In the future, a virtual colonoscopy may be possible. Researchers will soon be able to take a three-dimensional image of the colon and rectum. At this point, however, investigators

Because our adrenal glands respond to both physical and emotional stress, DHEA, along with testosterone and estrogen production can be dramatically affected by our stress levels, which can adversely impact our sexual health. Cortisol (the stress hormone) also plays a major role in sexual health and feelings of well-being. Excessive stress plays a large role in libido for men, as healthy erectile function relies on being both relaxed and excited at the same time. With high levels of stress or anxiety, erectile dysfunction is much more common. According to an article in Andrologia, lifestyle factors that reduce subjective feelings of stress and anxiety have been shown to improve sexual function and libido. Basically, reduce your stress, increase your libido. Clinically, it is very surprising how many men I have come across with lower than optimal levels of testosterone and/or DHEA directly correlated to their decreased libido. Many men surprisingly have higher than optimal levels of serum estradiol, the main estrogen in our bodies. High levels of cortisol are also frequently seen in both men and women with decreased libido. When it comes to hormone health, it’s all about balance. If sex drive is an issue, have serum DHEA-S, total testosterone and estradiol levels checked. For women this is a great way to check in on your adrenal function, since low T or DHEA would be a sign of physical or emotional burn out, low energy, poor focus, low sex drive, high anxiety, depression or even risks of autoimmune disease and osteoporosis. In men, low DHEA-S and estrogen are signs of adrenal exhaustion, where low testosterone and higher serum estrodial can result in depression, lack of sex drive and erectile dysfunction.

DOWN THE INSULIN LIBIDO CONNECTION Although there is a natural decline in testosterone and libido starting around the age of 30, one of the biggest factors that can prematurely reduce testosterone levels in men is excess body fat and increased insulin levels. Insulin is the hormone that regulates blood sugar, and increased insulin is the cause of adult-onset diabetes, however high insulin levels can also increase body fat. Within fat cells, there is a specific enzyme called aromatase. The aromatase enzyme is what converts testosterone into estradiol that can lead to suboptimal levels of testosterone. It is important to understand the connection between obesity and testosterone because there are several natural remedies that have been shown to block or reduce aromatase activity. Reducing aromatase activity can help to naturally increase testosterone levels in men. Healthy lifestyle practices play one of the largest roles in maintaining a healthy sex drive and hormone profile in aging men. Regular exercise that includes both weight training and interval training can dramatically lower insulin levels and reduce body fat. Some studies show mixed results, however a meta-analysis of several studies determined that taking Echinacea supplements can be effective. This popular herb works by increasing the numbers and the activity of white blood cells. It also increases the production of interferon, a chemical that is critical to the immune system response. The key to effective herbal remedies is choosing a standardized product, preferably one that has been clinically tested, and using enough of it at the first signs of a cold. Whether it is in the form of a tincture, capsules or soft gels, you should take Echinacea three to five times a day for the first three days as soon as you feel symptoms coming on. Then, continue three times daily until symptoms resolve. For prevention, Echinacea is safe to take on a daily basis.

The use of allicin, the primary active agent generated by garlic, for general wellbeing is on the increase and its role as an antioxidant has been widely investigated.

As a child, I was fortunate to spend a lot of time outside in my mom’s garden or on a friend’s family farm. I ate loads of fresh produce and drank unpasteurized milk. I’ve never had allergies and have never given it much thought until recently when I learned just how much allergies are on the rise. Between 1997 and 2011, food allergies among children have increased 50 per cent. Today, two million Canadians suffer from asthma alone, and asthma is responsible for 350 deaths each year. e may always think of Debra Messing as Grace Adler from the beloved television sitcom Will & Grace. Messing, however, has moved on, and her life as a mom (to nine-year-old Roman) and actor is very full, hectic and happy. Besides just wrapping up an independent film and rehearsing for Outside Mullingar, debuting on Broadway soon, Messing is looking to produce. And she has to do all of this while keeping her tough-to-tame allergies in check. Messing’s allergies first began to manifest themselves in her late teens with bad sore throats. “Everyone thought I had strep throat all the time because my throat would start closing up,” she recalls. At 21, Messing underwent rigorous testing and found out she was allergic to mold, mildew, flowers, down, wool, cashmere, and certain foods. 52

MESSING’S GO-TO ALLERGY AID “I’ve tried many relief medicines and they either made me sleepy or edgy or didn’t last very long. The severe reactions would take away my self-confidence because I would be worrying about allergies and suddenly my eyes would start weeping and I’d get sneezy,” says Messing. Messing has now started taking Zyrtec and finds it’s the only thing that works for her. “I can now go to the park for more than 15 minutes and play with Roman,” she says. “Finding something that helps my symptoms, gives me the confidence to plan and know that I can participate in the life I want to build for myself was a game changer.” ALLERGIES AND BEAUTY Harsh allergies can wreak havoc on anyone’s beauty – even someone as gorgeous as Messing. “I always carry tiny portable, single-dose saline eye drops with me,” she says. If her eyes get itchy, she can use them to wash away any pollen or dust that might have gotten into her eyes. Messing has also found that keeping makeup brushes very clean is important in avoiding allergy attacks. “The brushes get so close to your eyes so it’s important to be vigilant in keeping your makeup brushes clean,” says Messing. Lastly, Messing warns to stay away from makeup, skincare or hair care products that have heavy fragrances. “I only use fragrance-free products and this has really made a difference for me,” says Messing. Let’s just say I’ve absolutely had peaks and valleys in my life,” says actor Tasha Smith, currently starring in Tyler Perry’s TV series For Better or Worse. “I believe that obstacles are not there to take us out; rather to show us how strong we are as human beings. I’m stronger today than I was yesterday because I haven’t been tapped out in life. Any person can remember the hard things that they’ve gone through, however we’re probably more courageous and encouraged about the future because of the victories we’ve had in our past.” Tasha, and her identical twin, Sidra, grew up in Camden, New Jersey, raised by a single mother. And to say that things weren’t always easy is an understatement. The actor has been open about her past drug use and victory over it. Now married to Keith Douglas, and stepmom to his five kids, she’s found her happy place in life. Through all her ups and downs, Smith’s spirituality is what has made her a survivor. “My ability to overcome has given me resilience and the ability to snap back,” says Smith. Even with that, however, everyone has to have a foundation or source of faith. “One of the greatest things we can have as human beings is the ability to have faith in ourselves, in our future and in our purpose,” says Smith. WEIGHTY ISSUES

“I like to be around 140 pounds and I’m not there right this second and it makes me really mad,” laughs Smith. “It’s not for lack of trying.” The 42-year-old enjoys and looks forward to working out with her personal trainer, Scott Barker, and especially likes boxing. “That’s one of my favorite workouts,” she says. “It’s fun, energetic and it keeps me alert and aware. I love the way I feel afterwards.” Smith also likes to take her workouts outdoors and enjoy a little solitude. “I love hiking in the different canyons near my 54

home in Los Angeles. It’s a nice visual experience and good exercise,” says Smith. The actor also eats healthy and starts off each day with a nutritionally packed shake made with spinach, kale and berries. The actor doesn’t drink dairy so if she wants her smoothies a little creamier, she’ll add almond milk. She also keeps a hard-boiled egg on hand for a healthy on-the-go snack. She admits that she’s not always perfect, however. “I love Häagen-Dazs ice cream, Red Vines and popcorn,” she says. “I don’t even say, ‘Let’s go to the movies,’ I say, ‘Let’s go get popcorn!’”

ctor Elisabeth Röhm is the first to admit that she was raised in an unconventional atmosphere. Born in Düsseldorf, Germany, Röhm moved with her Americanborn parents to New York City before her first birthday. An equestrian enthusiast, Röhm began competing at the age of five along with some friends. Although this may not sound too unorthodox, Röhm swears: “I was raised really unconventionally. Both my parents had European backgrounds and became meditators and yogis, which is how they met. That is where I get my spiritual background and strong mind/body connection.” MAKE EVERY BREATH YOU TAKE COUNT “I’m not a gym rat at all,” says the 40-year-old actor who now resides in a Los Angeles beachside community with daughter Easton, 5, and fiancé/entrepreneur, Ron Wooster. “First of all, I don’t have much extra time, so my exercise has to be a mind/ body experience so I’m multi-tasking. I primarily do yoga. It’s the one time when I feel no guilt in having time for myself.” Recognizing the correlation between fitness and general wellbeing, Röhm says that yoga gives her peace in addition to getting fit so it’s a “double whammy.” The breathing part of exercise and movement is so important to Röhm. “I get much more out of doing yoga, or taking a walk or bike ride than I do out of lifting weights.” Her mother’s teachings have given Röhm a strong background in transcendental meditation, proper breathing and meditative techniques. Although Röhm is as strapped for time as any working mom, she makes time for 20 minutes of transcendental meditation every single day. “I think when things get chaotic in my life – and especially in the business I’m in – if you don’t know how to get back to a place of quiet, you end up internalizing or reacting to every single thing too much and it can get painful,” says Röhm.

ing was a life altering and devastating experience for me,” says Röhm. However, her family history has opened her eyes to her own health risks and inspired her to take a proactive role in getting healthy and maintaining a wholesome lifestyle to ensure her own longevity. “I think if anybody knows what it’s like to experience the unexpected, it would be someone who lost another tragically to an early death,” says Röhm. On her path toward good health, Röhm has discovered a host of heart-healthy foods, making her more diligent about what is put on her family’s plates. Nutritional staples include: lots of fresh fruits for smoothies every morning, almond and soy milk, quick salad fixings and cheese. “Easton and I eat a lot of cheese – I’m definitely a European, so cheese would be impossible for me to eliminate,” says Röhm, who shuns the scale. “Cheese is definitely my weakest link.” Röhm’s fiancé doesn’t share in her cheese fetish. In fact, he’s a vegan. His influence has rubbed off on Röhm and she’s adopted a primarily vegetarian way of eating – except the cheese, of course. “There are always beans in the house, hummus, legumes, bananas, berries, peaches, yogurt, eggs and things like that,” says Röhm. The actor also supplements with spirulina and a ginger/ lemon/cayenne drink every morning. “I take my ginger shot to clean the pipes and eliminate any intestinal inflammation, and I take spirulina for energy.” 60

In addition to spirulina, Röhm says there is nothing wrong with a good cup of espresso to rejuvenate your body. However, lately she has taken to cold-pressed juices for the same jolting results. “The juices are alive and fresh and give me the same energy as a cup of coffee without hurting the body,” says Röhm. “If I can have some beet juice or green juice when I feel dehydrated or tired midday, that’s just so much more productive for me.” In spite of all her good habits, Röhm knows it isn’t always easy to avoid high-calorie foods, especially when raising a child. “Easton and I love grilled cheese sandwiches or macaroni and cheese so the biggest battle is trying to keep a healthy lifestyle, while not policing foods when there are kids around.” HUSTLE FOR THE MAGIC Portraying Dolly, the wife of Jeremy Renner’s New Jersey mayor in American Hustle, has pushed Elisabeth onto Hollywood’s list of sought after actors. So what’s been her own life’s hustle? “Like the film says, some people hustle for survival, some for love – I agree, but would add some people hustle for hope. I think the hustle is to stay incredibly positive in today’s world and see the beauty and kindness that people show each other. See the miracles every day. ome things like chocolate and peanut butter just go together. Other food combinations such as eggs and pizza or beef curry and bananas may at first seem ill-suited, however they can end up creating the perfect taste match. Sometimes it’s exciting to step out of your comfort zone in the

kitchen. Here are six recipes that find beauty in the unexpected.

SMOKED HAM, GRUYÈRE AND EGG PIZZA INGREDIENTS:

DIRECTIONS:

Spread each with tomato sauce leaving a half-inch border around the edge. Cover sauce with ham and basil, then sprinkle with cheeses. Using your finger, brush edges with oil. Bake in the bottom third of preheated oven for six minutes, then carefully remove. Break an egg on each pizza and place back in oven. Bake until crust and cheese are golden, with egg whites cooked and yolks still runny. Drizzle with olive oil and serve.

RED CURRIED BEEF WITH BANANAS INGREDIENTS

DIRECTIONS:

• 2 tbsp vegetable oil, more if needed • 2 lb stewing beef, preferably well-marbled • 2 cups onion, coarsely chopped • 2 cups red pepper, coarsely chopped • 2 tbsp fresh ginger, peeled and finely chopped • 2 tbsp garlic, finely chopped • 2 tbsp red curry paste, or more if extra-spicy is desired • 1 cup coconut milk (light or regular) • 1 ripe banana, lightly mashed • 1⁄2 cup fresh cilantro, coarsely chopped • 3 cups fresh spinach • Salt and pepper to taste

In a large pot or Dutch oven, heat one tablespoon of oil over medium-high. Season beef with salt and pepper and add half of the beef to the pot. Brown well on all sides, about eight minutes. Remove beef and set aside. (Note: the second half of beef will be cooked after the vegetables.) Add onions, peppers, ginger, garlic and a pinch of salt to pot. Over medium heat, cook for five minutes. Add more oil if needed. Place vegetables aside with cooked beef. Add remaining oil to pot and brown the second half of the beef, about eight minutes. Place all beef and cooked vegetables in pot along with red curry paste. Pour enough cold water in pot to just come to the top of the mixture. Cover, bring to boil, then lower heat to medium-low and cook for 11⁄2 to two hours, or until beef is tender. Check periodically to see if all the liquid has reduced. If so, add additional water to prevent burning. Add coconut milk and banana; bring to boil and reduce liquid to sauce consistency. Just before serving, stir in spinach and cilantro and season to taste if necessary. Serves 4

CHESTNUT AND APPLE SOUP INGREDIENTS:

DIRECTIONS:

• 2 tbsp butter • 11⁄2 cups onion, finely chopped • 1⁄2 cup celery, finely chopped • 3 cloves garlic, coarsely chopped • 1⁄2 tsp ground cloves or allspice • 2 tbsp fresh sage, coarsely chopped • 1⁄2 cup of your favourite beer, preferably an ale • 2 cups vacuum-packed chestnuts, roasted and peeled • 1 cup Yukon Gold potato, peeled and diced • 1 cup apple, peeled, cored and coarsely chopped • 6 cups chicken or vegetable stock • 1⁄2 cup 35 per cent cream • Salt and white pepper to taste

In a large pot, heat butter over medium heat. Add onions and celery and sauté until softened, about 10 minutes. Add garlic, ground cloves and sage and sauté for two minutes. Add ale and cook for one minute longer. Add chestnuts, potatoes, apples and stock; then bring to a boil. Lower heat to a simmer. Cover and simmer soup for 30 minutes until all the vegetables are tender. Remove from heat and let cool slightly. Purée soup in a food processor or blender until very smooth; return puréed soup to the pot. Add cream and bring to a gentle simmer – do not boil. Season to taste with ground white pepper and salt. If soup is too thick, thin with some water. Serves 6

DUCK CONFIT ON FRENCH TOAST INGREDIENTS:

DIRECTIONS:

• 3 large eggs • 1⁄2 cup homogenized milk • 2 tsp vanilla extract • 1 tsp fresh thyme, very finely chopped • Pinch of salt • 16 baguette slices cut half-inch thick (use a good quality baguette) • 2 tbsp unsalted butter • 1 leg of store-bought prepared duck confit (about 1⁄2 lb) • 1⁄2 cup orange marmalade • 1⁄4 cup whiskey or brandy • 1⁄4 tsp freshly ground black pepper • 1 head frisée lettuce, or other bitter green such as escarole, dandelion or arugula

Preheat oven to 350°F (180°C). In a shallow dish, whisk together eggs, milk, vanilla, thyme and salt until well combined. Add baguette slices and allow them to fully absorb the egg mixture, flipping them as needed. Place duck confit in oven to warm through, or follow package instructions on how to reheat. Once heated, discard skin and shred the duck into bite size pieces that will fit on the bread, keep warm. Meanwhile, in a small pan heat marmalade, whiskey and pepper over low heat until marmalade has fully melted, set aside. Once bread has absorbed the egg, heat half the butter in a large non-stick pan over medium heat. Cook baguette slices until lightly golden on one side, about two minutes. Turn slices over and cook until golden, making sure the egg mixture is cooked in the middle of the slices. Work in batches if necessary. Top each of the French toast pieces with a piece of frisée lettuce, a small mound of warm duck confit, and a generous drizzle of the marmalade glaze. Makes 16 portions

FOR THE SALMON:

In a small bowl, stir together all Pomegranate Raita ingredients and season generously with salt. Set aside. In a medium bowl, stir together oil, dill, lemon zest and black pepper for salmon. Add salmon to bowl and coat evenly with oil mixture. Season salmon filets with salt to taste. Grill over high heat to desired doneness, about three or four minutes per side. Serve with Pomegranate Raita.

CHOCOLATE, GINGER AND CARDAMOM POTS DE CRÈME INGREDIENTS:

• 13⁄4 cup 35 per cent cream • 3⁄4 cup 2 per cent milk • 6 cardamom pods, lightly crushed • 1 1⁄2 inch piece of fresh ginger, peeled and very thinly sliced • 6 large egg yolks • 1⁄2 cup light brown sugar • Pinch of salt • 1 tsp vanilla extract • 6 oz semisweet chocolate, coarsely chopped DIRECTIONS:

Preheat oven to 300°F (150°C). Simmer cream, milk, cardamom pods and ginger over low heat for 20 minutes, stirring occasionally. In a medium bowl, whisk together yolks, sugar, salt and vanilla until light and frothy, about three minutes. After 20 minutes, add chocolate to hot cream and stir until fully melted. Strain mixture into a jug pressing on solids to release flavour. Whisk strained chocolate cream into egg mixture until well combined. Strain this mixture once more. Place eight ramekins in a roasting pan, evenly divide egg mixture between them. Fill roasting pan with enough boiling water to come halfway up the sides of the ramekins. Place in preheated oven and bake for 30 minutes. Let cool slightly, then chill in refrigerator before serving. Serves 8

In this role, Turner leaves her spirited nature behind and instead embraces a calmness that surrounds alternative therapies and holistic remedies. “Personally, I’m very by the book when it comes to medicine; I listen to my doctors,” she laughs. “I do like yoga, meditation and being close with nature. When it comes to remedies and treatments, however, I’m a Western medicine kind of gal.” MANAGING BI-COASTAL STRESS

Turner currently splits her time between Los Angeles and Portland, Oregon, where Grimm is filmed. Even without two little ones in tow, this can be stressful. Add kids to the mix and it’s a little crazy. “It’s kind of cuckoo in Portland in a small apartment,” says Turner. “When I feel the stress crushing down on me with everything, I like to go for a walk. Leaving the environment really helps. My aunt is up here helping me with the kids so I can get out for a break and just walk around the block – even 20 minutes to get a cup of coffee is super recharging for me and helps balance me out.” Turner also manages her stress by focusing on her breathing. “I notice sometimes that I haven’t taken a breath for three minutes,” she laughs. “Stopping to take a few deep cleansing breaths is really restorative.” SAYING NO TO SUGAR

My comfort foods have changed over the years, however the idea of emotionally eating remains a constant battle in my life. My first step was to check in with myself and ask: “Am I really hungry?” “Am I just bored/sad/mad?” My second step was to change the types of food I reached for. ver wonder where author L. Frank Baum got his inspiration for Oz and the yellow brick road? Or where Ray Bradbury liked to spend the holidays? Or where Some Like It Hot filmed Marilyn Monroe frolicking in the sand? The answer to all of these questions is the Hotel del Coronado. Established in 1888, the Hotel del Coronado is steeped in history. “It’s like you’re back 100 years, which is where you should be during the holidays,” Bradbury once said of the famous hotel. The Del, as it’s commonly referred to, is located on 28 acres of Coronado Island just outside of San Diego, California. It boasts 757 guestrooms spread out amongst the historic Victorian Building, Ocean Towers, California Cabanas and the villas and cottages. In addition to its size and close proximity to San Diego, what else does The Del have to offer that other resorts cannot? “Unparalleled beachfront location and its historic charm,” says Lauren Ash Donoho, Public Relations Director for the property. CREATE THE LOOK: Prep hair with a heatprotectant spray from roots to ends, and blow dry your hair straight down until your hair is almost dry. To create smoothness and shine, take a large round brush starting at the rear bottom half of your head and finish drying small sections from the roots through to the ends, keeping the brush straight at the ends instead of turning them under. Then take two-inch sections of your hair and spray with a thermal styling product (for protection from heat appliances and to add hold and shine). Using a fine-tooth comb, start at the root of the hair; then pull the comb through the hair followed by a flat iron. Finish off with a lightweight shine spray.
