When it comes to our bodies we’re always full of excuses. At a recent book club, a group of us determined that it was “impossible” to lose a muffin top after having a baby. Obviously Francisca Dennis wasn’t at the meeting. At 45, Dennis has the physique most 20-year-olds will only dream of. She’s graced 12 magazine covers and is now taking a turn at acting, landing mostly “strong women” roles. Oh, and did I mention she has six kids? Turns out maybe you really can do anything if you put your mind to it. “You can achieve anything you want if you believe you can,” says Dennis. You can read more about her excuse busters in “Make No Excuses” (page 58). In addition to body shapes and sizes one of the other things we women most love to obsess over is hair colour. The good news is that companies are making amazing strides when it comes to natural ingredients in hair colouring products. Gone are the days of harsh chemicals and long lists of ingredients. Okay, those days aren’t exactly gone. The difference is that now there are natural colouring options. Colouring and chemicals no longer need to go together like Bonnie and Clyde. In “Colour Wave” (page 32) we look at the hottest hair colours this season – and give natural options to get the look you love without unwanted chemicals. Since this issue takes on excuses for not getting your dream body and hair colour, it only makes sense that we tackle the other big three “girl talk” issue – age. As a life-time devote of Three’s Company (I own all the box sets and still watch it when I need a good laugh), I can’t help but watch Suzzane Somers (aka Chrissy Snow) and be amazed at how great (and youthful) she looks. The actor is 68 years old and looks only a decade older than Ms. Snow did in her 1977 primetime show. Somers chats candidly with our west coast editor Bonnie Siegler about her secrets for looking and feeling great at any age. Personally, I plan on stealing a few of them.

Paula Wilson Paula Wilson is a Toronto-based photographer specializing in food photography and portraits. Whether in the studio or on location Wilson is a both a creative thinker and a technical talent. In addition to Viva, Wilson’s work has been featured in Toronto Tourism magazine, Toronto Life and Enroute. Last year one of her portraits was added to a permanent collection of work in the newly opened Canadian Museum of Human Rights in Winnipeg, Manitoba. BEHIND THE SCENES Ever wonder why your food never looks quite like the dishes presented in a magazine? First off, you likely spend way less than 10 hours (average length of a Viva food shoot) in the kitchen. Of course we also have uber talented chef Devan Rajkumar putting each dish together and the talented Paula Wilson using the ultimate lighting to present food in the most deliciously yummy way imaginable. The pièce de résistance are the accessories. Prop stylist Natalie Adamov borrowed countless plates, bowls and even hunks of marble from Toronto’s Pimlico Design Gallery. Because of the detoxifying menu theme we wanted the colour scheme to be light and airy. There were lots of pastels – heavy on the pink. A few of our favourites were the pale pink resin bowl used for the kale salad, the small white resin plate used for the soup and the rose resin bowl used for the detox slaw. However, just because your final product might not look as perfect as the ones on the pages doesn’t mean it won’t be as tasty. Try something new. Our favourite? BORN WANTING SUGAR There’s a biological reason kids are so easily hooked on sugar. Humans are naturally wired to love sweet things. Even before babies can speak, they can communicate their desire for sweetness by smiling or relaxing their face when they get something sweet. In addition to making kids feel good, a sweet taste can even reduce pain, acting like an opioid. Although sugar is abundant today, humans evolved in an environment where it was a rare commodity. We have protein receptors telling us that sweet food is a valuable energy source, so eat up. This was good before readily available processed sugar, but very bad today. Because children are too young to recognize that sugar is bad for them, they are especially vulnerable to sugary treats. Also, a recent study found that children like sugar twice as much as adults. SLEEP’S GOOD FOR YOUR BONES Insufficient sleep and poor quality of rest can lead to osteoporosis later in life. The daily rhythm of bone turnover – which happens when we sleep – is important for normal bone health. Research in the Journal of Bone and Mineral Research suggests people with sleep apnea should look at ways to enhance their quality of sleep before it impacts bone health.

According to research, the right amount and kind of fat can actually boost your heart health. Unsaturated dietary fatty acids, such as eicosapentaenoic acid (EPA), are known to protect against cardiovascular diseases. However, the mechanism and the specific fat metabolites responsible for this protection were unknown until now. A group of Japanese scientists found that mice engineered to produce their own EPA are protected against heart disease and they have improved cardiac function. One particular EPA metabolite (18-hydroxyeicosapentaenoic acid or 18-HEPE) was required for this protection. Produced by immune cells called macrophages, 18-HEPE is proven to dampen inflammation and fibrosis in the heart. Research suggests that a diet enriched in 18-HEPE may help prevent heart failure in patients with cardiovascular diseases.

Q: I WANT TO MAKE SURE MY CHILD’S TEETH ARE WELL CARED FOR FROM THE START. WHAT SHOULD I KNOW ABOUT CARING FOR BABY TEETH? A: Most babies get their first tooth around six months and their last primary molars before they turn three. Your child will keep these “baby” teeth until age 10 or 12, so it’s important to care for them. Here’s how to keep your child’s smile bright and healthy 1. START CLEANING NOW: Even before the appearance of baby’s first tooth, his mouth should be wiped with a warm cloth each evening to get rid of excess liquid or food. This ritual also gets your baby used to proper tooth care. 2. ESTABLISH AN EARLY BRUSHING ROUTINE: Once teeth appear, brush morning and night with a warm cloth, finger brush or infant toothbrush. The abrasive action of a wet cloth or brush is sufficient to remove debris and dental plaque. Teach your child “two for two,” which means brushing twice a day for two minutes each time. 3. MONITOR BEDTIME DRINKS: Don’t allow your baby or toddler to sleep with a bottle or sippy cup! Prolonged exposure to any sugary drink (including milk) can cause cavities. If your child wants to go to bed with a drink, fill a cup with water. 4. BE WARY OF FLUORIDE: The mineral fluoride strengthens tooth enamel and increases resistance to the acid secreted by cavity-causing bacteria. Fluoride is usually found in tap water so your child is probably getting all he needs. Too much fluoride is unhealthy for youngsters, so it is important that you use only water or fluoride-free children’s toothpaste until your child learns to rinse and spit. 5. DO-IT-YOURSELF CHECK-UPS: Lift your child’s lips and look at her teeth and gums on a regular basis. Take note if there are any colour changes, lines or spots. If so, contact your dentist.

VISIT THE DENTIST: The Canadian Dental Association recommends that children visit the dentist no later than 12 months of age. Although this seems early, the goal is to provide preventive services and get your baby used to being at the dentist. Here’s what your dentist should discuss at that first visit: • Why sleeping with a bottle can increase cavities • Young oral hygiene practices • The benefits of water fluoridation • Developmental milestones, such as sequence of tooth eruption • Monitoring jaw growth and development • Effects of thumb-sucking and pacifiers • Injury prevention, trauma treatment • The importance of regular home and professional care • The relationship of diet to dental disease • The effect of certain medications and conditions on oral health 10. GET THAT FIRST DENTAL CLEANING: The first cleaning depends on how cooperative your child is. He will need to be able to sit still with his mouth open for a prolonged period of time. THINK YOU’RE TOO YOUNG FOR SHINGLES? GUESS AGAIN. HERE’S WHY YOU NEED TO KNOW ABOUT SHINGLES AT ANY AGE. BY NANCY RIPTON

O

nce considered an “old person’s” disease, shingles is occurring in more and more young people. “I think it has a lot to do with our current crazed 24-hour lifestyle,” says Dr. Julia Carroll, a Toronto-based dermatologist. The increased stress breaks down the immune system, making people vulnerable even in their twenties and thirties. WHAT IS SHINGLES Shingles is a painful viral infection that affects almost one million people worldwide each year. While most people who get shingles are still over 50, anyone who has had the chicken pox is at risk. Shingles are caused by the varicella-zoster virus, the same virus that causes chicken pox. When you get chicken pox, the virus lies inactive in the nerve tissue and can reactivate itself years later in the form of shingles. You can’t get shingles if you’ve never had the chicken pox. Since most children are now inoculated with the chicken pox vaccine, shingles is a disease that should start to trickle out in the next few decades.

Although symptoms vary, shingles usually appear along a dermatome (an area of the skin supplied by a single spinal nerve) – most often on one side of the torso. “It can initially look like a bug bite or odd rash,” says Carroll. However, you can have singles without any redness or blisters. Shingles are usually painful and there may be burning, numbness, itching or tingling, and a red rash may appear. People often have a fever, chills, headaches, fatigue and body aches. SEEK HELP AT FIRST SIGNS OF SHINGLES If you think you may have shingles you should visit a doctor as soon as possible. Early treatment can stop the virus from replicating. However you need to receive an antiviral from your doctor within the first three days of contracting the virus in order for it to be effective. A timely antiviral will speed healing and reduce the risk of complications such as postherpetic neuralgia (where the pain continues long after the blisters have cleared), neurological problems and skin infections. Shingles in or around the eye can also result in vision loss. If you develop shingles on your face you should seek immediate medical care. If you are diagnosed with shingles, you are contagious as long as you have blisters and ulcers so you should keep any rash cov-

ered. You can pass the varicella-zoster virus to anyone who isn't immune to chickenpox and give them chicken pox. You can’t, however, give someone shingles. REASON 1: DIFFICULTY ADAPTING TO CHANGE AND THE PRESSURE TO ‘BE HAPPY’ A large number of people who struggle with chronic depression and anxiety are highly sensitive and often have difficulty adapting to change. Change can trigger panic and this can throw a highly sensitive person into a state of over arousal, which can wreak havoc on the nervous system. The pressure to be happy can be a fast track to an emotional black hole. Everyone else is whistling and basking in the warmer weather and increased amount of sunlight, but the last thing someone with depression wants to do right now is whis52

tle. Spring-based depression can be particularly troublesome because the inability to enjoy change and conform to the rest of society’s enjoyment can be overwhelming. REASON 2: ALLERGIES CAN LEAD TO ANGST Springtime pollen allergies may leave you both sneezy and grumpy. Emerging research has identified a link between allergies and depression. People who suffer from allergies seem to be at a higher risk for of depression. Recent research out of Finland found a link between allergies and depression. There have also been several large studies that have found that the risk of depression in people with severe allergies is about twice that of those without allergies. University of Maryland researchers have reported in 2008 that depression worsened during peak pollen periods in people with both bipolar disorder and active pollen allergies – this link may help explain why there is an increase in suicides during the spring every year. Aside from the miserable symptoms that allergies can arouse – sneezing, itchy eyes, sinus congestion – the most likely reason allergies cause angst are cytokines. Cytokines are the chemical messengers of the immune system that are released during an allergy attack to promote inflammation. High levels of inflammation-promoting cytokines have been linked to something called “sickness behaviour” which is characterized by increased sleeping, decreased appetite, reduced sex drive, and withdrawal from the environment – all symptoms associated with depression.

he sun is shining, winter coats have disappeared (or they soon will), the flowers are blooming and the trees are budding. With the arrival of spring comes a new lease on life and energy for most people. However, for those suffering from depression the seasonal effect can be very different. The effects that the changing seasons have on our mental health and emotional well-being have been well-researched – and the results may not be what you think. According to the Center for Disease Control and Prevention and the National Center for Health Statistics, suicide rates are lowest in the winter months and highest in the springtime. Researchers have been studying the causes of springtime anxiety and depression and have come up with three theories. Find out if one applies to you.

REASON 3: THE REVERSE SAD EFFECT Both rainy and sunny weather can be depressing for some people. A recent study led by researchers in the Netherlands looked at mood patterns in response to different weather conditions. One of the groups was named the “Summer Haters” because they felt in a worse mood as the weather got warmer and sunnier. The researchers speculated that “Summer Haters” may be at risk for a condition sometimes referred to as reverse SAD (Seasonal Affective Disorder). Seasonal affective disorder (SAD) is a recurring depression in which the symptoms start and stop in a cyclical pattern around the same time each year. Generally, they begin in the fall or winter months and the condition improves in spring. Common symptoms of SAD include fatigue, weight gain and cravings for sweet and starchy foods. However, in about one out of 10 SAD sufferers, the pattern may be reversed, with depression returning in the spring or summer after a winter of no symptoms. Some of the common symptoms of reverse SAD include insomnia, irritability, restlessness, poor appetite and weight loss. Some researchers believe that this form of depression may be due to a reaction to increased heat and humidity, with relief sometimes occurring when the patient travels to a cooler locale. NATURAL SOLUTIONS FOR SPRINGTIME DEPRESSION If you’re feeling blue this spring, your diet can play a huge role in boosting your spirits. Try to avoid sugar and processed foods. Instead consume lots of brightly coloured, natural foods including: fruits, vegetables and dark leafy greens. Cutting back on caffeine and alcohol can also help. Additionally, the right supplements can help ease the effects of depression. Here are five to try:

A combined total of 1,000 to 2,000 milligrams of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) – the essential fatty acids in fish oil – is recommended per day to treat mild depression. SAMe: S-adenosy-L-methionine is a naturally occurring molecule found throughout the body with high concentrations in the adrenal glands, liver and brain. It helps the brain to make more serotonin and can be effective at lifting moods. Vitamin C: Even moderately low levels of vitamin C have been linked to depression. Lower neurotransmitter levels in the brain may be responsible for the link between vitamin C deficiency and depression. Giving yourself a daily vitamin C boost can help lift your spirits. Vitamin D: Research by Dr. Reinhold Vieth of the University of Toronto indicates that as much as 4,000 IU of vitamin D can improve well-being with no adverse effects in adults deficient in vitamin D. KNOW THAT YOU ARE NOT ALONE If your symptoms and emotional state are making you feel blue in springtime, there may be some comfort in knowing that you aren’t the only one. Don’t hesitate to reach out for help if you’re struggling. If you have seasonal slumps lasting for long periods of time, seek professional therapy. It is normal to have a couple of bad days, but when it lasts a few weeks, it’s time to talk to somebody. rectile dysfunction (ED) can be embarrassing and disappointing – especially for those in a long-term relationship. When we hear the term erectile dysfunction, we often think of men. However, it isn’t just a man’s problem. Erectile dysfunction is also common amongst women, as the clitoris is considered an erectile organ. Lack of proper lubrication in women is also common, especially with the onset of menopause. Likewise, lack of sex drive can hit anyone, at any time. If your sex life is less than you’d like it to be, follow these natural solutions and tips to get back on track and regain that loving feeling. MANAGE YOUR STRESS Stress (both emotional and physical) is one of the biggest causes of ED. One of the most obvious treatments is learning how to 56

best manage your stress and aim to prevent situations that cause stress. I know it sounds almost too simple. However, staying organized and meeting deadlines can reduce stress substantially. GIVE YOUR CIRCULATION A BOOST Circulation problems are one of the most common causes of ED. Erections happen via the dilation of blood vessels in the penis because of an increase in a substance called Nitric Oxide (NO). A natural way to increase nitric oxide in the body is to supplement with arginine and/or eat almonds. This is actually how drugs like Viagra work. They increase the level of NO in the penis. However, in order for NO to work, the blood vessels have to be elastic. Improper diet, lack of exercise, obesity and especially diabetes wreak havoc on the blood vessels and clog them with cholesterol plaques. These factors also decrease the elasticity of blood vessels. So for healthy erections of both the penis and the clitoris, a healthy diet rich in antioxidants is paramount. A Mediterranean diet, which also limits pasta and white bread intake is best. It is a diet mainly based on fish and poultry, lots of vegetables and healthy plant oils (olive, borage, flax, hemp). It is a diet free of junk food, processed foods and simple refined sugars. It is also a diet free of foods deep-fried in vegetable oils. Supplementation should be about antioxidants and anti-inflammatory agents which help prevent the clogging of arteries. Great examples are resveratrol, fish oils (especially EPA), green tea extract, grape seed extract and red wine (in moderation – a maximum of one glass of red wine for women and two glasses for men daily). Another great herb for circulation and erections is Epimedium, which works in a similar way to Viagra, but with a lower risk of a blood pressure drop. GIVE YOUR SEX HORMONES A NATURAL BOOST The main sex hormones in women are estrogen and DHEA and the main sex hormone in men is testosterone. Unfortunately, these hormones drop as we age, thus decreasing libido in both sexes. Lower testosterone also causes weaker erections in men. The problem with testosterone supplementation is the side effects. This has gained a lot of attention lately in the media and the courtrooms of the world. The potential side effects are toxicity to the liver, dilation of the heart, heart attacks and strokes, inhibition of natural testosterone production, prostate enlargement, cancer and infertility. hen it comes to our bodies we’re always full of excuses. “I’m too busy to work out.” “No one can have a flat stomach after kids.” “Oh, really? Well, she only looks that way because she’s 21.” “If I had a private chef, I’d look great too.” But Francisca Dennis has never been one for excuses. “There’s nothing I can’t do,” says the 45-year old. “I just always believe I’m going to be successful. I don’t make failure an option.” Dennis is known in the fitness industry for having an amazing physique. The figure competitor has graced 12 magazine covers and is a public speaker and author. Unlike many weight-training gurus, she also loves cardio and runs both marathons and obstacle courses. It’s easy to look at Dennis and come up with excuses about why she looks the ways she does. “She must have extra time, no kids, no job.” Not only does Dennis have multiple jobs, but she’s recently decided to follow her passion of being an actor. In addition to acting classes, she jumps from film set to TV with roles in the upcoming The X Species and The Face, and a lead in Road of the Dead. Did I mention she’s 45? An age when most once sought-after actors are having trouble finding work. Then there are the kids; Dennis has six. As any mother can attest it can be challenging to make it to the gym with one or two kids, but six? “I have always been athletic and I dabbled in weight training when I was having my kids,” says Dennis, whose kids are now 12 to 27. She started serious training soon after giving birth to her sixth child. Dennis tracked her workouts and food intake, and started to get results. “Someone at my gym suggested I do a show,” she recalls. “I never thought I would be interested, but I got hooked. I look at it like an art or sport. There’s such a science to sculpting your body.” Dennis took the figure stage for the first time at 36 – her youngest daughter was two. She scored her first Oxygen magazine cover the same year. “The key is not to let anything stand in your way,” says Dennis. She hasn’t had it easy. “I met a lot of challenges at a young age and had to overcome them. Working through things makes you stronger.” For anyone who is having trouble reaching their fitness goals – or any other goals in their life – Dennis says to focus on your spirituality and negative self-talk. “I honestly don’t think I can be stopped,” says the Burlington, Ontario-based mom. “I don’t let my brain go to that negative side.” Life is about choices. Here’s a low down on the fats you need, and how to use them in your cooking. UNSATURATED FATTY ACIDS Unsaturated fats are oils that are typically liquid at room temperature. What gives them this unique runny property is their chemical structure; they have more double bonds than their solid counterparts. Unlike saturated fats, which are either saturated or not, there are degrees of unsaturation. The more unsaturated, the more susceptible to damage. We need unsaturated fats because they help keep cell membranes fluid, which lets them communicate with their surroundings, better responding to hormones and neurotransmitters. Unsaturated fats are also the precursors for hormone-like messengers, which keep our immune system functioning as it should, so we don’t end up in a state of chronic inflammation, or unable to heal from a wound or injury. Because they are much more interactive, and their propensity to damage is higher, extra care must be taken with them. Oils of this nature should be purchased in smaller quantities to prevent the ravages of oxygen, and stored in dark containers to block out light’s damaging rays. Unopened oils should have a best before date. Once opened, however the oil will start to degrade with exposure to light and oxygen. The length of time the oil is good for will depend on the type of oil and storage. A 2004 study published in the Journal of Agriculture and Food Chemistry looked at virgin olive oil that had been stored for 12

months under perfect conditions. Researchers were surprised to find that many of the health properties, including vitamin E content of the oil, were almost gone. As a general rule of thumb purchase oils in smaller bottles, and be sure to use within a few months of opening, as well as practicing proper storage. Examples of Unsaturated Fats: olive oil, nut and seed oils, fish oil SATURATED FATTY ACIDS Saturated fats are usually solid at room temperature. They provide us with the goods to keep cell membranes stable, produce hormones and protect our immune system, as well as our nerve cells. Because of their stability they are considered fairly inert, and not as susceptible to damage as their unsaturated buddies. So why does coconut oil melt when the room gets warmer that 73 degrees Fahrenheit, or butter becomes nice and soft when left on the counter? When it comes to fat, it’s not all or nothing. The foods we love to eat may be predominant in a certain type of fat that gives it a unique quality, but also have a supporting cast of fatty acids that contributes to its overall benefit. Take grassfed butter for instance; butter is predominantly a source of saturated fat (solid), however since the cows are fed a diet higher in omega-3’s (an unsaturated fat), this type of butter is easier to spread than some of its commercial counterparts due to its higher unsaturated fat content. In their unrefined state, fats and oils also have a host of minerals, enzymes and other components that lend to their flavour profile and influence how they act in the presence of heat. Many manufactures take arduous steps to refine their oils, deodorizing them and bleaching them, so they do not impart any taste, are more shelf-stable, and can be cooked at higher temperatures (a higher smoke point – see below). While this may sound well and good, we are losing a lot of the valuable nutrients that contribute to our health and well-being. AVOIDING THE SMOKING POINT Heating oil is a kitchen staple. It browns our food, adds wonderful flavour, and prevents a serious nightmare when it comes to pan washing. While heating oil isn’t a bad thing, heating it SPRING 2015 / VIVAMAGONLINE.COM

beyond what it can handle is. Have you ever left a pan on the stove unattended, only to come back and see it billowing with smoke? That is where the fat starts to breakdown, changing its chemical composition, letting off free radicals, and giving food a bitter-burnt flavour that no one wants. Choosing the right fat to work with is crucial to preventing the smoke point. FACTS ABOUT MY FAVOURITE FATS Grass-Fed Butter Butter is king. Its ability to elevate everything from homemade cookies and pastries to an otherwise dry and boring baked potato is astounding. Chastised for years as being nothing more than an artery-clogging brick of evil, we have now wised to butter’s many health-promoting properties, including the unique fatty acid known as butyric acid which has been shown to be protective against inflammation, boost immunity, and aid in digestion, as well as the integrity of the gastrointestinal mucosa, and promote the growth of good bacteria. Smoke Point: 350 degrees Fahrenheit Good for: Baking and lower temperature cooking, as well as spreading on just about anything. Ghee Ghee is clarified butter, or butter that has had its milk solids and water removed. Because of this, it can be used at higher temperatures, without fear of burning. Ghee gives the essence of butter, and has been used traditionally in Ayurvedic medicine for thousands of years to heal the body, promote detoxification, and provide a serious dose of moisture. Smoke point: 375 to 485 degrees Fahrenheit (depending on purity). Good for: Frying and sautéing. You can also take a spoonful or two in the morning followed by warm water to help relieve constipation. Also makes a great addition in smoothies. Virgin Coconut Oil Virgin coconut oil gives a hint of the tropics to everything you use it in. High in a unique form of saturated fat known as lauric acid, coconut oil is held in high regard for its ability to increase the metabolism, support thyroid health and protect the immune system. Due to its unique 64

chain length (known as a medium chain triglyceride), this type of fat doesn’t require some of the metabolic processing steps that other fats do, but rather can quickly and easily be absorbed into the body, entering directly into the blood stream where it can be used as a source of energy. This makes it especially beneficial to anyone who has a hard time digesting fats, or is looking for a quick burst of energy without spiking their blood sugar. Smoke Point: 350 degrees Fahrenheit Good For: Sautéing, cooking, baking, adding to smoothies or homemade nut milks. Note: also makes a great topical moisturizer and hair conditioner, and is ideal for oil pulling.

WHAT OUT FOR RANCID FATS Fats, especially unsaturated, can go rancid and can be easily damaged by things like heat, improper storage, light and oxidation. Oils that have gone rancid may be darker in colour than they originally were, and may have a bitter taste, or off smell. When you use them they may also start to smoke at a lower temperature than

Extra Virgin Olive Oil I am always shocked about how much olive oil I go through in one week, but when you are a veggie lover like me its distinct taste can’t be beat on top of veggies or whipped into salad dressings. Olive oil is high in monounsaturated fat, which helps reduce inflammation in the body, and offers many health benefits that are associated with the Mediterranean diet, including reduced risk of heart disease and balancing blood sugar levels. Olive oil has also been shown to be beneficial to the skin, helping to decrease free radical damage (wrinkles), improve elasticity (sagging) and generally keep skin moist and healthy looking. Smoke point: 320 degrees Fahrenheit Good For: Finishing dishes or salad dressings

Nut and Seed Oils From avocado oil to sesame and walnut oil there are countless forms of nut and seed oils available. The heat these oils can tolerate varies greatly, however they tend to be quite perishable and can easily be destroyed in the presence of light or oxygen. I typically like to have a neutral flavoured oil like sunflower oil (smoke point 400 degrees Fahrenheit) on hand, as well as something a little nuttier, like a walnut oil (smoke point 450 degrees Fahrenheit), to finish dishes with or use in dressings. ordana Brewster greets me dressed in a grey J Crew sweatshirt, tie-dye leggings and her favorite New Balance sneakers. She exudes a much more relaxed, down-to-earth persona than the one you’d expect from watching her on screen, where her characters usually have a vixen appeal. The former daytime actress got her start on All My Children, seguing into As The World Turns. Her film career started out with horror films The Faculty and The Texas Chainsaw Massacre: The Beginning. Then in 2001, Brewster secured her place in pop culture history with the release of the first The Fast and the Furious movie. Seven films later, many people know her as Mia Toretto from the action series. She’s also recently become a household name for her prime time version of Elena Ramos in the Dallas reboot. However well known the star becomes though, she vows to remain grounded and true to her roots.

Born in Panama City, Panama, Brewster moved to New York at age 10. She’s the perfect combination of beauty, brains and brawn. The former comes from her mother, a former Brazilian swimsuit model. Her grandfather was president of Yale University, where Brewster also attended. She insists she was accepted on her own strengths, however, and not her lineage. She’s always craved mental stimulation, and still does today. When she feels intellectually starved, she’ll pick up some bedside reading such as a special edition of The World’s Religions or My Brilliant Friend by Elena Ferrante (her current read). “I like reading dense books for short tidbits,” she says. “I was reading a book on Hinduism that I found really fulfilling.” When it comes to choosing her reading material Brewster tries to focus on what she needs at that point in her life to stay sane. It may be a dense read or something lighter so that she has time to spend with her girlfriends, working out (there’s the brawn) or meditation. For the most part, Brewster’s life is very un-fast and not at all furious. “I’m usually in bed by 9:30,” she says. She does, however cop to being an aggressive driver. “I’m working on getting more patience behind the wheel.” MANTRAS AND MEDITATION Part of learning patience comes from her twice-daily meditation practice. Just a simple breath can make Brewster smile. “Pranayama breathing can really help calm me because it balances both sides of the brain,” says Brewster. It’s a quick feel-good fix. “I sometimes do it in the car for three minutes.” “I have a personal mantra that I do along with my twice daily meditation.” Ultimately, she reflects on when all is said and done, what will she ponder? “I’m not going to think about what I will be doing two hours from now or five days from now. If I’m on my deathbed who cares that I was so efficient? I believe it’s more about what I meant to people and how much I gave. I’ve learned to stop stressing about the small things.” KEEPING FIT AND HEALTHY Like most women, there are things about Brewster’s appearance that she wishes were a little different. At 5-foot-6, she admits to wishing she had longer thighs. “I don’t think I’d change my 68

thigh shape, just add some length to them,” says the 34-year-old mother. To keep her legs firm and shapely, Brewster works with a personal trainer, combining circuit training and cardio. “I do about 45 minutes of strength training with squats and lunges for those thighs,” she says. She also does regular hikes and runs. Brewster is easier on herself when it comes to her favourite body part. “My back is really strong,” she says. “I’m also liking my shoulders and arms now.” To keep fit and healthy, Brewster focuses on eating the right foods. Also, her mom taught her that the secret to great skin and hair is eating healthy. “My mom really believes that what goes in your body will show in your skin and your hair,” she says. Brewster stocks her kitchen with oats, eggs, milk, wholewheat pasta, tomato sauce, organic ketchup and Ezekiel bread. She also believes in drinking a lot of water and eating plenty of fruits and vegetables. However, she’s not a purist when it comes to food. “I haven’t omitted any one food from my eating plan.” It’s about balance. BITTERSWEET RELEASE With the release of Furious 7, loyal fans will be flocking to cinemas to get 90 minutes of fast-paced action and also to bid farewell to actor Paul Walker who passed away during filming in a fiery car crash outside Los Angeles. “I don’t have mixed feelings about the release itself,” says Brewster when asked about her close relationship with Walker. “On a personal level, I think it’s going to be really, really difficult to be a part of the project without him there though.” Brewster was just 18 years old when she filmed the first Fast and the Furious with Walker. The two actors have come of age together in Hollywood and have been extremely close. “There were times when we’d finish scenes on this movie and cry,” says Brewster. “But that was a beautiful part of the process because we could grieve as a group.” She describes Walker’s essence: “Paul was such a huge part of this, such a joyful part of it for me, such a grounding part of it for me. He just really, really got it. I confided in him so often and relied on him on set when things got crazy. He was so lovely, so human that every second [of filming] will be a reminder of his death and what a beautiful person we all lost.” VM

DETOX SLAW

with Asian Vinaigrette & Goji Berries PREP TIME: 15 MINUTES • COOK TIME: 40 MINUTES • SERVES: 4

INGREDIENTS: • 1 cup green mango, shredded • 1 cup purple cabbage, shredded • 1⁄2 cup carrot, shredded • 1⁄2 red pepper, julienned • 1⁄2 green pepper, julienned • 1⁄2 orange pepper, julienned • 1 cup bean sprouts • 2 tbsp. fresh cilantro, finely chopped • 2 tbsp. fresh basil, finely chopped • 1 tbsp. fresh mint, finely chopped • 2 tbsp. green onion, finely sliced • 3⁄4 tbsp. toasted white sesame seeds • 3⁄4 tbsp. black sesame seeds • 1⁄3 cup Goji berries

ASIAN VINAIGRETTE: • 2 tbsp. rice wine vinegar • 1 tbsp. mirin • 1 tbsp. light soy sauce • 1 tbsp. fresh ginger, chopped • 1 garlic clove • 2 tsp hot sesame oil • 1⁄3 cup vegetable oil

DIRECTIONS: 1. In a mixing bowl combine ingredients for slaw, toss well. 2. Combine all ingredients for the vinaigrette in a blender, except the oil, blend for 30 seconds. RED BEET RISOTTO

with Ginger and Basil-whipped Goat Cheese PREP TIME: 15 MINUTES COOK TIME: 20 MINUTES SERVES: 4

DIRECTIONS: 1. In a saucepot bring stock to a gentle simmer. Add peel and scraps from the beets. 2. In a large saucepan on medium heat, add vegetable oil, ginger, shallots and garlic. Sweat for one minute before adding rice and stirring to coat each grain, approximately one minute. 3. Add wine and stir until absorbed, then add raw beets and continuously add threefourths of a cup of broth at a time until the broth is finished. This process should take roughly 17 minutes. 4. Meanwhile combine cream, goat cheese and basil in a deep insert and pulse with a hand blender. Alternatively, finely chop basil and combine all ingredients in a mixing bowl. Season with salt and pepper. 5. Remove from heat and stir in butter, Parmesan and chives. 6. Plate the risotto with generous spoon of goat cheese on top.

INGREDIENTS: • 2 shallots, finely chopped • 5 garlic cloves, finely sliced • 2 tbsp. lemongrass, finely chopped • 2 tbsp. ginger, finely chopped • 1 tbsp. fresh lime juice • 2 Thai green chili, finely chopped • 1 tbsp. vegetable oil • 1 cup Thai basil • 1⁄4 cup mint • 1⁄4 cup cilantro leaves • 1⁄2 cup lime leaves • 1 tbsp. fish sauce • 1 tbsp. brown sugar • 2 cups vegetable stock • 1 cup coconut milk • 1 tsp. sea salt • 1⁄2 tsp. fresh cracked black pepper DIRECTIONS: 1. Heat oil in a pot on low to medium heat. 2. Add shallots, lemongrass, ginger, salt and pepper. Sweat the vegetables for a few minutes and add garlic. Sweat for another five minutes to extract more flavour and to cook garlic. Add fish sauce. 3. Add one cup of stock and scrape up bits on bottom of pot. 4. Using a blender, blend mixture and return to the cleaned pot through a fine sieve. 5. Add coconut milk and bring to a simmer for 20 minutes. 6. Add remaining cup of vegetable stock to the blender and add basil, mint and cilantro. Blend and add to the pot through fine sieve. 7. Simmer for three minutes and serve.

KALE CAESAR with Coconut Bacon

PREP TIME: 1 HOUR SERVES: 2

PREP TIME: 15 MINUTES COOK TIME: 20 MINUTES SERVES: 4

INGREDIENTS: • 300g (10oz) sushi rice • 1 nori sheet • 1-6 oz. grass-fed sirloin or ribeye steak (½-inch thick) • 1 tbsp. vegetable oil • 3⁄4 tsp. sea salt • 1⁄2 tsp. fresh cracked black pepper Optional: masago, black and white sesame seeds

INGREDIENTS: • 1⁄2 bunch green kale • 1⁄2 bunch purple kale • 3 cloves of garlic • 1⁄2 cup Parmesan cheese, grated • 1 lemon, zested and juiced • 1 tbsp. Dijon mustard • 2 anchovy filets • 1 Jalapeno, charred • 1⁄2 tsp. Worcestershire sauce

DIRECTIONS: 1. Add vegetable oil to a medium frying pan on high heat. 2. Season steak with salt and pepper and sear for 30 seconds on each side, remove steak from heat source and allow to cool, the meat should be rare. 3. Wrap bamboo mat with plastic wrap to prevent rice sticking. 4. Fold nori sheet in half and tear it along seam, place down on your mat approximately half an inch from the bottom of mat. 5. Spread out half of cooked sushi rice on nori. Spread rice out, do not press down on rice. Leave a one-inch gap at the top portion. 6. Using your sushi mat roll so that the nori connects and all the rice is inside the roll, continue rolling so that it seals. 7. Slice and serve with pickled ginger, wasabi and your preferred condiments. VEGETARIAN MAKI SUSHI ROLL: Omit steps one and two for grass-fed beef roll. Make rolls as per rest of instructions, replacing beef in step five with fruit and veggie slices. We suggest using:

• 1⁄3 cup extra virgin olive oil • 1⁄3 tsp. fresh cracked black pepper COCONUT BACON: • 2 cups unsweetened coconut flakes, large • 2 tbsp. reduced sodium tamari soy sauce • 1 tbsp. liquid smoke • 1 tbsp. maple syrup DIRECTIONS: Dressing: 1. Remove tough stems from kale and tear by hand into bite size pieces, set aside. 2. Remove skin and inner seeds from jalapeno. 3. Combine jalapeno, garlic, Parmesan cheese, lemon juice, lemon zest, Dijon, anchovies and black pepper in a food processor. Blend until combined, then slowly pour in olive oil. Coconut bacon: 1. Preheat oven to 330 degrees Fahrenheit. 2. Line a large baking sheet with parchment paper. 3. Combine soy sauce, liquid smoke and maple syrup in a bowl. 4. Spread out coconut flakes and drizzle with sauce; mix well and toss to coat individual flakes. 5. Bake for five minutes, remove tray and toss the bacon, leaving it in an even layer. Repeat this step at 10 minutes and at 15 minutes. After 15 minutes bacon should be dark brown but not burnt. If you decide to leave it in the oven for more colour keep an eye on it and check every minute or two. Allow to cool before serving. Bacon freezes well and requires no defrosting. Gently massage dressing into the kale leaves and place in a serving bowl, top with coconut bacon.

ot all beef and dairy are created equal. A cow’s stomach is pH neutral, which is a perfect environment for digesting grass – no so for corn and grains. High in starch, and low in roughage, calcium and magnesium, corn turns a cow’s stomach acidic, causing the cow intestinal distress and making the conditions perfect for pathogens like E. coli to flourish. It is often said “you are what you eat,” however what we often fail to take into account is that this does not just apply to the food we put into our body, but the food that our food also puts into theirs. We are part of a larger picture, a bioaccumulation of the all the choices that have been made as we move up the food chain. Grass-fed cows are fed the way they are supposed to be fed. They don’t need to be administered preventative doses of antibiotics, and they are not confined to cramped quarters with unsanitary conditions. In return, their quality of diet and life is reflected in the quality of their meat and dairy; it is leaner, tastier and healthier than anything raised in a factory. GRASS FED IS BETTER FOR YOU All food has a profile of various fatty acids including a variety of polyunsaturated fatty acids (such as omega-6 and omega-3) and saturated fatty acids. Both the meat and dairy from factory-farmed cattle mirrors that of the standard North American diet with ratios of omega-6 to omega-3 reported to be as high at 20:1. Compare this to grass-fed cows that have a much healthier ratio of 3:1 (omega-6: omega-3), as well as lower levels of satu84

rated fatty acids, and total fat in general. Grass-fed beef, dairy and butter also contain a unique type of saturated fat known as Conjugated Linoleic Acid (CLA). CLA is a powerful fatty acid that has been shown to have beneficial effects on weight loss, cardiovascular disease (including high cholesterol, high triglycerides and high blood pressure), immune function, inflammation, food-induced allergic reactions and osteoporosis. CLA cannot be made by the body and must be obtained through the diet. Grass-fed butter and dairy also contain a unique form of Vitamin K (K2), which is crucial for the proper absorption of calcium, and the promotion of strong bones. GRASS FED TASTES BETTER Flavour wise, grass-fed butter is richer. It tastes more like butter should. It’s lower in saturated fat and higher in polyunsaturated fats (omega-3’s, and omega-6). It’s creamier and easier to spread than conventional forms, and takes on a more golden hue thanks to the rich beta-carotene content. When it comes to the meat, grass-fed cows are out to pasture a good portion of the year; couple this with their varied fatty acid profile and you have meat that is leaner than more commercial varieties. The quality and care of the animal also shows as well; cows that are treated humanely and fed their natural diet will always result in a superior product to cows that are kept in feed lots, force fed grains, and are often sick and in need of antibiotics. o you remember the living rooms of old with brass lamps flanking a powder blue sofa? The scene was perfectly placed in front of a picture window so heavily draped with white sheers; any street life was blocked from view. Thank goodness those days have passed – or have they? Metals are so hot and trendy right now – and they’re not going anywhere. (Should I also mention that blue is back too?) Luckily, the new brass is better, sleeker, edgier and warmer than the brass of decades ago. When it comes to blue, the shades are bolder than past powder trends, and you won’t just see it on the sofa. Blue is everywhere from furniture and accessories to hardware and bathroom fixtures. Like most trends, it can be difficult to temper what quantity and pairings are appropriate. Mix too much, and you’re singing the blues. Do too little, and you make no impact. Your first step is to do some research. Get your inspiration from the runways, fashion magazines, or even the water in your pool. It matters not where you get your encouragement, just that you embrace it. Once armed with courage, follow these five steps to ensure you mix your blues and metals like a pro: 1 | Decide how far you are willing to take the trend. Is it just for throw pillows to mix with your existing décor, or do you want to start again with walls and begin to layer? 2 | Add in these new trends on a manageable budget and scale. Unless you want to live with an aqua sofa for the next 10 years, choose wisely. If you’re into trends, you know next year can be a whole different colour game. Decide what is worth the splurge and space, in advance of: “OMG I have to have it!” 3 | Designers often use light fixtures to make an impact or to convey a design message. Try to be crisp with your hue choices for modern appeal. 5 | Texture and pattern are risky, but carry a huge design reward. Don’t be too safe when you select fabrics, cushions or even wall coverings. t was 1998 when I got my first puppy, a beautiful German Shepherd/Labrador Retriever cross named Empress. She was playful and energetic and I couldn’t have been happier. At around seven months of age, she started to limp occasionally, seemed stiff and had trouble jumping. At nine months, she was officially diagnosed with hip dysplasia in both hips. At 11 months, the arthritis in her hips was too severe for them to operate. I was devastated. Since I was determined not to lose my new best friend, I immersed myself into researching how to manage this disease. Empress lived 13 happy, healthy and mostly pain-free years with a strict exercise routine of short walks and frequent swimming, a homemade ramp to get in and out of the car, and supplementation with glucosamine and other natural products. Here’s what you need to know about animal joint pain or arthritis and what you can do to protect your pet.

EARLY YEARS PREVENTION STRATEGIES Many joint problems later in life can be prevented (or at least limited) with vigilance during the puppy period. Larger breed dogs that can go from a few pounds to a hundred pounds in under a year are at the highest risk of joint problems. If you have a larger dog, you need to make sure your puppy grows at an appropriate rate and that his bones develop properly. Talk to your vet about finding the right food for his breed. There are many large breed dog foods on the market that aid in making sure dogs don’t grow too fast. By nature puppies have boundless energy. However, it is important to monitor their activity. “Avoid too much repetitive activity that puts stress on the joints,” says Dr. Heather Kennedy, a Certified Canine Rehabilitation Therapist in London, Ontario. That means not overdoing it on stairs and not taking your dog running until he is 12 to 14 months of age. Any running or playing that is happening is best done on a softer surface like grass or carpet rather than concrete or asphalt. The early development period is less of a concern with smaller dogs and cats, mostly because they don’t grow to such extremes and because most people don’t take their cats out for a five mile run! AVOID OVERFEEDING A good quality diet is an important element of joint health in all pets. When it comes to food, it is just as much about quantity as it is quality. “Establish good eating habits early and don’t get into the habit of overfeeding,” says Kennedy. Obesity is a huge issue with pets in North America and extra weight puts unnecessary stress on the joints. Just as children have to learn healthy eating habits, puppies and kittens have to learn they can’t eat as much as they want whenever they want. NATURAL SOLUTIONS TO HEAL YOUR PET’S JOINTS Glucosamine is a wonderful preventative supplement. In fact, it can be used both as a preventative therapy and a treatment. Glucosamine is found naturally in the body in the fluid around the joints. The supplement form is harvested mostly from the shells of crab, lobster and shrimp, and helps keep cartilage healthy and reduces stiffness in arthritic patients. Glucosamine may work best combined with a chondroitin sulfate, believed to help the body repair damaged cartilage, protect existing cartilage and perhaps reduce joint pain. Omega-3 has also been shown to benefit joints. According to the Canadian Veterinary Association, refined fish oils, especially those high in omega-3 fatty acids “act as natural anti-inflammatory compounds and can assist in control of pain and inflammation associated with arthritis.” There is also some evidence that vitamin C and E may help with inflammation and could serve as effective tools in the fight against arthritis in dogs. And while eventually, drug intervention may be necessary; the natural options like glucosamine, chondroitin and omega-3, can hopefully delay the need for such drugs.

HOW TO KNOW IF YOUR PET HAS ARTHRITIS Since arthritis tends to develop slowly over many years, pet owners don’t always notice the signs as early as they should. The American Society for the Prevention of Cruelty to Animals (ASPCA) says to look for stiffness, limping, trouble rising and hesitancy towards jumping or climbing stairs. In the case of cats, they may also stop using their litter box because maneuvering in and out is painful. MANAGING YOUR PET’S ARTHRITIS There are many incredibly helpful techniques today that were not readily available when Empress suffered her joint issues. There are underwater treadmills at some clinics used to rehabilitate injured pets and improve the quality of life for senior ones. Massage therapy and laser therapy are also becoming increasingly popular and can be found at more veterinary clinics each year. Weight management is important – especially with age. “As your pet begins to slow down, it becomes easier to put on weight,” says Kennedy. Owners need to adjust food intake and also need to continue age-appropriate exercise. “Senior pets still need to be active,” says Kennedy. “It is the use it or lose it idea.” Adjustments may mean less running, frequent and shorter walks or focusing on low-impact options like swimming. There are a few other common sense steps you can take to help your arthritic friend. Pets of all ages should have comfortable soft bedding, rather that lying for extended periods in snow or on concrete. Excessive jumping should be avoided, especially as your pet ages, and caution should be taken when walking in deep snow and ice. Prepare for senior years by investing in a portable ramp for dogs too heavy to lift into a car and lower-sided litter boxes for senior kitties. It might also be best to put the litter box on the main level so your cat doesn’t have to manage stairs. VM

he magical setting of Ojai, California is just a 90-minute drive northeast of Los Angeles and is the ultimate getaway for those looking to relax, rejuvenate, get fit, go wine tasting, shop or browse art galleries. The Oaks at Ojai is the epitome of relaxation and a great vantage point to visit the city. With its Spanish Mission design and its ideal location within the lively art community, you can’t help but feel more relaxed the second you enter the resort. The Oaks was built in the 1920s and is now owned by fitness expert Sheila Cluff. It offers a serene, yet upbeat atmosphere to get fit and healthy. SO MUCH TO DO Ojai is home to many writers, photographers, artists, composers and celebrities (Reese Witherspoon has a ranch on the outskirts of Ojai). The downtown Ojai art galleries showcase much of the local cultural scene, while the Ojai Art Center and Ojai Valley Museum will impress even the toughest art critics. A few key times to visit if you’re an art lover include August, when the Ojai Playwrights Conference New Works Festival presents new plays for the theater. Also October, when local painters, sculptors, potters and other creative people open their studios to visitors. Whenever you choose to visit, I encourage you to take a stroll down Main Street where high fashion, casual chic, unique antiques and gifts abound, and nary a chain store is in sight. If your tastes veer more to the homegrown variety, visit the Farmer’s Market held every Sunday. Afterwards, hop in your car and head to wine country. You can take advantage of the Southern California vineyards and wineries or visit the Casa Barranca Winery Tasting Room in the center of downtown Ojai. Other local wineries and tasting rooms – like Barrel 33, which combines fine wine with art – surround the area. On another day, take a hike or bike the beautiful Ojai Valley. It offers 24 hiking paths crisscrossing the valley on challenging terrain and scenic paths. Then end your day at The Oaks Spa Sanctuary. “It’s about a mind, body, spirit connection,” says Cluff.

CELEBRATE PIXIE MONTH Throughout the month of April, the Ojai resort celebrates the homegrown sweet and seedless Pixie tangerine. Their spa offers a Pixie seasonal scrub, manicures, pedicures and other related treatments. On the culinary side, Executive Chef Christine Denney conducts her annual Pixie cooking demo with items such as chocolate mousse infused with Pixie. “Pixies are a natural food pairing,” explains Denney. “They are lower in acid than most tangerines, loaded with vitamin C and are a natural antioxidant.” Eating Pixies also increases collagen in our skin, making for a glowing complexion.
