hen I was young I remember finding my dad’s high school yearbook. He must have been about 14 in the picture, but his hairstyle looked as if the photo could have been taken yesterday. Aside from a little thinning out, nothing had changed! I remember my brother and I bursting out laughing, and personally vowing that my own look would never grow nearly as stagnant. While my locks look nothing like my Lady Di haircut in sixth grade or my perm bouffant (yes I had a perm) in high school, I have recently settled into a bit of a rut. My hair colour hasn’t changed in nearly a decade and my flat iron has given my lengthy locks two looks – straight and straighter. When it comes to make-up, I’m not much more creative. According to a study by the Crown Clinic in Manchester, England the average woman will have more than 50 hairstyles by the time she reaches the age of 35. That’s not to say women are chopping their locks at every turn. A change doesn’t have to be overly dramatic. It’s amazing how just one or two small beauty tweaks can have a huge impact on your look. If you’re looking for a little summer refresh, I encourage you to try one of the beauty and hair ideas in “Hot Date Beauty” (page 34). Something as simple as choosing radiant orchid over your standard lip colour can give your look a total refresh. As for hair, a change doesn’t even require a trip to the salon. While braids may seem like you’re taking your beauty regime back to grade school, the right braid can take your look from ho-hum to trendsetter. For me, I decided to start with ombre highlights. It’s a subtle change, and because I kept my dark roots, it’s low maintenance. Now all I have to do is follow Viva’s beauty advice and add a new hue to my makeup palette.

CONTRIBUTORS Tonia Wilson A talented chef, Tonia Wilson spends most of her time immersed in the world of food, wine and beer. She worked four years as Head Chef to the Canadian Embassy in Italy, where she also received her certification as a sommelier. Always passionate about wine, Wilson discovered her passion for beer while working in Belgium as Head Chef to the Canadian Mission to the EU. While living in Brussels, Wilson discovered beer’s great capacity to be paired alongside food. Wilson is a regular contributor to the LCBO’s Food & Drink magazine. She also conducts tastings for various clients and is presently working on a line of cookbooks that focus on making great food simple and accessible. See her recipes and beer pairings in “Grilled to Perfection” (page 72).
Kelly Fajack By the age of 13 Kelly Fajack’s images were already in the pages of Surfing magazine. Since then his camera has taken him to over 50 countries shooting for such clients as Neutrogena, Fiat and Fujitsu Siemens and magazines including Time, Shape and Conde Nast Traveler. Fajack even has a photo on the back of African currency. Although he rarely has time to surf anymore, Fajack still lives by the water and currently resides with his wife Holli in Venice Beach, California. See his work in this issue in “Show Your Colours” (page 42).
Sarah Orbanic Sarah Orbanic started working behind the camera as a fitness model. Always inquisitive, Orbanic started asking questions about how to direct models and shoot. When she had her son, nine years ago, Orbanic retired from modeling and borrowed her husband’s photography equipment to shoot their son. This extended into shooting friends and their kids, and soon blossomed into a career that ranges from shooting families and lifestyle shots to fitness models and celebrities including Gossip Girl’s Michelle Tractenberg and Ryan O’Neil. See her work in this issue in “Natural Acne Solutions” (page 32) and “Should You Be Afraid of Your Sunscreen?” (page 30).
Maya Akbay Maya Akbay is the newest addition to Viva’s editorial team, serving as our Editorial Assistant. Back in her native Istanbul, Turkey, Akbay dedicated her summer hours to intern at various film production and newspaper firms. Akbay came to Toronto in 2009 to attend the University of Toronto and graduated with a Bachelor of Arts. She has worked as a copy editor and reporter for the Toronto, Scarborough and East York Observer publications. Akbay is also an avid traveller and all things beauty enthusiast. See her work in this issue is “Get the Look” (page 28) and “Eco Chic” on (page 21).
Why Do So Many Children Still Starve and Die in the 21st Century? According to UN statistics, there has been a 41 per cent drop in daily deaths of children under the age of five worldwide. That is the good news. The bad news is that 19,000 children still die every day, mostly from SubSahara Africa. Are There Any Answers? – Natural Calm Canada and the charity it founded, Organics 4 Orphans, thinks there are. Organics 4 Orphans has four goals: to teach mothers to become self-sufficient through food security, nutrition, disease prevention, and income generation. 21st century research tells us that some foods can be grown in the most challenging areas without expensive fertilizers or pesticides if people understand the principles of organic growing while increasing the ability to build immune systems up to 10 times. So not only can food be grown almost anywhere; these foods can be grown to overcome disease challenges in any area. Month-long seminars are held twice a year at the Organics 4 Orphans training center in Western Kenya, with an emphasis on growing disease-fighting food year round. BEHIND THE SCENES Our Viva summer cover shoot took place just two days before our cover girl Rachelle Lefevre was to move from southern California to North Carolina to shoot her series Under The Dome. The gathering at our West Hollywood set seemed to provide a respite before her impending hectic and long days. Animated talk ran the gamut from food and fashion to exercise and back to food. Then we moved on to trendy makeup and the latest pop tunes. Lefevre is a force to be reckoned with – a flurry of emotions and energy. “I was born with a lot of energy,”
she says. “I just finished watching all of Downton Abbey while doing my nails and organizing bottles.” With her red hair textured into place and alabaster skin given a sunny glow by our glam team, Lefevre adds: “I have a ton of energy and if I don’t focus it in some sort of controlled way I can bounce around. If I work out regularly then I can get that focus.” With no exercise on the horizon for the afternoon shoot, Lefevre seems to channel her energy into the glorious photos that reveal a woman full of vitality, momentum and strength.

Balanced living is about treating every experience like it has equal value. There’s this trend in the last decade of constant perpetual happiness being the ultimate goal in life. I’m not sure that’s healthy or realistic. There are many times in life when it gets really, really hard; it’s okay not to be a big ball of joy. I don’t think we can feel enlightened all the time. y now, we all know that we should lather up before heading out into the sun. What you may not know, however, is that for optimal protection you need to guard your skin from both UVA and UVB rays – not all sunscreens do that. UVB rays are the most superficial rays, which are responsible for giving us a sun tan (or burn) and also can contribute to aging and skin cancer. The Sun Protection Factor (SPF) on sunscreens measures only the amount of protection from these UVB rays. “If you have a sunscreen with an SPF 30 you can stay out in the sun for 30 times longer than you could without that sunscreen and not get a sunburn," says Dr. Paul Cohen, a Toronto-based dermatologist. The SPF value isn’t relevant in terms of UVA rays though.

“UVA rays penetrate deeper than UVB," says Cohen. Although they do not physically tan or burn your skin, they are the primary rays responsible for premature aging and skin cancer. "There are only four approved ingredients known to block UVA rays," says Sean Gray, a senior analyst with the Environmental Working Group (EWG). These include: zinc oxide, titanium dioxide, avobenzone and mexoryl. However, the last two ingredients are not natural, are highly unstable, and break down quickly in sunlight. The best option in terms of blocking harmful UVA rays is zinc oxide or titanium dioxide (ideally seven per cent or greater). These are natural, stable ingredients that will protect against UVA rays for at least two hours.

WHY NATURAL SUNSCREENS ARE YOUR BEST OPTION If you are opting for an unnatural sunscreen, you’re opening yourself up to the possibility of potential toxic ingredients. “There is a long list of ingredients that are potentially harmful, or even cancer causing, that we just don't know enough about,” says Dr. Rebecca Sutton, a staff scientist with the EWG. This is especially troubling when it comes to children. The surface area of a child's skin relative to their body weight is much greater than adults. Any chemical applied to their skin is about 1.4 times more significant than it would be when applied to an adult. Add that to the fact that children are less able to detoxify and excrete chemicals, they have a developing organ system that is more vulnerable to damage from chemical exposures, and children are more sensitive to low levels of hormonally active compounds and you have a potentially large problem. Of all the chemical ingredients in unnatural sunscreens oxybenzone is the most troubling. Oxybenzone has been linked with a host of problems including allergies, hormone disruption and cell damage. "Oxybenzone is a concern because it is readily absorbed by the skin and has hormone disruptive effects," says Sutton. Oxybenzone is a penetration enhancer that helps other chemicals penetrate the skin and it displays additive hormonal effects when tested with other sunscreen chemicals. Ironically, oxybenzone is particularly harmful when mixed with sunlight. The sun's rays mix with oxybenzone to form free radical chemicals that may be linked to cell damage. "We know for sure that UVA rays can cause cancer," says Sutton. We're unsure of the long-term effects of mixing oxybenzone and other ingredients. The safest and most effective sun care option is a natural, oxybenzone-free product that contains zinc oxide or titanium dioxide. VM SUMMER 2014 / VIVAMAGONLINE.COM

KEEP CLEAN, NATURALLY Skin is part of the excretory system. “You want to make sure your skin isn’t coated and blocked with oily creams that don’t allow your skin to breathe and excrete toxins,” says O’Brien. Look for a cleanser, toner and face cream that contain natural ingredients. If you are prone to acne, a product line with natural ingredients like tea tree oil, chamomile, aloe vera and lavender (such as Thursday Plantation) can keep your skin clean, cleanse pores and help get rid of black heads without creating any unnecessary build up. 32

AVOID HARSH CHEMICALS Benzoyl peroxide is an ingredient commonly found in many over the counter acne preparations. Using products with this or other harsh chemicals causes itching, stinging, redness and dryness in 79 per cent of people. A study published in the Medical Journal of Australia found that five per cent tea tree oil is just as effective in treating acne as five per cent benzoyl peroxide, but without any of the negative side effects. Using a medicated gel that contains tea tree oil is a great way to target flare-ups, while calming your skin. “Tea tree oil targets bacteria found in acne and eliminates and dries out pimples,” says O’Brien. EAT RIGHT A Norwegian study found a relationship between acne and a high intake of chocolate and chips and a low intake of vegetables. The results were especially pronounced in girls, and researchers feel that eating a low-glycemic index diet helps prevent acne. Another study in the Journal of the Academy of Nutrition and Dietetics confirmed that high glycemic index foods and dairy are linked to acne. “When it comes to fighting acne, your diet matters,” says O’Brien. It’s also important to drink lots of water to keep your skin hydrated. VM

hen your skin breaks out it’s easy to resort to drastic measures, unfortunately sometimes that can only make things worse. “Chemically-based products can be harsh on your skin,” says Shannon O’Brien, president of Abundance Naturally. According to a study in Experimental Biology, joyful laughter produces brain wave frequencies similar to those seen among people who achieve a true state of meditation. Turns out humour engages the entire brain similar to meditation. “When there is mirthful laughter, it’s as if the brain gets a workout,” says Dr. Lee Berk principal investigator of the study and associate research professor at Loma Linda University. A joyful laugh can help alleviate symptoms from a variety of chronic medical conditions. “Laughter may not only be a good medicine for the health of your body, but also a good medicine for your brain,” says Berk.
WHAT THE FREAK IS FREEKEH?
START STRENGTH TRAINING EARLY IN LIFE A new study published in Pediatrics found that early strengthening activities can lead to a decrease in cardiometabolic health risks in children and adolescents. Until recently, treatment for adolescent obesity and associated health problems has focused mostly on diet modifications and aerobic exercise. However, the new research from Baylor University found that strength-building exercises help adolescents reduce the risks of cardiometabolic diseases such as heart disease, diabetes and other health problems. In the past few years there’s been a string of healthy grains ranging from quinoa to couscous that have caught our attention. Now, freekeh plans to bump them all for the title of healthiest grain. Coming from the Arabic word “to rub,” freekeh is made by roasting young grains of durum wheat, then rubbing away the chaff. The grains are young and still green when they are harvested so they contain a maximum amount of vitamins, minerals and protein. Freekeh is also high in calcium, magnesium, zinc, potassium and iron. It contains four times the fiber of brown rice and has a low GI rating of 43. Q. HOW DO I FIND THE RIGHT PHYSICAL THERAPIST? A. There is good and bad in every profession and physical therapy (PT) is no exception. If you’re in need of a physical therapist, going online and looking at websites is a good place to start. See if your PT has a vision and/or mission statement that shares what his beliefs are. Does he/she appear to be doing ongoing training in manual therapy or advanced therapeutic exercises? Does he/she offer one-on-one physical therapy instead of group therapy? That being said, there are a lot of great physical therapists who don’t have a website. Word of mouth and referrals are also a great place to start. It’s not a great idea to go to your insurance company for a referral. Some clinics and government-sponsored physical therapy have exercised-based treatments that are relatively ineffective. If your treatment is 15 minutes or under, and your therapist doesn’t do any manual treatment, instead solely prescribing simple home exercises, you should look for another therapist.

Once you’ve decided on a clinic, your initial session should be 45 to 60 minutes in length. (After that sessions will be about 30 to 45 minutes.) In this initial appointment your physical therapist should ask you a lot of questions about your injury, mobility, history and lifestyle. It’s also your turn to ask some questions such as: What’s your belief in manual therapy and how physical therapy benefits the body? Have you taken post-graduate courses or studied extensively in manual therapy or advanced therapeutic exercise prescription? Do you practice active release techniques (ART), muscle energy techniques (MET) or myofascial release? Do you have microcurrent and/or low-level laser? Ask if the therapist is unable to help, does he have a network to refer you to. No one can help everyone. It’s a great sign if your physical therapist is part of a team and he can admit when you need help by another profession and refer you to someone who is qualified. If you don’t feel the love after the first visit, go somewhere else. You should never feel like you’re part of an assembly line or being given a textbook answer. Above all, follow your gut. WHAT IS ARTHRITIS? In medical lingo, the suffix “itis” means inflammation. Arthritis, then, means any disease that involves inflammation of the joints — the places where bones come together (such as in the knees, wrists, hands, fingers, elbows, feet and toes). Although arthritis can come at any age, it is more common as we age because the components of the joint begin to deteriorate, most notability the cartilage, and the joint area begins to dry out. Healthy cartilage is made up of 65 to 80 per cent water. A joint is like a sponge filled with synovial fluid. When pressure is applied to the joint, the fluid is squeezed out of the cartilage acting like a shock absorber. When the pressure is reduced, the fluid is pulled back into the cartilage. With wear, cartilage deteriorates reducing the smooth protective buffer between bones, causing inflammation and pain. CAN HERBAL SUPPLEMENTATION HELP? Since arthritis is a disease of inflammation, the most effective treatment is anything that fights inflammation. Here’s how to reduce your risk, naturally, or help reduce the pain if you suffer from arthritis.

GIVE YOUR JOINTS A NUTRITION BOOST If you are overweight, losing weight can be an effective strategy at helping to reduce the effects of arthritis. Being overweight puts extra stress on the joints, which escalates the risk of wear and tear. Also, body fat is not an inert substance. Fat is metabolically active, capable of producing hormones and chemicals that actually increase levels of inflammation. By losing weight — and avoiding excess calories that can cause weight gain — you’ll automatically reduce inflammation in your body. Even if you’re not overweight, changing the way you eat can have a positive effect on arthritis by reducing inflammation. If you have arthritis you should avoid saturated and trans fats. Saturated fats are found in animal products such as fatty beef or pork, poultry skin and full-fat dairy. Saturated fats are also found in palm oil and palm-kernel oil, which are often found in packaged baked goods. Trans fats were created by scientists to give baked goods a longer shelf life. Trans fats are thought to be at least as damaging as saturated fats in terms of inflammation and other health problems, and possibly more so. It’s also wise to limit simple and refined carbohydrates such as sugary foods, white-flour baked goods, white rice, bread and crackers. These foods set up a state of inflammation in the body, increasing pro-inflammatory compounds in the body. Instead focus on eating foods rich in the following nutrients:

Omega-3 Fatty Acids: The healthiest of fats for people with arthritis or other inflammatory disorders are omega-3 fatty acids. More than a dozen studies have demonstrated that omega-3 fish oils can drastically reduce symptoms of rheumatoid arthritis. Some of the best foods for omega-3 fatty acids include salmon, herring, mackerel (not king), sardines, anchovies, rainbow trout, Pacific oysters, ground flaxseeds, chia seeds, walnuts, seaweed and soybeans. Extra-Virgin Olive Oil: In addition to healthy monounsaturated fats, olive oil contains a natural compound called oleocanthal, which may help prevent arthritis-related inflammation. These compounds block the same inflammatory pathways as ibuprofen and aspirin, medications commonly used to fight arthritis pain. For the highest antioxidant content, choose “extra virgin” olive oil – the stronger the taste, the higher the amounts of oleocanthal the oil is likely to have.

Anthocyanins are found in blackberries, black currents, blueberries, eggplant, elderberries, raspberries, cherries, boysenberries, red/black/purple grapes, strawberries, plums, cranberries, rhubarb, red onions and apples. Vitamin D: Studies have shown that getting adequate amounts of vitamin D reduces the risk of both rheumatoid arthritis and osteoarthritis. Among people who already have osteoarthritis, those who have a vitamin D deficiency are more likely to develop worsening disability over time. Some of the best foods for vitamin D include wild salmon, mackerel (not king), sardines, herring, low-fat milk, soymilk, egg yolks and UV-treated mushrooms. Spices: Certain spices seem to have anti-inflammatory effects and therefore should be considered for arthritis treatment. Among the most promising are ginger and turmeric. Ginger has been shown to lessen the pain of knee osteoarthritis when taken in highly purified, standardized supplement form. Scientific studies have shown that turmeric may help arthritis by suppressing inflammatory body chemicals. VM

The best antioxidants in terms of arthritis relief and prevention are vitamin C, beta-carotene, beta-cryptoxanthin, quercetin and anthocyanins. Vitamin C is found in guava, bell peppers, oranges, grapefruits, strawberries, pineapples, kohlrabi, papayas, lemons, broccoli, kale, potatoes and Brussels sprouts. Beta-carotene is found in sweet potatoes, carrots, kale, butternut

t’s hard to find time to squeeze exercise into our busy lives – and it shows in our country’s fitness statistics. The average woman is 12 pounds heavier today than she was 20 years ago. In an attempt to get people moving and make exercise more attainable, The Canadian Society of Exercise Physiology has reduced the recommended aerobic guidelines for good health to just two-and-a-half hours of moderate-intensity cardio a week (a brisk walk qualifies). If you engage in more vigorous activities like running or kickboxing, you only need 75 minutes of weekly exercise. Still, just 15 per cent of Canadian adults meet these requirements. It’s time to stop making excuses and start moving. Viva has unveiled the top 12 reasons for not working out and talked to the experts to find a solution. Find out which excuse is keeping you from getting fit; then make a commitment to do something about it. Now is the time to stop making excuses and finally get fit!

EXCUSE: “I DON’T HAVE TIME.” “Time is the number one excuse for not working out,” says Jacqueline Walters, Sales and Marketing Manager at gymlife and four-time Canadian national kickboxing champion. Between work, family, volunteering and social commitments there is very little “me time” left in a day. “Women have a tendency to put everyone else ahead of themselves,” says Maureen Hagan, vice-president of operations for GoodLife Fitness. Even if you feel your life is highly efficient, chances are there’s somewhere you’re wasting a little time. Look at what you do in a week and highlight things that aren’t productive. You might be surprised to see how much time you actually waste. Screen time is one of the biggest time wasters. The average Canadian watches 88 hours of television a month and spends 43.5 hours on the Internet. In fact, Canadians spend more time online than anyone on earth. Ironically women spend more time reading about health than any other topic. If we could set aside a few hours to do exercise instead of learning about it, we’d be much healthier. Once you’ve found a little space, schedule your activity like you would schedule a business meeting or activities for your children. “Your health is just as important as the health of your child,” says Stephanie Joanne, owner of Stephanie Joanne Living. Block off your workouts and tell yourself attendance is not optional.

sure you’re using proper technique. Plus, it makes you accountable. You’ll be less likely to slack off if you have a meeting with your trainer in a few weeks. EXCUSE: “I DON’T KNOW WHERE TO START.” If your last memory of fitness is grade 10 gym class–yours, not your daughter’s–starting a formalized exercise program can be intimidating. “Step one is committing to something,” says Joanne. Find a convenient gym that makes you feel welcome and comfortable. Sign up for any free services that are available. Most gyms offer free fitness assessments and introductory personal training sessions to new members. Don’t be afraid to ask how things work and get instruction—you’re not the only newbie there. If you don’t want to join a gym, ask a fit friend to help you get started. It can be as simple as going for a power walk together or as much fun as joining a dance class. Fitness doesn’t have to be formalized.

EXCUSE: “IT’S TOO EXPENSIVE.” The easiest way to workout on the cheap is to get outside. Walking and running are two of the best ways to exercise and they’re basically free (aside from a good pair of shoes). To strength train, buy a couple of hand weights and a DVD or fitness app and do strength training at home or in the park. If working out in a group situation is important, it may be easier to find the funds than you thought. “Ask yourself: ‘Where am I spending my money?” says Walters. So many women think nothing of buying a five-dollar coffee every day, but cringe at the thought of spending money on a gym membership. You may even be able to get a membership for free–or at least a reduced price. Many companies and benefit plans pay at least some money toward a fitness membership. “The cost of being ill and unproductive is much greater than the cost of getting fit,” says Hagan. A personal trainer may seem out of reach, but there are ways to reduce the cost there too. “Hire an online coach,” says Joanne. For about a hundred dollars you can get a personalized program and/or meal-plan. Then, book mini sessions to help motivate you along the way. Or, plan one session with a personal trainer every month or two. It’s a great way to get new ideas and make
EXCUSE: “I DON’T LIKE EXERCISE.” “Find something you like,” says Walters. Exercise has to be fun or you won’t stick with it. Not everyone is made to run on the treadmill and lift weights. Think out of the box. “Ask yourself what you hate,” says Joanne. Then avoid it. “Change the way you think about moving your body.” Play street hockey with your child, join a belly dance class or do yoga in a unique location. (The Art Gallery of Ontario even offers classes.) “Not moving is not an option so make an effort to find an activity you’ll enjoy,” says Joanne. EXCUSE: “I’M TOO TIRED.” “Suck it up,” says Walters. Working out gives you more energy. “You’ll feel better after a workout, I promise.” If you find your energy is always low, look at the way you eat. “Diet makes such a big difference when it comes to energy,” says Walters. If you eat too much sugar and starchy carbs it will zap you. You’ll be amazed the difference a few days of healthy eating will make. Plan your workouts for when is your energy is at its highest. “For people who say they are always tired, first thing in morning is the best time to workout,” says Joanne. It might be a little tough getting out of bed but you need to commit to it. On mornings when you’re especially exhausted, tell yourself you only need to do 20 minutes. If you’re still tired after 20 minutes, give yourself permission to stop–at least you’ve done something. Get Fit? EXCUSE: “I’M NOT ATHLETIC.” “If you know how to walk and climb a flight of stairs you can get fit,” says Hagan. Being fit and healthy doesn’t require athleticism. There are a lot of average people at the gym. “We focus on the people who are intimidating to us,” says Walters. Start with the basics. Join a walking goup or an aquafit class. As your fitness level increases, so will your confidence. Soon you’ll be eager to try new things.
tinence increase with each pregnancy and risks are higher for pregnancies over age 36. “A lot of women say, ‘I only leak when I run or jump,’” says Vopni. “Even though it’s common, it’s not normal.” Switch to low-impact activities until you’ve addressed the problem. Incontinence happens because of weak pelvic-floor muscles. “If you add pounding you can make the problem worse,” says Vopni. The pelvic floor muscles hold your internal organs in place. Leaking can be an early sign of pelvic organ prolapse–where the uterus, bladder and rectum start to drop. “In extreme cases they can start to descend out the vagina,” says Vopni. Visit a pelvic physiotherapist to learn how to do kegel exercises properly and to get a list of restorative exercises to rebuild pelvic floor strength. Pfilates–pelvic floor Pilates–is also a great option. To find out more about your specific problem, try an Epi-No biofeedback device. It can give you detailed information about the condition of your pelvic floor so you can target your strength building accordingly.
START WITH THE BASICS. AS YOUR FITNESS LEVEL INCREASES, SO WILL YOUR CONFIDENCE.
EXCUSE: “I’M TOO ATHLETIC.” It’s hard to believe that once high caliber athletes–even Olympians–could be destined for life as a couch potato, however that’s often what happens. “Sometimes athletes are burnt out and they just need a break,” says Walters. Others are into sport for the competition. Once they’ve lost site of the prize, their motivation disappears. “Find a different sport,” says Walters. Trying a new activity can be very humbling. “I signed up for a tap lesson,” recalls Walters. “It kicked my butt because it required my body to move so differently.” “I always like to look for a way to bring out the athlete in someone who is naturally competitive,” says Joanne. Sign up for a marathon or a triathlon. Turn exercise into a series of mini competitions. EXCUSE: “I’M NOT COMFORTABLE WORKING OUT IN PUBLIC.” If you don’t like working out in front of men, women’s only clubs are the perfect solution. “There’s a special camaraderie in women’s only clubs that I’ve never seen in a co-ed facility,” says Hagan. Women look out for each other and create an ambiance of security and comfort. If you’d rather go at it alone, buy a fitness video, download a workout app or do research online and turn your home into a makeshift gym. If you’re a beginner, invite a personal trainer or an experienced friend to your home to make sure you’re off to the right start. EXCUSE: “I PEE EVERY TIME I WORKOUT.” Incontinence is more common that you may think. Experts estimate as many as 70 percent of women have some type of incontinence problem. Why? The shape of a women’s pelvic outlet puts females at a higher risk than a man. And then there’s childbirth. “There’s nothing to say that having a child will cause incontinence,” says Kim Vopni, a postpartum doula and owner of Epi-No, a company that helps restore pelvic floor health. It definitely increases the risk though. Vaginal births put you at a higher risk than C-sections, as do tearing and episiotomies. Chances of incon56
EXCUSE: “I DON’T LIKE GETTING SWEATY.” It’s a great hair day and you don’t want to ruin your blowout with a workout. Instead of skipping the gym, opt for a light weight workout, yoga or Pilates. Save your more vigorous cardio workout for a time when you need a shower anyway. “Plan your workout around your situation,” says Joanne. If you train on your lunch hour keep the intensity lower. Save your vigorous cardio for the weekend. “You don’t have to get profusely sweaty and messy every time you workout,” says Hagan. Just do something. EXCUSE: “I DON’T KNOW WHAT TO DO WITH MY KIDS WHEN I WORK OUT.” If your gym doesn’t have a daycare, be creative and incorporate older kids into your workout. Run alongside your child while he bikes or do mini races around a track. EXCUSE: “I’VE STOPPED SEEING RESULTS AND I’M DISCOURAGED.” If you’ve stopped seeing results it’s time to ask for assistance. “Even though I’m a fitness professional I’ve hired trainers over the years,” says Walters. Just a few sessions with a personal trainer can arm you with new ideas and give your body the change it needs. THE SIMPLE LIFE ACTOR DENISE RICHARDS PROVES THAT NO MATTER HOW STRESSFUL LIFE CAN BECOME THERE’S ALWAYS A WAY TO BRING THINGS BACK DOWN AND FIND BALANCE AMIDST THE CHAOS BY BONNIE SIEGLER
enise Richards is no stranger to stress. First, she was married to Charlie Sheen. Then, she went through a highly publicized divorce (that never seems to stop getting publicity) and now she’s raising their two daughters Sam and Lola alone – and has also adopted a third daughter Eloise. In addition to taking on the role of super mom, Richards has recently amped up her career with a starring role in the ABC family series Twisted. As if this workload and having her life constantly dissected by TMZ wasn’t enough, Richards was recently forced to deal with losing her mother to kidney cancer. How does she find balance amidst the chaos? “When I am going through the tough times, I know that there’s a reason behind it,” says the 43-year-old actor. “I know it will pass eventually and it makes me stronger and makes me appreciate life more. My mother was never negative. She taught me to focus on the positive and stay hopeful, which provides you with an inner strength.” PUTTING HER BODY FIRST Richards is a longtime fan of good health, regular exercise and is aware of the negative impact stress can have on your body. Pilates is a great way to tone her body and relieve stress, as is playing outdoors with her kids. Richards is also a devotee of acupuncture and chiropractor adjustments, due to a previous back injury, and she gets regular deep massages. “I recently started doing cupping,” she says of the ancient Chinese practice of using glass cups to create localized pressure by vacuum, causing the blood to form in the area and promote healing and the release of toxins. “I honestly do feel better after having it done. It releases a lot of tightness,” says Richards. A STRESS-REDUCING DIET “Ever since I was young, I’ve always had a very clean lifestyle and good, healthy eating habits,” says Richards. I also believe in moderation though. My downfall is ice cream – which I love summer or winter.” Healthy snacking is an important component of good eating for the whole family. “I pretty much eat all day long. I always have cut up vegetables, cut up fruit, Greek yogurt and I’m big on pretzel rods. Everyone makes fun of me because I always have a bag of pretzels in my purse,” she laughs. ple. When you eat healthy it helps you manage stress and take everything in stride. In her sunny Malibu, California kitchen there are big bowls of fresh fruit on the counter, while heirloom tomatoes, almond milk, fresh juices, blue chips and cereals are always on hand. “I don’t want to be too restrictive, however I try to cut down on overly processed foods; ones with a lot of chemicals. My main diet has a lot of organic fruits and vegetables, grains, lentils, couscous and quinoa. In winter, I make a lot of homemade soups and in the summer I make a lot of different salads where I’ll add grapefruit and pine nuts with balsamic vinegar.” When it comes to relaxing drinks, Richards opts for a cup of green tea. Not only does it help her chill out but, ironically, it also gives her an energy boost. “I like to sip on my tea and just relax,” says Richards. I found when I used to have an afternoon coffee, after the initial jolt I would feel even more tired.” STRESS-FREE LIVING Getting together with friends is a key ingredient in managing the stressors in Richards’ life. “I mostly hang out with friends who are also moms,” says Richards. “We’ll do a dinner out or a day of massage and tea and just talk. Having that time when you can turn your brain off is very relaxing. It’s a good way to decompress your mind.” Richards also opts for “Stress-Free Sundays” when she turns off the outside world by not answering phones and emails. “Texting, phones, and computers can be such distractions,” says Richards. “People know it’s just me and the family on Sundays.” VM

RACHELLE’S VEGAN CHOCOLATE PUDDING SERVES: 4 TO 6
INGREDIENTS:
• 2 soft avocados (peeled and pitted) • 1 sweet potato (peeled, cooked and mashed) • 6 pitted honey dates (soak in hot water to soften before use) • 1⁄2 cup almond milk • 1⁄2 cup + 2 tbsp unsweetened cocoa powder • 1⁄3 cup pure maple syrup • 2 1⁄2 tbsp melted coconut oil • 2 tsp vanilla extract • 1⁄4 tsp hot sauce • Dash of cinnamon DIRECTIONS:
1. Prep all ingredients then toss in a food processor or blender and purée. Use more or less almond milk depending on desired thickness. 2. Refrigerate for at least one hour then serve chilled.
In fact one of the main outlets for happiness in her life is food. “I love to eat,” says Lefevre. “I mean I’ll never be a size zero; that just sounds too miserable. Food makes me extraordinarily happy. Chocolate is my number one food pleasure.” Crusty French bread topped with salted butter comes in a close second, while mint chip ice cream rounds out her top three. “I can’t buy that ice cream. One time I bought a huge tub of it and within two days it was gone!” BALANCED EATING Although she tries to eat organic much of the time, Lefevre is the first to admit she’ll delve into a pepperoni and cheese pizza when on set. “I’m a hypocrite and a walking contradiction,” she 68

says. “I will eat just about anything, but as it regards my own moral compass I won’t buy or cook with meat that isn’t ethically raised and organic.” She also prefers locally sourced products, and shuns most dairy because it makes her feel sluggish and bloated. “However I will endure digestive problems for ice cream, chocolate and cheese,” she says. Nutritional staples in her diet include: coconut creamer for her must-have organic, fair trade coffee, bananas for energy, and avocadoes for good fat. “I buy in bulk to cut down on packaging so I have mason jars full of nuts and organic dried fruit sitting next to jars filled with chocolate bars. Maybe that’s how I live a balanced life.”

KEEPING GROUNDED Books of poetry and crossword puzzles line the bookshelves and nightstands on both coasts. “I’m a nerd, what can I say?” Poetry and puzzles help the busy actor relax and rejuvenate her mind, body and soul. “I’m very much a city girl, but I love nature too,” says Lefevre. “I have a fantasy that I could go live out on a ranch or in a cabin in the woods, but if I’m really honest with myself I’d probably go mad.” Instead, a 45-minute drive outside the city limits helps bring her down a few notches, especially if her dog Jack rides along. “We’ll go somewhere quiet and take a long walk. It really does make a difference.”
Lefevre says being a spiritual person has helped in grounding her temperament and individuality. With a Jewish psychologist mother, English teacher father and rabbi for a stepfather, Lefevre says she was brought up in a thinking household, not necessarily a spiritual one. “I was always encouraged to ask questions and to be specific about expressing who I am. The spirituality just kind of happened. GRILLED FLANK STEAK WITH LIME MAYONNAISE SERVES: 6
INGREDIENTS: FOR STEAK:
• 1 1⁄2 lb flank steak • 2 tsp smoked paprika • 2 tsp ground cumin • 2 tbsp jalapeño pepper, seeded and finely diced • 2 cloves garlic, finely chopped • 1 tbsp lime juice • 1 tbsp olive oil FOR LIME MAYONNAISE:
• 2 tsp lime juice • 1 tsp lime zest, finely grated • 1⁄3 cup mayonnaise • 1⁄2 tsp Worcestershire sauce 72

DIRECTIONS:
1. Using a fork, pierce the steak repeatedly to allow marinade to penetrate. 2. In a large plastic freezer bag mix together the smoked paprika, cumin, jalapeño pepper, garlic, lime juice and oil. Add steak to bag, coat and seal. Let marinate at least three hours, up to 12. 3. Stir together all ingredients for lime mayonnaise; set aside until ready to serve. 4. Heat an oiled grill to medium-high; remove steaks from marinade and season generously with salt. 5. Sear steaks about five to eight minutes on each side for medium-rare, time will vary depending on thickness of meat. Remove from grill, cover and let rest for five minutes. Slice meat about half an inch thick, slicing across the grain. Serve each portion with a dollop of lime mayonnaise.

INGREDIENTS:
• 1 lb large, raw shrimp, peeled with or without tails • 1 tbsp fresh red chili pepper, seeded and finely chopped • 1 tbsp garlic, finely chopped • 2 tbsp fresh lemongrass, white part only, very finely chopped • 2 tbsp fresh cilantro, finely chopped • 1 tbsp vegetable oil • 1⁄4 tsp salt • 1⁄2 cup Thai chili sauce for dipping DIRECTIONS:

1. In a large bowl stir together chili pepper, garlic, lemongrass, cilantro, vegetable oil and salt. Add shrimp, toss to coat and refrigerate for one hour. 2. Heat grill to medium-high. Carefully place shrimp on grill and cook for one minute. Flip shrimp over and cook on second side until cooked through and no longer pink inside, about one minute longer. Remove from heat and serve with Thai chili sauce for dipping. TIP: Avoid shrimp falling through the grill by using a barbecue basket. Recipe can be easily doubled.
STILTON-STUFFED BURGER WITH CARAMELIZED ONIONS SERVES: 6
INGREDIENTS:
DIRECTIONS:
• 2 lb good quality lean or medium ground beef • 2 tsp fresh thyme, finely chopped • 1 tbsp Worchestshire sauce • 1⁄2 tsp salt • 1⁄2 tsp freshly ground black pepper • 3 oz Stilton cheese, cubed into six equal pieces
1. In a large bowl mix together beef, thyme, Worcestershire sauce, salt and pepper. Once ingredients are combined, form mixture into six equal patties about one-and-a-half inches thick. Don’t pack too tightly or burgers will become dense and heavy. Place a cube of Stilton in the middle of each patty, pushing it into the meat and making sure it is fully enclosed. Reform the patty if necessary. 2. Heat an oiled grill to medium-high, place patties on the grill and cook for five to seven minutes on each side, or until desired doneness. 3. While burgers are finishing warm brioche buns on cooler part of the grill. 4. Serve burgers topped with mayonnaise, grainy Dijon mustard, caramelized onions and lettuce.

• 4 chicken breasts, skinless and boneless • 1 tsp olive oil FOR SALSA VERDE:
• 1 tsp anchovy paste • 1 garlic clove • 3⁄4 cup fresh parsley • 1⁄4 cup fresh basil • 1⁄4 cup fresh cilantro • 1 tbsp lemon juice • 2 tbsp red wine vinegar • 1⁄2 cup olive oil • 1 tbsp capers, drained DIRECTIONS:
1. In a blender purée all of the salsa verde ingredients together until smooth, set aside. 2. Heat an oiled grill to medium-high. Brush chicken breasts with olive oil and season generously with salt and pepper. 3. However, if there’s one guilty pleasure, it’s an adult beverage to cap off a hard week at work. What is your number one comfort food? Hot and sour soup – as soon as I get sick, it’s the only thing I want. What is your biggest food challenge? Eating enough greens while on the road. It can be tricky to find fresh fruits and vegetables when shooting in remote locations. What keeps you eating a balanced diet? Food is fuel. If I want my body to work long hours I have make sure it has the nutrients to keep my energy up. What must you always have in your fridge? Fresh veggies. If they’re locally sourced and organic, all the better. My top three are avocado, spinach and tomatoes. What are some of your go-to meals? I eat a lot of sushi, homemade soups and omelettes. Strangest food you’ve tried? If you ask my partner Bill, most of the food I eat is “strange” by his standards! What’s your favourite food to eat in the summer? I’m all about green smoothies to kick off my day. What is your favourite meal to make for guests in your home? Bill and I make a very tasty branzino, baked in a salt crust that is incredibly moist and a surefire crowd pleaser.

I just got back from an assignment in the Rockies where we bombed avalanches. A month before I spent 10 days chronicling and investigating the lives of an ultra-orthodox Jewish sect in Ontario, and earlier in the year I was investigating the murder of a Canadian man in Puerto Rico. There’s never a dull moment! What’s next for you? Hopefully a little down time with the family and some creative nurturing as we look ahead to season seven on 16x9 and a new roster of blockbuster stories.

FROM KENTUCKY TO STARDOM Born and raised in Lexington, Kentucky, Bundy made her stage debut at the tender age of nine in a regional theater. The Southern Belle soon moved to New York and took on the role of Tina Denmark in the Off Broadway musical Ruthless! in which she received a 1993 nomination from the Drama Desk for Outstanding Actress in a musical. This led to her 2002 Broadway debut in Hairspray in the role of Amber Von Tussle, and the lead role of Elle Woods in Broadway’s Legally Blonde The Musical in which Bundy received her first Tony Award nomination. Outside of New York City, Bundy has guest starred on various television series, had roles in movies including Dreamgirls and Jumanji, and reprised the role of Elle Woods in the national tour of the musical and the TV movie. Along the way, she began a country music career that has brought her international acclaim. Now making homes in both Los Angeles and Nashville, Bundy co-stars alongside Charlie Sheen as his therapist in Anger Management. ACHIEVING BALANCED HEALTH A common health issue almost sidelined Bundy’s career before it even started. Twelve years ago Bundy was diagnosed with celiac disease. “It was actually me who told my doctors to test me for celiac disease,” she recalls. “I was swollen all the time; I was having joint pain and I was bloated. I was also allergic to wheat so I had two things going on at the same time. Digestively, everything was creating an irritable bowel situation.” Add in acid reflux, water retention, and inflamed joints, and the overall combination was creating constant physical challenges for Bundy who was starring on Guiding Light at the time. The producers were pressuring Bundy about her weight gain. “They had worked me 84
VIVAMAGONLINE.COM / SUMMER 2014
into such a frenzy that I was exercising two-and-a-half hours every day,” recalls Bundy. “I was still putting on the pounds!” Bundy says that finding out she had celiac disease saved her. “Cutting out all the forbidden foods made me feel better, look better, and my skin was better,” says Bundy. “I lost 10 pounds in the first week.” Forbidden foods for someone with celiac disease include anything with gluten. Celiac disease is a digestive and autoimmune disorder where the body cannot process gluten proteins found in some grains. When gluten is eaten, it damages the lining of the small intestine, making it hard for the body to absorb certain nutrients. Because gluten is so common – especially in restaurant foods – Bundy is a brown bagger when she’s on set or tour. “I’m totally low maintenance and not a diva, but when I have to ask catering to wash off the grill first before making me a grilled chicken breast they think I’m a lot of work,” says Bundy. The biggest issue on set is that the first thing that swells up for Bundy is her face. “If I’m on screen and I’ve eaten gluten I get a blowfish face. Bringing food from home is a lot easier,” she says. THE SIMPLE LIFE Making life easier is what Bundy strives for on a daily basis. Her motivation is not to be famous; it’s to have pleasure and live a balanced life. “Have fun and laugh – that’s what I try to do all the time,” says the 33-year-old. “As a culture there’s an element of guilt put on us for having fun. We feel like we have to justify it.” For the last few years, Bundy has focused on what gives her energy and what makes her feel joyful. “I love performing and acting,” she says. “I also have to have time to spend with my friends and go on vacations. I have to have balance in my life. If I know that the input of energy and output is equal and if I’m not exhausted on a regular basis, I have achieved balanced living. Being silly, being adventurous, driven and passionate – that’s a good balance.” VM

CHARLOTTE, NORTH CAROLINA HAS ALL OF THE ATTRACTIONS OF A BIG CITY, PLUS A BIG DOSE OF HISTORY AND SOUTHERN CHARM

t has been said Charlotte has as much use for high rises as a hog has for a morning coat. Still, that hasn’t stopped the southern city from blossoming into a financial mecca in its own right. With two trillion in assets, Charlotte, North Carolina is America’s number two financial center, second only to New York City. Along with its growing commerce, Charlotte has added plenty of attractions for tourists. In the past decade, Charlotte has added countless world-class museums and restaurants. The
Mint Museum doubled its size in 2010 adding many galleries to its downtown skyscraper while The NASCAR Hall of Fame is a mecca for racing fans. Bechtler Museum of Modern Art boasts masterpieces from art icons ranging from Pablo Picasso to Joan Miro. It’s a city worth exploring, provided you have the right base to start from. HERE’S A LOOK AT TWO OF OUR FAVOURITE HOTELS:
THE DUNHILL HOTEL Nestled in uptown Charlotte (or what we outsiders might call downtown) is the historic Dunhill Hotel, originally named the Mayfair Manor. Designed by Charlotte architect Louis Asbury Sr. in 1929 to accommodate both transient guests and permanent residents, the building has changed ownership several times over its 85 years. “It’s kept the charm and sophistication that has always enchanted its guests,” says John Beatty, General Manager of the Dunhill. Indeed it has. The moment I entered its grand historic lobby, I was greeted with Southern hospitality from the staff. It was almost as if time stood still for this Grande Dame of Charlotte. “The most notable structural change is that the rooms have gotten bigger,” says Beatty. “What was originally a 100-room hotel is now 60 rooms.” Building a reputation as one of Charlotte’s most luxurious uptown hotels, the Dunhill has held a unique place in the city as one of its longest standing structures. It has received guests including Sir Paul McCartney, Jackson Browne and Bonnie Raitt. “Our location is prime, sitting at the heart of both the business and cultural centers,” notes Beatty. Not only is the Dunhill famous with the famous; but its restaurant The Asbury, has won critical acclaim over the years. “We use traditional southern ingredients and present them in new ways,” says Beatty of Chef Coleman’s signature dishes.
