WOES & WORRIES Working as a health writer and editor has made me a hypochondriac of sorts. There’s only so many times you can research the signs of cancer, allergy triggers and memory loss before every spot, sniffle and loss for words makes you turn to Dr. Google in a state of panic. Luckily, over the years, I’ve learned to tone down my nonsensical fears and focus more on the things I can do to actually make a difference in the health of my family and myself. One of the main things I keep coming back to time and again is inflammation. While inflammation starts out as your body’s way of trying to protect itself, longterm or chronic inflammation seems to be at the root of everything from asthma and arthritis to heart disease and cancer. Chronic inflammation happens when your body’s inflammatory response fails to heal the ailment that it was originally set out to. Instead, your inflammatory system starts to attack healthy tissues and, over time, can lead to disease and illness. Inflammation tends to persist when you’re under undo stress and have poor sleep. The risk of inflammation is also much higher if you eat poorly and/or are overweight. In addition to taking regular yoga classes and trying to get some shuteye, I’ve turned to omega-3 fatty acid supplements as a way to decrease my chances of suffering from chronic inflammation. According to research published in Brain, Behavior and Immunity, regular intake of omega-3 fatty acids helps to reduce chronic inflammation and reduce stress levels. Students in the study saw a 20 per cent reduction in anxiety levels when they took an omega-3 supplement. Plus, keeping your omega-3 and omega-6 fatty acids in check (we tend to have more of the latter in our diets) is one of the best ways to prevent your body from going into a chronic state of inflammation. To learn other ways you can reduce inflammation naturally, turn to “Breaking It Down” (page 48) and take smart steps to get in control of your health, rather than sweating the small stuff.

“Balanced Living is getting the right amount of sleep and having a schedule for myself. Sleep is so important for me. My mother says I’ve craved sleep since I was a child. If I have a clear-cut daily schedule, I thrive beautifully. When I don’t, which is obviously a lot of my life living in Los Angeles and being an actor, it’s a little rough. I sometimes have a 5:00 a.m. call time. It’s hard to get enough sleep when you’re waking up two hours before dawn. However, whenever possible I try to keep a balanced schedule and go to sleep at a certain time, get up at a certain time, eat breakfast at the same time – these are the things that bring me balance. You look at kids who are on a schedule and how great it is for them. I’m basically a big kid. It takes discipline to stick with a schedule – and that’s not exactly my strength – but I know that ultimately it will bring more balance to my life.” 18

This process is called sloughing (pronounced “slaw-ffing”) and means that the top layer of skin cells, called the epidermis, is completely replaced with new cells every 27 days. ROLL OUT THE YOGA MAT TO OVERCOME CHRONIC PAIN According to a study conducted by the American Pain Society, practicing yoga may help to prevent — and even reverse — the mental effects of chronic pain. Chronic pain reduces the levels of gray matter in your brain, which directly affects your ability to modulate pain levels. This study found a causative link between yoga and gray matter increases, which suggests that practicing yoga may actually counteract the neurological effects of chronic pain. For those who suffer from this ailment, this information could bring a new level of importance and necessity to doing the downward dog.
CANADA’S RISING CANCER RATES According to this year’s Canadian Cancer Statistics report, the number of new cancer cases found in Canada will rise at least 40 per cent in the next 15 years. This means that in 2030, 277,000 Canadians will be diagnosed with cancer as compared to the 200,000 that were diagnosed this year. “Such a dramatic rise in the number of cancer cases will have major repercussions in our healthcare system,” says Suzanne Dubois, executive director of the Quebec division of the Canadian Cancer Society. “The government must prioritize the fight against cancer in the coming years … we must be prepared.” However, it is very important to note that despite the predicted rise in the sheer number of cancer cases, the risk of getting cancer will not change significantly by 2030. The foreseen surge in cancer cases will occur mostly due to the growing and aging of Canada’s population; in 15 years, the national population will increase by six million people, with the 65-plus age group rising greatly as well. This is the first time that the annual Canadian Cancer Statistics report is presenting long-term predictions on the future burden of cancer. “[This report] shows how important it is to emphasize healthy living and policies that protect public health if we want to reduce the number of people with cancer in the long run,” says André Beaulieu, spokesperson for the Canadian Cancer Society. “Over the next 15 years, we’re surely going to improve our methods to identify people at risk, detect cancer earlier and treat the disease with greater precision,” Beaulieu continues. “This will certainly lead to a better diagnosis for people living with cancer.”

WHY WE NEED ACUTE INFLAMMATION Acute inflammation is the body’s initial response to a pathogen or injury. The pain, swelling, redness and radiating sense of warmth that is felt at the site of an injury or illness is an essential part of our survival and helps us heal. This short-term inflammatory response lasts a few minutes to a few days. At first you may feel pain or discomfort; then your blood vessels will widen and increase blood flow to the injury site. This creates warmth, and may turn the area red. There may be swelling, decreased mobility and increased pain sensitivity. This is intended to discourage use of the injured tissue. All of these functions are necessary in order for proper healing to take place. 48
WHEN INFLAMMATION BECOMES CHRONIC When inflammation becomes chronic and systemic problems can arise. A key component of inflammation is to break down tissue in order to target damaged tissue and invading pathogens prior to building the good tissue back up. However, when inflammation chronically breaks down tissue it can damage the body. Situations that can perpetuate chronic inflammation include: › INFLAMMATORY DIETS: High amounts of sugar, processed carbohydrates, saturated and trans fats; a low intake of fruits and vegetables. › LOW OMEGA-3 INTAKE: Omega-3 fats are a crucial part in an anti-inflammatory response. Low omega-3 levels result in insufficient production of anti-inflammatory eicosanoids and a decreased anti-inflammatory response. › HIGH OMEGA-6 INTAKE: Omega-6 fats are an integral part of the inflammatory response. High omega-6 intake (especially when combined with poor omega-3 intake) means excessive production of inflammatory eicosanoids and an increased inflammatory response

Choose wild fatty fish, walnuts and freshly ground flaxseed. They are good sources of omega–3’s which can decrease inflammation. Avoid trans fats such as hydrogenated oils, added sugars and
refined carbohydrates. Also steer clear of any known allergens that you may have and be aware of any food sensitivities. Antiinflammatory supplements can also help. They increase the body’s production of anti-inflammatory eicosanoids as well as resolvins, which are anti-inflammatory as well. Lastly, it’s important to make the necessary lifestyle recommendations. WHY THE INCREASE IN FERTILITY ISSUES? Here are are some simple things you can start to consider if you are looking to optimize your fertility. Turn Back the Hands of Time Increasing numbers of women are waiting to start a family, and research has found that it is more difficult to conceive over the age of 35. A 2012 study published in Human Reproduction estimated infertility rates as high as 28 percent in women ages 35 to 44 who haven’t yet had a child. huge diet trend is to reduce the sugar in our diets. High sugar intake has been associated with obesity, diabetes, heart disease and tooth decay. According to the Canadian Sugar Institute, Canadians consume approximately 110 grams of sugar a day – well above the 25 daily grams recommended by the American Heart Association. In an attempt to decrease our sugar intake, people turn to artificial sweeteners. According to a recent report by Mintel and Leatherhead Food Research, the market for sugar substitutes is on the rise. By 2017, global market value is expected to be US$1.4 billion, a rise of 9.7 per cent over 2013. Are these artificial sweeteners really a healthy substitute for sugar though? Consumers want good taste along with good health. This philosophy is changing the way people view sweeteners. Not only are people reluctant to use sugar; they are wary of many artificial sweeteners such as aspartame and sucralose, which may have negative health implications. Increasingly, people are looking to natural, plant-derived alternatives such as honey, molasses, agave and maple syrup. However, while these options have some health benefits over sugar, they are still high in calories. It seems the best route may be natural, reduced-calorie sweeteners. Here are four that have received a lot of recent attention:

1 STEVIA is a low-calorie natural sweetener made from the leaves
of the Stevia rebaudiana plant. Stevia contains a number of compounds called glycosides that contribute to its sweet taste. The glycoside most commonly utilized from stevia is rebaudoside A (Reb A), however others are being studied. Each of the glycosides has a specific profile that may contribute a differing degree of sweetness or taste profile. Stevia is 300 times as sweet as sugar so a little goes a very long way, making it extremely low in calories. Studies have demonstrated that stevia may help regulate blood sugar by increasing glucose tolerance and inhibiting glucose absorption. 2 MONK FRUIT, also known as luo han
guo, is cultivated in regions of China and Thailand. Monk fruit looks like a melon, but it is in the gourd family. It contains a compound called magroside that can be 200 to 500 times sweeter than sugar. Monk fruit sweeteners offer great taste and are natural, zero-calorie, high-intensity sweeteners. There are a number of traditional health benefits associated with the consumption of monk fruit including overall well-being and longevity. Awareness of monk fruit is low; however it is growing. Products containing monk fruit are now starting to hit store shelves.

3 DATE SUGAR is made from dried dates, which are naturally
very sweet. Though dates are high in calories, they are also virtually fat-free, while containing both fibre and protein. Date sugar can be used as a healthy alternative to brown sugar. However, using date sugar has its limitations. It will not dissolve in liquid, so it should not be used to add sweetness to drinks. Also, it does not melt in the way granulated sugar does, so care should be taken when consumers choose to substitute date sugar for granulated.

4 XYLITOL is a non-fermentable sugar alcohol that is found in low concentrations in the fibres of many fruits and vegetables. This sweetener is often used in chewing gum and lozenges to add sweetness while keeping the product in the low-calorie range. Studies have shown that xylitol has a beneficial effect on dental health while containing 33 per cent fewer calories than sucrose, yet offering a comparable sweetness. It also does not affect insulin levels of people that suffer from diabetes. Xylitol is found to have little to no side effects in human consumption compared to other sweetener alternatives. VM
The average 20-something woman drinks almost two cans of diet soda a day. Sure, it’s not the healthiest beverage choice, but women do it in an attempt to get their caffeine fix and great taste without the added calories. However, research has found that drinking artificially sweetened drinks can actually make you gain weight. A study of almost 4,000 participants from the University of Texas Health Science Center in San Antonio, Texas found that normal-weight women who drank just one artificially sweetened drink a day were 65 percent more likely to be overweight in seven years when compared with women who drank a can of regular soda. This number increased with each can of diet soda consumed. How can a one-calorie drink result in a higher potential for weight gain than a 160-calorie fizzy soda? “We’re not sure, but there are a few theories,” says Dr. Sharon Fowler, a head researcher on the study. Artificial sweeteners can increase appetite. “Some people have a chronic feeling of hunger when they consume diet soft drinks,” says Fowler. “When they switch to regularly-sweetened beverages it goes away.” Other studies have found that the sweet taste prepares the body for calories. When none appear, a hunger signal is generated. “The sweet taste triggers a desire for calories,” says Fowler. Another possible link is psychological. It’s natural to feel you can eat more because you’re saving calories in what you drink. “When people are told they’re consuming artificial sweeteners, there is a substantial increase in the total number of calories they eat,” says Fowler. “People overshoot and think they’re saving more calories than they are.” If you compensate for your diet soda with a larger dinner, eventually you’ll gain weight. However there is another more controversial reason for artificial sweeteners leading to weight gain. Aspartame and sucralose have been proven effective at weight-loss in many short-term studies. However, a 10-week Danish study found that two-thirds of the weight lost by using artificial sweeteners is lean body mass. When used for long periods of time, this muscle loss will decrease metabolism, making it easier for the body to hold onto extra pounds. Whatever the reasons, it seems clear that artificial sweeteners can have the opposite of their desired weight-loss effect – and this doesn’t just hold true for soda pop. Coffee, tea and even breakfast cereal were tested with similar results. aybe it was her early fight to survive when she contracted meningitis as a baby. Perhaps it’s her love of sports – she’s played football, baseball, tennis and excels in martial arts. Whatever has toughened this actor up, it’s clear that Laura Vandervoort is a force to be reckoned with. “I was a tomboy growing up,” says Vandervoort. “I was teaching at a dojo when I was 19, going to school and filming Instant Star all at the same time. Sadly I had to give up one thing and that was martial arts.” Yet she credits this aggressive training, and her second-degree black belt, with helping her to maintain a competitive edge in her career. “In the dojo, you are very focused, dedicated and you meditate every day,” says the 30-year-old actor. “It taught me to centre myself and do my best. I was fighting against men so I got very competitive. When I started acting that mindset drove me in the industry to dedicate myself, learn new skills, learn the technique, fight and to never give up.” What Vandervoort strives for on a daily basis is a balanced lifestyle. “It’s hard to define what balanced living means,” she says. “For some women with children it’s taking time for yourself with a hot bath and making sure you get a moment to take care of who you are as a woman. For me, without children, and just focusing on my work, it’s a healthy lifestyle of good eating habits, exercise, getting outdoors for fresh air, a good night’s sleep and family time. Oh yeah, and making sure to indulge in some sweets sometimes.” The five-foot-six actor admits to keeping a stash of red licorice, and indulging in the occasional freshly baked croissant. However, the bulk of her diet is made up of almond milk, granola, berries, fruit, vegetables, hummus and gluten-free breads. In terms of keeping in shape, the Bitten star tries to carve out time for hot yoga classes, which she considers exercise and meditation rolled into one. “You’re blocking out the sounds of the city, your schedule and thought process – just focusing on what it’s like to take a proper breath.” Ultimately she finds happiness in taking a hot bath, getting into pajamas, putting on a favourite TV show and sitting down with a great meal. “Really just doing nothing,” she says. “You have to have downtime for nothingness – time to laugh, snuggle with the person you love and just get silly sometimes.” VM

hen it comes to staying fit, actor Mariana Klaveno likes to stay out of the elements. Rather than take advantage of the Southern California climate for hikes or walks she prefers indoor strength training and cardio. “A lot of squats, bench presses – good old fashioned strength training and cardio,” she says. “The truth is I find I get much better results when I strength train so I shun the sun in favour of going into a sweaty gym to workout.” She also engages in regular yoga for stretching and connecting her breath to her exercise. “This helps keep me stay centred and grounded,” she says. “In this business, so much of what I do is out of my control. It’s a difficult thing for me and causes me some stress.” Meditating and yoga are essential to keeping the actor calm and in control of her life. POWER EATING As much as possible Klaveno sticks to a morning routine of a cup of hot water with lemon, followed by a hearty breakfast. “I grew up on a farm and my dad would always make us breakfast so I’m a big believer in starting the day out right,” she says. It’s usually scrambled eggs, oatmeal and/or toast with almond butter.

On a typical day Klaveno follows up her breakfast with a healthy lunch of her favourite quinoa salad, a snack of walnuts or almonds, and dinner with protein such as fish and chicken with roasted vegetables as a side. She avoids dairy, especially milk and ice cream, as it can cause digestive problems. It can also cause her skin to break out. “I’ve switched to almond milk which is great. I do eat a little cheese here and there though.” Although her diet is mostly healthy she doesn’t shun off everything bad. “I do need a little sugar in my day – dessert or a glass of wine. Everything in moderation – it’s such a cliché but it’s true.” Moderation and mindfulness ensure Klaveno’s overall balance of mind, body and spirit. “I struggle with staying in the moment as much as anyone, yet taking every day for what it is. A BLISSFUL LIFE PERREY REEVES HAS FOUND SERENITY AMONGST THE CHAOS OF HOLLYWOOD BY STAYING TRUE TO WHO SHE IS AND TAKING TIME TO RELAX AND ENJOY WHAT’S IMPORTANT IN LIFE. BY BONNIE SIEGLER PHOTOGRAPHY BY ELISABETH CAREN
ollywood may be known for celebrating youth, however there is beauty in age. “I’m far more comfortable with myself now than I was when I was younger,” says actor Perrey Reeves. An East Coast native who lived with her family in France and Italy growing up, she reflects on her life today. “I’m in the world of Hollywood,” says the 43-year-old. “Looking at myself as a product is a weird thing. You have to build your life with interests, friends and activities that support another aspect of you or I don’t know how one can survive.” Those are also the things that keep you comfortable in your own skin. Simple things like going for a walk with the dog, watching a movie, doing meditation and yoga help to ground the star. “When I feel good then I’m ready to conquer whatever needs to be conquered that day.” What’s on her radar now is promoting the movie version of 60
Entourage. For 11 years, Reeves has played super agent Ari Gold’s strong-willed wife Melissa. This movie is a chance to take all of the characters we have grown to love to the big screen. PREVENTION MATTERS With her busy Hollywood schedule, staying healthy is a must. A pound of prevention is by far the best policy for staying healthy. “If you walked into my kitchen, you’d say: “Holy moly! How do you swallow all those supplements?” Reeves explains how her father was a physician, but his goal was to prescribe medicine as a last resort. She has always focused on prevention and following a holistic lifestyle, partially because of him. “When patients would come to my dad with a migraine, he would eliminate certain foods and encourage them to eat other foods. He would try to get them in better balance. If an ailment persisted, only then would he prescribe medicine,” says Reeves.

When Perrey suffers from a common headache she turns to meditation. “It helps with any kind of pain or suffering – emotional and physical. Then I turn to yoga for its breathing techniques and visualization,” she says. “Still, every now and then, an Advil helps.” You can use medicine; just don’t rely on it all the time. So what supplements does Reeves keep in her cabinet? “There are two types of digestive enzymes to help with my GI tract and overall digestive system, plus a few other enzymes. Also acidophilus and quercetin to help with allergies.” Tumeric and black pepper supplements can also be combined with cooking. “The benefits of these two are immense,” says Reeves. They’re great for fighting chronic inflammation and for your heart health. Inflammation is at the root of most diseases, so if you want good health it’s crucial to get a handle on it. BUILDING THE PERFECT RETREAT “I feel like I’m my own science experiment,” says Reeves. “I’m totally interested in health and wellness and part of that was building a retreat centre that caters to that.” Reeves started her personal meditation practice in 1992 and started going to an Ayurvedic physician a year later. In 1994 she started practicing yoga. “All these practices came to me from different directions and they have really been a major influence in my life.” In wanting to bring these benefits to others, Reeves co-founded The Sanctuary at Two Rivers in 2012. The Costa Rican yoga retreat is a place where people can escape the stresses of modern life and focus on healing and rejuvenating their body. The 100 per cent solar-powered, eco-resort boasts a full array of wellness services including massage, skin care treatments, acupuncture, yoga, meditation and holistic nutrition coaching. The menu serves organic vegetarian and vegan foods such as kale and fennel salad and Thai soup. 62
Guests are encouraged to connect with Mother Nature and relax. “The houses are very Zen and high up in tree levels,” says Reeves. You are literally surrounding yourself with nature. YOGA FOR LIFE Reeves recently reflected on the last 20 years of her yoga practice and realized that she has gone in and out of several phases. “For a long time I practiced with teachers and did trainings, but now it’s solely a personal practice,” she says. “Sometimes I’ll do yoga six days week and others I’ll do three or four. It depends on my work schedule, my day and how I’m feeling. As we get older, balance and stretching are things that help us age well. If you can stretch, if you can bend over and do those things at 90, you’ll be in great shape. I’m looking at yoga as a lifestyle, as a future and not just an athletic adventure.” IT’S A FRIENDS AND FAMILY AFFAIR “As a family we lived in a big house in New Hampshire and then had to get rid of a lot of stuff to move to Europe,” says Reeves. “We were each told to take one suitcase. My family shunned TV in favour of reading and exploring literature.” She learned at a young age to collaborate with family and friends as a way to manage stress and maintain a sense of calm. “I’ve been good at letting the things that used to stress me out, roll off my back now,” says Reeves. “I’ve realized that all the energy I put into stressful situations is wasted.” The actor feels that she’s in a really good place. “Sure, I’ve got stress; I mean I’m getting married in June. However we’re collaborating with friends and making it something really fun. I don’t want to compete with Hollywood-type weddings. We’re making it fun for us. At another time in my life I think it might have been a stressful situation. Now it’s just fun!” VM

While Perrey admits she and her fiancé Aaron Fox love a beautiful sunset, she also loves when she happens to be up when the sun is rising. “I find if I do things in the morning, then I have the rest of my day free. I like to meditate and do my yoga in the morning, enjoy my green or white cup of tea, take the dog out and sit outside. It’s just a nice way to start the day.”

INGREDIENTS: • 2 lb. ground sirloin • 4 oz. blue cheese, crumbled • 2 shallots, minced • 3 cloves of garlic, minced • 8 slices of speck prosciutto • 4 leaves of red leaf lettuce • 2 tsp. sea salt • 2 tsp. fresh cracked black pepper • 8 slider buns

GARLIC AIOLI: • 2 free-range egg yolks • 2 tsp. Dijon mustard • 1⁄2 tsp. pasteurized honey • 2 tsp. white wine vinegar • 2 tsp. lemon juice • 3⁄4 cup olive oil • ¾ cup vegetable oil • 1⁄2 tsp. lemon zest • 1 tbsp. finely chopped dill • salt & fresh cracked black pepper to taste
DIRECTIONS: 1. Combine sirloin, shallots, garlic, salt and pepper in a mixing bowl. Mix well, and then fold in blue cheese. Form eight four-ounce patties and set aside on a baking tray lined with parchment paper. 2. In a glass bowl whisk the egg yolk, mustard, honey, vinegar and lemon juice until combined. Then slowly emulsify the oils by pouring it in a thin stream while aggressively whisking, two to four minutes. Once your mayonnaise reaches the desired consistency, add the lemon zest, dill and salt and pepper to taste. TIME-SAVING TIP: This step can also be done with a food processor. 3. Pre-heat barbeque to medium heat. 4. Brush grill with vegetable oil and lay down burger patties. Cook for about four minutes a side or until medium rare. Remove and set aside until ready to serve, then top with mayo.

VINAIGRETTE: • 1⁄2 cup fresh cherries, pitted • 2 tbsp. red wine vinegar • 2 tsp. chopped shallots • 1 tsp. minced garlic • 2 tsp. Dijon mustard • 2 tsp. honey • 1⁄4 cup olive oil • 1⁄4 vegetable oil • 1⁄2 tsp. sea salt • 1⁄3 tsp. fresh cracked black pepper
DIRECTIONS: 1. Pre-heat barbeque to high. 2. Remove rind from watermelon and pineapple and slice fruit into two- or three-inch squares. Slice apricots, peaches and halloumi into half-inch slices. 3. Pat fruit with paper towel to remove excess moisture; then lightly brush fruit and halloumi with vegetable oil and season with salt and pepper. Grill for 30 to 45 seconds a side. Remove to a wire rack to cool. 4. Combine all ingredients for vinaigrette in a blender, except for the oil. Once other ingredients are thoroughly blended, slowly incorporate the oils until they emulsify. 5. In a mixing bowl add arugula and drizzle with half the vinaigrette. 6. Add roasted fruit to arugula and serve remaining vinaigrette on the side. Garnish with cherries.

STRAWBERRY-LIME GAZPACHO with Fresh Whipped Basil Cream PREP TIME: 10 MINUTES • COOK TIME: 10 MINUTES • SERVES: 4
INGREDIENTS: • 6 cups local strawberries, chopped • 1 cup English cucumber, peeled, seeded and chopped • 1 shallot, chopped • 1 clove garlic, chopped • 2 tbsp. fresh lime juice • 2 tbsp. white balsamic vinegar • 1 tsp. olive oil • 1 tsp. fine sea salt • 1⁄4 tsp. white pepper BASIL WHIPPED CREAM: • 1⁄2 cup of 35% whipping cream • 3 basil leaves, chopped
DIRECTIONS: 1. In a blender, puree strawberries, cucumber, shallot, garlic, lime juice, vinegar, oil, salt and pepper – in batches – until smooth. Strain through a fine sieve into a large measuring cup; discard the pulp. Cover and refrigerate until chilled, about one hour. 2. In a chilled stainless steel bowl, beat cream until soft peaks appear. Gently stir in basil. 3. Serve gazpacho in appropriate bowls and garnish with basil whipped cream.

INGREDIENTS: • Two baby back rib slabs (3 lbs.), excess fat trimmed and membrane removed • 1⁄2 cup green onion, chopped TOASTED CILANTRO PEANUTS: • 1 cup toasted peanuts • 1 tbsp. fresh cilantro, finely chopped

Transfer peanuts to a mortar and pestle or food processor and process until coarse. Fold in cilantro and set aside. 5. Remove ribs from the oven and allow to rest, covered, for 30 minutes. 6. Pre-heat oven to broil. 7. Remove ribs from the baking dish and transfer to a baking tray lined with parchment paper. Generously brush both sides with sauce. Place under broiler until caramelized, approximately one minute. Remove ribs from the oven and repeat process two more times. Top with peanuts and green onions and serve.

Combine all ingredients for salsa in a mixing bowl. 4. Fill avocados with salsa and serve.

Occupation: An actor who has played Coach Carson from Degrassi: The Next Generation and is just finishing Gangland Undercover and Prisoner X. What’s your secret food vice? Authentic Neapolitan thin crust wood oven-baked pizza. What is your number one comfort food? Pasta, especially a great Bolognese or Carbonara. What is your biggest food challenge? I love carbs, but I feel better without them. I used to devour really good bread. What keeps you eating a balanced diet? The reward of a positive mind; if I feel physically healthy, my state of mind is completely positive. Any food dislikes? I’ve tried to get on the uni or sea urchin bandwagon for years, but I can’t seem to get past the texture. Any foods you’ve completely omitted from your diet? For the most part, I’ve omitted bread and pasta. I’ll break once a month though; complete omission is not going to happen. What must you always have in your fridge? Arugula, I eat it daily. What are some of your go-to meals? Turkey or chicken ragu, in which I substitute zucchini for pasta. I make it once a week. Strangest food you’ve tried? I’ll try anything once, but the chicken feet on the dim sum cart still blow my mind. What’s your favourite dish or food to eat in the summer? I love being at the cottage chowing down on a beer, chicken and a great fresh local salad. When tomatoes and basil are in season, I probably eat a Caprese salad every day.
What is your favourite meal to make for guests in your home? I love giving people a variety, so I usually start with some tapas, charcuterie, and then move into the Osso Bucco with a couple different sides – lemon garlic rapini, roasted winter vegetables. I always make some vegetarian options too; plenty of salads, always a classic French bistro salad and a starch salad - cannellini bean, grape tomato, with nicoise olives and feta. What is your favourite ingredient to cook with? I adore extra virgin olive oil from my friend’s farm in Greece. We order about 100 litres every year. What have you been busy with over the last year? I’ve been shooting the TV mini-series Gangland Undercover in which I play Charles Falco a meth dealer turned ATF informant, who infiltrates a Vagos motorcycle gang. It’s for the History Channel. What’s next for you? Just wrapped a movie called Prisoner X, and hopefully we will get the green light for season two of the series, which we would start shooting in June.

WHY FABRIC SELECTION SHOULD BE YOUR STARTING POINT WHEN YOU’RE DESIGNING A ROOM BY WILLIAM MACDONALD
T
he question I’m asked most is: “Where do you start when designing a room?” My answer is almost always “with the fabric.” I love bringing a client to fabric showrooms. There amongst the linens, velvets and silks we get inspiration, and imagine what’s possible. When you have a textile that’s dynamic and exciting, and a client who isn’t afraid, you have a lot to work with. I like to start with a patterned material with three to five colours. Perhaps a chinoiserie-inspired print or a bold graphic silk or cotton fabric. From the fabric’s palette I can then choose my wall colour, carpets, lamps and develop other ideas for the look of room. BE A MIX MASTER Mixing fabrics is very important. Be bold, confident and never boring. Stripes and solids, checks and prints and various textures will keep a room alive and attractive. Keep a common element in mind such as colour, a motif or a natural reference. Remember to include materials with different textures – smooth and rough, shaggy and short. I go by my own 76
rule: “If I like them alone, I can make them work together.” Your fabric choices don’t all have to be super strong. In fact, I choose quite subdued colours and patterns if my clients are interested in a quieter more understated space. Keep in mind the function of the room and your needs. A bedroom may inspire softer more restful fabrics. The family room can be more playful and light hearted. CHOOSE FUNCTION Where durability is a concern I always use what’s appropriate. Linen for a family room sofa that kids and dogs use daily is not a great idea. Instead I opt for sturdy velvets or strong cottons in fun patterns. BE BRAVE When I’m asked how I mix fabrics my answer is “with confidence.” Don’t be afraid; take chances. Keep a common colour or theme in mind and be brave. Remember, the worst thing a room can be is boring. VM

DEBORAH SHAPIRO AGE: 59 OCCUPATION: CFO of a Staffing Company HEALTH ISSUE: High cholesterol and high blood pressure SYMPTOMS: Racing heart, sluggish and brain fog – the latter two are especially bad when I’m sitting at my computer for long periods of time. HEALTH RECOMMENDATION: Just move it! Every 15 minutes I get up and move around the office. I also dance, anywhere and anytime just to move my body. Dancing is a great workout. It gets my heart rate up, and it’s fun! I also eat fresh fruit every day so I’m getting fresh nutrients and fibre. THE RESULTS: I feel better; I can laugh which, in turn, helps lower my blood pressure. Laughter is a good cure for what’s ailing me. I feel better when my diet is good and I know that I’m helping lower my cholesterol.
JESSA EVENDEN AGE: 19 OCCUPATION: Student HEALTH ISSUE: Dry, coarse hair SYMPTOMS: Since my hair is so long and thick, it’s prone to becoming dry and coarse, which makes it difficult to manage. It’s really frustrating because I love my hair, but the condition of it made me dislike styling it. HEALTH RECOMMENDATIONS: Coconut oil THE RESULTS: Using coconut oil as a hair mask, as well as applying a little to damp hair after washing, has completely changed my hair for the better. It’s silkier, softer, shinier and easier to manage than it ever has been.

I was also getting pain in my big toe, which then got inflamed. That’s when my blood work showed I had gout and I knew I had to eat better. THE RESULTS: In my mature age, my hearing isn’t as good as it used to be, but now the ringing in my ears gone and my hearing is better. I also don’t have the headaches anymore. Since I like apples and bananas anyway, I feel better knowing eating them helps my gout, but also that I’m eating fresh fruit for my general health.

UPSTATE FIND OUT WHY UPSTATE NEW YORK IS THE PERFECT DESTINATION FOR THOSE IN SEARCH OF A LITTLE REST AND TRANQUILITY. BY BONNIE SIEGLER
rowing up in Utica, New York, the highlight of the summer was going to King Cole Ice Cream for a cone. I now have the infamous Venice Beach at my doorstep, but remain excited to return to upstate New York for a little rest and relaxation. Here are the key points to hit if you leave the big city behind and head upstate:
BEEKMAN 1802 When New Yorkers Josh Kilmer-Purcell and Brent Ridge purchased historic Beekman 1802 in 2007 they had no idea it would launch one of the fastest growing lifestyle brands in the country. Located in bucolic Sharon Springs, New York, their place became the little farm that could. The couple, which won The Amazing Race in 2012, soon launched their own reality show The Fabulous Beekman Boys on the Cooking Channel. Now the property and their products have proven that a farm can be much bigger than its fences. “We grow about 80 per cent of the food that we personally consume on the farm,” says Kilmer-Purcell. “The recipes we create for Beekman1802.com and our heirloom cookbooks really focus on using fresh ingredients. It’s wonderful to know that many people have been inspired to grow their own foods, or at least frequent their local farmer’s market, as a result of looking at the recipes.” Beekman 1802 is a working organic farm. In addition to food, the owners make chemical-free soaps from the Beekman goats’ milk as well as other eco-friendly products. “Our pasta sauces use heirloom tomatoes grown on small organic family farms,” says Ridge. “Twenty-five percent of the profits of the Mortgage Lifter sauces also go back to give other small farms a “lift.” Last year Beekman 1802 donated $18,000. 80

2. Munson Williams Proctor Art Institute This quaint art museum is well worth the visit. What I have always liked about this local museum is its manageable size, mixed with amazing artwork – upon entering you’re greeted by a giant Jackson Pollock.
3. Try a Riggie Dinner What, you ask, is a riggie? Having grown up in Utica, I remember eating riggies from a very young age. However I had to explain this phenomenon to my husband. A Riggie is a Utica-born pasta dish typically containing chicken, rigatoni and peppers in a spicy tomato sauce. Every year in Utica there is a riggie dish competition. BEST RIGGIES? 1. Visit Clinton This quaint New England style village is about 20 minutes from Utica and home to Hamilton College – one of the oldest colleges in New York State. Clinton is known as the “village of schools” for the large number of private schools that operated there during the 19th century – there are still four private grade schools for a population of about 2,000. Clinton is packed with things to do including: the Kirkland Art Center, coffeehouses and cafes, gift shops and the Clinton Cider Mill. You can also walk the Hamilton College historic campus and visit the Root Glen arboretum. The Glen contains 65 species of trees, dozens of shrubs and scores of varieties of flowers. There are numerous other perennials and annuals, some of which change each year as the Glen evolves. Finish your day with dinner at Across The Row Bistro (8 Park Row, Clinton). Located in Clinton’s historic Park Row “across the row” from the shopping district, it specializes in farm fresh to table food. Housed in a vintage Victorian style home, it’s a relaxing setting to share tapas with friends or a larger meal.
4. Tour the Saranac Brewery Formerly the Utica Club Brewer, this Upstate New York brewery was founded in 1888 and survived the Depression and Prohibition (when it produced soft drinks and other non-alcoholic products to stay in business). Tours take about 45 minutes and you should reserve a spot if you’re visiting in the summer months – it gets busy. You’ll also want to plan time afterwards for the tasting room. Don’t like beer? They have an array of pops to try. VM
