It’s that time of year again when all the kids go nuts to try to find as many eggs as possible, while eating all the chocolates in sight. Use this blend to clean the air and create the feeling of hunting for eggs in a beautiful floral meadow.
Carrot Cake
1 ½ cups All Purpose Flour
1 teaspoon Baking Powder
¼ teaspoon Baking Soda
1 or 2 drops Cinnamon
Pinch of Nutmeg
2 Eggs Slightly Beaten
2 ½ cups Grated Carrots
¾ cup Brown Sugar
¼ cup White Sugar
½ cup Vegetable Oil
1 teaspoon Vanilla Essence
2 cups Cream Cheese

You can’t have Easter without a visit from the Easter Bunny, so use this delicious carrot cake to entice him to come for a visit! Enjoy with or without the frosting and it can stay fresh for up to a week if covered tightly.
Preheat the oven to 175 degrees Celsius and grease a 9x13 baking tray.
In a large bowl combine your flour, baking powder, baking soda and nutmeg.
In another bowl combine your eggs, grated carrot, brown sugar, white sugar, oil, vanilla and Cinnamon oil. Add your wet ingredients to your dry ingredients and mix together, do not over mix.
Pour your cake batter into your greased tray and spread evenly. Place in the oven for 20-25 minutes. It will be done when a toothpick comes out clean when poked in the centre of the cake.
When the cake is done, remove from the oven and let it cool completely before frosting.
When the cake is cooled, frost and enjoy!
Add all the ingredients together and mix until well combined and smooth. You can add more or less sugar depending on how stiff you want your frosting.
500g Strong White Flour
80g Caster Sugar
2 teaspoon Mixed Spice
1 or 2 drops Cinnamon
6 drops Lemon
Pinch of Salt
7g Fast Action Yeast
45g Butter
250ml Whole Milk
1 Egg Beaten
180g Sultans
60g Mixed Peel
75g Plain Flour (for the crosses)
1 Tablespoon Olive Oil (for the crosses)
7 Tablespoons Water (for the crosses)

In a large bowl mix together the flour, sugar, mixed spice, yeast and salt. In a pan add the butter and milk and allow it to melt over a gentle heat, you want the butter to melt and the mixture to be lukewarm in temperature. Make a well in the middle of the dry ingredients and pour in half the butter and milk mix with the Cinnamon and Lemon oils. Mix this together and then add the beaten egg. Mix again followed by the remaining butter and milk mixture. Mix with your hands to form a soft dough.
Knead the dough for approximately 10 minutes until smooth, soft and elastic.
Lightly oil a bowl and place the dough in it and allow it to prove for 1 hour in a warm place or until it has doubled in size.
MAfter an hour, remove the cling film and knock the air out of the dough. Tip it onto a lightly floured surface and add the sultanas and citrus peel by stretching and folding the dough to incorporate, making sure they are evenly distributed throughout. Divide the dough into 12 equal sized balls. Shape them by rolling between your palm and the surface so they are smooth and even.
Place the balls onto a baking tray lined with baking paper and space them roughly 2-3 cm apart.
Loosely cover the tray with cling film and leave again in a warm place for 45-60 minutes until they have doubled in size again. They should be puffed up and just touching. Preheat the oven to 200 degrees celsius.
Make the flour mixture for the crosses by mixing together the plain flour, olive oil and water. Beat together until it forms a smooth paste and then transfer into a piping bag. Once the buns have proved and risen, carefully remove the clingfilm. Pipe the crosses across the top.
Place them into the middle of the oven and bake for 15-20 minutes, until lightly golden brown.
Remove from the oven and brush the tops with golden syrup so they are glistening. Allow this to cool before serving.
Hot cross buns are very popular at Easter, but with this recipe you will want to make them all year long, as there's no such thing as too many. Best served toasted with butter spread on them!

1 bag of Speckled Chocolate Mini Eggs

Boil the water in a pan and add the sugar, once it has started to dissolve, add the blackberries and muddle to break them up and release the colour. Allow to simmer for 3-5 minutes then remove from the heat. Once cool, drain the syrup into a glass pitcher through a strainer, add the Lemon oil and mix thoroughly. Put 3 mini eggs in the bottom of each glass and add 2 oz of blackberry & lemon simple syrup.
Fill the remainder of the glass up with champagne.

This sparking delight can be enjoyed during any Easter celebration. The blackberry and lemon sugar syrup complements the sweetness of the champagne and will be the envy of any Easter party.
Ingredients
Per Mug
1 tablespoon Butter
1 - 2 Slices of French Bread, Cubed
1 Large Egg
3 tablespoons Milk
1 tablespoon Vanilla Essence
Pinch of Nutmeg
A Toothpick Swirl of Cinnamon
Browned Butter Vanilla Sauce
(Enough for 2 to 4 mugs)
¼ cup Butter
1 teaspoon Vanilla Essence
¼ cup Packed Brown Sugar
¼ cup Milk
If using the sauce, make that first and set aside. In a small pan melt the butter until it turns into a toasty brown colour. Add the brown sugar and milk, cook over a medium heat stirring occasionally for 5-8 minutes or until the mixture thickens and comes to a full boil. Stir in the vanilla carefully.
Place a pat of butter in the bottom of your mug and microwave for 15 seconds until soft and then coat the butter with a knife around the bottom edges of the mug. Place the cubed bread and place it in the mug so it is overflowing. In a small bowl whisk together the egg, milk, brown sugar and vanilla. Take a toothpick and dip it in your bottle of Cinnamon oil, stir the toothpick around in the egg, milk, brown sugar and vanilla mixture. Slowly pour the mixture over the cubed bread, pushing the bread down slightly with a fork into the liquid mixture, making sure all the bread gets coated.
Sprinkle with a pinch of Nutmeg.
Microwave on high for 1 minute and check with a toothpick, you want the toothpick to come out clean.
Microwave for another 20 seconds and repeat the toothpick test, keep going until the toothpick comes out clean.
If using the sauce pour over the top and enjoy.
This easy spin on a traditional Easter recipe is a great way to use up all the leftover bread. It's quick and easy and super tasty and can be made by everyone in the house!
¾ cup Tequila
½ cup fresh squeezed
Lime Juice
½ cup Cream Soda
¼ cup Cointreau
1 drop Lemon Myrtle
1 packet Cotton Candy
M e t h o d
Combine all the ingredients except the cream soda and candy floss in a cocktail shaker and shake vigorously. Add cream soda and stir gently. Fill the serving glass ¾ full of cotton candy. Pour the mixture over the cotton candy until the glass is half full. Add ice and stir gently to dissolve the cotton candy.
This cocktail is like a spring fair in a glass & no spring fair is complete without cotton candy. Let this combination transport you back in time to a vintage fair with a modern day twist of tequila. This margarita is not for the faint hearted, but the sweet and sour blend perfectly!
1 ½ oz Vanilla Vodka
1 ½ oz Malibu
2 oz Half & Half
½ oz Cream of Coconut Splash of Pineapple Juice
1 drop Tangerine
Honey for rim of glass
Chopped Coconut for rim of glass
Marshmallow
Begin with two shallow dishes. In one add a teaspoon of honey, to the other add the sweetened coconut. Rim the edge of a martini glass first in the honey then in the coconut and set aside.
In a cocktail shaker filled with ice, combine the vanilla vodka, malibu, half and half, cream of coconut, pineapple juice and Tangerine oil.
Shake vigorously then pour into your prepared martini glass and put a small cut in the marshmallow and hang it on the edge of the glass.

This martini was inspired by Peter Cottontail, the rabbit that went hopping down the bunny trail. This cocktail has a delightful coconut flavour, with a fruity twist and an adorable marshmallow tail.
1 cup Citric Acid
1 cup Corn Starch
1 cup Epson Salts
2 cups Baking Soda
2 teaspoons Water
4-6 tablespoons Coconut Oil
10 drops Lavender
10 drops Wild Orange
Soap dye or food colouring
Plastic Easter Eggs
M e t h o d
Stir together the citric acid, baking soda, corn starch and epsom salts until well combined. Divide the mixture into the number of smaller bowls to match the number of your colours.
Divide the coconut oil into the same number and add the dyes and essential oils directly to the coconut oil. Carefully stir the dyed coconut oil into the bath bomb mixture, avoid adding too quickly as that can cause a reaction/fizzing. Slowly add your water and check the consistency of the bath bomb mixture, as it should have a consistency close to wet sand. Adjust the colouring and consistency before moving onto shaping your bath bombs.

Press the bath bomb mixture into the plastic eggs to serve as your bath bomb molds making sure you pack it really full. Let set for 2 hours or overnight. When the bath bombs are set, carefully pop them out of the Easter Eggs.
These multi-coloured bath bombs will add a touch of fizz to any Easter. They make wonderful gifts if you can bare to part with any of them. The Lavender and Wild Orange is the perfect blend to help relax you and the family before bed. You will be tempted to keep them all, as some things are just too good to share!
2 cups Plain Flour
2 tablespoons Vegetable Oil
½ cup Salt
2 tablespoons Cream of Tartar
1 to 1 ½ cups Boiling Water (adding it in increments until it feels just right)
Food colouring
Few drops Glycerine
10 drops of Essential Oil (Lavender, Motivate, On Guard, Wild Orange etc)
Small toys, sweets or small gifts placed inside plastic eggs, to fit inside the play dough

Mix the flour, salt, cream of tartar and vegetable oil in a large mixing bowl. Add food colouring to the boiling water then into the dry ingredients. Stir continuously until it becomes sticky combined dough. Add the glycerine and Essential Oils. Allow it to cool down then take it out of the bowl and knead it vigorously for a couple of minutes until all the stickiness has gone. If it remains a little sticky add a touch more flour until its just right. Roll out a circle of play dough and wrap it around your surprise egg. Once covered in play dough, roll it in glitter to add a more magical effect.
Place in a cellophane bag and tie with a ribbon to give as gifts.
1.These are wonderful as take home gifts at a party, or just for fun for the kids to play with. You can choose your oils carefully depending on your child - Lavender to help them relax, citrus oils to help energise, On Guard to boost immune system, Motivate to help uplift. The play dough can be stored in an air tight container for at least 6 months.

Line a small baking tray with grease-proof or baking paper. Break up the milk chocolate and microwave in 30 second bursts, stirring between each one to make sure it melts evenly. Once fully melted, stir in half of your chosen oil and mix well. Pour the chocolate onto the lined baking tray. Using a spatula, spread the chocolate around the tray in a thin, even layer. Place the tray in the fridge for 10-15 minutes. Repeat the above steps with the white chocolate and once melted pour a thin even layer on top of the milk chocolate. Scatter the chocolate bunnies, eggs and Easter sweets over the chocolate, pressing them gently into the top layer and sprinkle with hundreds and thousands. Place the tray back into the fridge for another 15 minutes or until completely set. Remove from the fridge and carefully peel back from the baking paper and break up into pieces. Either serve on a plate or bag up into cellophane bags to give as gifts!
