As you melt under the heat of the blazing sun, imagine how yum my some cold ice cream would taste....or sorbet...perhaps a grani ta? Think about all the scrumptious cooling treats being enjoyed around the world! Ice cream is a relative newcomer to the scene. Alexander the Great enjoyed flavored ice around 300 BCE (honey and nectar were reportedly his fav). A hundred years earlier than that, the famed physician Hippocrates declared that eating ice “liv ens the life juices and increases the well-being.” Snow and ice were harvested from the mountains and mixed with various ingredi ents, not unlike a snow cone or shaved ice. Medieval Persians en joyed icy, slurry drinks called sharabt, even in the desert summers. Whaaaat? Yes, in the Middle Eastern deserts of what is now Iraq and Afghanistan, the topography is ideal for freezing shallow pans of water even when the ambient night temperatures are as warm as 41°F. Scientists explain that “radiant night sky cooling” occurs in arid climates at sea level, when the night air sucks the heat out of the water, allowing shallow water to freeze. The people would wake early, remove the ice from the pan, and store it below ground level in ice pits called yakhchāl, providing ice all year, centuries before electricity. They could then shave some of the ice and mix it with fruit for a tasty treat.

Yummy Collection

Sharabt is the precursor to what Americans call sherbet, mixing fruit purée with sugar and water into a smooth and scoopable consistency. In Italy, this is known as sorbetto. Sicilians in the 16th century would buy snow from nevarolu, people who collected snow from Mt. Etna, and they would essentially make sharabt and keep it cool in a bowl of snow and salt (more on that later). Italians later added egg yolks and rich cream to milk and sugar and churned out gelato. Gelato differs from US ice cream, boasting a lower milk fat and less air, creating a denser final product that is served slightly warmer than ice cream. The US standards for ice cream require a minimum of 10% milk fat (some brands go as high as 25%), eliminate the eggs, then add more air during the churning, making it lighter. If you are lactose intolerant, fear not. Aside from sorbetto, the Italians make an easy shaved ice called granita that you can scrape up at home, literally. In your blender, purée fruit, sugar, and an optional kiss of citrus juice, salt, and even a splash of wine. Pour the slurry into a shallow-lipped sheet pan and freeze. Every half hour for 4 hours scrape the freezing puree with a fork to break it up, allowing it to crystallize (and avoid it becoming a brick of ice). It’s like eating a posh and fruity snow cone.

Treat Collection

The oldest surviving sorbetto recipes come from Antonio Latini’s Lo Scalco Alla Moderna - “The Modern Steward, or The Art of Preparing Banquets Well” - a two-volume guide of Baroque household management with recipes, published posthumously in 1692 and 1694. Latini’s gastronomic treatise continues to influence modern European dining. He included a recipe for “sorbetta di latte” - milk sorbet - which has been credited as the first ice cream recipe. This was cooked, similar to making an eggless custard, and then chilled by placing the mixture (milk, water, sugar, candied citron, or pumpkin) in a bowl that was nestled in a larger bowl containing snow and salt, and stirred over half an hour until creamy, thick, and cool. Mixing ice or snow with salt creates an endothermic reaction, melting the ice but lowering the overall temperature. For hundreds of years, people made ice cream and sorbet using this endothermic science, until Nancy Johnson of Philadelphia patented the first ice cream maker in 1843. Essentially, an inner bucket fitted with paddles would churn the cream and sugar together using a hand crank, while the outer bucket contained the ice and salt. The crank and paddles sped the processing time and produced a more uniform creamy goodness. Timing is everything - her patent coincided with the emerging industry of the icebox.

How to Care For Your Fabrics

The care instructions in this catalog are a conservative path, but not an absolute. There is no one size fits all for fabric care because of all the variables, such as hard versus soft water, well and septic versus municipal water, washers with and without a center aggitator, dryers that have a no-heat option, etc.

One supplier would have everyone dry clean every fabric, but for many of you this is not feasable.

Here are some general guides. You can always use your swatch to test how a fabric will react to washing and drying. Test wash the way you plan to wash your finished garments - this will remove any sizing and shrinkage prior to cutting/sewing.

Pro-Tip: Set your washer for an extra long spin cycle to remove excess water, then toss in the dryer on low heat for 5 minutes before hanging or laying flat. This minimizes wrinkles, and helps fibers last longer.

Philadelphia was also the launching point for flavored carbonated water. The early 1800s produced several advancements in portable carbonation leading to the first “soda counter” offering flavored carbonated water at a perfume shop. The popularity of this exploded in the city and spread throughout the USA. Pharmacists, called druggists, put soda fountains in their shops. It provided a tasty option if a customer wanted a drug mixed with the flavored fizzy water, but anyone was welcome to enjoy a refreshing drink, which could also include ice cream for a “float.”

Blue laws prevented many municipalities from “jerking” soda on Sunday because of some farreaching idea that soda was connected to alcohol. Our hometown of Evanston, IL is the home of the Christian’s Women Temperance Union (CWTU), and Blue Laws were rigid, even well into the 20th century. In 1890, rather than losing business, druggists and shopkeepers served ice cream sodas without the soda and promoted Ice Cream Sundays. Seeing the merit of the delicious sweet treat, they renamed the dish Ice Cream Sundae and served it all week.

The CWTU unwittingly continued to influence America’s love of ice cream. After decades of work recruiting women and organizations like The Anti-Saloon League, to their cause of banning alcohol, the United States government passed the 18th Amendment - The Volsted Act - in 1920, banning the manufacture and sale of alcoholic beverages. Hello Prohibition. Law-abiding citizens still wanted a fun place to gather, and saloons and bars needed to reinvent themselves to pay the bills. Many establishments became ice cream parlors. Even Anheuser-Busch and Yuengling converted manufacturing plants from producing beer to making ice cream. According to the US Treasury Department, federal tax revenues from distilled spirits from 1919-1929 plummeted from $365 million to less than $13 million. Conversely, ice cream consumption exploded by 40% in the same period, as reported by Farrell Evans for The History Channel. “In 1922, The New York Times estimated the U.S. had more than 100,000 soda fountains—most of which were situated in drugstores—with $1 billion in sales.” There was increased production and better refrigeration, including delivery trucks, so supply met demand. Drug stores could still sell alcohol medicinally which led to a druggist in Aspen, Colorado to create the Aspen Crud, “a cocktail of ice cream laced with bourbon.” The 1930s saw the end of Prohibition coupled with The Great Depression, followed by rationing during WWII, practically freezing all ice cream sales for twenty years.

Before the 20th century, frosty desserts and palate cleansers were served in glass bowls with a spoon, or in glasses as part of a drink. In 1887, Agnes Marshall’s Cookery Book contained instructions for making “Coronets with Cream.” Essentially, this was a frangipane (almond and flour paste) rolled around a cone-shaped mold and baked, then filled with whipped cream. She suggested the cones could be filled with iced cream and flavored ice. A quarter century later in Manchester, England, a native Italian named Antonio Valvona filed a patent for an “Apparatus for Baking Biscuit Cups for Ice Cream.’ He was making bowl-shaped cookies. Before his invention, street vendors would sell “penny licks” consisting of a scoop of ice cream served in a small, stemmed bowl that had to be returned to the vendor, and often was re-used without being washed. Valvona’s invention made the vendor’s lives a bit easier, since the cookies were lighter than glass, didn’t cost as much to replace when dropped and broken, and customers on the go could take their treats with them. The pivotal moment for portable ice cream came at the St. Louis World’s Fair when visitors were able to buy ice cream cornucopias - ice cream served in waffle cones. One legend says a man making waffle cookies teamed up with an ice cream vendor who ran out of penny-lick glass dishes and created the hit new product, but historians have not been able to back that up. The rights to sell ice cream at the fair were purchased by the Star Bottling Company from St. Louis. They sued fair organizers for damages and were awarded $14,000 for sales lost to the unnamed ice cream cornucopia vendors.
