Owners Chad Shilsky, Vincenzo and Pietro Capuano have done it again, bringing together a collaboration of their talents. If their names sound familiar, it is because they were also the ones that brought the ever popular That’s Amore’ restaurant to New Smyrna Beach. The night life is hot with an open deck that has a fire pit, tables and sofa benches that provides that perfect spot for conversation, dining and dancing overlooking the ocean. If you prefer a covered area, they also have a patio with fans and tiki torches and plenty of comfortable seating. There is a spacious, trendy inside, air conditioned dining room where the main bar is located. It features plenty of tables and comfortable booths with large, flat screen TV”s for viewing your favorite sporting events. Music plays throughout the day and into the night. Being just a few steps from the ocean, the preferred attire is bathing suites and casual beach wear. The food is nothing less than fantastic with a very wide menu featuring a diverse combination of items to choose from, all delicious. There are Barracuda Bites, a combination of small menu items like Bangin’ Buffalo Shrimp, one dozen hand-breaded, crisp, tender shrimp tossed in their signature Bangin’ Buffalo Sauce. They have Fried Calamari that is quick fried in a delicate batter and served with their homemade Marinara for your dipping pleasure. that is hand pressed and then pan seared to a golden brown, then served with a spicy, homemade citrus aioli sauce. Then there are the Barracuda Big Bites. these are huge, delicious dinner entrees like their Tropical Fish Tacos. Two flour tortillas layered with fresh grilled Mahi Mahi, shredded lettuce, diced tomatoes, onions, shredded carrots, sweet corn, then topped with a key lime dressing, simply delightful! They have a Spanish dish they call Peninsular Paella, this is their tropical version of the spanish classic. It consists of shrimp, clams, mussels, grilled chicken, chorizo sausage, sweet peas, and corn served over over kokomo’s yellow rice with their own tropical twist. The Barracuda Burger is a classic in the making, sure to be a favorite. It is a half pound of premium ground beef, grilled to your liking and topped with savory chorizo sausage served on a kaiser roll with cheese, lettuce, onion and tomato. Delicious! Salsa’s Mexican Restaurant was founded in 1997 with their first location in Ormond Beach, Florida. It wasn’t by chance that this is such a success. The family worked together at various restaurants in Georgia, North Carolina and then to Tampa. They decided that they wanted to open their own restaurants in Florida. Together, they formed a plan and a partnership. The whole family was born and raised in Jalisco, Mexico. The very first location was opened inside a local hotel in Ormond Beach. Soon acting on the popularity with their customers, people started suggesting that they open more restaurants in other locations. They decided to open a second location in the Tymber Creek Shopping Plaza on West Granada Boulevard in Ormond Beach. It was an immediate success. his months chef feature is about a very popular spot to dine, a locals favorite, Merk’s Bar & Grill. We are going to look at the inner workings of Merk’s to find out why they are so popular and the food is so good. It starts in the Kitchen with two amazing chefs. Head Chef Audrey Quinn and Head Chef James (Boston) Sherman and the talented people they have surrounded themselves with. Chef Audrey was born in the Daytona Beach area, but moved with her family up north when she was one year old. The family returned to florida. This is where she finished high school and attended Daytona State College to obtain a degree in Culinary arts. Upon graduating under Executive Chef Jeff Conklin, she became an exchange student to be mentored by Canadian chefs in New Brunswick, Canada. Her time there was spent training with notable chefs like Executive German Chef Ritter and Certified Canadian Executive Chef Dave. She specializes in Classic French and Mediterranean Cuisine. She also has a passion for preparing Asian dishes. Her partner is Head Chef James (Boston) Sherman. James is originally form the Boston, Mass. area. He has worked and trained with many notable chefs as well. Experience is the best teacher sometimes, as is the case with James. He worked his way up from a line cook to Head Chef in just a matter of four and a half years. He has been with Merk’s from the beginning of his career in food. Both Audrey and James Share the duties at Merk’s. They are the creative talents behind the scenes and create the wonderful flavors that you find at Merk’s. Another talent at Merk’s, is Sous Chef Billy Winslow. He is more affectionately know as “The Soup Nazi“ as he can create a soup from just about anything with delicious results every time. Chef Billy is more traditional in his talents. He is best known for his famous meatloaf, stuffed peppers, soups, sauces and dressings. Also, another team member is Sous Chef Jeremy Sumey. the kitchen with many various tasks. All of these people are amazing. Most five star dining establishments would be proud to have a staff like this. This is why the locals love to dine at Merk’s. Chef Audrey loves to prepare a delicious “Spinach Salad“ She starts with warm bacon grease, adds bacon pieces, her honey mustard base and balsamic vinegar. She heats and reduces it to a delicious dressing, then pours it over tender fresh spinach, this is to die for. Another one of her tasty creations is her “Cheeseburger Soup” No, you didn’t read that wrong, it is a wonderful, delicious soup. She starts with a cheesy soup, adds real cooked ground hamburger and tops it off with thinly sliced red onion, shredded lettuce and finely diced tomatoes. It tastes just like a real cheeseburger. You just have to try it. Another one of her favorites is her “Sesame Crusted Fish Wrap” with Wasabi Mayo, This is a real tasty treat with just enough heat in the wasabi to excite your taste buds. While I was there, Chef Audrey prepared her newest sandwich for me to enjoy, her “ Whole Hog Panini “ This is a pork lovers dream come true. It starts with a huge piece of Cuban Bread, then they add fried bacon, sliced ham, pulled pork, BBQ pork and roasted pork. This is topped off with provolone cheese and then pressed. The taste is nothing short of amazing. These are just a couple of the items you can choose from at Merk’s. They also have specials everyday like their $5.99 lunch specials that change every day, so you will never be bored with their lunch menu. They have “Taco Tuesdays”, You can eat delicious $1.00 tacos all day long if you choose. They also have daily Dinner specials. The menu is vast and varied with everything from fresh seafood and steaks to their famous wings and burgers. Everything is prepared fresh for you and made with the finest ingredients available. With these talented people preparing your food, you will be amazed at the quality and taste of whatever you select at Merk’s. They also have a Full Service Liquor Bar with all of your favorite libations and even 100 Beers from around the world. There are big screen TVs, outside patio seating, games and pool tables to keep you entertained. You will need to know a little about the gravity in alcohol and juices, as it is made in layers starting with the heaviest first. You start with a shaker tin half full of ice, Then add Blue Curacao, Sour Mix, Absolute Citron, Orange Juice, Absolute Mandarin, Regular Absolute and Grenadine. Starting with the Grenadine, add approx. one oz. of each ingredient with a shot of vodka in between each layer of juice ending with the Blue Curacao liqueur on top. Do not shake ! Line up 13 shot glasses and pour. The result is a rainbow of colors and a great party drink. Enjoy.

This months bartender we love is Crystal Oswald from Riptides Raw Bar & Grill in Ormond Beach. Crystal is originally from Allentown, Pa. and has been in the Daytona area for the past two and a half years. She moved her with fiance to attend Keiser University to get her degree in Radiology. Three months ago, her friend Geo, who also works at Riptides invited her to get a job their when they opened. She accepted and has loved every minute of working there. Crystal is no stranger to the bar scene as she has been tending bar since she was eighteen. She loves meeting people and loves to talk. She claims she already has a following of customers after only working at Riptides for three months. Her favorite drink to make is the “Rainbow Shot“. You can try this at home, but takes a lot of practice to get perfect. Practice makes perfect, or just come to Riptides and have Crystal make you one.
