SMOKESHACK BBQ

The story of SmokeShack BBQ is pretty simple. It began with a couple who loved to entertain friends and family with good BBQ. For years it was the Whited’s back yard for BBQ, football, parties for the kids teams growing up. But then there came a time when both children left for college giving Mom and Pop time on their hands to cultivate their craft. Read about SmokeShack BBQ on page 16.

he story of SmokeShack BBQ is pretty simple. It began with a couple who loved to entertain friends and family with good BBQ. For years it was the Whited’s back yard for BBQ, football, parties for the kids teams growing up. But then there came a time when both children left for college giving Mom and Pop time on their hands to cultivate their craft. They studied their love of BBQ by attending cooking schools put on by the best in the business. They have spent time in the pit with the likes of the great Myron Mixon of Jack’s Old South, Chris Lilly of Big Bob Gibson, Mike Davis of Lotta Bull cooking team and last but surely not least Dr. BBQ, Ray Lampe. They watched and learned. Beyond that, they set out on a BBQ crawl visiting such classic BBQ joints as Louis Mueller’s, Black BBQ, Kreuz Market all in Texas along with all the favorite spots in Memphis and Kansas City. The eventually began cooking competitively on a regional basis across the southeast. They did this while maintaining full time jobs. The travel and friendship with fellow competitors was fun but the travel was getting to be a bit much and gas prices where at an all time high. Along the way, they had the opportunity to eat at the finest BBQ joints in America and taste the food of the best BBQ cooks on the circuit. They know what good BBQ tastes like. After much thought on whether to continue competing on a full time basis or try to spend more time in the area, they decided to open up their own place. Now that might not sound like a bad idea but when you consider there were several national and regional BBQ chains already in place and the country was in the middle of the worst recession since 1929 it was a leap in faith. Restaurants were closing left and right, but that didn’t matter because they knew the barbecue was going to be world class, different than you have ever tasted before; that once you tasted it you would be back. So in August 2009 the SmokeShack was born in Ormond Beach, Florida. Enough about the past, you want to know what makes SmokeShack BBQ different from all the rest of the places that cook pork butts, brisket, ribs and chicken. First, we cook on a real wood burning pit. The meat is fully cooked with the heat created from burning wood. Important in the above is “fully cooked with the heat created from

OUTconnected GUIDE! burning wood.” That means, we don’t DINING have a pit to a gas bottle or gas line. Cooking a bone-in boston butt or a slab of ribs using a gas cooker doesn’t make it barbecue. Adding liquid smoke to barbecue sauce isn’t the same as meat absorbing the flavor of burning wood over a period of time. If you eat at the SmokeShack you will be eating meat cooked in a real wood burning pit. The pork comes from bone-in Boston Butts averaging eight pounds. The ribs are a two and half pound average St. Louis cut. By St. Louis cut we mean the ribs come from the center of the rib cage. Loin backs, sometimes referred to as Baby Back ribs, come from the ribs closest to the back bone. We trim the fat and pull the membrane and rub both sides with our own rib rub. Brisket comes from the chest muscle of a cow. It is a working muscle, the toughest cut to prepare on a cow. We prepare both the flats and full packers. The sliced brisket comes from the flat and the chopped from the deckle (the burnt ends). The meat is trimed of “bad” fat, tenderized, rubbed. They are then smoked for approximately 10 hours (that is all that is necessary to get a good smoke flavor). We then not as what we call our brisket magic and finish it off. Well the chicken comes from chickens. No other way to say it. Same can be said for the turkeys. We do a smoked chicken wing. These are the large “party” wings which get a good coat of rub, smoked, cooled and flash fried to order. All our chicken is fully washed and brined for up to 24 hours prior to going into the pit. During the cooking process we keep the meat moist using our own blend of liquid mops and sprays. Finally, if you want to add barbecue sauce to the meat, you can. All the sauces are private recipes. They are all made from scratch. We offer a sweet, and I mean sweet, tangy, vinegar, mustard and hot sauces. The pitmaster likes to experiment so you might find some unusual sauces at any given time. We can’t imagine you would want any more but if you did, we offer a half-pound Angus burger. We turn that into a BBQ burger by adding pulled pork and onion rings. The kids can get a Ball Park hot dog with our homemade potato chips. You can get the pork and brisket in a wrap. Our BBLT is made with bacon, fried bologna, lettuce and tomato. The BBQ chimichanga has our pork, cole slaw, baked beans and cheese. Yes, we fry it. We have 15 different sides include baked beans, mac and cheese (both fried and creamy), fresh collard greens, fried okra, corn nuggets, onion rings, baked potato and crispy French fries. To satisfy the sweet tooth in you, we offer blueberry, peach and cherry cobbler baked on site along with out of this world buttermilk pie and apple crisp. And yes you can get a big scoop of ice cream with them. We don’t make the ice cream. Smokeshack also has a full service bar that features a lot of Moonshines, craft beer and of course premium liquors for your favorite adult beverages. All the above and a great staff makes the SmokeShack experience one that you just can’t get enough of.

re you looking for a new dining experience? We have a really exciting and unique establishment to showcase in this issue, LotsaPanache Bistro and Boutique. Our first impression of LotsaPanache Bistro was the warm and unique ambience of the restaurant. You are greeted by smiling faces and a well trained staff. The almost industrial look of the interior with its open ceiling and industrial lighting is in a word, “Cool”. Not like anything I have seen in our area. The seating is plentiful with intimate booths, tables and chairs, all very comfortable. There is a private dining room available for business meetings, wedding rehearsals, celebrations or parties. The “Board Room” as it’s called, has its own 60inch TV that also becomes a monitor for presentations. They have a bar that is well stocked with craft beers and a very nice wine list. A breakfast station is available that has fresh baked goodies and fruits with fresh- squeezed orange juice that is the best I have tasted. The food is spectacular. The menu is broad and varied with a Colombian, American flare and is pleasantly priced. The breakfast menu is full of standard favorites from Belgium waffles, omelets, steak and eggs with something very tasty and unusual, Breakfast Empanadas. Empanadas are a traditional Colombian light pastry that is stuffed with all of your favorite breakfast meats, eggs and cheeses…a delightful way to start your day. As we enter into the lunch menu, they offer wonderful wraps, burgers and handhelds. The Lostsa Burger is quite a treat, an 8 oz. burger cooked to your temperature, loaded with cheddar cheese, bacon and a fried egg on top, delicious! You also see the Colombian influence come more into play at lunch with items like Arroz Con Pollo, a traditional Colombian Chicken entree. Bandeja Paisa, the national dish of Colombia consisting of a grilled flank steak, chimichurri and spicy Colombian chorizo served with white rice, topped with a fried egg, red beans and fresh avocado. This is a meal and a half, so bring your appetite! When you enter the dinner hour, you see the Bistro transform into a different realm. The lighting is dimmed; the wait staff attire evolves into black jackets with red string ties. There are cloth napkins and a different table

service. Smooth live jazz fills the air and the menu takes on a more Colombian flair. The dinner menu has plenty of dishes to choose from featuring fresh fish, shrimp, steak and pork. Old movies from the 30’s, 40’s, and 50’s play on the large screen televisions to entertain you while you dine. These are certainly excellent conversation starters. At the inception of LotsaPanache Bistro, the group of five business owners was served lunches and dinners made from original Colombia family recipes. Dr. Steve Taborda, who is from Colombia and the dentist in the group, prepared the dishes alongside his Mother and shared his family recipes to bring originality to the Bistro. Everyone was astounded by the flavorful, savory dishes that were prepared. It was at that time, they decided that LotsaPanache Bistro’s menu was to be Colombian inspired so everyone could enjoy these savory treats. They also decided that the menu had to appeal to the masses, so plenty of American options were developed and included. The Bistro is managed by Don Burke, who is well known in our area, and has opened many restaurants over his career. His Chef, Rob Miller oversees the kitchen and his staff. This is why there is such a high level of quality and professionalism at LotsaPanache Bistro. As I mentioned in the beginning, there is also a beautiful boutique that is attached to the Bistro. As you enter the Bistro, the LotsaPanache Boutique’s entrance is to your right, so you can shop after you order your meal or before. This is perfect for date night, guys. Boutique owner, Megan Matevia, will be happy to show you around. LotsaPanache even has its own Dreamshop promotions owned and operated by Ed Gagnon. This is where you can order embroidered shirts, banners, promotional products, silk screened T-Shirts – almost anything to do with promotions. At the Shoppes at Southwinds, you can find Champion Cyclist Steve Bodnaruk who owns and operates The Hub Cycling. You can purchase a new bike or get your bike serviced. Next door, you will find Dr. Steve Taborda, DMD for all your Dentistry needs. In the same office, you will find Dr. Angela Moore, and Dr. Danielle Menneto, Chiropractors who can tend to your Chiropractic needs. These wonderful professionals are part of The Barnard Team headed up by L.G. Barney Barnard. Stop into LotsaPanache Bistro and Boutique to enjoy a wonderful dining experience. Also visit the other businesses at the Shoppes at Southwinds for your promotional, bike, dental or chiropractic needs. They are located at 3751 South Clyde Morris Blvd. Port Orange, Florida 32129. You can call for more information at 386-310-3069.

hef, Owner Ashlee Dzubella always dreamed of owning her own restaurant. Even as a child, she helped her mother bake in the kitchen as her mother was a baker by trade. Her Grandmother worked at a Fisher Price toy factory and supplied Ashlee with all of the children’s kitchen equipment she could ask for. At age 15, she worked at a restaurant named “Hoagie Brothers” in Buffalo. With dedication and hard work she became a manager. At age 19, she worked at a food purveyor operation that prepared food for cafeterias named AVI as a manager. She continued to work hard at making her dream come true. She grew up in Buffalo, New York and graduated Culinary School there. She decided to move to Port Orange to be close to family here. She continued her education at Daytona State College earning degrees in Business Management and Accounting. She was equipping herself with the knowledge and tools of the trade. This year she made her dream come to fruition opening Bella Ryan’s Deli in Port Orange. Growing up in Buffalo, there was a large Polish population there, so she was very fond of their food and culture. When she came to Florida, she couldn’t find any of the delicious food she grew up with and found that there were many people from Buffalo and New York in general, that loved Polish food. She decided to use her Grandmother’s recipes and create a menu that had Pierogies and regional foods like Beef on a Weck. That is a thinly sliced pile of tender roast beef on a Kimmelweck roll. A Kimmelweck roll is a hard roll similar to a crusty Kaiser roll, sprinkled with caraway and coarse salt and

VOLUSIA DINING GUIDE

WE KNOW YOU’RE HUNGRY!

Daytona Beach and the surrounding areas have always been my favorite place to visit, dine and play. It wasn’t until my brother started a dining guide in Brevard County that I realized that Volusia County and the great people that live here, visit here, work here, and dine here could really benefit from a dining guide like my brother’s. I have always loved photography and being a foodie, this was a dream come true for me. I want to thank all of my advertisers, my readers, my staff for their loyal support. And of course the wonderful restaurants and talented chefs that makes Volusia Dining Guide what it is. Thank you for ten wonderful years. Steve Blake

174 N. Beach Street, Downtown Daytona Beach Dash-a-Grill is a new addition to the historic Beach Street area. Is is the only Mediterranean and American Halal restaurant in the area. One of the unique facts about their delicious foods, is that is good for you. Everything that you order comes from their scratch kitchen. That means every item is made fresh to order using only the finest, natural ingredients available. They also have some of the best house made sauces, such as Arabica – tahini, onion, and garlic. Chef Ash and Chef Darlene are classically trained chefs and provide some of the best, unique Mediterranean and American cuisine that you will ever taste. From the tasty appetizers like Mussaca, a blend of roasted eggplant and other vegetables, is not only delicious, but packed with vitamins and minerals. It is not prepared traditionally, as it is served cold, blended, and it is vegan. Other offerings are Hummus, Baba Ghanouj, Tabouleh, Red Cabbage Slaw, all delicious and good for you. They have breakfast offerings like a sausage and egg burrito or a breakfast bowl with two eggs, choice of house made sausage or marinated steak and served with your choice of fluffy pancakes or crispy hash browns. Their freshly ground sausage is made from prime cuts of grass fed beef. The seasoning is inspired from the Southern Tunisian sausage, Merguez. Made with care, the quality is unbeatable and fresh. They offer many wraps that are amazing. Their entrees include vegetarian/vegan options like the Sheldon a combination of Rice, Sautéed Onions, Bell Peppers, Mushrooms, Tomato, Cucumber and Garden Dressing. Other great entrees include the Leonard which is Sliced Grilled Steak, Rice, Sautéed Onion, Bell Peppers, Mushrooms, and Arabica Sauce. If you are looking for more Mediterranean dishes they offer Shish Tawook, deconstructed Chicken, Bell Peppers and Onions served with Basmati Rice, Pickled Vegetables, and Garlic Sauce. Or Shish Kebab, Steak, Bell Peppers and Onions, not served in the stick, with Basmati Rice, Pickled Vegetables, and Arabica Sauce. Try the Howard if you prefer fish. Grilled Mahi-Mahi with Tabouleh and your choice of Arabica, Italian Vinaigrette or Chipotle Ranch. They also have Sandwiches & Burgers. Try their Sirloin Burger with Fries. The house-ground burgers are 100% Sirloin. Served with house-made Garlic Mayo, Romaine Lettuce, Tomatoes, and Cheddar Cheese. Love Reubens? Order the Reuben Sandwich with Chips. Sliced Corned Beef, Swiss Cheese, Sauerkraut, Thousand Island or Spicy Mustard on Rye Bread. The Fresh, Homemade Pizza is fantastic! Redesigned vegan dough handmade daily with lots of your favorite toppings available. The dough started as a project from Chef Ash to make Chef Darlene a pizza dough that was delicious, but didn’t have any dairy or eggs in it. Five alterations to the recipe led to this amazing dough that is chewy, crunchy and soft and the same time. They offer New Orleans Fried Wings, fresh - never frozen! Non-breaded and double fried for a crispy texture. Hungry? They can fix that! Dash - Grill also is the only restaurant with an upstairs dining room that overlooks the beautiful Halifax River and Beach Street. They have live entertainment. Call for details. They cater and host events. Check them out at www.dashagrill.com. They are located at 174 N. Beach Street, Daytona Beach, Florida 32114 Call for more information at 386-236-9909.
