his one started with an e-mail from a reader. He dined out at a fairly new establishment in town, saved his receipt and when his credit card bill came back noticed that his total wasn’t the same as was the receipt that he signed. He contacted the place didn’t get any satisfaction, and out of frustration I guess, sent me a note about the situation. It was a couple of bucks but the man had a point, here was a young person early in their career not doing the right thing. The server involved was not only ripping the customer, but also casting doubt upon a new restaurant trying their best in a tough market. Unfortunately this is not an isolated incident. Staffing a new restaurant is an iffy proposition at best in terms of hiring thirty strangers and hoping that you get all eagle scouts. Paying attention to your receipts when dining at a less than mature establishment is tip number one. I will follow with a few more “tricks of the trade.” Back when I was in the business they called it the “double whammy.” A lot of places add a gratuity to large parties, six or more in most cases. Too many places announce this fact in type too small to be legally used in a used car disclaimer. The gratuity shows up as a line item on the check and if the customer isn’t paying attention he tips on top of the gratuity which has been added. Check the bill if you are either dining with a large party or if you request separate checks. If the server does not call it to your attention that there has been a gratuity added, have a chat with the proprietor. The industry has been high tech for a long time in terms of their point of sale and accounting systems which are designed to protect the restaurants bottom line, but they do not do much for the customer, especially if the establishment manages to hire someone with bad intentions. Coupons are a great opportunity for the scammer. They get 10 copies of the houses latest twenty percent off coupon and the coupons are rung after a cash customer has left. The latest high tech computer system is the thief’s best friend. Before I manage to scare everyone off from ever eating out again, relax. There is a genuine positive morality which permeates the restaurant industry, but like every human endeavor, there are a few bad apples. Keep your receipt, check the bill, and enjoy a nice evening out. Happy dining, Morris Heinman

he story of SmokeShack BBQ is pretty simple. It began with a couple who loved to entertain friends and family with good BBQ. For years it was the Whited’s back yard for BBQ, football, parties for the kids teams growing up. But then there came a time when both children left for college giving Mom and Pop time on their hands to cultivate their craft. They studied their love of BBQ by attending cooking schools put on by the best in the business. They have spent time in the pit with the likes of the great Myron Mixon of Jack’s Old South, Chris Lilly of Big Bob Gibson, Mike Davis of Lotta Bull cooking team and last but surely not least Dr. BBQ, Ray Lampe. They watched and learned. Beyond that, they set out on a BBQ crawl visiting such classic BBQ joints as Louis Mueller’s, Black BBQ, Kreuz Market all in Texas along with all the favorite spots in Memphis and Kansas City. The eventually began cooking competitively on a regional basis across the southeast. They did this while maintaining full time jobs. The travel and friendship with fellow competitors was fun but the travel was getting to be a bit much and gas prices where at an all time high. Along the way, they had the opportunity to eat at the finest BBQ joints in America and taste the food of the best BBQ cooks on the circuit. They know what good BBQ tastes like. After much thought on whether to continue competing on a full time basis or try to spend more time in the area, they decided to open up their own place. Now that might not sound like a bad idea but when you consider there were several national and regional BBQ chains already in place and the country was in the middle of the worst recession since 1929 it was a leap in faith. Restaurants were closing left and right, but that didn’t matter because they knew the barbecue was going to be world class, different than you have ever tasted before; that once you tasted it you would be back. So in August 2009 the SmokeShack was born in Ormond Beach, Florida. Enough about the past, you want to know what makes SmokeShack

BBQ different from all the rest of the places that cook pork butts, brisket, ribs and chicken. First, we cook on a real wood burning pit. The meat is fully cooked with the heat created from burning wood. Important in the above is “fully cooked with the heat created from burning wood.” That means, we don’t have a pit connected to a gas bottle or gas line. Cooking a bone-in boston butt or a slab of ribs using a gas cooker doesn’t make it barbecue. Adding liquid smoke to barbecue sauce isn’t the same as meat absorbing the flavor of burning wood over a period of time. If you eat at the SmokeShack you will be eating meat cooked in a real wood burning pit. The pork comes from bone-in Boston Butts averaging eight pounds. The ribs are a two and half pound average St. Louis cut. By St. Louis cut we mean the ribs come from the center of the rib cage. Loin backs, sometimes referred to as Baby Back ribs, come from the ribs closest to the back bone. We trim the fat and pull the membrane and rub both sides with our own rib rub. Brisket comes from the chest muscle of a cow. It is a working muscle, the toughest cut to prepare on a cow. We prepare both the flats and full packers. The sliced brisket comes from the flat and the chopped from the deckle (the burnt ends). The meat is trimed of “bad” fat, tenderized, rubbed. They are then smoked for approximately 10 hours (that is all that is necessary to get a good smoke flavor). We then not as what we call our brisket magic and finish it off. Well the chicken comes from chickens. No other way to say it. Same can be said for the turkeys. We do a smoked chicken wing. These are the large “party” wings which get a good coat of rub, smoked, cooled and flash fried to order. All our chicken is fully washed and brined for up to 24 hours prior to going into the pit. During the cooking process we keep the meat moist using our own blend of liquid mops and sprays. Finally, if you want to add barbecue sauce to the meat, you can. All the sauces are private recipes. They are all made from scratch. We offer a sweet, and I mean sweet, tangy, vinegar, mustard and hot sauces. The pitmaster likes to experiment so you might find some unusual sauces at any given time. We can’t imagine you would want any more but if you did, we offer a half-pound Angus burger. We turn that into a BBQ burger by adding pulled pork and onion rings. The kids can get a Ball Park hot dog with our homemade potato chips. You can get the pork and brisket in a wrap. Our BBLT is made with bacon, fried bologna, lettuce and tomato. The BBQ chimichanga has our pork, cole slaw, baked beans and cheese. Yes, we fry it. We have 15 different sides include baked beans, mac and cheese (both fried and creamy), fresh collard greens, fried okra, corn nuggets, onion rings, baked potato and crispy French fries. To satisfy the sweet tooth in you, we offer blueberry, peach and cherry cobbler baked on site along with out of this world buttermilk pie and apple crisp. And yes you can get a big scoop of ice cream with them. We don’t make the ice cream. All the above and a great staff makes the SmokeShack experience one that you just can’t get enough of.

xecutive Chef Mitchell Gerow is our featured chef this month. He takes the helm of the all new Fusion 43 at Rose Villa located in historic Ormond Beach. It is noteworthy to mention that Chef Mitchell is accredited and certified with BCA (Best Chef America) staged under four master chefs in four disciplines of cuisine food, Italian, French, Japanese and American. Each certification was obtained by closely working with each chef for ninety days without pay. This is just part of the passion one has to commit themselves to become a true world class chef. Executive Chef Mitchell is just one of few in our area to obtain such accreditation. Mitchell grew up in Saratoga Springs, New York. It all started in High School, where he began working in a resort kitchen, then the local hospital when his summer began. It was evident that he had a desire to prepare food, and was very good at it. Mitchell became involved in photography to to hone his eye and be able to increase his skills on the presentation of his culinary creations. After high school, he moved to Colorado where he had a perfect scenario for a young man. His day was skiing during the day and working in the resort restaurants during the evenings. His goals were to continue to work for as many great chefs as he could, and still have fun. From Colorado, he moved to Vermont and then to Boston. Boston is home to many great restaurants. He worked at many including the famous Sonsie, The Independent in Union Square, The Brasserie JO, a long-time favorite among Boston restaurant goers, serving authentic French cuisine in the heart of Back Bay. He even worked at the revered Harvard Club of Boston. At age twenty five, he opened his first of many restaurants named “The Good Life” in downtown Boston. The Good Life is still open today. His desires to learn more about agriculture and about organic farm to table style cooking, led him to western New York to work and cook with the Amish. They are very basic people, but are very knowledgeable about getting the most flavor from their food with meager amounts of seasoning. From Amish country, he moved to Portland, Maine where he opened Evangeline, a French inspired, nationally accredited restaurant for fine dining. His passion for the healthy farm to table aspect, led him to open “ The East Ender”

This was inspired by the Amish. Everything he made, he procured or grew, prepared and served himself. Everything was made inhouse. Once again, his desire to learn more, took him to Chico, California in the Napa Valley area to learn more about agriculture. He and a friend opened a restaurant that was very successful there. As time went on, Mitchell’s parents, tired of the cold winters and most of his family moved south to Florida to live. Upon much urging, his parents convinced him to just take a vacation and visit them in sunny Florida. He did and never went back to California! Chef Mitchell discovered an opportunity while visiting his family. Fusion 43 was on the market, It was a perfect fit for his diverse talents and vision for what Fusion 43 could be. With his experience and dedication, Fusion 43 has evolved into a spectacular casual fine dining experience. His less is more attitude with seasonings, brings out the true flavor of his wonderful meats and veggies. You never loose touch with what the flavors of his entrees are meant to be. “It is the way food is prepared that sometimes masks the true flavors”, Chef Mitchell informed us. “ If it grows together, it goes together” he explained. Being a true proponent of procuring his ingredients locally, also means that if the best ingredients are only obtainable from Italy, that is where he procures it. He will only settle for the best of everything he uses. His menu is vast and delightful with much of his worldly knowledge put forth in his creations. His menu goes from simple to eclectic and all in between. The bar menu has simple items from Shrimp Cocktail to exciting Smoked Vidalia Onion Rings, Frog Legs, Chicken Satay and South of Buffalo Chicken Wings. If you are a steak aficionado, you will love his 34oz. aged grilled beef porterhouse with smoked onion rings and vegetables. This is melt in your mouth delicious! He has savory roasted duck breast with creamed spinach and parsnips with a candied orange glaze. You have to try this one! If you are a pork lover, you will be ecstatic over his maple brined double pork chop with candied apples and cheddar grits. If you love seafood, his seared scallops served with Carnaroli risotto, bacon and leeks will wow you. Also, try his wonderful “43 Stew” packed with all kinds of seafood, potatoes, Andouille sausage and saffron garlic sauce. This is a culmination of flavors that will burst your taste buds with delight. There are of course salads and appetizers that are equally exiting. Every menu item, sauce dressing, breads are are made fresh from scratch daily. He is Mike Sepulveda. Mike is originally from New York, but lived in Miami, Atlanta, Tallahassee and Orlando before settling in New Smyrna Beach. Mike has been tending bar for 12 years now. Seldom do we see a bartender with credentials like Mike’s. He is a member of the United States Bartender Guild, also a Certified Beer Server through Cicerone. Mike is knowledgeable in every aspect of crafting beer. He has worked for many bars and micro breweries, where he learned hands on, the science of crafting beer. His love for craft beer really started in Tallahassee, where he worked at Proof Brewing Company making craft beer. Mike can tell you just about everything you may want to know about craft beer. When I asked him to recommend a craft beer, he told me that the best way is to try a few. When I find one I liked, he could show me the many that would appeal to my taste. Mike is also a mixologist, and can make you any kind of Martini or mixed drink you want to try. If you don’t see a particular Martini that you desire on the Martini menu, just let him know what your looking for, he will gladly make one for you. The Martini menu has 15 signature martinis. The Half Wall has 76 draft craft beers and over 100 bottled along with an extensive full liquor bar. Half Wall has great food too. Mike can pair up any craft beer or drink with anything on their delicious lunch or dinner menu to give you a fantastic dining experience. A house favorite martini is the “ Swedish Fish Martini.” Here’s how you can make one at home. Start with a shaker full of ice, add 1.5 oz. of Stoli Raspberry Vodka, 1oz. of Chambord, add a splash of cranberry juice and a squeeze of lemon and lime. Pour into a chilled Martini glass, garnish with a “Swedish Fish” candy and enjoy. Or better yet, come over to The Half Wall Beer House and have Mike make you one. This will also give you a reason to try their delicious food. Mike and the staff invites you to experience great food, craft beers and drinks that everyone in your party will enjoy! Anyone can choose from a variety of appetizers, homemade soups, salads, burgers, vegetarian dishes, and unique sandwiches. Appetizers include wings featuring 9 different sauces to choose from, Boom-Boom Shrimp, Ahi Tuna or traditional foods like nachos or hand breaded chicken tenders. The Half Wall serves up daily homemade Chili and its very own Beer Cheese Soup, which pair well with any salad on the menu.
