Cinco de Mayo is not the only thing happening in May for Tia Cori’s Tacos, they are celebrating their 4th anniversary. This is Daytona’s only Taqueria, and a locals favorite for authentic Mexican food. Most of this style of restaurants are found in the Southwest or Northern Part of the United States. A little over thirteen years ago, PJs Seashack opened its doors by original owners Jeff & Paige Gheris with one thing in mind: provide a place for locals to hang out and get great food. Fast-forward to March 2013 when six visionaries took a great dining spot and made it even better. They dropped PJs off the name, so it now goes by “The Sea Shack”. Owners Bobby & Kara Byers, Mark & Heather Dam and Dan & Melisa Reed all have extensive restaurant and bar experience in the Volusia County area. Bobby & Kara previously owned Flagler Tavern, while Mark & Heather are current owners of Beachside Tavern and Dan & Melisa (along with Mark & Heather) own Cafe DaVinci, a popular live music spot in Downtown Deland. As you can imagine with their successful paths all united on one front, they know how to create a great restaurant. First thing on their agenda was to revamp the menu and improve food quality. Executive Chef Kurt Strauss is part of the team at the newly opened, Pub 44 in New Smyrna Beach. Chef Kurt brings 27 years of experience in the restaurant business to Pub 44. Being born and raised in South Florida, Chef Kurt was lucky to have his Father, Bernie Strauss, be an international pilot. Travelling to Europe at a young age and visiting family from coast to coast, allowing him to experience very traditional regional food, family recipes and unknowingly a love that he would learn to share. With his mother’s support he entered his first cooking contest in Miami at 13 years of age and won with a Roasted & Stuffed Whole Red Snapper. Working in restaurants from American to Asian cuisine Kurt picked up tricks and family recipes of owners and chefs along the way. Read about Executive Chef Kurt Strauss and Pub 44 on page 30.

Every item on the menu is prepared fresh to order using the finest ingredients available. There hot sauces are made in house there is three levels of hot : Hot, extreme and Too Hot For Tia, for those who can really handle Hot. Many of the recipes are from the family that owns Tia Cori’s Tacos. Corina Gomez and her brother Benjamin Parra have brought our area a true taste of Mexico. Corina was born in Chicago, but has spent a large portion of her life in Mexico. This is where she learned the authentic way of preparing Mexican food. Ben also has a love of the culinary arts. This comes from their childhood as their parents owned a Mexican restaurant in Chicago. They both grew up in and around the restaurant world. Corina married young and started a family. She had to learn the responsibilities of running a household, much like you do in a restaurant. Ben had always worked in the construction field, but also had a passion for cooking. So when the economy slowed and construction all but stopped, Ben made the suggestion that they should open a Taqueria. It was agreed and so, Tia Cori’s

Now Tia Cori’s Tacos has opened their 2nd great location in Ormond Beach. This location is much larger than the Beach Street restaurant. It has a full liquor bar, a large main dining room and a beautiful patio dining area. The menu has the same great food as their other location, but has an expanded dinner and menu selection. Bringing their fantastic flavors to the residents of Ormond Beach it has already been a great success. They were awarded the Best Of Award, for the best Mexican Restaurant in the Daytona Beach area and the Urban Spoon Award, 2013 for Mexican Best Restaurant. As expected, with a name like The Sea Shack, excellence in seafood is evident in everything from a newly revised Lobster Mac & Cheese recipe, to their savory, delicious Beach Buckets that are loaded with a variety of tasty treats from the sea. If you like fresh seafood, they have the Fish Market with items like Grilled Salmon cooked atop a cedar plank then topped with freshly baked brie and blackberries. This is absolutely to die for. If you prefer something from the land, their offerings are spectacular. They have an 8oz Rockefeller Sirloin that is served rockefeller style with a creamy spinach and bacon topping. If you prefer something with a little spice, you won’t want to miss out on the 14oz Ribeye cooked to perfection then topped with cajun fried onion petals. These are just a few of the offerings on the vast menu that is full of quality and hefty portion sizes. If you’re in the mood for lunch, check out their daily specials and $8.88 lunch menu - it is 8 items for $8.88 and it includes a drink! Needless to say they have great food at a fantastic value. In December 2013, the new owners added a front of the house manager, Dennis Rowan, to run their day to day operations. “Dennis has been a great asset to our company and we are thrilled with his performance on things such as improving our scores on TripAdvisor and ensuring every guest leaves satisfied” said Dan Reed. In addition, they have a full liquor bar packed with your favorite libations including the beer taps that are sprouting out of an old Evinrude outboard motor. The decor has a maritime theme and quite frankly, you could spend a whole day just looking at all of the oddities such as a cactus growing out of an old Mercury outboard. There is a whole myriad of things to see. If you enjoy outdoor dining, they have a non-smoking deck with picnic tables that offers the same great food and service you will get inside of the building. xecutive Chef Kurt Strauss is part of the team at the newly opened, Pub 44 in New Smyrna Beach. Chef Kurt brings 27 years of experience in the restaurant business to Pub 44. Being born and raised in South Florida, Chef Kurt was lucky to have his Father, Bernie Strauss, be an international pilot. Travelling to Europe at a young age and visiting family from coast to coast, allowing him to experience very traditional regional food, family recipes and unknowingly a love that he would learn to share. With his mother’s support he entered his first cooking contest in Miami at 13 years of age and won with a Roasted & Stuffed Whole Red Snapper. Working in restaurants from American to Asian cuisine Kurt picked up tricks

and family recipes of owners and chefs along the way. With his family and friends he was able to learn new culinary spices and ingredients from Mexican, Korean, Japanese and Cuban cultures. Always trying to keep to the basics, and making the dish for what it is, homemade to order. Chef Kurt started out like many do in the back of the house at restaurants by working his way up from dishwasher to fryer and over time up the line to Kitchen Manager. Kurt has worked for corporate, private, Fine Dining and Dives to even his own personal gourmet food truck. Chef has been on both sides of the restaurant business being on the sales side with food distribution companies and also as a private wine broker. Not always driven in the culinary career, Kurt was not very forthcoming with his talents in the kitchen and hid most of his skills for a long while. As a Law Enforcement Officer for 9 years in and for Volusia County, Kurt worked his off duty time in restaurants. After an injury Kurt found his way back into food and wine sales and still working with or for Chef’s here and in Arizona and California acquiring as much knowledge as possible. It wasn’t until a friend, Danny, brought him back into the restaurant scene to show his true talents and his love for food. Now working for Kevin Merkel, Scott & Nick Pisani, owners of Pub 44, Chef Kurt is able to show what he truly is capable of. One of Chef Kurt’s Favorite dishes to prepare is his famous Chateaubriand. Marinated in a special mix of seasoning and juices for 24 hours, this 8oz Filet Mignon is then seared to a beautiful caramelized char and served with roasted red potatoes and sautéed vegetables. This dish is special and only served pre-ordered or as a dinner special. Chef Kurt is constantly working on new menu ideas to keep Pub 44 going forward with new and trending culinary dishes. With the upcoming Summer Concert Tour there will be plenty of choices off the menu and daily specials which will have you craving the bite. Always trying to learn more and researching traditional recipes, Chef Kurt keeps the most essential items around him, his kitchen crew.

Michael Garces grew up in the area, but has spent much of his recent years traveling and living in a variety of places, including Hawaii, New York, and Colombia. He likes working at Outriggers because he has the opportunity to make excellent drinks and interact with interesting people, while enjoying one of the best views you could ask for at work. When he’s not bartending, Michael is usually writing, surfing, traveling, or doing a mixture of them all. One of his favorite drinks to serve is the “Zombie.”

The story of SmokeShack BBQ is pretty simple. It began with a couple who loved to entertain friends and family with good BBQ and turned into a real business. For years it was the Whited’s back yard for BBQ, football, parties for the kids teams growing up. But then there came a time when both children left for college giving Mom and Pop time on their hands to cultivate their craft. They studied their love of BBQ by attending cooking schools put on by the best in the business. They watched and learned and eventually began cooking competitively on a regional basis across the southeast. They did this while maintaining full time jobs. The travel and friendship with fellow competitors was fun but the travel was getting to be a bit much and gas prices where at an all time high. Along the way, they had the opportunity to eat at the finest BBQ joints in America and taste the food of the best BBQ cooks on the circuit. Bottom line, they know what good BBQ tastes like. After much thought on whether to continue competing on a full time basis or try to spend more time in the area, they decided to open up their own place. Now that might not sound like a bad idea but when you consider there were several national and regional BBQ chains already in place

and the country was in the middle of the worst recession since 1929 it was a leap in faith. Restaurants were closing left and right, but that didn’t matter because they knew the barbecue was going to be world class, different than you have ever tasted before; that once you tasted it you would be back. So in August 2009 the SmokeShack was born in Ormond Beach, Florida. Enough about the past, you want to know what makes SmokeShack BBQ different from all the rest of the places that cook pork butts, brisket, ribs and chicken. First, we cook on a real wood burning pit. The meat is fully cooked with the heat created from burning wood. Important in the above is “fully cooked with the heat created from burning wood.” That means, we don’t have a pit connected to a gas bottle or gas line. Cooking a bone-in Boston butt or a slab of ribs using a gas cooker doesn’t make it barbecue. Adding liquid smoke to barbecue sauce isn’t the same as meat absorbing the flavor of burning wood over a period of time. If you eat at the SmokeShack you will be eating meat cooked in a real wood burning pit.

The pork comes from bone-in Boston Butts averaging eight pounds. The ribs are a two and half pound average St. Louis cut. We trim the fat and pull the membrane and rub both sides. The brisket comes from fifteen pound full packers. We separate the flat from the deckle. The sliced brisket comes from the flat and the chopped from the deckle (the burnt ends). And well the chicken comes from chickens. No other way to say it. Same for the turkeys. We do a smoked chicken wing. These are the large “party” wings which get a good coat of rub, smoked, cooled and flash fried to order. You can get all the above in various combinations or ala carte.

Next, is the concept of layers of flavor. Flavor can be added at various stages of the cooking process, before, during and after the cook. At SmokeShack we add flavors at all stages of the cooking process. Brines and injections are used to add flavor inside the meat prior to the long smoking process. We have also developed our own dry rubs for the various meats. We have one for the pork butts, a different one for the briskets, a different one for the ribs and an even different one for the white meats. They were all designed and tested to bring out the natural flavor of the meat; to compliment, not change the taste of the meat. During the cooking process we keep the meat moist using or own blend of liquid mops and sprays. Finally, if you want to add barbecue sauce to the meat, you can. All the sauces are private recipes. We do not use any commercial sauces as a base sauce. They are all made from scratch. We

offer a sweet, and I mean sweet, tangy, vinegar, mustard and hot sauces. The pitmaster likes to experiment so you might find some unusually sauces at any given time. Now we are offering a cranberry jalapeno which goes great on the chicken and turkey. We can’t imagine you would want any more but if you did, we offer a half-pound Angus burger. We turn that into a BBQ burger by adding pulled pork and onion rings. The kids can get a Ball Park hot dog or a plain old peanut and jelly sandwich with our homemade potato chips. We have 15 different sides include baked beans, mac and cheese (both fried and creamy), collard greens, fried okra, corn nuggets, onion rings, baked potato and crispy French fries. To satisfy the sweet tooth in you, we offer blueberry, peach and cherry cobbler baked on site along with out of this world buttermilk pie and apple crisp. And yes you can get a big scoop of ice cream with them. We don’t make the ice cream. All the above and a great staff makes the SmokeShack experience one that you just can’t get enough of.
