or those of you who don’t know about Billy’s Tap Room, it is one of the areas oldest restaurants. Now celebrating it’s 90th anniversary, it is rich with history in beautiful Ormond Beach. Billy’s started out as a gift shop and tearoom on the property of the old Ormond Hotel. In 1926, Billy MacDonald was selling fruits, jellies, sandwiches and homemade beer there. By the late 1930’s Billy’s became a true pub. As time went on, Billy found that the patrons of Billy’s needed more than just beer and sandwiches and started offering more food choices. By the 1950’s Billy’s was deep into the food business creating the strong following they have today. You have to be a pretty good businessman to take over a landmark restaurant like Billy’s Tap Room & Grill. That is just how Doug Rand and his wife Lillian felt about acquiring Billy’s. They knew Doug would be up to the task of tweaking and upgrading the legendary menu without disturbing the loyal patrons of Billy’s. Doug has accomplished this and more. Generations of the dining public have entered Billy’s Tap Room & Grill expecting only the best, leaving happy, content and satisfied. Doug and his staff continue to fulfill those expectations. In 1998 he opened The Potato Patch, a breakfast and lunch diner in Deland, Florida. Doug and Lil still own and operate the very popular restaurant. Doug had been looking for quite a while for a restaurant that he could open for a casual, but upscale dinner service. Doug had almost given up, when his brother, being a realtor, told him of an opportunity. A landmark restaurant in Ormond Beach was being sold. After meeting with the selling realtor, Doug and Lillian, felt they had found what Doug was looking for, Billy’s Tap Room & Grill. reopen Billy’s Tap Room & Grill. May 25th, 2011 marks the day that Doug and Lillian opened the doors of this iconic, landmark restaurant with great success. Attracting new customers as well as pleasing the old ones. The Rotary Club still meets there every Wednesday for lunch, just as it has for over 25 years. As one would expect, being originally from New England, Chef Doug’s favorite genre of food to prepare is Seafood. The balance of flavor he has a talent for, is to bring out the flavors of his seafood, without loosing the natural flavor. He doesn’t believe in burying it in heavy cream sauces or other concoctions. Doug informed me “Simple seasonings do more for the flavor of seafood than anything else”. He also loves the diversity that can be created with seafood. His legendary Crab Cakes are just one example. No fillers, bleaches, or sodium, just 100 % Natural Crab. This is a delight ! They feature Live Main Lobster and Prime Rib daily. The steaks are legendary as well. They only use Harris Ranch Beef, with each steak being hand carved and hand selected. You will always have your steak cooked to your desired temperature, seasoned to perfection. Satisfaction and quality is what you get at Billy’s. Chef Doug and his staff make sure of that. Doug has surrounded himself with what he believes are three of the best key people in the business, Matt Baldridge, Shawn Beers and Tara Zaragoza. His support staff makes for a smooth running operation. All well seasoned veterans of the industry. It takes good people to make a great restaurant. Doug also believes in supporting the community. He shops for his produce and seafood at local markets and seafood vendors. He always hand selects each ingredient and uses these local vendors as much as possible. Future goals for Billy’s, is to bring more seasonal items to the already fantastic menu. Doug is always looking for ways to bring the dining public the best dining experience possible. wners Chip and Renee’ DeAngelis have created a very diverse and beautiful restaurant. Eclectic would best describe it. The restaurant is comprised of four separate dining rooms and a full service bar. The main dining room and bar are combined. The other three dining rooms are separate and strikingly different. Each has its own theme, like the Loop Room, the Verona Room and the Bistro. The three rooms are very unique, fun and exciting. An excellent place for sharing food and conversations. The main dining room is spacious, comfortable and impeccably decorated, as are the other rooms. This was the result of Renee’s fantastic ability to tastefully appoint wall art, soothing colors, striking lighting fixtures and comfortable seating. The same is the case in the other rooms, each having it’s own identity. The menu that was created is equally diverse. Chip has employed the craftsmanship of award winning Executive Chef Casey Ford. This is a restaurant that you could come to everyday of the week and be pleased with the vast array of items and prices that are available to you. t is said that “Hard work pays off “ and that would be the case for Chef Kevin Caldwell of DJ’s Deck in Port Orange. Kevin started working at DJ’s Deck at the age of 15, bussing tables and doing prep work, along with all the other unwanted jobs that are common at the bottom. Kevin displayed that sticktoitness that all employers love to see. When all of the other kids his age were playing and fishing, Kevin was reporting for duty. As time went on, Kevin graduated from Spruce Creek High School. He then acquired some culinary courses at Daytona State Collage to help further his career. Kevin worked under three different chefs at DJ’s Deck, each teaching Kevin the culinary “ropes” and how to run a kitchen. David and Kim Graham, Owners of DJ’s Deck, have watched Kevin grow from Bus-boy to Chef in a little over eight years. Kevin kids around and claims, Kim and David adopted him. Kim and David are very proud of Kevin, and appreciate the contributions and acquired abilities

that make Kevin the Chef that he is. The kitchen is Kevin’s total responsibility from stem to stern. He does everything from ordering, selecting his daily stock of ingredients, meats, veggies and seafood. Also seeing to it that the restaurant is ready for whatever demands the customers have each day. All manners of business and day to day operation, are his sole responsibility. Kevin does have a Sous Chef that helps take care of cooking when the demand is necessary or when Kevin takes a day off. Kevin’s favorite dish to prepare at DJ’s is his own special spicy boiled “Peel and Eat Shrimp”. Other favorites include fried frog legs and soft shell crabs. These are seasonal, but when they are in, the customers love them. Every entree ordered is prepared fresh to order as well, insuring you get that fresh taste that you would expect. You can tell the difference! The menu is loaded with tasty treats, including one of the best burgers in the area, to fresh fish, oysters and clams, fried or steamed. Shrimp can be ordered fried, grilled or boiled. There are chicken tenders available with sauces from mild to wild. You can order their famous Gumbo and Chowders all year long. The Kiddies have their own menu too. They can choose from a variety of items like tasty Chicken Nuggets, homemade Mac and Cheese, Kids Fish, Mini Burgers and a Grilled Cheese Sandwich. For the adults there are speciality frozen drinks, Daiquiris, Pina Coladas, Draft Beefs, Bottled Beers, Wine, Tea and Sodas. They even have monthly Beer tastings and let the customers choose the newest beer selections for that month. DJ’s Deck has other events throughout the year, so call for more information. Outside of work, Kevin likes to cookout, play horseshoes, poker, (Texas Hold-em) and basket ball. He has an aspiration of someday being a “Storm Chaser” to get up close and personal with a Tornado, but not to catch it! Kim and David feel Kevin is very instrumental to the success of DJ’s Deck and would ask you to come try out what makes DJ’s Deck the great place that it is, Chef Kevin’s delicious food. Ernie Morris from Racing’s North Turn in Ponce Inlet is our bartender we love this month. Ernie is originally from Sarasota, Florida and is a second generation Floridian. This industry came natural to Ernie as he has been either working at, or around restaurants and bars since he was 13. His parents owned a bar & grill so he grew up in that environment. He loves the people and the fellowship at Racing’s North Turn. He says “Between the workers and the regulars, it’s like a great big family”. Ernie has been there for 8 1/2 years and everyone loves him. Outside of work, he loves traveling, reading literature, frequenting other bars and concerts.
