1. NATURE IMMERSION GETAWAYS Mental health continues to be a hot topic, as rates of anxiety, stress and depression continue to chart higher across all age groups. Probably not coincidental, we spend less time in nature and more and more time indoors, and in front of screens. Seems we needed science to figure out that being outdoors calms the body and mind, and actually results in both a reduction in cortisol levels (the hormone responsible for stress) and depression. Time in nature is being prescribed by doctors, and nature getaways provide much needed Vitamin D and an opportunity for your mind to clear and relax.

Gone are the romantic days of air travel, with in-flight cocktails, cozy slippers and full meals with actual silverware. Okay, maybe the smoking policies weren’t all that healthy, but today’s air travel can be a downright unsavory and stressful experience. Long security lines, flight delays, cramped seats, lack of hydration - thankfully, collaborations among airports, airlines, and wellness businesses are starting to emerge. Airports are experimenting with healthy design, such as adding natural daylight, plant walls, and outdoor and indoor green spaces, and spa, fitness and yoga offerings are popping up for pre-flight relaxation and movement. While travel nourishes the soul and promotes personal wellness, it can be damaging to our planet. The very ‘on the go’ nature of travel lends itself to single-use plastic over-consumption - items like utensils, straws, bags, and cups, used once, maybe for a few minutes, and then thrown away.

While they are convenient, they don’t biodegrade and can exist for 1000 years, leaching harmful chemicals and polluting our landfills and oceans. Plastic also leaches chemicals into the food or beverage it stores, which in turn, is ingested. A quick Google search for plastic pollution will give you all the negative data and images you need for motivation...so let’s focus on solutions! You can stay prepared to say, “No thank you” to single-use plastic and similar, unnecessary waste by following a few tips and strategies on the go: 1. Bring your own water bottle: Most airports have water filling stations, but you can also fill your bottle in less obvious places including markets, grocery stores, restaurants, coffee shops, or any convenient store with soda machines (there is usually a tab for water). Worried about water quality? Purchase a bottle with a filter. 2. Bring a reusable coffee cup: You can ask the barista or flight attendant to put your drink right in your cup. Remember, even paper coffee cups are lined in plastic. 3. Pack your own snacks: Snacks on the go will usually be packaged in plastic. Make your own snacks or shop your favorite bulk section for wholesome, plastic-free treats before you leave. 4. Pack empty food containers: Stainless steel is a popular, durable, plastic-free option and can hold everything from bulk snacks at the local market to scones, fresh fruit, deli salads, leftovers from a meal out, or a to-go order at any restaurant. Just ask for your to-go item to be packed in your own container. 5. Bring reusable cotton produce bags: These bags come in handy for bakery items, bulk snacks, fresh produce or bread, shells, jewelry, or souvenirs.
6. Use your own utensils: Keep a bamboo cutlery set and cloth napkin with you. When you order food or snacks you can politely decline the plastic utensils. Why bamboo? The knife will pass airport security whereas stainless steel will not. 7. Pack a cotton string bag: It will compact to fit in your purse, pocket or backpack, but expand exponentially in use. Perfect for a trip to the market, shopping, or containing items for daily outings. 8. Try stainless steel straws: They come in a variety of sizes for cocktails, tall drinks, or smoothies. Just order your drinks without the straw! 9. Pack Beauty Kubes: Multifunctional, dry, plasticfree, and compact, these shampoo and body wash cubes are a travel essential. Adaptogens and functional foods. Herbs, roots, berries and fungi are in vogue. They help your body deal with stress and can come in everything from pill form to foodstuff, to smoothies.1 Eat less meat. A recent Dalhousie University survey identifies price, environmental concerns, and animal welfare as primary factors encouraging Canadians to consume less meat. While most intend to keep meat as part of their diet, 50% of those surveyed intend to reduce the amount.2 The munchies. Changes in the law have opened the floodgates on Edible Marijuana products. Expect to see a bevy of new cannabis-infused products on the shelf; from beer to brownies.3

WE SPOKE TO CHEF JAMES OLBERG, EXECUTIVE CHEF OF NITA LAKE LODGE IN WHISTLER, ABOUT SOURCING LOCALLY, ROOFTOP GARDENS, AND WEST COAST VIBES. Wander: What originally drew you to the West Coast? Chef Olberg: I moved to British Columbia from Alberta almost 20 years ago, drawn by the beauty of the west coast of Canada and because it’s extremely different from Edmonton. The job opportunity initially got me here, and then the lifestyle kept me.

The rooftop garden is such an exciting and unique element of the Lodge. How long has it been in operation, and what’s being grown? The rooftop garden has been a part of Nita for 10 years, and over the past two years we have been developing it further, trying to find ways to maximize the space and yield of produce we can grow on the roof. We grow leafy greens for our salads, carrots, lavender, herbs, and lots of edible flowers. wander-mag.com

How did you come to your philosophy of local and sustainable food? Local being coastal B.C., it makes complete sense for all kinds of reasons. Fresher products. Suppliers are much more knowledgeable in this area. The philosophy is to look around and see what people are using, talking to suppliers about the products they sell, and sourcing local farms. We have our garden for produce while in season. We also are cautious to follow the guides by Ocean Wise to ensure we aren’t using fish species that are on the verge of collapse. Is sourcing locally a challenging model? What’s the vetting process for selecting suppliers? Suppliers must prove themselves just like a chef would. I’ve been using the same suppliers for almost 20 years, and there is a lot of trust and resourcefulness. Knowledge is king. Knowing what’s out there and also what people want to eat. B.C. has strong products - a lot of our chicken and seafood are from here, other meats from Alberta. Sometimes we source from the East Coast as well, because you just have to. wander-mag.com
Another angle to sustainable eating is food waste. How do you approach it? We have a strong recycling and compost program here at Nita. We are precise in our volumes and keep our fridge stock tight. We are very cautious about controlling how we run our business to reduce or limit the amount of waste. What’s special about Whistler (or Nita Lake) as a setting for what you do? The lake itself. The restaurant overlooks the mountains and lake, so it’s an all-season advantage, a real sense of being connected with nature. What changes or trends are you seeing in local or “ethically-sourced" eating? Veganism and using ancient grains in breads as well as in dishes. We definitely research farms to ensure animals are treated ethically and don’t mind paying extra. It’s important, and also adds another level of consciousness as a chef, and ultimately for our guests. It’s ethics - plain and simple. 28

What can guests of the Lodge expect (dining-wise) this year? Very seasonal menus. This summer we plan to serve fresh B.C. oysters on ice. Fresh, vibrant products, and making the most of our rooftop garden greens, flowers, herbs, cherry tomatoes, and carrots. Can you share some of your favourite West Coast ingredients? Kuterra salmon, Dungeness crab, and mushrooms (from Seattle). What herbs get you most excited? Rooftop garden fresh, of course! I'm excited about flowers such as Nasturtium. Flower leaves with distinct flavours. Chervil is also a beautiful herb. Can guests find vegan, gluten-free, and dairy-free options on the menu(s)? Yes – always! Last question: we’re having a potluck (and thrilled you’ll be attending!). What do you bring? Tiramisu.

ood invariably holds meaning, and, for some, can be one of the biggest considerations when planning a trip and choosing a destination. For vegans and vegetarians, however, dietary concerns may traditionally have proven to be more limiting to travel plans than excitementprovoking. Though “alternative” diets may have been left out of the travel foodie culture for many years, as awareness has increased around the environmental degradation, human health implications, animal rights issues, and spiritual disconnection associated with meat consumption, the trend towards vegan and vegetarian diets has grown into a well-established lifestyle choice and, as evidenced by the increase in plant-based options, a more widely accepted approach to eating. Full disclosure: I am not a full-time vegan or vegetarian at the time of
writing. I have been in the past, but since I first and foremost encourage everyone to tune in to what works best for their own body, I do eat fish and meat on occasion because it works for me. I consider myself a flexitarian and am a huge proponent of organic, plant-based eating at home and abroad, and have followed a vegan diet while traveling. Labels aside, my travel experiences have actually been a catalyst in my decision to increase the amounts of plants in my diet, both so I can feel healthy and energised enough to do everything I wish to while I’m on a trip, and also thanks to the broader perspective I gained of the effects that excessive consumption has in all corners of our planet. As many travelers know, by seeing the world, we often see our own impact in it more clearly. In the ten years since I started traveling around the world, 31

I’ve not only made changes in my own eating patterns, but have been happy to see signs of a shift in the global foodscape, with an increase in the number and quality of plant-based restaurants, products, and services available. Melbourne, Australia is home to many well-established vegan, vegetarian and even raw food restaurants ranging from high-end dining options to a non-profit that allows you to ‘pay as you feel’ for your vegan meal. Many spots have extensive menus offering opportunities both to try new veggie dishes and to get your favorite standbys.

Ubud, Bali also has a wide range of options available at great prices. You can drink fresh vegetable and fruit juice and dine on inventive plant-based meals and decadent desserts every day for a small fraction of what you’d pay at home. Raw Food Bali runs ‘cooking’ lessons, so you can add some new recipes to your repertoire or prepare nourishing meals for yourself with local produce in your Airbnb kitchen. In Mexico City, the meatless movement is catching on quick and in the trendier, more tourist-oriented neighborhoods like Condesa and Roma Norte, small casual vegan spots seem to be around every corner.

These range from basic international options like falafel and veggie burgers to adaptations of Mexican favorites - think spiced cauliflower or sweet potato-filled tacos! Even smaller towns and airports around the world, two notoriously difficult places to access wholesome foods, are beginning to adapt and may offer plant-based options (beyond a garden salad) on request. Tour operators are embracing the change as well: in 2018 tourism industry leader Intrepid Travel launched ‘Vegan Food Adventures’ in India, Thailand and Italy, three sureto-be-delicious destinations. These eight-day tours include some of the expected sights and throw in special activities like a vegan Thai cooking class in Chaing Mai, market visits in Jaipur, and an organic farm-to-table vegan feast in the Tuscan hills. Other companies, like Vegan on the Map, have been in business for several years offering vegan tours in diverse

“Paddle, paddle, paddle! Get ready! Up, up, up!” I can barely hear the surf instructor’s shouts over the crashing waves, trying as I am to remember all the steps required to actually get up, crouch down, arms out, keep your balance, and … surf. After an hour or so my attempts yield one glorious 10-second ride that could just qualify as catching a wave. The rest end in falls and crashes, quite graceful I assume. But, I did it. Life goals! 41

his takes place in beautiful Samara, a beach town on the Pacific coast of Costa Rica. After a revitalizing yoga session on tropical Playa Carrillo early in the morning— where the sun salutations felt truer to life than inside the studio at home—the day has been absolutely inspiring. The Costa Rican infrastructure is excellent, especially compared to neighboring countries, and felt quite safe and welcoming. I was surprised to learn that water was potable throughout the country, and the natural beauty is bar none, from beach to rainforest to hillsides so lush they look soft to the touch. Waterfalls took my breath away, while being in the presence of the towering (and active) volcanoes felt quite sacred. Like any country, Costa Rica has its contradictions, where protected areas (some 25% of the country) contrast with polluted streams and the clearing of rainforest for pineapple export, which many farmers rely upon. The dichotomy was evident and yet there is a trend toward organic; our tranquil accommodations in particular were outstanding in their commitment to sustainability. If you’ve never been on a group tour, there are definite advantages - transport, accommodation and most meals are arranged, allowing more mindspace to just take 42

everything in. The local guide educates and solves any issues that crop up, and if you’re a solo traveler the group adds protection (more women than men tend toward these tours in Central America). For some, an itinerary may feel restrictive, as you are definitely on the clock some days. And yet, the connections formed with fellow travelers - and deepened through shared experience - may last a lifetime. A perfect example is our time spent in Rincón de la Vieja, home to its namesake volcano. Ziplining and rappelling through the canyon pumps up the adrenaline, while a hike through the national park rewards with breathtaking waterfalls and pools of bubbling volcanic mud. Later, we connect, laughing, in the natural hot spring as we wash away the volcanic mud we painted all over each other moments before. That night we sleep peacefully at the lush and comfortable Hotel Hacienda Guachipelin after a yoga flow session beneath the darkening sky, where the energy of the volcano is palpable. We then have a full breakfast before we break camp, load up the gear raft, and head on down the river. Each day we paddle around 20 miles until 1 pm, where we stop at whichever beach looks the most enticing for a spot of lunch! An hour’s break for sunbathing, playing football with the local kids, or maybe a quick yoga session, before we jump back into the boats. As we paddle, we stop from time to time to perhaps explore a remote village or local Hindu temple, stock up on fresh veg, get our hearts pumping with a quick cliff jump, have a shower under a natural waterfall, or track tiger footprints. We make camp around 4 pm, where everyone is responsible for their setting up their own tent. Once camp is made, there is the option of yoga, or singing bowl therapy, or massage from our incredible yoga instructor. The evenings are spent playing volleyball, reading, helping in the kitchen, relaxing around the campfire and telling 53
stories. We camp out under the stars and really, truly relax. There is no Wifi or electricity - just nature. Pure bliss. Just past the picturesque village of Old Chelsea, tucked away on the outskirts of Gatineau Park, I find what I am seeking Nordik Spa-Nature, the largest day spa in North America.

p the steps to the property it is quiet, and a calm peace settles. Though large, the spa feels very hidden, like some secret I’ve stumbled upon. Warmly greeted, I’m given a bathrobe and towels (both exchangeable, anytime) along with a wristband for locker, food and beverage. I change into a swimsuit, ditch my phone (already, bliss!) and head outside. I am struck by how modern it is, like a luxe mountain lodge, with gorgeous treed surroundings, natural rock features and wood and birch furnishings I immediately must have at home. First things first, the thermal cycle. A 2000-year-old relaxation ritual, thermotherapy is a 3-step cycle that alternates from hot to cold, followed by rest. For heat, you have sauna, to eliminate toxins through sweat and stimulate the immune system. Here there are 9 saunas, each with its own unique features and temperature - 2 are steam baths in the Mediterranean tradition and 7 are dry saunas. (When you hear the gong head to Finlandia sauna to experience the Aufguss ritual - truly something to check off your bucket list!)

Next comes exposure to cold, 10-15 seconds submerged in a cold pool, icy waterfall or (in cooler weather) a walk in the cold air. This necessary - and refreshing! - step produces a thermal shock, which will close your pores and release adrenaline, the hormone that stimulates the body. The last step is rest, which slows the adrenaline secretion to make way for endorphins. Your choices here are endless...make your way to one of the numerous hot tub pools or the relaxation chalet with heated benches. Kick back in a suspended chair, an outdoor pavilion with woodsy fire, the infinity pool, or forest beach deckchair in summer. I actually fell asleep in a secluded hammock swaying in the breeze, I was that relaxed. The circuit can be completed in any of the three sections spread amongst the stunning surroundings. Kaskad for silence and inner reflection; Borëa for romance or whispering with friends; Panorama for social time - think happy hour in spa robes. (An aside here: during my Friday visit silence was not enforced in Kaskad, and the social areas were quite rowdy. I’m told that’s not the norm but best to be prepared if a solo retreat is what you’re seeking). 56

I woke up from my hammock-ing in time to head off to my treatment, a spectacular 60-minute California massage. Using long, fluid strokes, this treatment is designed to relieve stress through sculpting and “wrapping” the body as opposed to deep tissue pressure, increasing blood flow and circulation and clearing blockages (which apparently I had plenty of in my jaw and neck). It was pure bliss, and I ambled out feeling extremely mellow. Capitalizing on this intoxicated feeling, I decided to take in the Källa treatment next, and though I have floated in salt water tanks before I was wholly unprepared for what awaited. Inspired by the Dead Sea, this floating salt-water pool is dug 5 meters deep into the rock and contains 10 tons of Epsom salt in 1,200 cubic feet of water. A rare privilege, it is only the second of its kind in the world, the other being in Switzerland. In the soft blue neon light I found myself a neck pillow and eased into the warm water, carving out a spot amongst the other Källa-goers to float in the cavernous, vault-like space. After a couple of minutes your heart rate slows, you let go, and mental and physical relaxation literally washes 57
over you. The atmosphere can only be described as unreal. (If you’ve ever wanted to try floating for the weightlessness but were put off by claustrophobia, this unique experience was made for you). After Källa I repeated the thermal cycle a couple more times, interspersed by some delicious pastries and coffee at Mëzz | Café, one of four restaurants on site. Feeling entirely blissed out, I checked into the charming Auberge Old Chelsea B&B in town, nipping out to the local Chelsea Pub for a late dinner and craft beer before falling into a deep and restful sleep. A few hours spent in a hammock staring at the inky darkness of the night sky was all I needed to ignite a curiosity that hasn’t abated. As my eyes were overwhelmed with the sight of so many stars, my pulse slowed and my mind became calm. I realized how rare it was for me to see the stars, and I wanted that to change.

flashed back to being a teenager who often stayed up late, and would seek solace on the balcony, looking at the night sky as I contemplated my future. I realized I needed a dose of stargazing to keep me happy in the present, an intangible dose of wellness not easily found in the other practices I did to keep my mind and body in balance. A 2016 study by the US National Park Service found 80 percent of North Americans can no longer see the Milky Way because of light pollution. Is it any surprise that when we are able to see the endless sparkling of the heavens we’re not smitten and seeking more? Since that night in northern Peru, I’ve been seeking glimpses of the night sky, whether from a beach in Goa, a castle turret in the west of Ireland or on a small town’s dock on the Bruce Peninsula, learning from amateur astronomers who were excited to share what could be seen in the heavens. A memorable hike in California’s Coachella Valley began before sunset to learn about the desert, and ended in a secluded area where my group congregated around telescopes. As our eyes adjusted to the evening darkness, our guides pointed to well-known constellations we could see without aid, explaining the mythology of Ursa Major, Ursa Minor, Orion’s Belt, and Cassiopeia. 63
Getting in line to gaze into deep space through telescopes, I could see Jupiter, the fifth planet from the sun. As much as I loved learning the science, the act of seeing the stars and planets was like soaking in a hot tub, a relaxation and contentment I could feel throughout my body. With a group that spanned ages 10 to 75, we left with a curiosity to see more, hopefully encouraged by making a wish on a shooting star. Naturalist, teacher and astronomer Robin Tapley knows the benefits of stargazing. Tapley worked closely with JW Marriott The Rosseau Muskoka in Ontario, ensuring the hotel design created minimal light pollution while also developing an astronomy program for guests. “People are overwhelmed, and often stunned when they first look at the night sky,” explained Tapley, “it’s very common that they don't believe it’s real.” During the hourlong sessions, Tapley sees the transformation as guests go from shock to engagement, curious about the cosmos. “They couldn’t comprehend how many stars can be seen, especially in deep space.”

As the ability to see the night sky is minimal in cities, dark sky areas are now being protected. Designated by the Royal Astronomical Society of Canada, Dark-Sky Preserves are areas to help promote astronomy and protect access to the night sky. Canada has the second most dark sky preserves in the world, with 22 found in Newfoundland & Labrador, Ontario, Northwest Territories, Nova Scotia, Saskatchewan, British Columbia, New Brunswick and Alberta. Located in federal and provincial parks, these preserves are happy to aid in exploring the night sky, like Kejimkujik National Park in Nova Scotia, with its Dark Sky rental kit, which includes binoculars, star finder and red light or the Jasper Dark Sky Festival, an annual festival in the national park to gather those who want to learn and indulge in looking at the stars.
But one doesn’t always have to go into a rural area to appreciate the effect of the stars. A trip to southern France’s Provence region led me to learn about Dutch impressionist painter Vincent van Gogh. As I spent time in Marseille and Arles, I learned of van Gogh’s artistic life and saw an exhibition that included one of his most famous creations “A Starry Night.” Depicting his view of the night sky from his hospital room, the painting made me wonder if the night sky was his refuge, a place he could explore through his art, since he was not able to physically explore the landscape as he had. I realized the stars had become my refuge, a welcome moment of solace in my busy schedule. That night I stared outside my hotel room window, and on the first star I could see, despite the city lights, I made a wish to continue my self-care through the night sky.

We’re having a potluck dinner. What do you bring? Why the drinks of course! Nine times out of ten, everyone else is much better at cooking than I so I’ll bring what I know will spread joy to all, which are libations to match the cocktail part of the evening, and dinner. My other favorite thing to do at potluck dinners is to inspire storytelling, it works great to bring a list of topics or make it a contest like “The Moth” to increase participation! People love to regale friends with their strangest travel experience, for instance. Or when they first fell in love with their partner. Go-to comfort at the end of the day? Without question, I immediately change into yoga pants, a t-shirt, flip flops and a clean, refreshed face! On a cool night, I cozy up with my kids under our thick blanket and enjoy a fire while reading to each other. Pure bliss. 66

What’s in your carry on? Usually everything I need. Key items: my Bose noisecancelling headphones, extra pair of socks for the flight, collapsible water bottle, hydration spray & lip balm, laptop with plugs and universal charger, earplugs and eye mask for long flights, disinfectant wipes, an entertainment mag (think US Weekly) countered by an inspirational book, and a pashmina to stay warm. Best wellness or travel tip? Always bring workout clothes, no excuses. Exercising helps take the edge off traveling and gets you outside to explore and unplug. Even on a business trip, the best way to get to know a city or area is to do a morning jog. You can wear your running shoes on the plane (remember you will be taking them off to put on your extra-comfy socks), and then put on your yoga app in the morning (I like Boho Beautiful on my iPad.
