Do you have a favorite disguise? I do. I call him Fernando. He has a mustache, long hair and sometimes a little goatee. He’s usually in janitor clothes. Fernando makes me feel the sexiest. I am really looking forward to the new Pee-wee Herman movie. How did Paul Reubens come up with his character? —Andy H., Sarasota, Fla. A: Reubens, 63, created Pee-wee Herman as a member of the Groundlings comedy troupe in Los Angeles in 1978. “I could never remember punch lines to jokes,” he says, “so my character was a bad comic you would never expect to make it.” That comic morphed into the spastic man-child known as Pee-wee, whose first film, Pee-wee’s Big Adventure, marked its 30th anniversary last year. After its premiere at the South by Southwest film festival, the new movie, Pee-wee’s Big Holiday, will stream on Netflix beginning March 18.

TOP CHEF DALE LEVITSKI
Y
ou may know him from Top Chef season three or the show’s AllStars edition, but Dale Levitski is much more than a made-for-TV cook. The accomplished restaurateur sharpened his knives in Chicago (where he had two restaurants of his own) before moving to Nashville in 2014 to take the helm of Sinema, an eclectic restaurant and bar housed in a historic former theater. Since then Levitski has opened a casual restaurant in Nashville called The Hook and partnered with Parade and cheeky YouTube channel Cinema Sins on a series of videos featuring Disney-inspired dishes (see them at Parade.com/dale). He chats with Parade about life after Top Chef and turning animated films into fine dining.
How did this Disney menu come about? It’s something that I’ve had on my mind for almost 10 years. The guys at Cinema Sins had come to us about creating a cooking version of their show and I thought, Let’s do Disney! There’s so much to work with from the Disney vault, how did you narrow it down? We just ran with it. We’re not making cartoon food: We’re making great food. The three dishes that we did—Down the Rabbit Hole from Alice in Wonderland, Hakuna Frittata from The Lion King and Seaweed Surf and Turf from The Little Mermaid—
turned out pretty spectacular. Were there any ideas that didn’t make the menu? We talked about a bunch: Redoing spaghetti and meatballs with Lady and the Tramp—it’s one long noodle and one meatball and you just battle it out! What’s the next step for your Disney-inspired dishes? The Disney Dinner at Sinema. We are going to use the three dishes and come up with two or three more. If that’s successful, we could do a movie-inspired dinner monthly or quarterly, called Dinner of a Movie. We could do a dinner inspired by

Casablanca and people dress up—it’s just too perfect with what we are [an upscale restaurant in an old cinema]. How did Top Chef change your life and career? Our first night in Miami, one of the executive producers was like, “Your life is about to change—today.” And you’re like, “Oh yeah I can handle it, this is great.” But you have no idea. The day after the premiere, I was flying back to Chicago from New York and the people in line at TSA were like, “Hey, Dale, what’s up?” Being wellknown does skew a lot of things personally and professionally. I don’t want to say it opened
doors, but it helped make opportunities easier because [people] know who you are. They know your palate or your skill set. “You got second place on Top Chef; I trust you already.” Do you cook at home? No! [Laughs] I moved out of an apartment and rented a house, and I was like, “Fresh start! I’m going to get rid of everything!” After a year, I still don’t have glasses or dishes. I’m a master of eating pasta out of a pot. The copper-plated KitchenAid mixer, the Cuisinart—I have all the equipment in my house just collecting dust. They’re mocking me.

raveling these days is hardly relaxing, but taking a trip when you have diabetes can seem like double the trouble. That’s no reason to stay home, says Desmond Schatz, M.D., the American Diabetes Association’s president of medicine and science: “It’s just a matter of preparation.” These tips will help ensure that you have healthy adventures.
Do Your Homework
When traveling by air, keep your diabetes supplies in your carry-on baggage, and visit tsa.gov to familiarize yourself with the Transportation Security Administration’s rules for getting them through security. The site also has a TSA disability notification card that you can print out and carry with you. Book flights well in advance to up your chances of getting an aisle seat (making it easier to get to the bathroom or to your luggage in the overhead bin) and to ensure a diabetic meal is available.

fusion over your right to transport your medical supplies through security, and introduce yourself to the flight attendants when you board. Schatz also recommends that you have identification, such as a medical alert bracelet, on at all times.
Timing Is Everything
For long trips by car, map out your route, planning rest and meal stops at regular intervals. On flights with a meal, ask when it will be served so you can schedule accordingly. “Try to be as consistent with eating and medicating as you usually are,” says Schatz. Keep juice, glucose tablets, raisins
and other sources of quick sugar handy, as well as healthy snacks like protein bars and sugar-free trail mix to keep you from overeating at mealtime. Time changes pose a particular problem for diabetics who use insulin to maintain their blood sugar. “In general, it’s important to preserve your routine as much as possible,” Schatz says. “When crossing time zones, I always tell my patients to maintain their clock until they get there. Then they can
change to the new schedule.”
Banish Germs
You’re not imagining it if you feel like you always catch some kind of bug on a plane: Low humidity in cabins dries out the mucus membranes that protect us from infectious diseases, says Massachusetts-based emergency medicine doctor Mark Gendreau, M.D. “Staying hydrated is extremely important, and even more so for people with diabetes, since uncontrolled diabetes can have an effect on the immune system,” he says. The solution to flu-free flying? Wash hands frequently and wipe down tray tables, armrests and other surfaces with a disinfectant wipe. Another trick: Open the air vent above your seat to a moderate level,
then turn the nozzle so it blows just in front of you rather than directly in your face. “There’s been some data showing that if there are virus particles suspended in the air, this creates enough turbulence to blow the germs out of your air space,” Gendreau says.
Keep Moving
Planes, trains, buses and automobiles all restrict movement, which puts everyone— but particularly people with diabetes—at risk for deep vein thrombosis (DVT), a serious blood clot that can occur when you’re sedentary for too long. “Exercise is so crucial, even if you just stand up every hour and stretch your calves,” Schatz says. “Even when napping, try to wake up from time to time and bounce your calves, heel to toe.”

How did Doris’ story resonate with you? There were things about her that resonated in me, about moving on with your life. No matter how old you are, there’s some part of you that’s brand-new. She’s in her late 60s and she’s brand-new to the world—she might as well be an adolescent. Every part of life is a stage. Every time you enter it, it just feels awkward and new.
was began with a whole lot of dress-up. Rebecca [Gregg, the movie’s costume designer] is genius. She went to thrift shops and we had a room with racks and racks and racks of clothes. We just started dressing up and putting things together that had a language unto itself. And Doris’ hair! Those scarves were incredible! I had it in my head that she’d seen a picture of Brigitte Bardot in the ’60s—that she just always wanted to look like that. I copied her hair from a Brigitte Bardot picture, where she has it all piled on her head using what we used to call a postiche, a little piece of fake hair. Then she tied a great big scarf around it. That’s what I thought was her look. We worked around that.
How was it getting romantic with your younger co-star, New Girl actor Max Greenfield? Embarrassing! But he is so adorable and generous, and such a wonderful actor. I thank God [it was] him, not somebody with an attitude.
Did you keep any of Doris’ clothes? Most of it had to go back. But a lot was mine: scarves and some old jewelry. Everybody was bringing things of their own to drape on Doris. It was like, “Rent a barn and put on a show.” Everybody pitched in, made it work.
Doris’ wardrobe is like a character all its own. Did you have anything to do with her quirky style? Absolutely! Finding who Doris
Doris saves stuff. Are you a saver? Not like she is. I’m organized to a fault. I do keep stuff, but stuff that’s worth keeping. I keep letters from
Gidget (1965–66) the kids, pictures, great things that make you go, “Whoa. I’m keeping that.” Various and sundry awards and honors. There’s a scene in Doris where you’re with a knitting group. Do you knit? I do! I was the only one who was really knitting. Everybody was asking me, “Oh, look. I’ve screwed this up. How do I fix it?” I was constantly fixing everybody’s knitting. They were trying to fake it.

I went away feeling that if we Lincoln (2012) couldn’t bring half of the world’s population [women] to the table in important ways, the world would never be really healthy—environmentally, economically, politically. This group identifies and invests in emerging women leaders, whether they’re on a political level or leaders as far as economics is concerned or human rights. They go into small cities and countries and communities and identify these emerging leaders who need to have their voices supported. They mentor them and empower them to fulfill their dreams.

I
t seemed impossible. But the emergency room doctors were telling Christy and Kevin Beam that their 9-year-old daughter Annabel wasn’t hurt. Annabel, who had tumbled headfirst 30 feet to the bottom of a hollow cottonwood tree on the family’s farm in Burleson, Texas, had no head injuries, no brain damage and no spinal trauma, the doctors said. No broken bones or internal injuries—only a few minor bumps and bruises. A concussion, at most. Annabel had spent several hours inside the tree, most of that time unresponsive, as rescue teams strategized the best way to free her. When they finally succeeded, a helicopter airlifted her to a hospital, where doctors ordered numerous scans to assess her injuries. Only the doctors couldn’t find anything. The next morning, they sent the
third-grader home with her stunned—but grateful—parents. But that was nothing compared to what emerged in the weeks and months that followed. This hadn’t been Annabel’s first hospital trip. Four years before, she’d been diagnosed with two painful, life-threatening digestive disorders (pseudo-obstruction motility disorder and antral hypomotility disorder), requiring a regimen of 10 drugs daily, including antibiotics, anticonvulsants, prescription-strength laxatives, reflux medication and painkillers. Every six weeks, mom Christy, now 43, flew with Annabel to Boston so a specialist treating her with an experimental drug could monitor the girl’s progress— although the grim truth was that there was no cure. Annabel’s miracle will be up on the big screen when Miracles From Heaven— based on Christy’s 2015 best-selling book and starring Jennifer Garner as Christy—opens in theaters this week. If it’s true that eight in 10 Americans believe in miracles—a statistic from a Pew Research Center study—there will be plenty of ticket buyers. Although more religious Americans believe than the nonreligious, more than half of those unaffiliated with a particular faith still say miracles are possible. In fact, belief in miracles is on the rise, according to bestselling author Marianne Williamson, known for her teachings on the Foundation for Inner Peace’s popular spiritual tome A Course in Miracles. “People are evolving beyond strict adherence to a rationalistic worldview,” she says. “Quantum physics, spiritual understanding and a more holistic perspective in general have come together to produce a serious challenge to oldparadigm, mechanistic thinking.” In other words: “People know there’s more going on in this life than just what the physical eyes can see.” Kate Bowler, Ph.D., of Duke Divinity School in Durham, N.C., and author of Blessed: A History of the American Prosperity Gospel, studies miracles and people who believe in them. She’s found that a very high percentage of religious people are convinced that God will make targeted or often random choices because God will heal or bless one person over another. Many such people try to figure out a formula for “what will reach into heaven and draw out some kind of
blessing,” she says. “The truth is there will never be a formula, but people will certainly keep trying to find it.” The Beams, devout Baptists, did believe in miracles before their daughter got well, but as Kevin, 43, says, he thought miracles “were possible—just not probable.” Annabel, now 13, echoes: “I knew they happened. I just didn’t think they would happen to us.”

Bowler’s research confirms that “almost everybody I talk to believes in some kind of relationship between their positive feelings and a supernatural result. Even if they don’t call it prayer. I think there’s a real openness and a sort of sense of wonder at the possibility of miracles,” she says.
Why Now?
“Obviously, people are looking for hope today because the world is so filled with fear and chaos,” Williamson says. “But something deeper than that is going on as well. We are looking for meaning.” Humanity has a deep, instinctive sense that life is about something more than just trying to consume, she says. “We’re either shutting down in fear as we have never done before, or we’re opening up to love as we have never done before. Our only choice now really is between an age of barbarism or an age of miracles.” If the New York Times best-seller lists are any proof, people are choosing the age of miracles. The Beam family receives emails from people all over the world who think they’re perpetuating a hoax, and from others who say Annabel’s story inspired them to deepen their faith. As for the naysayers, “I don’t feel like I have anything to prove,” Christy says. “The proof is right there. We lived it. It’s not a gray area. It’s black and white.” Adds Kevin, “The big question is, what does it mean since it did happen?” Some skeptics, he thinks, won’t believe the story no matter how convincing because it threatens their belief that God doesn’t exist. He’s hoping at least some of them will reconsider. Yet Bowler stresses—and the Beams fully agree—that believing in miracles and in modern medicine don’t have to be mutually exclusive. “It’s never like faith versus science. It’s always faith and science,” Bowler says. “For the most part, people are throwing everything and the kitchen sink at problems, and when it works no one’s going to complain. Some way or another both medicine and miracles will get the credit. People love their doctors and they love their God, and they will ask both for a lot of favors.” “Hope and faith can be abused,” Kevin says. “Even though deep down we knew something major had happened, we also didn’t want to just say, ‘Forget it. Take all Annabel’s medicines and throw them away.’ Over the course of four years, we had a lot of people who gave us well-intentioned bad advice to just claim that she’s healed because God doesn’t want any of his children to be sick. Fit a 16-inchlong piece of foil snugly into shell. Fill with dried beans. Bake 25 minutes. Remove foil and beans. Bake 5–7 minutes or until bottom is dry and pale golden. Put on wire rack. 4. While shell prebakes, heat a large skillet over medium heat. Add bacon; cook 8 minutes or until crisp. Remove bacon to paper-towel-lined plate, reserving 3 Tbsp fat in pan. Add onion to pan; cook 12 minutes or until light golden, stirring occasionally. Stir in sauerkraut and caraway, if using; remove from heat. 5. In a large bowl, whisk eggs until blended. Whisk in sour cream, milk, mustard, flour, salt and pepper. 6. Spread sausage in bottom of prebaked shell. Top with sauerkraut mixture. Pour egg mixture over sauerkraut mixture, smoothing top with a spoon. Crumble bacon over top. Bake 40–45 minutes or until set. Transfer to wire rack; cool at least 30 minutes before serving. Serves 8.

Envision yourself climbing Mount Everest, dating Chris Martin or Taylor Swift or taking charge in the Oval Office. But make it an ongoing enjoyable activity so you can imagine it at length. (Which means you may want to forget about the Oval Office.) I call this "virtual dreaming." Sometimes I envision myself figure skating the way I loved to do when I was a teen, complete with spins and jumps. But in my dreams, I stay aloft just a little longer than gravity would allow. You can do anything you like, readers. Give it a try! The Sunday of the spring time change is a great day to start.
