千歳飴は子供の長寿を祈る縁起物と して、命を長らえさせるようにとの願 いから子供に持たせるようになったよ うです。

Shichigosan, which is a celebration for children, happens on the 15th of November on the old lunar calendar. Shichi, go, san literally means seven, five, three , the age of children who are blessed on this day. In ancient China, prime numbers such as 3, 5, 7 were regarded lucky. The 15th of the month was chosen for the celebration, as it is the sum of those three numbers and in itself is regarded as having even stronger powers to repel evil spirits. It was believed that children are given the gift of language at the age of three, intelligence at five, and teeth at seven. It was also believed that young children belong to the world of

spirits, only becoming properly human at the age of seven. In old days when children s mortality rate was much higher, it s not difficult to imagine parents joy at celebrating the growth of their kids. This is also a day for children to get a sense of their own growth. A WORK OF ART NURTURED IN THE NATURAL SETTING AND FOOD CULTURE OF JAPAN Rice is a crucial part of the Japanese diet. What has always been indispensable for growing rice is the cattle used for farming purposes. As is also the case in other countries, its roots go back to draft cattle, which were raised in the abundant blessings of the four seasons and eventually improved as a valuable breed with sashi, or “marbling”. Wagyu has since been merged with the Japanese food culture of thinly slicing and simmering the meat with vegetables in a pot, as in sukiyaki and shabu shabu. It has captured global attention not only as a high quality food ingredient but also as a work of art.

Beef Becomes Widespread in Japan in the Latter Part of the 19th Century

The culture of eating "sukiyaki" boosted the consumption of beef

In Japan, cattle have been valuable, indispensable animals for farming, along with a religious background that prohibited the consumption of four-legged animals. Meat was not generally eaten in Japan until around 1877 when 558 gyu-nabe beef hot pot restaurants opened throughout Tokyo, which had been a symbol of the moves toward Japan’s westernization.

In the cultural city of Kyoto during the 1940s, there had been a custom of eating sukiyaki on Saturdays or Sundays. As a result, the consumption of beef rose while at the same time the spread of power tillers prompted reductions in draft cattle. This led to efforts to improve the quality of beef.

RAISING How Wagyu cattle are raised on farms Weaned immediately after birth, calves are raised with high levels of care. They are given artificial milk individually and covered with handmade calf jackets when the weather gets cold. Rather than being raised in large-scale feedlots, they are given individual names, raised in cattle barns, and nurtured.

Two criteria for yield grade assessment

Wagyu and their family registers; calf registration certificates In order to maintain Wagyu as an important resource, calves are individually registered and their information put on record for the purpose of compiling basic information for breed improvement. Calves are inspected for registration in their production area within four months from birth, during which their documentation, identification of individual calves, and the presence of abnormalities are checked. A calf registration certificate is issued within four months of a calf’s birth and its breed is verified if it meets certain requirements. This registration includes information on the dam and the bull, going back for up to three generations, and provides details on the traceability.

Grading is broadly classified as yield and meat quality. For meat quality, a five-step evaluation is made of four items: marbling, color and luster of meat, firmness and texture, and fat color and quality, with the fifth grade as the highest standard. In Japan, meat graded 4 and higher are considered to be of high-quality. Yield scores are an assessment of the volume of yield percentages comprising the meat. These are derived through a calculation method, with the yield score of A representing above average, B for average, and C for below average. The combined evaluation of these values present the meat grade (such as A5 and B4),

farming households from their birth until about seven to calf markets, after which they are fattened until being sold kg in weight.

SAFETY MEASURES Wagyu is not only tasty, it is produced under high standards of hygiene control. In the event of an accident, there is a registration database that can be used for tracking the history of the beef from the birth of the cattle and onward.

Ten-digit individual identification number for securing safety All beef cattle raised domestically have a ten-digit individual identification number. Based on the law, the government manages these numbers and the National Livestock Breeding Center provides information on the date of birth, breed, male or female, history of the dam, history of movements, fattening period, meat processing plant, and date of slaughter as a “Service of individual identification information of cattle” (http://www.nlbc.go.jp/english/ service.html ). In this way, a system is in place to ensure that production areas and breeds may be confirmed and their misrepresentation prevented, and that incidents may be traced with certainty.

Hygiene control system at the meat processing stage Hygiene control system from the production stage As a method of farm hygiene control, Japan has started to apply HACCP at Japanese farms. An application of HACCP methods, such as those in food manufacturing processes at farms, is a hygiene control system that is aimed not only to remove pathogens and microorganisms but to also control injection needle contamination and leftover antibiotics, secure safety and enhance productivity, and enable sustainable improvement.

Many meat cutting plants for Wagyu have ISO or SQF (Save Quality Food) programs and certifications from strict quality control systems such as HACCP to deliver safe, secure food to consumers.

Slaughterhouses prepared for Wagyu export In order to import Wagyu, it is necessary for slaughterhouses to be properly maintained and to meet the standards required by other countries. Japan currently exports Wagyu to 7 countries in Asia and the United States (as of Sep 2013).

SECRETS OF ... The secrets to the tasty flavor of Wagyu The elements behind the delicious taste of beef are “texture”, “flavor”, and “aroma”. Among these, a characteristic unique to Wagyu is the “Wagyu beef aroma”. It is a rich, sweet aroma similar to that found in peaches and coconuts, and is a retronasal aroma and flavor that spreads when chewing the meat in your mouth. This Wagyu beef aroma has been found to be strongest when meat is heated to 80 degrees Celsius after dry aging, which, incidentally, matches the optimal temperature for sukiyaki, a representative dish for Wagyu. Once Wagyu beef aroma has been released, it remains intact within the meat and is released again when chewed, even when cold. That is the reason why Wagyu is tasty even when eaten cold. The combination of this Wagyu aroma and the mild texture of marbled beef is what creates the highest quality of taste.

Wagyu fat is known to have a high content of oleic acid, which enhances its good taste. In addition to boosting flavor, oleic acid is also reported to promote the proliferation of intestinal good bacteria, and may also be effective for autoimmune disorders such as rheumatism. Efforts are currently underway for further boosting the oleic acid content for added value.

Live Zen-Noh Wagyu Cooking and Tasting

T

he LIVE Wagyu Beef Cooking and Tasting event at La Galerie De Dietrich with Chef Tadashi Takahashi gave participants the opportunity to learn how to cook Wagyu beef in the comfort of their own kitchens. Participants were treated to Chef Takahashi’s demonstration of simple, easy-to-cook recipes that did not require any fancy ingredients—Wagyu beef tataki style with ponzu sauce, beef sirloin steak, and beef chuck gyudon. Though simple, it was remarkably delicious. The star of the show was the Grade A4 Wagyu beef. And it really does live up to all that you’d expect of Wagyu beef and more. The thinly sliced pieces of beef tataki, lightly seared were cooked to rich, velvety perfection and the melt-in-yourmouth sirloin steak was absolute heaven as you experienced the burst of flavours from the juicy and succulent beef. The beef chuck gyudon, with its lighter taste and tender pieces of beef, was the perfect comfort food.

Part of the fun came from the friendly and approachable, Chef Takahashi. Engaging and entertaining, he provided the answers to various culinary questions asked by participants, while sharing many culinary and cooking tips with everyone present. Participants also had a lot of fun grinding Wasabi root on a small plate and were allowed to take those as souvenirs. They were also invited to try four different types of Sake, which accompanied the various Wagyu dishes. Just before they left, participants took parting snapshots with the chef and were given more beef tataki to enjoy at home. All the participants enjoyed the event and found the intimate and informal atmosphere in the Dietrich kitchen a wonderful experience. Delicious Wagyu, smooth Sake and priceless interaction with a famous chef, now who could say ‘no’ to such gastronomic delight?

Getting Around Navigating a city in Japan can be both an exciting and frustrating experience. It is exciting because there are just so many interesting places to see, and you never know what surprises await you as you turn a corner.
