In Ha r mony w it h t he Sea sons At the start of the New Year January 1
1月1日
New Year’s in Japan starts with “house cleaning” after the middle of the previous December. With today’s calendar, this day falls on the 13th of December. This is when the soot that has been accumulated over the course of the year is tidied up and once the house becomes clean again, rice cakes and other sweets are put up in appreciation to the house itself, along with prayers for another safe year to come. People then busy themselves preparing New Year cards, shopping for New Year decorations, and planning osechi ryori, customary dishes that are served at the start of the New Year. Osechi ryori is served from New Year’s Eve through the first three days
of the New Year. It comes from consideration for the women of the house, so they wouldn’t need to stand in a cold winter kitchen and cook for their families. It also originates in an intention to allow Kamagami, the deity of fire, to take a break. It was the only time of the year when women could be freed from the majority of their chores. Once the New Year has arrived, the mochi rice cakes and vegetables that have been put up for the Gods are removed and zoni, soup with mochi, is prepared. This first fire to be lit in the New Year had originally been kindled with lucky flames received at a shrine, and the soup had been made with the first batch of water pumped. Families
楽 し む
お正月 新しい年の初めに
A custom used to be observed where families would make rounds of the homes of friends, taking along gifts wrapped with New Year greetings once everything was done at home. New Year’s greetings are lucky items, and, similarly to otoshidama, money given to children as presents at New Year’s, they originate in mochi rice cakes, in which a deity has been believed to exist.

would traditionally gather around the hearth where the deity of the house was believed to exist, and they would celebrate the New Year while enjoying the zoni. Times have since changed, and people no longer embrace the belief in the existence of the soul of the house, and zoni is prepared in a kitchen as is any other dish. GIN The supreme zone of luxury since the Edo period The name “Ginza” originates in a mint facility that the shogun Tokugawa Ieyasu opened in 1603 at what is now Ginza 2-chome. While the facility has since moved, the name has been carried down over the ages as the chic name with which the world is familiar. After Ginza had been struck by a great fi re, the Meiji government spent huge amounts of funds and rebuilt the town 06 WAttention Tokyo

in 1872. Designed by British architect Thomas James Waters, it was given a new life as a western style town made of brick. Stylish avenues were seen at the time, lined with glass lamps and cherry blossom, pine, and maple trees. The opening of Japan’s fi rst railway that linked Yokohama and Shimbashi, situated next to Ginza, eventually ushered Ginza into a golden era. People who had previously taken off their sandals when entering a shop began to leave their shoes on, and stores would set up decorative windows and captivate passersby. The common Japanese term “Gin-bura” comes from the meaning of

strolling around in Ginza while enjoying the decorative store windows. As theaters and newspapers joined the restaurants and cafés that were gathering their bases in the area, Ginza
began developing as the birthplace of fi rst class culture. While once devastated by a world war, Ginza’s recovery has been remarkable. Numerous department stores moved into the area, and it has become the home of various luxury brands today. An all-out editorial effort has gone into this issue, which focuses on shopping and gourmet dining in the appealing town of Ginza. We hope that it will help you enjoy some aspects of the sophistication and delights found in Ginza today. Take along a copy of WAttention for a memorable “Gin-bura” experience.

Tastes of Tokyo HAYASHI RICE
NORI A Japanese dish heavily influenced by Western cuisine
The gift from the sea that cultivates the taste of Tokyo
Hayashi rice is one of Japan’s most popular yoshoku dishes, or Japanese adaptations of Western-style dishes. Served with rice, it usually contains tender beef and fresh vegetables covered with a thick demi-glace sauce. There are several versions of the origins of this dish. One version claims that the name came from Mr. Hayashi, the founder of Maruzen Co., Ltd. Mr. Hayashi used to treat his foreign friends to this dish and hence it became known as Mr. Hayashi’s rice. Like Japanese curry, Hayashi rice is also a common household food.
Many people learn what Nori is when they encounter the “sheet of black paper” wrapped around the rice the first time they have sushi. Nori is the Japanese name for the group of edible algae that grows naturally on rocks in shallow areas of cold-water oceans, which the Japanese have been gathering for thousands of years. Since the Edo period, Nori can be found along the Sumida River and Tokyo Bay, and fishermen have been efficiently cultivating it. Because of this, Nori is considered a representative product of Tokyo.
TOK YO R AMEN
EDOMAE SUSHI The first ramen shop in Japan opened in Asakusa
Current Sushi has its roots in Tokyo
You already know that Japan is wellknown for its ramen, but did you know that the first ramen shop opened in Tokyo back in 1910? That’s when Rairai-ken ramen shop opened in Asakusa, which at that time was the major entertainment district in Tokyo. Its ramen was characterized by a soy sauce-based broth made from pork bones, chicken bones, and vegetables, which is similar to the shoyu (soy sauce-flavored) ramen we know today. Though Rairai-ken closed more than 30 years ago, their legacy has spread all over the country and ramen has become a Japanese staple food.
The current style of Sushi - a combination of fresh seafood and vinegar rice prepared in bite-size pieces - is in fact a variation of many other types of sushi that has existed around Japan. Developed in Edo (the former name of Tokyo), this particular type of sushi is called Edomae sushi, and was as an early form of fast food that was popular among the ever-busy people of Edo. Although Edomae is a widely-used term, there is no clear-cut definition. In most cases, the term is used for sushi made with fish caught in Tokyo Bay and/or prepared in Edo-style.
MILLE-FEUILLE TONK ATSU
22 WAttention Tokyo
EDO MISO
Layers and layers of thinly sliced pork loin
Tenderness and sweetness exclusive to Tokyo
Tonkatsu is a deep-fried pork cutlet, and Mille-feuille is a French pastry with layers of ingredients that look like a thousand leaves. Thus, this dish is aptly-named because it’s tonkatsu made from numerous layers of thinly sliced pork that allow you to enjoy the tender juiciness of the meat. At Kimukatsu, one of the most-loved shops serving Mille-feuille tonkatsu, you can taste its signature tonkatsu that has 25 layers of thinly-sliced, highquality pork. Check it out if you want to try a different kind of tonkatsu!
With its deep brown color, people might associate Edo Miso with tasting salty; however, it is noted for its tender flavor while containing low salt and rice malt that brings a special sweetness to the tongue. It was a beloved, highprofile food during the Edo period when Tokyo was ruled by the Tokugawa Shogunate and when many local cuisines and various kinds of miso from all around Japan were introduced to Tokyo. The unique sweetness of Edo Miso comes from this fusion that has won the hearts of Tokyoites and is regarded as one of the exclusive tastes of Tokyo.
Whether it’s a traditional recipe or an adaptation of a Western-style dish, many Japanese cuisines have their roots in Tokyo. Here is a brief introduction and history review; the more you know about it, the more you’ll enjoy the food!
MONJAYAKI
OYAKODON A savory pancake eaten in a semisolid state
The double yummy chicken gourmet
Simply explained, Monjayaki is a Japanese-style pancake with various ingredients. Similar to Okonomiyaki, its Kansai region counterpart, Monjayaki is prepared by cooking dough on an iron plate. However, Monjayaki is eaten by scooping it up while in a semisolid state, and is often classified as a dish different than Okonomiyaki. The semi-solid material can be arranged in all kinds of shapes when people enjoy it. Monjayaki was first served during the Edo period and further developed during the Meiji period. Many Monjayaki restaurants can be found in the Tsukishima district of Tokyo where the dish is said to have originated.
Oyakudon is literally named “parentand-child rice bowl” which reflects the fact that people can enjoy both chicken eggs and chicken meat in the same dish. It is a donburi in which chicken meat and eggs, sliced scallions, onions, and other ingredients are all simmered together in a sauce and served on top of a large bowl of rice. Oyakodon was first served 250 years ago at a shop named “Tamahide” in Nihonbashi where the owner’s wife came up with the idea to mix leftover eggs into a chicken hotpot. Since then, Tokyo’s Nihonbashi ward has been known as the birthplace of Oyakodon.
TSUKUDANI
OMURICE The condensed relish originally from the Edo period
Get it? It’s omelette with fried rice
Tsukudani is a dish that tastes sweet and salty, and is considered a perfect complement to any rice dish. It contains seafood, meat, or seaweed simmered in soy sauce, sugar, and mirin. The way it’s prepared helps preserve it for long periods of time and has made it a favorite side dish to store in Japanese kitchens since the Edo period. The name Tsukudani is said to have originated from Tsukudajima in Tokyo, hence the dish is regarded as one of Tokyo’s representative flavors.
This is yet another example of yoshoku, or Japanese food inspired by Western cuisine. The dish consists of ketchupflavored fried chicken rice wrapped in an egg omelette and topped with a scoopful of demi-glace sauce or ketchup. Omu and rice is shorthand for omelette and fried rice respectively, thus resulting in the intimate portmanteau of Omurice. There is some debate over the origins of the dish, but one of the most well-known is that a Western-style restaurant in Tokyo’s Ginza district called Renga-tei was the first to serve it.
ANMITSU
MONT BL ANC Japanese sweets featuring azuki bean paste
Named after the snow-capped mountain
Anmitsu is a Japanese dessert featuring Mitsumame, a traditional Japanese sweet made of small cubes of agar jelly. Anmitsu was first introduced during the Meiji period in 1897 when Japan started to receive a lot of new information from overseas. At the time and inspired by Western sweets, Mr. Funawa from Asakusa came up with the idea to serve this traditional Japanese dessert on a silver platter with a fork or spoon. Thereafter, Mitsumame with red bean paste and fruits served in the style of a Western dessert plate came to be known as Anmitsu.
A Mont Blanc combines puréed, sweetened chestnuts, and whipped cream into a mound that reminds you of the snow-capped Mont Blanc in the French Alps. Its Japanese variation has its roots in Jiyugaoka, a posh area popular among women for its sweets and delicacies. The founder of Mont Blanc (yes, it’s the name of a pastry shop that opened in Jiyugaoka in 1933) was travelling through Europe and was so impressed with the snow-covered peak that he decided to “remake” it in Japan. With the luxurious sweet chestnuts on top, it’s pure indulgence for any pastry lover!

THAT’S MOE!
“Welcome home, my load and lady.” That’s how you will be greeted upon entering. The maid serving us was Yumo. She welcomed us with something like a candle lighting ceremony, symbolizing we officially entered the dreamland. Then we were handed a dreamin passport. It is like a permit to come back to the dreamland and also doubles as a discount voucher.
LUCK Y DR AW!
LIVE CONCERT!
The sweepstake is included in our maid cafe debut set, so we tried our luck and took home a music CD (of course featuring the maids) and cookies as souvenirs. The maids really look like idols on these peripheral products!
There are also options that include live singing and dancing performance by the maid. Because she dances on an open stage, chances are other customers may pay and you get a free show! Also don’t forget to use your dreamin passport for a free show the next time you visit.
FARE WELL Only my second time visiting. So many girls were having fun here! Seems not only guys, but families with kids can enjoy in a maid cafe! Time runs fast in the dreamland and it’s time to get back to the real world. Yumo waved goodbye as we checked out. The Polaroid is yet another element included in our maid cafe debut set. Tell me where else in the world can you take home such a unique souvenir?
On your rice omelet, maid will write messages with ketchup as you request. If you’re familiar with anime, you must have heard of MOE, the character written on our omelet. Before eating, join the maid in chanting a series of spells and pose the “hand heart” to infuse affection in your food! The food is more than a visual enjoyment! What contained in the omelet was ketchup flavored fried rice, and the parfait was creamy and perfectly accompanied by palmier biscuits. I bet the spells worked the magic!
The live concert was especially superb! Girls sitting next to us even cheered for the maid using pen light! It was so exciting!

Yes, everyone is talking about the new Sky Tree. But like the Eiffel Tower, once you’re in the Sky Tree, you can’t see… the Sky Tree. Built in 1958, Tokyo Tower has shorter lines and is much more centrally located. Highly recommended for those with limited time.
Less than 10 minutes from Shibuya station, Jiyugaoka has been a prime shopping destination for Japanese women for years. While having smaller shops for big brands, explore the side streets for curated “select” shops with items you’ll find nowhere else.

To get your bearings, a quick bus tour around the city is a great first step. Easy to get on an off; easy to return later to the places that looked interesting. Your Hotel should have a list of operators. Again, great for people with limited time.
I have yet to see these in the West. Basically potato chips shaped like French fries. Available at any ubiquitous convenience store (“combini”) 100% addicting and great small gifts for your friends at home.

Met lovely Sakura Hotel at Asakusa
Because it was my first time to visit Tokyo as a backpacker, I decided to stay in Asakusa, where there are the most Japaneseque sceneries to visit. The experience of staying at Sakura Hostel Asakusa made the trip far beyond my expectations, because it was much more than just a bed to sleep – it was a place to meet interesting people and experience local culture. At Sakura Café, I had a great time chatting with people from all around the world and got much useful information from the friendly staff. Staying at lovely Sakura Hotel at Tokyo is definitely the most wonderful memory of my trip in Japan!
Check-In
Rooms There are different types of rooms for groups to share, and dormitories are also available for backpackers who travel alone. Twin rooms would be recommended for couples that need more privacy. I stayed at the twin room where beautiful sceneries of Sensoji Temple and Tokyo Skytree are available at my balcony.
The reception is available 24 hours, and the English speaking staffs were so friendly that I felt warmly welcomed. Clean sheets and pillowcases are provided with swipe card and residency guidance.
“Sakura Café” is one of the charm points of Sakura Hotel, I think. It is not merely a café but also a place to get close to the soul of Tokyo. Various events and social gatherings are arranged here, such as origami sessions and parties. At Sakura Café I never felt lonely, and I made friend with Hanife, an adorable girl from Istanbul who loves Japanese culture a lot. I also enjoyed chatting with an interesting guy from London, Dean - a theatre writer - who had been traveling in Asia for more than 8 months for 16 countries, who was thinking to get some inspirations from both of the traditional and contemporary Japanese Arts. Moreover, in this cheerful spacious public space, free wifi, TV and computers are available 24 hours.

Even come to Japan without any travel plans, there is various travel information for you to check. One-day trips seem popular. 1 Shower room: Each floor is well equipped with sanitary facilities. I was very satisfied with the clean toilet and shower room. 2 Kitchen: The kitchen is free to use for 24 hours. Here you could make yourself some easy meals or just a cup of coffee. 3 Laundry Room: I was happy with the washing machine and drying tumbler. I did not have to bring too many outfits with me. 4 Personal Locker: There are personal lockers in the dormitory. You can bring your own lock or just buy one at the reception.
