Ninamesai is one of the ceremonial rites held within the Imperial Palace, where the Emperor offers five types of grains, freshly harvested during the year, to the gods of nation building worshipped by the Shinto faith. It is one of the most important festivals within the palace where thanks and prayers for peace throughout the nation are offered to the gods and ancestors. The Ninamesai harvest thanksgiving
festival to the gods then started taking place amongst the commonfolk at local shrines and public spaces. Respect is paid to Mother Nature with the heartfelt emotion that “this year’s bountiful harvest was made possible purely by god’s grace” and everyone celebrates in recognition of the hard work by those involved in agricultural work. As offerings to god, grains such as freshly-harvested rice, barley,
beans and various vegetables are presented at the altar. Sake is served to each other while in view of these offerings, as part of this prayer ceremony for a bountiful harvest next year.

Shape the Japanese rice into 2 compact rice balls using cling wrap.
2.
Cut the crabstick into 1 strip and 2 shorter strips for the red scarf, and a small triangular piece of carrot for snowman’s nose.
3.
Punch and cut the hanpen fishcake using the snowflake cutters.
4.
Deep fry the pasta sticks in a frypan.
5.
Cut the sushi seaweed into 2 large circles and 3 smaller circles for the snowman’s eyes and buttons.
6.
Add in your favourite side dishes and vegetables into your bento box. Arrange the rice ball and assemble the parts of the snowman together.

Be transported to a magical winter wonderland Deep in the mountains, at the foot of Mt. Haku in the Gifu Prefecture are the Historical Villages of Shirakawa-go and Gokayama − Ogimachi, Ainokura and Suganuma. These quaint settlements are famous for their gassho-zukuri (合掌造り, clasped hands-style) minka (民家 , people’s home) whose grand roofs resemble hands clasped in prayer. In 1995, the villages with their rice fields, river and 114 thatched roofs were registered as a UNESCO World Heritage Site. The oldest and largest remaining gasshozukuri minka, the Wada House, is still used as a private residence. Part of it has various old items on display and is open to visitors. From Hakodate, we hopped onto the Super Hakucho which took us 100m under the Tsugaru Straits via the world’s deepest undersea rail tunnel to arrive at Aomori Prefecture on the main island of Japan. From there, we visited 4 of the 6 prefectures in Tohoku, or the North Eastern Region of Japan.

Kobe beef ≠ Wagyu All Kobe is wagyu, but not all wagyu is Kobe. It is any of several breeds of Japanese cattle that are genetically predisposed to fatty meat. There are four breeds of wagyu: kuroge washu (黒毛和種, Japanese Black), akage washu (赤毛和種, Japanese Brown), mukaku washu (無角和種, Japanese Polled) and nihon tankaku washu, (日本短角和種, Japanese Shorthorn). Choose Japanese Beef True blue wagyu comes exclusively from Japan. Wagyu from other countries tend to be cross-bred wagyu; usually between a wagyu bull and another breed of cattle while Japanese wagyu are bred only between wagyu. Japanese breeders and chefs place great importance on using the entire cow,
so they pay careful attention to how each part grows and tastes, including the offal. Due to wagyu’s unique fatty nature, the meat has its own special texture, aroma and taste that makes it different from nonJapanese wagyu. Japanese wagyu has to meet strict regulation guide lines before they will be recognised as proper wagyu, which is why Japanese wagyu is often pricier and considered to be of higher quality.

Simply Bovine Sirloin, ribeye and tenderloin may be the better known cuts of wagyu used in steak, yakiniku and shabu shabu but the Japanese also enjoy eating other parts of the cow. These include gyūtan (牛タン, beef tongue), hai (肺, lung) and hachinosu (ハチノス, tripe). While gyūtan is the most readily available in Singapore due to import regulations, there are stores who are able to serve unique cuts locally.

Just as we use the phrase “no worries” or “okay” in English in a variety of situations, the phrase “daijōbu desu”—which bears the equivalent meaning—is very convenient. But what makes it even more flexible (and often ambiguous) in Japanese, is that depending on the context, it can also mean “yes” or “no”. For example, when asked, “Do you want to eat now?” depending on how you say it, “daijōbu desu” could mean “yes, I’m okay” or “no thank you, I’m okay.” Without including the straightforward “yes” or “no”—which is not often directly stated in Japanese—using and interpreting this phrase requires careful attention to one’s tone and body language. Japanese craftsmanship spirit meets Pikachu Leather accessory brand OJAGA DESIGN is all about handstitched subculture, weaving characters ranging from Sanrio to Studio Ghibli into its line up of fashionable products.
Inspired in Africa, made in Japan As a child, the founder of OJAGA DESIGN, Sei Ogawa, or Ojaga, as he is known by, loved to create. “I could spend hours tuning up my Mini 4WD’s” he says, showing his fond memories of the Japanese miniature race car models by Tamiya, that were a huge hit among children during the eighties and nineties. It was a great time to be a child in Japan, as the dawn of the golden years of Japanese subculture entertainment brought along many classic manga, anime and videogames to be engrossed by. These would later become a major source of inspiration for OJAGA DESIGN’s leather accessories. After graduating from high school, Ojaga embarked on a journey that would change his life forever. In Africa, Ojaga became fascinated by leather through African drums, realized the material’s potential and decided to make what would later become his lifework out of it. Today, Ojaga is the owner and founder of OJAGA DESIGN, a leather accessory brand that creates handcrafted Japan made products.
