Northern Tohoku in Vibrant Autumn Foliage

Be Charmed by the Magic of Nature Come experience nature s endearing magic at its best: with the year s crops harvested and mountains draped in autumnal hues, Northern Tohoku celebrates the prosperous season. 1

Infused in vibrant reds and yellows, autumn in Northern Tohoku is like a scenery straight out of a beautiful painting. The richness is not only in the colors: the season of vivid foliage coincides with the years harvest, adding to the prosperous air throughout the region. Just like magic, the vibrant foliage turns any scenery into a great masterpiece the way cherry blossoms do in the spring time. And like cherry blossoms, there are also a number of popular viewing spots all over Northern Tohoku where people travel from afar for a breathtaking contemplation.

Head to Kakunodates Samurai Street for a nice stroll in a historical town. The striking contrast between classic dark wooden walls along the street with bright orange leaves is like a scene out of a postcard. Try peeking through one of the gates of a house; it seems as if gates were built to frame breathtaking scenes from centuries ago. If you want to explore nature, head to Oirase Gorge for a nice little hike along the beautiful stream draped in autumn foliage. Numerous picturesque waterfalls along the stream are likely to turn anyone into a pas-

sionate photographer. To fully indulge in the regions outstanding beauty, hike all the way up to Lake Towada and hop on to a cruise boat; you can have a 360-degree panorama of flamboyant mountains etched into the deep blue lake all to yourself. To rejuvenate your mind and body, take a dip in an outdoor bath. Located deep in the mountains, Doroyu Hot Springs is one of the most popular hidden hot springs in Akita. Leave all your daily troubles behind and soak in two of the natures most precious gifts; hot springs and autumn foliage.

Garden of Utopia and Spiritual Temples for Inner Peace Ever since its designation as a UNESCO World Heritage Site in June 2011, Hiraizumi (Temples, Gardens and Archaeological Sites Representing the Buddhist Pure Land) has become one of the most popular tourist destinations in Northern Tohoku. The entire expanse was built by a warrior clan that deeply aspired for peace in the chaotic 1100s, and the area has since been preserved and rebuilt after repeated destruction and damage. A picture may be worth a thousand words, but a journey is worth more than a thousand pictures, especially when it comes to the spiritual eminence of the temples at Chusonji and the garden at Motsuji. It resembles Mt. Koya with its clusters of sacred temples, but thanks to the compact size of Mt. Seki where Chusonji is located, you can experience the extraordinary transition from daily scenery to a highly spiritual one within the 20 minute hike up the mountain along the beautiful trail that is lined with centuriesold cedar trees. The garden at Motsuji has a distinctively serene atmosphere as it was designed to recreate utopia on earth. At a glance, the landscape may seem subtle and uninteresting, but there is a unique tranquility that only those who visit can experience. The charming town of Hiraizumi with 20,000 residents is strewn with mesmerizing historical sites that you can tour around on foot if you are an avid walker. A quicker option would be on bicycles or buses, both of which are available in front of the JR station.

Cruise down Geibi Gorge If you are in or around Ichinoseki, take a bus down to Geibi Gorge for a cruise along one of the most beautiful gorges in the country! You can enjoy the beautiful contrast of colorful autumn foliage against the sharp cliffs, which turn the landscape into a silent ink-wash painting come winter. From December to February, you can enjoy the cruise as you sit under a kotatsu (a table with a heater insulated by a thick blanket) to stay comfortably warm.

Sakura

How to Be a

Kumata

How to enjoy an Izakaya outing. What is an Izakaya? An Izakaya is a type of casual restaurant or bar that carries a wide range of dishes and drinks at affordable prices. Some are owned by large companies and have a lot of outlets all over Japan, while others are small establishments owned by individuals. Whether they’re young or old, most Japanese – like students, office workers or families – like to patronize an Izakaya for casual dinners, suppers or a simple outing with their colleagues or friends.

2

Izakaya etiquette 居酒屋でのマナー

When you travel, you tend to meet different kinds of people and be in touch with other cultures, but do you know about their local etiquette? Miss Wattention, SAKURA, and her little bear KUMATA will show you how to enjoy Japan's unique culture in an authentic way. You won't feel embarrassed if you know basic their manners and etiquette.

1

3

居酒屋での楽しみ方

What to order? The Izakaya menu 居酒屋メニュー

Variety is the key for an Izakaya menu. Their menu usually covers a wide range of basic Japanese home-style cuisine, such as sashimi, grilled items, nimono (braised items), agemono (deep fried items), main courses, noodles, rice, salads and desserts. In addition to that, some even feature regional Japanese delicacies, fusion menus or seasonal dishes. They also carry a huge range of beverages, which include sake, shochu, wines, cocktails, mocktails and soft drinks. It goes without saying that the best reason for patronizing an Izakaya is in its menu variety, which can be adjusted to suit almost anybody’s dining preference. It is also convenient if you want to enjoy different types of dishes at one time because the serving portions are often small.

Promotions

プロモーション

4 Since an Izakaya is a casual restaurant, there are no strict rules to adhere to. However, basic etiquette applies – you should avoid causing a nuisance to other diners, and try not to bring in outside food.

5

Some Izakaya have happy hour promotions, such as 1 for 1 or other discounts. You can also check free papers or websites to get vouchers for special privileges.

Extra charge

エクストラチャージ

In addition to the cost and tax of the food and drinks you order, some establishments will charge you an appetizer fee, which is considered a mandatory cover charge. You might also need to pay an additional fee for specific timings, or if you’re using a private room.

Ordering and payment 注文と会計 These days, you can place your orders with a touch screen panel at some Izakaya. All you need to do is just follow the instructions on the screen, choose the items and key in the quantity. There are photos of the items to help you if you don’t read Japanese, but these act only as a guideline and may look different from the final product. Most establishments don’t send the bill to your table, so you will need to settle it at the payment counter.

Oic-! Hokkaido Kitami’s Shio Yakisoba and Yakiniku

Monbetsu’s Crabs and Scallops

Okhotsk Beer

Kitami is famous for its Salt-flavour Fried Noodles (the Shio Yakisoba) as well as its Barbequed Meat (Yakiniku). The Shio Yakisoba appears to be like any ordinary plate of noodles, but tastes completely extraordinary. Thanks to the finest ingredients of Kitami, which includes Okhotsk sea salt, scallop flakes, scallops and squids, the Shio Yakisoba emerges as one of the signature food items in Kitami. Many also flock to Kitami for its Barbequed Meat. Here in Horikuchi, one gets to lap up different kinds of quality beef on their grills, along with their trademark special – Barbequed Beef Offals (Horumon Yakiniku). Horumon Yakiniku may taste foreign to some, but when dipped with Shiokosho (a salt and pepper seasoning), the bouncy sensation lingering in one’s mouth will burst into fireworks of flavors.

Monbetsu is famous for being one of the leading crab and scallop exporters in Hokkaido. One can find really affordable and succulent seafood in Monbetsu all year round. Head to the Maruka-Suisan Restaurant and savour their 1500 Yen lunch set! The lunch set consists of sweet prawns, scallops, crabs and one huge serving of the Kokke fish! Fresh and delectably palatable! Seafood is a handsdown must-try item in Monbetsu!

One of the pioneers of beer production in Japan, the Okhotsk Beer hails from many years of history. The smooth and light aftertaste from their range of beers complements Kitami’s food really well. Definitely do visit the Okhotsk Beer Factory to catch a glimpse of how their local beer is being produced, and savour the natural goodness of Okhotsk beer over lunch at the restaurant.

Engaru’s Asparagus Engaru is famous for its asparagus. One of the best places to savour Engaru’s asparaguses would be at the Maure Villa – local asparaguses are picked every morning to ensure maximum freshness. These asparaguses are sweet, juicy and crunchy; and it always leaves you asking for more.

Lake Saroma

Engaru houses one of Hokkaido’s heritages – the 84year old Amemiya No. 21 Steam Train. Like all steam trains, the Amemiya No. 21 operates by shoveling coal into the furnace in order to generate energy for movement. Take a scenic ride round the Maruseppu Forest Park with this rare steam-powered train and be dazzled by the surrounding serenity.

Lake Saroma is one of the largest lakes in Japan and offers one of the best sunsets. There are two ways to view mesmerizing sunsets at Lake Saroma – via the observatory deck or put up at the Lake Saroma Tsuruga Resort. The word “Ogoto” is said to come from the lyrical sounds of the koto (Japanese harp) that drifted from the mansion of Imao Sukune, the local ruling family of the time.

The people of Ogoto Onsen have created several interesting menus using local products such as rice, sake, vegetables and Omi Beef - the premium Wagyu beef of the region. All hotels and inns in Ogoto Onsen serve the exquisitely-marbled Omi Beef (which are approved for safety by Omi beef association), ensuring guests delicious memories of their visit.

Tenkawa Dai-Benzaiten Pilgrimage Routes and the Goddess Benzaiten of Tenkawa

Worship Hall of Tenkawa Dai-Benzaiten

Back in 2004, the “Sacred Sites and Pilgrimage Routes in the Kii Mountain Range” were designated as a UNESCO World Heritage Site. Stretching over Mie, Nara, and Wakayama prefectures, the area consists of three sacred sites linked by pilgrimage routes. The first sacred site, Yoshino and Omine ( 吉野・大峯 ), is known for its ascetic practices in a harsh environment. The second, Kumano Sanzan ( 熊 野 三 山 ; The Three Shrines at Kumano), is an embodiment of the fusion of Shinto and Buddhism. The third, Koyasan ( 高 野 山 ; Mt. Koya), was founded by Buddhist monk Kukai as a sacred place for the Buddhist Shingon sect. The three sites are linked by pilgrimage routes linking them to the ancient capital cities of Nara and Kyoto. Together, they form a cultural heritage chosen mainly for the diversity of traditional religious beliefs.

Are Japanese people non-religious? Though the Japanese in general do not consider themselves religious, it does not mean that there is no religious belief. Rather, a blend of nature worship, Shintoism, Taoism, Buddhism, Yin Yang and Five Elements Theory, and the Shingon sect of Buddhism have produced a unique fusion of religious beliefs characterized by a simple principle: embrace good qualities and refrain from bad ones. Unlike many believers of some exclusive religions, the Japanese seem more open-minded towards all sorts of religions that came to Japan. Rather than wholly rejecting them, they have adapted the positive elements and blended them into their own beliefs, hence developing a unique form of religion.

The Shinto sh r ines and Budd hist temples in the Kii Mountains present an opportunity to observe the unique development of Japan’s religious culture. Among the Shinto shrines, we especially recommend you visit the Tenkawa Shrine of Goddess Benzaiten ( 弁 才 天 ), where the unique religious traditions are well preserved.

Are the Japanese really non-religious? Maybe a visit to Tenkawa can answer this question.

Tenkawa Shrine and the Goddess Benzaiten

The history of Tenkawa shrine can be traced back to the 7th century, when the Goddess Benzaiten was said to have manifested herself before En-noGyoja ( 役行者 ), the founder of an ascetic religion. He came back to the same place later, in the hope that the Goddess may appear again and bring happiness to the world. However, the goddess never appeared. Today, Benzaiten is enshrined in Tenkawa shrine. Benzaiten is said to originate from the Hindu Goddess Saraswati. In Japan, the worship of Benzaiten is apropos of everything that flows: water, air, resources and Qi within the human body. Over the years, the image of Benzaiten has undergone several changes. First is the Myo-on Benzaiten ( 妙音弁才天 ) holding a biwa (traditional Japanese lute), followed by the almighty Happi Benzaiten ( 八 臂 弁 才 天 ) with eight arms, which is said to grant all your wishes. Despite the variations, it is fair to say that Tenkawa is the origin of all different incarnations of Benzaiten worshipped across the country nowadays.

Tenkawa Dai-Benzaiten is famous for Noh performance

Offering of a ritual dance by shrine maidens, miko(巫女).

Tenkawa Shrine as a sacred site Located in the middle of three sacred sites, Tenkawa shrine is regarded as one of the birthplaces of Japan’s religious tradition. As more and more Japanese people switch their focus from material wealth to spiritual affluence, the Tenkawa shrine has received increasing attention in recent years. Moreover, Tenkawa shrine is an exceptional testimony of religious beliefs that are distinct from those of other Shinto shrines and Buddhist temples. The prayers chanted here is a unique mixture of Shinto ritual prayer, Benzaiten’s mantra, Heart Sutra, and prayers from other Buddhist sects. In Tenkawa, the faith is beyond the sect, which is rarely seen in other places. Apart from the most important Taisai Ritual ( 例大 祭 ) held in mid July every year, there are many more seasonal rituals and festivals organized throughout the year. Set in the dense forests of Nara, Tenkawa is not easily accessible to non-Japanese speakers; it is perhaps a sacred site destined to be seclusive.

Plenty of fruits are grown in Gifu, including peaches, pears and persimmons. Among these, the premium persimmon called Fuyugaki is the most popular with its amazingly sweet and juicy taste. It is regarded as the queen of autumn fruits; its size and bright orange color make it look appealing. There is also a very special persimmon called Kahougaki. Originally branded by Gifu prefecture, only very high quality Fuyugaki persimmons are approved to bear the name. Kahougaki should weigh over 350g and have more than 18 units of sugar content as well as a bright red - colored skin. The fruit is so precious and rare, it can only be found in one out of a thousand Fuyugaki persimmons.

Japanese Rice in SINGAPORE

Japan’s rice cultivation began over 3,000 years ago, and has been the essential staple for Japanese people for over a few millennia. It has become so essential that the word “meal” in Japanese (gohan) actually means “rice” with an honorific prefix. During the Edo period (16031868), the tax system was strictly based on rice. As such, the wealth of each han (fiefdom) was assessed by koku, the unit of measuring rice.

Rice has always been an important part of our diet, yet it is so often being taken as just an accompany to the main dish. Change this perception as WAttention proudly introduces Japanese rice, which Japanese rice farmers and chefs take great pride to deliver. Meet new facets of this good old staple friend in Singapore this season.

Famous varieties of rice include the nationwide Koshihikari which has the largest production volume, Hinohikari that comes mainly from western region and hitomebore from Tohoku. Many varieties grow in multiple regions; for example, Koshihikari is found in Niigata, Mie and Tokushima as seen below. Although they share common characteristics, their tastes differ based on climate, temperature and the environment of each region.

Named after a legend of the beautiful lady of Ono-no-Komachi from the city of Ono in Akita prefecture. The rice is very beautifully shaped, as the grain is plump and fine with skin as shiny as silk.

The Japanese highly appreciate shinmai (newly harvested rice) for its sweet and fresh taste. According to the Japanese Agricultural Standard, shinmai is not only reaped immediately after harvest, it is also polished and packed within the harvest year. As polished rice oxidizes more easily than an unpolished one, the key to its freshness is the timing of the polishing. In other words, if you eat rice as soon as it is polished, you can enjoy it at its most delicious. This is the reason that the supplier Clean & Green put a rice-polishing machine and their unpolished brown rice side by side at Japanese supermarkets. The easy to use self-service machine is available without extra charge, where customers can customize their preferred level of polish. You can try for yourself how different rice can be at the dinner table. 26

The rice and the natural water then is contained within huge cedar casks located in a typical 19th century-style brewhouse – both the building and its casks have remained unchanged ever since the company was founded – and fermented for over 500 days. Because of this elaborate process, Marsho vinegars may cost more than the usual supermarket brands, but food connoisseurs in Japan have no hesitation in choosing this marvelous classic.

Real Escape Game vol.3 The Crazy Last Will of Dr. MAD | 28 – 30 September The Real Escape Game (REG) gives a new and interesting twist to interactive entertainment by bringing to life classic escape games with real locations, characters, stories and puzzles. Over 200,000 participants have challenged the REG and the event has won over puzzle and mystery fans in Japan, China, Singapore, Taiwan and USA. In this September, REG comes back once again with an awesome venue and an exciting new theme.

What is Real Escape Game??

Real Escape Game is basically a live puzzle game that requires you to escape from a place filled with riddles and clues to confound you and your fellow players. The objective of the game is to find and solve the mystery in order to escape in a limited time. Players are encouraged to teamup to crack the puzzles more efficiently and a game master directs the gameplay to add a touch of drama into the story. The uniqueness of the game is that you are actually physically inside the story. When you read books, you can imagine. When you play online, you can be drawn in, but you are not physically in the story. In this game you can enjoy it both physically and realistically. If you are a person who likes answering riddles, solving complex puzzles, or just generally smart, and looking for a challenge, this event is for you.

Japanese!

Yeong’s l e u m a S . r M

Samuel Yeong

After living in Japan for seven years, fluent Japanese speaker Samuel Yeong is now teaching Japanese to young students with great passion.

om o r s s a l C e s e n Japa

Must-know 003 & 004 |

I

n my previous column, I mentioned that Japanese is regarded by many to be a difficult language, and as a language teacher, I am frequently asked if such a perception is true. Admittedly, learning to read and write Japanese is a daunting task. Japanese employs arguably the most complex script in the world, using a mixture of three systems: hiragana, katakana and kanji (Chinese characters). While the former two can be easily mastered in a month, kanji present the greatest challenge due to their complex shapes, multiple pronunciations (at least two readings per kanji) and the sheer number (more than 2000) required to read an average book or newspaper. In terms of grammar, Japanese often appears to “say things backward”, so special effort is needed to wrap one’s head around it. For example, the sentence “I ate plenty of sushi while I was in Japan” becomes “Nihon (Japan) ni iru (in) aidani (while), sushi o takusan (plenty) tabeta (ate)” . Wattention Facebook_ad.pdf 1 5/16/2012 7:12:55 PM

But thankfully, not everything is hard

about Japanese! Although sentence structures may appear peculiar, in my experience most learners get used to it quite quickly. Verbs conjugate in a very regular way; there are only two irregular verbs in Japanese, compared to hundreds in English. Pronunciation is straightforward too, with hardly any unusual sounds that would trip up the tongues of Singaporeans. In fact, I would even venture to say that Singaporeans, with our ability in English and/or Chinese, have a distinct advantage in learning Japanese. Japanese contains a considerable number of loanwords from English, which Singaporeans will readily grasp once they get used to the pronunciation. Many Singaporeans’ prior knowledge of Chinese also means that another hurdle to mastering Japanese—kanji, is considerably lowered from the get-go. So is Japanese difficult? Like all languages, it is both yes and no. But at the end of the day, whatever the challenges may be, if the 128 million people living in Japan can master it, so can you!

Greeting people To greet someone, say ohayo gozaimasu in the morning, konnichiwa in the day and kombanwa at night. Like “Hello” in English You can say these phrases to anyone you see for the first time in the day or when you visit someone. Interestingly, konnichiwa and kombanwa simply mean “Today” and “Tonight” literally. They started life as short pleasantries about the day that one says when meeting someone, such as “How are you today?” or “What a pleasant night it is tonight”. But over time, they lost all the superfluous remarks and got pared down to a simple and efficient “Today!” and “Tonight!”.

Addressing people When addressing a Japanese person, always remember to attach san (pronounced like the English word “sun”) to the end of his or her name as a mark of courtesy, such as “Tanakasan”. Unlike the distinctions English makes between Mr, Mrs, Miss and Ms, you can use san on anyone regardless of gender or marital status, in both formal and casual situations.

NEWS PICK -from Japan <2> Saturday, July 28, 2012

Tourists Head To Tohoku, But Many Areas Still Struggle Tourists are making their way back to northeastern Japan, but many areas have yet to recoup the visitor traffic they enjoyed before the 2011 earthquake disaster hit the region. The summer tourism season in the Tohoku region -- comprised of six prefectures in northeastern Japan -- will enter its peak next week. Famous summer festivals that typically draw many tourists saw a drop in attendance in the aftermath of the earthquake. But reservations for festival packages have bounced back this summer. The Aomori Nebuta festival will be attracting bigger crowds this year. Reservations for JTB Corp.’s festival tour packages in Tohoku, departing from the Tokyo area, have doubled on the year, recovering to be on a par with the summer of 2010. Nippon Travel Agency Co.’s reservations have more than tripled on the year and are up 50% from 2010. Sales of paid seating at the Aomori Nebuta festival is up about 10% on the year, while seats at the Akita Kanto festival have mostly sold out. The Sendai Tanabata festival is ex-

pected to draw 2.1 million spectators, up 70,000 on the year. “Many of last year’s reservations were by people involved in quake-relief efforts, but this year’s bookings are primarily from tourists,” says an official at Sendai Kokusai Hotel in Miyagi Prefecture. Visitors to 34 major travel facilities in Aomori Prefecture in May and June topped 2010 figures. The prefecture continues to benefit from the completion of a full bullet train line connecting Tokyo and Shin-Aomori stations in December 2010. But visitors to Miyagi Prefecture were down 10.1% this June compared with 2010. Akita Prefecture has yet to recover to prequake tourist levels, says an official in the prefectural government. Yamagata Prefecture is believed to face a similar situation. Domestic travelers are expected to reach 74 million this summer. But “the rebound in visitors (to northeastern Japan) has been weak, excluding major events and particularly popular destinations,” says an official at JTB. Visitors to nine major tourist spots in Fukushima Prefecture, host to the stricken nuclear reactors, was down 30-40% in the April-June period from 2010. - Source : NIKKEI.com
