editor Well this is it! Christmas is now round the corner and the New Year is looming up on the horizon, followed by the Chinese New Year. The Chinese Dragon has been rather kind to us this year; I hope that the 2013 Snake will be just as kind, hopefully it won’t mean that we have to watch out for snakes in the grass creeping up behind us. Hmm! Anyway, if the Mayans were right, this may be academical. I doubt it though! One thing is certain politicians and institutions have shown beyond any doubt that it is us the working people who are and will be paying for their failures. Some banks in particular are utterly shameless. And on that note let’s look forward to whatever is in store with some optimism.

Hmm! De todos modos, si los mayas estaban correcto, esto puede ser académico, aunque lo dudo! Business Bigots It is truly said “You can tell a bigot, but you can’t tell him much.” By Count De La Perrelle. A Bigot is an individual who strongly believes in his own beliefs. He is not apt to compromise with anything; it’s his way or no way. He is not tolerant of others or their opinions.
I have been reviewing quite a lot of businesses recently and have been amazed at the amount of bigoted attitudes I have come across. Why are so many ‘Bosses’ so obstinately or intolerantly devoted only to their own opinions and prejudices? Consequently, they seem to have no regard for the expertise and knowledge that members of Staff or Management may have to offer. I am aware of one Restaurant in San Roque area in particular which appears to be run by a despot who seems to think that he knows more than the highly experienced Managers, Chefs and Servers he employs. Furthermore he has absolutely no experience in the trade save from owning the business. His ideas of quality control and customer satisfaction and food preparation are apparently nil. Yet his ideas have to be 10

adhered to or members of staff are likely to be shown the door! Even when he is advised by the Restaurant Staff that he may be wrong he just insists that he is correct and they must get on with it. This is not only unbelievable but will definitely be detrimental to the overall success of the business as a whole. The customers will soon notice the lack of staff to cater for their needs and the quality of the food served. “Bigotry may be roughly defined as the anger of men who have no opinions.” G. K. Chesterton Quotes I suppose we have to understand the origins of this attitude and that we are all born tribalist. Even babies know when a face is unfamiliar to their tribe. Years

ago tribes all fought each other in the knowledge that they must be correct in their ideas and to prove this, they would fight against not-of-our-tribe faces, therefore in doing this they could protect the tribe and enhance their survival. I am glad to say that for the most part, intelligent people have done away with that environment but perhaps for some insecure people their innate psychology has not caught up with modern day business. It is in every human beings nature to separate into Them and Us quite easily without realising what we are doing. It takes an educated and civilised person to recognise that as a fault and to pursue a more liberal attitude to business in this century. We have to understand that whenever there is talk of Them and Us or Our and Their, Our is always thought of as superior. For example, how often have you heard the phrase, “It may be ok for them but it is not the way we do things here”. My advice to all of you who may be in business already or just starting out on a new exciting business adventure, is to always remember that the business model you have decided on will run so much more smoothly with a team of people who can input ideas and feel that collective reasoning is an acceptable component of the enterprise they are involved with. Look after the team you have and make them feel wanted. Business should be social as well as profitable. I was in conversation with a friend of mine recently who is a brilliant Marketing Expert, he told me that in his experience some people who contact him looking for serious Marketing advice will, after receiving perfectly logical information and marketing procedure advice, then decide to ignore all the solid advice he has given them and go it alone. Quite often they fail. They do not seem to realise that his advice is based upon years of shrewd experience and business acumen. They just think they know better………….I rest my case! “It can be argued that no business is ever created ‘purely’ for the purpose of profit. Halloween at the Pony Club It rained and it rained but this certainly did not spoil Halloween at the Pony Club in the Escuela de Arte Ecuestre, Estepona. Of course the roof over the Pony Club arena and the indoor arena ensured a good turnout of kids to make the whole thing enjoyable and a good success. After the rides and the prizes giving there was a nice little banquet laid out for both parents and children with plenty of various snacks, sweet as well as savoury, and loads of different soft drinks. The event was crowned with various game competitions which all children enjoyed while spurned on by their parents. No doubt the next similar event will take place before Christmas.

Steak and Kidney pudding. This month a traditional British dish that is making a comeback and is perfect for chilly winter nights.
Ingredients • 1 oz/25g beef dripping, lard or vegetable oil • 1½lbs/675g quality beef • 12 oz/350g beef kidney • 1 onion, peeled and roughly chopped • 2 carrots, peeled and thickly sliced • 1 oz/ 25g all purpose/ plain flour • 10 fl oz/ 300ml beef stock • 5 fl oz// 150ml red wine • 1 bay leaf
• ¼ cup/ small handful flat leaf parsley, finely chopped • 1 tbsp tomato puree • 10 oz/280g self raising flour • ½ tsp baking powder • Pinch salt • 5 oz/ 140g beef suet, finely chopped. (You can find suet in Gib.) • 2 - 3 tbsp cold water • Butter for greasing
Method. Heat a large pan, add the dripping/lard or oil, heat until slightly smoking. Add beef cubes and the kidney, stir well until meat is browned.

Add the onion, carrots and stir again. Sprinkle flour over the meat and vegetables, stir thoroughly. Add the stock, red wine, bay leaf, parsley and tomato puree. Bring to a gentle boil, cover and cook for 1 hour. Check and season with salt and pepper to taste, allow to cool.
Make the pastry. Place the flour, baking powder, and salt into a baking bowl and rub the suet into it. Add cold water to form a stiff, slightly sticky dough, rest for 30 mins. Grease a 2 pint pudding basin with the butter. Divide the pastry into ⅔ and ⅓, roll the 2/3 piece to line the basin plus a ½” border. Carefully line the basin with the dough. Then add the meat mixture to the basin. Roll the remaining dough to cover the pudding basin. Wet the overhanging lip with water, lay the lid on top and press firmly around the edge to seal. Memories of Christmas Past How we youngsters spent our Christmas Days by Count De La Perrelle We were having a conversation here in the office the other day about Christmas times long gone when we were children. We wondered just how much today’s children could be missing out on the connectivity of family and friends during those times. For example, can you imagine a world without Computers, Mobile Phones, Game Consoles. What about a world where less than half of the population have access to a television set?. About the same amount of people had a car or a telephone and you’re somewhere near the mark of the 1950’s/60’s. Remember as well a Nation still buying rationed food and of course kids could still get six of the best from the Headmaster at School if they weren’t up to scratch with their math’s. Christmas time was for the most part much the same as now except for a few important things. Family arrived by public transport not always by car. Christmas cards were sent to let friends and family know you genuinely remembered them and usually sent with a note attached with news about the local family and area. On Christmas eve people would gather at a family members house probably grandma’s where an open fire would be burning wildly in the hearth and the smell of mince pies would engulf our senses as we walked in the door. There would be real holly and ivy decorating the walls and 20

a proper Christmas tree adorned with all sorts of homemade treats. Real candles twinkling in the branches. I suspect the fire brigade may have been busier in those days. As the evening wore on we would stand around the piano and attempt to sing some traditional carols. Presents would be strewn around the base of the Christmas tree all wrapped up in wonderful papers and tissue with hand made ribbons adorning the corners. Children full of wonder at what might be in them and what one would find out the next morning. No doubt it would be the first time that year that the children had longed to go to bed and not have to have been coaxed. The morning would come and here is where there are so many more differences. Rupert the bear annual and a Meccano set were the order of the day for the boys and the girls would probably have a Bunty annual and some girly things like hair grooming set or some pretend cosmetics. Christmas Day has remained much the same as far as the food we now eat. Perhaps the big difference would be that the vegetables would have most likely come from the garden and not the local supermarket. The mice pies, sweets and preserves would have been homemade and proudly set out by the Ladies of the household. For entertainment there was the television with the Christmas specials. The Bing Crosby Show, the Perry Como Show, the Andy Williams Show all from the USA and Tony Hancock , Cliff Richard and various specials from the UK. Always the odd cartoon slipped in for good measure. There was always the party games and what fun could be had watching Aunty Maud making a bit of a fool of herself trying to play charades and gyrating all over the place miming some title whilst everyone fell about laughing. The Queens speech was a very important part of the day and Christmas dinner had to be all finished before her Majesty’s talk to the nation.

We cannot change the fact that times move on and life and society will change and of course it should. Perhaps remembering our childhood Christmases with some nostalgia is a good thing and will allow us to remember the most important people at Christmas are the ones less fortunate than ourselves. As a thought………….Just how many families will get through this Christmas Day without the use of a television on constantly, using a text message service or spending at least some time with a PC?

So what happens now if you get sick? By Leslie Thomas of STM Nummos S.L. The Spanish state health system offers an excellent standard of care. If you are a EU citizen living in Spain permanently, you will be entitled to free health care for yourself and your dependants provided you are in receipt of a state or disability pension or if you are working and contributing to the Spanish social security system as a self employed person or via your employer as an employee. In April this year the Spanish government introduced changes in the requirements to obtain residency and you may now be required to prove that you have either public or private health insurance, which must provide cover in Spain equivalent to that provided by the National Health System. Pensioners will be considered to meet this condition if they can prove, by means of the relevant certificate, that they are entitled to health care paid for by the State from which they receive their pension. In the case of UK state pensioners the form S1 (available through the DWP International Pensions Centre) should be sufficient. The European Health Card is only intended for UK residents who are in Spain temporarily and their treatment costs are reimbursed by the UK. If you are living here permanently, this card is not intended to be used to obtain state health care here and local health centres now appear to be enforcing this ruling more strictly than in the past. Additionally, returning to the UK for treatment may no longer be an option. Once you have established residence in Spain you may lose the right to free NHS treatment unless you can prove residency in the UK. If you live in Spain and are not entitled to free care, private health insurance is an essential. Without it you could find yourself facing substantial, and possibly even financially crippling, medical bills. 24

As every saver knows, the rate of interest payable on deposit accounts remains very low and even though short-term rates have been showing some signs of increasing to attract investors, there is still little to get excited about; but could you do better? From a comparative website this week, looking at Sterling based accounts, the best instant access deposit rates are currently paying gross interest of between 2.5% and 3.25% but be careful, some of these are based on having a first year only bonus included in the rate. A 3 year fixed rate bond is currently showing 3.75% and longer-term bonds of 5 years are paying 4.2%. The common problem with all of these for taxpayers is that tax will be due on the interest with an income tax starting rate in Spain of 24.75%, which compares with the UK at 20%. A 3.25% variable rate becomes 2.44% net of 24.75% tax and even 4.2% drops to just 3.16% net. A better way could be to consider using an alternative type of investment, offered by a few international insurance companies; these are often referred to as offshore investment bonds. These bonds will not only open the way to a very wide range of investment funds with different levels of risk to choose from, they also have a positive impact on the tax payable both in terms of the amount and the timing. Whilst you could select a fund or number of funds which are linked directly to the open market, for the more risk averse, there are other options which are designed to smooth out the effect of daily market movements and provide a more steady rate of return. The combination of smoothed returns with better tax efficiency can make quite a difference to the net result. Taking one such fund as an example, which has an anticipated gross rate of return of 7% per annum. This is a cautious fund but because it is accessed through an investment bond, there is a layer of charges to take into account. Based on an investment of 25,000 (either Euros or ÂŁ Sterling), the average charges over a 10-year
investment period amount to around 2% pa. This has the effect of reducing the 7% annual bonus declaration to something like 5% pa net of charges. This would see the 25,000 grow over 10 years to 40,700 if no withdrawals are made, which compares with a net return from the best of the deposit accounts illustrated of 34,123, assuming 24.75% tax is paid. If as an alternative, the interest is taken as income from an instant access deposit account, this would amount to a total something like 8,125 gross over 10 years or 6,114 after tax at 24.75%. The bond in this example however could have produced 12,500 gross income over the same period. Because of the way that bond income is taxed, the net amount received would have been approximately 11,800 – almost double that received from the deposit account! Whether your search is for growth or income, this is just one example of how alternatives to deposit accounts might just serve you better.

open a bar in Spain. It’s a known fact, I am sure there is a scientific term for it, that the average hard working “Brit” reaches a certain age and suddenly develops an almost obsessive urge to buy and run a bar in Spain. - By the Prickly Pair The more intelligent push this obsession to the back of the minds and content themselves with merely looking up a few “bargain buy” or “goldmine” or “excellent investment” Spanish bars on eBay. There are however the weaker willed, slightly crazy, daft b*****ds who actually go out and buy one! Before you know it, that cockroach ridden, fly infested, health hazard on the corner, that Jose has been trying to pass on to any gullible twat since Franco turned up his toes, has suddenly become the newly named, no expense spared, latest new “English Bar” in town. Back in England, if you want to own or even just run a pub, licensed hotel, wine bar or in fact any premises that require a full “on licence”, the law requires that

you attend a whole plethora of courses and drinks licences are no longer given out “willy–nilly”. Quite stringent checks are carried out on anybody applying, so if “Sweeney Todd” can no longer get a licence to run a public house in England, yet the devil still rides him/ her to become “mein host”, it’s only natural that his/her thoughts will eventually turn to “little Britain” on the Costa del Sol, Spain. To be fair, there are a few British bar owners, who ran pubs back home, on the whole these people make equally as good a job of it in Spain as they did in England, but for every “professional” landlord there are three ex lorry drivers, hairdressers or road sweepers chancing their arm at it. The first and most obvious obstacles encountered by
these entrepreneurial half-wits are the language, buying the bar, doing it up, getting fliers printed and finally throwing open the doors to the hoards of well behaved, pay for every round, go home quietly customers you are sure you are going to get. All of this can be done without having to utter a single “por favor”. However, sooner or later, a Spaniard or two are going to wander in, order a “wikky” and cover your new floor in sunflower seeds. Well, this is Spain, after all! The very sight of a Spaniard should not fill you with fear. Mind you, fair play for the landlord of my local, whom I must mention, I will however change his name to protect his identity from other landlords who may or may not call him a “creepy swot” ,so for his own good he will be known as Pete. Pete went and enrolled in a Spanish course and, eight months down the line, although he will always sound like a “p***k”, he does know his way around a “wikky”, if a Spaniard should happen to stray in to his delightful little watering hole. Where Pete has also made a success of “his bar” is in introducing a regular quiz night and sticking at it. A lot of other English bars have tried this in the past and given up after a while, but our Pete has stayed with it and now he has the busiest bar on a Wednesday possibly in the world. Although I put down part of his success to the man himself, Pete is, shall we say not the most patient of men, and, you know the old adage “I don’t come here to be insulted”, well I am convinced that on a Wednesday at “his bar” people actually do! So what’s the moral of all this? If you can’t fight the urge and do buy a bar in Spain enrol in a training course before you get here, learn Spanish and provide your customers with some form of entertainment or take a leaf out of Pete’s book, be very, very angry!
