Another successful event by Marifé Nuñez of the Es.Arte Gallery Following on to our last edition, we are pleased to announce that the launching of the new exhibition at the Es. Arte Gallery showing the work of Juanjo Viota has been extremely well attended by art collectors and the press. Juanjo Viota is a draftsman and painter, a bachelor of Fine Arts from the Faculty of BBAA who, since completing his scholarship at L'École Nationale Supérieure des Beaux-Arts de Paris, he has participated in solo exhibitions both in Spain and abroad . He has also participated in the International Symposium of Art of Noja, SIANOJA 2007 and was awarded in several contests.

The Escuela de Arte Ecuestre Costa del Sol A most impressive establishment in Estepona Conveniently located just off the A7 in Estepona, the Escuela de Arte Ecuestre Costa del Sol is the most impressive equestrian centre in Spain. Surrounded by well maintained gardens, the gigantic installation comprises a 7000m2 competition arena, an indoor arena seating 1235 people, a bar/restaurant, a pony club, a gigantic marquis for celebrations and stables to accommodate 148 horses. That is not to mention the car park large enough to accommodate more cars than a football event. Of course it is a riding school providing lessons for students of all ages ranging from beginners as young as three to professional adults that may wish to improve their style, be it dressage, jumping or just riding. The Pony Club, with its own stables and arena, is one of the best reputed in the country, possibly worldwide.

Such an establishment would be wasted without a restaurant/bar to provide refreshments as well as tapas and a menu “a la carte”. It is ideal for children parties and other events which, if involving a large number of people, can be accommodated in the permanent marquis, that makes it the ideal location for large company events, weddings, private functions. To see is to believe, and a visit to see it all should prove a rewarding experience, especially if you can coincide it with a “Dancing Horses” show or a students’ demonstration or indeed even a social or competition event. www.webexpressguide.com

RECIPE

METHOD 1. You will need 15g/½oz of salt per kilo of duck legs. Place the duck legs into a roasting tray and sprinkle with the salt. Sprinkle over the thyme, then cover the tray with cling film and chill in the fridge overnight. 2. Heat a heavy frying pan over a low to medium heat, then add the duck legs to the pan and cover them completely in the duck fat.

DUCK LEG CONFIT INGREDIENTS • 4 duck legs • Approx. 15g table salt (you will need 15g per kilo of duck legs) • 2-3 sprigs fresh thyme leaves only & 1 garlic clove, finely diced • 300g/11oz duck fat • 1 banana shallot finely sliced • 200g/7oz tinned tomatoes • 400g/14oz tinned flageolet beans, drained and rinsed • 200ml/7fl oz chicken stock • 1 sprig rosemary, leaves finely chopped salt and freshly ground black pepper • 50g/2oz butter For the celeriac mash • 500g/1lb 2oz floury potatoes, peeled, cut into chunks • 500g/1lb 2oz celeriac, peeled, cut into chunks • 75g/3oz butter • 110ml/4fl oz double cream • salt and freshly ground black pepper 14

3. Simmer and cook the duck legs gently for 2-2½ hours, or until the meat is very tender. Remove the duck legs from the fat, reserving the fat, and place onto a clean roasting tray, draining off any excess fat. 4. Shred the meat from two of the legs. Set the other two aside. 5. Heat a little of the reserved duck fat over a medium heat. Add the shallot and garlic and fry for 1-2 minutes, or until softened. 6. Add the canned tomatoes, bring the mixture to a simmer and cook for a further 2-3 minutes. 7. Add the shredded duck meat, flageolet beans, stock and rosemary and return the mixture to the boil for another 2-3 minutes, then season, to taste, with salt and freshly ground black pepper, then whisk in the butter. 8. Heat a little more of the duck fat over a high heat. Add the reserved duck legs, skin-side down, and fry for 2-3 minutes, or until the skin is crisp and the duck meat is warmed through. For the celeriac mash, place the potatoes and celeriac into a pan of salted water and bring to the boil, simmer for 15 minutes. Drain well and return to the pan to steam over the heat for one minute. Pass the cooked potatoes and celeriac through a ricer (or mash with masher) until smooth, then return to the pan. Add the butter and cream mixing well, then season, to taste with salt and freshly ground black pepper. To serve, pile some of the celeriac mash onto each of two serving plates, then spoon the ragoût alongside. Top each portion with a crispy confit duck leg.

Christmas was not observed earlier than 200 A.D. and it became a popular holiday in the Middle Ages. The many customs of Christmas, the Yule log, the decorations of holly and mistletoe, the singing of carols, the giving of gifts, and the sending of cards are contributions by English-speaking countries. It is the Germans that introduced the Christmas Tree, while the Dutch in seventeenth century New York are responsible for the American Santa Claus. And who was Santa Claus? He was a Mediterranean man originally known as St. Nicolas*, a 4th century AD bishop of Myra, the modern Demre, in today's Turkey, a town famous now for its luscious tomatoes and juicy Valencia oranges. Saint Nicholas was born in the nearby city of Patara about 300 AD and came to Myra as a young man. Myra was a port as well as a farming town and St. Nicholas eventually became a patron saint of sailors. In the 11th century, pirates stole his remains and deposited them in a new burial place in a church in Bari, Italy. As tales of St. Nicholas travelled to northern Europe, legends to include the bearing of gifts also started to get 22

about and they formed the basis of the Santa Claus we know today. Christmas is a festive time in the Christian communities and it has even been adopted by some Muslims, who might buy a tree and decorate, but with no reference to Jesus Christ. Traditionally, Christmas was a special and a festive time, when foods were made and eaten to celebrate the birth of Christ and in the Mediterranean many sweets are associated with Christmas times. In the Middle Ages even kings concerned themselves with sugar, as we know from King Philip III (1578-1621), the bigoted Spanish king responsible for the final expulsion of the Moors in 1609, who thought that the Viceroy of Valencia should distribute more sweets and turrón (similar to an almond nougat) among the poor of the city to celebrate Christmas. The Christmas banquets of the rich in Spain were as elegant as those in Venice. Francisco Martínez Montiño, master chef to King Philip III (1578-1621), served in the early seventeenth century a magnificent Christmas banquet that included: a first course of ham, olla "podrida" (the

stew made famous in Don Quixote), roast turkey from the New World with its gravy, little veal puff pastry pies, roast pigeons and bacon, bird "tartelettes" over whipped cream soup, roast partridges with lemon sauce, "capirotada" (a batter of herbs and eggs) with pork loin, sausages and partridges, roast suckling pig with cheese, sugar and cinnamon soup, leavened puff pastry with pork lard, and roast chickens. The second course consisted of roast capons, thin, hard-baked cake with quince sauce, chicken with stuffed escarole, roast veal with "arugula" sauce, seed-cake of veal sweetbread and livers of small animals, roast thrush over "sopa dorada" (a highly coloured soup), quince pastries, eggs beaten with sugar, hare empanadas, fried trout with bacon fat, and puff pastry tart. For a third course banqueters were served chicken stuffed with bacon-fried bread, roast veal udder, minced bird meat with lard, "smothered" or "drowned" (ahogados) pigeons, roast stuffed goat, green citron tarts, turkey empanadas, sea bream stew, rabbit with capers, pig's feet empanadas, ring-dove with black sauce, "manjar blanco" (a dish made of chicken mixed with sugar and milk), and rice fritters. In Catalonia, Christmas always saw the cook making "escudella*",

which means "bowl," the name of a big stew-soup, properly "escudella i carn d'olla". This is just an illustration of what is a King’s banquet, but then have things really changed that much? Christmas is a family event, a reunion of all members of a family, brothers, sisters, in-laws, children, aunts and uncles, all gathering to celebrate together the great feast. Everyone arriving would bring an additional course to add to the table with the result that the lunch would gradually slow down its pace and drag on to become the evening meal, when all the remaining dishes would be brought back to the table. Such large family meals often also extend to New Year’s eve with the excuse that they would all see the new year in together at midnight. All of this makes some traditional Christmas Dinners look like a snack by comparison, but then I think that overeating food produced by today’s modern methods is really not recommended.

. Precision medicine: interpreting the gene story

The options available for many people with cancer have significantly improved through targeted therapy which reverses the effects of specific genetic mutations in tumor cells. Scientists are working tirelessly to be able to translate precision medicine for use in patients with all types of cancer. Expert diagnostic pathologists are using a powerful, tumor DNA sequencing test to guide therapy in patients with advanced disease, irrespective of the type of tumor.

.Targeted immunotherapy (Checkpoint Inhibitors): triggering immune defence. Currently both the FDA and the European Medicines Agency have approved several drugs which enhance the fight against cancer by the immune system’s T cells. These drugs belong to a class of immunotherapy treatments known as “Checkpoint Inhibitors” which help to boost the immune system’s function. Until now they have obtained significant results, achieving complete elimination of cancer in some patients with advanced melanoma.

. Cellular therapy: “Living drugs” to fight cancer better (CAR Therapy). In addition to these drugs, other immunotherapy strategies are being developed, in which the patient’s own T cells are manipulated to more readily attack cancer cells. “Living drugs are being created,” states Dr. Cortés-Funes, Head of Oncology at HC Marbella, about CAR therapy. The concept of these drugs/treatments in which living cells are infused or transplanted into patients, is very exciting as the cells are presumed to be more agile than chemical or biological components. For example, they can detect multiple signals in their environment and respond appropriately. Scientists are still working to guarantee the safety of cellular therapy and control its side effects.

. Epigenetic therapy: Keeping cancer cells “at bay”.

Epigenetic research, or research into how genes can be activated or deactivated depending on external influences, is changing our understanding of cancer and many other

diseases. Instead of destroying cancer cells, epigenetic therapies try to return them to their normal growth path. One of these drugs is being tested in people with acute myeloid leukaemia (AML) and myelodysplastic syndromes, with a response rate of 38% in patients whose AML had recurred and was resistant to treatment.

. Research into Metastasis: Revealing the dormant enemy.

In the last few years, scientists have identified genes and pathways which cause the spread of breast cancer or neuroblastoma to the brain, and of kidney cancer to other organs. In 2014 it was discovered that metastatic tumor cells have a notable tendency to adhere to blood vessels, a survival mechanism which could be significant for the propagation of many types of cancer. Research has also delivered clues on how cancer cells hide and remain undetected by our immune system, which opens up a new, promising line of treatment. The length to which some papers choose to go to sell their papers seems unreal. The idea of a news paper, as the name implies, is to print news to inform the readers of what has taken place in the different areas of our society; basically informative facts that could affect our lives. The underlying factor is FACTS not fiction because unfortunately some readers will actually believe anything the papers say.

“Santa Claus is REAL: Scientists confirm ancient bone fragment belonged to jolly old St Nicholas” States a certain newspaper; adding that scientists at the University of Oxford tested a bone relic fragment to conclude that it belonged to the fourth century AD, a time when ‘some’ historians ‘allege’ St. Nicholas, the original Santa Claus, died. Well, unless St. Nicholas was the only person that died in that century, I do not see how it is possible to say whose bones were tested without at least a DNA. Having made the meaning of the discovery quite clear with the title, then of course it is added that “they cannot categorically prove they are from the Christian saint”. Amen !!! By contrast an internet publication, reported Aliens visiting the Clackamas Town Shopping Center near Portland ; stating that Aliens might not have chimneys in their spaceships but they apparently still have Christmas wish lists. An extraterrestrial beamed

down to the Oregon mall where she was spotted patiently waiting for her turn with Kris Kringle, chatting with someone while waiting in line with everyone. While snapping pictures of Santa with kids is totally normal, it was certainly a novelty to see a visitor from space sitting on Father Christmas’s lap. “When she got up for her turn to take a picture, Santa seemed really chill about it too. He smiled and laughed, and was holding her hand for the picture and everyone seemed to think it was great.”

identifiable picture of an Alien or an Alien craft other than some vague scratches on Egyptian relics. I know that if we humans were capable of travelling to other worlds, our presence would be known immediately all over the new world. So what’s different the other way around? And why these Aliens only deal with Americans? What’s so special about the C.I.A. and American secrecy? I do not think that the wheel, fire, telephone, electricity, penicillin, radio, telegraph, light bulb, the press and thousands of other inventions which have revolutionised and modernised our world originated from the U.S. of A., as a matter of fact I do not think that many or any actually did. That includes the splitting of the atom and its developments. So what make the Americans so different and important that they are helped in their discoveries by friendly Aliens? What discoveries if not just improvements on what has already been discovered? Quite frankly I do believe that right at this moment we are not actually moving much further however much crap is put on YouTube by so many “would like to be” scientists seeking attention. Everything now seems to be motivated by money, the hell with the human race and at this rate humanity will certainly destroy itself. No need for any Aliens to help, we seem quite capable on our own.

Just look at the political situation! All it takes is a spark for all hell to let loose. Here again certain newspapers keep on and on about WW3, announcing its imminence day after day, creating worry, anxiety, hate and fear to sell their miserly papers. A death wish! Quite frankly they are a danger to the world. All they are doing is instigating the less intelligent politicians to raise their tempers and actually start the dreaded war and, honestly speaking, most of the key politicians do not seem to have a single brain cell to share amongst themselves. I wonder how happy these newspapers would be when they are incinerated and obliterated by a missile aimed at the heart of their own society.

Reductions in Autonomo Contribution 2018 (Tarifa Plana) From January, 2018 every new entrepreneur can benefit from a reduction to his social security contribution for 1 year at a flat rate of 50€/month.

This reduction represents a great financial opportunity for those who are considering starting as autonomo. After the first year, the social security contribution will increase gradually to reach the standard amount, which in 2018 is 275€.

The following are excluded from this benefit: 1. Administrators (directors) of limited companies. These are expected to pay the full social security as a selfemployed individuals. 2. Autonomo Colaborador.These are those who work to support another family member’s business but they do not have a business of their own. 3. Company Employees who additionally start up as an autonomos (These groups cannot benefit from the reduction stated here but they may be eligible for other reductions.) Additionally, to be eligible for the reduction, the entrepreneur must not have been registered as an autonomo for the previous 2 years and he or she should owe no money to Hacienda or Social Security.

How much is the contribution? The standard autonomo fee is 275€ per month. In some cases an additional amount is added for extra covers in the national insurance. In some circumstances these 44

Plus Expo The popular 50s Plus Expo, previously held in Estepona, took place in Fuengirola at the IPV Palace Spa on the 2nd and 3rd of December.

It was very well attended on both Saturday and Sunday; of course there were some special attractions such as Eric Knowles of the “Antiques Road Show” giving free valuations as well as other demonstrations. This was a great opportunity for a "person to person" chat with the representatives of Francisco Camero as a follow on to the various articles we have written and in particular to meet and speak with some of the new generation members of this old family of Funeral Directors.

Christmas shopping started early this year with the invention of “Black Friday” and will continue right up to the 6th of January, especially in Spain and other Latin countries where the epiphany is celebrated as seriously as Christmas day. Meanwhile children are taken to the shopping centres during the week-ends to see Santa Claus and tell him what presents they would like to receive, while the parents take their photos sitting on his lap. The stockings are up, the Christmas Tree has been decorated and the living room and the home have been converted into a Christmas wonderland. The shelves have been stacked with Christmas candies, the fridge is full of ham, chicken, turkey, goat’s meat and beef for the Christmas Day feast. The Christmas greetings cards have been sent and some are received. This is truly a lovely period to be alive and in good health as, gradually, the Christmas fever grips every one the nearer it gets to the day. The cold weather is of course the ‘dot on the I’ for us here in the northern hemisphere. Yes, even in the warmer climate zones the dew can fall at night covering the ground, 50

giving it the appearance that it has snowed. With a clear sky, the moonlight can be so sparkling and radiant that it can blanket the woods with beautiful shades and shadows. In the northern parts snow itself is so much part of Christmas that we look forward to a ‘White Christmas’ every time; it is a splendid feeling when, at times, it snows on Christmas day while you sit back, carols playing, lights twinkling with the sweet appetizing aromas of chicken and turkey sizzling in the oven and the children enjoying their Christmas toys. Nothing can beat the gladness and euphoria of Christmas. This of course is the description of the ideal Christmas, the fairy tale version of it. Unfortunately, Christmas has become so commercialised it has lost its true meaning; fairy lights, tinsel and extravagant presents have made us forget about those who do not have families to celebrate with because it is intended to be a precious spent time with family and those we love. Then there are those who are even less fortunate and cannot afford to buy their fairy tale Christmas. All of the above mentioned would have been perfectly

legitimate if they were done within the context of the true meaning of Christmas. Understandably it is important for people to enjoy the harmless Christmas fun and traditions. I think the children particularly should have their fun with Santa Claus. It is all part of the drama of growing up; I often think back and cherish those precious childhood moments. Many of the traditions of Christmas seem to be more pagan than religious; the Christmas Tree, decking the hall and banisters with garlands and buntings and Santa Claus, all serve a noble purpose if only we do not miss the true meaning of Christmas. As long as drunkenness, adultery, fornication, drugs, etc are kept out of it, it remains a healthy enjoyable family feast, the celebration of a family reunion as inspired by the birth of Jesus, the name of the occasion should say it all: Christ & Mass (Christmas). While it is legitimate to enjoy Christmas fun within families, it does not serve a good spiritual purpose for people to ignore the true meaning and origin of Christmas.

Este es el caso de Wish.com, que ha querido promocionar sus medias XL y ha terminado ofendiendo a las que deberían ser sus clientes. La tienda de moda online está siendo objeto de críticas por todas las redes sociales debido a una decisión bastante polémica. So welcome to 2018! Did your Christmas go as planned? Was it really perfect? Or are you still seething about distant relatives you sent cards to and never got one back? Or are you complaining about sending Aunt Nell a well thought out and over budget present only to receive back a basket of cheap smellys and some oil filled capsules? Truthfully we don’t give just to receive; well I don’t, I give to show off and make others realise just how cheap and tasteless they are. What makes you think that one day in every year you can bring together kids, parents, brothers, sisters, a pair of bitter childless couples, relatives that nobody else wanted and create a perfect Christmas card, a Victorian Christmas? You know, snow up the windows, children playing together quietly with a wooden train and spinning a wooden ball, grandma sleeping quietly in a chair and a big glowing fire crackling away, giving everyone a rosy glow on their cheeks. Come on! Wake up and smell the coffee! In those days those people were grateful if they could eat on Christmas day and that little Tom was still alive and not taken away because of a particularly bad case of consumption, while dad still had his job down the mine and granddad’s hands were still nimble enough to whittle out a wooden train, ball and stick and an occasional doll’s house. What joy not having to look at the miserable spotty face of a teenager because he never got the right computer game. Or the daughter, who got the latest mobile phone, but glares at you because, after doing without for yourself, you provided it with a mere pay as you grunt card. How sick are you of being told by granddad that in his day there was no need for batteries which cost more than the toys and when everything run on dynamos even the light on

his bike. Well why not take away his battery powered wheelchair and see how he likes the good old fashioned dynamo? O.K., O.K. that’s what you are thinking if you’re anything like myself, but just don’t say it, you know it would be a right party pooper. Be nice to granddad, it might be his last Christmas; well what about granddad being nice as it might be his last Christmas? Why is it that old people become more spiteful the older they get? Is it because we let the get away with it? What about the in-laws? Nine times out of ten you go out of your way to be nice just to keep the peace, only for her to get much cockier and well above herself and treat you even more like a simpering fool. Is she really that stupid so as not to realise that you are acting and that as soon as she is out the door her son will suffer? Well here is the trick for next year. Agree she cooks better than you and arrange for her to be in the kitchen all Christmas Day, after all nobody cooks like mama! While you are at it, get granddad to make the sulky teenagers toys work without batteries. Slip grandma alcohol as soon as she arrives and the chances are she will sleep all day. Buy the kid F..k all because, let’s face it, they complain, sulk and moan no matter what you do. Ah! The husband and yourself, why not grab the car keys and escape at least for a country drive and a MacDonald, listen to your favourite CD from your pre-kids and inlaws days, park up and enjoy. Hopefully the in-laws, kids, grandparents, etc will be too proud to admit they can’t cope without you and reunite whilst discussing how impossible and selfish you are. I bet they will be glad when you return preferably about midnight or later, so think on and prepare for 2019. www.webexpressguide.com
