WHY THE

EXODUS?

Is Spain showing its true colours ? Of course unemployment is high in winter and lower in summer when bars and restaurants need staff for the season’s tourism, nevertheless unemployment is high overall, this is evidenced by the long queues for free food aid in almost every town in Spain. Yes the crisis persists but what’s being done? In the first place I believe that the wealth of a nation depends on the wealth of its people, which is difficult to achieve when wealth is being corruptly pocketed by individuals at local and national government levels.

If you happen to be late with any payments, contributions, declarations you are levied with excessively high penalties. So when business is suffering from low income for any reason, it just gets worse. For instance, the tax office will impound your bank account for overdue moneys and collect any funds in it. Did you know that the tax office will contact and tell all your clients how much they say you owe and compel them to pay the tax office instead of you? They do so even before advising you, just in case you collect the money before them.

Unfortunately they will not listen to reason or reasonable offers of payment, especially if they think they can go after you personally (even as administrator of a limited company). I dare say they do not do this just with foreign businesses but it certainly encourages the foreign exodus experienced by Spain. I do not call this intelligent, do you? Sure there are other reasons for abandoning Spain, the large number of retired foreign pensioners find it more difficult due to the rate of exchange, but now add to this the cost of monthly urbanization charges for a house that has lost most of its value. Add the tax on the pension received from UK, if it exceeds the Spanish threshold plus the increased costs of living, the parking fines and all the rest that they are throwing in and it is no wonder they are fleeing, after all there are alternative sunshine countries.

Last October, Hinves Pianos inaugurated its new headquarters in Madrid in the presence of friends, clients and well known personalities from the music world. The event took place in Hinves Pianosâ&#x20AC;&#x2122; premises in Getafe, Madrid.

In the presence of dozens of guest, the event was launched with a speech by D. Santiago Hinves, the commercial director, giving thanks for the continued support from Steinway & Sons in achieving this new stage and for their trust in Hinves Pianos to represent them in Spain. He also thanked all present for the love and support shown on such an emotional day. Santiago Hinves also highlighted the great work and effort made by the founder of Hinves Pianos, his own father Jonathan Hinves, with the following words:- â&#x20AC;&#x153;amongst many other things, he has taught us both, my brother Patrick and myself, to love this beautiful profession. He is a tireless worker with unmovable work principles and ethics. He came to Spain more than 35 years ago and started his new life as an artisan and guitar maker and by chance, some 20 years ago, he started this nice new venture surrounding himself with pianosâ&#x20AC;?.

The inauguration was attended by the regional sales manager for the Western Europe Steinway & Sons factory in Hamburg, Mr. ClĂŠment Caseau who thanked Hinves Pianos for the seven years they worked together in a way not ever experienced before with any distributor in Spain. In the course of this

time he has managed to become its main partner in Spain, thanks to their hard work, perseverance and professional commitment. To conclude the event, Mr. Caseau presented the Hinves family with a portrait of Henry E. Steinway, the founder of Steinway & Sons, whose objective always was to make the best possible piano, a philosophy they continue following today from the deepest to the most superficial aspects. In addition to the sale of Steinway pianos and its subsidiaries Boston and Essex, the Steinway & Sons Hinves Center stocks preowned and used pianos of other brands, as it does in the shop in Granada. For the chocolate torte • 250g/9oz dark chocolate, 70% cocoa solids), finely chopped • 430ml/¾ pint double cream, whipped to soft peak • 1 tbsp whisky (preferably single malt) • 1 tsp ground cardamom (about 50–60 cardamom pods, seeds finely ground) • 50g/2oz caster sugar • edible gold dust, to decorate

Preparation method 1. Drizzle the whisky over the sponge in a cake tin and set aside. 2. To make the honeycomb, line a 20cm/8in square cake tin with baking parchment. In heat the golden syrup and sugar together and bring to the boil, then simmer for 5–10 minutes. The mixture will bubble and darken to a golden caramel, do not let it get too dark or the flavour will be bitter. 3. Stir in the cardamom and remove the pan from heat. Immediately – but carefully – add the bicarbonate of soda and mix it in; the mixture will instantly foam up significantly, which is why a large pan is needed to prepare the syrup. Pour immediately into the lined cake tin. Leave to set for at least an hour, then peel off the paper and break the honeycomb into bite-sized chunks. 4. To make the chocolate torte, put the chopped chocolate into a large heatproof bowl and set aside.

5. Pour 200ml/7fl oz water into a pan, add the ground cardamom and sugar, and bring to the boil, stirring. When just boiling cool for 30 seconds. Pour through a very fine strainer over the chocolate, stirring continuously to form a smooth glossy mixture. Discard the contents of the strainer. Stir in the whisky. 6. Fold the lightly whipped cream into the chocolate mixture; the mix will start to stiffen. Spoon the mixture over the cold sponge right to the edges of the cake tin, and level with a palette knife. Cover with cling film and chill in the fridge for a few hours, or overnight if possible. To serve, uncover the tin and push out the torte by loosening the base and moving onto a plate. Decorate with honeycomb. Cut into slices (for a smooth, professional finish, use a knife dipped in boiling water). Decorate each slice with more pieces of honeycomb, top with edible gold dust and serve with more double cream, if you like.
