That’s all Folks!! Summer 2016 is now officially over and September is the start of the golf season and possibly cooler weather. One thing is certain, we have seen a lot of traffic this summer and I do mean traffic which is somewhat counterproductive. I went to Estepona Port last Sunday for breakfast and I would have skipped the idea had I not been lucky enough to find a parking spot (double parking) This is a serious problem all over the Costa, plenty of buildings and accommodation, plenty of shops and restaurants but nowhere near enough to park the vehicles that cater for it. Long term parking areas should be provided for visitors who occupy parking spaces for the duration of their stay, the rest of us have to work.

Una cosa es cierta, hemos visto una gran cantidad de tráfico este verano y es contraproducente. Fui al puerto de Estepona el domingo pasado para desayunar y casi no voy por no buscar aparcamiento (aparque en doble fila) Esto es un problema grave en toda la Costa, un montón de construcción y alojamiento, un montón de tiendas y restaurantes, pero pocas plazas de aparcamiento para tanta construcción.

This month the Chef at KOKOMO recommends a delicious
Fillet of beef Wellington Ingredients For the mushroom duxelle • 25g/1oz butter • 1 tbsp vegetable oil • 2 shallot finely diced • 8 chestnut mushrooms, chopped • 2 tbsp cream
For the Wellington • dash vegetable oill, to fry • 1.2kg/2lb 12oz beef fillet • salt and pepper, to taste • 3-4 crêpes (you can use ready- made) • 225g/8oz ready-made puff pastry • 2 free-range egg yolks, lightly beaten
For the Madeira and port reduction, finely diced • 1500ml/18fl oz veal stock (or beef or chicken stock) • 1 heaped tbsp truffle peelings in brine, drained
For the potato dauphinoise • 1 garlic clove, halved • 1kg/2lb 4oz waxy spuds, peeled and very finely sliced (preferably on a mandolin) • 500ml/18fl oz double cream • salt and pepper, to taste
Method • For the mushroom duxelle, heat the butter and vegetable oil in a frying pan. Once hot, add the chopped shallots and fry, stirring all the time, for two minutes. Tip in the chopped mushrooms. Reduce the heat a little and continue stirring and cooking for about ten minutes until the mushrooms are softened and their liquid has evaporated. Stir in the cream and cook for a further two minutes, then remove from the heat and leave to cool. • For the Wellington, heat the oil in a frying pan over a high heat. Season the fillet all over with salt and pepper. Once the oil is smoking, add the beef and fry on all sides until it is a lovely caramel-brown colour. Remove to a plate and leave to cool. (NB. Don’t wash up the pan. Use this to make the Madeira and port reduction later.) • Place the crêpes onto the work surface, one layer thick, but overlapping - you need to create an area about twice the thickness of the fillet, and about 2.5cm/1in longer at each end. Spread the mushroom duxelle over the crêpes. • Lightly pat the fillet with kitchen paper to remove any excess moisture, before placing the meat on top of the duxelle. cont.../12 pg

• Carefully roll the side closest to you over the meat encasing it within the crêpes and mushrooms. The crêpes should cover the meat on all sides, but trim off any excess. • Place the wrapped fillet onto a sheet of cling film and wrap up tightly into a cylinder. Set aside in the fridge until completely cold, about half an hour. • Meanwhile for the potato dauphinoise, preheat the oven to 150C/300F/Gas 2. • Rub the inside of a deep baking dish or casserole with the raw garlic. • Place the sliced potatoes in a bowl and pour over the cream and season with salt and freshly ground black pepper. Stir to coat the potatoes, and then lay them evenly in the garlicky baking dish. • Cover the dish with foil and bake in the oven for 30 minutes. Remove the foil and cook for a further 20-30 minutes while you prepare the Wellington. • Roll the pastry out on a well-floured surface to a rectangle with a thickness of about 3mm. • Brush the pastry with beaten egg yolk. Remove the cling film from the beef fillet and place onto the middle of the pastry. • Wrap the pastry up over the beef fillet. Lightly stretch one edge of the seam so that it is not too thick, and then press down firmly to seal. • You should be left with a tube that is open at either end. Lightly press the ends of the pastry together using a rolling pin to seal and thin the two pieces. Then with a small knife, trim the edges on each side to form a 12

triangle shape. Brush the triangle of pastry with a little egg and press it up against the side of the Wellington. Repeat with the other side before flipping over so that the Wellington is seam-side down. • Place your Wellington onto a baking tray, brush with the remaining egg yolk set aside in the fridge to chill for 5-10 minutes. • Increase the oven temperature to 180C/350F/Gas 4 (the dauphinoise should remain in the oven). •
Remove the Wellington from the fridge and score a pattern of your choice onto the top.
• Place in the oven with the potatoes dauphinoise and bake for 25 minutes. Remove the Wellington from the oven and leave to rest for 10 minutes. This should give you a perfectly pink finish to your meat. If you prefer it more cooked, then leave in the oven for longer, but you must ensure the meat is well rested. • For the Madeira and port reduction, heat the butter in the same pan in which you cooked the beef fillet over a medium heat. Once bubbling, add the shallot and fry for 3-4 minutes, or until softened. • Increase the heat and add the port and Madeira. Simmer until the volume of liquid has reduced by half and then add the stock. Reduce again by half. When the sauce has a thick, syrupy consistency, strain through a fine sieve. Stir in the truffle peelings and keep warm until ready to serve. • Serve slices of the beef Wellington with the potato dauphinoise alongside and the Madeira and port reduction.

Learn to Score better Course Management is the most important key to playing your best golf. - By Mike Errera At the Golf Performance Center we use the Flightscope Launch Monitor to track your distances with each club. Knowing your gapping between clubs will help you on the course with your club selection. We find that most golfers do not know exactly how far they hit their clubs. In most cases, they think that they hit each club further than they regularly do. With the wrong information, they often choose the wrong club when hitting into greens on the course.
There is a solution. Our facility can be used as an indoor driving range. What makes our driving range superior is that every shot is recorded and the data is collected into averages. This way, everyone that uses our equipment has the ability to hit each club in the bag and learn their average distance with each club. From this knowledge alone, it is easier to choose your clubs with confidence and hit more greens.

The Flightscope Skills program is another feature that makes our driving range the best in the area. With this program we can pick targets of any size to any distance. We can build any training program custom for each client. For example, we can build a program where a client will have three shots to five different targets of 35, 70, 105, 140, 175 meters for a total of fifteen shots. Once they have completed their program, the data collected is then compared to PGA level ability. With this information, it becomes clear to the students where their strengths and weaknesses are in their game. This information can lead to more focused practice sessions and ultimately, lower scores. We do offer the ability for any golfer to come into the shop and use the equipment without instruction for 50 cents per minute. For example, a ten minute pre-round warm up would be 5 Euros while an hour long session would be 30 Euros. With a Monthly Membership golfers can come to the shop for unlimited practice on the Driving Range, unlimited practice on the Skills Application, unlimited use of our biomechanics equipment, and unlimited instruction for only 150 Euros. You can always tell when people wear second hand branded clothes as it generally means they cannot afford to buy from the current collections, second hand carries its own invisible label. For this reason it may be more sensible to buy even cheaper clothes from charity shops and do some good to help the needy at the same time.

Unfortunately a new trend has been growing for a while. Charity fraud, the act of using deception to get money from people who believe they are making donations to charities, That is deceitful businesses accepting donations and not using the money for its intended purposes. In many parts of the world charity shops and good
causes are losing millions of pounds a year to bogus second-hand goods collectors who profit from our desire to help others and Spain is no exception according to lavozdelmuro.net. Falsely disguised charitable organisations of doubtful reputation are minting money with donated clothes, often with the complicity of the local councils.
According to lavozdelmuro.net the number of used clothes being discarded in Spain each year is colossal, either because they are damaged or because they are old and, for solidarity or to relieve the guilt, they are deposited in the used clothes containers in preference to throwing them away. But, all one has to do is to stand by one of these containers to see that the clothes are not collected by a bona fide NGO* organisation. It seems that various local councils have signed agreements with one or more organisations permitting them to place and manage clothes collection containers in their cities in exchange for payments. Quoting Madrid as an example reported by OCU, the Spanish Consumers’ Association,
the council granted Ecotextile Solidarity permission to place 170 containers at a cost of â‚Ź 3200 each, a total of â‚Ź 612,000 a year. The first question is how much does Ecotextile Soldarity earn to make such an extravagant payment and secondly their full name is Ecotextile Solidaity S.L., a limited liability company; so where is the charity part? Once collected, the items are then sorted and washed to be sold at the best possible prices to clothing merchants, textile recycling companies or African retailers. Unfortunately these types of companies, declaring themselves as non-profit-making under their own name, collect tons of free clothes which they then sort and sell. The terrible thing is that people donating believe they are helping the needy. www.webexpressguide.com

According to OCU’s estimates, 60% of donated clothes are re-usable and the rest is recycled to make yarns, rags or some other textile material. A company dedicated to the collection of clothes can earn some €350 per ton in sales to retailers, averaging €4 per item that cost nothing to acquire. The better clothes are cleaned and resold as new to local markets and the rest is shared in their own shops all over Spain. What is actually left over that nobody wants may finally be sold to the needy abroad. To make matters even worse there are also some persons that place clothes containers totally illegally even at the risk of being found out and fined up to €1500 per container by the local council. As usual, it is because of the few that the many have to suffer. Who wants to donate when there is a strong suspicion of malpractice? According to official ONGs, many people have opted not to donate any longer. For the little that it may seem, your donation does count and there are people and organisations that work day and night free of charge and lies just to alleviate the suffering of this world, making sure that your help reaches the right objective, even though they may not even place containers anywhere. The advice given is that you should check the reputation of the entity in question and if you have any doubts find another way to ensure that your help reaches the right people. CONTINUACIÓN: ¡Así lo hice -no pueden imaginarse ustedes con qué cuidado, con qué inmenso cuidado-, hasta que un fino rayo de luz, semejante al hilo de la araña, brotó de la ranura y cayó de lleno sobre el ojo de buitre. Estaba abierto, abierto de par en par… y yo empecé a enfurecerme mientras lo miraba. Lo vi con toda claridad, de un azul apagado y con aquella horrible tela que me helaba hasta el tuétano. Pero no podía ver nada de la cara o del cuerpo del viejo, pues, como movido por un instinto, había orientado el haz de luz exactamente hacia el punto maldito. ¿No les he dicho ya que lo que toman erradamente por locura es sólo una excesiva agudeza de los sentidos? En aquel momento llegó a mis oídos un resonar apagado y presuroso, como el que podría hacer un reloj envuelto en algodón. Aquel sonido también me era familiar. Era el latir del corazón del viejo. Aumentó aún más mi furia, tal como el redoblar de un tambor estimula el coraje de un soldado. Pero, incluso entonces, me contuve y seguí callado. Apenas si respiraba. Sostenía la linterna de modo que no se moviera, tratando de mantener con toda la firmeza posible el haz de luz sobre el ojo. Entretanto, el infernal latir del corazón iba en aumento. Se hacía cada vez más rápido, cada vez más fuerte, momento a momento. El espanto del viejo tenía que ser terrible. ¡Cada vez más fuerte, más fuerte! ¿Me siguen ustedes con atención? Les he dicho que soy nervioso. Sí, lo soy. Y ahora, a medianoche, en el terrible silencio de aquella antigua casa, un resonar tan extraño como aquél me llenó de un horror incontrolable. me contuve todavía algunos minutos y permanecí inmóvil. ¡Pero el latido crecía cada vez más fuerte, más fuerte! Me pareció que aquel corazón iba a estallar. Y una nueva ansiedad se apoderó de mí… ¡Algún vecino podía escuchar aquel sonido! ¡La hora del viejo había sonado! Lanzando un alarido, abrí del todo la linterna y me precipité en la habitación. El viejo clamó una vez… nada más que una vez. Me bastó un segundo para arrojarlo al suelo y echarle encima el pesado colchón. Sonreí alegremente al ver lo fácil que me había resultado todo. Pero, durante varios minutos, el corazón siguió latiendo con un sonido ahogado. Claro que no me preocupaba, pues nadie podría escucharlo a través de las paredes. Cesó, por fin, de latir. El viejo había muerto. Levanté el colchón y examiné el cadáver. Sí, estaba muerto, completamente muerto. Apoyé la mano sobre el corazón y la mantuve así largo tiempo. No se sentía el menor latido. El viejo estaba bien muerto. Su ojo no volvería a molestarme. Si ustedes continúan tomándome por loco dejarán de hacerlo cuando les describa las astutas precauciones que adopté para esconder el cadáver. La noche avanzaba, mientras yo cumplía mi trabajo con rapidez, pero en silencio. Ante todo descuarticé el cadáver. Le corté la cabeza, brazos y piernas. Levanté luego tres planchas del piso de la habitación y escondí los restos en el hueco. Volví a colocar los tablones con tanta habilidad que ningún ojo humano -ni siquiera el suyo- hubiera podido advertir la menor diferencia. No había nada que lavar… ninguna mancha… ningún rastro de sangre. Yo era demasiado precavido para eso. Una cuba había recogido todo… ¡ja, ja!
Cuando hube terminado mi tarea eran las cuatro de la madrugada, pero seguía tan oscuro como a medianoche. En momentos en que se oían las campanadas de la hora, golpearon a la puerta de la calle. Acudí a abrir con toda tranquilidad, pues ¿qué podía temer ahora? Hallé a tres caballeros, que se presentaron muy civilmente como oficiales de policía. Durante la noche, un vecino había escuchado un alarido, por lo cual se sospechaba la posibilidad de algún atentado. Al recibir este informe en el puesto de policía, habían comisionado a los tres agentes para que registraran el lugar. Sonreí, pues… ¿qué tenía que temer? Di la bienvenida a los oficiales y les expliqué que yo había lanzado aquel grito durante una pesadilla. Les hice saber que el viejo se había ausentado a la campaña. Llevé a los visitantes a recorrer la casa y los invité a que revisaran, a que revisaran bien. Finalmente, acabé conduciéndolos a la habitación del muerto. Les mostré sus caudales intactos y cómo cada cosa se hallaba en su lugar. En el entusiasmo de mis confidencias traje sillas a la habitación y pedí a los tres caballeros que descansaran allí de su fatiga, mientras yo mismo, con la audacia de mi perfecto triunfo, colocaba mi silla en el exacto punto bajo el cual reposaba el cadáver de mi víctima. Los oficiales se sentían satisfechos. Mis modales los habían convencido. Por mi parte, me hallaba perfectamente cómodo. Sentáronse y hablaron de cosas comunes, mientras yo les contestaba con animación. Mas, al cabo de un rato, empecé a notar que me ponía pálido y deseé que se marcharan. Me dolía la cabeza y creía percibir un zumbido en los oídos; pero los policías continuaban sentados y charlando. El zumbido se hizo más intenso; seguía resonando y era cada vez más intenso. Hablé en voz muy alta para librarme de esa sensación, pero continuaba lo mismo
y se iba haciendo cada vez más clara… hasta que, al fin, me di cuenta de que aquel sonido no se producía dentro de mis oídos. Sin duda, debí de ponerme muy pálido, pero seguí hablando con creciente soltura y levantando mucho la voz. Empero, el sonido aumentaba… ¿y que podía hacer yo? Era un resonar apagado y presuroso…, un sonido como el que podría hacer un reloj envuelto en algodón. Yo jadeaba, tratando de recobrar el aliento, y, sin embargo, los policías no habían oído nada. Hablé con mayor rapidez, con vehemencia, pero el sonido crecía continuamente. Me puse en pie y discutí sobre insignificancias en voz muy alta y con violentas gesticulaciones; pero el sonido crecía continuamente. ¿Por qué no se iban? Anduve de un lado a otro, a grandes pasos, como si las observaciones de aquellos hombres me enfurecieran; pero el sonido crecía continuamente. ¡Oh, Dios! ¿Qué podía hacer yo? Lancé espumarajos de rabia… maldije… juré… Balanceando la silla sobre la cual me había sentado, raspé con ella las tablas del piso, pero el sonido sobrepujaba todos los otros y crecía sin cesar. ¡Más alto… más alto… más alto! Living and working in Spain (A short guide)
Spain offers an attractive culture for many expats despite the fallout from the global financial and Eurozone crises (Extract taken from Bupa Global well being/international) EU citizens and nationals from the European Economic Areas (EEA) – i.e. EU countries plus Iceland, Liechtenstein and Norway or Switzerland do not require a work permit or visa to be employed in Spain. However, Croatian citizens will need work permits till June 30th, 2020 (approximately). Spain is also one of the 26 Schengen countries with one common visa and no border controls. US, Australian, Canadian and New Zealand nationals don’t need a short-stay visa to enter Spain but will need a long-term residence visa for stays exceeding three months. Spain observes standard business hours of 8.30am or 9am to around 1.30pm, followed by a ‘siesta’, with work resuming from 4.30pm or 5pm to around 8pm. A standard 40-hour week is observed. Employees are entitled to 14 public holidays and normally to 30 days paid holiday a year, unless they opt out under a collective agreement or contract, and are usually taken between July and September. Spanish working culture is very open, with strong value placed on personal relationships, cultural traditions and family life. The fine currently can go up to 10,000€ per illegal worker. Certainly it makes one think twice. The law states that employees must be covered by Social insurance from the very first moment. If there are part-time employees that work for a few hours, the work schedule should be plainly visible at the premises and if one is caught working outside the staed schedule the presence will have to be justified.

A course must be held with every new member of staff and the corresponding certificate by a specialized company must be shown.
The fine for not presenting these documents at the day of the appointment is quite high. It’s so good I decided to stay three to four more years.
So where is this pleasure dome? Nestling quietly in the foothills with uninterrupted views of the magnificent countryside; Alhaurin Prison has become the favourite Hide-out of the rich and famous of Marbella. It isn’t difficult to see why Marbella’s society has decided to head inland and wait for the Heat to die down on the coast. So just what does Alhaurin Prison have to offer for the jet set?
For those used to fine cuisine and having their pick of the five star restaurants of Marbella; Alhaurin Prison’s Canteen may seem a little rustic. The set menu is probably your best option and offers a limited but wholesome choice of brown stuffs in thin gravy. You may opt to try the ‘Tray’ meal, this is quite an experience for the first time visitor to Alhaurin Prison and there are strict rules of etiquette involved, however these are usually quick and easy to pick up and there are always a few long term guests hanging around who are more than happy to explain the intricacies to you. Once you have been served your meal it is customary to Shuffle slowly to one of the long tables, where, if you are lucky, you will find one of your former colleagues enjoying their chosen repast. However, the dining hall does become rather full at certain times of the day and you may find yourself sharing a table with some of those charming, aforementioned long term guests; this is the perfect opportunity for you to practice some of those negotiating skills for which you are so famous, and by the simple act of bartering some of your brown lumpy stuff in exchange for a much lower value potato, you can forge strong, valuable future friendships. After your meal, why not relax over a game of Pool; here again, the tables do become very busy, so be prepared to stump up quite a lot of ‘Snout’ to secure a game; however, this can be won back if you are willing to challenge the player already on the table. Make sure you fully understand the rules before offering to make the challenge and that it is the game of Pool you are referring to; painful mistakes have occurred in the past when a new guest has offered to pot some balls without making it quite clear he meant on the snooker table.
Moving on to the evening’s entertainment, a strict dress code operates at all times and you will be expected to wear this year’s ‘must have’ suit. Colours for this season are navy or battleship grey and tailoring tends to be severe there is a distinct lack of accessories and some of the more well known members of Marbella society have been spotted sporting the rather funky ankle tag. Materials used for this season’s “Look” include Serge and heavy cottons, colours tend to be plain, although the arrow motif will be big this season. Another must have is the new line in over the shoulder bags and the make to look out for is ‘Swag’ most of the cream of Marbella’s society have been spotted carrying a ‘Swag’ bag over their shoulder at some stage earlier. One major draw of Alhaurin Prison for the Beautiful people of Marbella is the peace and quiet. After years of living it up on the Costa del Sol things have finally caught up with them and for a few, the high life has left its toll; the manager of Alhaurin Prison has been overwhelmed by the popularity of the place in recent times, “we only really had a few Scrotes up till now” he said, but with all these ‘toffs’ turning up, we have had to smarten the place up a bit one area in which the place has been smartened up a bit is the introduction of a computer in the recreation lounge. This much needed link with the outside world has made a big improvement to the lives of the guests and only last week one of the Marbella set was seen bidding on a surgical inflatable cushion on EBay. It looks as if Alhaurin Prison will be the place to go for Marbella’s socialites for some time yet.

An impeccable smile Some women are reluctant to use red lipstick because they say it makes their teeth look yellow. Others just use it not caring that their enamel is not as crisp white as other colours. Although red creates this disagreeable optical effect this can be avoided without giving up on red lipstick, as for instance raspberry tones do not create this yellowing effect, therefore we should choose a red in within its tones.
Yes size does matter!
Almost everyone can wear the red bar with one exception: those with extremely fine lips. If they are irregular they can be painted over but if they are very thin there is not much that can be done because such a strong shade will create an optical effect that will reduce the lips even further. On the other hand even the thicker lips cannot use any type of red. Matt shades are the best indicated otherwise the shine will make them appear even more bulky.
Skin Tones Colour theory is a complex discipline that professionals apply in their colour counselling sessions. They say that people are divided by their skin tones into two harmonies. The first is the cold one, with a pigmentation leaning towards the blues and the pinks. This includes the “winter” type (white skin and light or darker brown that tan easily) The second is the warmer harmony for pigmentations tending towards yellow or golden, including the “spring” type (peach or golden skin) and “autumn”(Reddish complexion, yellow or white). Depending on the pigmentation of our skin, we should favour shades that contain our natural colour so that they may blend to reflect our natural beauty and luminosity. For example, if you are of a cold harmony red Valentino or raspberry will suit you best because they contain pink, a shade that is part of our skin and which blends perfectly with it. Whereas for the warm harmony, orange is favourite because it contains yellow, a pigment within the skin. How to find which is your type? Carefully observe the difference in a mirror comparing with different handkerchiefs of various colours, you will clearly see which look good and which look bad and discard accordingly to isolate your type. Not an easy thing to do with the naked eye, but do not despair, if you cannot do it by yourself there are experts available who can do just that. The first thing to bear in mind is that in the small print most insurance companies will drop the level of cover to basic liability as soon as the vehicle leaves the country it is insured in. The second thing to remember is that any insurance company, when faced with a potentially large claim will look for reasons to avoid paying out and that would include incorrect documentation!
